“Yes, I am beating the odds. And – thankfully – With my family, friends and church close by.” In 2012, I was diagnosed with stage 4 cancer in my lungs and brain. According to statistics, I shouldn’t be here today, but my doctors in Monroe told me I could participate in an experimental treatment. That opportunity, and being close to my family through it all, is keeping me strong. Edwina was diagnosed at Levine Cancer Institute-Monroe. Oncologists there connected her to a leading-edge clinical trial at the Institute’s research headquarters in Charlotte while she was able to stay close to home for follow-up care. Today, Edwina is responding well to treatment and enjoying every moment with loved ones.

few weeks ago, the Lake Norman community lost two great men. And I lost two great friends. Sam Wilson and Robert Cashion were Lake Norman natives. They grew up here, started their families here, built their businesses here and made a huge impact on the growth and progress of this area. Many of you have stories of how these two men affected your lives, and I’d love to hear them sometime. I have my own story, and it’s one many of you probably don’t know. I met Sam and Robert 30 years ago when I came to the Lake Norman area to work for a local publication. Never had I met two people who cared more for their hometown and the people who lived here than these two gentlemen. Sam was in the restaurant and catering business. He could whip up some of the best barbecue you’ve ever put in your mouth, and he did it on a weekly basis. Many times he catered for local charities and fundraisers — organizations that couldn’t afford to pay him but that didn’t matter to Sam. If it was for the good of the community and the betterment of its people, Sam would cook all day. He always offered a smile and a handshake, and if you were lucky, his secret to making his melt-in-your-mouth barbecue sauce. Sam was at home behind his grill. I first met Robert at his grocery store that stood at the corner of Hwy 115 and Catawba Avenue (where the Rite Aid sits today). He would stand in that big “grocer’s box” at the front entrance and welcome folks by name. To a young, 20-something advertising sales rep, he was larger than life and a little bit scary. Regardless, he welcomed me like a neighbor and treated me with the utmost respect. As the years passed and I grew in my career, I was able to get to know Sam and Robert on a more personal level. We served together as members of the North Mecklenburg Rotary Club. I worked out in the mornings with Robert “Bob” at the Lake Norman Y, and I even shag danced with Sam to some great beach music. Both men knew the importance of mixing in a little fun with whatever they did, but they never lost sight of their mission to serve the people of Lake Norman. Six years ago I turned to both Sam and Robert to discuss my dream of publishing a magazine for the Lake Norman area. Their years of creating successful businesses here combined with their dedication to community service proved invaluable to me. Robert sat down and helped me create a timeline for

success. He wrote a beautiful recommendation letter for me to present to area business owners, encouraging them to trust me to help them to market their businesses. Robert allowed us to distribute CURRENTS inside his convenience stores, and thanks to his son, Gordon, CURRENTS is still the only FREE publication available inside his stores today. Sam hosted a reception at his home for me and my newly formed team so we could present our ideas for this new publication we called Lake Norman CURRENTS to prospective investors. He stood by the team and I, and he assured these savvy businessmen that they were making the right decision by investing in this group of ladies who knew how to create a great magazine. Turns out Sam was right! This month, on November 24, CURRENTS will celebrate its sixth year of keeping the Lake Norman community in touch with all the great things happening in the area. We’re still the
magazine created by and for the people who call Lake Norman home, and that will never change. It’s the mission Sam and Robert embraced with their businesses for more than 50 years, and if it’s good enough for them, it’s certainly good enough for me. For this reason and so many more, CURRENTS dedicates our November issue, appropriately called our “Doing Good” issue, to Sam Wilson and Robert Cashion. May their memories enlighten our days; their legacies make us stronger, and their love for the people of Lake Norman remain in our hearts and be evident in every word you read inside this magazine — today and every day to come.

At The Helm
I
tend to get carried away — especially when it comes to entertaining. If you need further verification of that, you’re welcome to see my serving piece collection or simply ask my husband, John, as he’s seen me turn multiple birthday parties into what can best be described as circuses. I can’t help it. I love to throw parties (party planning was a big part of my first real job out of college), and I love to hang out with friends and family. It’s fun to pick a theme and run with it all the way down to the color coordinated M & Ms. And everyone knows that cupcakes taste better when served on a whimsical cupcake stand, make that two whimsical cupcake stands. So when we began planning the November issue, I was determined to put together a Thanksgiving celebration story (see page 32) that would inspire us all to pull out our fine china and cook a delicious feast for our loved ones. As with any story, I believe in enlisting the help of experts, so I recruited Jill Dahan, the Cornelius author of Starting Fresh! Recipes for Life and CURRENTS’ recipe correspondent, as well as Starr Miller, president and principal designer of Cornelius’ Starr Miller Interior Design, Inc. Though these two had never met, they
SETTING THE SCENE Show your love and gratitude this Thanksgiving worked together beautifully to create a table you’d be lucky to sit at on Thanksgiving. The big twist with the story is that I wanted it to be a healthy Thanksgiving dinner. I love candied yams and green bean casserole just as much as the next person, but I have a cholesterol issue that prefers I stay away from those delicacies. With that in mind, Dahan, who is a nutrition guru, put together a healthy meal that is just as tasty as a spread by any southern grandmother. A team of us, including my 4-year-old twins (Graydon and Margot), got together at Dahan’s Cornelius home on a Friday afternoon to bring our vision to life. When I arrived, her house smelled so much like Thanksgiving morning that I wanted to turn on the Macy’s Thanksgiving Day Parade. She and Karen Hughes, her assistant sous chef, were mixing, slicing and cooking everything in sight. Miller and her crew, including Dianna Lomangino and Mary Santini, were busy setting the table and elegantly penning placecards. During all of this, Dahan’s dog, CJ, made us feel welcome by letting us give him a few belly rubs. By late afternoon we were all sitting at the table making a toast to our hard work. As I looked around the room, I just beamed because I was so proud of everyone’s creativity. Sure the table looked beautiful
and the food was delicious, but the best part was working together to create something fun, something that is sure to encourage you to throw an unforgettable Thanksgiving. When I talked with Miller about table setting strategies, she mentioned how you should make it personal and how you should make your guests feel like you went out of your way for them. After all, one of the best ways to show your family and friends how much you love them is to cook a tasty meal and make them feel special. Why not put old family photos in the centerpiece or serve pumpkin pie on your grandmother’s antique pie plate? These actions will go miles in making your guests feel loved and welcomed. We’ve titled this issue The Doing Good Issue, as we’ve included stories about people who are making a positive difference in our community. This Thanksgiving when you’re sitting around the dining room table, raise a glass to your family and friends, as well as the leaders and visionaries in our area. Together we make Lake Norman a place for which we should all be thankful. Happy Thanksgiving!

Retiring His Way
Lieutenant General Tom C. Waskow is learning to take it easy for a change

Lieutenant General Tom C. Waskow’s military career spans 39 years, during which time he flew 282 Vietnam War combat missions, met three presidents (Clinton and both Bushes), and held command positions at multiple levels. Today, Thomas, 67, lives on Lake Norman with his wife, Sheila, in Cowans Ford, where he’s enjoying retirement — or at least his version of retirement. “Having gone from an environment where I was responsible for over 125,000 soldiers, sailors, airmen, Marines, and coasties and their families to emptying my own trash has been an interesting transition,” he says. “But I haven’t really had a chance to think about retirement. I’ve been too busy.” Serving your country and working hard to achieve success are traits that run deep in Tom’s family, as he’s eighth generation military. (His son, an Air Force Academy graduate, is carrying on the tradition.) Moreover, Sheila’s father — who lived in Cornelius — was awarded the Medal of Honor. The Waskows moved to Lake Norman in 2005 from Japan, where Tom was Commanding General of U.S. Forces. Prior to Japan, he was director of Pacific Air Forces Operations. It was in this role that he had one of his most unforgettable career experiences. Following the 9/11 terrorist attacks, Tom was designated the Commander for the Hawaii Air Defense Region, and was one of three Air Force generals who Secretary of Defense Donald Rumsfeld called to give

the authority to shoot down any hijacked civilian airliners. “My response was that never in history have we even thought about shooting down civilian airliners,” Tom recalls. “Rumsfeld simply said your role is to make sure that what happened in New York and Washington doesn’t happen in Hawaii.” While Tom no longer faces such daunting life-and-death situations, he and Shelia remain committed to the military. Sheila recently retired as vice president of the USO of North Carolina, while Tom is on the USO’s Board of Directors. And last summer, in recognition of Thomas’ service as a commander of U.S. forces in Japan, he and Sheila were invited by Yorishori Itoh, chairman of Itohgumi Industries, to attend the annual Sapporo Air Show in northern Japan, where some 20,000 spectators gathered to watch American and Japanese commercial and military aircraft. During their down time, the couple enjoys spending time on the lake in their boat and socializing with neighbors. Tom, who still has a passion for flying, has a small airplane he keeps at the Lincolnton Airport, and he’s also active in the local chapter of the Experimental Aircraft Association (EAA), an international organization of aviation enthusiasts. “We love it here at the lake,” Thomas says. “It’s a wonderful area to enjoy this new phase of our lives. Neighbors Helping Neighbors
The Peninsula Community Foundation hits $1 million in giving For more than 10 years, The Peninsula Community Foundation (PCF) has brought neighbors together to help neighbors. The all-volunteer organization was founded in 2001 by a small group of retirees from The Peninsula neighborhood in Cornelius as a way of giving back to the local community. “Since then, hundreds of local residents and businesses have helped The PCF raise over $1,000,000 for local charities and our neighbors that they serve,” says Todd Wiebusch, president of the foundation. Raising awareness of the significant needs for the population of North Mecklenburg County, as well as raising money to distribute to charities that best address these needs are the main goals of PCF. “We also like to partner with other local organizations to help leverage the many charitable groups and activities in North Meck,” explains Wiebusch. Since its inception, PCF has contributed to 26 different organizations.
As the first major financial supporter of “Eliminate the Digital Divide (E2D),” they helped local groups provide computers and Internet connectivity to low-income students in the northern part of the county. A partnership with Novant Health Huntersville Medical Center and Safe Alliance helped launch a local program for victims of sexual abuse, including the purchase of critical equipment used in prosecuting sexual offenders. Other organizations helped include The Bin, Lake Norman Community Clinic, Serenity House, the YMCA and the Mecklenburg County Boy Scouts. “We live in an incredibly generous and appreciative community of individuals, sponsors and supporters,” says Wiebusch. “The strength of our community rests with ensuring that all of our neighbors have the support, assistance and opportunity to succeed that they deserve.” — Jennifer Baxter, photography by Ben Sherrill

Inside Out Apple Crumble A highlight of autumn for me is the availability of my favorite honey crisp apples and what could be better than to pair them in a crumble. Crumbles are one of the quickest puds to make, and this one is even simpler — and good for breakfast, too. I like to think it as an inside out crumble, as it has the apple on the outside. The crumble topping with gently cooked apples and creamy yogurt is as delicious as it is good for you, and if you use Black Sheep’s Yogurt you are in for a treat. It is extra creamy, easier to digest, and higher in protein than cows’ yogurt. and it tastes simply divine. I also recommend Purely Elizabeth Granola, as it is low glycemic because it is made with coconut sugar. After serving this for dessert to a bunch of friends the other night, a number of them made it for themselves every day after for breakfast. I would call that a successful dish. Ingredients 2 organic honey crisp or gala apples ¼ cup granola (I love the brand Purely Elizabeth or homemade.) ¼ teaspoon cinnamon powder ½ cup ginger or vanilla yogurt (I love Black Sheep Yogurt, available at Healthy Home Market in Davidson.) Core the apples by just cutting around the top of the core and then scooping out the seeds, leaving a firm bottom. Place the apples on a baking sheet, sprinkle inside with a little cinnamon, and bake at 375 F for about 20 to 25 minutes until softened. Remove from the oven and spoon yogurt inside and sprinkle with granola. Serve warm with extra yogurt if desired. Makes two apples. Jill Dahan lives in Cornelius and is the author of Starting Fresh! Retail gets in gear for the holidays
Christmas in the Village returns to Lake Norman in a new location. Last year the store opened in Huntersville’s Birkdale Village. This year it has a permanent location in Cornelius on Jetton Road. Owned by Chris Boutin, a Cornelius resident whose parents ran one of the largest Christmas stores in the Atlanta area for 17 years, Christmas in the Village is a lifelong dream. “This area of Atlanta was a destination, and I knew that when we settled here, Lake Norman has the same destination quality that could benefit from the magic of a Christmas Store,’’ explains Boutin. This year, he will add a new twist to his business model by keeping the store open as Rival Sports during the off season. In a market where college and pro-sports is huge, he says the decision to move into this niche was easy. “Last year team sports were our biggest sellers,” says Boutin. “This year we’ll offer even more, and we know our college and pro fans are going it love it.” Another part of Boutin’s business model includes giving back to the community, as he has scheduled events for every week in November and December for 10 percent of all sales to go to featured organizations such as Juvenile Diabetes Research Foundation, Barium Springs Home for Children, Young Life of Lake Norman and Cornelius Elementary. Christmas in the Village, 19420 Jetton Road, Suite 103, Cornelius, look for Christmas in the Village on Facebook. The Kilted Buffalo has opened a second location at LangTree Lake Norman in Mooresville. The first location opened in Birkdale Village more than five years ago. A neighborhood pub with an Irish theme, The Kilted Buffalo is also a man’s man salon. The result is a one-stop shop where men can get a haircut, grab a brew and enjoy bar games under one roof. Both locations offer live music, open mic night and karaoke. Main St. Antiques & Design Gallery has opened in Mooresville inside the former Burlington Industries mill. The structure’s wood ceiling beams and brick walls provide a memorable setting for a wide range of antiques, collectibles and home decor items. The gallery is an antiques mall featuring booths from local vendors whose merchandise changes regularly, so there will always be different pieces to see. Vendor Judith McCubbin, who has bought and sold antiques for two decades, has a booth that includes painted and cottage-style furniture, vintage chairs, antique night tables and “shabby chic” items. Other vendors offer jewelry, antique and artistic clothing, glass, and unusual home accent pieces. “We want Main St. Antiques to be a really fun place to shop,” says McCubbin. Owners Tracie Stier-Johnson and Wendy Presley looked at the move as a way to change their business model a bit. “We’re really upgrading our store,” says Stier-Johnson. “We wanted to create a neat and exciting environment for our customers to explore.” Painted in a light gray, the new space offers a clean and fresh feeling, as its inventory focuses on gift offerings, as well as customized stationery. In August Regina McGrath and her sister, Caryl Leone, went into the sweet business of selling candy at South Main Sweet Shop. “We thought Davidson could use a store like this,” says McGrath. The twosome carry everything from retro candy (think Fun Dip and Pop Rocks) to Belgian chocolates made by award-winning artisan chocolatiers to 21 colors of M&Ms. Be sure to check out the light blue chocolate Tiffany boxes that are actually made for Tiffany & Co. Steinway Piano Gallery Charlotte opened its permanent location in June at Exit 18’s Smith Corners. Prior to that it had been operating in a temporary location nearby since February. Owned by husband and wife team Mark and Katherine Love, the 3,500-square-foot gallery carries approximately 50 pianos (grands and uprights) in stock, including models by Steinway & Sons, Boston and Essex. Note, both Boston and Essex are designed by Steinway & Sons. On October 1, The Wine Bucket Challenge: An Evening Reception for A Giving Spirit Foundation was held at Monkee’s of Lake Norman. Fifty people donated a minimum of $30 to A Giving Spirit Foundation (AGSF) to receive a ticket. The ticket included an evening reception at Monkee’s, complete with wine and other beverages; appetizers and desserts from Millstone; a 20 percent discount; a swag bag; and an entry into a raffle for two pairs of Frye boots and a Frye purse from the Fall 2014 Collection. In addition, Monkee’s donated a portion of all Frye boot sales to AGSF. AGSF benefits families experiencing adversity in the face of an unforeseen health challenge, as well as Project ALS and the ALS Association. Summit Coffee engages community with Team Summit Foundation F
or Summit Coffee Co. owners, Tim, Brian and Tom Helfrich, philanthropy has always been naturally ingrained as part of their business plan. Simply put, they are firm believers in “community helping community.” As part of this philosophy, brothers Tim and Brian, both graduates of Davidson College, have created a new non-profit organization called Team Summit Foundation with the mission statement “Support Through Sport.” Summit Coffee first began to raise awareness and funds for other nonprofit organizations with The Summit Twilight Racing Series, founded in 2011. We sat down and spoke with both Tim and Brian recently about the series and why they made the decision to form Team Summit Foundation.
Let’s start with The Summit Twilight Racing Series. Can you tell us a little about the organizations that have received funds as part of that?

Brian: One of our missions was to have a handful of partners who are going to be engaged and care about what we’re doing. We’re selective. We have about five or six series sponsors, and each race had a different beneficiary. The fourth annual Twilight run [this
month] will raise money for Movember. The March race, the Leprechaun Loop, raised money for Levine Children’s Hospital. In June we raised money for Nothing but Nets. And September the beneficiary was E2D [Eliminate the Digital Divide].
What inspired you to start Team Summit Foundation?
Tim: I think philanthropy has been a fundamental part of Summit’s business plan for the past decade, increasingly so. Charitable efforts made up a significant portion of what we were focusing our energies on, most specifically with the racing series.
Deck the Halls
How does the sports aspect of the foundation tie into Summit Coffee Co.?
Brian: Adventure and human-powered sports is part of the Summit philosophy. We like to encourage people to stay active.
What is your vision in forming this particular non-profit?
Brian: It basically expands on the purpose of the racing series. It’s a natural progression, and we’re going to continue to try and be creative and find ways to help different organizations. Tim: The idea behind Team Summit Foundation is to utilize athletic events, such as small-sided soccer and basketball tournaments, to raise money for various causes.
Tim, both you and Brian are on the board of directors, along with your father, Tom Helfrich, and six other people. How did you select the other board members?
Tim: We looked for people who had an ongoing relationship with Summit Coffee. We wanted a diverse group of people who were engaged in different aspects of the community. We have people with elementary-age children, employed by Davidson College, coaches, someone with experience in outdoor education, a lawyer, and another with a design and branding background.
What are the next steps for the foundation?
Tim: We are very excited to get this foundation off the ground. We’ve been in the organization phase for nearly a year, so we are especially looking forward to engaging more actively with the community. We think athletic events provide a great platform for civic engagement and social change, and we think the Davidson community, in particular, is a perfect place for an initiative such as this because a great number of people in our area are physically active and active in supporting charitable causes. It’s a good combination. Brian: We’ve forged a lot of partnerships over the course of our 16 years. Looking forward, we will continue to pursue partnerships with other non-profits. Summit Coffee will be very much a champion of Team Summit. thought that this was when life got easier,” she says, and I nod because I know exactly what she is experiencing. We grow up believing that the formula to a happy life is easy. We do the right thing. We follow the rules. We get a job, a partner, a house with a fenced-in yard that has a goofy, happy, ball-fetching dog running around in it, and then we park it in perfect for a few decades and enjoy the magic. But life isn’t without its curveballs, and perfect doesn’t exist. There is no happy destination where we get to simply park for decades while enjoying the view. As it turns out, every day comes with its challenges, its very own growth opportunities. The magic we are looking for isn’t actually found in a destination. The magic happens inside of us, every single day, when we invite it to happen, when our heart is open to it, as we allow ourselves to grow in our journey. It is not our destination that gives meaning to our experience; it’s the journey.

So sit back and think about how you want to feel, what feeling you want more of in your life, what you want to be doing more of and what you wish to do less of in your life. Use your answers to inform your journey.
Get out your map Intention setting is about having an internal resolve and a desire to move towards something that will serve you better as you move forward. What is it you want out of this journey? Where do you really want to go? Maybe you want to gain greater proficiency in the kitchen or earn a counseling degree. Get honest and really claim where and how you wish to journey. Then use those guideposts to inform your way. Fill your gas What do you need to support you on your journey? Load up on the resources that will take you to the next level. Maybe you need to check out some books that will provide insight, reach out to some potential mentors or ask for more help at home. Whatever it is, find the support you need to take the next step. Hit the road Go ahead and get started, even if it’s proverbially raining. Too often, we wait for perfect conditions before we set out. There are no perfect conditions. Nothing is ever effortless, and the truth is that the journey is about all of it — the good stuff and the hard stuff. It all teaches us what we need to learn. Take rest breaks There are always times when we need to gather perspective, resolve or information. When those times come, stop and get what you need rather than pushing yourself forward to that mythical destination. Remember, it is all a journey, so speed doesn’t matter. How we do things and whom we are while we are doing them does. Make adjustments that give you more of that feeling you seek. Enjoy the view By choosing to relish the journey, you are setting yourself up for success every single day. So watch what you are doing, recognize your growth and know that the road before you is endless with opportunity.

The Buescher Foundation creates families
J
ames and Kris Buescher are moving at speeds faster than most people these days, and they have no complaints about it. James, a rising racecar driver in NASCAR’s Nationwide Series, and his wife, Kris, are launching a foundation that strikes at the core of who they are and the family they’ve built.
Helping with the process
To truly understand where they are today, you have to go back to when the
two were first married and planning to have children.“James and I always felt led to adopt even before we got married,” says Kris. “Our plans were to have a biological child and then to adopt a newborn. However, the good Lord had other plans for us.” The newlyweds started the adoption process, and they quickly were matched two months after they began the journey. Then, five months later, their son Stetson was born. “It was the most

amazing experience ever,” says Kris, still beaming with joy more than a year later. Out of that experience, something else was born. “We saw how costly adoption was and all the stress that comes along with it,” says Kris. “We got the idea to start a foundation after going through the adoption process ourselves.” Adoptions can be very pricey, sometimes adding up to tens of thousands of dollars in legal fees, along with travel and adoption agency costs. The Buescher Foundation will provide financial support to families who are adopting domestically but can’t afford some of the costs associated with it. Each quarter, the foundation will award grants to families trying to overcome some of the costs. “We have plenty of friends who would love to adopt because they can’t have biological children, but they cannot afford to,” says Kris. “And we know there are so many other potential parents out there saying the same thing.”

While the couple lives in Texas, they spend little time there. They’re usually traveling between racetracks with a weekly stop in Huntersville, Cornelius or Concord

is truly needed,” says James. “Many people don’t realize that it’s just as needed as international adoption, and I hope this will make everyone more aware about adoption”. But they’ve also noticed something else along the way. “Since Kris and I announced that we were adopting, many people that had not made it public that they were adopted or were affected by adoption have finally done so,” says James. “By them opening up about this, I think it will make everyone more aware about adoption.” In the months leading up to the kickoff, the support so far has overwhelmed the Bueschers. Already, they’ve received a $40,000 donation from the Fraternal Order of Eagles and a donation from Great Clips, one of James’ racing sponsors. The Dave Thomas Foundation, which also helps with adoption awareness, has been helping the foundation as well. The Bueschers know that every road to adoption looks different, but they also know that what they’re doing could have lasting impacts on families all across the country for years to come. “There are so many children that need forever homes,” says Kris. “We all can make that happen.”

hanksgiving is all about family and food — lots of it. But this year instead of stuffing yourself with all of the traditional favorites that aren’t always the best food choices (think high cholesterol, high sodium, obscene amounts of sugar), serve a healthy meal that is also tasty. We asked Jill Dahan, a Cornelius resident who wrote Starting Fresh! Recipes for Life and CURRENTS’ recipe correspondent, to whip up a deliciously healthy Thanksgiving dinner for us. One taste of her Sweet Potato Cheesy Mash, and you’ll discover that she succeeded and then some. However with Thanksgiving, food is only part of it. You have to serve this glorious meal in a beautiful setting to truly pull off a successful celebration. That’s where Starr Miller, president and principal designer of Cornelius’ Starr Miller Interior Design, Inc., comes in. She and her team created a beautiful environment in which to give thanks and simply have a good time with family and friends. Miller says that using one color in a centerpiece makes more of an impact. For this table setting, Miller asked Blumengarten in Cornelius to create four flower balls made of orange carnations.
How to Choose a Theme Instead of looking at setting your Thanksgiving table as a chore, think of it more as an art project, as well as an extension of your personality. Starr Miller starts with one item when she begins designing a table setting. “It can be a flower, a color or a napkin,” says Miller. When she found wishbone napkin holders at Pottery Barn, she had her muse for designing the table for this spread. She also chose to accent the color orange in the table’s centerpiece, but instead of going with predictable pumpkins, she asked Blumengarten in Cornelius to create four flower balls of orange carnations. “Using one color in your centerpiece makes more of an impact,” explains Miller, who also incorporated her grandmother’s white linen tablecloth, her own
silver and brass apple place card holders and Jill Dahan's bird appetizer plates into the mix. “When it’s a family affair, people tend not to be as elegant. They tend to think of it as potluck,” says Miller. “If you have a formal dining room, you should use it. This is a celebration. Bring out the good stuff and make everybody help you clean.” The main thing to ponder when developing a theme for your table is the mood you want to create. From there you can do anything from using burlap as a tablecloth to sheet music for place settings. “Always use something unexpected,” says Miller. “Your guests will think you went out of your way for them, which is how it should be.”
Starr Miller’s Centerpiece Dos and Don’ts 1. Don’t make your centerpiece too tall. You don’t wait to deter conversation. 2. C onsider what else will be on the table, especially food. 3. U se one color for your centerpiece so it will have more impact. 4. I like to use things from around the house for centerpieces. It can be anything from watches, compasses, books or boxes. 5. M ake it personal. Who knows? The centerpiece could end up being the topic of conversation. Silver brass apple place card holders add a simple, yet glitzy touch.

Make It Healthy Healthy is not the first word that comes to mind when thinking about Thanksgiving dinner, but with Jill Dahan’s help, it’s not impossible to cook a nutritious meal that will still have your guests asking for seconds. “The biggest thing is to incorporate as many real foods as you can,” says Dahan. “Use fresh ingredients that you can prepare ahead of time.” In other words, kick the jellied cranberry sauce can to the curb. In addition to fresh ingredients, Dahan is also a fan of minimal ingredients. “With minimal ingredients, there’s not a lot of shopping, you don’t spend as much money and the prep time is shorter,” she says. “You should also use things that are in season. Red cabbage is in season this time of year, as are honey crisp apples and brussel sprouts. The fresher the better.” In the following chart, Dahan offers healthy substitutes for Thanksgiving favorites.
We’ve all been there. We’re hosting a dinner and plan to have everything done by the time the guests arrive. However, when the doorbell rings, you’re still slicing and dicing. Here are some tips from Jill Dahan to put you ahead of the game. 1. Cook sweet potatoes ahead of time and peel them. This goes for other vegetables that need to be cooked and peeled as well. 2. Use minimal ingredient recipes so there’s less prep time. 3. Make cold salads the day before. The Sprout Salad (see recipe) tastes better if it’s had a day to sit in the fridge. 4. Use fresh ingredients that can be prepped ahead of time.

Turkey is fine; just make sure you buy reputable bird.

Go for a bread with five ingredients or less.
Pumpkin pie
Swap out white or brown sugar for coconut sugar.
Sweet tea
Instead of sweetening with sugar, sweeten with liquid coconut sugar or blueberries.
Sweet Potato Cheesy Mash Ingredients 3 large sweet potatoes 4 ounces (about 2/3 cup crumbled) mild goats cheese or soft herb cheese 1 tablespoon rosemary leaves 1 tablespoon extra virgin olive oil Instructions Bake sweet potatoes on a baking sheet at 375 F for about 45 minutes until soft. Remove and scoop out flesh, leaving the skins (save the skins to bake later with sprinkled with cheese on them for a yummy potato skin appetizer!) Beat the potatoes with a whisk or electric beaters until smooth. Add in finely chopped rosemary and crumbled cheese, and stir just until combined. Drizzle with olive oil and serve warm. This dish can be prepared up to a day in advance without the olive oil and then warmed. Serves four.

Green bean casserole
Because the turkey is the star of the show, place it on a pedestal.
Warm Green Beans with Walnuts and Manchego Cheese Ingredients 1 pound of green beans ½ of a sweet onion ½ cup of walnuts 2 tablespoons unfiltered apple cider vinegar 1 large clove of garlic 2 tablespoons of extra virgin olive oil 2 tablespoons of walnut oil 2 ounces of Manchego cheese Coconut oil to sauté onions Instructions Up to a day in advance, soak the walnuts in water for about two hours, drain and pat dry (soaking removes the bitter taste and improves nutritional bang.) Slice onion into paper-thin rings. Heat coconut oil until hot, and fry onions until lightly browned. Remove and drain on paper towel to crisp. Also shave
the cheese thinly with a vegetable peeler. Trim the tops and tails of beans. In a dry sauté pan, heat them covered on medium high heat for about five minutes until lightly done. Remove and add in oils, a crushed garlic clove and vinegar. Stir to coat and top with walnuts, cheese and crispy onions. Can be served warm or room at temperature. Serves four. Warm Green Beans with Walnuts and Manchego Cheese

Red Cabbage, Apple and Fig Tarts Ingredients ½ a head of red cabbage ½ of a sweet onion 4 tablespoons of balsamic vinegar 4 tablespoons of water 1 large clove of garlic 1 (2-inch knob) of fresh ginger 1 small apple 3 dried figs 2 ounces of soft goats or herb cheese Pecans and rosemary leaves to garnish
Sprout Slaw
Sprout Slaw Ingredients 1 pound of Brussel sprouts 1/3 sweet onion 2 ½ tablespoons of sherry vinegar 4 tablespoons of extra virgin olive oil 1 large clove of garlic ½ teaspoon of cumin seed 1/3 cup of pomegranate seeds Instructions Remove the outer leaves and stems of the sprouts. Slice the sprouts and onion finely on a mandolin or by hand. Toast the cumin seed in a dry pan until warmed. Remove and whisk in crushed clove of garlic, vinegar and olive oil. Pour onto sprouts and top with pomegranate seeds to serve. This is great made in advance. Serves four.
Ginger Macadamia Stuffing
Red Cabbage, Apple and Fig Tarts

Instructions Slice enough cabbage and onion finely on a mandolin or by hand to make four cups of cabbage and one cup of onion. Using a Dutch oven pan, if possible, cook onions covered on medium low heat for about five minutes. Grate apple and fig, and add to the onions along with the cabbage, water, vinegar, crushed garlic and one large tablespoon of finely grated ginger. Stir, cover and place in the oven at 350 F for about 25 minutes. Remove and stir the mixture, and then replace cover and bake for another 15 to 20 minutes until softened. While cabbage is cooking, separate five sheets of filo pastry and brush with a little olive oil between each sheet and stack. Cut into 3-inch squares, and place each square in an ungreased mini-muffin hole. Bake at 350 F for about five to seven minutes until lightly browned and set aside. Fill each filo tart with some of the cabbage mixture and dot with goat or herb cheese, and garnish with pecans and rosemary. Serve warm or at room temperature. Makes about 9 to 12 small tarts.

Ingredients 4 all-butter croissants or gluten-free Canyon bread 2 tablespoons extra virgin coconut oil 1 sweet onion 1 red pepper ½ pound mild chicken or veggie sausage 1 teaspoon of red pepper flakes 1 (2-inch) knob of fresh ginger ½ cup of parsley leaves 1 cup of macadamia nuts ½ cup low sodium chicken or vegetable broth if cooking in a baking dish Instructions Toast the croissants at 325 F for about 10 minutes until crunchy and lightly browned. Remove and crunch into small pieces. Chop the onion and red pepper finely. Crumble the sausage, and cook with the onion and pepper in coconut oil on medium heat covered about five to seven minutes until softened and lightly browned. Finely grate the ginger and crush the nuts into small pieces. Add the ginger, nuts, chili, parsley and croissant pieces into the sausage mixture and stir until combined. Place in a baking dish, sprinkle with enough stock to moisten lightly, cover, and bake at 375 F for 20 to 25 minutes. Uncover and bake an additional 10 to 15 minutes to crisp the top. This is also delicious stuffed in chicken, turkey or vegetables like eggplant or zucchini prior to cooking. Just add additional cooking time onto birds to adjust for them being stuffed. Serves four.

An Update on Starting Fresh! Recipes for Life In the October 2013 issue of CURRENTS, we wrote a story about Jill Dahan’s cookbook launch. A little more than a year later her cookbook titled Starting Fresh! Recipes for Life has sold almost 2,500 copies in the Lake Norman area. From the beginning, Dahan wanted to donate all of the proceeds from the book to Boston Children’s Hospital. Soon she will be donating approximately $30,000 to the hospital thanks to swift book sales. Lucky for us she hopes to write a sequel.

Pecan Pumpkin Pie with a Granola Crust Ingredients Crust 2 cups of granola (homemade or Purely Elizabeth) 2 tablespoons of extra virgin coconut oil Pecan Layer ¾ cup pecan pieces 1 large egg 1 ½ tablespoon of coconut nectar or 2 ½ tablespoons of maple syrup
Instructions Blend granola in a blender until fine like flour. Add in oil, and blend until it comes together. Press into a removeable 10-inch cake pan. For the pecan layer, mix the egg and sugar together, and then add in the pecans. Spread over the crust. Bake five minutes. While it’s baking, blend all the pumpkin filling ingredients until smooth in a blender. Remove pie, gently pour pumpkin over the pecan layer, and bake at 350 F for about 25 to 30 minutes until just set but wobbling a little in the center when touched. Remove, cool and chill until one hour before serving. Whipped cream, whipped coconut cream or ice cream can be served on top or on the side. Serves eight.
Pumpkin Filling 3 large eggs 1 can (15 ounces) pumpkin puree 1/3 cup of coconut sugar 2 teaspoons each of powdered cinnamon and ginger 2/3 cup unsweetened almond or dairy whole milk Note: If you love pecan pie you can double the 2 teaspoons vanilla bean paste pecan layer ingredients for an extra pecan punch.
Just add an additional five minutes baking time to the pecan layer to set before adding the pumpkin.

he heart of a home is the kitchen — where cooks share cherished recipes, and friends and family gather for fresh, flavorful food. Mel Funk and Brad Blumer turned to these vital elements to give life to Fresh Chef Kitchen in Cornelius, as the two longtime collaborators wanted to satisfy the public’s hunger for fast and fresh food. “If you look around, everybody is in a hurry,” Funk says. “There’s no doubt about that. People’s expectation of food anymore is to walk up, place an order, and it’s sitting in front of you [immediately]. The only people who seemed to be able to produce that are frozen, fast

food, same old cookie cutter type places.” Funk and Blumer believed they could deliver unique fresh food quickly, drawing upon their decades of restaurant experience, including leadership stints at 131 Main, Steak and Ale, Lone Star Steakhouse and Applebee’s.

Different formats

Initially they planned to convert the space at The Shops at the Fresh Market in Cornelius into strictly a walk-up spot. As they opened and began to receive guest feedback, they realized they needed to tweak the concept, Blumer explains. “The guests wanted to sit down and be waited on when they placed their order,” he says. “We’re going to give the guests what they want. When they said, ‘Can I sit down and get my order?’ we knew we needed to do this.” The restaurant can seat 42 inside and a dozen at tables on the sidewalk. “This whole concept is based around the idea that if you want to walk in here in a hurry — we got you,” Funk says. “But if you’re not, sit down and relax.” Funk and Blumer have designed the core menu around main items that can be presented in different formats. Meats include beef tenderloin, grilled or smoked salmon, Hawaiian or blackened chicken, teriyaki beef, and shrimp. Sides range from kale salad to fries to cilantro rice. Another popular side is burgundy mushrooms, using a recipe Funk has been making for more than three decades. “We’re doing marinades, bold flavors that are going to be paired with a certain type of cheese, a fresh dressing, and we’re going to deliver that either as a center of the plate entrée, a wrap, a pasta or a salad.” They will make any item in a child’s portion, except the wraps. They will also create a featured appetizer,

soup, entrée and dessert each day. “That featured dessert will be a really, really good dessert and there’s only going to be one of them, and when it’s gone, it’s gone,” Funk says. “We’ll have a featured soup, and there will only be one of those a day, and it will be delicious. When it’s gone, it’s gone.”
Three main areas Fresh Chef Kitchen offers beer and an extensive wine list, featuring wines by the glass for as little as $5 and bottles costing up to $85. They do not intend to build up a bar trade, however, seeing the beverages as part of the dining experience. According to Blumer, the outcome of the venture will hinge on three main areas of emphasis. “What will create our success is going to be consistency,
food quality and service,” he says. “The guests have to know what they can expect every single time, and get it.” Both men have cooked for most of their lives. For Funk, his culinary experiences began as a child in Roanoke, Virginia. “It came from my dad,” he says. “My father was a foodie. I mean, he was a guitarplayin’, barbecue cookin’ guy — the whole wood grill with the barbecue chicken on top of it — I’m talking about the one that’s in the half barrels. I remember being 6 years old, up on a stool trying to help him cook chicken. Strangely enough, my mother was a horrible cook — terrible.” Like Funk, Blumer learned to cook at home. He grew up with three brothers on a Pennsylvania farm. “My mother was a great cook, and my dad was a butcher,” he says. “We always raised our own food, raised and butchered animals. We had a garden. Fresh vegetables were something I was always used to.” For these partners, Fresh Chef Kitchen feels like coming home. here's just something about dudes and collecting things. Tafton Hensley was in fourth grade when he got his first pair of Air Jordans. They were a gift from the Easter Bunny. Having outgrown Thomas trains and Gogo’s, not to mention a fairly remarkable die cast car collection, he was looking for something new. The Air Jordan 7’s came at the perfect time. They started him down the path of sneaker collecting. “I hadn’t really been into anything much except trains, and that was when I was little, so it [shoe collecting] was kind of new to me. That first pair was kind of cool,” recalls Hensley, who is now an eighth grader at Mt. Mourne IB. “And when I find something that’s new to me, I never stop thinking about it.” In his spare time, Hensley researches shoes, draws new designs and talks to other sneakerheads about what’s either being released, or, in the case of retro shoes, re-released. He follows the hype on sneakerhead sites and attends regional events where collectors get together to trade. It’s a passion he hopes might lead to a profession in both sports and design. Former NFL kicker, Olindo Mare, a car collector and co-owner of Klassic Rides in Denver, traces his love of the automobile back to his early years, too. “For me, I’ve been into anything with a motor since I was a little kid,” says Mare, who lives in Mooresville. “It could have been a car, a boat or even a lawnmower — it was all fascinating and it didn’t matter — just as long as it had a motor. That’s how I got started. “Then, as I grew, it became all about cars,” he adds. “I learned very early that there was a difference between cars you liked and those that you could afford, so I started learning as much about all the different cars out there, who owned them and how much they cost so when I got the chance, I could start with cars of my own.” Mare’s chance came when he was drafted to play professionally. “When I made it into the league and could
actually afford some of these cars,” Mare says, “that’s when I started to really get passionate about it. Every day, seeing the guys in the parking lot and what they drove, it was like our own little car show.” Passion drives collectors like Hensley and Mare, no matter if the objects of their fascination are shoes, watches, bobble heads, mini-bats, hats, golf clubs, clocks, sports posters, cars, boats, books, electronics, sports cards, coins, movie posters or, well, just about anything else under the sun. Collecting is a personal blend of quality and quantity, and no single formula satisfies every collector. But once a collector gets started, it’s difficult to stop. That’s where Kevin Mahl and Jamie Rolowicz enter the mix. As co-owners of Hyde Park Storage Suites, the upscale man cave units in both Cornelius and Daytona Beach, the pair provide spaces for collectors and enthusiasts to share, display, tinker and enjoy their passions. “Hyde Park has evolved over the years as something more than storage,” Mahl says. “It has become a place to show off your chrome in a sense. Now keeping up with the Joneses’ is definitely in vogue. It is a matter of style, and it is a chance for someone to put their own signature on their space.” As nearly as he can figure, Tafton Hensley now has about 20 to 25 pairs of sneakers, the overwhelming majority being Air Jordans. And he’s good with that — for now. “That’s a good number for me right now, but when I get older, and get a little bit of money, I’ll probably get more,” he explains, adding, “I’ve seen videos of guys with over 6,000 pairs in their house, but that’s not cool. If I have a pair, I’m going to wear them. That’s part of the joy of having shoes.” And as for Olindo Mare, while each and every one of the nearly

Habitat helped the Maldarelli family make a new start
T
here’s no place like home, and thanks to dedicated Our Towns Habitat for Humanity volunteers and partners, the Maldarelli family soon will have a home to call their own. Patrick Maldarelli, a police officer for the Cornelius Police Department, began working with Habitat long before breaking ground on his home in August. He volunteered to build homes in the Lake Norman area, even referring families to the organization. “I thought Habitat was a great idea for providing housing for folks in need and really transforming communities,” he says. “Never did I think I would be in one of those houses myself.”
Falling on hard times The 1,100-square-foot home in the Smithfield community will offer Patrick; his wife, Carolina; and their three children a fresh start. The couple moved from Florida in 2007 and bought a home in Statesville, where housing was more affordable. Patrick commuted to Cornelius for work. Soon after having their second child, the recession hit, bringing new financial challenges. “Money was tight, and gas prices started to increase,” remembers Patrick. “I considered getting out of law enforcement because I couldn’t make ends meet.” They put their house on the market just as the housing market tanked and home values depreciated. Like many Americans, they were facing foreclosure. Fortunately, they sold their Statesville home on a short sale and moved into a Cornelius apartment, where police officers receive discounted rent.

A hand up, not a hand out While researching Habitat, the Marine veteran discovered that his family could qualify for a home. Habitat serves families with income between 35 to 60 percent of the area median income, depending on the family size. Single mothers are the biggest family demographic Habitat serves. Patrick says there’s a misconception that Habitat homes are low-income housing or that anyone can qualify. “It’s not a ‘give me’ home. It’s a hand up, not a hand out,” he says. The Maldarellis had to eliminate some debt before construction could begin. They sold one of their two cars to pay off credit card debt. In addition, Habitat homeowners must meet certain criteria, including proof of stable income and a national criminal background check. They’re also required to attend eight homeownership classes, covering topics like budgeting money, homeowners insurance, fire safety, maintaining a home and community relations. Patrick felt compelled to live in the community he serves. He turned down

a Habitat home site in Huntersville for the Smithfield community in Cornelius. The historic and predominantly AfricanAmerican neighborhood has been the focus of revitalization efforts in recent years. Patrick views community building as a critical component of his job. “The way you treat people goes a long way in how they treat you. Communication is important, too. We want to establish a rapport with the community,” he says. Many of his future Smithfield neighbors are pleased to have a police officer living in the community and believe the visible presence of a patrol car will deter crime and make the neighborhood safer.
How it works
Patrick Maldarelli looks at communication as an important part of his job as a Cornelius police officer. By living in the Smithfield community, he hopes to establish a positive rapport with his neighbors.
Habitat homes are sold through 0 percent interest, no profit mortgages. These mortgages are roughly $375 per month, including taxes and insurance. Homes also meet the latest energyefficient standards to keep utility costs low. “We prepare people upfront for home ownership, so the majority of our homeowners can build personal equity that will lead them down a productive, self-sufficient life in their new homes,” says Our Towns Habitat for Humanity Board President Bob Dunlap. In addition, homeowners must accumulate 400 hours of sweat equity, meaning they work on their home and at other home sites, as well as in Habitat Restores in Cornelius and Mooresville. Children earn hours by making good grades at school. Manny Rosado Jr., construction manager at Our Towns Habitat for Humanity, says sweat equity hours are key. “When you just give something to someone, you are not empowering them in a positive way. We want to empower people. When you also work on your neighbor’s house, you’re cultivating community,” he says. Many homeowners, like Patrick, work on homes on Saturdays or during the week after working a full-time job. Currently about 27 homeowners are in various stages of the home process. Davidson United Methodist Church is the primary building partner for the Maldarellis’ home, providing funding and volunteers. “It’s truly a ministry of interaction with the volunteers out there,” says Patrick. “These folks could be doing anything with their time, and they are out there helping.” THE SCOOP For more information regarding Our Towns Habitat for Humanity, visit www.ourtownshabitat.org.

Portugal’s Secret These little-known excellent wines serve as an outstanding value
A
sk someone to name European wines and they’d come up with France, Italy and maybe Spain. Portugal wouldn’t make it onto anyone’s “big player” list. Probably the reason is because Portugal is more known for its fortified wine, Port. For years, regular, table wines have been overshadowed by their stronger big brothers. All of that is changing now. Port has
a little bit of a stuffy image, as it’s viewed as the kind of thing your grandfather would sip on after Thanksgiving dinner. The demand for Port is not as robust as it once was, and Portuguese winemakers are turning to table wines to fill the void. While they’ve been making wines for hundreds of years, they’re just getting started on today’s international stage. That’s got

Seeing red The obvious place to go searching for red wine is in the Douro region, another DOC a little bit further south from Vinho Verde. Douro is where Port comes from. Port is made by adding a neutral grape spirit to wine as it is fermenting. The added alcohol stops fermentation, the end product being Port. So, it’s a natural step to forego the fortifying process and produce wine as an end product rather than Port. The climate here is cool, not surprising as it’s close to the Atlantic Ocean. Coolness gets reflected in the wines. They are crisp and fresh. That doesn’t mean they don’t have complexity. There are all kinds of things going on. They tend to emphasize fruit — dark fruits like cherries and blackberries — and there’s a nice hint of chocolate. Crisp wines with a touch of darkness. Nice. Earlier this year my wife, Mary Ellen, and I did some firsthand exploring of Portuguese wine. It was a sunny Sunday
in Lisbon. We sat down for lunch at a restaurant overlooking the bay in the Tejo River, a perfect spot. We each had a glass of local white wine with our appetizers but decided to go for some red experiences along with our main courses. It was fun simply reading the wine list, as there was a lot to read. We decided to stay local, or remotely local. There’s an area just east of Portugal’s capital that is really known for its wine. The area is Alentejano. Alentejano is home to a DOC wine called Alentejo and a regional wine called, what else, Alentejano. We opted for the regional wine, as we wanted to see how good a regional wine could be. Alentejano is warmer than Douro, it’s further south and further away from the Atlantic Ocean. So, we were expecting a deeper, more concentrated wine. We were not disappointed. The wine was dense with lots of tannins. It had a smoky flavor that went along with its fruit and a nice aroma of undergrowth. This was an earthy wine, combing sturdiness and softness — right up our alley. The Douro wine I mentioned before is made predominantly from Portugal’s most widely used grape, Touriga Nacional. This grape is also in the Alentejano but blended with Alicante Bouschet. Different grapes, different climates, different wines. That’s what keeps life interesting. With these three wines we’ve only scratched the surface of Portugal. There are so many more regions and many more wines. The really good news? It’s not difficult to find Portuguese wines in the United States. And they are reasonably priced. As I said at the beginning, Portugal probably will never make it onto the “big player” list. But that, by no means, diminishes the wines, as we found out on that sunny Sunday in Lisbon. Try some yourself. You might find that it’s the beginning of a beautiful friendship. Enjoy

to be good news for us. In any market, lack of notoriety usually translates into lower prices, and it’s no different for wine. So, let’s take a brief tour of Portugal and discover a few tasty nuggets that might make their way into our wine glasses. But first, let’s look at a Portuguese wine label. There are a couple of things you will see on a label that identify the wine as a good target for your taste buds. The designation, Denominação de Origem Controlada (DOC), means that the wine has been produced under strict, government-controlled regulations. The regulations cover things like; where grapes are grown, what type of grapes are used, maximum crop yields and minimum aging periods. Another designation is Vinho Regional. These are similar regulations but not quite so strict, and the area where grapes may be grown is much wider. There may be more variation in the wines as you taste them.
A good place to start exploring Portuguese wine is on the misty and moist Costa Verde, located on the coast in the northern part of the country. This is home to the DOC, Vinho Verde. A literal translation of the name would be “Green Wine,” but what it really means is “Young Wine.” Not by any stretch of the imagination is Vinho Verde a deep and complex wine — a wine to contemplate or spend a lot of time with. Its beauty lies in its simplicity. Everything about the wine speaks of lightness. It’s a wine marked by a characteristic high acidity, and it oozes a freshness of flavor. There’s tartness and crispness, lots of citrus flavors, and it has a nice floral hint in the background. It has a lower alcohol level than you would normally find. This has to be the ultimate aperitif wine. And it certainly meets the price profile I talked about before. Vinho Verde has to be the best wine bargain in the world. You can put a bottle on your table for as little as $5 — although most bottles are in the $8- to $10-dollar range. I’m constantly in awe that anyone can put a bottle of wine on the shelf for that price. After all, you can pay that much for a bottle of water. A glass of water or a glass of Vinho Verde? I know which one I’d prefer cozying up to.

f you ever caught Trick My Truck on Country Music Television (CMT), Speed’s American Trucker, Travel Channel’s Outrageous Rigs or Velocity by Discovery’s Outcast Kustoms, then you’ll most likely recognize the name Kelvin Locklear. Raised in a family of truckers, he is known in the industry as the guy who will build or customize almost any type of big rig. Along with his wife, April, Kelvin is the bearded face of Mooresville’s Outcast Kustoms. Sharing space with K&L Collision, their collision repair shop for RVs and trailers, the husband and wife team, as part of a now-growing staff of 11, dream up and build big rig conversions that include school buses, trailers, monster trucks, RVs, side trucks, haulers and the occassional antique fire truck. Their work is recognizable, flashy, show-worthy and looks all-around spectacular rolling up and down America’s highways.
Trucker roots Both Kelvin and April’s backgrounds in trucking date to their early years. Kelvin’s parents owned a trucking company and spent countless hours either coordinating routes and linking trucks with cargoes or being on the road themselves. April’s dad drove

When Kelvin and April Locklear started Outcast Kustoms, they mainly did truck bumpers. Soon they began doing visors, grills and anything else you can imagine. Kelvin calls it a "toy store for truckers."

big rigs since she was 4 years old. In 1999, when Kelvin’s dad sold April’s dad a trailer, their roads overlapped. April’s dad made the introduction in, coincidentally, the month of April, and by October they were married. Understanding the personal and professional demands of being on the road and working roundthe-clock shifts, neither Kelvin nor April wanted to have a trucking company or drive trucks full time, but they wanted to stay in the trucking industry. “We decided to open what Kelvin calls a toy store for truckers instead,” explains April. “We started out simply doing truck bumpers, but then it grew into visors, grills and almost everything under the sun.” Their reputation grew, and the original 22,000-square-foot shop in Florence, South Carolina soon became a mandatory stop for truckers heading up and down the East Coast along I-95 from Maine to Florida, as well as along I-20 carrying cargoes to and from seaports along the Mid-Atlantic. In their early years especially, NASCAR haulers parked and played when the Sprint Cup made stops in nearby Darlington.
Expanding north The Locklears started their business in Florence, South Carolina before moving it to Mooresville three years ago.
Three years ago, the Locklears made the decision to expand. After carefully exploring opportunities in Charlotte and surrounding communities from Gastonia to Fort Mill and Concord, they found a 48,000-square-foot home in Continued on page 64

Lakeside Park alongside some of the motorsports industry’s home shops. From the day they opened their doors, their work has never stopped. “Having a home here is more than we imagined,” Kelvin explains. “While all of our products [in motorsports] may be a little different, our mindsets are the same and being neighbors with minds who basically take a pile of aluminum and, in six weeks, transform it into something that races, is great. We all share the same appreciation for creating something from nothing, and we all use our skill and abilities on every project or to reach a goal.” The Locklears agree that a bonus of the new location is welcoming both visitors as well as a few motorsports locals to the shop. “It’s cool to have a crew chief, or a guy like Clint Boyer, who grew up in a family that owns heavy duty wreckers, stop in to see what we are working on and customizing,” says Kelvin. And on any given afternoon after school, one or more of the Locklear’s three sons can be spotted on the grounds. Jordan is a Bandolero racer, Charlie is a Boy Scout and Kameron stays busy around the shop. Then there’s Diesel the dog, a shop fixture and true entertainer in a rugged sense. Kelvin and April have now been customizing big rigs for more than a decade, and the variety of their work continues to expand. If you happen to be at a Lake Norman holiday or festival event or parade, keep your eyes peeled for Outcast Kustom’s Fighting Cancer Fire Truck. Sure the antique truck still has working fire controls with a vintage look, and it stands out painted pink, but it’s the elevated seating areas, the booming sound system and the T-shirt launcher that really make it stand out in a crowd.

The three-time Grammy-winning contemporary sextet Eighth Blackbird performs on November 21 at Davidson College.
On Friday, November 21, the three-time Grammywinning contemporary music sextet Eighth Blackbird performs at Davidson College as part of The C. Shaw and Nancy K. Smith Artist Series. The Chicago-based group performs its production titled Electrically Charged, as it puts a twist on the idea of music played by classical instruments and showcases the newest technologies in the service of music-making. The name “eighth blackbird” derives from the eighth stanza of Wallace Stevens’s evocative, aphoristic poem, Thirteen Ways of Looking at a Blackbird (1917). Comprised of four foodies, three beer snobs and one exercise junkie, these “super musicians,” as they’ve been described by the Los Angeles Times, entertain audiences around the world. Legendary NASCAR championship crew chief and team owner Ray Evernham hosts AmeriCarna LIVE, a celebration of car culture, on Saturday, November 29. This is the second year of the car show that Evernham created to unite two of his passions — his support of Davidson’s IGNITE Community Center that he founded in honor of his son (Ray J), and his television show AmeriCarna. (His TV show airs on Velocity, a division of Discovery Communications, Inc.) An avid car collector and long-time Lake Norman-area resident, Evernham enjoys sharing his enthusiasm for automobiles at AmeriCarna LIVE. Auto enthusiasts will have the opportunity to display their cars alongside unique rides that belong to the NASCAR community’s top stars and other celebrities. The AmeriCarna LIVE car show will benefit IGNITE, a community center in Davidson for young adults with high functioning autism (HFA) or Asperger’s Syndrome (AS). The 2014 Rural Hill Amazing Maize Maze (Through November 2) The 2014 Amazing Maize Maze is honoring agriculture with its farm theme. The Maze has been cut to include a barn, windmill, and tractor within the labyrinth. The Maze is an imaginative use of a cornfield, so comfortable shoes are suggested. Water stations are onsite, and visitors are permitted to bring in their own food and beverages. Vendors will be onsite with snacks, ice cream, soft drinks and water available for purchase. A Helping of Hope A morning at Angels & Sparrows Soup Kitchen offers food and perspective
I
like surprises, and that’s just what I got when I pulled into the parking lot for Angels & Sparrows Soup Kitchen in Huntersville. Instead of a dingy fellowship hall filled with sorrow, I found a delightful cottage-like building beautifully landscaped and full of hope. Angels & Sparrows’ uplifting atmosphere reflects the positive demeanor of its executive director and founder, Sandy Tilley. When I arrive to volunteer, Tilley is in the kitchen preparing the day’s lunch with a handful of other volunteers. On the menu — enchiladas with refried beans and corn, plus an assortment of desserts. Wearing a brown Angels & Sparrows apron over a bright orange Angels & Sparrows T-shirt, Tilley scurries around making sure everything is just right. As she looks at a tray of corn, she recommends adding more butter. When the Huntersville resident sees me, she takes an out-of-the ordinary break to fill me in on the operation. “I realized I wanted to do this in 2005,” explains Tilley, who worked in Charlotte as a disability leave specialist at Royal Insurance Company of America before retiring. “I would see homeless people while I commuted to Charlotte, and I would wonder where their family was. I decided that when I retired I was going to do something about it.” After jumping too many hurdles to count, Tilley opened Angels & Sparrows in October 2008. “God has just showered us with stuff,” says the 72-yearold. “We are entirely community based.”

Angels & Sparrows serves 160 meals daily Monday through Friday year-round, including the holidays that fall on Monday through Friday. During the summer, the soup kitchen provides 11,000 bag lunches to children who otherwise wouldn’t have anything to eat. The soup kitchen just hired its first paid employee this past fall. After I chat with Tilley, I tie my apron and begin helping. First, I butter the said corn; then I wash a few dishes to keep the kitchen in order. Next, I help scoop dessert onto small paper plates. Tilley eyes what I’m doing, and tells me not to serve the burnt part of the custard pie. Minutes later guests start trickling in, and Tilley welcomes them by hinting at the day’s menu. “Welcome to Mexico,” she announces. It’s showtime. Instead of a mundane line where food is slopped on a tray and passed on, Angels & Sparrows operates like a quaint café. The volunteer wait staff (a group from Asbury United Methodist Church in Huntersville on the day I was there) begins working like a mission machine. Ladies go up to the guests immediately to see if they’d prefer water or tea. A lady named Kathy calls back to the kitchen with the number of plates needed, and a server picks up a tray and brings it to the guests. Once a guest has finished their meal, a member of the wait staff walks over with a dessert tray to see what they might like — Oreo Pie is a favorite. Most days The Fresh Market (a big supporter of the soup kitchen) sends excess flowers and other items from its Cornelius location. Tilley walks around giving guests bouquets of flowers to take home; just another way she brightens their day. I try to blend into the wait staff, as I fill teas, deliver plates, offer desserts and make sure everyone has what they need. Guests range from a two-year-old with his mom to hardy workmen to elderly folks with walkers — everyone simply looking for a good meal with a side of kindness. After completing my shift, I feel good because I did something important. I jumped out of my daily routine to make a small difference in someone’s life. Although I didn’t eat anything while I worked at Angels & Sparrows, I came home full of hope.
