December 1st marks the beginning of our annual readers poll for the 2018 Southport Magazine Maggie Awards. The Maggie Awards are a fun way to recognize people, places and things within our community that stand out for excellence. New Paint! If you’ve walked through Franklin Square Park in Southport recently, you might have noticed something pretty special... The Franklin Square Gallery has a new Facelift! The City of Southport approved the budget this year to include some much needed repairs and paint for the historic building. Built in 1904 as the first school in Southport, the building has worn many hats over the years. Including - A Community Building, Town Hall, Fire Station, Library, and ever since 1979 - the home of the Associated Artists of Southport. The non-profit 501c3 group operates the Art Gallery with the artistic members (a co-op) all volunteer their time to make sure the gallery is manned and is full of amazing art, paintings and pottery. The gallery also hosts a number of community art events and sponsors several exhibitions throughout the year, holds classes and workshops for all to attend. The Holiday Boutique is on now until the 19th of December, so make sure to stop in for some unique gifts and holiday treasures. outhport Historical Society’s 28th Annual Christmas Tour of Homes is scheduled for Saturday December 09, 2017. This year the homes showcase a variety of styles, from historic to brand new construction. Buy your tickets today, before they sell out.

Funds from this event will be used for historical restoration and community historical educational programs. The jail serves as our headquarters and museum and is open to the public. Proceeds from this tour also make possible a $2,000 scholarship for a student at South Brunswick High School. We greatly appreciate… … your support and interest in the home tour. New to Southport in January, Bob and Elizabeth, original N 109 W. Nash Street. The D Bender House ew Englanders, were seeking a historic house to re-invent. Their last two homes, one in central Connecticut and the latest in Glen Ellyn IL were built in 1784 and 1904. They were excited to be able to ‘split the difference’ and find a gem in the rough built in the 1800s. Inviting and appealing describe this circa 1895 residence, one of the original Smithville lots, nestled in Southport downtown. Built by craftsman A. J. Robbins Architecture, the wrap-around porch and old fashioned doorbell open up to welcoming and extraordinary period rooms, complete with tall beaded board ceilings, Southport bow windows, jigsaw work in the apex of the front gable, heart of pine floors and two fireplaces. Antique artwork and furniture throughout the house range from the 1780’s to the 1920’s. Many new ceiling fixtures have been replaced with genuine Victorian lighting, originally gas lit.

This charming house, surrounded by old live oak trees, sits steps from the waterfront grounds of historic Fort Johnston Garrison House on one of the original Smithville lots. The house was constructed in 1950 and is still often referred to as the Livingston House. The master bedroom extension and garage were added later. Water views can be seen from several areas within the home, owned by Matt and Daphne Green since 2013. The kitchen area has been fully renovated, as has the sun room, with plentiful windows offering all the beautiful vistas of downtown Southport. .

301 E. WEST STREET (RIGHT) The house was originally built in the 1870’s by W. R. Ferguson, a Methodist Minister and part-time postmaster. Note the single stepped shoulder chimney. In 1895 a one-story addition was added. Over the years, updating and remodeling still kept original details including the decorative wood trim (both inside and out), hardwood floors, Southport bow windows and the original five-panel wooden doors. Jim and Ronney Newman purchased the home in April of this year. Ronney and Jim recently relocated from the Bahamas to the city of Southport because of its warmth and charm, which is what they were looking for after living in the out islands of the Bahamas (Great Exuma) for the past 25 years. 406 CLARENDON This cozy cottage was constructed in 1923 for W.J. Dosher. He bought five lots on and surrounding 406 Clarendon—two on which the house is located, two to the left for another house, and one on the right in 1909 for approximately $11,000 from W.H. Pike. Previous owners throughout the years have remodeled the house; however, the wainscoting and bead board on the ceilings are original to the home. Extensive use of Southport Bows can also be seen throughout the home. Major renovations include the kitchen, master suite and the large ‘party’ deck in the back.

BROWN STREET SUSAN & DAVID FORSYTH, OWNERS The house was built in 2011 by David for Susan’s mother and her roommate who were in ill health and moved here so the Forsyths could look after them; they died a year apart. David and Susan have lived in Southport since 2000 with David building 7 houses that they lived in and then sold - St. George, St. Brendan Court, River Dr. and now for good on West Brown. David is now retired for the second time. There was a house here but the previous owners had torn it down so after they bought the lot they subdivided and built this house. After adding a garage and a swimming pool, they moved into the house in 2016.

304 W. WEST STREET SUSAN & JOHN DELANEY, OWNERS While visiting Southport with a friend Susan called John and said “I’ve found where I am going to retire. I hope you like it!” In December, 2012, Kay Jolliff showed them these two lots and an offer was made that day! Working with architect Rich Bandera in June ‘13, they then signed a contract with Solstice Builders in May ‘14, broke ground in June and finally received their Certificate of Occupancy in December ‘15. They mpved permanently to Southport in February ‘17. This home is everything they had dreamed of - walking to restaurants, shopping, enjoying the waterfront and riding bikes to Wal-Mart! When at home they spend most of the time on the front porch or in the winter by the fire pit. Not a day goes by without them marveling about what an amazing place Southport is to live .

110 W. NASH STREET James Burriss House , c. 1891 Like so many residences in Southport, this two-story frame house replaced a smaller dwelling on the site. The side passage plan and finish of the house is similar to the J. B. Ruark House (307 E. Moore Street) which was erected a year earlier. The side passage plan is a two story design with two rooms on one side of a passage with a stair. Of particular interest is the cast iron fireplace surround, which is presumed to be original to the house. The house was the home of Southport Mayor J. A. Gilbert in the 1950’s

T

is the season indeed in the City of Southport, with festive holiday performances and activities planned for all ages. There are plenty of reasons to shop local, and this quiet seaside city decks its halls with twinkling white lights, a huge tree by the water, and plenty of Christmas décor. Even the boats are in on the Christmas fun, so plan on taking a stroll along the marina. The holiday season is the perfect time to make memories with your friends and family, and there are plenty of chances for you to capture the Christmas spirit.

One of the much beloved traditions of Christmas in Southport is the annual Flotilla. This year’s event is sponsored by the Cape Fear Yacht Club, Downtown Southport, Inc., the City of Southport and Southport Magazine. The Flotilla gets underway at 7 p.m. on December 9 (weather permitting) along the waterfront from the Marina to Kingsley Park. Bring your blankets and chairs and cheer on your favorites. Boats will be judged by a panel of students from Southport Elementary art class. Southport Magazine owners Kris and Alan Beasley said they are very excited to one of the Flotilla sponsors this year. Alan Beasley will also serve as MC for the evening. “There is something magical about seeing the boats float by adorned in lights that reflect on the water,” Kris Beasley said. “We felt that if we added some holiday music and an announcer to let the spectators know the name and crew of each boat as it passed by, it would be the cherry on top of this special event. So grab some hot chocolate and a blanket and make plans for the whole family to attend!” There are plenty of other opportunities to spread the holiday cheer and get into the Christmas spirit. Ring in the Yuletide cheer with “Christmas at the Amuzu.” Shows are nightly at 7:30 p.m. December 1, 2, 7, 8, and 9. Matinee performances are scheduled December 3 and 10 at 3 p.m. Tickets are $20 and are available at Ricky Evans Gallery in Southport or Color Me Carolina on Oak

Island (cash or check only). The show features a variety of sacred and secular music and will get you in the holiday mood. A new addition to the holiday calendar is the Nutcracker Tea Party, sponsored by the Robert Ruark Society and the City of Southport. Afternoon tea will be December 2 at 1 p.m. at the Southport Community Building (223 E. Bay Street). Proceeds from this event will benefit the continued restoration of the Garrison House at Fort Johnston. Tickets are $35 and are available at the Visitors Center. Indulge your sweet tooth and discover some new holiday decorating tips at the State Port Pilot’s Annual Cookie Contest. Area bakers will vie for prizes with their confectionaries and displays. The contest is December 6, from 3 to 6 p.m. at the Southport Community Building (223 E. Bay Street). Everyone is welcome to view the displays and vote for their favorites. Children ages four to 10 will enjoy eating dinner with Santa’s Elves on December 6. The dinner, sponsored by Southport’s Parks and Recreation Department, will be at 209 Atlantic Avenue (next to Southport City Gym) from 5-7 p.m. Parents can do some holiday shopping or dining while their children have the chance to talk over their wish lists with the experts. The cost is $5 and space is limited. Children are also invited to come to the Parks and Recreation Department’s traditional Santa’s Workshop, when Santa’s Southport Elves will help them create crafts and gifts. This year, the Elves will set up shop on December 9, from 10 to 11:30 a.m. at 209 Atlantic Avenue beside the

Southport City Gym. This is a free event. Grab your blankets and chairs and be carried away to the North Pole with Southport’s Parks and Recreation Department’s annual showing of “Polar Express.” The movie will air on the Fort Johnston Garrison lawn on December 7 at 5 p.m. Soak in Southport’s rich history with the Holiday History Tour of the NC Maritime Museum on Friday, December 8, at 3 pm. Learn about the maritime heritage of the Lower Cape Fear with tours by a Victorian Lady. Colonial and Victorian holiday traditions will also be highlighted. The Old Brunswick County Jail will be open for tours on December 9, from 1 to 6 p.m. The Southport Historical Society is sponsoring this event. The Old Jail, built in 1904 when Southport was the county seat, is on the corner of Nash and Rhett Streets. Some of Southport’s precious historical homes, adorned with holiday finery, will be part of the Historical Society’s annual Christmas Tour of Homes, scheduled for 1 to 6 p.m. on December 9. Tickets are $15 in advance

and $20 on the day of the tour. Advance tickets and maps are available at the Fort Johnston-Southport Museum and the Visitors’ Center or by calling (910) 457-7927. With all of this Christmas happening in Southport, where can you find Santa? Southport Fire Station, of course! Even he won’t miss the Light Up the Night Parade on December 8. With more than 100 years of providing service, the Southport Fire Department takes this opportunity to give children the ride of their lives on a fire engine. Children will climb aboard fire engines for the parade at the Southport Fire Station starting at 5:30 p.m., on a first come, first served basis. The parade route begins at Waterfront Park and travels Howe Street to the fire station. There will be floats, classic cars, bands and more, all carrying the holiday spirit along the streets of Southport. Following the parade, the children are invited to visit with Santa and enjoy holiday refreshments at the station. ne of the most wonderfully written stories of Christmas past can

the book, Ruark describes his visits as a boy to his grandfather’s home in Southport in the pre-Depression years. The holidays were filled with what he calls “expeditions,” where he accompanied his grandfather outdoors to seek out the necessary items for their Christmas celebration.

One expedition in those years was to hunt down wild turkeys for the Christmas meal. His grandmother laid down the law, writes Ruark. “The price of meat,” Miss Lottie complained, “has gone up something terrible, and I don’t propose to pay ten cents a pound for turkey. You either shoot it or you don’t eat it this year.”

There were also those special chores tailor-made for a boy, relates Ruark. “The mistletoe and holly procurement was my special province. Mistletoe had to be climbed after, and somehow I never went after any mistletoe that wasn’t hung away up in the mizzen of a cypress as big as a California redwood. You would see the little white waxy kissing berries against the dark green leaves, parasiting happily up there in the clouds, and this was fine, because it was something a boy could do that a man couldn’t do. I would take a knife in my teeth – and I would shoot up the rigging like a monkey and cut the mistletoe and throw it down.”

So the boy went out with his grandfather that year and rustled up not one, but seven birds. Even Miss Lottie was surprised when they drove up with the haul, according to Ruark. “We slung ‘em out one at a time, and even Miss Lottie couldn’t keep her face straight in front of seven big new wild turkeys. We had turkey those holidays until I wished I’d never seen one.” Another expedition was to gather oysters in the marsh waters surrounding Southport. Ruark describes the experience in wonderful detail. “You would go out over the wind-stirred gray waters, with your nose and ears bitten red by the cold, and finally come to the oyster beds. You would take the tongs and grapple along until you tied into a likely clump, and up they’d come, muddy, and you would swish the full-loaded tongs back and forth in the water until most of the mud washed off, so as not to muck up the boat too much. When you had half a boatload, you poled her back, and by this time I would have had the knife out and a couple of dozen opened.”

Hunting turkeys and gathering oysters were just two requirements of those days. The Christmas-tree expedition was another. “We scouted a cedar tree for a year in advance,” writes Ruark. “It had to be just the right size and shape and hard enough to get at so that nobody else was apt to swipe it out from under your nose. You couldn’t go very early, because the tree had to endure until after New Year’s. So we went about two days before Christmas; and if I had spotted the tree, I usually tried to locate it deep in a big swamp or away off in a gallberry bay so that I’d have an excuse to take a gun in case a squirrel or a deer attacked me.”

With the day’s outings done, Ruark describes the wonderful result. “When you finally got all the stuff home and the women went to work with it, your house smelled just like a good woods camp from the smell of the cedar, and the clean, late-afternoon swampy smell of the holly, and the smoky spice coming from a big oak or hickory log with the resin-dripping lightwood kindling crackling under it.” The best part of those days was yet to come, as the food being whipped up in the kitchen stirred the senses. Ruark describes his reactions as a boy. “Women are generally a bother to a boy or a man, but around the holiday season they sure earned their keep. Miss Lottie, my grandma, was a fair hand with a stove,

and between the smell of what she was cooking, the smell of the evergreens, and the smell of the strange Yule specialties that you never saw at any other time of the year, the house literally trembled with odor.”

Also part of Ruark’s boyhood was the much-maligned dessert that still makes an appearance around the holidays today. “Miss Lottie would have had a couple of big fruit cakes under way since along about September,” he writes. “Cakes as big as mill wheels, full of dark green citron and fat raisins and candied cherries and juicy currants, and soaked in enough brandy to get you giddy on a slice of it. The fruit cake lasted forever, because the Old Man would slip in and sluice her down with a fresh dollop of brandy from time to time, and if you kept her shut up in a tin box she stayed moist until June.”

Some of us would not want the fruitcake to last that long, but perhaps the liquor infusion would make a difference. Ruark’s memories of all the traditions of that time can make one a little wistful for the past – a seemingly more innocent, homemade season. It was a time when the holidays were not so much about frantic gift-buying, but more about hunting down one’s own food, tree and mistletoe. And reveling in the many aromas of Christmas at your grandparents’ house.

Quick and easy holiday treats to impress

H

aving guests this season? Thanks to Betty Crocker, I found some super simple recipes with a beautiful presentation, enough to impress the most discerning holiday guest.

TURKEY WALDORF BITES INGREDIENTS 1/3 cup chopped pecans 2 packages (1.9 oz each) frozen mini fillo shells (30 shells) 1/2 cup mayonnaise 1 tablespoon fresh orange juice 2 teaspoons chopped fresh tarragon leaves

INSTRUCTIONS:

Heat oven to 375°F. Spread pecans in un-greased shallow pan. Bake uncovered 5 to 8 minutes, stirring occasionally, until light brown. On ungreased cookie sheet, place fillo shells. Bake 8 to 10 minutes or until golden brown. Meanwhile, in medium bowl, mix mayonnaise, orange juice, chopped tarragon, salt and pepper. Stir in turkey, apple, onion, celery, cranberries and toasted pecans. Divide mixture evenly among shells. Garnish with additional tarragon.

Stir together cream cheese and Cheddar cheese; divide in half. Stir pesto into 1 half; stir onion, mustard and 2 or 3 drops pepper sauce into other half. Cover each half; refrigerate about 4 hours or until firm enough to shape.

If desired, wrap each tree, label and freeze up to 1 month. Twelve hours before serving, remove trees from freezer. Thaw in wrapper in refrigerator. Just before serving, roll trees in parsley, pressing it evenly onto trees. Press pine nuts onto trees in string form for garland. Press bell pepper pieces onto trees for ornaments. Top each tree with star shape cut from lemon peel. Serve with crackers.

Place cheese mixtures on cookie sheet. Shape each half into cone shape to look like a pine tree.

ocated at 104 W. Moore Street in Southport, a picture preftect shop for kids and all those kids at heart. Christmas is everyday here, 365 days a year. Ornaments, gifts wreaths and candy...what more could you ask for?

1 - How long has the Christmas House been in business? Can you tell us a little about the history?

The Christmas House has been in Business for 20 years. Owner Ann Endres has always loved Christmas and dreamed of opening a Christmas Shop. Since she was 6 years old she wanted to make bows and wrap packages when she grew up. What a wonderful dream to have come true.

2 - It’s Christmas all year at the Christmas House - but do you do anything Seasonal? Yes, we do all seasons. We make wreaths, bows, home decor for all holidays...Valentines, Easter, 4th of July, Fall, Halloween, and thanksgiving.

3 - I know you are packed in the Summer months - How is it that a Christmas House is so popular ALL YEAR?

People love Christmas. We have so many visitors from out of town that will not be back before Christmas. They pick up Christmas items all year round. We also offer lots of different items besides Christmas...Jewelry, toys, candles, nautical items, puzzles, candy.

4 - What makes the Christmas House the “Go To” place in Southport when all the other shops are selling Christmas Ornaments?

We have 100’s of ornaments, Santa’s, angels, and gift ideas. We have 10 rooms decorated for Christmas. We have a design room filled with ribbons, picks, flowers,

We carry hundreds of tree ornaments. The most popular is an Oak Island Lighthouse. Made exclusively for The Christmas House. It is hand blown and hand painted glass ornament made in Egypt.

7 - What is the most unique item you carry - maybe our readers have never seen?

We carry Santa Pants that hold wine bottles in each leg, we have clam shell ornaments with an angel inside, and we carry over 50 unique nutcrackers.

BIZ Q & A 8 - I saw you got involved in the St. James Kitchen Tour - tell us about that or any other upcoming events that you will be doing this upcoming year?

This is the second year we have decorated for the St James Kitchen tour. It’s an event we are excited to be a part of and benefits the lymphoma foundation. We are looking forward to decorating another home next fall.

9 - Tell us a little about the candy you offer - why is Salt Water Taffy so popular - and what is the most unusual flavor you carry?

We carry 68 flavors of salt water taffy. Our most popular flavors are the old favorites..Vanilla, Chocolate, and Banana. The most unusual is Maple Bacon, Chicken and Waffles, and Chili Mango. My personal favorites are Caramel Corn and Chocolate Chip Cookie Dough.

And the classic Italian food makes Joseph’s a popular dining destination for locals and tourists alike. Proprietors Joe and Debra Borsuk opened Joseph’s in 2003, bringing years of restaurant experience with them. Joe grew up in California, working in his uncle’s restaurant when he was a youngster. After a stint in New York, he moved to Wrightsville Beach and worked at the Bridge Tender for years. Debra operated a deli in Oak Island before joining Joe to open the Bistro. The restaurant offers a traditional selection of Italian pasta dishes like ravioli, lasagna and linguine, and classic favorites like chicken parmigiana and eggplant parmigiana, as well as fresh surf and turf creations. All are served with Joseph’s unique sauces. Several dishes offer a twist on the traditional approach, like Shrimp Scampi “Joseph’s Style,” with a sherry wine sauce that delivers uncommon flavor. Perhaps one of the most popular selections is Mama Rosa’s Meatballs, served with penne or linguine and marinara. Mama Rosa is Joe’s mother, now retired, who spent years working in the kitchen with her son, pounding veal and making meatballs from scratch, using no recipe but only her own best instincts. Joe relates his concern when his mother announced she would be retiring and moving to Raleigh. “It was weird, she was the only one who ever made the meatballs. So when she was getting ready to leave, I had to have a recipe. But it

turned out to be a handful of this, a handful of that. I made her put it in a ramekin so I would know exactly how she did it. Two ramekins of garlic, three ramekins of oregano, two fists of mozzarella cheese. I got those instructions from her and that’s exactly what I did.” He knew his customers would want Mama Rosa’s Meatballs to be exactly the same, even if her son would be making them now. He believes that consistency is the key to his restaurant’s success. “We fight for, since day one, to be consistent,” Joe says. “The meatballs have to taste the same; the sauces have to taste the same every day, because people expect that.” Joseph’s prides itself on their surf and turf market selections as well, each usually served with the chef’s choice of starch and demi-glaze. Their seafood comes from Haag and Sons Seafood in Oak Island. All of the produce is fresh and local. Since the restaurant is open only in the evenings, they receive most of their fresh supplies in the morning for preparations. And when the doors open, the kitchen is ready for whatever happens. “It’s kind of unpredictable,” says Joe. “One night you might sell a gazillion lasagnas; the next night you might sell four. In the summer, we’re very busy. It seems like earlier in the evening you sell the basics, like lasagna or chicken parmigiana, then later that night you see more orders for steak or fresh fish.” Complementing the menu are the Bistro’s wine selections. Debra worked with their wine distributor to customize the wine list to enhance the food. “Ever since I changed the wine menu, I have received so many compliments on it,” she says. “I know what I like, but we wanted to offer the best selection that goes with our

food. He came up with a very – as he calls it – ‘sexy menu.’ It’s a nice combination, a lot of different choices, but we try to make sure we keep it in that reasonable price range where it’s really affordable. We also have house wines that carry our label; people love those. They are good quality wines.” Joe claims Debra is a wine snob, but apparently that’s a good person to be when you have to select the right wines for your restaurant. The results are there – Joseph’s sells a lot more wine than beer and liquor combined. The choices must be working. In addition to the bar and dining area, there are two private dining rooms that can each seat 8-12 people. Named after Debra’s parents, they are extremely popular; all that’s required is a reservation. Besides the food and wine, the other impressive aspect for Joseph’s is the longevity of their staff. Many have been there for 10 years or more – in the kitchen Ryan Johnson, Bobby Wright and Chris Major; in the front area Frank Jankowski and Mark Bonello. Debra describes the employees’ commitment. “Our staff is incredible; they’re like family. We get so many repeat customers; they love our employees. When we’re busy, it’s like everyone’s working together, we work as a team – it’s a family business. It’s like a machine – amazing how everyone pitches in, no matter their specific role. The staff are friends, they socialize outside the restaurant – we never need to advertise for help. When we need people, our staff goes and finds them. They’re so particular themselves about who’s going to work with them, so I usually let them determine the wait staff. They need to play in their sandbox.”

And sometimes the staff has a mischievous side too. Debra relates a prank that one of the chefs played on some customers. “Some friends of my parents lived in Waterford. The grandson of the friends, Matt Schaub, was the quarterback for Atlanta, a backup to Michael Vick. They all came down to eat one evening. We had this big New York Giants helmet that was like a magnet and Ryan put the magnet on the back of the grandparents’ car. And they drove off. Then Matt followed them with his girlfriend in their car, so he had to look at it all the way home. We never got it back; we assume they took it off and threw it in the trash.” Sometimes quirky things happen. But when the food is excellent and the people are like a family, it all works out.

• Order Ingredients Powered by Chicory Instructions Cookies In a bowl sift together the flour and baking powder , set aside. In a large mixing bowl, cream together the butter and sugar. Add the eggs, one at a time, mixing well. Mix in the vanilla. Add in the flour mixture. Knead until dough is firm and not sticky, adding more flour if necessary. Refrigerate 1 hour. Cut off small amount of dough and roll on floured surface into 6 inch strips. Twirl into shape and place on greased cookie sheets. Bake at 375 degrees for 8-10 minutes (the bottom should be lightly browned but the tops should remain light). Remove cookies to wire rack and cool completely before glazing. Icing Combine the Icing ingredients in a bowl until just smooth. You want it more thick than thin, but still runny. Dip the tops of the cooled cookies into the glaze, then return to the wire rack, allowing the glaze to drip down the sides of the cookie. Top with sprinkles, while glaze is still wet.

Healthier holiday options to consider BY LESLIE RESCHLY, BSN, RN,

A

recent video that circulated on social media starred a grandmother attempting to make her grandson his annual birthday cake…but he is now gluten-free and vegan. Although satirical in nature, her struggle is real to those who be entertaining for the holidays and have guests with special dietary requests which fall outside of the traditional turkey or ham and mashed potatoes with gravy.

People who follow a gluten-free lifestyle avoid the protein gluten found in grains of wheat, barley, rye and triticale ( a cross between wheat and rye). Gluten must be avoided in people with celiac disease but also in those who have non-celiac gluten sensitivity. Gluten-free products abound at the grocery store so that traditional stuffing can be made with gluten-free breads but perhaps consider changing your recipes to include rice, quinoa or other tolerable products. In addition, use of gluten-free flour blends can be used for baking. For gravy, use cornstarch instead of flour. Please see that attached gluten-free vegan recipe for gravy! Vegetarian style diets vary so be sure to check with your guests. Do they avoid all types of meat and fish? Do they eat eggs? Turkey substitute products are available. Be sure to consider gravy made from vegetable broth. Those subscribing to a vegan dietary style avoid all animal products including eggs and dairy products such as whipped cream. - For gluten free, use a gluten free flour, like Bob’s Red Mill ½ C. soy sauce - For gluten free, use tamari 2-4 C. water 2 t. rosemary 2 t. thyme In a large sauce pan, add 3 T. olive oil, onions, garlic, and mushrooms. Sauté until mushrooms are soft. Set aside. Add another 2-3 T. olive oil to the pan. Add remaining ingredients: flour, soy sauce, water (start with 2 cups) and herbs. Bring to a boil and whisk continually until gravy is thicken. Add more water as necessary. Remove from heat, add the mushroom mixture back into the pan. Stir well. Enjoy!

Slice squash lengthwise and scrape out the seeds. Brush flesh with olive oil and sprinkle with salt; lightly grease baking sheet, then bake face down for 20 minutes or until the squash is slightly tender, but still holds shape. Meanwhile, make your stuffing. Combine quinoa, onion, apples, cranberries, spinach, walnuts, feta (optional) and herbs. Mix well. Remove squash from oven. Lightly brush with a bit more olive oil and salt. Stuff the inside of the squash with quinoa mixture. Place squash into glass baking dish; pour just enough water into the baking dish to cover the bottom – about ¼ - ½ inch of water. Cover the pan with aluminum foil. Bake at 350 for 30-40 minutes, remove foil. Bake uncovered for another 10 minutes. Remove from oven, enjoy!

To know that you have been a part of something that made a difference, the power of music, the power of a song. To be a part of something that made a mark. ART BEAT Quirky Meets Genius Sharon Vinciguerra, Paper Clay Master STORY AND PHOTOS BY CARLA EDSTROM

N

othing gets me into the Christmas spirit faster than driving down Howe Street in Southport and seeing the streets all decorated with the big light up wreaths and twinkle lights sparkling in the trees. The feeling of Christmas is in the air. I know many people moved here to get away from the snow, but in December I do miss it. Growing up in Illinois I can’t remember a Christmas that without it.

I loved playing in the snow probably more than most kids, and I always asked Santa to bring me a long toboggan sled. I dreamt that I would get a running start on the hill by our house not unlike the Olympic luge team. I would sled down the street for miles, picking up speed as I went around the curves. I could see myself flying past the kids with the generic plastic roll up sleds, leaving them spinning out in the snow. But back in reality, I always got the plastic sled. One year I did get the saucer sled made famous in the movie Christmas Vacation, sans the non-caloric silicon-based kitchen lubricant. Santa was always very wise. He knew that I would have surely broken my neck on a giant bobsled. We had neighbors that had a big hill that was made for sledding. All the neighborhood kids

would bring their Christmas sleds down to Ryden’s hill and take turns sledding for hours until we could no longer feel our toes in the cold. When we grew tired of sledding, we would build snowmen and igloo forts and have snowball fights. The child in me still enjoys playing with her friends and goofing off anytime she is allowed, as my friends will tell you. I really hope I never grow up. I am really all right with being that friend who loves to play and be creative. I even started teaching pottery last month at Brunswick Community College, Southport campus so I could play in clay more. I am thrilled that I get to hang out and create pottery with friends once again after working alone for so many years. And one of the most fun people I have ever played in clay with has got to be Sharon Vinciguerra. I had the pleasure of watching her work first hand at Orange Street Pottery in Wilmington when we were both taking pottery classes with Don Johns. She sat directly across from me for several years, where she inspired my work daily with her laughter and insight. Her creativity is unmatched, and her pieces are uniquely hers. They all tell a story she created, and usually one that is humorous, somewhat sarcastic, and always thought provoking. What usually happens when you look at her sculptures is a two-point process. First, you see her sculpture and smile, maybe laugh a little. Then you read the name of the piece, and laughter ensues. The chicken with candlesticks is called Candlelight Most Foul. Her latest creation features a train with birds riding in

the cars. It is called, Return from Migration. “They all flew out but then took the train back,” she explained. Vinciguerra’s first experience in sculpting was when she was a child using never hardening clay. “All the kids had it,” she said. “Once my uncle was putting in a carport floor and I snagged some of his wet cement and sculpted a foot. It was NOT a big hit with him (especially where I scooped out the cement),” recalls Vin-

ciguerra. While she was attending New Paltz College in NY, she learned to throw pottery on the wheel and hand building. “After that everything went on hold as I became a teacher and earned my living,” she said. She didn’t work in clay again until 1999 after she retired and moved to the Southport area. “I signed up for classes at BCC, found Kimberly Caroon and from that point on took every clay workshop I could afford flying all

ART BEAT over the country to do so,” she said. Vinciguerra works exclusively in paper clay now because she says it is so forgiving. Paper clay is made by adding paper or cellulose fiber to clay slip, and then it’s made into a working clay consistency. She explains, “I like to change my mind a lot. So for example, if you have a head on a sculpture and it’s totally dry, and you decide you want a totally different head, you just lop it off and put on a totally new one and it will accept it because all the little fibers in the clay grab onto the dry clay and they marry perfectly.” Vinciguerra gives credit as her most important artistic influence to our mentor from Orange Street Pottery, Don Johns. “Don is an incredible instructor and the most knowledgeable potter I’ve ever met. He makes you think out of the box, in the box and everywhere else the box could be, she explains with a smile. “His only goal in teaching was to teach you everything he knew. He wasn’t holding anything back. He wanted us to have every possible thing he could offer.” I couldn’t agree more. We were blessed to be under his mentorship for so many years. Her portfolio includes some ribbons and wins for her work at art shows locally and nationally. Her favorite piece was a giraffe teapot that inspired her to make many more teapots. “The lines were right, the glaze was right,” she explains. “I also loved Flavia Goes To Walmart which was social commentary about how people dress when shopping.” I myself have a few of Vinciguerra’s pieces. One is a small tree. She made it one day at Orange Street out of clumps of clay that she was cutting off another piece. As she cut the pieces off, she dropped them into a pile. She looked down and saw in her creative mind a tree with birds and leaves. “Anything can inspire me,” she said. I once made a vase based on the arm of my couch. Usually my work tells a story. The stories come from politics, everyday life, or just fall out of my head without warning.” Her ability to see objects in ordinary things still inspires my work to this day. CHEERS A Champagne Toast Everything you wanted to know about Bubbly but were afraid to ask STORY AND PHOTOS BY JEFF STITES

et’s talk champagne. Or, more accurately, sparkling wine. The holidays are fast approaching and, aside from weddings, that’s when the corks start a-poppin’! Many of us don’t drink much bubbly aside from these sort of special occasions so maybe it will be fun to look into sparkling wine and see what is and is not champagne, how to tell how sweet or dry these wines are and even a bit about what sets the different types of sparkling wine apart.

First off, what many of us call “champagne” really isn’t. True Champagne must be produced in the Champagne region of France. Sparkling wine in Europe is a regional thing with the European Union policing who can call their product what. Two countries, Spain and Italy, produce sparkling wines that have gained popularity and availability in the United States with their Cava and Proseco, respectively. Another feature of true Champagne has to do with how the bubbly gets its bubbles. The sparkle in sparkling wine comes from the carbon dioxide bubbles that, along with alcohol, are the waste left behind when yeast eats sugar during a process called fermentation (yep, alcohol is yeast poo.) But then why isn’t all wine bubbly, you might ask, as all wine experiences fermentation. The bubbles from wine’s fermentation, even that wine used to produce sparkling wine, are allowed to escape. Bubbly’s bubbles are added during an additional step called secondary fermentation, in which a bit of wine, yeast, and sometimes sugar is added to an already fermented wine. There are two ways to accomplish this, bottle by bottle or in one huge tank. When secondary fermentation occurs in an individual bottle of wine it is called “Methode Champenoise” if the wine is being produced in Champagne or “methode traditionelle,” “metodo tradicional,” or “classic method” if produced outside the Champagne region. Some wineries, particularly those in Italy producing prosecco, use what is called the Charmat-Martinotti method which allows them to produce

as many as 100,000 bottles of sparkling wine in one steel tank. This later method is much more cost effective, leading some to see wines produced this way as inferior. But you be the judge. Sparkling wines are rated on a scale of sweetness that can be a bit confusing. The driest are called “Brut Nature” and had no sugar added during the secondary fermentation process. Next is “Extra Brut” and then “Brut.” The very middle of the road sweetness is called “Extra Sec/Dry,” then we have “Sec/Dry,” Demi-Sec,” and finally “Doux,” which is very, very sweet. So, when choosing a sparkling wine, remember that “dry” doesn’t mean dry. If you want a dry wine go for the “Brut” designations. There you go, a crash course on sparkling wines from an admitted beer guy. Now let’s look at few examples.

COOK’S CALIFORNIA CHAMPAGNE, BRUT 11.5% ABV

The Label Says: Cook’s Brut is a medium dry Sparkling Wine. It possesses a crisp fruity aroma with notes of fresh apple and pear. My Take: The only American sparkling wine on my list and it’s allowed to call itself “Champagne” on the label as the long arm of the European Union regulatory body doesn’t reach our shores (yet). I suppose I could imagine a bit of apple-y/pear-y taste after reading that I was supposed to, but I’m not sure I’d have picked that out on my own. This is what I grew up thinking “champagne” was—fairly dry, fairly bubbly, and fairly blah.

SEGURA VIUDAS CAVA, BRUT 12%ABV

The Label Says: Well, not much. Just that it’s fermented using the “metodo tradicional” and it hails from Sadurni D’Anoia, Spain. My Take: I was a bit thrown off by the fact that this bottle had a screw top instead of a cork but then I poured it in my glass and saw the bubbles. The bubbles are amazing. They start at a very specific point way down the bottom of the flute and rise in a very narrow stream, like smoke from a chimney, up to the top. I can’t stop watching them. Ok, I stopped long enough to drink a bit and though this is the same dryness rating as the Cook’s, it’s in a whole different class. It’s so much smoother, but at the same time so much more flavorful. This tastes to me like “champagne” should taste. I don’t want to finish it because then I couldn’t watch the bubbles any longer….

MARTINI & ROSSI ASTI SPUMANTE, SWEET 7.5% ABV

The Label Says: Quality Aromatic Sparkling Wine My Take: Back to bubbles coming from all over. Sadly. I bought this entirely because of my fond memories of the jingle. If you’re of an age, you know what I’m talking about, heck, you’re probably singing it right now. The label here doesn’t lie, it IS sweet. It’s muscadine wine sweet, if you’ve ever experienced some of the fruit of North Carolina’s native vine. It isn’t my thing at all, and I wouldn’t even serve this

to a sweet wine fan with a meal, but I can definitely see this complementing dessert. Before the prosecco craze hit our shores, this was Italian sparkling wine to Americans. Whatever else it is, I have to respect a classic like that. And that jingle.

LE GRAND COURTAGE GRAND CUVEE, BRUT ROSE 11.5% ABV

The Label Says: Embrace Life. Dream Big. Accept All Invitations. (not terribly informative, but thought you should see it anyhow) My Take: Yes indeed, I’m drinking pink champagne. And I actually like it. I wasn’t expecting much as I don’t generally care for a rose to begin with, but this is pretty tasty. It’s more dry than the Cook’s (which was pretty awful, let’s be honest) but not quite so dry as the Cava, even though they share the “Brut” designation. In the Eagle’s song Hotel California you’ll hear talk of “pink champagne on ice.” If you want to bring out your inner Don Henley, what better way than to invest in a bottle of Le Grand Cuvee?

LAMARCA PROSECCO 11% ABV

The Label Says: Stylish and Crisp, La Marca makes every day sparkle! Another tight stream of bubbles! This bodes well. Again, the label tells it true. Crisp is a very good description of this sparkling wine. It is as dry as the Cava but may have even more depth of flavor. The bubbles last a good long time and they tickle your mouth in a wonderful way. I think I found my New Year’s Eve bubbly. Cheers!

Honorees, along with their families, were invited to attend the award ceremony which took place in the school’s media center.
