A new tradition during the Thanksgiving weekend has swept the country and has resulted in the recognition of “Small Business Saturday.” On November 26, 2016 citizens will have the chance to “Shop Local” and support our area businesses. The benefits of shopping local are wide spread. • Shopping local encourages the local job market. Neighborhood businesses employ the local community. That community in turn, invests back into the immediate economy making it stronger. • Businesses in a stronger economy are able to give back. Local businesses support nonprofit charities and community events. If businesses are doing well, the benefits are shared. • Local merchants offer a wide variety of unique gifts. The diversity of our businesses gives us a distinctive character that attracts many. Tourism has become a driving force in the local economy.
• Local merchants value their customers. Our businesses know it’s about the relationship between them and their customer. They work hard to give the best service and the best product to encourage your patronage year round. • It is fun to be a tourist in your own home town. Take this time as you are shopping to reconnect with your local points of interest. While shopping, see what is new at the NC Maritime Museum at Southport, the Old City Jail or the Southport Museum located at the Fort Johnston Garrison House. Supporting our local businesses helps to make our community thrive. A thriving community makes our home, a place we can be proud of! —Randy Jones, Director, City of Southport Department of Tourism

Ladies, meet our new 3D mammography machine.
Technicians call it digital tomosynthesis. Patients call it amazing. We call it a lifesaver. Whatever you call it, we encourage you to make an appointment for a mammography screening this month. Our new three-dimensional mammography machine improves detection of invasive breast cancers by 40 percent. Improve your chance for early detection by calling 910-457-3948.
Diagnostic Imaging staff members are excited about the new 3D technology for mammographies.
Earlier this year, this breast cancer support group donated $6,400 for a blanket warmer, capes and gowns for our mammography patients.
This institution is an equal opportunity provider.

et prices are $10 in advance and $15 on the day of tour. There will be a limited number of tickets sold. Tickets may also be ordered via phone by calling (910) 457-7927. The Historical Society uses the Tour to raise funds for scholarships for local high school students and other Southport Historical Society activities.
ecember is full of holiday events and you’ll want to pace yourself to fit in as much holiday cheer as you possibly can. We are here to help. This month, we have just a brief holiday teaser showcasing a few Christmas events. Sort of a holiday appetizer to ease you into full holiday cheer.
Check out these festivities to get the season started right. Next month we’ll highlight even more of our favorite things to do during this most wonderful time of the year.
Christmas Gift Show – St. James Community Center (4140 N.C. 211) – November 20 from 1-5 p.m. This is a new event added to our holiday repertoire. The Christmas Gift Show will be a chance for our area retailers and restaurateurs to show you how to add some local flair to your holiday giving list. All you’ll need to add is the ribbons and wrappings. Admission is free, and attendees will have the chance to win a $300 gift card for local businesses just for registering during the event. The Christmas Gift Show is brought to us by the Southport-Oak Island Area Chamber of Commerce; the Chamber is partnering with The Brunswick County Literacy Council (BCLC) to help raise awareness, funding, and resources to the BCLC organization. Holiday wreaths and centerpieces will be available through a silent auction and a portion of the
proceeds will benefit BCLC. There will also be a book drive, and donations will automatically earn one additional raffle ticket toward the $300 gift card. Books should be suitable for children from birth to 12 years of age or word searches for senior citizens. Santa will be on hand to read his favorite stories to the children while parents shop for the perfect holiday gift. Gift cards will also be available for purchase. For more information, contact Sarah E. Meyers at the Southport-Oak Island Area Chamber of Commerce at (910) 457-6964 or email at events@southport-oakisland.com

Christmas Choir Concert – Ocean View United Methodist Church – 8400 E. Oak Island Drive. The concert includes music from the OVUMC Concert Choir, soloists, visual effects and pianist and music director Greg Walker. All are invited to come for a fun-filled evening celebrating the birth of Jesus. Admission is free, though a love offering will be taken to help support the church’s music ministry. Song choices include “Rudolph the Red Nosed Reindeer,” “Have Yourself a Merry Little Christmas,” “I Heard the Bells on Christmas Day,” “Fantasia Noel Medley” and more. There are three chances to see the concert -- Friday, December 9th at 7 p.m., Saturday, December 10th at 7 p.m. and Sunday, December 11th at 4:30 p.m.
Christmas Tree Lighting – Town of Oak Island – Middleton park (Oak Island Drive next to the Police Department). The Town of Oak Island’s annual Christmas tree lighting will be held at Middleton Park. They have scheduled special guests, crafts, and much more for all ages. Guests can enjoy the sounds of the season, cookies and a hot beverage. It’s all that a small-town event should be – a gathering of family and friends to celebrate the holidays. The man in the big red suit usually makes an appearance too!1

Local Business Gets a Christmas Boost Christmas Gift Show is Bringing Convenience to your Holiday Shopping! STORY BY: SARAH E. MEYERS
T
he inaugural Christmas Gift Show comes to the Southport-Oak Island Area, highlighting local retailers and restaurateurs while bringing convenience to holiday shopping.
On Sunday, November 20th from 1pm5pm at the St. James Community Building, locals and visitors will have the opportunity to shop-till-they-drop in one timesaving location. In addition to having all the area’s favorite local retailers right at their fingertips, attendees will have a chance to win a $300 Gift Local Card for registering at the event. According to Fortune Magazine, sales at physical store locations fell 6.7% during the 2015 holiday season. This loss is large-
ly due to the convenience of online shopping, which can be troublesome for local brick-and-mortar retailers. However, it’s not all bad news for local merchants. A survey conducted by the National Retail Federation found that, “one in four holiday shoppers (24%) are planning to “shop small” and purchase gifts and other holiday items such as decorations and food at a small or local retail business.” The Southport-Oak Island Area Chamber of
Commerce is looking to reach the 24% (or more) that plan on “shopping small” this holiday season and add the missing edge of accessibility that our technology-driven era seems to require. As explained in the Chamber’s mission statement, part of their purpose is to “advance the general welfare of its members and the prosperity of the area so that all citizens and all areas of its business community shall prosper.” With the Gift Show falling the week before Shop Small Saturday (SMS) (the campaign started by American Express in 2010 to celebrate and support small businesses) participating vendors of the show will be providing exclusive coupons for attendees to use on Saturday, November 26th. This will hopefully drive consumers into the retailer’s physical location which will encourage repeat business above and beyond the annual gift show event. The Christmas Gift Show will also be partnering with The Brunswick County Literacy Council (BCLC) to help bring awareness, funding, and resources to the BCLC organization. Holiday wreathes and centerpieces will be available at a Silent Auction with the proceeds benefitting the BCLC. A book drive will be in full swing during the event, where any book donation will automatically earn one additional raffle ticket towards the $300 Gift Local Card. Organizers are asking for books at the reading level for children 0-12 years old as well as word searches for the senior citizens in the community. Attendees at the free event will be able to sample food and wine while perusing the booths and picking out the perfect gifts for everyone on their holiday lists. Items will be available for purchase on-site, so it is highly recommended to carry along their favorite pocketbook. Another holiday shopping-tip to cut down on time spent in the dreaded post-office line, is to bring addresses for those out-of-town gifts that are sent. Several of the vendors can ship directly, which saves precious time, money and headaches. For those who purchase gift cards for their holiday giving, the Christmas Gift Show is a handy and easy way to purchase those in one location as well. If there are enough good little boys and girls, Santa has said he might even make an appearance at the end of the night to read his favorite Christmas book and wish everyone a very happy holiday season. If you would like more information about this topic, please contact the Southport-Oak Island Area Chamber of Commerce at 910.457.6964 or email at events@ southport-oakisland.com.1

Meaningful Monday Classes:
These classes are free and start at 7:00p.m. You may also join us for Meditation at 6:15p.m. Everyone is Welcome!
It’s been a rough week… First, you were told by your doctor that you have diabetes and he started you on three new medicines. He explained these, but it was so fast and you were overwhelmed with the amount of information that you really didn’t catch everything. You have all kinds of questions and your next appointment is in two months. Then you get a phone call from mom and she was told that her aching shoulder turned out to be metastatic cancer and they offered some sort of trial, but she just wants to enjoy what time she has left. You don’t quite know if that’s right. There’s a lot of “what if’s” swirling around in your head and she really doesn’t know the answers to the questions that you are peppering her with right now. It would be nice if you could just call someone and they could help you negotiate all of this. The internet is helpful, but only so much. Perhaps, I am that someone. Too often we get a earth shattering diagnosis, a handful of prescriptions and possibly a referral to a specialist with a short explanation. What we need is a conversation and answers to some questions. I would like to help. There’s a lot more to disease than medication. There’s a lot more to taking care of an ailing parent or spouse than we can communicate in a 15 minute office visit. I can help you navigate the diagnosis, medication management, lifestyle changes, and caretaking responsibilities. I can help you communicate with your provider, or we can even communicate with them together.
There is no need to be overwhelmed. Take a deep breath. We can get through this. To set up an appointment or for more information, please contact Dr. Doran at 516-993-7671 or lettiedoran1@gmail.com

SHOWCASE Never Too Old For the Holidays
Celebrate the season with song & dance! STORY BY: JEFFREY STITES
T
he performing arts are never more alive in the Southport area as during the winter holidays. With the tourist mostly gone home, we love to welcome the season, as folks have been doing for hundreds of years. Our area is rich in home-grown and transplanted talent, and there is no better time to appreciate that bounty than now.

presented by special arrangement with SAMUEL FRENCH INC.
November 18, 19 & December 2, 3, 9, 10 at 7:30 pm November 19, 20 & December 11, at 3:00 pm 8068 River Road, SE Southport
From the Historic Amuzu Theater in downtown Southport to Brunswick Little Theatre’s new home just up 133 to the beautiful Odell Williamson Auditorium on the campus of Brunswick Community College, a celebration of local talent is just minutes away over the next two months. Your first chance to be entertained is coming up later this month as the Brunswick Little Theatre presents “Too Old For The Chorus, But Not Too Old To Be A Star” at their home theatre at 8068 River Road SE, Southport. The show opens Friday, November 18 and runs three weekends, taking off the weekend of Thanksgiving. Evening performances are on November 18 and 19, and December 2, 3, 9 and 10 at 7:30 pm. Matinees are offered November 19 and 20 and December 11 at 3:00 pm. Doors open a half hour prior to show time with the box office opening a half hour before that. Tickets are $20 for adults, $12 for students and are available online at www.brunswicklittletheatre.com , at Ricky Evans Gallery in Southport and at Sugar Confections Bakery in Shallotte. The Brunswick Little Theatre seats approximately 100 in comfort with good views all around. Some shows, especially matinee performances, will likely sell out, so while some tickets may be available at the door, it’s best to buy ahead. Director Debbie Skillman describes Too Old For The Chorus, But Not Too Old To Be A Star as “a musical revue in a cabaret style that is funny, smart, and at times a touching exploration of the challenges of aging.”
She says, “I liken it to a coming of age story for those who have reached middle age. The revue is set in their neighborhood coffee shop and features a cast of five, three men and two women. Over the course of the show the friends share the full range of frustrations and joys that come with aging through dialogue and song.” The show features a wide range of musical styles, Skillman says, running the gamut from bossa novas to sambas, ragtime to doo wop, rock to rap, and bluesy ballads to swing. The cast consists of gentlemen Rick Depetris, Tom Scribner and Geoff Gersen, joined by ladies Barbara Wood and Karri Copton. Skillman says her cast is a mix of locals and new residents with a varied experience in musical theatre. “Three of the cast members just moved to Brunswick County in May of 2016. One has lived in Southport for 3 years and one has lived in Wilmington for twelve years. Three of cast the members are pursuing an interest they had in their youth but put aside to raise children and devote to careers, much like the characters in the show they are re-inventing themselves. Two of them are veterans of the stage and have performed in community theater groups in both Fort Wayne, Indiana and Wilmington, NC. Four of the cast members are new to Brunswick Little Theatre,” she says.

Trading Company Christmas at the Amuzu features a cast of 17 vocalists backed by a five-piece band. This year’s show will include an all new collection of fun holiday favorites guaranteed to put you in the Christmas spirit! This year Laura Furpless, daughter of Amuzu Theatre owner Bill Furpless, will be directing with her mother, and Bill’s wife, Kathy playing keyboards. Amuzu events are family affairs! If you’d like to join the Amuzu family in Christmas celebrations, you’ll want to act fast. Tickets for these, and most Amuzu shows, tend to sell out rather quickly. Tickets are $20 cash or check, and are available now at Ricky Evans Gallery in Southport and Color Me Carolina, just north of the airport on Long Beach Road. Christmas at the Amuzu 2016 will take to the stage for two weekends, December 2-4 and 8-11. Thursday, Friday and Saturday shows are evening performances beginning at 7:30 pm, while Sunday matinees begin at 3:00 pm. “It’s Almost Christmas” With The Sea Notes- No Christmas in Southport would be complete without a Sea Notes Christmas concert. The Sea Notes are an all-volunteer, no-profit choral society that, according to it’s mission statement, “ exists so that its members may experience the joy of singing great choral music and the satisfaction of singing it as well as possible.” Founded in 1974 as part of the Southport’s national Bicentennial celebration preparations, the Sea Notes holiday shows have become a staple.
This year’s offering, “It’s Almost Christmas,” is directed by long-time Sea Notes member Dianne Hoffman, who has been directing shows, including several Christmas shows, for 15 years. Selections will include both sacred and secular favorites as well as a few sing-a-long numbers. “It’s Almost Christmas” will run one weekend only, Saturday December 3 and Sunday December 4 at the Odell Williamson Auditorium on the campus of Brunswick Community College. Both shows are matinees at 3:00 pm. Sea Notes performances are free to the public, with donations gladly accepted. Tickets are not required for admittance, but will be available for free at the Odell Williamson Auditorium box office beginning November 10. Ticket holders will receive priority seating.1

Mermaid Cove always has a happy, “summer is never over” vibe, that is evident the minute you step out of your car. The Mermaid Manor A Dreamy Place To Call Home

ack in 2012 Tracy Beaulieu was retiring and she knew one thing for sure...She didn’t want to stay in Dallas. It’s where her roots are but it’s not where she wanted to retire and find her dream home. After all, she had always wanted to live in a small town near the ocean. Tracy looked at the map and began to formulate a plan to find her new home. What a great feeling that had to be to set out on that adventure knowing that she could go wherever she wanted. I must say that I am a little (very) jealous. She had lived in California and it’s too expensive. She had loved the Oregon coast but it was too cold and gray. So she revisited the Texas coast and all her old haunts down there - Galveston, Fort Frances, Padre Island. But didn’t find what she was looking for. She was looking for a small community
that would welcome a single retired woman. Where she could find friends, things to do and would be welcomed. These are all important aspects that you don’t find everywhere. And she wasn’t finding it in Texas. So, she ruled out the Texas coast. Tracy doesn’t care for Florida or the Gulf Coast so the search was narrowed down to the Carolinas...Someplace she had never been. From Orlando Tracy drove up to St. Augustine and met her friend Barbara, from Atlanta, and headed to Savannah where
they spent a couple days. Tracy visited Beaufort South Carolina, Kiawah Island and the Charleston area and The Isle of Palms. These were all pretty little historic areas but she just wasn’t finding the sense of community that she was looking for. It just didn’t feel right for her. So, at this point, she had ruled out South Carolina and continued up to Memphis where she visited with cousins and drove around some more before heading home. Tracy then started to concentrate on North Carolina and took off on a trip the next spring...in April, and toured into May. She went to St. Louis first to see girlfriends then on to see some cousins. She was gone for six weeks but flew home every fifteen days or so to visit and spend time with her cats so they weren’t left alone for too long. From St. Louis, she hit Nashville and played for a few days because she had never been there before. From Nashville she went on to Asheville, North Carolina for three days and did all that stuff there, Biltmore Mansion, etc. And then went on to Charlotte for a day. Next up was Wilmington. It was high time in Southport so there was nowhere to stay but decided to drove into town and check it out. She
drove down Howe Street, down to the water, sat on a swing and walked around. She walked into Lantana’s, The Silver Coast Winery and to Kay Jolliff’s office. She saw Frank Markitty in Kay’s office window so she had to stop in and say hello... At least to Frank. Unfortunately, Kay was not there but Rich Bandera was... So they visited for a bit and Tracy got the information she needed about Kay before she had lunch at Baked With Love and drove around Southport and it’s neighborhoods and streets. But, before she left Wilmington, she played one more day and decided to spend another day in Southport. She walked in and talked to Kay and found out quickly that there was nothing in town to rent. After looking around a bit, Tracy drove by her home and decided to go in and check it out. She hadn’t considered looking earlier because the pictures were not appealing yet when she walked in, she knew. Tracy decided that she wanted the house and was ‘gonna get it no matter what.’ It was a short sale with lots of back and forth with the bank, but she stuck it out and managed to close in September... Four months later. The closing was done long distance and Tracy came down for two weeks in November to go through the house with builder Fred Fiss and Dave Barker, her cabinet designer, so they could get an idea what she wanted. Kay Jolliff had introduced Tracy to builder Fred Fiss and Fred had met Dave Barker while he was working in the Cabinet

Department at Lowe’s Home Improvement so she knew she was in good hands. Green Harmony, Fred’s company, has a pretty simple operating philosophy. It’s important to Fred to help his clients achieve their vision with what he calls ‘gentle guidance.’ His goal is to have them smile when they drive up and walk in their door. If they don’t smile, something is wrong. His emphasis is also to make a house as energy efficient as practical, whether old or new. That is the green part...The part that will save his clients money on their energy bills. Dave Barker owns and operates 50 Lakes Cabinet Design and has worked with cabinet design and installation for 30 years. He has a keen sense for design and a good eye for what fits in a space and meets the clients needs and wishes. It’s important to him for his clients to be pleased with the

end result and has no problem putting in the extra time and effort it takes to find just the right design materials and solutions for his clients needs and wishes. Basically there were three requirements: a garage, a fireplace and big laundry room for storage and the cat box. Tracy had never had a big laundry room so that part was exciting. The screened porch had to be totally rebuilt and the garage was built from scratch. All the windows and doors from the home were saved and Tracy uses them to create gifts for her friends in her new garage workshop. Tracy beams as she tell me the details and I ask her if she misses Dallas? And her answer is swift and sure. Her father’s parents were farmers and lived on a farm in Hemlock, Texas. She visited a few times and loved it. The post office,
the general store, the simplicity of it all. She loved being out there and felt as if she had always been landlocked and big city locked. The only time she didn’t feel this way was when she lived in Nuremberg, Germany. Is there anything Tracy would change? She says not one thing...It’s perfect. Only thing is it’s and older house... 100 years old this year...So she just wishes it had bigger closets. But it’s worked out just fine. She loves the layout and feels that the house is perfect. Tracy’s friend, Janet, who’s known her all her life came to visit and said ‘this is what you’ve always described and what you’ve always wanted.’ And she was right, Tracy has always wanted to live in this kind of environment. She doesn’t need to live right on the ocean but wants to be in the environment, the ambience... Of a coastal community... Of a small town on the water. All of that and to be able to walk everywhere. Somewhere that everyone knows each other. Her joy is shared inside her home by friends, guests and visitors. Tracy traveled so much for years, that she very rarely had guests or entertained. She wanted to make sure that she had plenty of space for visitors and was able to entertain. And that she does... There’s been lots of guests, friends visiting, neighbors dropping in and lots of laughter and fun going on. That’s very important and a big reason why the kitchen was designed the way it is...It’s open and inviting. There’s a bit of entertaining on a regular basis with a card group, happy hours when she can and porch happy hours with her Jimmy Buffet Margarita Machine. Tracy simply texts her friends and says ‘the margarita machine is out... Come on over to the porch for a margarita.” The kitchen is fabulous, especially the appliances. Tracy always wanted funky, cool colored appliances so she started
looking around and researching online when she found the Big Chill... A line of retro kitchen appliances inspired by the 1950s look but with modern performance. They are horribly expensive (Tracy laughs) but she had to have the buttercup lemon fridge and range. It was what she wanted with her color scheme. The fridge arrived the day before she moved in and she lived in house for a couple months without a stove because she had to save up money to buy the stove she wanted. She microwaved while she waited. The white kitchen cabinets are flawless and shines alongside the Italian glass subway tile that Tracy found online at Modwalls. She simply ordered it and had it shipped to the house. I love the handmade glass handles on the bright white cabinets.

“It’s a gas stove and I love that. I wanted gas. It cooks so much better... More even. It’s ridiculous but it’s what I wanted.”- Tracy Beaulieu Its an open concept kitchen that sunny and cheerful. Light bounces off the glassfront cabinets and the recycled glass counter tops and the wood-planked ceiling adds architectural detail and a rustic flare to the cottage’s kitchen. There’s ample storage, plenty of lights and a butcher block island that’s well light with pendant lights and equipped with industrial styled bar stools. The island is equipped with pullouts on both ends to store small appliances. They can be accessed easily when needed and then tucked away again until needed again. It’s a perfect fresh space with plenty of room to spread out when in cooking mode yet keeps you in the mix of the action as it blends into the dining room space. There were some issues to work around in order for this to work. For one, the original kitchen ceiling was really low and needed to be opened up. A small wall separated the dining room and kitchen and was cutting the space up too much. Fred fixed all of that by raising the ceiling and refiguring the space. He raised the ceiling, created a peak and covered it with wood. Dave had to cut the cabinets and molding to fit at the ceiling line and the finish is flawless. The butcher block was going to be too much so Dave decided to go with ash instead of butcher block to stay in budget and it works well with the design. The home’s furnishings are a mixture of new and old. Some pieces were brought from Dallas and were converted to make them work. Practically everything else was
sold. Tracy shares, “I really cleaned out and pared down. It was fun starting like that. I bought some things specifically for this house: the 2 plantation chairs on the porch and the 2 wicker (Havana) chairs I found at a consignment shop in Dallas. They were very expensive and I got a great deal on them.” Tracy packed up a Uhaul trailer in May and headed to Southport. It was loaded with the furniture, old and newly purchased as well as all the ceiling fans, faucets and light fixtures for the house. She hit all the sales before leaving Dallas and had friends that worked for a few of these companies so many of the items were purchased at cost. Everything, including her scooter and all her breakables fit into a 6 x 8 storage unit. Fred had a key to the storage unit and he would go over and get what he needed...When he needed it. It seems like a difficult task to manage a renovation from another city. But Tracy was a Trade Show coordinator for 47 years so she is very detailed, organized and task oriented. Just off the kitchen is a spacious laundry room... Which Tracy absolutely loves. She’s never had a laundry room before so it was a must-have in this house. It even has a sink and she thinks that is just awesome. The cabinets are fitted with pullout drawers for convenience and there’s tons of storage which is uncommon for an old home. The hot water heater was replaced with a tankless/continuous water heater so the closet that use to house the old water

heater was transformed into storage space and it worked out beautifully. It adds just the right amount of additional closet space for the vacuum cleaner and other cleaning goods. Tracy smiles, “It’s perfect and it was such a nice surprise.” The other perk of this wonderful space is a cabinet fit with a pullout for the litter box and a cutout in the door for the cat to enter with ease as needed. A plain door was also constructed to put on when the box is not in use. Dave Barker, with 50 Lakes Cabinet Design, did a wonderful job with these cabinets. The concept of the window seat builtins was there but they just weren’t right and needed to be reworked to complete the space. So Fred tore them out and rebuilt them and the seats now make not just a cozy pillow-filled spot to sit but also provide additional storage below. Tracy keeps items tucked away here and it works well... They are stowed out of sight and are easily accessible when needed. The window seat is flanked by two custom cabinets and each provides storage and showcases found items, treasures, artwork and photos.
The pictures on the walls show how long Tracy has been planning for this house. The silk sea horse paintings are from when she lived in Germany back in 1997. Tracy smiles, “It’s been my vision for ever and ever.” Tracy’s friend Barbara came to visit for New Years and they found some additional pieces at Uptown Market in Wilmington. She bought lamps, a chandelier, some other stuff and Barbara convinced her that the hutch would work beautifully in the living room. Oddly enough, Tracy had seen this piece three times but couldn’t decide if it was the right one for her. The cat prints were found in Atlanta and had been hanging in a garage. Judy, Barbara’s sister and professional decorator, found a couch and coffee table at Rebecca’s, hung the cat prints, added the old closet door, picked new fabric for the couch and totally transformed the room. Nothing like professional free decorating. The fireplace can’t be used yet - it needs work and that’s an expense for next year but there are plans to use it often. Tracy bought the screen at Home Goods and
her friend Barbara decorated it with Tracy’s shell collection. “She did it all in about an hour with my glue gun. There’s a lot of love from my friends in here. She did the shelves too. I had too much crap and she helped me pare that down.” Tracy shares. This is a warm and inviting space just perfect for visiting. It’s not too big and it’s not too small. It’s just right and the mix of textures, materials and patterns ties the space together quite nicely.
Tracy’s cat, Zoe, has come downstairs to visit and makes quick friends with Patrick. She sits on the back of the chair and halfway on his shoulder and watches as he previews pictures he’s taken of her home. Just off the living area is a cozy guest room just waiting for the next guests to arrive. Tracy splurged and fit the room with two really nice and comfortable Serta beds. They were expensive beds but she wants her guests to be comfortable. Everyone loves the beds and say they are very comfy and perfect. She re-did the headboards and decided that she didn’t want them to be exactly the same - just similar. So the result is a little eclectic and funky. I like it. It works. All the creature comforts are here. There’s convenient hooks on all the doors for the guests to hang coats, robes and whatnots and the wifi information is laminated in the bedside table.
HOMESTYLE were too yellow once seen in person so they were repainted and fit nicely. Then there’s what Tracy calls the Crazy Room. It’s her work room, office and secondary guest room. The big orange striped IKEA chair beds and nearby shelves are perfect for this bright and lively space. Tracy loves fish and cats and they fill the soft yellow walls with color and life. They
all came from her home in Dallas. She has collected them and loves to see them ‘swimming around the room’. I especially like the one that is cut in half on either side of the door... Which happens to be one of the home’s original doors. This room is a work in progress and Tracy is working to get it all organized, labeled with chalk and everything stored
Tracy requested the barn doors be made for the closet and the whimsical fresh blue is very cool. The quilts are family quilts made by Tracy’s great, great aunt on her mother’s side. She looked for shams and bed skirts but wasn’t finding what she wanted so she decided to use some of her great aunts embroidered pillowcases. They are very sweet and it’s cute that they don’t match. The color combinations of the different patterns spice up the room and the beachy artwork gives extra life to the cozy space. Tracy points out that there are no ruffles here... There’s no ruffles and lace for this girl. So the bed skirts are neat and pleated linen from Ballards. There are photos on the wall of the guests that are coming next. Tracy adds, “I always put photos of whoever is visiting. I have the last picture from when we were last together and then I take new pictures and put them here when they return.” What a nice touch. A lovely sea glass mirror that Tracy made hangs in the nearby bathroom and it’s very pretty alongside the recycled glass counter tops and playful yellow striped walls. Tracy wanted the same recycled glass as the kitchen but they couldn’t find smaller slabs. It became a big hunt until they found Curava recycled glass and Dave knew that if his wife Jackie liked it that Tracy would like it too. Tracy just loves how it sparkles. The cabinets were ordered online and

in it’s proper place. Especially her jewelry making supplies. The windows are covered with temporary blinds until new ones can be ordered but that’s not a priority at this point. They need to be just right to provide a bit of privacy while allowing the light to fill the room. It’s hard not to be happy in this room. A large zebra painting hang nearby ties the color scheme together and welcomes you into the nearby full bath and adjacent dining room. The painting is also used to hide the big fuse box in the middle of the wall... Pretty clever... And it looks fabulous. Tracy smiles, “The zebra print is from Pier 1 and I love it! There’s no more of the ‘it doesn’t go’. If I like it, it stays.” I follow that same rule - surround yourself with things you love. Tracy just loves this full bath. Fred redesigned the bathroom, reconfiguring the small space and creating a layout that works. Crystal Woody at the Pink Pelican built the cabinet with the measurements provided and it serves as the perfect spot for guests necessities... Girls need their makeup, a glass of wine, etc., And there’s plenty of space for both. There’s soaps, lotions, shampoos and laundry goods in the bottom drawer and linens are stowed in the closet. The shower stall has gorgeous, neat and clean with the same blue Italian glass tile as the kitchen. The window was redone to bring in some natural light and it is simply a perfect little space. A photo of her old cat Big Ben, a 28lb cat brought back from Germany, sits nearby. “She was awesome and huge. She turned lights on and off....Just smart as a whip,” Tracy reminisces. Zoe, on the other hand, continues to pose for the camera as Tracy and I head upstairs to check out the master suite. The room isn’t completely decorated and is a work in progress. The floor was painted white, there were two closets housing the HVAC and the insulation was exposed. Fred reconfigured the space and stripped the floors. Tracy loves her bathroom and enjoys its ability to fill with great light. She found the sink in Dallas and knew she had to have it for her bathroom. The rustic, warm cabinet and the chandelier over the dressing table... She had to have them both and they are gorgeous. Dave built the dressing table to fit the space and the counter is again the same recycled glass. The color scheme is a serene and more spa like green and it serves as a wonderful backdrop for the shrine Tracy has created for all of her little goodies and favorite things. There’s a picture of Tracy and her Dad, a gift her friend Tracy brought back from Puerto Vallarta and a starfish from her friend Janet. “They’re some of my favorite things and I like to see them everyday.

They are funky things, trinkets and stuff I like. They are Me and a bit of happiness,” Tracy adds. All the windows are new because the back of the house had to be reworked because of the pitch of the new porch. The previous porch had a flat roof so that had to be reworked and new windows added. A window was also added at the bottom of stairs to add more light. Shell and starfish light fixtures, found online at Shades of Light, adorn the stairwell and compliment the beach theme. Tracy loves light fixtures and hardware. She feels they add character and she wanted to do it right. They weren’t cheap but they work... So, again, she liked them and wanted them. So be it. Tracy wants to do some more decorating upstairs. She wants to redo the chair covered in orange, update the bedspread, add some cushions and find just the right light fixture. She likes the orange chair but will most likely change that when the new colors are set but for now it’s just fine. She lived upstairs for several months because there were boxes everywhere downstairs besides there’s really no rush. There’s plenty of storage up here for winter clothing to be stored in plastic tubs and a big closet with windows and plenty of space for stowing the necessities. As we head back downstairs to the living
room, Tracy points out a lamp that she has had for probably 30 years and a small cat statue that was her mother’s sits nearby. She guesses that it’s about 68 years old and remembers it sitting on her mother’s fireplace. She shares that she’s been saving stuff forever for this house and it all works... She’s done a fabulous job. Tracy had decided to name her house The Mermaid Manor so when she met Crystal and Woody, with the Pink Pelican,
she requested they make her a custom mermaid swing for her giant sized porch. The mermaid swing was made to be a little wider than normal and long enough to lay down on and sleep. It’s just perfect for Tracy and yes, she naps on it. It is a wonderful oversized front porch decorated with seasonal pieces, rocking chairs and plenty of color. There’s even a tiny little rocker for the little people that stop by because they do like to rock too.

“I always wanted a porch swing. I always said if I ever have a porch, I’m gonna have a swing. I’d sit on the swing at my grandparent’s farm and dream...Thinking if I ever have a porch, I’m gonna have the best frickin’ porch swing and I do!! I have the best swing...It’s just fabulous. I love it! - Tracy Beaulieu Tracy’s friend Barbara talked her into that purchase... She likes stuff like that Tracy shares and smiles. A mermaid mailbox, funky yard art and beachy whatnots welcome guests to the porch and Tracy had fun putting that together. The front yard is wide and welcoming with a semicircle drive. Tracy put out 35 bags of mulch by herself, took care of the
weeds and enjoys her plant choices but she wants to make a few changes. She plans to widen the driveway so it’s wide enough for 2 cars to circle around and add a few small palms alongside plants that look nice all year. She loves the hydrangeas but they just aren’t pretty all year. But that’s still up in the air, it was more about the front porch and getting that done so, there’s no rush.
IN CLOSING:
Tracy The toughest decision? I don’t think I had one. What are your plans for the Holidays? My home is on the Christmas Tour this year and that’s very exciting! How many times did you see the house, in person, during the renovation? Just one time...When it had been taken down to the studs. I had complete confidence in Fred and Dave and I had remodeled 2 homes in Dallas so I know very well how to organize this kind of project. Fred How did you land in Southport & how long have you lived and worked here? 12 years ago, I met my future wife while out on a kayak tour for my birthday while vacationing on Oak Island. Emma Thomas, owner of The Adventure Kayak Co. was leading the tour that day. I asked if she was single. With a grin she did give her number. As a result, I did move to Southport 11 years ago and did marry Emma 9 years ago. I formed my company, Green Harmony Inc., as a way to make a living in Southport building homes. Initially I built a home on Bald Head Island for my business partner and architect. Anything you would want to change? Wish you had rethought? What you’d never change?
Problem solving is fun for me. I put a lot of thought into the design while listening to my customer’s desire. Tracy’s house is a wonderful example of this. The description went from “yuck” to “wow”. I wouldn’t change a thing. What were some of the easiest/toughest decisions for you to make about the home? Determined to do things right, while trying to conserve my clients money. Advising a client if this is a wise decision or good investment in the big picture sense. Dave What is your background? I started 50 Lakes in March of 2016 with my wife Jackie after installing cabinets for 30 years. I liked design and saw things I wanted to learn more. So I completed a 2 year Kitchen & Bath program got an Associates Degree in Interior Design in 2009-2010. I met Fred while I was working at Lowe’s Home Improvement designing cabinets How was it working with Tracy? She was only here for 4 days during the entire process but she had sketched out what she wanted in a notebook and we went from there. What was your favorite part of this project? I was able to work as the cabinet designer and builder. I was able to be creative and design with few limitations.1

HEALTH National Hospice Month
A look at the comfort and support offered STORY BY: LESLIE RESCHLY, BSN, RN
A
s a young nursing student with a heart full of invincibility, I recall a lecturing professor making a statement; that since the day we are born, we are dying.... Yikes, I thought, but yet how true! Death and dying is certainly not the topic people turn to for social conversation. In light of National Hospice Month, I briefly approach the expansive topic for consideration here in this column.
Hospice derives from the word hospitality, in medieval times where places of rest and shelter were offered to weary or ill travelers. A pioneer in caring for the terminally ill, Dame Cicely Saunders started the first hospice in 1967 in England. Already a leader in care of the dying, she was invited by Yale University to discuss her concepts in 1963. First Connecticut Hospice was developed in 1974 bringing modern hospice care to the USA. Hospice is a service entity that provides comfort measures to a patient and support to the patient and their family during the time of a life-limiting illness. Typically, the illness is no longer responding to treatments which are “cure” oriented or the patient has chosen to stop such treatments. Life expectancy is frequently noted by the medical profession to be 6 months or less. Although often associated with cancer, hospice services are utilized in a variety
of disease processes including end-stage lung, heart and kidney disease, Alzheimer’s and dementia, stroke, ALS, neurological diseases and HIV/AIDS to name just a few. Hospice can be of benefit to those of all age spectrums including pediatric clients. Offered in a home, hospital or hospice center, care is focused on the whole patient/family assisting not only with medical care including pain management but also providing emotional/spiritual support to the patient and family. Resources, information and education are coordinated and provided throughout the duration and often continuing in the form of grief support. Positive benefits associated with implementation of hospice care include improved pain and symptom management and avoidance of unnecessary hospitalizations. The one thing hospice does not do is prolong life or hasten death.
Locally, we have several options available for hospice care including the SECU Hospice House of Brunswick connected with Lower Cape Fear Hospice located on Highway 17. Among several, one home-based hospice care agency is Amedisys Hospice Care which brings around the clock support to patient and families in the home or hospital setting. Rebecca Green, RN, CHPN is the Clinical Hospice Liaison in Brunswick County for Amedisys Hospice Care. A veteran champion of hospice care in our county, Rebecca represents this national company by linking all aspects of patient care and coordinating resources noting, “89% of people desire to stay in place (home) during this time”. Stressing the importance of patient specific desires in her company and staff, Rebecca emphatically stated, “We do everything to say yes to a request” in providing personalized home hospice services. Amedisys has contractual agreements with local facilities to provide for acute care as well as respite care if needed. Home agencies also offer a variety of other services to facilitate care such as social workers and staff to assist with insurance issues. Amedisys takes all insurances and non-insured individuals. Early decision to enlist the services of a hospice care provider allows for maximum benefits to be received. Local physician, Lettie Doran, MD, offers her services in dealing with this transitional period through Hearts & Sol Wellness, Inc. on Oak Island. Following the desire to meet patient requests, she states, “What’s important is that the person, and those alongside them, feel supported and comfortable expressing what they need. There can be well meaning “compassion” from many different sources, but if the gifts don’t meet our needs, they are without use. Even pain medication given to someone who wishes to be lucid more than pain-free is without utility for that person. “Rebecca reiterates noting, “Recently I told one man that he is Captain of his ship...we will do everything to his desires just as he would have requested while in charge of his boat.” Lettie states, “I empower people by giving them the confidence and the education they need to make decisions or ask difficult questions “ offering mediation with family and coordination of care with multiple providers if needed. However, she also notes, “Giving thought to what we wish under different circumstances is always easier before we get to that last six months when conversations about death are emotionally charged and sometimes painful. Thinking about death is as important as planning our retirement!” Personal experience al-
lows me to be in agreement. As a nurse, I have been in multiple end of life events over my seasoned career...some expected and some completely unexpected due to trauma etc. I must note that those situations where the patient had clearly communicated their wishes made for much less stressful decisions on the part of the family. In addition, my beloved mother sustained a life-ending disease which tragically gave us only 52 days to process. Her planning, conversation and written requests allowed us to make end of life decisions for her consistent with her wishes. Only a snowstorm prohibited us from getting her to her home! Rebecca agrees that ongoing conversations are much easier than those made under crisis. However, whether or not you feel you can have that conversation with your loved ones for whatever reason, you can specify your desires through Advance Directives which specify how you would like to be treated if you cannot speak for yourself. These can be a part of your medical record at your local hospital or physician office. FIVE WISHES is a form of Advance Directive that meets legal requirements in the state of North Carolina. SAVOR Good Gouda!
Southport Cheese Shoppe from traditional to the exotic STORY BY: AMI BROWN
W
hen Lisa and Eric Stettner decided to leave New Jersey for life in the slower lane, they had no idea a Gourmet Cheese Shoppe was in their future. The residents of Southport sure are glad they did! The Southport Cheese Shoppe is a little hidden gem, right here in plain sight! Located at 417 N Howe Street, access couldn’t be easier. I had the pleasure of meeting the owners and tasting some of their breads and cheeses, and no doubt I’ll be back for a second helping.
Eric and Lisa Stettner, Owners of The Southport Cheese Shoppe
Lisa and Eric moved to Southport about four years ago, and were looking for a new venture. They decided to partner up with another couple to open a gourmet cheese shop. Well after lots of planning and research, the other couple decided to explore other options. Now with some great mentors to advise them, the persistent couple forged ahead with the well thought out plans on their own. Although it meant a lot more work, they proudly opened the Southport Cheese Shoppe in March much to the delight of locals. The couple is accustomed to hard work and business ownership. Eric owned a successful auto repair business back in New Jersey and Lisa worked for the public school system as a school bus driver. Far from the gourmet world of cheese, I’d say they’ve taken their new careers by storm and love it. The Southport Cheese Shoppe carries
rosemary crackers. Needless to say, I walked out of there with a bag full of goodies. Another unique cheese is their Casatica; a mild milky cheese with a sweet soft finish. What makes it unique? Well it’s Italian and it’s made from Water Buffalo milk. The Gouda cheese they stock is ranked one of the top 60 cheeses in the world, and just happens to be Lisa’s favorite! One of the most interesting combinations of flavors is their gourmet cheddar flavored with espresso and lavender buds. Lisa says this cheese goes perfectly with crackers or on a baguette. One of their delighted customers commented, “I haven’t had brie like this since I was in France.” “Our local customers are thrilled because there is nowhere else to get fresh baked New York breads like these.” Let’s
face it; a lot of Southport transplants have come from up North, and other places where gourmet cheeses are more abundant. This little shop really hits the spot for locals and tourists alike. They bake fresh daily Jewish Seed Rye, French Baguettes, Multigrain, Rolls, and Olive Seprata – which is a soft dense break apart bread stuffed with olives to die for. If you are in the mood for a gourmet Panini, make sure to stop by at lunchtime where you can take away a delicious treat, a perfect escape during your busy day. If you’re looking for more than a cheese shop, you’re in luck! They stock a variety of rubs and sauces—The Jalapeño Pepper Jam, Fig Spreads, and gourmet rubs are a few other popular items. Vivian Howard, co-owner of Chef & the Farmer Restaurant in Kinston,
the finest hand selected domestic, international, artisan and gourmet cheeses in town. If you enjoy quality, award-winning cheese, you must stop in, have a taste and immerse yourself in this world of rich flavor. The shop offers traditional wheels like, their most popular – triple creamy Brie, along with a variety of cheddars, Swiss, Camembert, Gouda, and Romano. Lisa is happy to take requests for specialty cheeses and is happy to custom order to taste. They also carry exotic cheeses like their Ubriacone; an Italian cheese, soaked in local red wine and covered with grape leaves to age. I got to sample this, and it is a mouth watering flavors that pair perfectly with the www.SouthportMag.com / NOVEMBER 2016 / Southport Magazine 43

CHEERS Blended Wines BY: PAUL WASSERMAN, PARTNER AT UNCORKED BY THE SEA
A
day doesn’t go by with at least one customer coming to Uncorked asking which wines are ‘blended’ wines. And in response I often share that with very few exceptions, nearly every wine we offer is a blend of one type or another.
You can find these blended wines and more at Uncorked By The Sea - Wine, Craft Beer and Art. 602-A N. Howe St, Southport.
At Uncorked by the Sea blends are in 3 categories: Multiple Varietals: These are wines made of two or more grape varieties.Multiple Vineyard sites: These wines can be made from one specific variety or multiple varieties but also the grapes are taken from multiple vineyard sites. Multiple Vintages: Just like the first two categories, these wines might be multiple varieties, and multiple vineyards. But what separates this category is that it is from multiple vintages. These used to be called ‘non-vintage’ wines. At uncorked we call these wines ‘multi-vintage’ wines. The tradition of blending grape varieties began centuries ago in Europe and most notably in various appellations in France. The wines of Bordeaux began this tradition centuries ago. Centuries of experimentation proved 5 varieties were best suited to this region: Cabernet Sauvignon, Merlot, Cabernet Franc, Petit Verdot and Malbec. This trial and error period also demonstrated that Bordeaux is naturally divided into The Right Bank wineries and Left Bank wineries. The Right Bank Wines are predominantly Merlot with amounts of some or all 4 additional varieties. The left bank, wines are basically Cabernet Sauvignon with addition of some or all of the other 4 varieties. The Northern and Southern Rhone
appellations are excellent examples of this tradition.Through centuries of winemaking the vinerons of the Rhone have learned which varieties thrive is which soils and climates. While Grenache and Syrah are planted in the north and south and are widely used throughout the region, one appellation has 13 approved varieties: Châteauneuf-du-Pape. The Languedoc-Roussillon and its sub appellations produces more wine than all of the areas of production in the US combined. This region produces quite a bit of single varietal wines. But using the varieties of the Rhone this appellation produces millions of bottles of quality wine. As more and more Europeans came to the ‘new world’ with them came their traditions. And in this instance their winemaking traditions. Just as they had learned in their native countries that certain varieties work best in certain soils and climates, they applied those principles here, as well. The tradition of blending, in one category or another is practiced in nearly every region of production in the United States. From Napa Valley to Sonoma down to Lodi and Paso Robles the tradition of blending is practiced. When we talk of blended wines we’re usually including red wines. But the same tradition holds true for many white wine ap-
to locate red blends from a number of AVA’s and Appellations. Without going overboard, here are a few of our featured red blends: Coup De Grace from Lodi a blend of Zinfandel, Petite Syrah, Petit Verdot and Cabernet Franc. Tablas Creek Vineyard Patelin de Tablas of Paso Robles fame, this is a blend of Rhone varieties. KITCHEN Three Ways to Cook Turkey Throwing a Twist on Tradition STORY BY: KRIS BEASLEY
I
f I close my eyes, I can smell the mouth-watering aroma of the Thanksgiving turkey roasting in the oven at my folks’ house. I am not sure if there is a better smell on earth! In fact, I think they should come out with a seasonal candle that smells like turkey and dressing! While nothing can replace my mother’s roasted bird, I thought it would be interesting to research some other ways to cook a turkey and perhaps discover a new method and tradition.
1. SIMPLE ROASTED TURKEY
• 9-pound turkey, raw • 10 quarts brine (recipe below) Place the turkey in 20-quart container.Pour the cold brining liquid over the turkey and let turkey brine for 10 hours. When it has brined 10 hours, remove from the liquid and place on a tray to dry out. Place the turkey on a roasting rack on a tray and cover with lid or tin foil. Place in oven. Roast at 350°F until an internal temperature of 165°F is achieved. Roughly 15 minutes per pound. *Baste with butter every 30 minutes. Uncover to brown the turkey the last 30 minutes or so.
TURKEY BRINE (YIELDS: 6 PORTIONS) • • • • • • • • • •
4 quarts water 6 quarts ice water 1 bunch thyme 1 bunch parsley 1 ½ cups kosher salt 5 lemons cut in half 2 bay leaves ½ cup honey 2 garlic heads, cut in half crosswise 3 tablespoons whole black peppercorns
EQUIPMENT FOR BRINING
• 12-quart pot • 20-quart container In the 12-quart pot, combine 4 quarts of water with the remaining ingredients in a large pot. Cover and bring to a boil. Stir until salt is dissolved, then remove from the heat.
Transfer to 20-quart container and add the 6 quarts of ice water. Let cool completely. Lower the turkey into the brine and refrigerate for 24 hours.
2. DEEP FRIED TURKEY WITH CAJUN RUB
SIMPLE ROASTED TURKEY CHOOSING A TURKEY
Safety First: I cannot stress enough here about the safety factors involved in this dish, so please follow the safety tips carefully, stay safe and enjoy this dish with a difference. I have included a list of all the required equipment, notes about the oil required along with the cooking method and the recipes for various dry rubs for you to add an extra twist each time you cook your bird. Location and Safety: Place the gas burner on level dirt or grassy area, ensuring that it is stable. Never fry a turkey indoors, in a garage or in any other structure attached to a building. Avoid frying on wood decks, which could catch fire, and concrete, which can be stained by the oil.
Choose a small bird approximately 6-8 pounds. Anything larger will not fully cook and may also cause safety issues such as lowering and lifting from the hot oil.
TURKEY PREPARATION
EQUIPMENT REQUIRED
• Extra large saucepan / stockpot / pasta pot • Portable gas burner • Large food basket • Food thermometer for the oil temperature • Oven cloths / mitts • Fire extinguisher • 2 - 4 house bricks or similar • Large tray with sand • Oil Choose an oil / fat that has a high smoking point. It will need to be stable at 350 degrees - peanut, canola, safflower will work. To exactly measure the amount of oil required:
DEEP FRIED TURKEY 1. Place the turkey into the pot 2. Add water until it covers the turkey by approx. 2 inches. The level of the water should be at least 6 inches from the top 3. Measure the amount of water used, and use that amount of oil Safety note: Be sure to thoroughly drain and dry off the turkey, inside and out. Any water remaining will cause a safety hazard later when immersing it into the hot oil.
The turkey may be left un-seasoned or a dry rub used for extra flavor. These are best rubbed into the bird a day or two ahead to allow the flavors to penetrate and develop. Rub the seasoning into the cavity and under the skin for maximum effect and to minimize the contamination of the oil. Do not inject the turkey with liquid marinades, as this only adds moisture content and can cause excess bubbling of the oil as it cooks and can be a major fire hazard if not completed properly. Do not stuff the turkey. Cooking: It cannot be stressed enough that the turkey must be thoroughly dry before commencing any further. Even if you dried it before, check and pat dry inside and out once again. Place the oil into the pot and place over a medium heat - depending on the amount of oil used, this will take up to 1 hour. Once the oil has come to temperature, place the turkey in the basket and slowly lower into the fat. Cook for approximately 5-10 minutes per pound After two-thirds of the estimated cooking time, carefully remove the turkey and check it, this can be done by the use of a meat thermometer (the temperature at the core of the thickest part of the breast must reach 160 degrees).

KITCHEN SMOKED TURKEY ON THE GRILL
CAJUN SPICE RUB
• Sea Salt Flakes 1/2 cup • Onion Powder 3 TB • Garlic Powder 3 TB • Black Pepper 2 TB • White Pepper 2 TB • Sweet Basil 2 TB • Smoked Paprika 1 1/2 TB • Cayenne Pepper 1 TB • Bay Leaves-ground 2 tsp • File Powder 2 tsp Combine all ingredients thoroughly
COOKING TIPS
Adjust the cayenne to suit your own taste. File powder is dried, ground sassafras leaves, also known as filé or gumbo filé, (pronounced fee-lay). It is used frequently in Creole and Cajun cooking. First known use was by the Choctaw Indians of Louisiana. It is used as a seasoning and primarily thickening agent in gumbo and has a wonderfully pungent and aromatic flavor. *When added to gumbo never add it while it is cooking, add at the end when the gumbo is off the fire (it is best when you sprinkle it on, cover the pot and let it sit for 15 minutes). If brought back to a boil it will turn stringy. Alternatively cut the skin between the leg and the breast and carefully pull apart slightly, look for any signs of pinkness or rawness at the thigh joint. If present repeat with the other leg and slowly place back into the oil to complete the cooking by separating the skin in this way the heat now penetrate to the thigh joint and cook it without over cooking the breast. When cooked, turn off the heat source. Carefully remove the basket and allow the excess fat to drain away. A couple of bricks placed on the ground are ideal for resting the basket on, to allow it to drain. A shallow tray of sand is ideal for catching the dripping oil; it makes for easy removal and keeps your area clean. Additional Safety Tips: Never leave the oil heating when unattended.
Never leave the turkey cooking when unattended. Don't allow children or pets anywhere near the cooking area. When cooked, turn off the heat source before removing the basket - this ensures any dripping oil will not catch fire and set alight the whole pot of oil. Allow the oil to cool completely before moving the pot, disposing, straining or storing of the oil. Immediately wash hands, utensils, equipment and surfaces that have come in contact with raw turkey. Turkey should be consumed immediately and leftovers stored in the refrigerator within two hours of cooking and used within two days.
3. SMOKED TURKEY ON THE GRILL • • • • • •
1 Turkey (14lb or smaller) 3/4 tsp Salt and Pepper- each 6 sprigs Fresh Sage 1/3 cup White Wine Vinegar 1/3 cup Vegetable oil 2 tbsp Chopped fresh Sage, Rosemary, Thyme and Parsley - each • 1 tbsp Dijon mustard
FEELING INSPIRED THEN TRY THESE EXTRAS
Apple Wood or other wood chips (fruit woods tend to work well with turkey) to add flavor - soak for 30 minutes, drain well, place in smoker box under grills for tremendous smoke flavor. Stuff the body cavity as you would for
roasting in the oven (adds time, adds flavor to). Anything will do, but here’s a good recipe: Combine 2 cups chopped onion, 1 chopped granny smith apple, 1 tablespoon chopped sage, ½ tsp salt and ½ tsp pepper. Stuff bird.
INSTRUCTIONS
1. Remove neck and giblets from turkey. Rinse inside and out and then pat dry. Place sage sprigs in cavity. Skewer neck skin to back. Using kitchen string, tie legs together and wings to body. 2. In bowl, whisk together vinegar, oil, chopped sage and mustard; set aside. 3. Heat 1 burner of a 2-burner barbecue grill or the 2 outside burners of a 3-burner barbecue grill to medium (if you have more than three burners – just make sure you’re keeping the outside of the barbecue warm and the middle of the barbecue cool). 4. Place foil drip pan under unlit burner(s). This foil pan will fill with the drippings, which make delicious, smoky gravy. Ensure that the heat from the rest of the barbecue is not too close to the drip pan otherwise your drippings will bubble, evaporate and possibly burn. 5. Place turkey – breast side down - on greased grill over unlit burner(s), cover breasts with foil (very important – it keeps the breast meat from drying – white meat cooks faster than dark, so the foil slows the cooking). 6. Close lid and cook, brushing every 45 minutes with vinegar mixture and adjusting heat to keep temperature between 250 and 300 degrees for 3 ½ to 4 hours or until meat thermometer (remote or otherwise) inserted in thigh registers 180 degrees. 7. Remove the foil from the turkey breast after 2 1/2 hours of roasting. 8. Transfer to cutting board. Tent with foil (the whole bird this time) and let stand for at least 20 minutes before carving.1
