SPICY SALMON LAKSA

TAKES 20 MINUTES SERVES 2

½tbsp sunflower oil 2tbsp Thai red curry paste 125g mushrooms, sliced 1tsp fish sauce 200ml reduced-fat coconut milk 200ml fish stock 2 salmon fillets 1 red chilli, deseeded and chopped Juice of 1 lime 2 spring onions, finely sliced Large handful coriander leaves, chopped 100g cooked rice noodles

1Heat the oil in a pan, then add the curry paste and cook for 1 min, until fragrant. Add the mushrooms and cook for another minute. 2Stir in the fish sauce, coconut milk and stock. Bring to the boil then add the salmon and simmer for 10 mins until cooked. 3Remove the fish from the pan and flake. Stir in the chilli, lime juice, spring onion and coriander. Serve the curry sauce over the noodles and top with the salmon and a few extra coriander leaves.
