As I sit down to write this letter I have an overwhelming desire to say so many things! With the end of the calendar year looming before me there is this little voice in my head saying, ”speak now or forever hold your peace”. Wrong occasion I know, but that’s how it feels! I just want to be able to wrap up this year neatly and tie it with a bright red bow! Then a phrase came to mind, “Glad tidings we bring to you and your kin; glad tidings for Christmas and a happy New Year!” Glad tidings are small but say so much! Merry Christmas! With just these two words I can convey so many feelings. Love, joy, happiness, faithfulness, caring, warmth togetherness, peace, thankfulness; these thoughts are neatly wrapped up in one simple comment. Whether in a card, on a sign, spoken on the phone or in greeting a neighbor, there is a universal feeling that accompanies this greeting. It’s sincere and heart felt. It’s intent is always to bring good will. And I can’t help but love a season that conveys these feelings in every twinkle, sparkle, jingle, and peppermint flavored treat! Happy New Year! Is another phrase that packs a big punch! These three words carry many meanings as well. Hope, good fortune, happiness, love, new beginnings can all be felt as we shout out at midnight on December 31st. Friends and family celebrate accomplishments of the past and dream of goals for the future. The possibilities seem endless, as endless as our list of resolutions…. Thank you! This is my favorite little phrase. It is versatile, universal and can be used all year long! With these two small words you can share your gratitude with anyone. It brings with it feelings of love, trust, caring, understanding, and sincerity. It is one of few phrases that cannot be over used. This is a season of little words with very big meanings! I bring you glad tidings of joy from all of us at Southport Magazine

elebrating Christmas on a modern Homestead Farm Llama-drawn carriage rides, a live nativity scene and much more at Greenlands Farm’s Winter Fest December 5th. Imagine luminaires lighting a path through the woods and lights strung throughout a homestead farm. There’s a Yule fire, really a bonfire, where children and adults can sip hot chocolate and roast marshmallows for s’mores. Add live music, Christmas carols and a live Nativity scene and it sounds like the perfect way to start the holiday season off right. And it’s right up the road in Bolivia. The Greenlands Farm Winter Fest is December 5 from 5 to 8p.m. The farm is at 668 Midway Road SE, Bolivia. It’s a family affair at the Greenlands Farm, and mother

and daughter Heather Burkert and Maud Kelley say the Winter fest is a great opportunity to show off the farm and celebrate the Christmas season. “It’s my favorite event to do because it’s so peaceful, and it’s what the season is about,” Kelley said. This is the third year for the festival at the homestead farm, which has been in business for five years. Winter fest is a family event,with activities, food and drink for all ages. But it’s also a fundraiser for one of the farm’s main functions – animal rescue. Kelley said that a lot of people don’t real-

ize that farm animals need rescue services too. Money raised will help “keep the animals fed and happy through the winter,” she explained. She said the farm is a small one, but they are able to keep enough animals to help them teach others. “We teach them about farming and how the animals are used, because they actually play a big part of our sustainability on the farm,”Kelley said. The farm family hosts classes and workshops on a variety of topics throughout the year. The animals also have their own role in Winter Fest by participating in the live nativity scene. There will even be a “sleigh” ride, a carriage adorned with jingle bells pulled by a llama instead of reindeer. Santa Claus himself will also take time from his busy schedule to make an appearance. Inside the Farm Store, there will be a story corner where children can sit and listen to Christmas stories. There will also be crafts for the kids. There will be mulled cider, popcorn balls and mulled wine for the adults. “It’s a special time of year and we wanted to share that,”Burkert said. “It’s a very warm, cozy event.” Kelley said the family started the homestead farm as way to show people that it’s possible to live off the land. The Farm Store offers all kinds of homemade and locally grown foods and produce, including ready-to-go fresh sandwiches, sides, and salads; farm-made, and-dipped ice cream and smoothies; fresh-brewed organic coffee and tea; baked goods and breads;custom-made cakes (in-store and made to order); preserves; farm fresh milk(grass fed, hormone/antibiotic free); farm fresh eggs (free range, hormone/antibiotic free); organic flours and sugar; organic cof-

fee and teas (by the ounce); honey(from the farm’s bees); packaged beef, heritage pork and chicken(hormone/antibiotic free, North Carolina raised); organic fruits and seasonal vegetables; and weekly organic veggie box subscriptions. Kelley said there will also be holiday goodies available in the store. Admission is free, but tickets are required for the sleighride and viewing the nativity scene. Tickets will be available at the event but Burkert encourages people to buy them in advance. The cost is $12 at the farm and only $10 in advance if purchased online. No outside food or coolers are permitted but festival goers are encouraged to bring chairs or blankets to sit outside and listen to music. One-manband Herb Harton will be playing various instruments and singing. “When you do things at night, they just become more special,” Kelley said. It just creates an atmosphere more special than during the day. With the woos and the lights, it’s kind of simple, but I think if you do things simple, it’s actually better.”1

he South Brunswick High School Marching Cougars, The Pride of the South Coast, will be helping ring in the Christmas season at two parades this year.

Band Director Jonathon Moore will be leading the 75-member strong band marching in the Christmas by The Sea Parade on Oak Island on Saturday, December 5 and then the following Friday evening, December 11, in the Light Up The Night Christmas Fire Engine Parade in Southport. Looking ahead to spring, they will also participate in the 2016 Azalea Festival parade in April. In addition to the parades, the 2015 Holiday Concert will be held at Odell Williamson Auditorium on the campus of Brunswick Community College on Monday, December 14 at 6:00 pm. South Brunswick High School Symphonic Band and South Brunswick High School Chorus will be performing a joint concert. Mr. Moore, Director of Bands, and Mrs. Jennings, Chorus Director, invite the entire community to attend this event. Admission is free and attendees are invited to bring a toy or toys for a boy and/or girl of any age that will be donated to the Boys and Girls Homes of North Carolina at Lake Waccamaw. Please indicate on the wrapped gift if the toy is for a boy or girl and the age group for the toy. go above and beyond in making sure our children have the best experience when performing at Odell, and it is always a joy and blessing to be able to perform there each year,” said Moore. The parades and concert represent the culmination of a lot of hard work and fun for the South Brunswick Marching Band. The season for the Pride of the South Coast started with the first basic camp in June. Since then the group has worked hard to prepare their show for performances at home football games and at competitions within the region. They reconvened in August for a 2-week camp before the start of school. Once school started, the band rehearsed during class and two days after school each week. The band performed at all five home football games and at the Brunswick County Schools Showcase of Bands, hosted by South Brunswick High School this year. The Pride of the South Coast also represented their school at three regional band competitions. They first traveled to Gray’s Creek High School in Hope Mills, NC where they won 1st place Percussion, Marching, Drum Major, 3rd place General Effect, and Music, and 3rd overall in Class AAA. For their second competition, they

CURRENTS traveled to South Columbus High School in Tabor City, NC. They won 1st place Color Guard, Drum Major, Music, Percussion, General Effect, 2nd place Marching, and 1st place overall in Class AAA. For their final competition, the Pride traveled to Loris High School in Loris, SC. They gave what Moore calls their best performance and won 1st place Percussion, Drum Major, Marching, General Effect, 2nd place Music, Color guard, and 2nd place overall. “I am very proud of how much this group has improved over the season. At this rate I anticipate furthering their performance experience to that of a regional and national level in future years,” said Moore. Moore says the band is an important part of many children’s lives, but that a successful and meaningful music program doesn’t come cheap. “Due to budget limits and constraints set by the county and state, we are unable to fund the full band program, so we must rely on fundraisers, students’ fees, and generous donations received from our families, friends, and local supporters,” said Moore. The South Brunswick Band Boosters is seeking donations to help with the cost of running a successful band program. The South Brunswick Band Boosters is a non-profit organization that seeks to pro-

vide opportunities for students to have an enriching music education and opportunities beyond what local schools are able to supply. The boosters’ annual budget goes towards supplementing the cost of extra staff for marching band and indoor ensembles, much needed equipment and instruments for a growing band, uniform expenses, competition fees, traveling costs, and other general expenses, said Moore.

“The South Brunswick Band Boosters wants every student to be able to elevate their musical skills and abilities. We need your help and support! Your tax-deductible donation will help our students achieve their musical goals. Thank you in advance for supporting our students!” he said. It will feature handmade and homegrown items from artists and vendors from all around our region. After a leasurely day of shopping gather down by the river with friends and family to watch as twinkling lights and holiday cheer float by in the Christmas Flotilla. The annual event is sponsered by Downtown Southport, Inc. (DSI) and their partners the Cape Fear Yacht Club and the City of Southport. Dozens of power, paddle and sail boats of all sizes adorned with lights and holiday decora-

tions cruise up the Cape Fear River (from the Southport Marina to Kingsley Park) Everyone who lines the waterfront from the Southport Marina/Old Yacht Basin to Kingsley Park will be able to see the show! The fun begins at 7 pm along the riverfront (weather permitting). Southport Elementary School art students will judge the boats on the variety and creativity of their decorations. It is a free event that is sure to lift your spirits and fill your hearts with cheer! An Original Family Band The Annie Moses Band Is Six Siblings And Dad Offering An Eclectic Musical Mix STORY BY: NEILL CALDWELL

eading the background on The Annie Moses Band might remind the reader of the Von Trapp family — musical parents encouraging their large and talented brood into music as a profession and hanging together to perform as a group. Only no lederhosen here, this family band is all-American. The Partridge Family with harp and violins.

SHOWCASE The Annie Moses Band is comprised of parents Bill and Robin Wolaver, along with their children Annie, Gretchen, Alex, Ben, Camille and Jeremiah. Although Mom is more behind the scenes as composer and arranger, it still makes for quite the family gathering on stage. “With drums and backup vocalists, we have ten people on stage, and playing 15 different instruments,” said lead singer and violinist Annie Wolaver Dupre from her Nashville home. Dupre was just 18 when the band was created in 2002. It was named for the siblings’ maternal great-grandmother, who grew up a sharecropper in North Texas. While she was not a musician, she made sure her daughter was. Thus a family legacy was born. “Both of our parents were in the professional music business, and that was a wonderful foundation for us,” said Dupre. “there was always music in the house and it was a very creative atmosphere. We always played together as a family.” At one point the family moved from Nashville to New York so that several of the children could study at Julliard. “We always thought that we would pursue classical careers,” Dupree continues, “but when the time came we wanted something more personal, more stylistically diverse as a professional endeavor.” The result is a unique blend: classical instruments playing pop favorites flavored with a little bit of everything from jazz to bluegrass. “Do we have classical roots? Absolutely,” says Dupre. “At the core we’re essentially a classical ensemble of instruments – harp, piano, violin – inside the trappings of a commercial music band. The result is familiar sounds in a way the audience have not heard them before.” The Annie Moses Band will perform a concert of Christmas favorites on Thursday, Dec. 17, at the Odell Williamson Auditorium on the campus of Brunswick Community College. The concert will begin at 7:30 p.m. The performance will be all about Christmas, of course, of which the band also has quite a collection of selections. A two-disk Christmas album released by the band

in 2009 includes 30 songs. This summer’s album release, “American Rhapsody,” debuted at No.5 on the Classic/Crossover chart. It features songs with the feel of the American West and South, crowned by an amazing bluegrass version of George Gershwin’s “Rhapsody in Blue.” It also contains some original music. In support of that album the band has just completed its first overseas tour, to the United Kingdom in November. Even more notable is a PBS special coming up in March called “The Art of the Love Song,” which will also be the band’s next recording, with a planned released in March as a companion to the TV special, which was taped at the Grand Ole Opry in Nashville. That promises to increase the family’s exposure. “It’s a beautiful special,” adds Dupre, “and it will definitely take us to a new level. We were able to take some classic love songs that have stood the test of time and re-imagine those songs in a new way. “We’ve tried to use a slow and steady approach to be true to the music and the art, the joy, of performing. But it’s been an awesome ride so far.” The band supports its own foundation which helps youth get musical training, and hosts a summer fine arts camp in Nashville. The Annie Moses Band has recorded 12 albums, several concert DVDs and has an extensive collection of videos on YouTube. The group plays about 80 concerts a year, and played Carnegie Hall in April 2014. In addition, Robin Wolaver released a memoir in 2013 titled “The Song of Annie Moses” that has become a best seller. Vocalist Joshua Carswell, a North Carolina native and graduate of Elon College, will be the opening act for the band at the Dec. 17 concert. The Brunswick Little Theatre is making the holidays jolly & bright with the Nunsense Christmas musical

uncrackers is the first TV Special, taped by the sisters that brought you Nunsense, in their convent basement studio for Cable Access. It stars the nuns you love plus Father Virgil and some of Mt. Saint Helen’s most talented students.

The show will run at the BLT home theatre, 8068 River Road SE, Southport, Fridays through Sundays December 11-13 and 18-20 with Friday and Saturday shows at 7:30 pm and Sunday matinees at 3 pm. The nuns are producing a Christmas special in their new cable access television studio. The audience serves as studio audience as the nuns are joined by a priest and few students from the convent school for

the production that hits a few bumps along the way. A wide range of music and dance styles as well as some audience participation help ensure this show has something for everyone. “The composer of the Nun shows likes to create a great variety of styles. I mean, The Sugar Plum Fairy and The Village People, Western Swing and Gospel.......if you want it, this show has probably got it,” said Beverly

Veenker, Nuncrackers’ director and choreographer. Veenker began her involvement in Brunswick Little Theatre working as choreographer on its production of Nunsense in 2004 and continued in that role for their offering of Nunsense 2 in 2011, both in Odell Williamson Auditorium on the campus of Brunswick Community College. Veenker expanded her role to serve as director of Nuncrackers after the original director experienced some health problems and had to withdraw. A couple of cast members are veterans of BLT’s past Nunsense shows as well. Debbie Skillman continues to portray Sister Amnesia and Sherrill Jolly will carry on as Sister Hubert. Veenker brings a life-long involvement in theatre and the arts to her work with BLT. “My background is pretty easy.... I was born into a musical theater family, my parents were performers. Everybody else did family dinners and picnics and vacations.......we did rehearsals...and rehearsals.... AND rehearsals. I was a young performer because my mother insisted that in order to teach a performer well, one needed to be experienced in the whole spectrum of it, so I was lucky enough to do a lot of various things as a performer and enjoyed performing but I found my soul as a faculty member at Western Kentucky University preparing performers for careers in this business. To see my students on Broadway or in movies or Television shows or choreographers, teachers, etc. That fills my heart, “Veenker said. Adding to the adult cast of Nuncrackers will be a number of teens participating in BLT’s new Musical Theatre Apprentice program. Veenker explains, ”The show calls for a small number of young people whose characters in the show are those of students who have won, through their teachers’ recommendation, a chance to do the special Christmas TV production at the convent that the plot centers around. There are only five and they are age specific. Our new musical theater apprentice program was just starting and the fit was perfect. “ “The musical theater program is designed to give an ongoing experience in musical

theater to young serious musical theater students who are studying all forms of musical theater seriously by taking regular weekly classes. The kids needed were a relatively small part of the show but required a good deal of time so the kids already involved in theater were the likely candidates for this one,” Veenker said, “There are also young people from that group who will be working backstage learning tech theater and all the backstage technical things as part of the Musical Theater Apprentice program.” Putting on a church-based show in a former church (BLT’s theatre is the former home of Christian Alliance Church and they perform in the former sanctuary) has its advantages. “Paul Bertelsen is designing the set and has, I believe, tried to do it in such a way as to have the theater benefit from the design afterward or, at least, parts of the set. The set is very flexible to use. Not a big set but sort of convertible,” said Veenker. This show is expected to sell out, but tickets will be available at the door if there are any left. The Musical Theatre Apprentice program will offer a Showcase performance on Sunday, January 10 at 3:00 pm on the Brunswick Little Theatre main stage. The public is welcome and invited to attend. A Great Escape

New memoir reveals the dreams of a fish spotter

D

onald Sellers was a young boy hanging around the fish factory while his parents were working and having the time of his life, in what he described as “an enormous playground filled with adult toys”. Everyone there loved Donald and he loved being there.

There was one person that had his full attention and eventually became the influence that set the path for his career. It was one of the spotter plane pilots, Hall Waters. ‘When Dreams Took Flight: Memoirs of a Southport Fish Spotter’ is an autobiography about my good friend Donald’s childhood around the fish factory and the way Southport used to be — a great read you won’t be able to put down. The book begins with Donald’s parents working in the Brunswick Navigation Menhaden Processing Plant as cooks. Many of the locals remember the Menhaden Plant located at the end of Fish Factory Road simply because of the smell that was prevalent all around the area as the fish were being cooked for processing. One day at the factory, Donald met Hall Waters.Hall was like a super hero to him and eventually put the bug into Donald to fly airplanes. He was totally fascinated with Hall right down to the way he dressed. This influence sets the stage for what would become a very exciting life as a pilot for Donald. His book takes you through all the phases of his life as he was “growing up dreaming” and straight to the “dream come true” as Donald became a US Army helicopter pilot. As a result of his desire to fly and great skill at, it he finds himself doing a tour of duty in the Vietnam War as a pilot. He tells some amazing stories that will keep you fully engaged and ready for the next page. That chapter he appropriately calls “The Bad Dream”. The last two chapters of the book bring you back home to Southport as he tells of his dream come true career as a fish spotter pilot for Standard Products Inc. a Menhaden Fishing Company out of Virginia. His dream of flying alongside his hero Hall Waters as a fish spotter was about to become a reality. He tells wonderful stories of flying his plane all around the area and having the

I’m excited to see just how big this book gets for Donald. He is extremely happy with the success it’s having. When I asked if he would consider writing another book his answer was, “ I don’t know, I haven’t thought about writing another book but I have enough memories and stories to do so, so I just might. 1

‘When Dreams Took Flight: Memoirs of a Southport Fish Spotter’ By Donald Burris Sellers time of his life doing what he always wanted to do, fly Airplanes. Donald told me in an interview that he “never worked a day in his life” because it was his love and passion to fly so it was never like a job to him. He was living his dream and felt very blessed to do so. However as the Menhaden Fishing began to experience pressure from politics and an overall declining fishing industry, its demise came swift and this resulted in yet another change in Donald’s life as a pilot. He was, and still is, a very determined man and was not about to let go of the controls just yet. The final chapter has stories of the ”grand finale’” of his flying career as a commercial airlines pilot. Flying for Eastern, Piedmont, and US Airways. He would go on to have another 21 years of continued flying and loving every minute of it! It was something he never dreamed of but was certainly “par for the course” for such a great pilot

and someone who loved flying as much as Donald did. The thing to remember here is it wasn’t always easy but Donald kept his “eye on the prize” and never gave up on achieving his goals. This book is such an inspiration to me especially since I became friends with Don. Knowing him as well as I do now and reading this book about his life has in many ways made him my Hero. He is a wonderful person and this book is fun to read. I’ve heard reports that once people start reading it they can’t stop. One such story came in a few weeks ago from a friend that said they wish they had not started reading that book when they did. They started at 11PM and read all night long without a wink of sleep. This book is just that interesting and I almost had the same experience when I started it. Donald never meant to sell the book as he explained to me. It was meant for his family and a few close friends. However word got out and people started asking to purchase a copy. Being the nice guy he is, Donald said yes and has had to order several hundred copies at this point and suddenly can’t seem to keep them on hand. The books are “flying off the shelf”! No pun intended!

My Husband of 15 years is the “Building House” part of Mad River and I am the “creating home”, although we overlap into each other’s parts on a daily basis. He did the original store build-out and is the store’s “handyman.” He also builds some of our furniture, mirrors, trays, and anything else I need that’s made of wood. And I am very much involved in the design aspect of his building…. Working together makes for an interesting dynamic relationship.

Q. MAD RIVER IS A UNIQUE NAME. HOW DID YOU COME TO NAME YOUR BUSINESS, MAD RIVER? A. Long before I knew Jamie he named his building business after his favorite ski area Mad River Glen in Waitsfield, Vermont where he grew up skiing. It’s a family owned ski area that retains an old ski lodge feel to this day but also one of the more challenging terrains. Their motto is “Mad River. Ski it if you can”. When we joined my design experience with his building experience it seemed only logical to keep the name and expand the brand.

ome of the area’s finest historic and contemporary homes will open their doors for The Southport Historical Society’s 26th Anniversary Christmas Tour of Homes. Since 1989 hundreds of tour-goers have experienced the sparkling lights, glowing fires, glistening trees and gorgeous holiday decorations of many homes throughout lovely downtown Southport.

This year’s tour will be held on Saturday, December 12, 2015 and run from 2 PM until 7PM, rain or shine, and will showcase ten sensationally decorated homes. Be

sure to wear soft-soled shoes for comfort and to protect the wood floors in these lovely homes opened for visitors to enjoy. The Christmas Tour of Homes is a fund-raising event for the Historical Society to further promote the vision to bring together persons interested in the history of Southport and to promote a better appreciation of our heritage. Proceeds from this event will enable the Society to provide scholarships at South Brunswick High School and enable the Society to maintain the Old Jail Museum on Nash Street. Tickets will be available Monday, November 23, 2015 and may be purchased at the Southport Visitors’ Center and Fort Johnston Museum, Franklin Square Gallery and the Southport-Oak Island Chamber of Commerce. This charming two-story cottage with a white picket fence was constructed in 1905. This was at the end of a building boom when Southport was humming with economic ventures. Wood decking, mimicking ship decks, decorates the front yard. Early on, a “station” or “traveling” black Preacher and his family lived here. O. F. Swasey built this lovely home circa 1910. The exterior of the home is cypress with all of the window frames and glass original to the house. The tin ceiling in the living room and the bead board in the living and dining rooms were discovered during a 2001 renovation. Missing tin squares were later located in Vancouver, Canada. wo of the first recorded gifts of great value given by the wise men were the essential oils frankincense and myrrh. Both of these were highly valued in ancient civilizations for their health and beauty benefits. In the spirit of the season, I decided to investigate essential oils as I first became interested in their use during yoga practice and currently use Lavender daily! Essential oils are those derived from plants including their leaves, flowers, stem, root or bark. These differ from fragrance oils, which are often artificially created with manmade chemicals. Myrrh in fact is a dried resin extract from a tree found in North Africa and the Middle East which is known to prevent signs of aging, soothe cracked or chapped skin, assist with embalming, contribute to perfume

and use for dental infections, sores and wounds. Frankincense is also ancient oil extracted from a specific tree bark found in Oman, Yemen, Somalia and Ethiopia. As oil, it was used for skin health, prayer and meditation as well as anointing oil known for mental peace and relaxation. So highly valued, this oil was often reserved for sultans! As I began to research essential oils and their use, I found more information then I can share. The benefits and uses for each particular type of oil from Bergamot to Eucalyptus and Geranium oils are so diverse that it requires you to research what body system you want to nurture or support. Selecting the purpose for your oils will help you decide what you need. For example, Peppermint can be used to alleviate upset stomach or promote oral health, which is why toothpaste is often peppermint flavored. Lavender is used for calming and relaxation and for muscle tension. YlangYlang is often used in hair and scalp products and Eucalyptus for sinus headaches. Please choose carefully and consider the following:

1.PURE ESSENTIAL OIL IS DIRECT FROM A NATURAL SOURCE.

This may or may not be organic. Make sure your essential oil has no additives or synthetic ingredients.

2. “YOU GET WHAT YOU PAY FOR”

Pure Essential oils are expensive. The label should show that the oil is 100% pure and give the plant botanical and common name.

3. IT IS VERY IMPORTANT TO PURCHASE THE BEST QUALITY FOR THE LOWEST PRICE.

You should determine where the oil came from and how it is created. Oils come from around the world. Investigate and read reviews and do research. The FDA does not

Bringing Italy to Southport One slice at a time

ella Cucina - an Italian name with an English translation equivalent to: “beautiful kitchen”-delivers old world Italian cuisine with something for everyone at every pace.

Bella Cucina is a family restaurant locally owned and operated. Tom McAndrews, the third, and his father, Tom McAndrews Jr., opened Bella Cucina eleven years ago. What started as a NY style Deli and NY style pizza place evolved and expanded to an all in one menu, “three different areas with a choice of dining style, “ explains Tom, “quick serve or quick take-out, a comfortable lounge where one can watch the game, and the dining room, which is also used for Holiday parties, rehearsal dinners and birthdays.” The spaces open accordingly, 11am, 4pm and 5 pm, seven days a week. This is the McAndrews first restaurant, the Italian is on the Mom’s side of the family; Demeo, “The meatballs, lasagna,

eggplant dishes, are all Grandma’s recipes that go back for generations,” says Tom. Tom’s father (Tom Jr.) travels to Italy and is always bringing back new ideas. It’s a collaborative effort between father and son, and a loyal staff; some that can boast a decade with the McAndrews. With the expertise of Assistant Manager and Pizza Chef, Joel Wilcox and with Head Chef; a 2004 Johnson and Wales graduate, and People’s Choice award winner for Most Creative Chef, Tracie Bartlow, Bella Cucina strives to bring the community an Italian food experience. Available all day, the pizza is award winning, hand tossed NY style with homemade dough, “ just enough cheese to let the sauce come thru- because the sauce

is the first taste, “ describes Tom. Pizzas include the Margherita, the Primavera, Roma, and Vittoria to name a few, with ingredient combinations comprised of but not limited to: fresh mozzarella, tomatoes, basil, Italian sausages, Genoa Salami, and pepperoni. This is pizza one wants to fold over to eat. Calzones, Stromboli, Deli and Hero Sandwiches, Salads and Chicken Wings are also available all day. Available after 4pm the menu features Antipasto - Appetizers, Pasta - a cravings portion (half size portions on pasta dishes are also available), Carne - Meat and Pesce - Fish. The menu is Tuscan style. “Tuscan style is five ingredients or less,” explains Tracie, “we want to bring out the flavor of the food”. “We work hard to make sure nothing comes in packages-” Tracie enthuses,” the cooking is raw- nothing precooked, ‘ala minute’- we prepare it for your plate.” There are nightly pasta specials like the Porchinni and Truffle Ravioli. For the meat lover there are Carne specials like veal, chicken, steaks, lamb and pork, and seafood such as scallops, shrimp, clams, crab cakes, and fresh catch of the day. Also for the vegetarian and gluten free diners there are also options available. “We are continually looking for new vendors and supplies- to see what’s out there, rather than just relying on one big wholesaler, while also supporting local businesses,” explains Tracie, “we have a longstanding relationship with Haag and Sons of Oak Island, and Inland Seafood, -we know when the boats are coming in!”. The desire for local has kept in line with the rise in Craft beer popularity. In addition to Italian wines, and Italian aperitifs like limoncello and gratta, the fully stocked bar carries Carolina Pale ale from Carolina Brewing Company in Holly Springs, NC, and Check 6 winter ale from here in Southport. Plans

for the future extend to carry local NC featured liquors and a move towards “more exclusivity for local products,” says Tracie. This winter Bella Cucina is going to feature Regions of Italy. Specials will feature one region each week. Tuscan, Umbria, Roma, meals will be paired with wines of the region and desserts, “this gives us a chance to try new things and explore cuisines from other regions of Italy,” explains Tom. Other new features this winter include a Broccoli and Cheese Soup serried inside a baked potato garnished with bacon scallions and Romano cheese. And if that isn’t enough to make your mouth water imagine squash and sausage stuffed pork loin served with mashed turnips and glazed carrots or the new dessert, perfect with the after dinner espresso or cappuccino, a Chocolate Semifreddo with berries and sugared pistachios. The specials change twice a week, mid week and for the weekends and are posted on Bella Cucina’s Facebook page. The McAndrews moved to the area from a little seaside town in Long Island, NY, and when they discovered this area, they “fell in love with the place - this is where we wanted to be”, says Tom. And eleven years later, awards and certificates of appreciation from area organizations and area schools, (they fed the SBHS football team earlier in the year) are framed thru out the restaurant, the community involvement is apparent with Bella Cucina bringing a slice of Italy to this seaside southeastern North Carolina home. 1

hen the month of November rolls around and it starts to get cool outside, I get a hankering for oysters. To me, roasting oysters on an open fire outside is one of life’s greatest pleasures. However, it wasn’t until I moved to Southport over 20 years ago that I experienced my first oyster roast.

In hopes of spreading the oyster love, I wanted to investigate all the different varieties of oysters and better understand the differences between each. I knew the perfect person to guide me in my quest would be Chef Steven Phipps of Mr. P’s Bistro and Oyster Bar. He suggested going to Eagle Island Fruit Stand and Seafood, located at 2500 US-421, Wilmington, NC 28401. It is just past where you turn right onto the Isabella Homes Bridge. If you have never been to Eagle Island you need to go. It is the oldest store in Wilmington. It is a special place. You can get just about anything you need. What makes it special is it seems to have been stuck in time. Somehow it managed to stay the same and not succumb to modernization. It is like the old days. You can get a Sun Drop in the glass bottle, shelled butter beans, boiled peanuts, fishing lures, cooking utensils, hand dipped ice cream, local produce and seafood! Husband and wife, Earl and Marie Flowers, established Eagle Island in 1965. Their son, Norris Flowers now runs the store. “It was a small shed with a dirt floor across the road where the truck store is now. They made $13 on their first day.” recalls Norris. They started selling seafood and oysters out of the back of a pick up truck in 1969. They have

been in their current location since 1985, which now houses a separate fish market. “We have customers from all over, Raleigh, Charlotte, Greensboro, Winston-Salem that come to get oysters from us.” explains Norris. Over the years, the Flowers family has formed relationships with companies up and down the east coast to offer a variety of oysters to their customers. Mr. Flowers introduced us to Antonio Cruz, to help us sample the oysters available that day. (Normally, they would have more varieties, but the heavy rains have closed down several sources). Antonio is the oyster guy at Eagle Island. As we approached the cooler where the oysters are kept, Chef Steve quietly said, “Oysters are my life!” I smiled and said, “I knew you were the right man for this job!” You can purchase oysters by the: Bushel, 1/2 Bushel or Peck (which is a 1/4 bushel). Eagle Island will wash your oysters, which is a real perk! The shell of the oyster is usually covered in mud and you definitely want to rinse that off before you eat them. Of course, you can do it yourself with a garden hose. But Eagle Island has a special machine that spins the oysters, while they spray them down. And there is no extra charge - nice! Buying Oysters can be intimidating if you don’t know what you are doing. Thus, the reason for this story. As we sampled each type of oyster, Chef Steve gave his expert opinion on each variety. Chef Steve says that Topsail oysters are the best bang for your buck! They are offered as singles (more expensive) or clusters. Clusters are great for an oyster roast. You can also purchase oysters from several other local places including: Haag & Sons, Clem’s Seafood and Pelican Seafood.

Oyster Bruschetta with Sage 2 dozen shucked oysters 12 slices french bagette 1/2 cup olive oil 1 TB minced garlic 1 tea ground black pepper 1 bunch sage leaves 12 slices Prosciutto ham 12 pieces of Brie cheese Preheat oven to 375. Combine olive oil, garlic, and black pepper in a small bowl. Brush both sides of each bread slice with the oil mixture and arrange on a baking sheet. Place one slice of Prosciutto and one sage leaf on each slice of bread. Top with two oysters per slice and one piece of Brie. Bake 15 minutes, until cheese melts. Enjoy!

There are many ways you can cook oysters. Go online and do some research and see what cooking techniques inspire you. Invite some friends over and try roasting them over a fire. Try different varieties and see whether you prefer salty or buttery, big or small, roasted or steamed. Chef Steve offers this recipe You can always skip the labor and head into Mr. P’s Bistro and Oyster Bar to sample some of Chef Steve’s genius creations. My personal favorite is, Oysters Bienville - freshly shucked oysters topped with shrimp, shallots, garlic mushrooms and parsley in a sherry sauce and baked on the half shell. Or Oysters Rockefeller - topped with spinach, bacon, cheese and shallots, topped with his roasted red pepper hollandaise and baked! They also offer raw and steamed oysters too! 1

A guide to champagne and sparkling wines for the season BY: PAUL WASSERMAN, UNCORKED BY THE SEA, SOUTHPORT, NC

L

egend has it that Dom Perignon after tasting his perfected wine, now known as Champagne, said “I’m drinking the stars.” As the Holiday Season and its festivities rapidly approach, what wines are more festive than Champagne and Sparkling wines?

These bubbly libations are produced in nearly every wine producing region in the world. But none are more famous than the wines of the Champagne Appellation. It is the northern most vineyard area in France. It is so cool that the base wines would be barely palatable. It is the Champagne Method that turns these base wines into what some see as the ultimate elixir! These wines were produced first in the early 1700’s. But this was not the first region to create a sparkling wine. That distinction goes to Blanquette de Limoux, an appellation in the Languedoc in southwest France. In fact, this sparkling wine began production 100 years before the first Champagne was produced. It should be noted that Blanquette is made in the Champagne Method. Champagne is one of the world’s most complicated wines to make. To say these are wines that undergo a second fer-

mentation in the bottle would be correct, but at the same time an understatement. The Champagne Method begins with a series of blends. First, the winemaker blends 30-60 still wines known as “base” wines. These base wines are blends as well. They are blends of three approved varietals: Chardonnay, Pinot Noir and Pinot Munier. The final blend is to create a non-vintage “House Style” and is completed by blending wines from several different years. The “House Style” is always demonstrated by the producer’s Non-Vintage Brut. After these blends are completed yeast and sugar are added to the bottles. The byproduct of the yeast and sugar is carbon dioxide—the secondary fermentation. While this process is taking place the bottles are stored neck down. Over time the spent yeast collects in the neck. When ready the necks are frozen and dead yeast cells pop out. To replace the

lost wine a mixture of reserve wine and sugar are added. The amount of sugar in this solution determines the dryness of the Champagne: Brut (Very Dry), Extra Dry (Off Dry), Sec (Lightly Sweet), DemiSec (Sweet) and Doux (Very Sweet). The “Champagne Method” is used throughout the world, but, outside Champagne itself, it is by law called “traditional Method”. The best American Sparkling Wines, as well as the best from other growing regions all use the “Traditional Method”. The major French Champagne Houses use this method at their US projects: Taittinger at Domaine Carneros; Moet & Chandon at Domaine Chandon and Louis Roedered at Roederer Estate, to name a few. Most consumers of sparklers think first of Champagne then American Sparkling wines. But, there are some superb sparkling wines made elsewhere. The Cavas of Spain’s Penedes regions are fresh and delightful and generally inexpensive. Mont Marcal would be one to look for. Huia

of New Zealand Sauvigon fame makes a stunning no-vintage Brut. We can’t overlook The sparkling wines of Italy: Prosecco and Moscato. Added to these are the world class sparklers from Bellavista Franciacorta in Northern Italy’s Lombardi region. A producer to seek out is Castaldi Contadi Franciacorta. This producer makes a fantastic Brut and Rose. is’ the season to be jolly so we of course decided to pick the saddest movie we could find! Ha, not really. Truthfully as Christ followers we celebrate this Holiday as a birth of our savor- our redeemer. We found this movie to be fitting as it deals with redemption and forgiveness. The idea of a clean slate at the beginning of a new year ties in with this, as well. We choose this movie based solely on the cast list. We knew it was going to be a good one in spite of the sad subject matter because we just couldn’t go wrong with Jake Gyllenhaal, Rachel McAdams and Forest Whitaker. If we are being honest, the guys watching it with us were excited about 50 Cent and the soundtrack produced by Eminem …Oh, boys…. Billy Hope (Jake be-still-my-heart Gyllenhaal) is a New York City middleweight boxing champion. While growing up in an orphanage he met his best friend the gorgeous Maureen (Rachel, you-will-always-be-the-chic-from-The-Notebookto-me, McAdams). They later became husband and wife with matching dove tattoos, aww. They were perfect for each other! She could literally finish his sentences for him. (I almost feel like I got more of a love story out of her relationship with Billy then I did in the Notebook with Noah, huh, interesting...) The two of them together built this lavish lifestyle up from nothing and have a beautiful daughter Leila (Oona Laurence) whom they cherish dearly. Billy is a caring and attentive husband and father. His world revolves around his family and his career. They are his support system although he and Maureen work very hard to protect Leila from the violence. Leila wanted nothing other than to be there during the matches to cheer on her dad but they felt that even as a boxer’s daughter she was still too young to understand the concept of people beating up her dad and after winning World Maureen talks to Billy about how she believes that its time for him to throw in the towel and retire rather than listening to Jordan Mains (50 cent) and signing on to yet another Boxing Tour. “The more you get hit, the harder you fight. I get it. Only now you’re taking way too many hits before you get off. You can’t

fight like that anymore.”- Maureen Hope However, tragedy strikes when Billy “The Great” ‘s loses his temper when he is taunted by an up-and-coming boxer, Miguel “Magic” Escobar, during a children’s banquet that Billy spoke at. This scene is tragic for so many reasons. It reminds us all of those times when we should have listened to someone or done something differently. That unforgiving part of our selves that is always looking back and saying, “what were your thinking?” BANG! In a blink of an eye- Rock bottom- that’s where Billy finds himself (this is where we find ourselves becoming very angry) as he becomes so wrapped up in his grief and guilt that he is blind to all the obvious things going on around him! He spirals into a drunken depression and just when you think it can’t get any worse, it does… He loses his career, house, money, his manager, everything!

Billy goes out seeking revenge against the person he blames for his misery and discovers that, like him, this person is just a human being with his own problems. This is a huge awakening for him. Gyllenhaal has an amazing way of playing this role. We witnessed some big changes in his character without it being transparent. We could see his heart changing and feel the emotions as if it were happening to us personally. Billy is very rough around the edges and a complex character to play. Jake pulls it off, no problem! Redemption is an amazing thing and what we believe is truly the moral of this story Billy finds what is truly important to him and finds solace with the owner of a gym, Tick Willis (Forest Whitaker), who devotes his time to training inner city kids to channel their anger in a constructive way. Tick is a trainer and former fighter with strict rules, who spends all his time building relationships and keeping kids out of trouble and he is just what Billy is in need of. Tick is a tough guy but he is also alone and dealing with his own ghosts. It is a rough partnership but in the end they create a relationship that is beneficial to both of them. I think with a movie like this, as sad as

This year’s concert, Fantasia Noel, features a variety of songs for the Christmas choir, soloists and a trio, and Music Director Greg Walker with a piano solo. Old time favorites such as “Deck the Hall,” “Little Drummer Boy” and “Sleigh Ride” are traditional favorites, while “Merry Christmas Mozart” takes a new twist on some of our favorite Christmas lyrics set to the classic melodies of the famous composer. The choir shares the message of Christmas with “Here with Us” and “I Heard the Bells on Christmas Day.” The concert finale, “The Carolin’ Reel,” is a fast-paced, lively medley that will fill the church with the joyful sounds of Christmas.
