T

he towns of Oak Island and St James are both celebrating their 20th birthday this July.

FROM MAYOR, CIN BROCHUIRE, MAYOR OF OAK ISLAND We are so excited to be celebrating 20 years of excellence, and we look forward to a future that’s even bigger and brighter. The Town of Oak Island turns 20 on July 1st. The Town was formed when the leaders of two beach towns on the island — Long Beach and Yaupon Beach — decided to merge. We’ve been growing and thriving ever since. The Town of Oak Island includes the mainland developments of South Harbour Village, Oakwood Glen, the Preserve and Pine Forest. We have been in a building boom

on the island, and we’re starting to see more development on the mainland too. But as we grow, we’re still keeping our family-friendly island vibe. It’s such an exciting time to live or visit here! Our Oak Island Pier has been rebuilt

and it is absolutely beautiful. We’re also excited to open our new Events Center at 801 Ocean Drive, adjacent to the Pier. We have a fantastic celebration planned for this milestone birthday. Oak Island always hosts Beach Day events as part of the official NC 4th of July Festival, and this year is no exception. Join us on the beach by the Cabanas and at the Middleton Park fields on July 1st for a sand castle contest, volleyball, horseshoes, other games and activities, and a shag contest. Later that night, we’ll have a band at the Pier, and we’ll stage our fireworks display from the end of the Pier too. Whether you’re just visiting or you’re a local, it’s a great

time to make wonderful memories at Oak Island!

FROM MAYOR JEAN TONER, MAYOR OF THE TOWN OF ST. JAMES This year the Town of St. James is celebrating its 20th birthday. So much has happened and so many residents have contributed over the past 20 years to make St. James what it is today. In a relatively short period, the Town has grown to become the 4th largest municipality in Brunswick County. The Town is mostly residential, but does include a small business district and a municipal campus that includes town offices as well as a community center,

which is very popular with our residents. The St. James Property Owners Association office is also conveniently located on the campus. What began as a vision by a small number of residents over 20 years ago has evolved into a thriving community of over 5,000 citizens. When fully developed, we anticipate a population of approximately 9,000. We will be celebrating our 20-year milestone with a va-

riety of events including a car show, cruises on the Atlantic Intracoastal Waterway, a scavenger hunt, a parade, a fishing derby, games for kids and several concerts from local musicians. A picnic with fireworks on July 1 will close out the four-day festivity. St. James is proud of our brief history and we are also proud to be a part of the greater southeast coastal North Carolina community. - Mayor Jean Toner

Beat the Heat!

Tips for staying cool this summer STORY BY LISA STITES

W

e love summer and all the fun we get to have playing outside. But too much of a good thing can ruin your summer fun. Our friends at the Brunswick Wellness Coalition have offered some tips to help you beat the heat this summer. Whether you’re planning a day splashing in the waves or heading out on a boat, these suggestions from Lindsay Mayer, MPA, Executive Director of the Coalition, can help keep you safe all summer long.

Wear appropriate clothing: Choose lightweight, light-colored, loose-fitting clothing. Stay cool indoors: Stay in an air-conditioned place as much as possible. If your home does not have air conditioning, go to the shopping mall or public library—even a few hours spent in air conditioning can help your body stay cooler when you go back into the heat. Call your local health department to see if there are any heat-relief shelters in your area. Keep in mind that electric fans may provide comfort, but when the temperature is in the high 90s, they will not prevent heat-related illness. Taking a cool shower or bath or moving to an air-conditioned place is a much better way to cool off. Use your stove and oven less to maintain a cooler temperature in your home. Schedule outdoor activities carefully: Try to limit your outdoor activity to when it’s coolest, like morning and evening hours. Rest often in shady areas so that your body has a chance to recover. Pace yourself: Cut down on exercise during the heat. If you’re not accustomed to working or exercising in a hot environ-

ment, start slowly and pick up the pace gradually. If exertion in the heat makes your heart pound and leaves you gasping for breath, STOP all activity. Get into a cool area or into the shade, and rest, especially if you become lightheaded, confused, weak, or faint. Wear sunscreen: Sunburn affects your body’s ability to cool down and can make you dehydrated. If you must go outdoors, protect yourself from the sun by wearing a wide-brimmed hat, sunglasses, and by putting on sunscreen of SPF 15 or higher 30 minutes prior to going out. Continue to reapply it according to the package directions. Tip: Look for sunscreens that say “broad spectrum” or “UVA/UVB protection” on their labels- these products work best. Drink lots and lots of water! If you’re outdoors, try to drink some water every 15 minutes. Avoid caffeine and alcohol as both will make dehydration occur more quickly. Eat well: Eat water-dense and cold foods like salads, fresh fruits and vegetables to stay hydrated and keep cool. And don’t forget to consider your fourlegged friends too. If you leave dogs outside during the day, make sure they have access to shade and plenty of water. When walking, don’t let them linger too long on hot surfaces such as asphalt or sand, and be on the lookout for symptoms of overheating, such as difficulty breathing and excessive panting, according to the ASPCA. And don’t leave pets in closed up vehicles. If you live here full-time or if you’re just visiting, don’t think you have to spend every waking minute on the beach. There are plenty of activities you can do when it’s hot

to break up some of your beach time. One way to cool off is to try the new Splash Pad on Oak Island, at the Middleton Park fields on SE 46th Street. Though it’s still outside, the kids will have a have a blast getting sprayed and standing under the big bucket when it spills over. Just don’t forget to lotion up with sunscreen first. Day trips are also a great way to spend some time out of the heat. Take the Ft. Fisher Ferry to Carolina Beach and back (just $7 per car per trip across). Tour the NC Aquarium while you’re there, or just enjoy the scenic ride across the water. Spend some time in stores — while you’re enjoying the air conditioning, you can pick up unique

gifts for friends and family they won’t be able to find anywhere else. Or plan a visit to the NC Maritime Museum at Southport — did you know they have a working periscope inside the museum? You could even grab some lunch or your own picnic fixings and stake out a shady spot under one of the majestic live oak trees in Southport’s Franklin Square Park or on the Garrison lawn. Whatever your plans this summer, just remember the basics — plenty of water, use sunscreen and don’t overdo it — and you’ll be sure to have your best summer yet.

Water Safety First Coast Guard Boating Safety Month STORY BY LISA STITES

O

ne of the things that draws so many people to our area is easy access to the Atlantic Ocean, the Waterway, and all the canals and creeks that we love to explore. While some people seemingly grow up on the water and know how to navigate any vessel safely, others are brand new to boating and may need some training before heading out to sea. One of the missions of the U.S. Coast Guard Auxiliary is to promote boating safety, and that includes teaching boating classes. In 2017, the Coast Guard counted 4,291 accidents that involved 658 deaths, 2,629 injuries and approximately $46 million dollars of damage to property as a result of recreational boating accidents, according to the 2017 Coast Guard’s 2017 Recreational Boating Statistics report. Also, according to the report, where the cause of death was known, 76 percent of fatal boating accident victims drowned, and of those drowning victims with reported life jacket usage, 84.5 percent were not wearing a life jacket. The Oak Island Flotilla does its part to further the mission of education, teaching boating safety courses throughout the year. New boat owners and teens anxious to take the helm themselves should plan on spending one short day learning important skills that can lat a lifetime. Even anyone who will be a regular passenger on the family boat can benefit from classes — just because you’re not planning on being in charge out on the water, it doesn’t mean you shouldn’t know what to do in an emergency. The next “About Boating Safety” course will be held on Saturday, July 13, from 8 a.m. to 4 p.m. at the Brunswick County EMS Headquarters, 40 Naber Drive, Shallotte. The cost is $35 per person or $40 per person if two or more register together. Attendees may pay either by check or cash at the door or via PayPal at the Flotilla’s website, http://wow.uscgaux.info/ content.php?unit=054-10-05. This is an all day course with 30-45 minutes for lunch. To register send your name(s) to boating-

safety@ec.rr.com. The next course offered will be September 7. “About Boating Safety” is a beginner boating class will give you the knowledge needed to obtain a boat license or safety certification in many states, according to the course description on the FLotilla’s website. Many boat insurance companies offer discounts on boating insurance to boaters who successfully complete “About Boating Safety.” Once you’ve mastered the basics, you can check out other courses the Auxiliary offers for more in-depth training. Topics for the “About Boating Safety” course include the following (as described on the Flotilla website): Introduction to Boating - Types of power boats; sailboats; outboards; paddle boats; houseboats; different uses of boats; various power boating engines; jet drives; family boating basics. Boating Law - Boat registration; boating regulation; hull identification number; required boat safety equipment; operating safely and reporting accidents; protecting the marine environment; Federal boat law; state boating laws; personal watercraft requirements. Boat Safety Equipment - Personal flotation devices (“life jackets”); fire extinguishers; sound-producing devices; visual-distress signals; dock lines and rope; first aid kit; anchors and anchor lines; other boating safety equipment. About Boating Safely Safe Boating - Bow riding; alcohol and drug abuse; entering, loading, and trimming a boat; fueling portable and permanent tanks; steering with a tiller and a wheel; docking, undocking and mooring; knots; filing a float plan; checking

equipment, fuel, weather and tides; using charts; choosing and using an anchor; safe PWC handling; general water safety. I started working in Southport in 2004 for another independent insurance agency and was mentored by the owner, Walter Hester. Walter passed away a couple years later and I was tasked with managing the agency. In 2010, Walter’s widow decided to retire. At that time, I opened Coastline Insurance Associates. What is the most important thing when shopping for insurance quotes? Make sure you get a quote with equal coverage limits and deductibles. Also, make sure your agent has experience in the coastal region. Can you tell us about an interesting claim that was covered? (Something unexpected) I think Farmers Insurance has the best TV commercials regarding strange claims. With that said, I have one that I call “Heel Pain.” I had a client that threw a cocktail party at her house. One of her guests wore high heel shoes that scratched and damaged her hardwood floors. She filed the insurance claim and the insurance company ended up replacing the hardwoods in her house. nsurance rates usually go up every time there is a claim… how easy is it to make a claim? Weather related claims typically don’t affect your insurance rates, but other claims certainly can affect home and auto rates. Also, insurance companies look at claims frequency. Before you file a claim, make sure it will exceed your deductible and make sure it’s a covered loss so that you don’t waste a claim. What exactly does it mean to be under-insured? Or Over-insured? You could be under-insured if you the insurance coverage on your house is less than the actual cost to rebuild your house. This is extrememly important because insurance companies may charge you a penalty at claim

How can I lower my car insurance… any tips? It’s best to call an independent agent that can shop several companies. Auto rates in NC tend to fluctuate a lot, so it’s important to shop. Also, you typically tend to get better rates if you carry liability limits that are least $100,000 per accident / $300,000 per occurrence. Drivers who carry higher limits show the insurance company that they are more responsible. Some other things that may help lower your rate would be getting married, improving your credit score, buying a house, bundling policies with the same agent, and going three years violation and accident free. Most of our carriers now have apps for your smart phone that will measure your driving habits. Good drivers will see a discounted rate. With hurricane season in full swing - what advice can you offer to make sure your property is fully protected from storms, flood, wind, falling branches, etc. Again, make sure you have a local agent that is experienced in this area. Make sure you understand your coverage and deductibles. You’ll typically have a Named Storm or a wind/hail deductible that is higher than your standard deductible, so make sure you understand the difference. Also, we encourage our clients to carry flood insurance even if it’s not required by their lender. Flooding is common in this area and any place can flood with the right storm.

FESTIVAL RECEIVES CONTRIBUTION FOR FIREWORKS DISPLAY SOUTHPORT, N.C. - The North Carolina 4 th of July Festival would not be complete without a grand fireworks display, and this year the Festival Committee would like to acknowledge the contributions of local

businesses who help make this event a success. The American Fish Company and Frying Pan made a substantial donation to enhance the fireworks display in memory and honor of Ed Harper -- Editor and Publisher. Ed Harper served as the Editor and later Publisher of the The State Pilot for 46 years. He was an avid supporter of the festival. The State Port Pilot has been a longtime supporter of the N.C. 4th of July Festival. Whether it is publishing events or a request for special needs, the paper’s staff does a tremendous job promoting the festival’s activities and showcasing our area by capturing the wonderful sense of community that is our hometown. Additionally, American Marine Construction secured a barge to ensure the continuation of the fireworks off the Southport waterfront. Without the barge, the fireworks display would not be possible. The Festival Committee appreciates all

of our sponsors and media partners who help make the festival a success each year. For more than 200 years the City of Southport, N.C. has celebrated the nation’s independence. Annually, more than 50,000 people visit during the festival. With events ranging from arts and crafts in the park, vendor booths, street dances,

n past years The Salty Dog Park has been organized by a private nonprofit organization. Due to a retiring membership base, the physical demands required for upkeep of the park have simply become more challenging than their organization is able to manage. While we are disappointed to hear this decision, we respect and understand that this chapter in their lives has come to a close.

Their organization has since decided to cease managing the park in August of 2019. Those interested in taking over the responsibilities of the Salty Dog Park, are enthusiastically welcome

FITNESS Fight Back with Food Five Science Based Tactics for Using Diet to Control Diabetes STORY BY BRIAN TULLY, MS, EP-C

M

ore than 100 million Americans have diabetes or pre-diabetes; meaning they have poor blood sugar control, and if left untreated will often lead to Type 2 diabetes within a few years. And the sad fact is that this number is continuing to rise. Scientists are working diligently to research how nutrition impacts the effect of diabetes risk. Below are some highlights from recent studies that may give you a leg up in fighting back. 1.

BREAK THE FAST A recent study in The Journal of Nutrition found that skipping breakfast increased the risk of Type 2 diabetes. In fact, those who skipped breakfast five days a week or more increased

their risk by as much as 55 percent. During your night of sleep with no food intake, hormones are hard at work to keep things balanced from a digestion and fuel perspective. It is believed that by not breaking this fast first thing in the morning it may have an impact on how your cells respond to insulin; the hormone that signals fuel uptake into the cells. 2. BYPASS THE FAST FOOD CONVENIENCE In this instance, easy is not always better. Studies show that simply living in close proximity to fast food locations offering the high fat, low nutrient option for an easy meal showed an association to increased Type 2 diabetes risk. The impact of the close by fast food options was especially high on overweight individuals. Short of moving further away from this unhealthy convenience, you could try to make a simple rule that limits your number of visits to any of the fast food joints in your area. You could even reward yourself with a treat if you avoid them for an entire month. A once a month visit is way better than one or more times per week. 3. ALL PROTEIN NOT CREATED EQUAL Choosing fish or poultry over bacon and processed beef is the kind of better dietary choice that helps lower

risk for Type 2 diabetes. Additionally a study following 55,000 people over a 5-year period, published by The American Journal of Clinical Nutrition, concluded that egg consumption on its own was not a risk factor for diabetes. The greater risk factor was with high meat consumption and obesity. Don’t skip the protein though. Protein is an important building block to adding and maintaining muscle, and muscle is one of the main consumers of blood glucose (the item diabetics have trouble getting rid of). 4.

SKIP THE SKIM Although this research is in the early stages, a recent study showed that people with the highest levels of compounds associated with dairy fat consumption were nearly 30 percent less likely to develop Type 2 diabetes over a 9-year average (compared with those with the lowest levels of this compound). More research needs to be done on the different types of dairy sources and level of impact. But for now it may be good to start thinking about if the current guidelines that encourage low-fat of fat-free dairy options are truly the best choice. Hopefully we learn more about this one soon. 5.

PICK MORE PLANTS We have already established that being overweight is a risk factor for

Type 2 diabetes. Another recent study, showed that overweight individuals following a predominantly vegan diet for 4 months experienced a greater drop in body fat levels and insulin resistance than those following their usual diets. Even though the vegan diet was fairly high in carbohydrates (approximately 70 percent of the calorie intake) the individuals were still highly effective at losing weight, which is contrary to the popular thinking that carbohydrates are bad for your weight loss plans. This should tell you that quality or type of carbohydrate is more important. Fruits and vegetables have a higher amount of nutrients and fiber, which researchers believe play a major role. So there you have it -- five simple steps you can start right away to help in the diabetes battle. Eat your breakfast, skip the fast food, include plenty of better proteins, don’t remove all the dairy fat, and load up on more plant based foods. The fight will no doubt continue, but hopefully these tips will give you a fighting chance. Southport’s newest beer and wine destination is founded on a heartfelt belief in the excellence of North Carolina’s craft brewing industry. “I have a passion for beer. I’ve been home brewing for six or seven years now. Opening a brewery is way out of our price range, so this is the next best thing,” said Dewayne Hedrick, who owns the Southport Tap and Cellar with his wife Brittany. The Tap and Cellar is located at the corner of Howe and 9th Street across from Locals restaurant. While preparing to open their new business, the Hedricks traveled the state visiting breweries and wineries. “I think the thing that struck me the most is that in North Carolina, the quality is really high. You go to a lot of states and they’ll have a ton of beer, a ton of breweries, but that doesn’t mean it’s good,” said Hedrick. “Where ever you go in this state, the consis-

tency amazes me. Winston-Salem is a good example. There are two breweries, or three really. Wise Man and Incendiary and Foothills are all within walking distance of each other and they’re all putting out amazing products. “Before we got into beer we were into wine. You can go to the Yadkin Valley and hit up three or four wineries in a day. Against all odds, not really being a wine state or anything like that, they’ve figured out how to make decent wine. Beer is the same way. Against all odds, without having local grains, not having local hops, you know, everybody just takes pride in their products. It’s in their blood I guess,” Hedrick said. “I feel like in this state we have so much pride in the

state and the things we do.” The couple plans to bring that excellence and pride in craftsmanship to our area in the form of some products locals can’t easily find around here. “I’m going to be traveling the state picking up beer directly from the breweries, which is pretty neat, there’s only a few places that do that,” said Dewayne. “One thing in our state we’re lucky to have, the breweries can self-distribute. A limited amount, but they can do that.” This means Hedrick can source beer and wine from outside the distributor network, bringing in packages that customers may have never seen before. He’ll be buying from local distributors as well. Many North Carolina breweries utilize distributors, but he isn’t limited to the local distributor

network’s selections. Hedrick explained that his options are wide open. “I’m from Kenansville and Brittany’s from Eden. There’s a lot of good beer in that area that doesn’t make it out to the coast,” he said. “One of the top breweries in the state, Brown Truck Brewing, is out of High Point. We’re going to try to get their stuff.” He added that the Charlotte area is a hotbed of craft brewing right now, so he will likely source a lot of beer from that area. The Southport Tap and Cellar will feature mostly rotating taps, offering patrons the greatest chance to enjoy something new. A few taps will be more constant. “There may be some consistent ones, like Red Oak, we’ll probably always have Red Oak on tap. It’s a great product, probably 90 per-

There will also be some non-beer options. “We’ll have one or two taps dedicated to non-beer…alcoholic kombucha, cider, there’s a big thing with seltzers, maybe mead,” he said. But not everyone is a craft beer fan. Yet. Hedrick has some ideas on introducing someone who may have only experienced American mass-produced beers to the wider world of craft brews. “I would try to find them a good craft lager. Lagers are something….a lot of your beer nerds think lagers are lagers, that’s Budweiser you know, but actually a good lager that isn’t served ice cold but still tastes good and has a lot of flavor profile is a very, very difficult beer to brew, it has a lot of work that goes into it. If you tell somebody, Budweiser is a lager but this is a craft lager, you can lead them down the path to let’s try a blond ale, now there’s this New England IPA. It’s just a slippery slope once you go there,”

he said. While he will be happy to pour small samples for patrons who want to try before they buy, Dewayne says he personally likes to jump in with both feet. “I’m not one of those guys…like, we’ll offer samples, if you want to try a beer we’ll pour you a small sample. But I’m not one for samples, they’ll ask me ‘You want to try it?’ I say no, just pour me a pint. I’ve had some bad beer, but style-wise, I’ll drink any style. Funky, whatever, I don’t care, I just like beer.” The Southport Tap and Cellar will help customers choose and keep track the beers they’ve tried with menu boards from the Wilmington-based Untappd social media beer platform. The building housing the Southport Tap and Cellar features huge garage doors along the front wall (it was a car repair garage in the past) and the Hedricks plan to keep them open as much as possible, enlarging the space and giving the venue an open feel. There is a lit area out front for corn hole and a video game console center for kids,

or kids at heart, inside. While there is no kitchen, Hedrick plans to have food trucks available as much as possible and hopes to feature some low-key live music as well. Future plans include a grassy area with picnic tables and a beer garden atmosphere. If you want to approach your beer

with a sense of adventure, the Southport Tap and Cellar looks like a perfect place to start, and Dewayne Hedrick will make a terrific guide on your journey through the craft brewing world. He offers what I think is the perfect resume, “I’ve never had a beer I wouldn’t drink, so…..”

T

eaching pottery to many retired people, I often hear a lot of my students say that they are busier now than when they were working in their careers. The freedom to do what they want is one of the reasons they are so busy. But some are happy to finally get the chance to do what they really love. Anne Trombetta, Leland oil paint artist and retired middle school art teacher, agrees that she too is busier in her retirement. And she has also figured out how to bring the career that she loved into her retirement by continuing to teach. “I truly loved my work and still do. At this point in life I could be retired, but I find myself busier than ever. I paint every day.” Originally from Albany and Warwick, NY, Trombetta has happily joined the ranks of retirees who have migrated South. “When I moved to NC with my husband in 2012, we decided to create a studio in our home. Having a dedicated space to work makes a huge difference. The door is always open and I am in my studio first thing every morning,” said Trombetta. “I have degrees from SUNY Cortland and the College of St. Rose but most of my education as an artist has come from workshops or trial and error. I’ve taken workshops by Trisha Adams, Patti Molica, Dreama

Perry, Nancy Medina and others. I’ve also taken classes at the Cameron Art Museum, which are invaluable.” Being a life-long artist and born into a family where creativity was encouraged, Trombetta has enjoyed creating in many different mediums. “Up until six years ago I was not much of a painter. But after a few workshops in oil I was hooked. The most important thing for me has been practice…drawing, painting, reading, studying every day. And patience. When I look at some of my work from two years ago, I realize how much I have developed,”

she said. “I grew up in a family where education and creativity were very important. I was always encouraged to be an artist. Being an art teacher was the perfect choice for me. I had an opportunity to work in many different areas…clay, sculpture, weaving, jewelry, computer graphics and crafts.” Although Trombetta has used many different types of media in her artwork, oil paints are her preferred choice. “As a painter I prefer oils. There is nothing like the rich lushness

I sometimes compare it to frosting on a cake,” she said. “I have not settled into one style, although some people tell me they can recognize my work by the abundance of color and the subject matter. I have many sketch books, including one always in my car. My husband is a birder and so we sometimes go on outings. He looks for birds and I look for birders. can be the impetus for a piece of art. I continue to develop as a painter each day,” she said. “There is a certain Zen in painting. I try to get in the zone and enjoy the process.” Trombettas’s new adventure involves using her talents as an artist and a teacher to help others. She does this by teaching painting and also by her illustrations designed to help children read. “I teach a class called 2HourArtist and I do illustrations for comicphonics.com. 2HourArtist is a class for people who have little or no experience in painting. I provide all the materials and teach in a step by step method. The participants leave with a finished painting. It is very rewarding work. Some of the participants have never painted a picture in their lives, and are absolutely thrilled with what

they can do. No matter what age a person is, the creation of art is a joy. After teaching middle school art for many years, I have discovered that age is irrelevant in the artistic process,” says Trombetta. “Teaching art is a great way to learn art. It forces me to articulate what I am doing, why and how.” “Comicphonics.com is a website for teachers or parents who are teaching a child to read or write an essay. There is some great information on the website, and entertaining cartoons to enhance learning. I do all the illustrations,” she said. “We are about to release six books for beginner readers. Each one has a story line, and activity pages. This project has been in the works for many months, but with the help of our IT person, the books

KITCHEN Easy Summer Side Dish for the Grill Grilled Veggies With Honey-Thyme Vinaigrette STORY BY AMI BROWN

I

f your summer includes plenty of back yard barbecues like mine, then you are always looking for a quick and easy side dish that tastes great. If you are tired of slaw and potato salad, why not grill up some veggies with sweet and tangy vinaigrette. This unique side is sure to be a winner at your next party. INGREDIENTS 2 tbsp. red wine vinegar 1/2 tsp. honey Kosher salt Pepper 1 shallot, finely chopped 1 tsp. fresh thyme, plus more for serving 2 tbsp. olive oil, plus more for brushing vegetables 2 yellow summer squash, sliced 2 zucchini, sliced 1 small eggplant, sliced 2 red peppers, quartered lengthwise 1 lb. asparagus

DIRECTIONS Heat grill to medium-high. In small bowl, whisk together vinegar, honey and 1/2 teaspoon each salt and pepper to dissolve. Stir in shallot and thyme; let sit while grilling vegetables. Brush vegetables with oil and season with salt and pepper. Grill, turning once, until lightly charred and just tender, 2 to 4 minutes per side; transfer to platter. Stir 2 tablespoon oil into vinegar mixture; serve over vegetables and sprinkle with additional thyme if desired. These veggies are delicious served warm or cold, enjoy!

Local musician, singer, song-writer Ken Schnedetz is as professional as they come STORY BY CARLA EDSTROM

A

n Open Mic is where musicians can go and play in front of an audience to test out new songs or to just perform and meet other musicians. I once heard a fellow musician joke that you could throw a rock any night of the week and hit an Open Mic in Southport. We are lucky that there are several going on weekly in the area. It’s a great way to meet other musicians, make some friends and perform before an audience, or just be in the audience. Two years ago, I met singer/songwriter guitar player Ken Schnedetz at an open mic and was intrigued by his kind demeanor, his soft heart-felt songs, and how he always played without his shoes on. After both of us joined the original board of Up Your Arts, I’ve gotten to know Ken more as a fierce ally with deep vision for the arts and a great friend.

Ken was born in 1955 in a small midwestern town called Hinckley, Ohio. “For those old enough to remember the show Leave It to Beaver, I’ve always felt that describes our family lifestyle,” he said. “There was discipline as needed, but lots of fun with the neighborhood kids getting together to play, camp out in the back yard, ride bikes, paper routes. It was a great way to grow up, I have a lot of good childhood memories.”

Ken’s love for guitar playing started when he was 15 when his brother-inlaw introduced him to a Sears Silvertone electric guitar and amplifier. “I was mesmerized by it and kept asking him to bring it back so he could teach me and I could listen to him. Then he brought it over and just gave it to me, I was 15 years old. I was in heaven. I knew one little riff that I played and played and played. My sister’s bedroom was next to mine and I would be up late at night playing that same

riff till she would open the door and not very politely ask me to stop it,” he said. “My mom played the organ so I would get her music books and try to figure out songs and chords but they were old standards and I wasn’t that interested,” he said. “Then I found guitar music books- WOW, songs I wanted to play. That was the era of the Beatles, Jimmy Hendrix, Janice Joplin, Joe Cocker, so I tried my best to play ended up that it was a lot of noise and feedback. It was fun and I got to learn chords and some structure.” In the era of folk music, Ken really set his sights on getting an acoustic guitar. “Folk music and people like James Taylor, Gordon Lightfoot, Jim Croce, America, Simon & Garfunkel was upon us - what a great time to live and grow up in! So started my acoustic guitar romance,” said Ken. “The electric guitar was cool but I wanted an acoustic guitar. So, I begged my par-

ents to get me one. After the reality of Santa Claus was revealed, my brother and I would sneak into our parent’s room and look at the Christmas presents before Christmas to see what we were getting. There it was my $20 noname “acoustic guitar”. I played it - it was wonderful! When Christmas came and I was so excited - I saw the box and I knew what it was but the tag on it was my brother’s name - what is going on here? I’ve been duped. When my brother opened the box, it had a block of wood a hammer and a chisel in it with a note that read ‘make your own guitar’. My parents had a sense of humor but when they saw the horrified look and disappointment, they quickly directed me to go under my bed where my new guitar was. They got a good laugh. It was one of the happiest days of my life!” Moving around a few times over the

years, playing gigs here and there and dealing with some stage fright, Ken really started to find his musical chops after moving to NC. “I moved to Charlotte in 1986, and started playing open mics and met some very talented local musicians. Through open mics and meeting other musicians at different venues, I was able to book more gigs. A musician/sound man at the Double Door, Les Moore hooked me up with a band who needed a singer and rhythm guitar player. The band’s name was QuasiMojo and we had some good players and I got to stretch my voice and playing. After that stint I went, on my own and played more solo gigs,” he said. “I met so many extremely talented musicians and life-long friends within the music community in Charlotte. I still keep in touch with them and when I go back, I always plan a night to get out and play with as many as I can,” said Ken. “I’ve met another whole set of talented musicians in the Oak Island, Southport, Shallotte and Wilmington area and it is sure a pleasure being included and I feel I haven’t missed a beat on pursuing music. I feel very welcomed and at home here.” Ken credits his musical influence to a variety of different people from folk musicians to classic rock stars. “I think Al Stewart helped shape some of my writing style. His lyrics tell interesting story’s. Harry Chapin is another storyteller that I admire. I mainly enjoy a song that has something to say and is uplifting,” Ken said. “I have about 80-90 (songs) that I’ve written over the years. So, recording right now is on the top of my list. I started writing in the late 1970’s and performed a few songs with the duo’s and bands that I was in. I am performing more originals now. I read somewhere to call yourself a songwriter you should have written at least 100 songs. I want to be a songwriter so that has helped motivate me. The project now is to studio record about 10-15 of my best original songs with a full band arrangements, engineer it and get it out there.” When Ken sits down to write a

song, he focuses on weaving it into a story. “I usually come up with a word or a line that catches my attention and then I let the words start coming out, whatever they are. I don’t try to make any sense of it till the words stop flowing. I try not to overthink it and just let it happen. I have written songs on different topics but lean toward storytelling. I’ve also written songs for and about my friend’s and on special occasions such as a birthday or a special relationship I have with them. These are a lot of fun to do and have special meaning for me as well for them.” Currently, Ken is the Chairman of the Board for the local non-profit Up Your Arts, the co-sponsor with the City of Southport for the Plein Air event held in June. “John Kieffer approached me and asked me if I wanted to become a part of a startup non-profit organization with the mission of promoting music and the arts to the local community,” he said. “I had come up with a similar idea back in 2010 in Charlotte about a website that musicians could get their music and information out to the local public. So, it was a way for me to help create it, but it would be a more expanded version which included all of the arts. I was elected to be the Chairman. It is an honor and has been a very rewarding experience,” said Ken. “I enjoy working with Up Your Arts as those who are involved are passionate about what they do and we (UYA’s) are seeing it grow and change. We are currently expanding our use of our Facebook presence and website usefulness. Our goal is to be the “go to” place when people need to know what is going on in the area for music, arts, dance and theater as well as promoting and being involved with local charities and community programs.” Currently, Ken is involved with the Up Your Arts sponsored Open Mic at Old American Fish Company in Southport each week and will continue to work on recording his original music and playing gigs in the area. hen daughter Kim Bifano describes the grill that her mother – aka“Little Bit” – runs on Oak Island, she points to her mom. “The only thing little here is her,” she says with a laugh. And that's the truth. Known for their huge hamburgers, Little Bit's Grill is a small but popular destination on the Island. The all-fresh, hand pattied burgers will put the fast food versions to shame. The small burger is 8 ounces and the large is 14 ounces. “You definitely get your money's worth,” says Bifano. “Most people order the large one the first time they're here, then they come back and go with the small. It's a lot to eat!” The burgers are all cooked to order, and the Grill also offers a couple of custom options. “All the Way” includes chili, slaw, mustard and onions. “Bit's Way” has lettuce, tomatoes, mayo, onions and pickles. Or if you want it “Your Way,” you can choose from any of these items. The Grill is open for lunch from 10:30 a.m. to 2:00 p.m. Monday, Wednesday, Thursday, Friday and Saturday. Lunch plates are popular. The hamburger steak plate with fries, slaw and grilled onions is a big favorite, with a pound and a half of meat. When asked whether people can

eat all of that at one sitting, Bifano laughs. “That depends on the person,” she says. “We've had women come in here, order the hamburger steak plate and devour the whole thing. And when the college kids come in over the summer, those boys can take it down easily.” Other popular lunch plates are the BBQ pork and the chicken strips, each served with slaw and fries or onion rings. For those with lighter appetites, Little Bit's offers lunch sandwiches like grilled chicken, turkey club and BLTs. People fishing at the pier often come in and get the all-beef hot dogs or sausage dogs to go. “We keep it simple,” says Bifano in describing their menu. “We're just a basic grill; we don't offer a lot of choices, but people seem to like it that way.” The only day open for breakfast is Saturday, serving from 6 a.m. to 10:30 a.m. The Grill offers breakfast plates, breakfast sandwiches and omelets. The western omelet with ham, tomatoes, onions and cheese is a favorite. So is the vegetable

omelet with tomatoes, onions and cheese. Little Bit cooks everything; her daughter describes her mother's work ethic. “She's 77 years old, but she comes in here on Saturdays at 2:30 a.m. and leaves around 5 p.m.,” says Bifano. “This place does not open without her.” Bifano runs the front of the restaurant while her sister Lien Williams runs the back. The Grill has been in this location for 17 years; before that they were at Long Beach Pier for 12 years. The family moved here from Saigon, Vietnam in 1975 on the last day of the war. Bifano's father died in 1978; her mother has raised her daughters by herself since that time. Little Bit summarizes her story like this: “You gotta do what you gotta do. HISTORY Hot Diggity Dogs

W

hen you throw some dogs on the grill this summer, you can thank German immigrants for bringing weinerwurst to America in the 19th century. The food – eventually shortened to “weiner”– was named for the city of Vienna in Austria. Its counterpart – the “frankfurter”– originated in Frankfurt, Germany. Both cities claim they created the American favorite we now refer to as hot dogs. Of course the Germans also brought their little dachshund dogs along with them to the States, and after awhile the food was referred to as “dachshund sausage.” In the late 1800s, Charles Feltman opened the first hot dog stand on Coney Island. Then in 1880 in St. Louis, a sausage vendor who gave white gloves to customers to hold their hot sausages ran out of gloves. When he began selling the hot links inside a white bun instead, today’s hot dog was born. Back at the Coney Island hot dog stand, one of Feltman’s employees was a fellow named Nathan Handwerker, a Polish immigrant, who opened his own stand to compete with his former employer. He sold his hot dogs for five cents each – half the price of Feltman’s – and Nathan’s Famous took off. And every Independence Day since 1916, that Coney Island hot dog stand has held the annual “Nathan’s Famous Fourth of July Hot Dog Eating Contest.” Last year’s men’s winner downed 74 hot dogs, a feat most of us would never dream of.

Or, hopefully, even attempt. When did hot dogs take over our ballparks? There is some disagreement on that. In 1893, some believe the owner of the St. Louis Browns and a local bar – Chris Von de Ahe – began pairing hot dogs with his beer. Others believe it was Harry Stevens, a vendor at the NY Giants stadium, who sold “red hots” at ball games. Most give credit for the name “hot dog” to a sports cartoonist named Tad Dorgan. He drew a cartoon of a frankfurter with a tail, legs and head so it resembled a dachshund. Not sure how to spell “dachshund,” he called it a “hot dog” and caused not only a cartoon sensation but also named a new American staple. In the early 20th century, the hot dog swept the nation and became a staple at backyard barbecues and Fourth of July celebrations. Even Eleanor Roosevelt added it to the White House menu. In 1939, when King George VI and Queen Elizabeth visited the United States, they were

scheduled to attend a picnic where they would be served America’s hot dog. For the whole month prior to the event, Eleanor Roosevelt was subjected to much negative press coverage about her plans, to which she lamented: “So many people are worried that the dignity of our country will be imperiled by inviting royalty to a picnic, particularly a hot dog picnic!” She need not have worried; her guests were intrigued. The Queen asked “how do you eat this?” The King was pleased with the “hot dog sandwich” and asked for seconds. Most hot dog fans agree it’s hard to eat just one. The National Hot Dog and Sausage Council (did you know there was such a thing?) estimates Americans consume 20 billion hot dogs each year. Besides those bought at grocery stores, many are purchased from street vendors (15%) and at ballparks (9%). If you’re a hot dog lover, these days you have choices. While many of us grew up with the red-dyed little weiners (never

looking at the ingredient label) on a white bread bun, today you can pick from a wide selection of hot dog preferences – chicken dogs, turkey dogs, beef dogs, corn dogs, even vegan dogs. And buns have evolved from their white bread origins to include wheat bread, pitas, tortillas, to name a few. Or you can ditch the bread completely for a wrap of Romaine lettuce. And we know the toppings aren’t just your mustard and ketchup anymore. Chili, sauerkraut and slaw are standbys, but now gourmet hot dogs are all the rage, with creative chefs using all kinds of topping twists – Hawaiian pineapple, Mexican street corn, tomatillo relish, spicy nachos, bacon, even mac and cheese. Like most American culture, the lowly hot dog is subject to ever-evolving variations in tastes and trends. Who knows what it will become in the future? But for myself right now, just give me that dog with stripes from the grill, topped with mustard and cole slaw on a whole wheat bun, and I’m good.

FABRIC ARTS Fabric Arts 1 – Prints

Since the beginning of time, folks have been embellishing fabric with unique and decorative designs using hand printing techniques. In this class you will begin with simple block printing and learn to use various media and techniques to create your own textile products for gifts or for sale. Basic tools provided. Ink and surfaces available for purchase. No prior experience necessary.

Here, you can master the basics of quilting by working one small pieced block quilt and one appliqued wall hanging. The class provides an introduction to design, construction, materials, techniques, tools and equipment. Sewing machines provided onsite. Material and/or kits purchased separately. No prior experience necessary. JEWELRY BEADWORK

INTRODUCTION With knowledge of the most basic patterns and techniques, even beginning bead workers can produce exquisite pieces designed to impress. Several projects will be introduced which will all you the opportunity to complete a project within each class. You will learn the various bead types and materials used, and how you can use the basics to create your own design. Bead work basic techniques using seed beads and incorporating embezzling of crystals will inspire you. You will learn stitches like netting, Peyote, right angle weave and the ancient techniques used by the Native American Indian tribes for weaving. Basic start up kits can be purchased. JEWELRY SILVERSMITHING Independent Study Prerequisite: Advanced Silversmithing - Applying hand fabrication skills learned in previous Silversmithing classes, students will work on their own metal jewelry projects. An instructor will be on hand should questions arise, but study of metal working will be primarily self-directed.

BASICS OF PAINTING (ONLY OFFERED AT THE LELAND CENTER)

These classes are suitable for beginner or advanced level students. The instructor provides individual instruction that allows students to progress at their speed at any level. Students will be instructed in the basics of color, design, line and theory as well as the use of various mediums. Classes taught on Tuesday will be offered at the Brunswick Community College Leland Annex.

PAINTING – EXPLORATION

This course will delve into the fundamentals of painting in any medium and subject matter. This class is designed for any skill level. The goal will be to enhance each student’s knowledge of drawing, color and composition by applying time-tested artistic methods. Students will focus on types of light, understanding warm and

cool color as it applies to light and the “form principle.” The course will cover ways to strengthen compositions by the placement of objects and through the use of value keys. Learning the various treatments of edges will make the painting surface more interesting. Participants will be encouraged to work from life as well as from photography. With practice and knowledge, you can each develop your own very distinctive look and become the artists you wish to be.

PAINTING – OIL, WATERCOLOR, ACRYLIC

STAINED GLASS From Gothic cathedrals to Louis Comfort Tiffany and Frank Lloyd Wright, stained glass has captured, bent and reflected light to tell a sparkling story. The instruction includes pattern making, knowledge of glass types and properties, cutting/polishing techniques and use of copper foil/ lead solder to complete several projects. Basic tools and equipment provided. Glass to be purchased separately. No prior experience necessary.
