Taittinger Collection - 1978-1992 Assortment The Taittinger Collection started in 1983 with the idea of transforming a bottle of Champagne in a piece of art. This unique assortment gathers all these creations from 1978, the rst bottle created by Vasarely, to 1992 performed by Matta. (WS 92-94)
Clos des Goisses 1999 (WA 95) The 1999 Clos des Goisses ows from the glass with the essence of minerals, chalk, smoke, ash, white peaches, pears, owers and sweet oak. This is a muscular, powerful wine that needs serious bottle age to come around, yet it possesses striking clarity and detail in its aromatics and avors. Clos des Goisses is one of the most rewarding wines to drink when mature, and I have no doubt this will be another splendid version. this rened, sumptuous wine is not to be missed. Clos des Goisses is 70% Pinot Noir and 30% Chardonnay, and 30% of the wine was fermented in oak. Anticipated maturity 2011-2024. 28

Nothing in particular stands out here, but as is often the case with this cuvee, I am struck by the wine’s awesome balance and supreme harmony. Simply put, this is a strikingly beautiful wine from Pol Roger.

Domaine de Pegau’s magical 2003 Chateauneuf du Pape Cuvee da Capo is a magnicent o!ering. Tipping the scales at 16.1% alcohol, it boasts a blockbuster nose of dry vintage port intermixed with pepper, herbes de Provence, and roasted meats. Frightfully concentrated with layers of glycerin and fruit, it should prove to be one of the appellation’s greatest classics. More backward than either the 1998 or 2000 Capos, it is an enormously endowed, hugely concentrated, exhilarating e!ort that will last for three decades or more. It is a strong candidate for the “wine of the vintage.” Anticipated maturity: 2010-2035+. (WA 99-100)
Chateauneuf-du-Pape Hommage a Jacques Perrin 1989 The less evolved 1989 boasts an even inkier purple color than the 1990. The most massive, biggest, concentrated, and structured of any of the Jacques Perrins. It has great intensity and is extraordinary to taste, a potentially perfect wine. (WA 100) 83

A superlative, powerful, big-hearted Port with rich, complex fruit. Beautifully harmonious and well balanced, this excellent Vintage will make very good drinking between 2000 and 2005, although it has the potential to continue developing in bottle for many years more. The 1977 is considered one of the very nest Vintages of the second half of the 20th Century. The Graham’s 1977 is widely regarded as being second to none.

Still a spectacular wine, the 1961 dees mortality. It has been at its peak for nearly 15 years, yet it shows no signs of losing its fruit and drying out. The color is a dark garnet with orange/ amber at the edge. The profound bouquet has the magnetic allure that leaves great Bordeaux unmatched for complexity. Sweet notes of dried fruits, herbs, tobacco, smoke, and roasted meats are followed by an opulently-textured, thick, nearly viscous wine with high glycerin, ripe, jammy fruit, and an intoxicating combination of glycerin, extract, and suppleness. The wine holds in the glass without cracking up, and has a good 40-45 second nish. There is no telling how much longer this 1961 will retain its magic, but it is still a classic.

Chateau Lynch-Bages 1975 (WA 86) 185 After the number of disappointing tastings I have had of this wine, I was surprised that it showed reasonably well at a blind tasting. The color exhibits signicant amber/orange at the edge, followed by a dusty, herbaceous, cedary nose with some ripe fruit. Full-bodied but slightly hollow, the wine exhibits more sweetness and expansiveness than I expected. This above average wine is beginning to reach full maturity. Given the number of washed-out, excessively tannic examples of 1975 Lynch-Bages I have tasted, I am now more optimistic about this wine. 179

Chateau Lynch-Bages 1981 (WA 85) After a period in the late seventies where Lynch-Bages seemed to be taking suppleness in winemaking too far, I detected with the 1981 a partial return to the very rich, robust, ripe, huge extract style of the great Lynch-Bages wines like the 1970, 1962, and 1961. Certainly the monumental 1982 and excellent 1983 will eclipse the 1981 in stature, but this wine is quite good, and the best Lynch-Bages since 1975. Very dark ruby, with a strong, aggressive bouquet of black currants, cedar, and new oak, this ripe wine has surprising density on the palate, with plenty of tannin. The 1981 shows lots of gutsy character. 180

GAJA SORI SAN LORENZO 2004 (WA 98) The 2004 Sori San Lorenzo is a drop-dead gorgeous wine. It presents awesome balance, especially in the way it marries power with elegance. This is a remarkably rened and understated Sori San Lorenzo, with never-ending layers of dark raspberries, licorice, grilled herbs and tar that ow from its sumptuous frame. A dark, brooding beauty, it will require several additional years of bottle at a minimum, but those with the patience to wait will be amply rewarded. In most vintages I prefer the Sori Tildin, but in 2004 Sori San Lorenzo has a very slight edge over its sibling. It may very well be the nest Sori San Lorenzo since the legendary 1971.

Gaja’s 2004 Sori Tildin oats on the palate. It is the most nuanced of these single-vineyard o!erings, with gorgeous notes of tar, smoke, roses, violets, sweet toasted oak and earthiness that emerge from the glass in a counterpoint of sublime elegance and stunning purity. It possesses superb length and elegant, silky tannins to round out the nish. This extraordinary Sori Tildin will require at least a few years of bottle age, but it is destined to be one of the vintage’s legendary wines.
GAJA BARBARESCO 2005 (WA 94) Floral aromatics give way to bright spiced red fruits, menthol and licorice as the 2005 Barbaresco opens in the glass. This is a rm, classically built wine of notable elegance. The tannins are substantial yet beautifully woven into the wine’s mid-weight frame. This is another beautiful Barbaresco from Angelo Gaja, but it will require patience as it is tightly wound today. 318

Gaja’s 2004 Langhe Sperss is an infant. Still incredibly primary, it exudes the essence of Serralunga black fruits, smoke and tar. The new oak is still very evident here and the wine seems to be at an awkward phase of its development. Still, it o!ers stunning concentration as well as length, with soft, caressing tannins that frame the fruit all the way to the long nish. This wine is in need of serious bottle age and may very well merit a higher score once it emerges from its temporary period of dormancy.

The 1991 Maya (made from equal proportions of Cabernet Franc and Cabernet Sauvignon) has developed incredibly since I tasted it nearly a year ago and rated it 94. The wine is black/purple-colored and o!ers up a compelling bouquet of owers, minerals, black fruits, vanilla, and spices. There is huge extraction of fruit, full body, outstanding purity and balance, moderate tannin, and a tremendous layered feel on the palate. All of this intensity and richness is brilliantly pulled o! without any sense of heaviness. I can understand wanting to drink this wine immediately as it is an extraordinarily impressive young wine, but it should be given another 4-6 years of cellaring; it is a candidate for 25 years of aging. It is also a strong candidate for a three-digit score in a few years. This is a winemaking tour de force!

The 2005 IX Syrah Estate is a dense purple-hued wine of polished elegance and nesse, subtle but intense aromatics o!ering up notes of earth, lard, meat, spring owers as well as black and blue fruits. It is buttressed by good acidity, and ne, yet sweet tannins. This medium to full-bodied wine should evolve e!ortlessly for a decade or more. There are less than 400 cases of the estate wine. Ann Colgin and her winemaking team have been making Cabernet Sauvignon from the Herb Lamb Vineyard since 1992, but the production seems to get smaller and smaller every year. 342

Christian Moueix and his talented winemaking team continue to rewrite the deďƒžnition of a Napa Valley reference point wine. I have had a di"cult time keeping the corks in my bottles of 1994 Dominus. Eight-thousand cases were produced from a blend of 70% Cabernet Sauvignon, 14% Cabernet Franc, 12% Merlot, and 4% Petit Verdot. In this vintage, 174 days passed between bud break and the harvest, a remarkable period of time for any wine region in the world. The 1994 is a strikingly thick, compellingly rich wine with the texture of a great Pomerol, despite being made primarily from Cabernet Sauvignon. The wine exhibits a dense purple color, and an incredibly fragrant nose of jammy black fruits, spice, smoke, and loamy, tru#e-like scents. In the mouth, it is full-bodied, with thrilling levels of extract and richness, but no sense of heaviness or harshness. This seamless Dominus possesses no hard edges, as its acidity, tannin, and alcohol are beautifully meshed with copious quantities of ripe fruit. This wine o!ers early drinking, yet has the potential to last for 30+ years. 348

Spink Fine Wines and Buyer hereby agree to the following terms and condi-tions for auctions conducted by Spink Fine Wines: 1 The Buyer The highest bidder shall be the buyer at the ‘hammer price’ and any dispute shall be settled at the auctioneer’s absolute discretion. Every bidder shall be deemed to act as principal unless there is in force a written acknowledgement by Spink Fine Wines that he/she acts as agent on behalf of a named principal.
10 Liability of Spink Fine Wines and Sellers All goods are sold “AS IS”. Illustration in catalogs are for identification only. Buyers should satisfy themselves prior to the sale as to the conditions of each lot and should exercise and rely on their own judgment as to whether the lot accords with its description.
2 The Premium The buyer shall pay to Spink Fine Wines a premium of 22% of the hammer price on all lots. 3 Bidder Registration Bidding is strictly by paddle only. All floor bidders are requested to register prior to bidding.
NOTICE Bids If instructed, Spink Fine Wines will execute bids, and advise the intending purchaser. Lots will always be bought as cheaply as is allowed by such other bids or reserves as are on Spink Fine Wines’ books. Bids may be placed in writing before the commencement of the sale by giving to Spink Fine Wines a bid form for the lot, duly filled in with the name, contact phone number(s), full address of the buyer, number of the lot, and amount of the bid in Hong Kong dollars. All bids when placed by telephone are accepted only at the sender’s risk, and must be confirmed to Spink Fine Wines in writing, or by facsimile, before the sale. Clearance of Purchases In order to avoid delay in clearing purchases, buyers unknown to Spink Fine Wines are advised to make arrangements before the sale for payment or for references to be supplied. If such arrangements are not made, checks will be cleared before purchases are delivered.

11 Unsold Lots Spink Fine Wines reserves the right to charge commission up to onehalf of the ‘stated rates’ calculated on the ‘reserve price’ and in addition ‘expenses’ in respect of any unsold lots.
4 Payment Immediately a lot is sold the buyer shall:(a) give to Spink Fine Wines his name and address and, if so requested, proof of identity; and (b) pay to Spink Fine Wines the ‘total amount due’.
Purchase by Non-Residents Purchases made by non-residents in Hong Kong may be exported on the instructions of the buyer at his expense. Payment shall be made in the full amount equivalent to the successful bid in Hong Kong dollars. Shipping instructions may be given upon payment to Spink Fine Wines.
12 Spink Fine Wines sells as agent for the seller and as such is not responsible for any default by seller or buyer.
Currency Converter A currency converter will be operated at our auctions but only for the guidance of bidders. All foreign currency amounts displayed are approximations based on recent exchange rate information and may not be relied upon to calculate any invoices or statements. Spink Fine Wines assumes no responsibility for any error or omission in foreign or Hong Kong currency amounts shown.
13 Any representation or statement by Spink Fine Wines in any catalog as to authorship, attribution, genuineness, origin, date, age, provenance, condition or estimated selling price is a statement of opinion only. Every person interested should exercise and rely on his own judgment as to such matters and neither Spink Fine Wines nor its respective staff or agents are responsible for the correctness of such opinions.
5 Any payments by a buyer to Spink Fine Wines may be applied by Spink Fine Wines towards any sums owing from that buyer to Spink Fine Wines on any account whatever without regard to any directions of the buyer or his agent, whether express or implied. 6 Ownership The ownership of the lot purchased shall not pass to the buyer until he has made payment in full to Spink Fine Wines of the ‘total amount due’.

14 While the interests of prospective buyers are best served by attendance at the auction, Spink Fine Wines will, if so instructed, execute bids on their behalf, neither Spink Fine Wines nor its respective staff or agents being responsible for any neglect or default in doing so or for failing to do so.
7 Collection of Purchases (a) The buyer shall at his own expense take away the lot purchased not later than 7 working days after the day of the auction but not before payment to Spink Fine Wines of the ‘total amount due’.(b) The buyer shall be responsible for any removal, storage and insurance charges on any lot not taken away within 8 working days after the day of the auction.
15 Spink Fine Wines shall have the right at its discretion to refuse admission to its premises or attendance at its auctions to any person. 16 Spink Fine Wines has absolute discretion without giving any reason to refuse any bid, to divide any lot, to combine any two or more lots, to withdraw any lot from the auction and in case of dispute to put up any lot for auction again.
8 Buyers responsibilities for lots purchased The buyer will be responsible for loss or damage to lots purchased from the time of collection or the expiry of 7 working days after the day of the auction, whichever is the sooner, and neither Spink Fine Wines nor its respective staff or agents shall thereafter be responsible for any loss or damage of any kind, whether caused by negligence or otherwise, while any lot is in their custody or under their control.
17 (a) Any indemnity under these Conditions shall extend to all actions, proceedings, costs, expenses, claims and demands whatever incurred or suffered by the person entitled to the benefit of the indemnity. (b) Spink Fine Wines declares itself to be trustees for its respective relevant staff and agents of the benefit of every indemnity under these Conditions to the extent that such indemnity is expressed to be for the benefit of its staff and agents.
9 Remedies for non-payment or failure to collect purchases If any lot is not paid for in full and taken away in accordance with Conditions 4 and 7, or if there is any other breach of either of those Conditions, Spink Fine Wines as agent of the seller shall, at its absolute discretion and without prejudice to any other rights they may have, be entitled to exercise one or more of the following rights and remedies:(a) to proceed against the buyer for damages for breach of contract; (b) to rescind the sale of that or any other lots sold to the defaulting buyer at the same or any other auction; (c) to re-sell the lot or cause it to be re-sold by public auction or private sale and the defaulting buyer shall pay to Spink Fine Wines any resulting deficiency in the ‘total amount due’ (after deduction of any part payment and addition of re-sale costs) and any surplus shall belong to the seller; (d) to remove, store and insure the lot at the expense of the defaulting buyer and, in the case of storage, either at Spink Fine Wines or elsewhere; (e) to charge interest at a rate of not exceeding 2% per month on the ‘total amount due’ to the extent it remains unpaid for more than 7 work-

20 In these Conditions of business:(a) ‘catalog’ includes any advertisement, brochure, estimate, price list and other publication; (b) ‘hammer price’ means the price at which a lot is knocked down by the auctioneer to the buyer; (c) ‘total amount due’ means the ‘hammer price’ in respect of the lot sold together with any premium, and additional charges and expenses due from a defaulting buyer in Hong Kong dollars; (d) ‘sale proceeds’ means the net amount due to the seller being the ‘hammer price’ of the lot sold less commission at the ‘stated rates’ and ‘expenses’ and any other amounts due to Spink Fine Wines by the seller in whatever capacity and howsoever arising; (e) ‘expenses’ in relation to the sale of any lot means Spink Fine Wines’s charges and expenses for insurance, illustrations, special advertising, packing and freight of that lot.
18 Any notice by Spink Fine Wines to a seller, consignor, prospective bidder or buyer may be given by pre-paid mail in Hong Kong or Macau or airmail outside Hong Kong and Macau and if so given shall be deemed to have been duly received by the addressee one week after posting. 19 These Conditions shall be governed by and construed in accordance with Hong Kong law. All transactions to which these Conditions apply and all matters connected therewith shall also be governed by Hong Kong law. Spink Fine Wines hereby submits to the exclusive jurisdiction of the Hong Kong courts and all other parties concerned hereby submits to the non-exclusive jurisdiction of the Hong Kong courts.

This service is complimentary and with strict confidence. Spink Fine Wines offer this value-added service as a convenience to our clients who are unable to attend the auction, however, Spink Fine Wines will not be held responsible for error, omission or failure to execute bids.
To place bids, please use the absentee bid form provided in the catalog. Be sure to accurately record the lot number(s) and the top price you are willing to pay for each lot. “Buy” bids will not be accepted. Always indicate a “top limit” - the amount to which you would bid if you were attending the auction yourself.
