Explore your local green areas and learn something new by foraging – there’s usually something to discover throughout the year, with hedgerows especially abundant with berries in the summer. Just make sure to follow a few rules: forage away from busy roads; leave enough unpicked berries for wildlife to eat; and don’t pick anything that you’re not 100-per-cent certain you can identify. Find an identification guide on discoverwildlife.com
Wild strawberries are found in woodlands and hedgerows, and you can identify them by the small white flowers that bloom from them. They’re much smaller than their supermarket counterparts, so eat them as they are or use them to decorate desserts or cakes. Bilberries resemble blueberries and they’re often found on low, shrubby plants in conifer woods, heaths and moors. Although you can eat them raw, they’re slightly tart, so make them into jam or lightly stew them with sugar to create a compote, both of which will make them more palatable. Keep an eye on elder trees, as the frothy white elderflowers ripen into elderberries at this time of year. Elderberries should never be eaten raw, however. Instead, use them to create syrup, jam or even infused gin.
BEEFED-UP BURGERS

KITCHEN
Save money and tailor a sauce to suit your tastebuds by making your own salad dressing. Add 6 tbsp olive oil and the juice of 1 lemon into a jam jar, then season. Secure the lid, then shake. Switch the lemon juice for 2 tbsp balsamic vinegar, rather than buying balsamic vinegar dressing separately – you can also add in leftover chopped herbs. The dressings will last in the fridge in the jars for a few weeks.
