PUBLISHER’S LETTER As a Space Coast resident, my understanding of Brevard’s cultural tapestry was woefully underwhelming when I arrived here 20 years ago. Of course, I had heard of Ponce De Leon’s landing here, and of the Ais Indians who inhabited our lands generations ago. I had a limited understanding of the Space Coast’s rocket history and even less of an understanding of the generations of families who call this slice of paradise home. Where are they from? Where are their people from? I started thinking on this as I was considering the cover story for this issue. There is so very little information “on the books” about African American history here, even though the City of Melbourne was founded by three Black men and two of the most important figures to emerge from the start of the civil rights movement - Harry T. and Harriette V. Moore - were murdered in North Brevard in 1951 for their activism.
Jan-Feb 2021
In the years since, many strides have been made to further the civil rights of our African American brothers and sisters locally. For Black History Month, we wanted to offer a nod of acknowledgement to some of the folks who’ve been making it happen, and I was elated that my dear friend (and mover and shaker in her own right) Rolanda Hatcher-Gallop was willing to help out. Check out our cover story on page 6 to learn more. Finally, I’d like to offer my thanks to the advertisers who have remained with Space Coast Magazines through the difficult year behind us and to welcome the growing list of advertisers who have come on board. We are thankful in your faith in us as we try to highlight the faces and businesses in our community through the pages of both Space Coast Living and Space Coast Business magazines. Happy New Year, dear friends.

Highlights of African American Leadership in Brevard
f history has taught us anything, it is that heroes can be ordinary people orchestrating extraordinary acts when the occasion calls for it. Unlike the fictional characters found in comic books and Hollywood blockbusters, real heroes that dwell among us don’t rely on superpowers, gadgets or fat bank accounts to get things done. Instead, they arm themselves with their faith, strong commitment to community, access to resources and a steady resolve to make a difference for themselves, their children, and their neighbors. Some of these everyday heroes are seen as trailblazers: those who light the match of change and help to pave the way by opening doors previously closed to them and others like them in the community. Others are torchbearers: those who’ve kept the fire for change burning through their own efforts to better their communities. From the space industry to the boardrooms to classrooms, from the pulpits of churches to the small business owners to
coaches and doctors and beyond, Brevard County has been blessed with plenty of trailblazers and torchbearers in every aspect of our community. To commemorate Black History Month, we take a look at a few local, vocal and active African-American residents who’ve blazed trails and continued to shine the light on issues important to their communities and to the greater good of all the Space Coast. While there simply is not enough room to profile all of the folks who’ve helped light the way, we do want to recognize some who’ve blazed trails on the Space Coast, including Joe Lee Smith, Dick Blake, Clara Smith, Theodis Ray, Leon & Jewel Collins, Robin Fisher, Eugene Johnson, Barbara Moore, Charles Jackson and Leon Tucker, Sr. Likewise, torchbearers have included Rashad Wilson, Dedra Sibling, Alton Edmond, Michael Cadore, Alex Goins, Kenny Johnson, Vickey Mitchner, Kay Maragh, Sonya Mallard, Corey Williams, Kendall Moore, Rodney Edwards and Conrado Martinez. Join us in acknowledging and thanking them in addition to our profile subjects for their tireless efforts to improve the lives of African Americans on the Space Coast.

William E. “Bill” Gary Residence: Titusville Community Involvement: Gary is president of the Harry T. & Harriette V. Moore Cultural Center in Mims and is president of the Harry T. & Harriette V. Moore Cultural Complex, Inc.’s board of directors, which helped secure $1.5 million to construct a replica of the Moore home, reflecting pools, brick walkway, and new Civil Rights trail around the perimeter of the park. He served as president of the North Brevard Branch of the NAACP for multiple two-year terms, some non-consecutive, totaling 24 years between 1980 and 2008. During that time, he led the chapter to win a national award in 1986 for voter registration and for working with Brevard Public Schools to seek and hire more black teachers. The chapter received another national award in 2003 in the area of civic engagement. He is a lifelong member of the NAACP; member, Alpha Phi Alpha Fraternity; past member, the Local Advocacy Council under the Florida Department of Children and Families; and member, St. James AME Church. In 2009, Gary and his team made a presentation to Dr. Lonnie Bunch, then found-
The Calling: “We used to have a saying at work, that if you do good work, you get more good work. What people are generally looking for, even if they don’t know it or can’t articulate it, is for some kind of result. People look for people who have a track record of getting things done. There are some things you see and you know you can add some value to it, you know you have some experience, education or some wisdom about it, and you just don’t want to see it continue as is,” he said. Aha! Moment: Gary said there’s been a number of Aha moments over the years. “I think that when we got the news that [the Moore’s] would be in a display in the Smithsonian African American Museum, I think that was an Aha-type moment in that it was very deeply satisfying because the effort for that to happen started in 2009. I felt that we had elevated their name and sacrifice to the highest pinnacle of history related to the Civil Rights Movement that could happen here in the U.S.

Moment: One Thanksgiving, the local police and members of the Melbourne-Palm Bay Alumnae Chapter of Delta Sigma Theta Sorority Inc., gave Pelham a total of forty $50 gift cards
Aha! Moment: A couple of years ago, Wilson was driving in Rockledge and saw a young man on the corner of State Road 520 and Fiske. “He had on a t-shirt and nothing else against the cold weather,” she recalls. She told him that if he stayed at that corner, she would run home and get a coat for him. She drove back to the corner with her late husband’s leather jacket and a sweatshirt, only to find the man gone. After riding around for a while, she eventually caught up with him on another street, where she handed him the clothes. “That, to me , probably more than anything, that’s the one moment that stood out to me. He put on the sweatshirt right there. When I pulled away, I got emotional because then, more than ever, I realized that’s what I was here to do.”
to distribute to families in the Community Read and Feed program so they could purchase meals for the holiday. “More than 10 people actually broke down as they thanked us for the cards,” she says. One woman came by Pelham’s house and said, “You will never know how much you have blessed me.” Pelham says that’s what giving is all about. “I know people are having a hard time, it’s a lot of folks out here who have been laid off because of the pandemic. They don’t know how they are going to make ends meet. We’ve got to be here for each other and help our neighbors through these difficult times. That’s what we are here for, to help others along the way.”

My father was an awesome guy, a standup guy of few words but a lot of action.” Taylor said the No. 1 lesson his father taught him was to be a man of his word. “At Fighting Edge, we have a huge accountability code that doesn’t just stay in the gym, we also go out in the community, we check with all of the kids that have come through and ensure they are doing OK. These are all my children and I take that responsibility to heart.” Aha! Moment: “I have a young man that was incarcerated for 13 years of his life as a young adult. He came to Fighting Edge a year and a half after he was let out of prison. His name is Robert Brothers and he is now a pro boxer in heavyweight division. He was raised up in Fighting Edge and became this beautiful man who gives back to the community. Now, he has taken over Fighting Edge and is leading the younger generation and raising them up. I get to listen to him talk and see how God has blessed his life since he’s been here and I think this is what it is about. It is about redemption. He allowed me to mentor him and all I can say is, look at what God has done in our lives. That’s the only way I can explain.”

Every day is another opportunity to try to make someone happy or to help them get what they need, even if it is something others would consider a small gesture. Helping is helping. In my neighborhood, there are a lot of senior citizens who may not be computer savvy or are staying in homes because of the pandemic. I help them by bringing them information they may need to know, such as making them aware of food banks and church giveaways. I do it all out of love.”

Co-coordinator, the “Souls to the Polls” community event in Melbourne, organized through the Push Back Community Alliance; life member, NAACP; member, Melbourne City Advisory Board; and member, American Legion Post 191 in Melbourne for 37 years. The Calling: “This is my community, I was born and raised here. The more I’ve matured, I see things that are not being done and I think I can make a difference in turning things around.” McNeil says he is comfortable going before Melbourne City Council as well
Aha! Moment: Spikes said her homeowners’ association has a lot of history behind it. “The West Cocoa Community Center used to be the county dump. We still have some neighbors living in the community who fought to get that spot cleaned and transformed into the community center because the children in West Cocoa didn’t have any place to go. They fought to get basketball goals and a track and field. I think about that history every time I drive by the community center, how they sacrificed back then to get that. It makes you realize how important it is to help your community. That is why I try to strive to continue the work they started. It is about staying involved because of that struggle to have somewhere for the children.”
as various boards and leaders to bring citizen concerns to their attention. “I think everybody in Melbourne City Hall knows who I am by now.” Aha! Moment: “I was speaking up even before I graduated from high school. As a high school sophomore growing up during the Civil Rights Movement, I remember when we started picketing in Melbourne as part of the NAACP Youth Council. We would picket restaurants where they wouldn’t let us sit at the lunch counters. One day, a man came and snatched a picket sign out of my hand. There were eight of us on the picket line but he came to me. That was a moment that I felt I was doing the right thing.”

African Americans in Brevard
ADDRESSING THE
HEALTH CONCERNS
OF AFRICAN AMERICANS By Kelly Collazo Camirand, Contributing Writer
Every race or ethnic group has specific health concerns resulting from environmental and cultural factors, including lifestyle, genetics and more. But in recent years, access to care has emerged as another factor disproportionately affecting black communities and other communities of color at alarming rates. The Space Coast is no exception. Among the deadliest of diseases for African Americans, diabetes, stroke and heart disease are now being diagnosed at alarmingly younger ages. 12
Diabetes Diabetes, or high blood sugar, is a heightened area of concern for African Americans who are almost twice
SPACE COAST LIVING | SPACECOASTLIVING.COM
as likely to be diagnosed as non-Hispanic whites. Further, we know that people with diabetes are also more likely to have certain conditions that increase the chances of having heart disease or stroke, obesity, high blood pressure and high cholesterol. “Eighty percent of chronic illnesses are environmental, meaning we do have the ability to change the outcome,” said Marissa Rocourt, MD, an internist with Brevard Health Care in Melbourne. While her patient population skews towards the elderly, she said she doesn’t see significant differences in diagnoses by race within her practice. She
suggests that Brevard County residents are highly educated and healthy, compared to other areas in Florida. Diabetes and prediabetes are serious conditions affecting millions of Floridians and is the seventh leading cause of death in the state, with education and early detection being critically important. The risk of diabetes is 77% higher among African Americans than among non-Hispanic white Americans. Sadly, diabetes is a growing epidemic that costs an estimated $24.3 billion in Florida annually, and people with diabetes have medical expenses that are approximately 2.3 times
higher than those who do not. Because the cost of managing diabetes can be so expensive, there is consensus in the medical community that many patients in the black community shy from seeking the help that’s so vitally important, leading to more serious complications and diseases. A report on health disparities published by US News and World Report in 2016 explained that “where we live determines opportunities to access high-quality education, employment, housing, fresh foods or outdoor space – all contributors to our health,” concluding that zip code might be more important than genetic code for health outcomes. Racial bias also plays a role, as does cultural and environmental stressors, which are contributing to blacks getting sicker at younger ages, enduring more severe illnesses and more rapid biological aging than whites.
Stroke and Heart Disease Stroke and heart disease pack a one-two punch as the leading killer and cause of death for all Americans. As terrifying as that sounds, the risks of getting those diseases are even higher for African Americans. African Americans ages 35-64 years are 50% more likely to have high blood pressure than their white counterparts. We know that high blood pressure is a leading risk factor for stroke and heart disease because over time it damages the lining of the arteries, mak-
ing them more susceptible to the buildup of plaque, which ultimately narrows the arteries leading to the heart and brain. And although the death rate for African Americans decreased 25% from 1999 to 2015, African Americans ages 18-49 are still twice as likely to die from heart disease than whites.
Education “Everyone wants to be well, however, many don’t understand what it takes to be well,” said Dr. Rocourt. “I spend a lot of time with my patients educating them on the importance of a healthy diet and nutrition, combined with remaining active.” Making healthy choices is often made more difficult, culturally speaking, while so many of our family traditions - how we eat and how we prepare meals are heavily influenced by how we were raised. However, the importance of making proper food choices cannot be overstated when treating or living with diabetes, she continued. Dr. Charles Croft, a Melbourne interventional cardiologist affiliated with multiple hospitals in the area, agrees that reducing the risk of a heart attack or stroke requires controlling risk factors. This means choosing not to smoke, limiting alcohol consumption, eating a healthy diet, getting plenty of exercise and sleep, working to control high blood pressure and diabetes, decreasing weight if needed, and monitoring cholesterol.
Regular checkups with the dentist and annual checkups with health care providers are another important tool in the fight to stay healthy. It’s encouraging to see that more and more African Americans are taking a proactive approach in their healthcare, while working to understand disease onset and how to manage life after a diagnosis. “While socioeconomic hardships still persist, through education and understanding how lifestyle choices and adjustments can positively influence health outcomes, we are seeing patients take an active role in their health,” Croft said. African Americans are widely insured, both through private and federal programs, and plans like the Affordable Care Act have opened inroads to access that previously did not exist.
“Knowledge is strength and patients know this dictum. They are increasingly informed, intelligent and well-balanced with their treatment options and this contributes to better patient outcomes,” added Dr. Croft.

CONNECTING HISTORY +
COMMUNITY
AT BREVARD’S ONLY URBAN BOOKSTORE hamika Wood has the perfect remedy for relaxing after a long work day: she heads to Essence of Knowledge bookstore and art gallery in Cocoa. “This is like my second home,” said the Rockledge mother of three. The bookstore is a community hub where ideas flow freely in a family atmosphere; a place that promotes knowledge as a way to boost self-esteem and self-awareness. It is just what owners Nathaniel and Michelle Davis (pictured right and below) envisioned when they opened the business in 2011. “We wanted to create a place where people could come and get educated on the rich and fascinating history and culture of African-Americans,” says Nathaniel “Nate” Davis, a retired U.S. Air Force master sergeant.
Located in a bright canary yellow building, Nate and Michelle welcome locals and tourists alike who are searching for books, art, jewelry, masks and other items steeped in African-American culture and thought. With dozens of rows of books written by prominent black authors such as Toni Morrison and James Baldwin, and bestselling urban contemporary writers like Jesmyn Ward and Blacc Topp, this is the only urban bookstore (one that specializes in African American literature and culture) on the Space Coast, said Michelle. Also in the mix are publications penned by local authors including Augusta Williams of Palm Bay, Zanetta Collins and Toni Stone Bruce, both of Cocoa, and Stephon Williams of Melbourne. On any given day, you’re likely to find patrons sitting for hours conversing on history, politics, or literature, with exotic smells of and smooth sounds of old-school R&B music floating in the air.

Bridging Understanding with Compassion Michelle points out that the bookstore was designed for anyone who wants to learn more about black history and culture. “As children, [Afircan American children] go to school and learn about everybody else’s culture, but they don’t learn about ours and that really hurts,” she said.

“We tend to draw people who want to know, want to understand the American experience through our eyes. When we had the protests last summer, people would come in to find books that gave them a better understanding of what was happening in our society. Hopefully, this helped them to see how they could contribute to making it better”, said Michelle Davis.
Essence of Knowledge Bookstore is located at at 1229 W. King Street, Cocoa. The bookstore is open Tuesday through Friday from 12-7 and Satuirday from 10-5. For more information, call 321-806-4766 or on Facebook @cocoaurbanbookstore.

Diverse Collection Essence of Knowledge stocks as many as 2,000 books in the store on a diverse array of topics, including fiction, sociology, spirituality, inspirational, children’s books, cookbooks and even a few comic books. “There really is something for everybody here — so much knowledge that you can really stimulate any mind,” says Ra Ma’at of Satellite Beach. “I come here because my entire family loves reading and, more importantly for me, I love supporting black-owned businesses like this.” The Rev. Wesley Bruce, a retired church pastor liv-
ing in Cocoa, thinks the Davises help serve the community by supporting other black entrepreneuers and by bringing in black scholars to speak at the bookstore. “They are providing a community service by educating people with information not often taught in our society,” says Bruce, who teaches African history and has been on several mission trips to African countries like Zimbabwe and Botswana. “One of the major reasons for all people to know about our history is because black history is world history, and Essence of Knowledge is giving people access and opportunity to that information,” he added.
Harry and Harriette Moore Forerunners of the Civil Rights Movement
o report on Brevard’s Black History would be complete without a tribute to Harry and Harriette Moore, civil rights activists who were murdered via a bomb at their Mims home on Christmas night in 1951. Prior to this, the Moores were teachers at the county’s only all black school in Titusville and paved the way for many black residents to vote, registering 116,000 to the Florida Democratic Party over six years, a number that was 51% higher than any other southern state. Decades before Rosa Parks and Martin Luther King would be recognized for their civil rights activism, Harry and Harriette were fighting for equality. In 1934, Moore started the Brevard County National Association for the Advancement of Colored People (NAACP).
In 1937, along with late Supreme Court Justice Thourgood Marshall and the all-black Florida Teachers Association, Moore filed the first lawsuit in the Deep South to equalize black and white teacher salaries. The case was not successful but spurred dozens of others that eventually led to the move. Moore’s activism eventually got him fired from the principal’s position at the school where he began his teaching career, leading him to a career as an organizer for the Florida NAACP, helping grow the membership to 10,000 members in 63 branches across the state. A recent story in Florida Today highlighted the sad reality that the legacy of Harry and Harriette Moore — often referred to as the "first martyrs" of the modern civil rights movement — is widely unknown to many who call the Space Coast home.”

That may change soon if a movement to incorporate teaching about the Moores into school curriculum is adopted by the school board.

The Spiritual Center of the Space Coast: Community Lightworkers Help Spread Peace and Calm
By Brooke Deratany Goldfarb, Community Editor
f you become still and tune in, you might notice a healing energy swirling around the Space Coast. Have you felt it? Shaman Shannon Davis, yogi Dena Hall, meditation guru Anthony Profeta, astrologer Bruce Orion and other local “lightworkers” say there is something especially spiritual about Brevard. Could it be the negative ions emanating from the Atlantic’s ocean breezes? The warm and welcoming Florida sunshine? Is it Mother Nature’s nurturing environs allowing us to coexist with sea turtles, manatees and an abundance of birds? Might it be the lingering energy from the Ais Indians who used to hunt, gather and fish along our barrier island? Or is it the protection of the lost city of Atlantis, which may or may not be sunken somewhere off our local coastline? 22
No one can say for sure, but I have my own theory about part of it, at least, and it involves one soft-spoken and unassuming small business owner who deeply cares about people and encourages those with pure hearts to develop and share their gifts.
Aquarian Dreams Cheri Hart owns Aquarian Dreams Conscious Lifestyle Store & Yoga Center, located in a curious lavender building on the west side of A1A in Indialantic. The Center houses a natural clothing, gifts and bookstore, along with practitioners of various healing arts, group classes and events. It is a cozy family affair with son Jamin (who offers acupuncture and Chinese medicine), son Teren, who provides massage therapy and teaches yoga and daughter Shana, who helps run the store.
SPACE COAST LIVING | SPACECOASTLIVING.COM
Many budding empaths, yogis and seekers have been inspired by Hart, who got her start in Washington, DC, in the early 80’s with a $2,000 loan for a natural fiber children’s clothing mail-order business. Cheri grew that small business into a $1.5 million business with 250,000 customers in a span of four years. After she sold the shop, Cheri moved to Florida and opened the first Aquarian Dreams in 1986 in Downtown Melbourne. Quiet and humble, you might be surprised to learn this hardworking entrepreneur is a clairvoyant, medical intuitive and master healer who has taught students to develop their intuitive powers for over 30 years. The Center is also home to the lightworker community at large here on the Space Coast. According to Hart, a lightworker is one who seeks
to bring light and love to everyone as best as possible. Anyone can be a lightworker; she has trained many. Before the pandemic, Hart hosted weekly Community Lightworker Circles where participants joined hands and envisioned white light spreading peace and healing to all who need it. She hopes to resume these Sunday sessions after social distancing recommendations have ended.
Fostering Others Last year, Shannon Davis founded the Chacana Spiritual Center in Melbourne. As a hospice nurse, Davis could sense people leaving their bodies as they passed and decided to help people make peace with death. In the early 2000s, she studied white light healing with Hart and reiki with another teacher at Aquarian Dreams. Davis would
eventually teach her own brand of “Goddess Energy” healing there, as well as classes in Munay Ki (Love in Action) from her training in the lineage of Peruvian Incan Q’ero shamans.

Co-owners Tara Weigner and Meili Viera Porter, along with their husbands David and Daniel, opened the studio last September. The franchise operates hundreds of locations across the U.S. and is expanding into Canada, as well. Weigner said she made the decision to inquire about opening the franchise in Melbourne after visiting a Board & Brush Studio in Ohio two years ago. “My first thought was, ‘Why didn’t I think of this first,’” she said. “I knew right then I wanted to own this kind of business.” Weigner said she has been crafting since she was a child, and as an adult was always looking for a creative outlet during her free time away from her corporate job.
Pick your Project workshops are priced at $68 per person, and include a choice of a wood sign palette, with all materials and instructions included. Many of the designs can be customized to include names, dates, and addresses. The studio also offers “At Home Kits” which have approximately 100 designs to choose from. They can be ordered online and picked up within a few days at the studio.

“My favorite thing about owning this business is meeting people and teaching them that they are more creative than they give themselves credit for. It’s rewarding to hear them say, “I made that,” said Tara Weigner.
The studio can accommodate 20 people at a time. Private events also are offered, including birthday parties, bridal showers, corporate gatherings, fundraisers and more with special group rates. “Whether the customer is looking to create a lush, modern, classic, fresh or vintage farmhouse look, all can be achieved by combining specific stains and paints,” Weigner said. “Shades of colors can be fused together to bring out the natural beauty of the wood and create an ambience that compliments each design.” Weigner is especially thrilled at the response she’s received from customers. “It’s amazing to hear guests tell me how much fun they had, and how they can’t wait to come back and create more.” “I had a husband who came to a workshop with his wife that was less than thrilled when he arrived. By the end of the evening, he admitted he was amazed at his ability to create what he described as a ‘Cool Sign,’ she said.

These beautiful hand-crafted designs are made in the village of Croix-des-Bouquet, Haiti, by native craftspeople who are upcycling 55-gallon oil drums to earn money to support their families and village. First, the oil drum is burned and flattened by hand with a hammer, then cut into workable sizes. Next,

the artisan chalks an image onto the drum, then chisels and hammers until the picture emerges. Finally, the piece is polished and varnished until a perfect patina is achieved. Safe for outdoors: Just coat annually with outdoor spray protectant to keep your handmade piece looking amazing.

BETTING ON HEDGES Nature’s Friendly (Green) Screens By Amanda Rose Newton, Contributing Writer
or many, the tidy look of a green or flowering hedge is the quintessential feature of a modern residential lot. Hedges are a classic way to add privacy, balance and unity to a home landscape, while also offering an elegant natural screen to whatever is on the other side.
ARBORICOLA SPP.
CLUSIA SPP.
Arboricola is probably the most popular choice for a hedge on the Space Coast: easy to care for, it offers several color variations including a goldcapped, variegated, and classic deep green. There are dwarf versions that only grow to six feet, while the regular can get to 10. They can initially be planted close together to create a full look for those who are impatient.
Nothing gives beachy vibes quite like the resilient clusia. Also known as the Autograph plant (yes, you really can write on the leaves like paper) it is virtually carefree. The dwarf clusia rises no higher than 2 feet, while the regular form reaches up to 20 feet.

Although shrubs like boxwood are classic, palms and bamboo also make excellent hedges. Think outside the box and end up with something that suits your style, your garden ambition, and your budget. Most Popular Arboricola

Green Island Ficus
Viburnum
PODOCARPUS SPP.
GREEN ISLAND FICUS (FICUS MICROCARPA 'GREEN ISLAND') Low growing (2 feet) and low maintenance, green island ficus is a great choice for lining small pathways or growing near the home. It also fills out well, making it a bonus ground cover!
INDIAN HAWTHORN (RHAPHIOLEPIS INDICA) The perfect choice for adding a little color to a mostly green landscape. As the leaves age, they turn a reddish hue which creates a lovely contrast for the garden, where their small size is best suited. They also make great liners for driveways, paths and sidewalks.

SPACE COAST LIVING | SPACECOASTLIVING.COM
A landscaping classic, podocarpus easily creates the classic box hedge one might expect of a traditional English garden. It is a little on the slow side starting out (max height 5-10 feet) but fills space beautifully and the wispy needle-like foliage adds visual interest.
SILVER BUTTONWOOD (CONOCARPUS ERECTUS) A native to Southern Florida, silver buttonwood is a great choice for those who want a showier, less green leaf. The velvety silver color allows this hedge to stand out from the rest in the neighborhood, while offering robust coverage (5-10 feet) with modest care requirements. Velvety Silver Color Silver Buttonwood
VIBURNUM SPP Viburnum is the ideal choice for boxy hedges. For smaller sizes, try planting the Mrs. Schillers, for taller go with Walter’s. Sweet Viburnum has a lovely scent while Awabuki offers a unique leaf arrangement.
WAX MYRTLE (MYRICA CERIFERA) Perfect and understated, this quick growing Florida native also serves as a natural windbreak, helps prevent soil erosion, and can withstand the force of hurricanes, making it ideal for beach communities. It also can grow to 20 feet, making it perfect to screen out the neighbors, a golf course, or construction.
STEPS TO PLANTING
Success
Taking time to carefully plant your shrubs is as important to ensuring their success. Be sure to follow the steps bellow to get your hedge off to a great start. 1. MEASURE YOUR PLANTING area and consider the maximum spread (between two-six feet for most) to determine the number of plants needed to fill the space. 2. REMOVE GRASS from three-four feet away from where the hedge is planted. This practice cuts down on potential damage from lawnmowers and weed eaters. 3. DIG A HOLE slightly wider than the shrub that it can sit comfortably in. 4. PLACE THE SHRUB in the soil taking care that the root ball level is level with the ground 5. BACKFILL with a mix of your own dirt and an enriched soil and water. 6. USE THREE INCHES OF MULCH, if desired, around the planting site, but take cate not to put it too close to the base. 7. WATER! Create a watering schedule to ensure your new line of shrubs is getting the required dosing. As a rule, water every day for the first two weeks, taper off to every other day the next two, and so on until you rest at two times a week (when it hasn’t rained).

Freedom Outdoor Kitchens
OUTDOOR SPACES COME TO LIFE FROM VISION TO REALITY
W
By Eric Wright, President; Image by Jason Hook Photography
hile many companies across the nation and around the world were struggling to survive in 2020, one Space Coast business launched and successfully scaled far beyond what even the founders expected. Freedom Outdoor Kitchens opened on the Space Coast in the early part of 2020 by John Harper and Dave Kello, best friends and business partners. “Dave and I were first friends,” Harper said, “and I knew we shared common personal and business values that we could build into a company.” Having launched, at the beginning of the pandemic the two pivoted their sales and marketing strategy from in-person home shows to social media storytelling and cultivating referrals, which resulted in phenomenal month-over-month growth. In the midst of what was a roller coaster year for many local companies, Freedom Outdoor Kitchens started by completing one outdoor kitchen in April, which led to five in May, ten in June and thirty-five by July. At the same time, they moved out of Kello’s garage and into their own fabrication shop that now employs 12 people. It was a magical convergence that combined the passions of two passionate young entrepreneurs with experience in their field with market demand and knowledge about how to deliver a phenomenal customer experience. “We were positioned for a season in our country where people were looking for ways to spend quality time with their family and friends, a trend I believe will extend far beyond Covid,” Kello
said. “[People] wanted amenities that would enhance their lifestyle, as well as increasing the potential resale value of their home,” he added. “What I love about this business,” Harper added, “is that it is our dream to turn other people’s dreams into a reality, right before their eyes. Their excitement and the pleasure they get out of sharing their new space with friends and family is a major part of our reward.” Freedom Outdoor Kitchen is able to visit client homes to guide them to bringing their vision to life by providing 3-D renderings of their outdoor space reimagined, using Freedom’s graphic technology. Of course, creating a stunning visual is only the first step in the process. Their craftsmen and installers set an industry standard by exceeding expectations, while ensuring their kitchens are as safe as they are beautiful and user-friendly. “We use the finest materials and brands to create the client’s vision, but it’s more than that,” said Harper. For example, the wrong types of materials used in construction such as wood can present a serious fire hazard. “We fabricate out of rust-free aircraft-grade aluminum and Triton backer board which is anti-microbial.” he said. Freedom’s modular design can accommodate almost any space with a dizzying selection of stone, granite or stucco textures and finishes to complete the custom look homeowners are looking for. Both men have found a home in Brevard, where they want to grow their business, their families and the community. “We don’t build the cheapest product and even if we don’t build
someone’s kitchen, we do want to help them find solutions that work for them. We want to bring quality products, quality know-how and a quality culture of positive people giving their maximum effort, to ensure every client has an exceptional experience,” Kello said. Kello and Harper have done projects as far north as Atlanta and have plans to build a local manufacturing center where the products they build can be exported to neighboring counties and states. “We [have] considered franchising, but decided instead to keep expanding the business and build our fabricating hub right here on the Space Coast. We are currently designing our systems and process to enable us to scale, almost indefinitely” Kello explained. Another aspect of their growth strategy is aligning with upscale homebuilders and retailers to bring their expertise to contractors and vendors. It is a plan that is enjoying as much success as their efforts in homeowner acquisition. “We didn’t set out to just be successful, we wanted to set and maintain a new standard of excellence in our fast-growing industry. Our goals are pretty audacious, but we find that even our customers and partners are attracted to our sense of enthusiasm and vision for what our business can become. I suppose that is partly because our vision is all about helping them realize the vision they have for their outdoor space,” Harper said. Romance (Writers)
ABOUND ON THE SPACE COAST By Maria Sonnenberg, Contributing Writer
aybe the sultry heat of the mainland — or perhaps the sensual offshore breezes — have served to nurture the abundance of successful romance novelists who call the Space Coast home, because there certainly is no shortage of locals delighting readers with the make-believe storytelling that love conquers all. Even aliens. Like every bon bon in a box of Godiva chocolates, each of these authors brings a luscious and unique taste to the extremely popular genre of romance, a billion-dollar market that represents a third of all mass-market fiction.

Maria Geraci, author of 19 books, specializes in lighthearted romances and cozy mysteries.
Rachel Hauck has written more than 33 inspirational and contemporary romances that often feature a touch of the supernatural.
T.J. Logan prefers military and special operations romantic suspense. Fiona Roarke is a multi-published author who writes about bad boy aliens.
From the Barrier Islands Melinda Leigh, a “Wall Street Journal” No. 1 best-selling author of more than 35 books and an Indialantic resident, pens romantic suspense and thrillers. In Rockledge, National Readers’ Choice Award winner Leigh Duncan is deep into her Heart’s Landing series for Hallmark Publishing. The prolific Duncan long ago was able to attract the attention of the crème de la crème of romance publishers, Harlequin.

Yes, there must be something in the air around here to inspire so much romance, although writing romances is anything but romantic, wherever you happen to be. Rather, it is hard work, demands plenty of perspiration, persistence and a thick skin, coupled (see what I did there?) with creativity and inspiration. Dabblers need not apply. An avowed book lover, Melinda Leigh began writing as a hobby and way to preserve her sanity while raising a family. When she realized she preferred writing better to analyzing financial statements, she pivoted and now works on multi-book contracts, currently focusing on an eight-book police procedural romance series.
Leigh’s debut novel, “She Can Run,” was aptly named since right off the bat it was nominated by Best First Novel by the International Thriller Writers. Her books have sold approximately 10 million copies, earning her three Daphne du Maurier Award nominations and three Golden Leaf Awards.
It is not surprising that the pandemic has proven a boon of sorts for romance authors. While “Publishers’ Weekly” recently reported a drop in bookstore foot traffic, it also noted that online sales have gone through the roof.
Another romance-writing Leigh, Leigh Duncan, is equally as serious about her writing.
“Digital sales numbers have made up for the drop in print sales, but whether numbers are up or not I continue to write stories aimed at transporting readers to a world where COVID doesn’t exist and where love and romance carry the day,” said Duncan.
Duncan writes with a strict code of discipline, typically beginning at 8 a.m. six days a week and only quitting when her ambitious daily word count goal has been met, often well into the evening.
After marriage, Rachel Hauck quit her job and sat down to write and write and write. Several of her books, including her newest, “To Love a Prince,” are set in Brevard. “A coastal community creates a great setting,” she said.

Some writers, such as Fiona Roarke (a fictitious pen name), get “into the biz” almost entirely out of necessity. “I got started with romance writing when I was looking for a book to read and couldn’t find exactly what I wanted so I decided I’d write one myself,” she said. The road to true love in the world of romance writing is rarely a straight path. As a deployment management specialist for a large defense contractor, T.J. Logan was tasked with relocating civilian personnel into Iraq and Afghanistan, which sounds about as a romantic as a dental checkup. But it was this background that helped shape her cloak-and-dagger romantic suspense focusing on family, honor and
loyalty. Such is the stuff of creativity. After marriage, Rachel Hauck quit her job and sat down to write and write and write. Several of her books, including her newest, “To Love a Prince,” are set in Brevard. “A coastal community creates a great setting,” she said. Maria Geraci started writing on a whim and didn’t look back. Although many authors create a lovely Neverland as the background, Geraci sets her stories in Florida beach towns suspiciously similar to Brevard’s, possibly because she grew up here after her parents fled Cuba for Florida. “Living in Brevard definitely inspired me,” she said.
Writing is a solitary endeavor, but these writers gain the energy to continue through cherished connections with kindred spirits, usually forged through membership in groups such as the Romance Writers of America and, locally, Florida Star Fiction Writers, which is currently offering Zoom-based workshops to keep writers in touch during the pandemic. “Being surrounded by authors with varying degrees of knowledge about writing and the business of writing is very beneficial to anyone interest in pursuing [this] career,” said Logan.

TECHNOLOGY & L CONSTRUCTION INNOVATION FOR HEALTHIER HOMES
ifeStyle Homes has developed a reputation for technical innovation and cutting-edge energy-efficient homes. Matched with their stylish designs, this industry edge has made them one of the leading homebuilders in the area. Following national trends in energy and environmental conservation helped guide the development of their LifeStyle SunSmart energy-saving homes, which they launched over 10 years ago.

Now, they are writing a new chapter in their homebuilding evolution with the introduction of LifeStyle HealthSmart homes. “The concept for LifeStyle HealthSmart is something that our team had been discussing for quite some time. Pre-COVID, our discussions circled around a modern family’s desire to shield themselves—and especially their chil-
safer, and more comfortable homes for our customers, so our concentration shifted that way.”
Healthy Homes through Collaboration
The LifeStyle team attends several high-performance homebuilding conferences and workshops to make sure they remain at the forefront of innovative homebuilding techniques and practices. They are also part of a group comprised of non-competing, leading high-performance builders from around the U.S. and Canada which convenes online monthly to discuss best practices for high-performance homebuilding. Through discussions and data sharing with these industry leaders, LifeStyle HealthSmart was conceived. From there, the individual, health-focused components of HealthSmart were assembled by LifeStyle’s operations and construction executives, who have practical field knowledge of what works and what doesn’t in our Florida climate. dren—from as many pollutants, toxins, and harm¬ful chemicals as possible, whether that is through consuming organic foods or purchasing all-natural products,” said Karen Kicinski, one of LifeStyle’s owners and the marketing director for the organization. When the pandemic hit, the LifeStyle team decided to accelerate their pace in getting the healthy home program off the ground. For the past year, respiratory health has been at the top of everyone’s minds, while concurrently, people are spending more time at home. “The timing for LifeStyle HealthSmart felt right,” added Jordan Luhn, CEO. “We have the knowledge and capabilities to build healthier, cleaner,
LifeStyle HealthSmart is comprised of 14 “breathe easy and live healthier” innovations. The program launched in October 2020, and the response has been entirely positive. In fact, several customers whose homes were contracted before the launch have inquired about adding on the healthy home package.
Technology for Better Living
LifeStyle HealthSmart technologies include items like an air purifying MERV 11 filter with UV light. A MERV filter is a highly efficient fine HVAC filter that essentially captures, dilutes, and removes virus-containing particles
from the air. The higher the MERV rating, the greater number of particles it captures. The germicidal UV light kills unwanted airborne microorganisms. Another example is humidity-sensing technology which eliminates the manual process of removing moisture from your home. For example, you may have teenagers who do not think to turn on the bath fan after a shower. A humidity-sensing bath fan will sense the moisture in the air then automatically turn on and rid the bathroom of excess humidity that can cause mold and mildew, which can eventually lead to respiratory health issues. While LifeStyle Homes specializes in new construction, Kicinski commented that there are several things any homeowner can do to make their existing home healthier as well. “While many of the LifeStyle HealthSmart features are ‘behind the walls,’ (in other words they are designed into new homes), probably the easiest way for existing homeowners to make their homes healthier is by reevaluating their finishes. Carpets, for example, trap dust, dirt, pollens, pet dander, and more. Replacing carpets with tile, laminate, or hardwood makes it much easier to clean these pollutants from your home,” she said. Also, she advised, if you’re repainting your home’s interior, do so with zero VOC (volatile organic compound) paints. These paints don’t release the amount of toxic chemicals that regular paints do, making them much safter for your family’s health and well-being. Last, but not least, replace your air filters regularly with new, clean filters for proper filtration and optimal HVAC performance. LifeStyle Homes is located at 3453 W. New Haven Avenue, West Melbourne. For more information, buildingalifestyle. com/healthsmart or 321-727-8188.

ARTS VENTURE for OCTOGENARIAN

rowing up in the small town of Dundee in Polk County, FL, Carmen Beecher figured out in her teen years that her future was going to involve art. Now 80 and retired, the Satellite Beach resident is being recognized for her artwork in a best-selling book about the origins of one stalwart country musician. And she did it by bringing her life full circle. One of Carmen’s longtime friends is Bobby Braddock, a legendary writer and producer of country songs who has been inducted into Nashville’s Country Music Hall of Fame for his work turning out #1 hit tunes over the past five decades; in fact, Braddock is the only country music writer to turn out #1 hits over each decade in the past 50 years. You might have heard of some of Bobby Braddock’s songs, which include “He Stopped Loving Her Today,” “D-I-V-O-R-C-E” and “People Are Crazy.” Braddock also was Blake Shelton’s original producer and mentor. A few years back, Braddock decided to write a book about his career of country song writing and turned to his childhood friend Carmen for the illustrations.
Illustrating Country Music’s Best Carmen quickly agreed and started work on pencil drawings for the book. They agreed on a 50-50 split of the profits. “It took a while to work out, but we finally got a system going,” said Carmen. Although she also works in oil painting, she and Braddock agreed to go with black and white pencil illustrations.
Praise for Country Music’s Greatest Lines:
“Braddock and Beecher evoke the mythology of country without sentimentalizing the music or its creators. It’s a remarkable achievement...It also sent me to a dozen records I wanted to hear immediately.” -Edd Hurt, Nashville Scene
In collaboration for over a year, Carmen turned out 81 illustrations for the book, ‘Country Music’s Greatest Lines.’ One of her favorite drawings is her sketch of a former Army helicopter pilot and Rhodes Scholar turned Nashville janitor while waiting for his break…Kris Kristofferson (image pictured above left). According to Carmen, the book “gives you an inside look at how the songs were written.” Once the book was finished, they started looking for a publisher. “That was the hard part,” says Carmen. They finally signed with Arcadia Publishing and the book came out in July. It made a big splash in the country music world. “Amazon ran out right away,” Carmen beamed. It also had a big debut at Barnes and Noble.
Rave Reviews The launch was followed by articles in Rolling Stone and Billboard magazines, earning rave reviews leading to a second printing. The pandemic made the book’s exposure difficult, but not impossible, she said. “We’re doing all we can without book signings”. Carmen has been an artist all of her life, going back to her teenage years in Central Florida. She spent much of her life as a military wife, traveling a lot. Things settled down when she relocated to the Space Coast and was hired by Patrick Air Force Base in the graphics department, where she worked for 31 years. Eventually, she lost her job to the computer revolution, but she said she never stopped doing her art, even after retiring in 2003.

Love for Art Goes On and On Almost immediately after she stopped working, she joined a group of seven other female artists in Melbourne, calling themselves “Pieces of 8.” Pre-pandemic, they met weekly at the Artists Guild in downtown Melbourne. These days, the group still meets once a week on Zoom and Carmen also attends artist’s retreats in North Carolina. These days, Carmen still paints regularly and has taken over a spare bedroom and a sunroom near the pool in her home to make her art. She has virtual galleries at Etsy and manages carmenbeecher.com, which showcases her art as well as blogs and other insights. www.etsy.com/shop/CarmensArt
…”Whether you’re a serious historian or an avid country music fan, you’ll want to put ‘Country Music’s Greatest Lines’ on your “must read” list. -Sounds Like Nashville

ENERGY EFFICIENT LUXURY HOMES NuVision Builders By Shawna Lucas, Publisher
It was, perhaps, foretelling when Mark Ledford named his company NuVision Builders more than two decades ago.

ack then, Mark and his team had started a monster project at the Great Outdoors Resort in Titusville that would see more than 400 homes built to date. During that span of time, the president and owner of the design-build firm had the prophetic idea to combine his love of building custom homes with the knowledge of how to make them work with the environment. Associated Professional certification in 2007 and immediately set to work implementing green building design practices, focusing on energy savings, water efficiency, CO2 emissions reduction and improved indoor air quality. A quick search shows few residential general contractors in the region hold this accreditation. These credentials alleviate the need for a pricey evaluation to certify the project.
“This is the best way to build for energy efficiency, and storm resistance. Since COVID, we have seen a surge in requests to address indoor air quality. Developed by the U.S. Green Building Council, LEED (Leadership in Energy and Environmental Design) is an internationally recognized green building certification system that provides building owners and operators a concise framework for identifying and implementing practical and measurable green building design, construction, operations and maintenance solutions. Applying these principles to a newer project, Mark and his team have recently started another project, South Carpenter Estates, about five miles from the Great Outdoors Resort where he launched his building career here in 1999. South Carpenter Estates is a 70-unit community adjacent to preservation lands off of Carpenter Road.
Despite supply chain issues and labor shortages due to COVID, NuVision Builder projects have been completed on time in 2020, but the visionary owner is not resting on his laurels. “We are always looking to connect with lot owners or lot seekers for custom build projects,” he said. And once a homeowner decides to contract with NuVision, all phases of the home infrastructure are addressed at a showroom consult with the onsite design team who provide guidance and recommendations on floor plans, layout and the exterior appearance of the home. Currently the company’s showroom is located in one of the custom model homes located in the Great Outdoors Resort. In June, the team, will move into a new 4,000 square foot office and design center on the riverfront in Titusville. “We have an incredible selection of

After applying primer and foundation, place concealer (two to three shades lighter than your foundation) over the eyelids and in the T-zone area of the face. A bright center of the face helps create dimension and contrast. Set the entire face with a translucent setting powder, concentrating most of the powder in the T-zone. For those with dry or mature skin, use only a light dusting of setting powder. Favorite foundation: CoverFX Natural Finish Foundation; Favorite concealer: Tarte Shape Tape
Contour the forehead, cheeks, jawline, nose, and lips with a powder contour. Make sure the powder is matte and cool, toned. Using a large fluffy brush, place powder bronzer over the contoured cheeks, forehead, chin, and nose. Bronzer also makes for a beautifully effortless daytime or natural eyeshadow look, so sweep some across the lids and under the eyes as well. Add highlighter to the high points of the cheeks, then top with blush. Highlighter in the inner corners of the eyes awakens tired eyes. Favorite contour: KVD Vegan Beauty Favorite bronzer: Beautycounter Radiant All Over Bronzer Fill in the ever-important eyebrows and complete the eye look. Brows look best and most natural when the tail is shaded in darker than the head. Creating a more dramatic brow arch gives the eyes an instant lift. Warm neutrals such as browns and golds are flattering eyeshadow choices for all eye colors and shapes.
BEFORE
Favorite brow pencil: NYX Microbrow Pencil
Add eyeliner, mascara, and false lashes to complete the eye look. Skip the falsies for a more natural look, but never forget to tightline! Tightlining is placing eyeliner on the waterline or rim of the eyes to define the eyes and create the illusion of a fuller lash line. Tightline only the upper waterline for a more natural look. NYX offers an affordable and waterproof option that stays all day. Favorite mascara: CROP Natural Mascara
Finish the look with a flattering, long-wearing lipstick and makeup setting spray to lock everything in. Setting spray is essential in helping makeup last all day and also prevents foundation from separating or fading. Some, such as the Urban Decay De-Slick, helps prevent looking too shiny or greasy. Favorite long-wearing lipstick: Anastasia Beverly Hills Liquid Lipstick

EXERCISE + CONCENTRATION + NATURE
By Sue DeWerff Panzarino, Contributing Writer Images supplied by Paddling Paradise and Sobe Surf & Paddle
n recent years, stand up paddle boarding (or SUP), has become one of the fastest growing water sports in the world, with as many as 5 million people expected to have tried the activity since its popularity began to surge in 2011. Relatively easy to learn, this fun, full-body workout provides stress relief, improves balance, and builds core and leg strength. Whether paddling on the peaceful and serene Indian or Banana Rivers, or offshore along Brevard’s 72 miles of epic beaches, the activity is a great way to enjoy breathtaking views of nature while getting plenty of sunshine and exercise. (Be sure to cover up and use sunscreen, it can get brutally hot out on our waters). From manatees to alligators that are often spotted in the backwaters of Turkey Creek in the southern part of the county, to the hundreds of exotic birds and beautiful bottle-nose dolphin that frolic in Sykes Creeks’ Merritt Island Natural Wildlife Refuge, paddle boarding offers

local participants the chance to commune with the largest collection of endangered wildlife and plants in the continental United States.
Sports on Boards
Stand Up paddleboards can be used for many water activities including fishing, surfing, and yoga. Racing also is becoming popular with a number of events scheduled around the globe all year long.
SUP boards as large as 14 feet can be set up to accommodate fishing gear that can be attached to the vessel, including poles, buckets and even a small seat.
On the Space Coast, a number of outfitters and tour operators offer options to glide the waters and center your spirit through this meditative sport.
SoBe Surf & Paddle SoBe Surf and Paddle caters to small groups and provides individual instruction for all skill levels. The store stocks paddleboards and accessories for sale or rent. For info: www.sobesurf. com or 321-926-6571. The store’s owner and professional SUP athlete, Girard Middleton, offers multiple river paddle eco-tour options, as well as beginning and advanced SUP beach (ocean) wave riding instruction. Tours depart from the Brevard Veterans Memorial Park in Merritt Island. An added benefit of paddle boarding, especially on a calm evening after sunset during low moonlight times, is the opportunity to witness a phenomenon called bioluminescence. During the winter months through February, comb jellyfish are abundant in the cooler waters, and can be seen in the backwaters. Called Ctenophores, the non-stinging creatures made of 95 percent water and eight rows of cilia, give off incredible luminescent glow. Likewise, during the summer months, when the temperatures are warmer, dinoflagelletes plankton (small fishes) illuminate at night after being stirred by the movement of the paddles skimming over the water.
Paddling Paradise Danny Smith, owner of Paddling Paradise near the Indian River Lagoon in the southern part of Brevard, offers tours of the Turkey Creek Sanctuary. Along with several group and individual eco-adventure tours, the business also sells and rents boards and equipment. Smith also hosts and sponsors several local amateur and professional paddle board races, open to participants of all skill levels. Expert instruction for advanced paddle board racing is also available, as well as classes for yoga paddling, fishing trips and other group outings. 60

Fishing
Yoga SUP yoga offers relaxation on the water and forces a participant to truly be in the present due to the movement of the board. It is recommended that a stiff board be used for this activity to provide more stability.
Racing Racing boards, used for flat water paddle both on rivers and in the ocean, can span more than 14 feet in length and often are designed with special fins. Inflatable paddle boards have made their way to market in recent years and fill a unique niche for those “on the go.” The portable boards come in multiple sizes and can be used for both ocean SUP wave riding as well as flat-water paddling.

As cooler nights prevail along the Space Coast, we’re sweetly surrendering to the cozy comfort of Hot Cocoa Bombs, which can be customized to your level of chocolate love, and quickly assembled for family & friends.
Gesonheid! (Afrikaans)
These yummy, decadent, steamy cups of goodness are best enjoyed while watching old timey movies or sitting around a tabletop fireplace or outdoor chiminea on a cold night. Heck, who are we kidding? They’re good even in the middle of summer, just crank down the AC to set the mood!
Skål! (Swed ish)
Prost!
Make sure your chocolate is uniformly and finely chopped to avoid inconsistent melting. In a microwave safe bowl, heat chocolate over medium high heat for 30 seconds. Stir and heat again for 15 seconds. If the chocolate is still too chunky to stir smooth, heat for an additional 10 seconds. (If you overheat the chocolate, it will not set in the mold properly; aim for right under 90°F. Using a silicone mold (most common is half spheres, but I used decorative molds seen in these images) make the shells by covering in a layer of melted chocolate. Use a spoon or brush to make sure the entire surfaced is covered.
(Japanese)
Hot Cocoa Bombs Makes: 6 Bombs
(German)
You’ll need: Spherical molds Candy thermometer Parchment paper Ingredients: 14 oz chocolate, 70% cacao 1 cup hot cocoa mix 1 cup mini marshmallows
Santé!

(French)
Directions: With a large knife, chop your chocolate into fine bits. Next, you’ll need to temper your chocolate(and finger wagging rarely works!). The easiest way to do this is in your microwave… just believe!
Kanpai!
For Snowflake bombs or other shapes: Place the molds on a tray lined with parchment paper that will fit in your freezer (to keep the mold flat and ensure even distribution of the chocolate) and freeze 5 minutes. Add a second layer of melted chocolate and freeze again for another five minutes. Carefully remove the shells from the molds and fill with hot cocoa mix, mini marshmallows, sprinkles, or any other fillings you choose. To seal the spheres into a bomb, heat a pan over medium low heat. Place the rim of a second shell on the heated pan until the rim starts to melt and then quickly use that as the glue to bind the two shells together. Place the whole spheres back in the silicone mold and repeat for remaining spheres until they are all completed. Freeze for an additional 5 minutes to fully secure the top to bottom pieces. The bombs can be stored in the refrigerator until ready to use.
Use the hardest chocolate possible for intricately detailed shapes. I recommend at least 70% cacao. Make sure to brush into all the nooks and crannies and give the sides an extra layer of chocolate. For the other half of the shell, simply make just the bottoms of the molds. This will make a cap instead of a double large shape. Remember that the thicker the chocolate shell, the slower it will melt and the richer the chocolate will be. Boozy Version: For an adult beverage, try adding a shot of bourbon to your hot cocoa! If you are gifting these, check for mini bottles of bourbon at your local spirits store. To enjoy: Place the bombs in a coffee mug or latte bowl. Pour hot, steaming milk on top and garnish with a peppermint stick.
Cheers!

students are likely going to be bounced from homes and will end up living in hotels/motels, doubled up with others, in their vehicles, tents or shelters.
More recent data suggest that number is three times higher, at about 3,000, though with the pandemic, “it’s difficult to accurately track students who are not in classrooms [on a daily basis],” said Tara Pagliarini, the organization’s executive director.
The organization’s goal is to ensure that homelessness is rare, brief and non-recurring. At a cost of roughly $250.00 per child to maintain housing vs. $5,000 to re-establish housing, homeless prevention is key. Family Promise of Brevard relies on community partnerships, grant funding and grassroots giving to service the 60 families per month they regularly assist.
What’s worse, with the eviction moratorium ending in December 2020, many more families and 64 64

Innovative Model Founded by a group of concerned local religious leaders in 2007, the interfaith model requires participating families to meet certain criteria and follow protocols, such as saving 80% of their income and maintaining employment. Resources are provided to help them learn financial responsibility, assist with credit repair, and access employment and health and wellness issues instead of resources. Collaboration is one of the pillars of the organization’s mission. Family Promise is not out to ‘recreate the wheel’ said Tara. Instead, “we rely on available community resources to help find needed assistance for our
clients. In doing so, we are not only able to steward our funding directly to the families, we are engaging people to be invested in strengthening our community” she said Helping families get back into or remain in permanent housing requires a committed community, willing to provide shelter resources and love to the most vulnerable among us. Partnering with the many faith partners affiliated with Family Promise of Brevard, families are rotated among congregations during the week, which offers a warm place to stay for the whole family. During the week, children attend virtual or in-person classes at school, and families are provided education,

In 2106, they started the Emerald City 5K, an all-ages walks and run, which takes participants on a roundtrip course from the Church of Viera through the back roads of the sprawling suburb. The event is sponsored by the Church of Viera and Wesche Jewelers. This year marks the second in their five race “Journey Home” series. Themed “It’s been a witch of year”,
Dorothy is introduced to the Wicked Witch which represents the lack of affordable housing, skilled jobs, and opportunities for social mobility. This race will occur February 26, 2021 and follows COVID-19 Protocols. Everybody wants to “go home” at some point, said Tara, and the race - which can be completed in person or virtually - will offer

CRAFTSMANSHIP FOR THE DISCRIMINATING Q’s Cabinetry By Eric Wright, President
Similar to an automobile, the best cabinetry should be an efficient blend of functionality, use of space and design. Gary Quattro, of Q’s Cabinetry, has developed a reputation for delivering on all of these elements for some of the most selective homeowners and home builders in the region. “In many cases, the builders we work with don’t even include cabinet designs in their blueprints, they just send their clients to us directly and we develop the plans for the space,” he said. “Cabinet design is so much more than 66
SPACE COAST LIVING | SPACECOASTLIVING.COM
[just] sizes and finishes, it is understanding how the cabinets actually work and how they enhance your life and lifestyle. Most importantly, it is how they make a space. That is why our showroom is more like an actual living space, instead of display cases.
We want people to feel what their new kitchen or bathroom will actually be like,” Gary said.
Expanding Business Towards pursuing this end, Gary and his son Nick are expanding their location in Cocoa from 2,000 to 5,000 square feet. They are adding some of that space to their fabrication shop, but most of all they want to create an immersive experience for their clients. Nick, a UCF grad, grew up working with his Dad and decided to return to the Space Coast to work in the family business. Gary’s connection to the craftsmanship and design of cabinets is probably genetic, in nature. The senior Quattro grew up in a family of furniture and cabinetmakers, and though he came to Florida to pursue a restaurant business he began building cabinets and furniture on the side for himself. People were so compli-
mentary of his work that Gary decided he may have missed his calling. “I suppose sawdust was in my veins,” he said. “So, I found a cabinet maker I respected and went to work for them, determined to learn all I could about the business side of [the] trade.” After a few years, Quattro started his own company, resolved to design, build and install cabinets that were superior in every respect to what consumers had come to expect. “We build cabinets that are right the first time. My installers love me because the product doesn’t have to be modified at the location, it is either right or we don’t let it out of our shop.”
Peer Reviews Quattro’s attention to detail explains why the company has garnered a number of coveted “Craftsmanship Awards,” from the Home Builders and Contractors Association based on nominations by area builders. It is also why Q’s Cabinetry has partnered with some of the most re-
spected cabinet manufacturers in the country, including Aristokraft, Deora, Kemper and Medallion Cabinetry. “If a client comes to me and needs a new door or drawer face for a kitchen I installed several years ago, I don’t want it to be close to their cabinets, I want it to be an exact match. Nothing else is acceptable. Many of the locally-made cabinets simply don’t have the sophistication to match a 14-step finishing process, which matches the cabinets perfectly.” It is that kind of knowledge and uncompromising attention to perfection that Quattro’s clients have come to appreciate and respect. “Cabinets are something you live with and use every day. We care about your house and will take the time with you, at no additional cost, to modify and change your current plan design to better suit your needs. We are into all the little details that others seem to miss, or do not even understand. We leave nothing to our installers to figure out,” Gary said.
Process Customarily, Q’s provides three different drawings to clients to make sure the end product is exactly what’s expected. The drawings illustrate different styles and configurations based on client modifications and needs. Once the owner and Q’s have finalized design, the contractor is brought in to review the drawings so all of the elements are seamless and potential modifications to a ceiling, A/C or molding finish can be incorporated. With so many people working from home these days, renovation projects that have been put off for years are coming to the forefront. For homeowners looking for customized craftmanship, attention to detail and personalized service, Q’s Cabinetry has an unrivaled reputation. Q’s Cabinetry is located at 340 Cox Road in Cocoa. Part of an occasional Space Coast Living series about nature and the environment By Maya Mojica, Contributing Writer
Creatures of the Deep F
off Space Coast Waters
ilms like Jaws have instilled a deep fear of sharks in so many around the globe. For some, even the fact that human beings are not actually in sharks’ diets isn’t a relief. But for those who can overcome this fear and who seek out the thrill of spotting one of these creatures in the wild, the Space Coast might just be a great place to look. From the basically harmless Lemon Shark to the dangerous Bull Shark, the Space Coast’s waters serve as the perfect home for sharks. And besides, sharks play
an important role in any ecosystem, particularly by maintaining the food chain. So, in order to make sure the marine life right here in Brevard County is able to thrive, it’s important to learn about and respect the sharks of the Space Coast.
Blacktip Shark
The Blacktip Shark, also known as Carcharhinus limbatus, is incredibly common along Florida’s shore. These sharks are typically identifiable by —
surprise, surprise — the black tips on the top of their fins. Often, you can find these creatures speeding along the surface of the water and sometimes, you may just catch a glimpse of them jumping above the waves. Although they have been the cause of some shark attacks around the state, the Blacktip Shark’s diet actually consists of fish, small sharks, rays, squids and more. The Blacktip shark is not yet endangered; however, since their official status is “near threatened,” it’s crucial that we work diligently to protect these sharks.

Reaching a maximum size of about 11 feet, the Bull Shark, also known as Carcharhinus leucas, is by no means small. And these massive creatures certainly hunt and consume prey comparable to their size, including other sharks, rays, dolphins, sea turtles and birds. Although Bull Sharks tend to live near estuaries and offshore waters around Florida, they sometimes use coastal river systems to venture much further inland. This makes the Space Coast the perfect place for the Bull Shark to reside. Although they are not yet endangered, Bull Sharks, just like their Blacktip brothers, are also listed as “near threatened,” meaning that their protection is crucial. But make sure not to get too close; Bull Sharks account for the third highest number of shark attacks on humans.
Bull Shark
Atlantic Sharpnose Shark
The Atlantic Sharpnose Shark, also known as Rhizoprionodon terraenovae, is most easily identifiable by — you guessed it: its sharp nose. But what you might not have guessed is that these sharks are actually tiny; in fact, they only grow up to four feet in length. Since they are so small, Sharpnose Sharks tend to feast on small fish, along with worms, shrimp, crabs and mollusks. Fortunately, this species is not yet endangered, and actually, is above its target population level. And there’s certainly no shortage of Sharpnose Sharks right here on the Space Coast, with their habitat ranging all the way from the Canadian Atlantic down to the Gulf of Mexico.
ner Sharks differentiate themselves by their unique feeding practices — they quite literally spin up and out of the water in order to catch their next meal. Typically, this “meal” consists of fish, and sometimes even small sharks or squid. But despite their powerful jaws,
Lemon Shark
Spinner Shark
If you happen to spot a Spinner Shark, also known as Carcharhinus brevipinna, be careful not to confuse it for a Blacktip Shark; this species also has gray or black tips on its fins. But Spin-
Spinner Sharks are not considered dangerous to humans. Unfortunately, these creatures are listed as “near threatened with extinction” by the International Union for Conservation of Nature Red List, particularly because of the commercial fishing industry in the southeast U.S. and the Gulf of Mexico.
Lemon Shark
Despite their name, Lemon Sharks, also known as Negaprion brevirostris, do not feed on lemons. Instead, these tropical sharks typically feed on fish, crustaceans, mollusks, small sharks and birds. Lemon Sharks are in high abundance along Florida’s coasts, including right here in Brevard County. While they occasionally enter freshwater areas, this species does not travel nearly as far inland as Bull Sharks and has been involved in only a very small number of human attacks. Although the fishing industry has relatively little impact on the light yellow-skinned Lemon Shark, the greatest threat to this species is most likely the degradation of their habitats. JAN/FEB 2021
