ell, it’s been a busy few months since the last edition of Suffolk On My Mind hit the shelves. It seems that the team has been out on the road more than we’ve been at our desks, whether visiting the delightful Suffolk market town of Newmarket (p13), finding out more about our local food provenance at three of our county’s leading farm shops (p20), or hitting Bury St Edmunds to learn about its bustling fashion scene (p38). ragon boat racing is an ancient Chinese tradition and the fastest growing water activity in Britain today. Up to 10 people paddle each boat with a drummer at the front beating time, and the helm at the tail steering a straight course. No previous experience is required, just plenty of team spirit! The 11th Dragon Boat Festival is open to everyone, and over 40 teams are expected to battle it out over the 200m race course, watched by several thousand spectators. ROLL THE DICE AND FALL IN LOVE AGAIN! Bury St Edmunds Amateur Operatic and Dramatic Society is ready to take the Theatre Royal stage by storm with its latest production, Guys and Dolls.
C
onsidered by many to be the perfect musical comedy, Guys and Dolls celebrates Broadway’s golden era with one of the greatest scores ever written by the legendary Frank Loesser, coupled with the masterfully witty book and lyrics by Jo Swerling and Abe Burrows, and the glorious Damon Runyon’s comic book world of 1940’s Times Square in New York City. Bustling with gamblers, gangsters and sassy showgirls, Guys and Dolls introduces
audiences to a cast of characters who have become legends in musical theatre. Nathan Detroit, played by Liam Corbett, needs some serious dough to keep his “oldest established permanent floating crap game” going. He’s also got his hands full with his marriage-minded girlfriend Adelaide, performed by Rachelle Curtis. But, when Nathan makes a bet with high-roller Sky Masterson (Will Cahill), his problems appear to be solved. Based on

Damon Runyon’s famous tales of small-time hoods and showgirls, Guys and Dolls is filled with some of the most wonderful showtunes ever, including Luck Be a Lady, I’ve Never Been in Love Before, and the irrepressible anthem Sit Down, You’re Rockin’ the Boat. The original production of Guys and Dolls received what might be the most unanimously ecstatic reviews in Broadway history and won five Tony Awards, including Best Musical. The 1992 revival received four more Tonys,
including Best Revival. In 1951, the year after it opened, it received a record-breaking $1 million for the motion picture rights, and was made into a beloved film starring Marlon Brando and Frank Sinatra. Simon Bowen, director, said, “It’s everything I love in musical theatre. Song for song, scene for scene, moment for moment, it’s a perfect example of what a musical can be. It’s great to
be back working with the talented Bury St Edmunds Amateur Operatic and Dramatic Society, and to have the chance to share with our audiences this bona fide classic is a rare treat.” A cast of 31 will perform this show-stopper, having been rehearsing since December. Expertly led by Simon Bowen, Heather Couch (choreographer), and Simon Pearce (musical director), the run up to the show has been great fun. With beautiful costumes,
top-notch singing and stunning dancing, the show is selling out fast and certainly isn’t one audiences are going to want to miss, putting a spring in your step and a smile on your face. BEN ON CASTAWAY 2000 “It is 15 years since I was marooned on an island in the Outer Hebrides for a pioneering TV show called Castaway. It was a social experiment, often described as a reality show, but actually it was far more than that. The idea was very simple – 36 men, women and children from all backgrounds were marooned on an island. We were there for a year and filmed the majority of it ourselves. There were no film crews. It was just us and the various livestock that we had to rear. It was a pretty extraordinary year.” BEN ON LIFE “My life has taken a very strange and unusual course. I like to think about life as a giant ocean journey. If you imagine when we are born, we are all on that beach with the world ahead of us. We can all take the easy option. We could get in a speed boat and motor towards our target. Some people like to take a slightly tougher approach; they will go on a sailing boat. And then you can make the decision what size sail you go with. Do you go with the prevailing winds and currents, or do you go the wrong way round? Do you circumnavigate the world? Do you head for one particular destination? Or, you can take the really brave option and get on a rickety old raft. Rudderless. No steerage. No sail. No GPS. And you can go with the flow. You can go with hopeful abandon, hopeful opportunity to see where it takes you. I like to think that’s what’s happened to me over the course of my life.” BEN ON FACING HIS FEARS “I think the scariest moment of my life happened a few years ago. I got a call from the BBC, asking me if I’d like to make a show about crocodiles in Africa. I thought this would be a very nice documentary from the safety of a boat. It was only after agreeing to this that a little bit more was explained to me. I would be going out to Botswana and getting into the water with no protection – just a wet suit, my scuba gear, and a very small metal stick, which,
quite frankly, if the crocodile got hold of, it would use as a toothpick. We would go down the river and when we saw a crocodile, we had to get into the water before it saw us. As long as you could get as quickly as possible to the bottom of the water, you were safe. And then you could creep up on the crocodile and it wouldn’t touch you. As soon as you see that 4m crocodile slinking into the water, you tumble in backwards through the water until you hit the bottom. If you hit the crocodile, it will attack you. You anchor yourself and have a little earpiece in. All I heard in my ear was, ‘Crocodile, 10 feet to your left’. Slowly, you crawl, a bit like Gollum, using a stick to stop yourself being dragged along. And you see a little white glow. The closer you get, you realise that the white glow is the teeth. You get closer and closer until you are about two feet away from a wild Nile crocodile, one of the most deadly predators in Africa. It was one of the most extraordinary experiences of my life. It was all going brilliantly well until we messed up one of the entries and the cameraman was a bit too late to deploy into the water. It meant by the time he got in, the crocodile was watching him. It watched him land and it snuck up behind him. He looked next to him, saw this enormous crocodile, and he made a big flaying action, which instigated the crocodile to attack. It opened its mouth and went for
him. He stuck the camera in its mouth and the crocodile snacked on it. We all came up very, very quickly and got back on the boat. That moment the following day when we had to get back into the water was the scariest experience of my life, but I have always been someone who has lived to confront their fears.” BEN ON HIS LATEST TV SHOW “One of the questions everyone always asks me is what I am doing now. What’s next? Well, there’s my show on Channel 5 called New Lives In The Wild. The idea is it comes full circle from when I was living on that island in the Outer Hebrides all those years ago. I go to visit people who have given up civilised urban areas. They have gone to live a simpler, wilder life, off the grid, so they have cut themselves off from electricity, telephones, internet, and the monetary system. This series has taken me to some pretty extraordinary places. I go to live with them for about two weeks, and it’s a fascinating insight into the sacrifices they’ve made. I think what’s really interesting is to take a stereotype we have and turn it on its head.” BEN ON THE UNEXPECTED “Every so often, we are confronted with an opportunity, an experience, a scenario that you can never anticipate, and you can never imagine how you came to that moment. For New Lives In The Wild, I was confronted with castrating a goat – with my mouth! I had my legs crossed for weeks afterwards, and brushed my teeth many, many times.”

1.You have trouble hearing people talking on the telephone Most phones come with a volume control setting, so you might not have trouble hearing your friend or family. However, if you need it at max volume, chances are you may have some level of hearing loss. 2. The family complains that the TV is too loud When your kids complain that the TV is too loud, this is probably the best sign of a hearing problem. If you think this might only be an issue for older generations, think again. The fact is, hearing professionals are seeing younger and younger patients who have experienced some degree of hearing loss due to long-term exposure to music.

3.You strain to hear conversations Ever have a headache at the end of the day? Feel completely exhausted after a simple day of conversing with friends or family? Chances are this fatigue is caused by constant straining to follow the conversation. Having to focus all day to clearly hear conversation is exhausting work and can lead to headaches, fatigue and exhaustion. 4.You have trouble hearing in noisy environments You’re out with some friends at a restaurant for dinner and it’s noisy. All of that background noise makes it difficult to hear conversation at your table. People with hearing loss often have problems masking out background noise.
5.You say ‘Pardon?’ a lot If “Pardon?” is the most commonly used word in your vocabulary, you aren’t getting the sound signals you need to process sound correctly. 6. People don’t speak clearly Sounds seem muffled, or when people are talking it sounds like they’re mumbling. This is because often the high frequencies (those that make up the consonants) are the first to be affected by sensorineural hearing loss, and it’s these that give clarity to speech. 7.You misunderstand what people say Misunderstanding people can be embarrassing, but it doesn’t have to be that way. Hearing aids can enable you to understand conversation and avoid the awkwardness of mishearing important directions, the punch line to a joke or the lyrics to your favourite song. 8.You have trouble hearing children and women Hearing loss within a specific frequency is very common, and with age, you are more likely to experience hearing loss within the higher frequencies. Since women and children speak at higher pitches or frequencies, it’s often more difficult to hear what your granddaughter or wife is saying to you. ewmarket is both the largest racehorse breeding centre and the largest racehorse training centre in Britain, with over 50 horse training stables. A poem lovely as a tree.” Bit of a poetic opening you’re probably thinking, but we all know what he was on about. Joyce Kilmer, in case you were wondering. We all love looking at trees. As kids, we climbed them, fell out of them, and watched them grow. They anchor our landscape and give us a focal point, literally in a photographer’s case. I’m constantly on the look-out for a lone majestic tree. One international photographic competition even has a lone tree category. It’s a bit tongue-in-cheek, so used are they to photographers cliché’s. Nevertheless, it has a lot of entrants.

Trees in all shapes and sizes never fail to delight. It’s their infinite variety, their slow, deliberate procession through the year; stark and austere in winter, fresh leafed and optimistic in the spring.

I’m always checking the weather forecast at the start of the year for a hoar frost. A really bitter sunlit frost is absolute magic. Unfortunately, our county is thrifty when it comes to handing out these bejewelled moments. The county is also a bit reluctant to show off its best trees; you have to go looking for them. You aren’t going to find many amongst the hedgerows; they are often blasted and broken down by the wind. You have to scour the great country parks, hidden copses and quiet woods to find photogenic gems. Even then, you need to be careful not to be confounded by telegraph poles, power cables and the like that always seem drawn to any remotely photographic landscape scene. So, you have to work with what you’re given. This is where fog and mist can be a real boon, isolating your trees from distracting backgrounds and helping the viewer to appreciate the marvellous intricate structure of bough and branch.
Rivers and waterways are another place that help trees look their best. An abundance of water on windless days can add symmetry to any scene. I remember ‘Tree On The River Bure’ was taken one frosty morning near Aylsham in Norfolk. I could see the tree silhouetted against a wonderful sky from quite a distance away. In landscape photography, you often struggle to find a composition. This one positively shouted, “Here I am!” I’m often struck in exhibitions by how much people study the details in trees. One lady looking at the photograph of ‘The Lion’s Mouth’ found a bird nestled on one of the branches. I’d gone through the image very carefully when I printed it, and had not seen anything at all. We ran it as a bit of a competition during the exhibition. It was a good job I didn’t offer any cash prizes; visitors were too eagle-eyed. Good luck if you can find it on this page!

s a chef, I’m always looking for ways to add flavour to my food. When diners come out to eat, they want to sit down to a meal they won’t forget – it may be a special celebration or the one night of the week when they don’t have to do the washing-up! And today’s restauranteurs appreciate good cooking and quality ingredients, so we chefs have high standards to meet. That’s why I opt for the finest locally sourced ingredients where possible, and when it comes to pork, The Fruit Pig Company certainly delivers on taste.

Pork is one of those meats that’s just bursting with flavour – it has a higher fat content due to the intramuscular fats, and, in cooking terms, fat is flavour. Rare breed free range pork is extraspecial because the pigs are left to roam in the fields and grow naturally to almost twice the age of commercial breeds, free to express their normal behaviour patterns. And a happy pig means tasty meat! So, how did Matt first get into pig farming? He said, “I was brought up in a small village on the Lincolnshire border, surrounded by lots of farming communities. I have always hunted, shot and fished, so it was a natural progression for me to become a butcher. When I left the military, I enrolled on a meat processing course and bought a pig farm. I wasn’t scared of taking advice.”

LIGHTLY CURRIED CHICKEN BREASTS WITH MANGO MAYONNAISE (SERVES 6)
INGREDIENTS 6 free range chicken breasts, skin left on 1 large shallot, roughly chopped 1 garlic clove, peeled 2.5cm piece of fresh root ginger 2 lemongrass stalks Juice of 1 lemon ½ tsp ground turmeric ½ tsp garam masala 275ml coconut milk 1 tbsp full fat yoghurt 2 large red chillies, seeded and finely chopped Bunch of fresh coriander, chopped Seasoning FOR THE MANGO MAYONNAISE 1 egg 1 tsp white wine vinegar ½ tsp Dijon mustard 275ml sunflower oil Zest and juice of ½ lime 1 ripe mango Seasoning
METHOD Cut each chicken breast lengthways into three and place in a large bowl. Place the remaining ingredients in a liquidiser and blitz thoroughly (you may need to stop the machine and push the contents down to ensure everything gets thoroughly liquidised). Taste and season.

f it’s too cold to picnic outdoors, then roast chicken in the oven or cook them on the barbecue and eat them hot in the comfort of your home. Alternatively, you can prepare them in advance and enjoy them cold. Either way, they are great, especially when accompanied by my fruity mango mayonnaise. This mayonnaise has real zing and a wonderful mango flavour. Pour the coconut milk mixture over the chicken breast strips and mix carefully. Cover with clingfilm and place in the fridge to marinate for as long as possible, preferably overnight. Preheat the oven to 190°C, 375°F or gas mark 5. When you are ready to cook the chicken, place it in a roasting tin and cook in the preheated oven for about 15 minutes, turning the strips fairly frequently to ensure they are cooked right through. Serve hot or cold with mango mayonnaise. For the mango mayonnaise, place the egg, vinegar and Dijon mustard in the bowl of a food processor, season with salt and pepper and whiz well. With the machine still running, slowly add the sunflower oil in a steady stream until the mixture has emulsified and thickened. Once you have added all the oil, pour in the lime juice and add the zest. Scrape the mayonnaise out of the food processor into a bowl. Peel the mango and place the flesh in the bowl of the processor. Whiz to a purée then fold this into the mayonnaise and check the seasoning.

’ve always dreamt of owning my own business, so when my husband encouraged me to take the leap, there was no going back. Bringing together my love of throwing a party and my enthusiasm for meeting new people, The Little Horse Box was born – a beautiful mobile wine bar housed in a converted horse box, providing bespoke drinks packages for weddings, events and special occasions. We’ve upped the glamour by adding Moroccan-style flooring in pinks, blues and greys and LED colour-changing lighting, along with an upcycled wine barrel sink and traditional hand-painted sign writing. I’m so happy with the end result! For our launch, I decided to organise a local photo shoot to show off The Little Horse Box in all its glory. My starting point was to find a suitable venue. I had heard about Happy Valley Venue in Grimston, but it was not until I paid owner Katy Coe a visit that I was truly blown away by its beauty. udi is a car-maker of quality. From the strong – yet sophisticated – lines of its models, to the flawless interiors, the German firm always delivers. The TT Coupe is no exception. The current TT Coupe arrived in Britain in 2015. It looks angrier and is almost the same length as its forerunner, though its wheelbase has expanded, making for short overhangs. The TT Coupe 2.0 TFSI 230 PS S Line S tronic, under review here, has a virtual cockpit, which

is based around a sizeable high resolution LCD display. It fills the instrument binnacle and supersedes the time-honoured analogue dials. It’s marvellous and clear as day. You can cherry-pick between two display settings. In the ‘classic’ view, the rev counter and speedometer are in the forefront. Then in ‘infotainment’ mode, the virtual instruments are smaller. The area that becomes free therefore provides sufficient room for other functions, such as the navigation map. At the lower edge of the Audi virtual cockpit, the
displays for time, outside temperature and mileage are perpetually visible. The Audi TT is comfy and the Alcantara and leather super sports seats are hip-huggingly supportive. The 2.0 TFSI 230 PS S Line S tronic also has manual climate control with functionality ingeniously incorporated into the air vents. keyless go. Outside the cabin, attractive alloy wheels adorn the TT. Mine was fitted with 19-inch five-spoke ‘Blade’ design wheels. These are optional and cost £450 – but they do look awesome. Other features fitted include sports suspension, xenon headlamps with LED daytime running lights, and a speed-dependent active rear spoiler. As a 2+2 seater, the Audi TT Coupe is a sports car that is suitable for real-world use. to keep superfluous shopping. That said, with a load area capacity of 305 litres – 13 litres more than the old TT – the boot space is practical enough to load in a tot’s buggy, or a couple of flight cases. Behind the wheel, the first thing I noticed about the Audi TT is how well it drives. The 1984cc, 230PS petrol powerplant is domesticated in urban environments, but it’s still hard to disguise the rasping clout waiting to be set free. Open up the TT on the straights, and you’re pressed into your
seatback. Zero to 62mph arrives in an eyeballyanking 5.3 seconds, and the top speed is 155mph. The ride is firm, but not unpleasantly so, and the steering has a good weight to it, while the dual-clutch automatic transmission changes seamlessly. What’s more, the car grips like glue in the corners thanks to its all-wheel-drive ‘Quattro’ set-up. And if the Audi TT’s talent for turning heads and drivability is not enough, its average fuel economy figure of 42.8mpg and relatively low CO2 emissions of 153g/km are also to be applauded. www.suffolkonmymind.co.uk

Is Granite Transformations environmentally-aware? A. Yes, we recycle all the raw materials we use. Q. Are there any interesting projects you are currently working on? A. We have some very big makeovers coming up. We have a customer in Colchester that is having one of our new printed worktops on the walls around an opening, so we’re looking forward to seeing that when it’s done. Q. What does the future have in store for the company? A. We will continue to grow and give customers great service, as well as great products.
