A SINGUL AR PLEASU RE The making of Single-malt Scotch Turning grain into the precious liquid known as Scotch whisky is by no means easy — or quick. Single-malt Scotch, arguably the most prized of the prized, requires even more attention to strict standards and regulations. All Scotch is the result of grain being converted to malt, which is turned into a mash that is fermented; the liquid is distilled and finally aged in oak casks for a minimum of three years, although most distillers give it eight or 20 years (and some even longer). Maturation must take place in Scotland or the beverage can’t be called Scotch, no matter how scrupulously its makers follow every other rule. Most Scotch is blended, combining batches from several distilleries. Single-malt Scotch may be made at only one distillery and only from barley. It has to be distilled in a pot still. It may be bottled from several casks, as long as those casks all came from the same distillery. Your single-malt may be even older than the 12 or 20 years posted on the label. That’s just the youngest batch in the mix. It’s a long, exacting process, but those who dedicate themselves to its earthy, bold flavor say it’s well worth the wait.
Is it “WHISKEY” or “WHISKY”? It’s both, actually. And believe it or not, it matters a great deal to the countries that pride themselves on their whiskey . . . uh, whisky. The New York Times noticed a certain pattern in the spellings and came up with this rule of thumb: If made in a country with an “e” in its name, it’s spelled with an “e.” If it’s from a country without that letter, it’s spelled without. So that ’s why Scotland makes whisky and Ireland makes whiskey.

The first time you use a bar spoon you will never be without one in the bar, they’re that essential. HAWTHORNE TRAINER For drinks that are shaken or stirred with ice and served neat or over new ice, a strainer is needed to separate not only the ice, but any fruits, herbs or other solid ingredients from the liquid. TONGS Ice is key to the bar and items like ice buckets, crushers, scoops and tongs are essential.
BACARDI Tormenta Negra Ingredients • 2 parts Bacardí Select rum • 3 lime wedges • 3 dashes of Angostura® bitters • Ginger beer Method Start by filling a Highball glass with ice and then squeeze in the lime wedges. JIGGER Jiggers are metal measuring devices that usually have two cones, one on either end. The larger cone typically holds 1 1/2 ounces while the smaller cone holds 3/4 or 1 ounce. ZESTER Holes at the zester’s tip form functional threadlike strips; the curved notch on the side creates elegant curls that are perfect garnishes for lemon-scented dishes and cocktails. MUDDLER A thick stick, often used to mix sugars, bitters, and to extract juices and oils from fruit and mint. Muddling is an essential step in making Old-fashioneds, Mojitos and Caipirinhas. • Lemon zest • Ice Method Fill a mixing glass or shaker with ice and splash over the vermouth, stir once, then strain the excess liquid leaving the ice in the glass. Pour over the Bombay Sapphire and stir carefully but rapidly for 20-30 seconds until ice-cold. Strain into a chilled martini glass and garnish with lemon zest.
