hile we were still reeling from the hit Hurricane Isaias dealt to our community, local photographer and friend of the magazines Katie Dorsett posted the cover photo on social media. Immediately the biblical promise of the rainbow came to mind and we felt better. Then we knew that this photograph (not at all Photoshopped, by the way) told EXACTLY the story we wanted to share in our next issue. Yes, Oak Isalnd and Southport were hit hard, and it will take time to recover, and this is made even worse coming during the COVID mess, but we will recover. We are recovering. The US Open KIng Mackerel Tournament is on despite the damage to Souhtport Marina, its usual home. Oak Island’s beaches will open up soon. We’ll be ok. The rainbow promises.

The 42nd Annual US Open King Mackerel Tournament Overcomes Obstacles STORY BY JEFFREY STITES

W

hile it will look and feel a bit different this year, the 42nd Annual US Open King Mackerel Tournament is a go this year! One of the largest king mackerel tournaments on the East Coast, the 2019 version attracted 496 boats and paid out more than $322,000 in prize money. This year’s tournament has to accommodate social distancing rules and the loss of its traditional home base at Southport Marina, but promises to still be every bit as fun. The Tournament will kick off with a new feature, drive thru registration at Bill Smith Park, on October 1, and continue on October 2 and 3. The Tournament has an all-cash guaranteed prize structure that is not based on participation numbers. It pays 55 places in its primary prize category including $25,000 for the largest king mackerel. There are also 36 sponsors, such as the Primary Sponsor, Southport Marina, and Grand Patron sponsors BEMC, Dutchman Creek Bait & Tackle and Garmin, with 32 more who add supplementary cash prizes to the event. Some of the notable prizes include the

Daily Aggregate Weight Prizes, Senior Angler and Junior Angler Awards. The Daily Aggregate Weight Prizes are sponsored by Sea\\Tow and Dosher Memorial Hospital. Each day a $1,000 Aggregate Prize will be given to the boat that catches the most poundage from combining the weights from two or three fish. The Aggregate Prize will be part of the Primary Prize Category. The Tournament organizer— the Southport-Oak Island Area Chamber of Com-

merce — has instituted the following procedures this year to keep the Tournament going under some difficult circumstances:

REGISTRATION: Early Bird Registration must be completed online, postmarked, or dropped off at Chamber’s Welcome Center by midnight on Friday, September 9. Online Registration will be available until 11 pm on September 29. Drive Thru Registration will be on October 1 from 10 am - 9 pm at Bill Smith Park, 4410 Fish Factory Road.

The Captain’s Meeting will be held virtually on Thursday, October 1 at 7 pm on www.usopenkmtlive.com It is strongly advised that all captains tune into this meeting, as any rule changes or necessary clarifications will be announced at the meeting.

L

ooking for fresh seafood, produce, or something to spruce up the house? Look no farther than The Marketplace on Howe/ Fish Peddler at 310 North Howe Street. And if that’s not enough, some specially procured NC regional items (liver mush anyone?) might strike your fancy. Chance and opportunity came together for Scott and Michelle Buff, marketplace owners, in October of 2018. “The space was available and we had the product,” Michelle Buff explained. “It was something that we thought Southport would enjoy and could use.” The Buffs moved to the Southport/ Oak Island area from Burke County 18 years ago, drawn by the welcom-

ing and supportive community. Scott and Michelle started Buff Builders before expanding to owning commercial fishing boats, making opening a fish market a natural fit. “I believe it’s important, especially right now, for people to know where their fish comes from, and knowing that it comes directly off our boats is not only important to us, but to the people who buy our seafood,” Mi-

chelle said. “I feel that is what sets us apart from anybody else!” So how do they get the freshest seafood? By keeping the fishermen happy, of course. Since they own lo-

cal fishing boats, it is the Buffs’ job to make sure that the boats get unloaded and back to sea as quickly as possible, ensuring that the customers have a consistent seafood selection readily available. The Buffs, along with Scott’s parents, Ron and Betty Buff, who also play a big part in the business, wanted to bring a little of their western North Carolina roots to Southport. In addition to the fish market, they decided to add fresh produce to their offerings. Like they do with seafood, the Buffs make it their priority to provide the freshest produce possible. Many of their fruits and vegetables are grown in the Southport area and the rest come from Asheville and Vale, NC. But don’t think for a minute that the mountain produce is shipped in. The Marketplace family has a produce van that they drive to the mountains to personally pick up the tasty fruits and vegetables, ensuring that everything is fresh and crispy. With other family members still in the area, they often spend the night in the mountains and visit before heading out with fresh produce in the morning. It is truly a labor of love.

With the couple’s love for animals, the Southport-Oak Island Animal Rescue has a special place in their hearts. Michelle has been an active volunteer for years, and has hosted several adoption events and even an animal Christmas tree. Just as the Buffs have adopted Southport, the locals and tourists

of Southport have embraced them, something especially evident during the recent pandemic and hurricane. “I have seen the community come out to support local businesses and it is just amazing,” Michelle recalls. “I feel really blessed.” Looking to stop by? Yoga To Help Deal With Grief And Loss

ing, 230 hours in a month. It was intense and it was life changing. My teachers, Stephanie Keach, Shala Worsley, Michael Johnson, Libby Hinsley, and Joe Taft are still the ones I look up to and still go to for knowledge and wisdom.

It was around this time I learned that I wanted to be a teacher, not just an instructor. To me an instructor is one who leads a class, while a teacher leads and instills more of the why, passing on yogic knowledge, not just calling out poses.

W

hile looking through the Oak Island Recreation Center’s upcoming offerings, I noticed a workshop called Soothing the Space that was described as using yoga to help deal with grief and loss. I was intrigued. I was familiar with yoga as a relation technique, but not with using it to help handle grief. Everyone, to some extent, is dealing with loss right now, even if it’s just the loss of what used to be our normal world.

I decided to look into it and met Meredith Wray, the teacher of Soothing the Space, in Middleton Park, where she was teaching an outdoor yoga class. While watching her class and taking some photos for the article, I realized that maybe there was something to this. I wasn’t participating, but the class was comforting me. Just being there put me in a happy head space. And, apparently, moved me to use terms like “head space,” so there’s that as well. Anyhow, I reached out to Meredith for details about herself, yoga in general, and her classes.

What’s your background as a yoga instructor? This all started with pilates, lol. I was encouraged by my instructor at the time to become Pilates Mat Certified. I did

that in 2007 and started teaching pilates. This gave me a great background and appreciation for teaching as well as core work — core work being one of the best things we can do for ourselves physically. When we strengthen our core (specifically transversus abdominus) we protect our lower backs as well as create a great foundation for ourselves. I focus on the core in yoga — it’s like our second backbone. When we have a strong core it takes some of the load off of our lower backs. It was at this time I met my good friend Andrea. She was a pilates and yoga teacher who taught at College of the Albemarle. She had gone through training at Asheville Yoga Center in 2006, its first intensive training for yoga teachers.

This program became known as one of the stellar yoga training programs on the east coast, founded by Stephanie Keach (that story is a good one in itself…. she and her husband Sunny came to NC from California and started what’s now the yoga center.) Sooooo in 2010 I took the plunge. I had saved up enough money to take the training. In the meantime, I was teaching pilates and gaining much-needed experience as an instructor. Andrea eventually left COA and I took her position teaching the mat pilates class at the college. In July 2010 I headed to Asheville for a month alone to train to be yoga teacher. This is what is called an intensive train-

In 2010 I received my 230 hours of yoga training through AYC, RYT-200 (Registered Yoga Teacher) is the designation. As I taught more classes I became an ERYT-200 (an educator). In 2016 I decided to take the plunge and go for my RYT500 and further my knowledge. It took me from March of 2016 to July 2020 to get 300 more hours through Asheville Yoga Center, traveling back and forth, but I did it! So now my qualifications are RYT-200, ERYT-200 and RYT-500. It is my intention to keep learning and keep passing on that knowledge through my teachings.

How did you discover yoga yourself? When I was 24, I was living in Charlottesville, Virginia. I developed panic disorder that was so crippling I could no longer function without anxiety and crying. My psychiatrist at the time suggest-

Can you tell us a little about Pink Moon Yoga with Mert? Pink Moon Yoga with Mert is my yoga presence. It includes all of my class offerings. I am not a studio, rather I am a resource for yoga and meditation practices to help people feel better and give people hope. My teaching is not limited to one place.

What are the advantages, both to you and your students, of working through the Rec Center?

The Rec Center is one of the easiest, most accommodating places to teach and learn. It’s where I started yoga here on the island, so it’s pretty special to me. The environment is very community-oriented and uplifting. I believe the staff sets that tone. The prices are good for those on a fixed budget. All of the teachers I work with there are the best at what they do

What have the challenges been as the pandemic has forced your classes online and now, at least in a limited way, outside? Initially I had no intention of offering on-

line classes, I had no interest. I believe part of that was fear. Then I realized I was keeping up with my personal practice via Zoom and wondered how were my students to keep up with theirs. People started asking, so I finally took the plunge. After a week, it was definitely a learning curve with the lighting, sound and technology and having the right space that looks nice…it worked! I was still able to connect people but it just “looked“ different now. That was in March, this is August, and the offerings are still there because people keep coming. The park classes offered by Oak Island Parks and Rec have been such a gift to us. Just having that human, in-person connection again feels grounding and good.

How has yoga helped you deal with the world lately? Yoga gives me an opportunity to create some space between thoughts. When this happens, I/we relax, we feel more at ease, more connected. There are also the obvious physical benefits to yoga. One of the biggies for me is that it keeps my heart open. It allows me to handle difficult situations with more grace and ease. The workshop scheduled for September, “Soothing the Space,” is a grief workshop? I think people will be familiar with yoga a stress reliever, but maybe not expecting it as a technique for dealing with grief and loss. How does it help? There is a ton of anxiety and sadness in grief; yoga and love can ease this. Soothing the Space will use the lens of the chakras as a tool to identify areas of grief (attachment) in the body and mind. Then we will soothe those areas with breath work, meditation, chanting, and various gentle forms of yoga including yoga nidra. Grief over the way life used to be is huge for us right now. We are all feeling that loss.

Can you describe what people can expect in Soothing The Space? I believe it’s important for people to know they are not alone. First is that important connection of coming together, just being in that same space with us. I will use the seven energy centers of the body, the chakras, to help people identify where they may be holding grief and anxiety. Southport-Fort Fisher Ferry Has Re-Opened Here Are Some Ideas For A Fun Day Trip

T

he ferry is finally open again! After a maintenance shut down beginning in the spring and delayed by the COVID restrictions, the Southport-Fort Fisher ferry began running again in mid-August, and we are so glad so have it back. The visitors the ferry brings to our community are a huge help to our local businesses, and going the other way, it offers us an affordable and fun day trip. This is especially welcome at a time when travel is a bit problematic. It is really comforting to have a great getaway so close to home.

The Southport-Fort Fisher Ferry is the southernmost of North Carolina’s seven routes and uses two boats, the M/V Southport themed to Duke University and the M/V Fort Fisher themed to UNCW, leaving each dock, when all is going well, every 45 minutes. We’ve

included the current schedule here, but there are summer and winter schedules and weather and maintenance issues can lead to changes, so your best bet is to check the Southport-Fort Fisher ferry’s Twitter account @NCFerrySPort to see if there are any updates.

Stop in the Visitors Center, and pick up a Souhtport MAgazine outside!

The ferry is one of the best deals going, we think. A car is $7, motorcycle $3, bicycle $2 and if you want to park and just ride across on foot it’s only one single dollar. The boat can carry more than 30 vehicles at a time, but still tends to fill up when busy, so it’s best to arrive a while before scheduled departure to ensure you’ll have a spot. There are picnic tables at each terminal, so waiting around isn’t bad at all. And if you get there early enough, you get a front row seat, which we think is the coolest. The trip takes about half an hour and

you get to see quite a bit. Leaving the Southport terminal, you’ll see ADM’s dock and the old Price’s Creek Lighthouse, a short brick tower built in the 1800s. The Bald Head and Oak Island Lighthouses are also visible looking off the other side as you depart. Some of the treats en route include views of Sunny Point, the US Army’s East Coast shipping depot, always pleasure craft, and sometimes, if you’re lucky, huge ships heading to and from the port in Wilmington.

The Fort Fisher Ferry terminal sits right in the middle of some great spots. Taking a right out of the terminal exit leads to a boat ramp and protected water for kayak trips.

If you’re feeling nimble, there’s a sea wall that extends out into the river separating it from what used to be an inlet. It goes all the way out to a little island, but gets slippery and isn’t all the way above water at high tide, so beware. We’re not experts on sea walls, but this one must be special as it has its own little monument. Again, go see it — you owe it to yourself. Winding up the road a bit more takes you to the main Fort Fisher State Historic Site, also closed due to the pandemic. The parking lot at the visitors center

are closed, but the grounds are open for walking and are accessible from the parking area across the street. Called Battle Acres (sounds like a Monopoly property, doesn’t it?), there is plenty of

parking, a great ocean view, a beach, a monument, and a grove of live oaks perfect for shading your picnic. You DID bring a picnic, didn’t you?

CURRENTS Want some bonus Ferry Fun Facts? We found these posted on a window at the Southport Ferry Terminal building. It pays to look around. -The ferry is 180’ long and about 50’ wide, runs on two Caterpillar 475 hp engines, and travels at between 10-12 knots (11-13 mph for you landlubbers). -The six-person crew consists of the Captain, First Mate, Engineer, Oiler, Senior Deck Hand and Deck Hand. -The NC ferry system is the second largest in the country; only Washington State’s is larger. -The Southport ferry has been in operation since 1965 and now carries around 200,000 vehicles and 500,000 people per year. This is why you show up early. The path at left leads, at low tide, to a little island. And if you’re going to take this trip, why not bring a little picnic? There’s grove just made for it right across from Fort Fisher.

Fishes Online NC Aquarium at Fort Fisher Offers Classes

T

he North Carolina Aquarium at Fort Fisher, just a short ferry ride away (see story on page 16), is one of our area’s greatest treasures. Featuring a giant atrium with freshwater fish tanks, alligators (even an albino gator named “Luna”), a bald eagle, a giant salt water tank large enough for several dive shows each day, reef fish exhibits, a touch tank, and outside gardens and wetlands, the aquarium is a must-do for visitors and a staple day trip for locals. That is when the COVID restrictions don’t have it locked up tight. But even with the doors closed, the Aquarium is now open virtually, offering a variety of programs both educational and entertaining. A lot of parents are at least part-time homeschoolers now, so why not add a little fishy-ness to your educational day, or even your next business Zoom meeting? Proceeds from the classes will

help support the Aquarium while it isn’t able to welcome visitors in person. Here is what’s available:

Participants are invited to use writing materials that they have on hand. Participants will explore dream interpretation and what emerges in writing; dream content is used to stimulate participants’ creative imagination. The workshop will be held Friday, Sept. 11, from 10 to 11 am. All groups are conducted in a secure virtual environment. t almost sounds like the plot of movie— Woman leaves the corporate world to buy a taproom and bottle shop at the beach. I’m not sure the LifeTime version would include a plague and a hurricane, but those things have certainly spiced up the real life story of Loraine Tammaro, the new owner/operator of The Taproom and Craft Bottle Shop at The Grape & Ale. We spoke to Loraine about her dream, navigating some troubled times and, of course, beer!

Tell us a little about yourself. How did you come to Oak Island? Where did you come from? What were you doing before coming to the Grape & Ale? How long have you been at the Grape & Ale?

After a 25+ year career in various sales and customer-facing roles for the medical device, research, and most recently the clinical trials industries, I decided to step away from the corporate world to focus on “living life” and pursuing my dream of owning my own business. When Candace and Jamie approached me with this opportunity, I was thrilled, and knew that it was meant to be.

Originally from Northern New Jersey, I made the move to North Carolina back in 1998 to be closer to family who had relocated here, and never looked back. I immediately fell in love with NC. The people were so friendly, the pace of life was much I made the move full time to OKI from slower, and everything was so much greener. I’ve been in the south for so long that the Greensboro area and officially took I now consider myself a true “Southerner” ownership of The Taproom and Craft Bottle Shop at The Grape & Ale on July I have always enjoyed the beach and 12, 2020. dreamed of one day owning a second home at the coast. That dream became reality in 2011, after a friend suggested that I look on Oak Island. After spending a week here on vacation, falling in love with the charm of the island and the people I encountered, I made an offer on a house, and the rest is history. Over the years, I made many friends here, many of whom I met at The Grape & Ale while attending wine and beer tastings. Candace and Jamie Hobbs were the first of those friends.

What is your history with beer? Always a fan? Do you consider yourself an aficionado?

I have always enjoyed beer and was immediately hooked on craft beer after visiting my first brewery. I enjoy the many different styles of craft beer but will often be found enjoying a gose or sour which are some of my favorites. I am passionate about and thorough-

ly enjoy sharing my love of craft beer with others, so yes, I would consider myself an aficionado.

What do you enjoy most about your new life running an island beer shop?

I’m living at the beach and running a Taproom and Craft Bottle Shop, what’s not to enjoy? Seriously, that’s a hard question because there are so many things that I enjoy. I enjoy being able to work side-by-side with Candace and Jamie, I enjoy meeting and interacting with customers, I enjoy the flexibility and the freedom, I enjoy researching beers and deciding which beers to offer in the shop, and most of all, I can actually say that I enjoy going to work each day.

What have been your biggest challenges? I imagine the COVID restrictions play a role in that…

My biggest challenge at the moment is not being able to offer indoor seating. For many people it is just too hot and humid to sit outside comfortably.

Many parts of our island suffered devastating losses from the recent hurricane. My heart goes out to everyone who was affected. As always, our little slice of heaven will rebuild and emerge better and stronger than before. I look forward to the reopening of these areas and welcoming back home everyone that was displaced.

Are there any silver linings you’ve found as you begin a business in a pandemic?

Things being slower due to the pandemic and indoor seating being prohibited, has helped by allowing me to take my time getting things set-up and focusing on learning all the different aspects of the business. I am also very thankful for all the support that I am receiving from the OKI community. Everyone has been so welcoming, and I truly appreciate it.

What are the rules at Grape & Ale as far as customer experience?

Masks are required, no indoor seating until further notice, and social distancing

must be observed at all times. We DO have outdoor seating available in our courtyard.

What sets your shop apart from the beer aisle at the grocery store?

I aim to bring in high quality, highly-rated craft beers made with all-natural ingredients that aren’t available in grocery stores. I focus on the customer and want people to enjoy the experience and conversation as much as the beer. In addition to cans and bottles, I also offer 12 craft beers on tap.

What are you most looking forward to as we move into the fall and hopefully out of the restrictions?

I’m looking forward to the loosening of restrictions so we can once again allow indoor seating. I have many ideas, fun activities, and daily specials that I look forward to implementing as soon as restrictions are eased. Also, the cooler weather that fall brings will be a much-welcomed respite from the summer heat and humidity, enabling customers to more comfortably enjoy our outdoor seating area.

Can you point to maybe three beers available at your shop that would be perfect for an Oak Island September, still summer really, but moving into an autumn mode?

Sure. A hazy IPA from Bill’s Brewing in Wilmington, That’s What Space Smells Like; a Cucumber-Melon Gose from D9 Brewing in Cornelius, NC, Brewer’s Day Off; and an Oktoberfest from Edmund’s Oast Brewing in Charleston, SC. Well THAT sounds like a topic for next month’s Cheers column. Why not stop in and see Loraine and pick up her recommended beers for September and give them a try along with me. Golfing For Literacy Brunswick Literacy Council Sponsors Golf Fundraiser at Carolina National GC

A

s the temperature drops a bit and we head into fall, why not enjoy a day of golf on a beautiful course while supporting literacy in Brunswick County? Brunswick County Literacy Council (BCLC) will celebrate 30 years of golf for literacy at its annual fundraising golf tournament September 19 at Carolina National Golf Club. Tournament format is Captain’s Choice with an 8 am sign-in, shotgun start at 9:30 am, and three flights—men’s, women’s, and mixed foursomes. The entry fee is $85 per person and includes green fees, cart, a $25,000 hole-in-one contest, breakfast, lunch, beverages, awards presentation, raffle prizes, free subscription to Golf Digest, and a silent auction. To mark 30 years of fighting illiteracy in Brunswick County, the Council is also offering a chance to score an exclusive BCLC trip for two to San Francisco that combines seaside golf at beautiful Bodega Bay with a Napa Valley wine train tour and tasting, good for the next three years and at a bargain price. That package, along with more great destinations at great prices for a great cause, will be available from September 8-18 through the “Buy It Now” link on the Council’s website at www.bcliteracy.org. It offers businesses, clubs, and individuals the opportunity to support a critical need for Brunswick County residents to improve their literacy skills and open new opportunities for themselves and their families, and, in turn, make them better able to contribute to the community. Available sponsorships range from $100 to $5,000. Sponsors not only help finance the Council’s mission to provide free assistance with reading and writing skills to adult residents, they also demonstrate their commitment to broader community well-being and development. Every sponsorship level includes recognition on the BCLC website, including sponsor logos and websites when provided. In addition to sponsorships and playing in the tournament, donations of items for raffle prizes or for the silent auction are also welcomed. Carolina National is taking numerous precautions to ensure a safe environment for members, guests, and staff, including following the North Carolina governor’s Executive Order requiring face coverings when in public spaces at the club. e are huge fans of the parks in our community, so naturally we appreciate those who help keep them ship-shape. Town Creek Park in Winnabow is one of the County’s newer parks, but has become invaluable as a home to youth sports. One of the people responsible for making that home welcoming and comfortable, not to mention beautiful, is retiring, and Brunswick County wanted us to share his story. From Brunswick County Parks and Recreation Marketing and Community events Coordinator Melinda Johnson: Norris “Bill” Brown is retiring from Brunswick County after 35 years of employment. The Brunswick County Parks and Recreation Department would like to thank Bill for his years of service and dedication. Bill worked in several departments and had several roles throughout his time working with Brunswick County. Bill commented when receiving his award that “his award was not only for him but it was for everyone he worked

with and that helped him with Town Creek Park over the years.” While we are sad to see him go, we hope that he enjoys retirement and the next stage of his life. Where Glass And Light Dance

I

find glass to be exceptionally mesmerizing. The structure is hard and yet very delicate. Just like so many things in life, glass has to be challenged under fire and melted down before being formed and created into a beautiful work of art. Sometimes delicate bubbles are captured inside that create an almost fluid-like appearance. Creating glass art is a testament to life and change. If you are not extremely careful, the piece will break, or burn you in the process. But if you are patient and skilled, you can form it into something beautiful. As with most artists this year, as the challenges of the pandemic slowed down sales from canceled art fairs and closed galleries, glass artist Debbie Appleby has had to make some changes in selling her work. “I moved here in January and the world shut down in mid-March,” she said. “I had planned on the Southport Summer Market and the 4th of July. However, I have made some amazing connections and have works available in Southport at Barn and Beach Designs. I am also a new vendor at the Seaglass Artist Market in Castle Hayne that is open the 3rd weekend of each month. I have also created a strong presence on Facebook and Instagram, and that has helped in addition to regular clients that I ship work to as requested. While it’s easy to work in the solitude of my studio, I miss the personal connections. I belong

to several Facebook groups and stay connected with artist friends too.” A retired educator from Ohio, Appleby moved to North Carolina in 2005. “I served as an Assistant Principal in Western North Carolina for four years before moving to South Carolina, where I taught the gifted and talented,” said Appleby. “Before committing to my degree in education, I had taken various art classes at the local community college in Ohio. “I work solely in Fused Glass and take sheets of glass which are cut, ground, pieced, designed and decorated. From there, the work goes into the kiln to be fired. Some works are fired multiple times to create shapes or textures as needed,” said Appleby. “I am greatly influenced by the colors and textures of glass. Blending colors to create fun designs. I enjoy experimenting and trying new techniques as I continue to learn and gain more skills as I go,” she said. “I find my greatest inspiration from looking at the world around me...the colors and pops of colors in nature. Certain colors of glass draw me in and I long to do more with them.” Appleby’s early artwork in clay was a strong foundation for her transition into glasswork. “I began creating art through pottery back in the early 1980’s. I volunteered and taught clay classes at an after-school center, summer programs, adult evening classes, etc. Once I began teaching and my kids became involved in school activities, my artwork took a backseat. While living in the mountains in North Carolina, I took clay workshops through Campbell Folk School and began working more with pottery. It was there that I learned how to make face jugs, which are my favorite.”

Oak Island Baker Whips Up The Goodies

or some people, it’s who you know that opens new doors of opportunity. For others, it’s their chocolate cake. Pastry chef Amanda Schall landed her first local client when she made her fiance’s new boss a chocolate cake. Schall had moved to Oak Island with fiance Lawrence Green when he landed a job as chef at Shagger Jack’s on Oak Island about a year ago. Schall said she found Oak Island to be such a welcoming community, and she wanted to show her appreciation. What better way than to share a chocolate cake? Once the Shagger Jack’s crew tasted it, they asked her to make all the desserts for the restaurant.Â

in Baton Rouge, LA, in 2015. She said she came into the profession naturally, since her mother was a baker. â€œAll my teachers were excited for me to be in their classes because my mom had a reputation,â€? Schall said. “That’s where I got the passion for it, but I wanted to do more with it.â€? Her personal style is more European, using ingredients like chocolate and almonds, but not super sweet, not just all about the sugar. While she was in culinary school, she worked at a restaurant that gave her access to

some high-quality and unique ingredients, and she found ways to incorporate them into desserts. She made sriracha ice cream, and even a candied mushroom flan. Seeing people enjoy her creations and getting them to try new things is a great feeling, she said. “That’s the reason I do it, to see people’s reaction and to make people happy. I get this all the time -they say they never tried that or they didn’t like it, and they try mine and they have a whole new perspective. I’ve changed a lot of people’s minds

about a lot of things.” Like many children, Schall’s sons, ages 3 and 7, are picky eaters, except when it comes to their Mom’s baked desserts. “If I bake something, even if they don’t know what it is, they will try it,” she said. “If I make French macarons, they are all over it.” At Shaggers, she always offers a chocolate cake topped with a chocolate ganache. “It’s decadent but simple,” Schall said. people like to make theirs more like pudding. Mine is more like a bread souffle.” But as far as a crowd favorite, Schall said she turns to chocolate.

SAVOR “What I like making for people to wow them is anything over the top chocolate, like death by chocolate. I mean, if you’re going to indulge yourself, why not go all the way.” Her culinary talents are also getting her some national recognition. Last year, she entered a contest at the NC Blueberry Festival in Burgaw, in Pender County, and her Blueberry-Cream Cheese Sweet Braid Twist took first place among 97 entries. A few months later, out of the blue, she got a call from Family Circle. The company was putting together a cookbook of county fair and festival contest winners across the country and wanted to include her recipe. They went through the editing process, and the book was published in December 2019. Unfortunately, the company has stopped publishing all together, but Schall said she feels honored that her recipe was includ-

ed in the last book published. While Schall has found a home base for baking locally, her love for competition and for being a part of the community also found a home in Oak Island. Last year, Schall took top prize in Oak Island’s Gingerbread Beach House competition. She also provided the King Cake for the Town’s Mardis Gras celebration and supplied pastries for a recent fundraiser and outreach effort following Hurricane Isaias. She also hopes to add new clients, even as the area is dealing with the pandemic. “I feel like Oak Island is so community oriented. All the businesses are so great. I feel like they come together and help each other out,” she said.

Snooze To Improve Getting Enough Sleep Is Essential

O

n average, we spend about 1/3 of our lives, approximately 25 years, sleeping. Well, we should. However, according to the Centers for Disease Control (CDC) most adults fall short of getting enough sleep. For some, it just isn’t a priority. For others, they just can’t seem to make it happen. Sleep disorders and insomnia are prevalent. And sleep aids are a multibillion-dollar market.

This doesn’t just leave some tired folks walking around. A lack of sleep has a much deeper impact. It is directly connected to heart disease, diabetes, obesity, Alzheimer’s, depression, cancer, and overall longevity. When you head to bed for the night, you may be thinking of it as a time for rest. For the brain and body, it is actually a very complex and active time. All aspects of our being are either supported or compromised based on how much and

how well we sleep. Sleep exists to restore, recalibrate, renew and upgrade the functions of the brain and body. For the brain, sleep improves problem solving, memory retention, ability to concentrate, regulation of emotions, coping skills, and creativity. For the body, sleep boosts immunity, balances metabolism and hormones, regulates blood sugar levels, manages blood

pressure, maintains and repairs structural components, combats fatigue, and suppresses cancer cell growth. As you can see, sleep is vital to our existence. With it being so important, I wanted to share some tips to help you get better quality and quantity of sleep each night.

TIPS TO IMPROVE YOUR SLEEP

•Limit caffeine intake to the beginning of the day; give yourself at least 10-12 hours of a buffer until bedtime •Stay hydrated to improve quality of sleep; but cut off the fluids a couple of hours before bedtime to limit night time waking for trips to the bathroom •Make dinner the smallest meal of the day, so night time energy isn’t spent on digestion •Exercise daily; but try to avoid vigorous exercise too close to bedtime, as this may prevent or delay the transition into a sleep state •Practice short periods of meditation to wind down the stress levels and over-active nervous system; at the beginning of the day and end of day could be most helpful •Set a specific time to go to bed

and wake up each and every day; this will help set your circadian rhythm; make sure to plan for at least seven hours and account for awake times during the night •Avoid laptops, cell phones and televisions at least 30-60 minutes prior to bedtime; these actually disrupt your circadian rhythm •Go to bed when sleepy; try not to fall asleep on the couch, then wake up and drag yourself to bed; this disrupts the sleep stages •Keep the bedroom dark and cool; below 70 degrees is good but down to 65 degrees is ideal to initiate a core temperature drop that brings solid sleep •Avoid sleep aids; they do not bring on natural sleep stages, but are more of a sedative and will cause you to miss out on some of the restorative stages of natural sleep •If you use an alarm clock, don’t hit the snooze button; it confuses the cycles and can be quite jolting to the nervous system A loss of sleep, defined as sleeping less than seven hours, impairs your overall well-being. In as little as 10 days the brain and body can become deeply compromised. Imagine what years of sleep deprivation can do to you! Sleep is a major key to our overall health and wellness. It plays an important role in all aspects of our brain and body functionality. If you can begin to improve your quality and quantity of sleep, you will be able to decrease the onset of chronic diseases of the mind and body, as well as extend your life. I encourage you to begin implementing these lifestyle tips today, be consistent, and give your body time to adapt. These tips and routines will influence your ability to fall asleep and have a night of quality sleep.
