Making Floral Magic!
Designs by Amber Lanier create the perfect Wedding Ambiance BY CARLA EDSTROM
M
y mother’s yard is full of flowers, plants and a large vegetable garden. She has everything you can imagine growing there in her little half acre, and each year when I go home to visit, I get a tour of the yard to see what she has planted in the spring and what plants made it through the harsh Midwest winters. My favorite is her two giant lilac bushes that were a gift to her from my dad on her first Mother’s Day over 60 years ago. I have yet to find lilacs with the strong scent that her lilac bushes emit. I’m sure she got her love of flowers from her mother.
My grandmother lived in a big Victorian house that had a sidewalk that went all the way around it. One of my earliest memories was running on that sidewalk around that house with my sister chasing me. Grandma had Lily of the Valley flowers planted along the shaded areas. To this day, the second I smell that flower, I am instantly taken back to grandmas, run-
ning around the house, intoxicated by that beautiful strong fragrance. Flowers often bring back fond memories of happy times, and also remind us of the special events in our lives through their fragrance and beauty. No one knows this better than floral and event stylist, Amber Lanier. “I’ve always been a creative person with a love for flowers,” she said. From a

young girl helping her mother find plants in the woods, to making necklaces out of dandelions for her friends, Lanier knew that she always wanted to “spread the love of all things flowery to others.” Her breathtaking design style and eye for details makes me want to throw a party tomorrow just so I can hire her. currents After years of working in the film industry in Wilmington, NC and Charleston, SC and then in small stint in corporate America, Lanier she found her way home back in Southeastern NC where she married and started her family. While she was a stay at home mom to her twins, she honed her floral arranging skills during their naptimes and play dates. “My experience in the film industry was a large factor in learning the importance of continuity and cohesiveness throughout a space in telling one’s story, ” she said. “I also find that I look at styling a space through a camera lens perspective makes for beautiful photos that last a lifetime for client’s to enjoy.” She sharpens her skills by attending floral workshops and she constantly stays up to date with the latest styles in design. Lanier has created her own brand of floral and event styling, and in 2007, Designs by Amber Lanier, Floral & Event Styling
cessful events. “I find confidence in knowing that I am not alone in the fact that what I am creating is for someone who has trusted me with one of the most important moments in their lives,” said Lanier. One of the biggest challenges of her job is convincing people that they should hire someone to take care of the styling and set up of their event. Relying on family and friends to do it often ends up with details not being done and a lot of stress for the client. It’s worth the extra money hiring a professional event designer helps insure these details are carried out successfully. “Every event that I have been blessed to take part in has been special in its own way,” said Lanier. “And that is seeing the joy on a client’s face when they see their vision come to life. I find great pleasure in getting to know my client’s personality then creating an atmosphere that represents their own individual story.” I can

From the beginning of a project, she puts her heart and soul into each and every detail of the event. From the color schemes and table linens, to carefully choosing each flower and setting just the right mood, it is Lanier’s pure artistic eye for design, strong faith in God and relying on his guidance that helps her create suc-

Katie Beecher gives intuitive readings that help you discover emotional health. BY LISA STITES
I
n this month that celebrates all things love, it’s a good time to remember that fostering good relationships with others and loving and caring for yourself are important to maintaining a healthy you.
“Love is so important to physical and emotional health. I cannot tell you how many times I get people who are sick and have no idea why and then I find out they’re in really crappy relationships and they want me to fix them. And conversely, people who have gotten better and part of that was getting out of a relationship that wasn’t good for them,” Katie Beecher said. Beecher is a licensed counselor, and
she is also a medical and emotional intuitive and medium. She moved to Southport from Connecticut six months ago, but works with clients from anywhere. A session with Beecher will involve giving her your name and age ahead of time, and receiving a written report about things she picks up on regarding your health, which she also portrays with a drawing of your body, with colors highlighting different as-

pects in areas of the body. Beecher makes it clear that she does not offer a diagnosis, saying that would be irresponsible. She does not try to take the place of a medical doctor. In fact, she gives suggestions for things to follow up with your medical practitioner. And she recommends vitamins or supplements specific to what she sees going on with a client. “I may pick up on symptoms,” she said. “I always help people find someone I respect to get a responsible diagnosis and treatment.” Beecher said she was just 16 when she embraced her abilities, though throughout her childhood, she knew something about her was different. “I don’t know exactly when I figured out that I could talk to dead people,” she said. “I always picked up stuff from people.” Beecher didn’t have anyone to talk to about what she was experiencing so she just shut down any abilities. When she was 16, she turned to her pediatrician for help with an eating disorder. She hadn’t told her parents or anyone else about it, but she felt compelled to call her doctor, who found her a Jungian therapist. “She really helped me to be ok with my abilities, to accept them, to understand them and to connect to my intuition,” Beecher said of the therapist. The Jungian philosophy, named for famed Swiss psychiatrist Carl Jung, focuses on the self, a connection to the body. “That really saved my life,” Beecher said. Beecher went to school to be a therapist

and during her work, she realized that she works intuitively. “I realized I was getting messages from guides, and that’s when I worked the best,” she said. “I started accidentally channeling relatives from clients and realized this wasn’t going away.” Beecher joined a spiritualist church, which she said helped her develop these gifts. Later, she happened upon a workshop by Dr. Mona Lisa Schultz, a medical intuitive. At the beginning of the course, she was given a name and an age and she found that she ended up knowing a lot about her unknown subject. She then took a year-long training with Dr. Schultz, practiced a lot, and incorporated medical intuitive readings into her work. Beecher is also writing a book and is in negotiations with a publisher. Beecher understands that the work she does may not appeal to everyone. “That’s

currents ok. I don’t have any great explanation for how I do this,” she said. As a clinician, she said it was very important for her to establish empirical data, as much as she could. She was asked to do a study for a peer-reviewed journal, and when she couldn’t find other studies with data relevant to her work, she did one of her own. She gathered information from clients, and with their permission, from their medical practitioners, to compare her readings and their actual medical data. She said her accuracy was at 97 percent. Maintaining credibility is important to Beecher - it’s why she sends her reading report and picture before meeting with a client. She said it’s important because then she can’t bluff her way through a reading. Most of the people who seek her help probably have some experience with holistic healing. Beecher said they might be a little skeptical because they have been to so many other people and not gotten better, but that most of the time when they receive the report, they are impressed. Beecher doesn’t just spend an hour with a client - she will work with someone later for no additional change as questions arise. “I actually care. I don’t have anything to prove to anybody,” she said. She also did a session with me. As she picked up on in her report, I tend to not share things easily, so while I won’t share specifics about my personal session, I will give a little insight. Armed with just my name and age, Beecher gave me a profile of what was going on with me medically, spiritually, and emotionally, and I think it was extremely accurate. I learned a lot about myself and things I should change, some things that I probably knew but needed to hear. Beecher was friendly and kind, encouraging, and non-judgmental, and she gave me a venue to open up, which, shockingly, I responded to. I am not necessarily a true believer about the ability to connect with spirits, but I am not a non-believer either. Regardless, I took a lot away from my session. I was reassured that it is not only ok for me to let things in the past go, it is better for me if I do. I really heard the message that it’s
good for me to take time out from this crazy busy loud life to quiet things down and recharge myself and that I have to work on reducing unnecessary stress. I understood that it is not only acceptable to feel certain things, but that I need to feel them, even if I choose not to express them if it’s not the right time or place to do so. It was a great opportunity to take a look inward and make some promises to myself. And then I got to write about it, which always makes me happy.

Annual Antique Appraisal Fair - Feb 25th STORY BY AMI BROWN
T
he Southport Chapter of P.E.O. (Philanthropic Educational Organization) is sponsoring their 15th Antique Appraisal Fair at the Southport Community Center on Sunday, February 25, 2018 from 2 to 5 p.m. As in the past, multiple certified appraisers, both specialist and generalists, are volunteering their expertise to give their estimate of what your antiques are worth. You may bring up to 3 hand-carried items to be appraised. The cost is $8 per item, or three items for $20
1 - The Southport Chapter has been doing this fundraiser for the past 14 years... what is the most exciting antique that has been “discovered” in the appraisal process? (or memorable) I think Debby’s $15,000 train set is the record for most expensive. 2 - Has there ever been anything appraised that was quite a “shock”? Or Interesting artifact? Or Unidentifiable? We have had at least one item that looked

like a prehistoric find that was unidentifiable and could not be valued. The owner of it said he had taken it to several other appraisers and they didn’t know what it was worth either. We also had an original letter from Teddy Roosevelt written in 1898. That one was so valuable that the appraiser said more research would have to be done to establish its value. 3 - I think everyone has watched Antique Roadshow... is the appraisal fair similar to that? Yes it is, very similar. 4 - What do people usually do when they find they have something valuable? So they normally sell it - or keep it? At least half the people have no intention of selling the items; they are just curious as to their worth (and many want to know to tell their children what they will inherit.) Sometimes they are even more pleased to find out how old the item is, what it is, and where it came from especially if it is an heirloom. “Sometimes people get a real surprise -like my husband. He brought in his 100-yearold shotgun, still in working condition, in its original ratty old cardboard box that left a trail of cardboard sawdust all the way across the room. The appraiser said the gun wasn’t worth much but the box was quite valuable. I can assure you neither Al nor his box were very popular with the AAF clean-up crew who did not appreciate having to get up all that sawdust!” 5 - How many people usually come? One year the total was over 300, but the usual number is closer to 200. All proceeds from this fundraiser will go toward college scholarships, educational loans and financial assistance for women to further their education. Over the last 14 years, the Southport Chapter has raised over $20,000 through the Antique Appraisal Fair. P.E.O is an international organization of women whose mission is to promote and support educational opportunities for women. It was founded in 1869 by seven students

ody Britton and Gail Bramble are the brains behind Weddings by the Sea. Based here in Southport, they now have a boutique space for brides. Join them in their open house - Feb 7th, from 4-7pm, at 116 A North Howe St to find out more about their services. 1 - What makes Weddings By the Sea different than any other wedding planning service? (What is your “Stand out” feature) I think what makes us a little different than other wedding planners is that everyone that works on our team started out as either family or a friend. We all work well together and we trust in each other’s skills. For instance (this happens a lot) I will have an idea of how to do something. I communicate this idea to Gail and she takes it to the next level. Adding a little more fluff or an extra little sparkle! We also take pride in really listening to what the couple wants for their wedding.
Sometimes what isn’t said, speaks louder than what is said. We have to be able to read between the lines. Our ultimate goal is for the bride and groom to have had the best day of their lives by the end of the night! If anything went wrong, we want to take care of the problem without the couple ever knowing about it. I feel like we really do a good job at that too! 2 - What is your favorite Wedding theme? The beach themes are, of course, the most popular request we receive. We have beach weddings down pat! Other than that, I’m not sure I have a favorite. Every time

She and her fiance Bill were wanting to elope near the water, but not in the sand. It would be just the two of them along with Krissi’s two daughters. locations around Southport and Oak Island and came upon the Salt Marsh Boardwalk and Waterway Overlook in Southport. This 1/8th of a mile boardwalk out into the marsh, provided the perfect aisle! Their day began with brunch at the Southport Tea House. Then Krissi and the girls met me at a cottage on the outskirts of Southport. We rented a room for the girls to get ready for the ceremony. Krissi had her hair and make-up done by Leigh Anne Britt on the back porch. It felt like something you would see in a Nicholas Sparks movie. Peaceful and relaxing. When it was time for the ceremony, The British Taxi picked the ladies up, along with the photographer (Candice Murphy), and drove them to the boardwalk where Bill was waiting for them. Their ceremony was performed by Mr. Ashley Stephenson of Bee Mine Weddings. After the ceremony, the British Taxi escorted them to various locations around town for photos. They then enjoyed dinner at Oliver’s On the Cape Fear. Their night ended outside at the Waterfront Park where Gail and I had set up their cake (provided by The Confectionary) under one of the pavilions which we decorated. This was obviously a small wedding, but it was truly one of the most memorable ones! 5 - What is the biggest mistake people make planning their own weddings? The biggest mistake people make when planning their own wedding is thinking they (or volunteered friends and family) can set up, direct and clean up everything. It’s easy stuff-right? I can’t tell you how many times I’ve heard people say they didn’t realize the tide might be an issue. Or how hard it is to carry chairs out onto the beach. (Referring to weddings in the past that they were involved in.) I’ve had mom’s tell me they were so busy setting
up, they didn’t have time to get themselves ready for the event. At venues, people don’t realize that it takes a good bit of time to set up chairs, lights, tables and decor. Someone has to be there to be in charge when deliveries are made. Or someone has to find out why a delivery hasn’t been made. Once we have worked at a venue, we become familiar with how things are done, their rules and deadlines. We can actually save couples and their families time, money and frustration.

Here’s what he has found to be the most common advice from elderly couples who have stayed together for 30, 40 or even 50 years of marriage.

It might sound like a cliché, but Pillemer finds constant communication is the key to a lasting relationship. Before you get married, discuss your values and make sure they’re compatible. Don’t just talk about if you want to have kids—discuss how you will raise them. Talk about money—how you plan to afford things and when you want to retire. Then, once you’re married, communicate when you’re happy and unhappy, what feels good and what doesn’t, what turns you on and off. Don’t make excuses that you’re the “strong silent type.” Those people are in long-term relationships, too. But they learned how to talk about their emotions. When kids come along, it’s easy to get sucked up in the “middle aged blur,” or the part of your life when career and kids can command all of your attention. Don’t wake up at 50

his new home was designed by local architect Rich Bandera and built by General Contractor - Wes Cross. Located in the historic district of downtown Southport on Burrington Avenue, we wanted to share with you it’s design and style.

The design phase began in 2016 and construction was completed in 2017. This area of Southport is undergoing a transformation with many new homes being constructed. Burrington Avenue is a quiet neighborhood with a natural charm the owners were hoping for. The site is unusual for a historic area lot with a larger street frontage and lot depth. The property also has a large oak tree which was preserved and incorporated into the design. The client David and Dina Rhodes relocated from Leonia NJ just outside of NYC. After a few years visiting Southport they worked with realtor Steve Bowles researching area listings and after careful consideration decided to build new working with Wes and Rich. The “saltbox” profile naturally creates a cottage massing from the
street and allows for full height rooms to the back of the house without the added cost of cutting in an additional dormer. The interior is efficient in its use of space with the end result creating elegant light filled rooms throughout the home. The main level consists of a living room, dining, kitchen area with a master bedroom suite tucked further from the street to offer privacy and views to the oak tree and to a more private rear yard. Rich’s design organizes and locates the utility/stair core centrally which serves to open exterior walls to natural light opportunities and to create the wall surfaces needed for artwork and other furnishings within the interior spaces. The upper level has two guest bedrooms and a guest bath with ample interior storage.(due to the saltbox profile). At the rear of the site is a two car garage with a large open space to garden and relax on the terrace. Wes’s background in trim carpentry is evident throughout the design using Craftsman detailing making this house a home. Most importantly the front porch fills the street elevation which the owners use regularly to meet new and longtime residents.

LOOKING BACK Longest Marriages
Two of Southport’s oldest couples give us the scoop on love and making it last. BY KASS FINCHER
T
hough they didn’t know each other, two of Southport’s longest-married couples shared several things in common – the same ages, a strong faith, and a commitment to family. They also both moved here to be near adult children. And, amazingly, each of the women have twin sisters! Jack and Chris Benjamin are 92 and 91 years old, respectively, and late last year celebrated their 69th anniversary. They moved from Charlotte in July last year and live in the Landing with their daughter Lynn Benjamin and close to their other daughter and son-in-law Susan and Mike Justice. A third daughter Libby lives in the Atlanta area. The Benjamins proudly claim seven grandchildren and five great grandchildren. Chris grew up in the Shelby area, where her twin sister still lives. Jack spent his early years in China, where his parents were missionaries. During the conflicts with Japan in the late 1930’s, Jack and his family moved to the United States. Stationed in the army in Petersburg, Virginia, Jack met Chris at a local Baptist Church where she was a secretary. And later it was there in a little classroom that they married. Jack’s first job was as a time and motion expert for a meat packing plant in Chicago. His daughter Lynn describes his fit for that type of work. “That job was appropriate for him because he doesn’t like to
waste time,” she says. “He’s always looking for the quickest way to do things.” With a relative in Charlotte, Jack started a business – Standard Crankshaft – which required him to travel quite a bit. Like many families in the 1950s, Jack worked while Chris took the primary responsibility for raising their three children. “They were very committed to having a Christian home, rearing Christian children and being involved in the church,” Lynn says. “They had very high expectations for us; they expected us to always do what was right. We’ve done well academically and professionally.” Today, Jack and Chris are still active. Lynn describes her father’s handyman assets. “He loves to tinker and fix things; he has that typical engineer brain, loves to solve problems.” She relates that he recently created a special tool to fix her faucet and even climbed a ladder to hang a star for the holidays. “We try to keep him off ladders, try to slow him down,” she relates with a laugh. The couple credits their long-lasting

marriage to their faith in God and vows to each other. Active in the First Baptist Church at Oak Island, Jack regularly visits church friends in the local nursing homes and hospital. He even drives to Wilmington at times to visit friends in the hospital, though Lynn says they won’t let him drive farther than that these days. Lynn believes her parents complement each other in personality. Her father’s “servant spirit” keeps him actively trying to help others. He puts his wife Chris first – making her breakfast each morning and at night asking her what she would like for dessert. Both Chris and Jack take part in exercise classes they enjoy weekly at Southport’s Senior Center. Similar to the Benjamins, Harold and Marion McCauley – 92 and 91 years old, respectively, were married for 70 years. They moved here from Toms River, New Jersey in 2009 to be near their daughter Jean Malinofsky. “They came here to be near me because I’m the only daughter – you know how that goes,” Jean chuckles. They recently moved to the Carillon Assisted Living facility in Southport.

Harold and Marion met as 8-year-old next-door neighbors in Brooklyn. Harold’s parents emigrated from Ireland; the couple were both raised as devout Irish Catholics. After serving in the Navy in the Atlantic and Pacific theaters, Harold joined the New York Police Department and married Marion. The couple raised their four children in the Rosedale neighborhood of Queens. While Marion stayed home to raise the children, Harold worked for the NYPD for forty years and moonlighted on his days off to paint churches in order to make more money to send the children to private Catholic schools. Their daughter Jean describes their partnership. “They complemented each other. My father was very easygoing; my mother not so much. They truly loved each other. She did all the cooking and cleaning; he appreciated everything she did for him. As old fashioned Irish Catholics; they believed in the power of prayer.” In their younger years, each enjoyed their separate interests. Marion was a mas-

Looking Back ter gardener and avid reader, though recently her eyes have been failing. Harold loved to golf in what he called his “first retirement” in New Jersey. Jean says her dad liked to tell stories. “Between his service in WWII and 40 years in the NYPD, he had great stories,” she says. One of his favorite sayings in response to the inquiry “how are you doing” was “I woke up on the right side of the grass.” At his 90th birthday celebration, he led 40-plus family members in singing his favorite Irish song – “Galway Bay.” That humor and self-deprecation contrasted with Marion’s toughness – a product, Jean says, of her Irish upbringing. After moving here, Harold had several falls. “My mother refused to call 911,” Jean says,. “Instead, she called me at 3 a.m. to come help get Dad up.” Even after Harold had fallen six times, it took Jean and her brothers awhile to convince her parents to move to the assisted living facility. “They were both very independent,” she says, “but it was quite a nice place for them to reside.” Although they put down roots in Southport and became active members of Sa-
cred Heart Catholic Church here, the couple still kept up with family in other places. Marion still has a twin sister who lives in Poughkeepsie, New York. Their sons Bill and Bob live in Florida, and son Gregory lives in New Jersey. Sadly, just prior to press time for this story, Harold passed away. He and Marion would have been married 71 years this month. In addition to his dear wife, Harold leaves behind four children and seven grandchildren. His obituary lovingly relates: “He was known as a Good Husband, a Good Father, a Good Friend, and a Good Cop.” Our warmest condolences go out to the McCauley family, for whom, with the Benjamins, we wish the best for the future. We can all learn from both couples’ abiding commitment to their faith, family, friends and each other. The Confectionary delights with wedding day sweets STORY BY KASS FINCHER
B
obbie Blackmon of The Confectionary doesn’t remember when she learned to cook. “I’ve always been a cook,” she relates. “My mom owned a restaurant but I didn’t really bake there. I can’t ever remember not cooking. I like cooking better than baking, but baking is what I do.” And her favorite thing to bake? Wedding cakes. Blackmon started her business on Long Beach Road over 10 years ago. Her partner wanted to do a bakery so that’s what they did. The Confectionary makes cakes, pies, tarts, muffins and cookies. They serve not only the Southport and Oak Island areas, but also Shallotte, Holden Beach, Bald Head and Wilmington as well. Born right here at Dosher Hospital, Blackmon grew up on a farm with tobacco, corn and cows. The work ethic she learned as a youngster translates today to long hours and a commitment to unique quality for her customers. Sometimes working 100 hours a week during the summer wedding season, Blackmon still manages to make time for her family of a husband, two kids and two dogs. Her husband Rhett is the owner of
Blackmon Building, a residential construction company on Oak Island. Daughter Page is a teacher at South Brunswick and son Hunter is a community college student. The process of making a wedding cake is a little hairy, according to Blackmon. “You take a bunch of frosting and cake layers and make something that’s truly art. Then you put it in your truck, get it where it’s supposed to go, exactly on time. It’s a miracle that everything comes together,” she says. In actuality, Blackmon’s description of her process seems somewhat modest. She says it takes 6-10 hours to make a wedding cake. And the brides want everything to be perfect and on trend. Our location on the coast means that many of her cakes are beachy in theme. But other trends change from year to year, and that requires the baker to keep up with those trends. A quick Google search reveals some of the current wedding cake trends, as listed in Brides Magazine. Some of the more natural styles they point to include the naked (no frosting) cake, the geode (like the rock), the organic castle (with fruits and berries) and the metallic ombre (shaded) cake. The more elegant trends include the white-on-white cake, the gold nugget (gold leaf) cake and the feather cake. Of course the choice of cake – both ingredients and artistic theme – ultimately is up to the bride and groom. They don’t want little bride and groom figurines on top anymore, according to Blackmon. She often has requests for written messages on the cakes. A recent message she wrote on a cake expressed a sigh of relief – “Finally!” Another summed up the proposal re-

sponse from the bride-to-be: “I said yes!” Whether light-hearted or elegant, Blackmon enjoys creating a unique and artistic result for her clients. Her business is mostly word-of-mouth; even customers from out of town are referred by their friends who had beach weddings and loved Blackmon’s creations. And since the wedding industry is very active here, she often gets referrals from vendors she has worked with in the past. “Vendors will refer you – it’s all about showing up on time and coming with your ‘A ‘game,” Blackmon says. As anyone in the wedding business knows, the bride and groom can be tough to please. But based on her success, Bobbie Blackmon seems to have found the sweet spot.

February is not only the month of Valentines Day, but we also celebrate Black History Month. Southport’s John Smith Cemetery was the segregated burial grounds in the past. There is now a preservation society to help restore this forgotten cemetery and to maintain it’s history. The broken fence, unmarked graves, crumbled headstones, are just a few of the things the group is raising funds for. John N. Smith Cemetery A Bridge from the Past to the Present, to the Future The preservation of the John N. Smith Cemetery has an historical and spiritual significance that is an essential part of the Southport Community. Its perpetual care

will remind us of the lives and the contributions made by local black citizens towards Southport’s growth and development. Many of the persons interred there were slaves, farmers, teachers, businessmen, laborers, domestic servants, homemakers, and other professionals. Additionally interred there are veterans dating from the Civil War and subsequent military campaigns. The urgency to restore the cemetery comes as a result of disappearing gravesites and persons with knowledge to identify those sites. The Southport community has the resources and the capacity to ensure the cemetery’s future is maintained forever as a unique and respected site for celebrating an honorable past. Mission The John N. Smith Cemetery Restoration and Preservation Incorporation endeavor to ensure the physical integrity, the community relevance and the historical significance of the John N. Smith Cemetery. Our Goal for 2018 We have been so fortunate, through donations and grants, a fence was installed around a portion of the property in 2017. We have started the GPR (Ground Penetrating Radar) study and have 60% of the cemetery mapped and to our surprise have found 800 unmarked graves. We are asking for donations to complete the rest of the GPR study. We are working with Henry Louis Gate Jr. with Finding Your Roots to help us find out who John N. Smith was and what part did he play in the Smithville Community. Judy Gordon adds, “Our next major current focus is the completion of the GPR Study. Over 800 grave sites have already

been located, over 700 of those were unmarked. With just over half of the cemetery study done we are expecting to find more unmarked graves. Of course once they have been located there remains the issue of how to mark those graves. Though many will remain unnamed, we hope to preserve the individual sites. Additional funds are needed to complete the study.” Another area of focus is the research we are doing on all the cemetery interments and the role each played in making this beautiful town. Especially John N. Smith
who was the first person buried there. “A portion of what we wanted to do with the fencing has been done but we do want to continue that effort until completion. The immediate goal is to raise enough funds to complete the GPR and eventually the fencing. There are so many other projects that will be generated from this project alone: mapping, marking and preserving. “ She adds, “The greatest portion of the goals we have set remain before us, but the satisfaction of preserving a portion of the whole history of this little town is very rewarding.”

Goosebumps...why do we get them? What are they? Goosebumps can also be known as goose pimples or goose flesh. This term comes from their resemblance to the skin of poultry-geese included- after the removal of their feathers leaving protrusions on the poultry skin similar to human goosebumps. In humans, this involuntary reflex is a holdover from earlier evolutionary years when bodies were covered in fur. These bumps occur on human skin when the mini muscle (arrectores pilorum) located at the base of each hair follicle on your body contracts causing each individual hair to stand up on end. This pilomotor reflex is not under your control...therefore it is an involuntary response to a stimuli. Think porcupine who is threatened or the hair on the back of your puppy who encounters a new situation or the sensation on the back of your neck when you sense fear.
Goosebumps most commonly occur in response to cold temperatures. Hair insulated animals make use of this reflex as their thick coat of hair lifts causing air to be trapped and therefore providing an insulating layer over their bodies. While human beings retain this physiological phenomenon, most of us are not hairy enough to benefit from this insulating effect. Goosebumps can also present during times of anger or fear as in that porcupine previously mentioned. As the hairs (or quills) raise on end, the animal appears to be larger in size and so more of a threat to its attacker. Another cause for goosebumps to develop is during an intense emotional event when the body releases its stress hormone, adrenalin. This “fight or flight” hormone can also manifest as tears, sweaty palms, a tremble or shaking in your body, feelings that your heart is pounding or the feeling of jitters in your ab-
domen commonly known as “butterflies”. This is most likely what people experience during initial stages of love when an encounter or pending interaction with a romantic interest brings chills of excitement and anticipation. In addition, goosebumps not only occur in the emotional moment, they may occur while recalling an emotional event such as your wedding day, the first time you kissed someone you loved or even with a special song. It has been reported that some individuals experi-
ence goosebumps during periods of sexual arousal. So...do goosebumps really occur while falling in love? The answer probably correlates to their presence during an emotional event of excitement. Does their absence mean you are not really in love? No...but whatever your physiological response, may you be surrounded by friends, family and maybe even a romantic partner during this month when we celebrate love!

Recently Chef Dustin Garret, Executive Chef at Oliver’s on the Cape Fear hosted a cooking class at Dosher, aimed at healthy cooking. We think this recipe is the perfect choice to cuddle up with your Valentine and enjoy a HeartSmart meal together. CRAB AND CORN CHOWDER 1 tbs. yellow onion minced ½ rib celery minced ½ tbs. garlic fresh minced 1tsp. thyme fresh chopped ¼ c. white wine ¼ c. sherry
2 tbs. smart balance light butter 4 tbs. (gluten free) rice flour 2 c. Crab stock (2c. water, 1 tsp. low sodium crab base, 1 tsp. low sodium lobster base) ¼ c. milk ½ c. cleaned cooked corn ¼ c. Crab lump meat (cleaned and picked)
¼ c. Crab claw meat (cleaned and picked) 1tsp. Old bay season Season with salt and white pepper In large stock pot lightly oil and sear veggies with garlic and thyme. CHEERS Sour But Tasty
Everything you wanted to know about Sour Beers, but were afraid to drink... STORY & PHOTOS BY JEFF STITES
T
his month we tackle the hip new trend of sour beers. Maybe you haven’t seen one yet, let alone tried one, but more and more craft brewers are trying their hand at this style and you’re sure to run across one sooner or later. I’ve taken the first sips so you have some warning before you jump on the bandwagon.
Even the most enthusiastic supporters of sour beers admit they are an “acquired taste.” I haven’t acquired it. But that’s getting ahead of things. What are sour beers, you ask? Simply put, they are beers into which some unusual yeast or bacteria has been introduced. In a very real way, sour beers are a bit of brewing history come to life. Before science and the brewing arts refined ways to control yeast’s behavior during the brewing process and learned how to isolate types of yeast that yield specific flavors, all beer was sour. If you home brew, many mistakes can make your beer go sour. And that should give you pause. The yeasts and bacteria in sours can be introduced in a controlled manner or just find their way in by clinging to the skins of the fruit with which many sours are aged or, in some cases, just drop in as the brewing liquid is left in open vats in a brewery. Yes, they do that. The most common bacteria leave the beer with a yogurt-ish sourness or a more vinegary flavor. When your milk goes bad, it has too much of one of these bacteria strains in it. See why these are an acquired taste? You’ll see my reactions to three examples below, but in general I’m not a fan. I love the historical aspect of this, but I also appreciate human progress. We’ve learned to make beer that isn’t sour, and that’s a good thing. I suspect there’s something of an “Emporer wears no clothes” aspect to this sour beer renaissance. I wonder if people don’t drink this stuff so other people will think they are true beer connoisseurs, while in truth almost no one actually likes it. Or I could be wrong. Maybe it IS an acquired taste and I just haven’t had enough practice. I think I’ll be happy living with that possibility. Destihl Brewery Wild Sour Series Synchopathic Apricot, 6% ABV 8 IBU
The Label Says: Synchopathic Apricot “syncha” our refreshingly tart sour ale with the citus dry-hopping of a pale ale. Biscuity malt and an uplifting stone fruit beat from added apricots form a perfect harmony in this delicately balanced and delightfully enjoyable beer. Cheers! My Take: So I girded my loins and tried this. At first I thought that if I got it though my head that this wasn’t like any beer I’m used to, and that it is SUPPOSED to taste sour, I could put my biases aside and give it a fair shake. I almost finished half a can, thinking that it’s an acquired taste and it would grow on me. So far, not so much. I like to hold beers up against the label claims, which is why I designed this column as I did. In this case, I can’t really justify anything the makers say. There’s no maltiness, biscuit or otherwise, it’s not balanced at all, and it’s not the least bit delightful. It IS sour, if that’s what you’re after. And it does indeed have a bit of an apricot flavor to it, but it’s struggling to overcome the sour. It’s very tart, and that’s the saving grace for me. That bit is interesting and not bad at all. I also poured some for my lovely and talented wife Lisa to try. I wish you could have seen her face. “Nasty” was pretty much her entire summation of the unfortunate Synchopathic Apricot. Red Hare Brewing Company Well Bless Her Tart Berliner Weisse 3.85% ABV N/A IBU Superficialities first…..the can this beer is packaged in is completely awesome, but bringing the ABV number out two decimal places is nothing but pretentious. Odd for a brewery that just this summer opened a brewing facility on Shallotte’s Main Street. Yes, THAT Shallotte. Well Bless Her Tart (one of the best beer
names ever) is a strawberry-flavored sour brew. I had higher hopes for this than the apricot version. First impression was scary, though, as it literally smells like vomit. No joke. But me and my loyal wife put that aside and gave it a try, and this is actually better than the previous beer. Now, the caveat here is that it’s better in the sense that it’s not as bad. I still poured most of it down the sink drain. It’s over-carbonated, which kills a lot of the flavor, and sadly I think does this beer a favor in doing so. I could have finished this one if manners demanded, but getting over the smell would be a problem. Ommegang Rosetta, Lambic-Kriek Ale Aged on Cherries 5.6% ABV The Label Says: This elegant fruit beer, matured on cherries, is brewed exclusively for brewery Ommegang by Liefmans, a sister brewery, in Belguim My Take: It stands to reason that a lambic brewed in Belgium (Ommegang’s sister brewery) would be the best of the lot. This brew is a very pleasant dark amber color with a nice cherry flavor. The sour in this comes from the cherries, it seems to me, which makes it less “smack you in the face”.

I’m still not going to buy this again, and may not finish the bottle, but it is the best of a category that I simply don’t enjoy. This beer tastes well thought out and carefully crafted, and, well, less gimmicky than the others.

Personally, I think it’s the best photo ever. The look on my brother Larry’s face as he tried to hold him still is priceless. I know he tried his best to make him happy, but it just wasn’t happening. It takes real talent to get the money shot, or just get any picture before a huge melt down. Some photographers have that artistic eye and calling to work with this difficult task. Jennifer Knotts, a Leland resident who has owned her own photography business for the past two and a half years, has that talent and gift to make priceless family memories. She knows the struggle of getting little ones to smile and be happy during a photo session. Her photos are bursting with love and life. “Photographing families can definitely be challenging if there are young children involved, but they’re a blast,” she said. “I tend to prefer shooting families with a lifestyle approach rather than posed, so I just let them play with their kids or be silly and we’ll get some genuine smiles and emotions.” “Honestly, I started as a mom who wanted a nicer camera to take pictures of her baby,” said Knotts about her photography. “I realized I enjoyed not only taking the photos, but also editing and the creative release it gave.” She was encouraged to start her own business

oming from a large family, whenever we all get together for a reunion or other event which doesn’t happen very often, we always get a photo of us all together. Taking a photo with 40 people doesn’t always work out great, but it sure is fun to try. Every family has that one kid or silly uncle that refuses to cooperate during a photo session. In fact, there is a black and white photo hanging in my mother’s house from around 1963 of my older siblings, and my brother Chuck at age two is screaming in it.

And she knows how to take advantage just the perfect moment to take the photo. “They are usually the most challenging and time consuming, but I love them so much! I adore these sweet little newborns who have just entered the world, so tiny and squishy with that new baby smell! I also truly enjoy getting to know the parents and connecting with them throughout our time together.” Pulling from her own experience as a mom who has lost a baby, she is privileged to photograph the newborns of parents who suffered the same loss. “I will say that photographing rainbow babies (babies born after miscarriage, stillbirth, or infant loss) always feels like such an honor. Having my own rainbow baby, I know how precious these little ones are to their parents. The images they receive represent healing and hope after going through so much sadness,” she said. Knotts. As a graduate of UNCW, her experience as a pre-K teacher in Columbus and Brunswick counties also comes into play when dealing with children sessions. The location of the shoot and the use of treasured family items, as props are also important to Knotts artistic photo sessions. “My favorite locations are the ones most special to my client,” she said. “This usually means somewhere on their own property or another meaningful location, such as their grandparents’ lake house or parents taking their kids back to where they had their first date.” “The session itself depends on the specific genre,” explains Knotts. “Newborn photography takes the most time and involves lots of shushing, rocking, and feeding to get those precious sleepy poses. My home studio is warm and toasty with white noise playing to keep baby comfortable and sleeping. During sessions for older babies and toddlers, I’m usually seen bouncing around and making ridiculous noises to keep the little ones entertained and focused (the years I taught preschoolers helped prepare me for that!). Photographing families can definitely be challenging if there are young children involved, but they’re a blast.” Knotts meets with the clients within two weeks after the session to show
them the photos. “This is when they see their edited gallery for the first time,” she said. “At this point, I show them the print products I offer and they decide what they’d like to do with their images and how many they’d like to purchase. I offer several different digital and print collections, which include products such as canvas wraps and handcrafted barn wood frames. Clients are able to touch and feel samples and decide what they’d like to purchase for their own homes.” Having actual prints of your photos is important and will last for generations to come. “I know these days, it seems as if it’s all about the digital images,” she said. “However, prints are what will be passed down through generations and I’m confident the professional labs I use will deliver beautiful products that will last lifetimes,” she said. “It gives me so much joy to know clients are seeing these images each time they walk into their living room instead of being posted to social media and soon forgotten.” Growing up in the Southport area, Knotts resides in Brunswick County with her husband who is her high school sweetheart and their three children.
