Farmers’ Market Recipe VEGETARIAN CHILI
Fall calls for warm, stick-to-the-ribs cooking, and this recipe delivers a meatless chili that satisfies. Farmers’ Markets are still offering beautiful peppers, and your community garden may still have basil and parsley through the first frost, which usually arrives in our area in mid-October. INGREDIENTS 1 tablespoon olive oil 1 stalk celery, chopped 2 medium onions, chopped 1 green bell pepper, chopped 2 cups canned tomatoes, with juice 1 (15 ounce) can kidney beans, in water (you may use 2 cans, depending on consistency you wish to achieve) 1 teaspoon black pepper 1 teaspoon minced basil 1 teaspoon minced oregano 1⁄2-1 tablespoon chili powder 1⁄4 teaspoon cumin 1 bay leaf 1 -2 tablespoon cider vinegar 1⁄2-1 cup cashews 1⁄4 cup parsley, chopped DIRECTIONS Chop the celery, onions, and bell pepper. Sauté them in olive oil along with the spices until tender, about 10 minutes. Add tomatoes(with juice) and beans(with juices.)Cover and simmer for 5-10 minutes, until pleased with thickness. Add vinegar and cashews. Taste and adjust seasonings, remove bay leaf, and serve. Enjoy! Tip: For a thicker chili, mash some of the beans before adding to the pot.

NORTH CREEKSIDE, WILLOW PARK LEAD THE WAY North Creekside and Willow Park are two of the first apartment communities to take part in Fayetteville’s multifamily recycling pilot program. Recycling is still not widely available in apartments in Fayetteville - today only six apartment communities are participating. With your help, tons of plastic, cardboard, steel and aluminum have been saved from the landfill since the program started. Katherine collects her Little Green Bin at the Willow Park The City of Fayetteville has set recycling kickoff event. ambitious goals for recycling - by 2025, the city hopes to divert 80% of waste from landfills. With numerous apartments in town, multifamily recycling is a big part of that goal. If you would like to help, the city is recruiting Recycling Champions who will promote recycling within apartment communities - if you’d like to know more, contact your manager.
