Letter From the Editor I’ve heard there’s only two seasons in Texas: summer and football. As the first rolls to a stop, the second is gearing up. Tear out our local football schedule and post it in your kitchen so you can be ready. And while you’re at it, tear out where kids eat free, where the family can have fun and ideas for getting in shape. Oh, Betnie Bakes, tear that out too. And the band and soccer articles, and Writing Well . . . Anyway, with what you have left, fan yourself. The summer season may be rolling to a close, but the heat is going to hang around. Got to love Texas. Leanne Donelson Editor of GLF Magazine

LOCAL AREA RESIDENTS By Carla

Betnie Bakes Sweet Success

Klein Oak grad and local resident, Bethany Berend, is gobbling up success one cake at a time. And soon, this custom cake maker just might find herself to be The Next Great Baker. It’s said that one should seek out their passion. But, the truth is, on occasion, it instead finds you. In the case of Bethany Berend, her passion came to life much like the Ginger Bread Man: right out of the oven. In 2011, Bethany’s son asked her to make a Lightning McQueen cake for his birthday. Up until that point, making a cake for her had always required opening a box and following the pictorial directions on the back. However, there wasn’t a mix to be found on the shelf that explained how to turn a cake into a car, the mysteries of fondant or exactly what confectioner’s sugar was. So, she turned to the oracle of Google where she found tutorials and yes, even an explanation of confectioner’s sugar. And, after twenty-one hours of baking and decorating, she not only had made a race car cake that lit up her son’s eyes, she had unknowingly sent herself zooming full throttle toward a new life. Just like a cake, that single project rose steadily in the oven of her tiny kitchen, doubling in size before her very eyes. Today, Bethany is the owner of Betnie Bakes, a custom cake shop that creates cupcakes that dazzle, 3D cakes that defy logic and confections for every occasion that are sure to delight. And, yes, her beautiful master pieces are scrumptious master morsels as well. So much so, they caught the eyes and taste buds of TLC’s, The Next

Great Baker. Just three short years after making her son’s birthday cake, the Sam Houston grad with a degree in Psychology, was invited to TLC’s internationally televised stage to stand alongside bakers with culinary degrees. Thankfully, in the few years she had been baking as a professional, she had encountered many bumps on the road to success, all of which had given her a drive to succeed. And the smiles on the faces of her customers and family fueled her to boldly accept the invitation to compete. There was one hitch, however. Bethany had to have a team. That’s when her friend and fellow Klein Oak grad, Jennifer Livermore, got into the passenger’s seat. Although Jennifer had no cake decorating experience, she had baking knowledge. And, because of their friendship, Bethany thought they would work together well. It was a great choice. The two operated like a well oiled machine. That’s not to say there weren’t hiccups. In the first episode that aired June 24, there was as much drama as flour but thankfully, it wasn’t just in their portion of the stage. The pressure cooker of television had its affect on all the bakers. Thankfully, for Bethany and Jennifer, it wasn’t enough to make their cake fall. If you haven’t seen the show, I won’t spoil it for you. Go to betniebakes.com to find out the results. And while you’re there, check out her cakes. You’re sure to be impressed by this great baker. She’s living proof that success isn’t always where you expect to find it and the road getting there can be tough. But rest assured, once you do, it is sweet.

Spring-Klein BANDS

Strike Up The BAND On a weekend night, Klein ISD band members take to the field as fans cheer waiting to see what entertainment they have in store during the halftime of the football game. With precision they march to the center of the field and as the drum majors whistle the beat, the band begins the entertainment for the evening.

K

lein Oak and Klein High school bands are ready to put their best foot forward as the varsity bands get ready to entertain during the fall football games. Keeping in step means that members of high school marching bands need not only musical knowledge, but also some physical coordination and team spirit. All of this precision marching and intricate moves, all while playing a instrument, doesn’t just happen. It begins on hot August days while friends are lounging at area swimming pools to stay cool. The school parking lots are not filled with cars, but with hundreds of band students braving the heat coming off the concrete as they practice moves and music to be ready for the kickoff of the football season in September. Leading these school bands are two dedicated Band directors, who spend not just August in practice, but the whole year coaching students in music and working out patterns to be performed on the stadium fields under glazing lights. For David Gresens, the director for the Klein High School and Todd Clearwater the director for Klein Oak, the summer practice is just like the topping on a frosted cake that they have worked on for the whole previous school year. The drums beats, the band members take the

With spot-on routines, and rousing music, most of us do not realize the many hours, days and months that students, lead by their creative directors spend preparing for just this halftime performance.

Passion Passion English born Angela Hinds was raised in Canada. It was there, in Toronto, that she found her love. While studying at The School of Makeup Art to become both a makeup artist and image consultant, her interest in the care of skin was piqued. Now, after nine years as an esthetician, that interest has sky-rocketed into a full blown passion, finally coming to rest at Massage Envy Spa. After working for years with Christian Dior and traveling around Houston as both an esthetician and makeup artist, Angela says that living close to where she works is something she very much appreciates. It’s wonderful to have so many clients that live in the same community as she. After all, they are the aspect of her job that she loves most. They always brighten her day. When asked what words she would offer those who want to keep their skin looking its best, Angela emphasized that great skin starts in the kitchen. “Most people don’t realize the connection between diet and skin. Diets that are deficient in vitamins and minerals and high in chemically processed foods will bring down the immunity of the skin as well as diets low in fiber or (ones that) have an imbalance of fatty acids. This is especially true for acne and rosacea sufferers.” She also noted the importance of skin care and how wonderful the Murad line at Massage Envy Spa is. “(It) is a great skincare line to get the skin hydrated and to reduce any redness and inflammation that may occur. Murad Skincare addresses the needs of all women and men of all ages and skin types.” Another contributor to skin woes is stress. The dedicated esthetician addresses that as well. “In today’s hectic world women need to make time to relax and destress,” she said. “I try my best to give women a relaxing facial with facial massage techniques and a peaceful environment.” And, she extends that environment far beyond Massage Envy Spa. As an active member of her church, Angela seeks to maintain the peaceful integrity of what lies beneath the facade and infinitely outlasts the

skin: the spirit. Call Massage Envy Spa in Gleannloch Farms in the Stables Town Center at (281) 379-3535 today and make an appointment with Angela. Relax, let go, and let her do what she does best to help you look your best. Before you leave, tell her a little about your diet and ask her what foods will support the amazing work she has just done. And, let her show you to the Murad line that is best for your skin’s needs. You deserve to keep looking as great as an appointment with her will make you feel.

Ice Hockey For Fun and Games

A

long time ago, in northern states where winter snow and ice covered local ponds, kids would bundle up, toss their skates over their shoulders and troop off to the pond to play their version of ice hockey. For those kids raised in Southern states, winter just meant cooler, wetter weather with little snow or ice or fun on a pond. The Aerodrome Ice Skating Complex has taken the game of hockey for kids and has interjected the spirit of the pond fun into learning and games, even if their “pond” is near Willowbrook Mall with streams of cars passing by on Hwy 249. They have given our southern kids a chance to learn to skate and play the game of hockey no matter what the weather outside maybe. Thanks to TC Lewis and Caren Bell, area kids are treated to some of the best hockey instruction in Houston. “We suggest that kids be around four year old before they start lessons. By this age they can follow instructions and we begin with the very elementary steps of skating,” TC said. “There are no games for the beginners, just learning how to skate and get their balance holding a hockey stick.” For those seven years and younger, who have mastered the ice and hockey equipment, they can move up to Mighty Mites. At this stage they have full equipment and dividing into teams, play each other. “Some of our five year olds are in this group,” TC told us. “It is all about your ability to skate and work with the equipment that moves you from the beginning programs into Mighty Mites.” As you advance you move into league play, for eight and under that would be Mites. This is where the real games begin. With four ice rinks in the Houston area, games are played among the different teams from each rink. “You get a chance

to travel to Sugar Land, Memorial City or Clear Lake for some of the games. As you get older, the next step is Squirts and then you move up to Pee Wee’s.” Hockey might not be considered a natural sport for southern boys and girls because of our weather, but it is a sport that builds team spirit and life long ability on the ice. In fact, there are more adult hockey teams in Houston than adult baseball teams. The fast-paced sport of hockey is more than just a game. It is a great way for kids to learn balance and sportsmanship in a fun environment with their own “ice pond” close by. Give it a try.

POLIO 28 GLF Magazine

Preparing your children for the first day of school requires more than buying them lunch boxes and new outfits. It also means the most dreaded of back-to-school needs – shots. All children in the Klein school district are required to be vaccinated prior the first day of classes for polio, hepatitis, measles, mumps and rubella. Immunizations have helped children stay healthy for more than 50 years. They are safe and they work. In fact, serious side effects are no more common than those from other types of medication such as antibiotics and fever reducers and pain relievers. Vaccinations have reduced the number of infections from vaccine-preventable diseases by more than ninty percent. Yet there’s a debate raging across the nation. It’s a debate that has been raging for years and seems not to be slowing down. It’s the vaccination debate. Surprisngly this debate isn’t new. In fact, Ben Franklin, writing in his autobiography said, “I lost one of my sons . . . by the smallpox . . . I long regretted bitterly and still regret that I had not given it to him by inoculation.” Today’s parents, like Franklin worry about the effects of vaccinations. With anecdotal evidence connecting the mercury in vaccines to autism and children having so many shots before first grade, it’s a valid concern. The vaccination debate will continue on for years to come. But today, most children in the United States lead much healthier lives and parents live with much less anxiety and worry over infections during childhood. Immunizations are one of the success stories of modern medicine.

Saying Good Bye

Spring-Klein histORy

T

he last chicken fried steak dinner covered in creamy gravy was served at Strack’s Restaurant to a packed crowd as many came to say a final good bye to a Klein landmark. The Strack Farms restaurant, which opened more than thirty years ago, was one of the favorite for locals as well as law enforcement, EMS and fire fighters. The BBQ and home-cooked meals have given way to more development, and the last sign of what once was will soon be down to make way for what will soon be. Needless to say, much has changed in the last hundred and thirty years since Hermann and Jacob Strack bought 602 acres just south of Cypress creek for only $2.25 an acre for a sawmill. Along with the sawmill, the Strack’s began farming the land that was once part of the two original 1836 Republic of Texas land grants. Sending for his three brothers from Feudingen, Prussia, the Strake farm and enterprises became a staple of the growing Klein Community. With the development of the Klein area beginning in the 1980’s, the land around the county restaurant became valuable as a home subdivision. In 2010 Ryland homes purchased a parcel from Strack farms to build Terravista subdivision and Strack Restaurant was situated at the opening to the subdivision. Now it is time to say goodbye to Strack’s Family Restaurant. The door may have closed, but the memories of great home cooked meals, friendly service and a time when Klein was the little community north of Houston will remain.

The original Ford Mustang debuted on April 17, 1964, at the attractive price of $2,368. Dealers were inundated with requests for the sleekly-styled new vehicle. In Garland, Texas, 15 customers thronged to bid on the same Mustang. The winning bidder resorted to sleeping overnight in his new car so that it wouldn’t be sold out from under him before his check could clear. Special Purchase! Limited Quantities! Two Colors! Ford initially forecasted annual sales of about 100,000 units. On the first day alone, dealers took 22,000 Mustang orders. Shortly after its introduction, the fledgling vehicle’s success was official when it was featured on the racetrack as the pace car for the 1964 Indianapolis 500. During the Mustang’s first 12 months on the market, sales built to an astounding 417,000. Within two years, sales had catapulted to one million. “When the Mustang was unveiled, Proudly serving Northwest Houston the reaction was so positive that & surrounding areas for 36 years! there was no doubt it was going to be a success,” recalls Joe Oros, chief designer of Ford’s original pony car HOME DESIGN CENTER, LLC – dubbed the 1964½, because it was 5005 Spring Cypress • Spring, Texas 77379 • loomcrafthome@yahoo.com launched at an unusual halfway point during the year.

New Beginnings

Tips from Master Josh Arcemont

Call, Click or Visit Today!

We all have heard the old saying, “Today is the first day of the rest of your life.” That saying is partially true. In reality, this moment is the first moment of the rest of your life. Every moment of every day gives us an opportunity for a new beginning. There is an old martial arts saying – “To Fall 7 times and Rise 8 . . . Life begins from here.”

We’re minutes away!

From time to time, everyone falls down. Everyone makes mistakes – even really smart and successful people.

Spring 8714 Spring Cypress Rd., Suite 100

(281) 203-0088

Have any of you ever made a mistake – one you still feel bad about or wish you hadn’t made? Nod your head if you have. The difference between losers and winners is that winners don’t let mistakes stop them. They look at mistakes as learning experiences. Because mistakes are one way of learning what doesn’t work, or learning about things you need to work on improving. Winners are constantly working on improving their performance – by attempting to make smaller and smaller errors. Remember, after every mistake, you can either quit or you can rise again, learn from the mistake, and start over. “To fall 7 times and rise 8 times” is what successful people do.

Rescuing Furry Friends On a hot summer day, with the concrete payment under her feet burning her paws, Tessa was starving and her skin, under what little fur remained on her body, was baking under the grueling sun. Only two years old, she didn’t look like the pedigree Golden Retriever she was. But Scarlet’s life was about to change for the better. Turned in sick and malnourished to Golden Retriever Rescue of Houston, she was welcomed, fed and taken immediately to a local vet. Her mange from fleas, heat and stress, was treated and within three months, this beautiful sweet Goldie found owners who would love and care for her for the rest of her life. There are over a hundred different dog rescues across the Houston area each of them committed to helping dogs find a fresh start with a loving family. The names of the dogs change, but unfortunately for rescues, the stories stay the same. The dogs are surrendered by owners, fished out of trash cans or found abandoned in homes and yards when owners move on. Some are not sociable and need love and training, while others just need food and a new home. Each dog is evaluated at length before it is put up for adoption to make sure that both the dog and the new owners are a good match. For the family who would like to adopt a dog, there are many great reasons to go through a rescue group. One of the main reasons, that puts them above any breeder, city pound or pet store, is that volunteer foster parents with the rescues live with their charges 24-7 and can often tell you, in detail, about the pet’s personality and habits. Each dog will be vaccinated and neutered before you can adopt. So, if you are looking for that special furry friend to join your family, look no further than the rescue groups in our area to find your perfect dog. Don’t Forget Your Thermostat! Once again, as the hot summer months of Houston are upon us, we all start thinking about our AC systems. From efficiency to safety to electric bills and concern for the environment, there are a lot factors to consider. There is one AC component that often gets overlooked as an important feature that can make a big difference – the thermostat. Besides the annual safety and efficiency check, New Balance A/C, Inc. is also recommending the new Ecobee Smart Thermostat. An affordable, easy-to-use thermostat with a touchscreen display, it is also WiFi-enabled, which allows for remote control and monitoring of house temperature via a computer, tablet or smartphone. The home’s indoor air temperature can be set to accommodate daily routine schedules, sudden changes in schedule or pre-planned vacations for maximum comfort and efficiency. The Ecobee thermostat is more than just a thermostat; it can be set to remind you of when filter changes are due, schedule routine maintenance checks, notification of equipment issues, and indoor – outdoor weather. All these features add up to energy savings. A typical home energy costs are 50 – 70% directly related to heating and cooling. A follow-up study by Ecobee’s Modeling Team analyzed the energy savings of 18,000 randomly selected Ecobee thermostats. The results showed that customers saved an average of 24% on heating and 22% on cooling costs each year. As a side note, we wouldn’t recommend a new product without testing it out personally. The Ecobee thermostat gets two thumbs up from the president, Sam Kelly, for convenience and savings.

The Ecobee thermostat is compatible with most residential and commercial heating and cooling equipment. To learn more about the Ecobee Smart Thermostat and other energy savings products, contact New Balance A/C, Inc. at (713) 683-9677 where Your Comfort Is Our Priorty.

Writing Well By Dear Writing Well, what’s the difference in who and whom? Oh, that is a good one and their misusage is one of the most common grammar mistakes. But, before I begin, to all ye who are asking if it really matters, it does. Good grammar is like zipping your fly. Will your pants stay up without the zip? Yes. So, why bother? Well, it makes a certain impression now doesn’t it. So, let’s figure this out. First, decide whether who/whom is being used as a subject or as a direct/indirect object. Here’s an example for us to figure out: I don’t know (who/whom) the zombie was chasing. What’s the action in the sentence? Chasing. Who or what is doing the chasing? The zombie. So, what is the subject? The zombie. What’s it doing? Chasing. What is being chased, what’s the thing being acted upon? That’s where we have to figure out the who/whom thing. Who is used when the pronoun (That’s a word that replaces a proper noun. A proper noun is the actual name of a thing: Roy, Tanya, the chair, Paris, the clouds. The pronouns for those would be: he, she, it, it, they. Who and whom are both pronouns.) Where was I? Oh, yeah, when the pronoun is the subject of the sentence, we use who. So, in our

example sentence, what was the subject? The zombie. If we were going to replace zombie with either who or whom, which would we use? It’s the subject so we would use who. But, in our example, that’s not what we’re looking for. (Yes, grammar ninjas, I know I just ended that phrase with a preposition and I didn’t punctuate after the word pronoun in the first line of this paragraph. Simmer down.) Whom is used when the pronoun functions as the direct or indirect object. A direct object is the thing acted upon in a sentence. I kicked the ball. I am the subject. What did I do? I kicked. What did I kick? The ball. Ball is the direct object. An indirect object receives the direct object. I kicked the ball to the werewolf. Werewolf is the indirect object. Let’s look back at our example sentence and dissect it. What the zombie is chasing is the direct object. So, would we use who or whom? Which goes with a direct object? Whom. The sentence should read, I don’t know whom the zombie was chasing. There’s your answer. And it only took 400 words or so. Who is used when the pronoun is the subject, whom when it is the direct or indirect object. Easy peasy lemon squeezy. Until next time, keep writing well.
