Preserving your bounty Whether you are growing your own produce, a member of a CSA or purchasing from Local Farmers, preserving the bounty is beneficial to your health and your pocketbook. We help our members and bulk order clients understand how fruits and vegetables ripen and when they are available. Striving to help them manage their preserving time and budget for the next crop. Every year many wait till the end of the whole season to preserve their bounty. Through education we help you preserve each month rather than overload and miss out because of weather or crop stress. You must start planning to preserve these crops at their local harvest availability. The climate in Idaho has a 4 month harvest season. Also realize you are not the only person preserving, PLAN AHEAD!!! Get on the availability list ASAP and keep your scheduled date. Many times we have folks call in September for Apricots!!! “There are no Apricots in September in IDAHO!”

Cucumbers for pickling - July to August- Best in July early August! Cooler nights will shut them down. Summer Squash – July to early September Corn – Mid July to Mid August Beans – Late July to end of August Peaches – August for canning Peaches to early September Tomatoes- Late July to September for Canning Tomatoes – Peaks mid-August Pears- August Peppers- Mid August to September Apples- Late August to September need cooler nights for sweetness Beets- August size for canning
