Last weekend perfect waves helped make Noosa's surfing festival one of the best ever. With Easter just around the corner and the holiday rush expected to arrive any day Noosa Council is setting up a reference group to try to find a balance between the residents and tourists who love Noosa and the congestion and crowds that result. Made up of 15 community and business groups the group will begin its work at its first meeting next week. In other news the rural firefighters at Cooroibah need more volunteers. After 27 years protecting residents lives and property I think they've earned a rest. Hopefully with a number of new families having moved into the area since they started, some volunteers will put up their hands. ●

COOROIBAH NEEDS NEW FIRE FIGHTERS BY MARGARET MACCOLL A neighbourhood meeting held 27 years ago following a Cooroibah bush fire led to the establishment of its Rural Fire Service but the volunteer group now aged in their 70s and 80s want others to take it over. First officer Ben Johns said the group of about a dozen hoped to amalgamate with the service at Tinbeerwah which had about 28 volunteer officers. Ben said the service's fire truck had been based at John's Landing until the property was sold to council last year and has since found a new base on MacKinnon Drive. "A lot of the volunteers came from Johns Landing," Ben said. "If there was a fire I'd put the siren on in the truck and by the time I was ready there were people there to help."
In the predominantly rural area it was bush fires the service attended, sometimes assisting the urban units with house fires. Ben's wife Pat said over the years the group had conducted many preventive burn offs, when conditions were right, and this had reduced the potential for large bush fires in the area. "People who wanted to burn their paddocks to stop the big fires coming through contacted us," she said. Volunteers will be given personal protection equipment and all relevant training and assessment in order for you to become a competent and qualified Rural Fire Fighter. Residents over the age of 18 who are interested in joining as a fire fighter or in a non-operational capacity should contact the Area Director QFES Rural Fire Service Caloundra on 5420 7517. ●

BATON PASSES TO THE MASTER AT NOOSA BY MARGARET MACCOLL Tony Frost has been an active surf lifesaver for 59 years, a Masters competitor for 25 years, a Surf Lifesaving competition official for 45 years and on Monday will carry the Queen's Baton in the Commonwealth Games relay. He will join 37 bearers including athletes and community representatives who will carry the baton from 3.15pm at Read Park Tewantin to about 5.30pm at Noosa Main Beach. Tony believes one of his greatest sporting achievements was being involved with the Noosa Olympic Pool Association. From its inception in 1995 following a community meeting of 250 people the group lobbied the council for an Olympic-sized pool. "For 20 years leading up to the early 1990s several groups had tried to convince council there was a need for an Olympic pool," she said. "In March 1997 council said we agree that it's a good idea." Tony said since its construction the Noosa Aquatic Centre had assisted the triumphs of several world class swimmers including Olympians Brittany Elmslie and Jake Packard and ocean swimmer Nick Sloman. There will be road closures so come early to watch the Baton relay with key viewing areas at Read Park, Tewantin, along Gympie Terrace, Noosa Parade and Noosa Main Beach. ●

STRIKING A BALANCE IN TOURISM Noosa Council and Tourism Noosa have established a Sustainable Tourism Stakeholder Reference Group and invited 15 community and business representative organisations to participate in deliberations. Mayor Tony Wellington said the reference group would consider the benefits and impacts of Noosa's tourism sector. "Noosa is at an interesting juncture, where our very success needs to be carefully managed," Cr Wellington said. "Noosa Council is focussed on ensuring that our tourism sector is not only strong and viable, but also that it doesn't impact too greatly on the natural environment and also on resident living amenity. "A strong tourism sector is good for our economy, and the benefits flow right through the community. "However, we also want to ensure that we don't kill the proverbial golden goose with a tourism strategy that undermines the very experience that people come to Noosa to enjoy. "Council's recently adopted Noosa Main Beach Events Policy is a step towards finding that balance." The Reference Group will meet for the first time on Tuesday 27 March. ●

n 20th April, a 76 year old Tewantin woman will board a plane to Mexico on a two month mission to help children who have been abused, neglected or have become homeless. Retired teacher, Judith Watkins will head to a children’s refuge in Tapachula and volunteer her body and mind to do whatever she can to help. “I will be able to help them with their homework and learning activities but also help prepare and tidy up after meals, do general housework, and put the younger
children to bed,” she said. Judith has been blessed with a privileged life in Noosa. During her travels she witnessed many children living is terrible poverty. When she heard about the Love, Life, Hope family home in Tapachula, Mexico, run by Cooroy couple, Alan and Pam Skuse, she saw her opportunity to pay her good fortune forward. “So far I have raised $1245 and I am hoping that with the help of the good people of Noosa, I will reach my target of $5000. This will be enough to pay the medical bills for the forty children for a year,” Judith says. Volunteering at the orphanage provides a loving, secure family home for children of
all ages who have been abused, neglected, orphaned or abandoned, and mostly from backgrounds of extreme poverty. “My journey towards Tapachula began in 2012 when I saw the movie ‘The Way’ and decided that I would give it a go. At the age of seventy-one I headed for Pamplona on my first solo overseas trip, to walk the more than 700ks to Santiago. “I was scared out of my brain until I started walking and then it was amazing. In 2016 I was off again to repeat the walk but starting in the Pyrenees in France. “Unfortunately, I had a fall and after five days I had to give up and bus and train it to Santiago and wait for my friend and
my brother. Before this second trip I had started to learn Spanish, not an easy task for someone with hearing and age related memory loss. “Once home I kept studying and last year I decided to spend a month at language school in Mexico City. “It wasn’t until after I had booked that I heard about the Refuge, first from someone at church and then from a friend in a group I belong to. Of course it was too late to think about going there but when a third person told me about it I decided that I was being given a message and started my own investigation. After a police check, a first aid course and an interview on Skype I was accepted.”

The Refuge receives no ongoing financial support from the government, so their growth has only been possible through individual donations and support from businesses around the world who want to help make a difference. The Refuge, Misión M¨¦xico was founded in 2001 and run by Australian couple Pam and Alan Skuse, with the all-important dream of creating a family environment for the children. Over the last 17 years Misión M¨¦xico has grown from a small home housing seven children to a huge home and a small NGO that provides a safe home, education, healthcare, life skills and worktraining opportunities for up to 40 children and young adults at any one time, giving each child love, life and hope so they can reach their full potential. “I have asked that my fund raising goes to educational needs” Judith said. Judith has done her dance with overseas travels over the years.
“I have been overseas several times with my husband and once with a friend to visit my brother who is a priest in the Phillipines, but when my husband Peter became ill in the eighties I thought that I would never travel again “Going to Spain 2013 took a leap of faith. I had to block out the voice that kept telling me that I couldn’t do it,” Judith recalls. For six months Judith trained before leaving for Spain. This gave her an inner strength to begin walking again. “It was on that walk l came to terms with the death of my 38 year old son in 2007 and also it was there that I learn to be grateful. Each day, I would set out walking not knowing whether I would have a bed for the night. Some were very ordinary, but it didn’t matter. I was grateful. “I said before that first solo trip that if I could walk the Camino I would be complete - I could die happy! Not true!” “Twice more I’ve packed and headed off each time certain that it would be the last.”
Word of the refuge became part of her consciousness and Judith was lured again. She has taught herself Spanish so she can really step up and give love, hope support and anything else that is possible as she embarks on this journey of compassion once more. “Fear is always my companion when I set off. For me, the hardest part is getting there. Strangely, I have found if I am uncertain or confused, someone usually comes up and offers help and in spite of all the warnings of my friends - they have always been the good guys.” Travelling at Judith’s age has its challenges but she trusts the journey and those who come her way on the road. “My inner voice that says “you’re too old” is very annoying. When I went to language school in Mexico, I asked to be with older people, but when I arrived I found myself with the most amazing group of young multinationals who took me under their wings.
“Who would have thought that I would be going to night clubs and dancing into the wee hours? Now another year older, I can assure that the body does feel another year older, I don’t stop. Keep breathing. Keep moving. Keep going,” Judith says. “After seventy this amazing life one is given becomes finite. How lucky am I that I am still mobile, breathing and most of the time, mentally capable. She encourages others to follow their dreams and take one step at time to bring them into reality, no matter what age. “If you have the slightest wish to do something new and you don’t think that you can then just try. Start reading start talking, start planning and get going. What’s the worst that can happen? Better to greet death on a mountain top than home regretting missed opportunities. SURFERS SEEK CLEAN SEAS
STREET ART ON SHOW Street art comes to Noosa Regional Gallery from this Saturday with the 2017 Stencil Art Prize Exhibition showing the work of 67 artists from 25 countries. Founder and Director of the Stencil Art Prize Jacinta Fintan said the exhibition was the world's largest stencil event and featured a range of stencilmaking methods including hand drawn and hand cut, computer-generated, silk screen and screen printing. "Influenced by the fleeting nature of street art, these stencil-based works blend pop-culture imagery and global politics to highlight the growing concerns of a socially engaged generation of artists," Ms Fintan said. Noosa Regional Gallery director Michael Brennan said for Noosa Regional Gallery to be able to host an exhibition like this - featuring street art from around the world - spoke to both the global significance of stencil art and the growing recognition of the gallery. Queensland Parks and Wildlife Sunshine Coast head ranger Omar Bakhach wants people to take whatever they bring into national parks back out when they leave. Surprisingly, when rubbish bins were
removed from parks people took more responsibility, taking rubbish with them, he said. Nev Hyman has a viable solution in treating plastic waste as a resource to be used to build houses. His NevHouse which sat on Main Beach for the duration of the festival was proof his theory could be a reality. Nev said across the world people will continue to dump their rubbish in rivers and oceans unless a solution is created. â—?

From picking up rubbish to reusing and re-purposing, the message to reduce plastic waste was delivered loud and clear from a group of surfers and environmentalists who gathered at Noosa's Main Beach for a Sustainability Forum last Friday evening. Led by Phil Jarratt the forum brought together surfers Layne Beachley, Craig Macintyre, Mark Visser, Noosa Councillor Joe Jurisevic, Noosa Biosphere Community Association (NBCA) spokeswoman Kylie Moses, Head Ranger Omar Bakhach and Nev House creator Nev Hyman. World champion surfer and Planet Ark ambassador Layne Beachley said the issue of plastic waste came down to the choices individuals make on a daily basis. The Surf rider foundation's Craig Macintyre said the organization collected two tons of rubbish from local beaches every six months and while this helps keep the area clean it was up to people to stop creating the problem. Big wave rider and Back to Tap ambassador Mark Visser advocates the reuse of water bottles, filled up from the tap. "As surfers we see a beautiful place and we want to keep it," he said. Cr Joe Jurisevic said people's mindset had to change. "We didn't have plastic bags when we were growing up. We didn't have plastic water bottles. We used to recycle" he

HISTORY FROM ALL VIEWS Tales of shipwrecks, battles and good make up the history of our region and will be told from both indigenous and non-indigenous perspectives during a reconciliation-focused event at The J Theatre from 8.30am to 1pm today. Our Shared History seminar will focus on encounters between indigenous people and explorers, convicts and seafarers in South East Queensland from 1770 and the 1850s. Event coordinator Meredith Walker said up until recently history lessons in Australian schools tended to centre on European experiences in Australia. This seminar hosted by the Shared History committee of the Sunshine Coast Reconciliation Group, will convey a more well-rounded understanding of the European invasion and settlement and the experience of First Nations' peoples, she said. "A lot of Australians don't realise the impact dispossession has had on Indigenous people and these seminars are just one way we can bring the community together to inspire an ongoing process of reconciliation. Ms Walker said the seminar would explore how First Nations people learned about the European visitors and responded with help, care and goodwill. She said the stories were both heartwarming and tragic. "Our speakers will also describe encounters between the Butchulla and Kabi Kabi people and the survivors of the shipwrecked Stirling Castle (1836) and Thomas King (1852)."

Council has appointed arete Australia, a division of Kane Constructions, to carry out the $1.63M Noosaville Library renovation with construction to begin in April. Two temporary facilities have been opened at the Leisure Centre to drop off items and collect reservations and a temporary library at Noosa Civic to maintain services while the Noosaville facility is closed. Cooroy's Library and the Mobile Library are both operating. The renovated library will feature an extra 80sqm of library space, technology maker space, outdoor Wi-Fi enabled reading courtyard, heritage library room, Radio Frequency ID smart technology and lighting and airconditioning upgrades. KATIE ROSE COTTAGE OPENS FOR RESPITE BY MARGARET MACCOLL Katie Rose Cottage hospice opened this week for day respite guests after further modifications were completed, and plans are underway for round-the-clock care for the terminally ill later this year. Registered nurse Claire Perry is now leading the caring team at the hospice after a 20-year career in palliative care on the Sunshine Coast and having previously volunteered with Katie Rose Cottage. "I still feel passionately about it," she said. "If you have somone in their last weeks of life I feel very strongly this service should be available to them." Claire said the Katie Rose Cottage had
"a beautiful environment" and having been built from the generosity of so many in the region it had a lovely feel that was "so community-owned". Claire said the need for Katie Rose Cottage was evident when you considered the nearest alternative palliative care beds were at hospitals at Caloundra and Gympie. Katie Rose Cottage co-director Carol Raye said the respite service allowed guests to become familiar with the cottage, the staff and the care that is available and gives carers some time for themselves. Because of the expansion of services, Katie Rose Cottage is calling for people to volunteer as personal and general carers

FISHERMEN APOLOGY PETITIONED OVER OYSTER CLAIMS Noosa councillor Ingrid Jackson last week called for an apology to be made to local fishermen when she submitted a resident's petition to Council's Ordinary Meeting to audit Noosa Parks Association records "for their claims that Noosa's commercial fishermen decimated the oyster reefs in the Noosa River and adjacent waterways". If proven false, misleading or offensive, the petitioner Trevor Clarey requested Noosa Council suspend public funding of the NPA and any future associated projects.
Council's CEO said that Council were unable to audit an independent association. However Councillors voted to receive the petition. In a speech following the petition delivery Cr Jackson said Noosa Biosphere Reserve Foundation project Bring Back the Fish project aquatic ecologist Simon Walker had clarified the cause of oyster reef depletion when he said, "river dredging for large scale harvesting and NOT fish and prawn trawling led to the demise of oyster reefs in Noosa estuary.
. . Trawling for fish and prawns did not begin on the Noosa River until the 1950s and should not have been included in the reference to commercial practices up to the 1930s". "I read the publicly available research papers by The Nature Conservancy, Ecological Services Professionals and Ruth Thurstan, the studies that underpin the Bring Back the Fish project," Cr Jackson said. "I found no evidence that trawling was the cause of oyster reef devastation. The damage was done by the
Moreton Bay Oyster Company in the late 1800s and early 1900s. "Regardless of whether Council can do an audit or not, the descendants of the fisherman families Clarey, Massoud, Ross, Tedford, Fritz, Hayes, Markwell, Boyd, Evans and Bowden request and deserve a retraction and an apology. "I call upon our community leaders to lead the way to achieving Biosphere goals by taking an inclusive approach and valuing all members of our community." ●

Tina Mayfield has been general manager of Cooroy RSL and Citizens Club Inc since 2013 and this month travelled to the club industry's Queensland awards night in Brisbane where she was presented with the award for the Best Licensed RSL and/or Services Club (small). What do you like most about your job/ business/organisation? I love the small community feel about our Club and the people within it. The staff are amazing to work alongside of. Our members without whom we would not exist, feel like friends and family and I am very blessed to be part of that, I consider myself very lucky because I actually love coming to work. What did you want to be when you were growing up? I was born in a small town called Invercargill which is located at the bottom of the beautiful South Island of New Zealand. Because of the weather, a lot of our activities where indoors. I was a Brownie and then a Girl Guide but I loved the outdoors so became rather good at skiing, horse riding, karate and still love rugby and would spend most weekends watching my Dad play rugby regardless of the rain, snow or howling winds. What was your first job? My first real job was at I.L.T. Invercargill licensing trust. They had many hotels in which I obtained a trainee management position. This entailed learning all aspects of the Hotel Industry. This was a 5 year traineeship that covered everything from kitchen hand, housemaid, restaurant, functions coordination, bar and gaming, administration and reception. I trained for 6 months in all these areas in 10 of the I.L.T Hotels and Pubs. What is your most treasured possession? I had to really think about this but I would have to say my Husband and Daughter as material possession come and go but family is forever. What's your favourite book? Pillars of the Earth by Ken Follett and Bad Jelly the Witch (kid's book by spike Milligan) What do you do to relax? Read a book down by the pool with a lovely glass of wine or entertain friends and family.

I guess because of my hours at work, I don't really watch a lot of TV but if I do, I tend to watch something on ABC or SBS. Although I have been watching a bit of Married at first sight. Other than that, I will look for movies on Netflix. What is your greatest fear? That's an easy one. NEEDLES. Yep I hate them to the point that the fear is so great that given a choice of swimming with really hungry sharks or having a needle, I would swim with the sharks first. And believe me, I am a really bad swimmer. What is your greatest regret? I actually couldn't think of anything for this as I try not to live a life with regrets. What is your next challenge? I love a challenge and in this industry,
these can be a daily occurrence. I guess for me, I would love to take on a really big Club as I think that would be very challenging What is your favourite dish at the moment? I love pasta and anything with cheese. I don't really do sweets but consider cheese my favourite junk food. What do you like most about living in Noosa? Everything. My Husband and I moved here four years ago when we re-located for my position here at the Club. We love it here as there is so much to do. We enjoy getting out on the motorbike and exploring all of the Sunshine Coast. We love it here so much that we ended up buying a house in Doonan two years ago. But more than
that, for me it's about the people, and I have meet some amazing people who are very passionate about their community and town, and the friends we have made since moving here. The Sunshine Coast is the perfect piece of paradise and we should never take that for granted. What is the most important thing in your life? Now that I have been given a second chance of life I would have to say, love what you do, be proud of all you do but always be true to yourself. You can't always control others actions but you can control your own. Live everyday as though it's your last and always tell those you love how special they are to you. But most of all remember to laugh.

THE EASTER EGG HUNT IS ON FOR SUNDAY Hundreds of children are this Sunday (March 25) set to descend upon Peregian Beach Community Kindergarten at Rufous Street this Sunday from 10am for its third annual Easter egg hunt. Director Carmel Desjardins said there'd be at least a thousand eggs for the hunt at 11am, so bring a basket.
"There's great excitement [on the day] and the kids are absolutely beside themselves," she said. The kindergarten's egg hunt drew about 400 people last year and with an open invitation this year that number is expected to rise. Entry is a gold coin donation for the hunt, face painting and tattoo stalls, hot
cross buns and coffee and cake stalls, with a special appearance from the Easter bunny and a raffle with $2000 worth of prizes. "It's a wonderful opportunity for parents who are considering kindergarten for their young babies to spend time in the garden, meet other parents and get a feel for the kindy environment," Carmel said. ●

NEWS WASTE NOT WANT NOT Peppers Resort and Spa are putting their waste to good use and gaining a return on their investment. Last year the resort invested in an enormous food composter to process its food scraps on-site and turn them into granule form which they distribute to disability support charity Sunshine Butterflies. Last week the fruits of their labour returned in the form of fresh herbs, grown at Sunshine Butterflies 5-acre hobby farm Our Backyard. The herbs are grown and picked by members and delivered to the resort in one of their 'Fresh produce boxes' also made onsite in their Chippies Corner woodworking program. The composter can take in up to
200kgs of food waste per day which it converts into a nutrient rich fertiliser which they use on their own gardens and offer to local produce suppliers. General Manager Steve McPharlin said the Peppers Team were grateful of being able to divert food scraps away from landfill. "The added bonus is that we get to support and work in partnership with local producers," he said. "Sunshine Butterflies are doing incredible things within their horticulture programs, and via their social enterprise Sunshine Gardens and Landscaping, and we are excited to be working together to close the loop of our produce cycle." Noosa Biosphere Foundation Reserve (NBFR) and Noosa Community Biosphere Association (NCBA) are discussing the way ahead following the resignation of three committee members including the president. NBFR chairman Dick Barnes said NCBA had requested the meeting. He said filling committee vacancies was a matter for NCBA management committee and membership in line with their constitution. "It is designed and constituted to be a volunteer organisation with community membership," he said. "As the NCBA's first President who led the Steering Group through its formation, I am eager to see the group continue to be an effective and valuable link within the community. SPEEDING TRAP Surprise surprise, the speed camera located between the Doonan servo and the Doonan roundabout has made it into the 10 most lucrative location list in Queensland. This is rather surprising, considering that this camera is only in operation for one hour a week, at peak hour between 8 and 9am on any given day of the week. Collecting over $500,000 for 50 hours' work, or $10,000 an hour! It means that more than 60 drivers (or one a minute) every week, get caught driving between 66 and probably 75km/h just before they get to the roundabout. I personally got caught crawling behind four other cars at 67 km/h on that same spot, which meant that at that particular instance, the camera caught the five of us, collecting $810 (five x $162 fines) within five seconds! So why are so many drivers on their way to work getting caught on that specific location, you may ask? Simple, it’s all to do with finding the perfect location for speed cameras, and Queensland Transport have become real expert at it. Their favourite locations are when a single lane becomes a double lane ( Doonan), and between a 60 and 80 km/h sign (going out of Cooroy, on the Cooroy- Noosa Road). In both cases, human nature will make most drivers slightly accelerate and put themselves just over the limit. It’s very cunning, and has nothing to do with road safety or excessive speed. It’s there to raise revenues and doing a wonderful job at it. You have been warned. Dom Massoni, Verrierdale.
VEGANISM IS NOT A FAD DIET I am writing in response to Vanessa Gregory’s letter (NT, 15 March) to refute the claims concerning veganism. Since when do vegans advocate keeping farm animals as pets, and by us promoting veganism causing animals to be slaughtered. Firstly, isn’t this what happens to them anyway, even dairy cows that have a life expectancy of around 20 years are slaughtered once they are no longer profitable. I envisage as demand for meat reduces

If this claim was true, why are US health insur-
ance companies now offering lower health insurance to vegans? I would also like to point out that Omega 3 fatty acids are available in vegan diets by including roasted soybeans, flaxseed, kelp, walnuts, chia and mustard oil. Generally vegans do take B12 supplements but this should also include meat eaters. At least by taking a supplement I know I am getting sufficient B12 in my diet. I would also like to point out that grass-fed cattle contribute to global warming as on average a cow emits 100 kilograms of methane (a greenhouse gas) per annum and there are about a billion of them globally.
Veganism is not a fad diet, it is an ideology which has been around for many decades. My husband and I became vegans because we love animals and wanted a kinder world, but the benefits we have reaped from a health perspective have been outstanding. We have found in general that the vegan communities are very knowledgeable in regards to diet and I encourage people to do their own research into their diet choices as there is a lot of disinformation bandied about. GENERATIONS TOGETHER Noosa Community Support brought residents from both ends of the age spectrum together last week for a morning of laughs and intergenerational camaraderie. Busy Bees Kindergarten children visited Noosa Community Support (NCS), where they were gifted handmade wooden toys, including cars, planes, prams and chairs. "Our NCS clients under the guidance of volunteer Steve McEwan have been busy making wooden toys for the children and they were thrilled to see their smiles when they received them," NCS spokesman Geoff Brittain said. "The children joined our clients in activities, and we are looking to build
regular visits into our future monthly activities program. We know from past experience that both our clients and the Busy Bees children enjoy each other's company and interaction," he said. "Older people often enjoy the opportunity to pass on their skills and wisdom to youngsters, who benefit from additional role models. "Some of the other benefits include helping to reduce depression and feelings of social isolation among the elderly. And for children who don't have regular contact with their own grandparents, meeting other older people can help fill that void." ●

POOCH PARADE WAS PRETTY PAWESOME BY MARGARET MACCOLL
There were 120 preened poochers in the Pawsome Paws Parade at Original Eumundi Markets on Saturday. Co-organiser Jan Ammitzboll said the fun event began last year and has expanded with a range of add-ons including a kissing booth and categories such best look-a-like, best hairstyle and scruffiest. The dogs showed off their glad rags in a parade through the markets led by Brazilian band Sambazzy.

DAMI IM LIVE PERFORMANCE AND SIGNING AT CIVIC X Factor winner and Eurovision runnerup, Dami Im will visit Noosa to celebrate the release of her brand new album 'I Hear A Song.' As the name suggests, the guys in this caf¨¦ know how to do coffee! Fuel up on some eggs benne or jump out of bed earlier and grab the Monday to Friday special between 6.30am and 8.30am, freshly made bacon and egg roll with barista made regular coffee for only $14.90. For something more substantial, The Grind Caf¨¦ has a selection of mouthwatering meals. Tuck into a steak sandwich with super juicy eye fillet or a pork belly salad, or pan-fried chorizo, garlic mushrooms and baby spinach on toasted sour dough with Meredith goats cheese, poached eggs and pistachio dukkha. Meat lovers rave about the Wagyu beef cheese burger with vintage cheddar, house chutney, red onion pickles and aioli on a brioche bun plus chips. The crispy bacon with wilted baby spinach on house-made hash browns, topped with poached eggs, dill hollandaise and micro herbs is pretty special too. METHOD STEP 1 Place flour, cocoa, sugar, Milo and butter in a food processor. Process until mixture resembles fine breadcrumbs. Add egg yolk and 1 tablespoon iced water. Process until mixture just comes together. Turn out onto a lightly floured surface. Gently knead until mixture is smooth. Divide mixture in half. Shape into 2 discs. Wrap in plastic wrap. Refrigerate for 20 minutes. STEP 2 Preheat oven to 170C/150C fan-forced. Line 2 large baking trays with baking paper. Roll out 1 dough disc between 2 sheets of baking paper until 5mm thick. Using a 7.5cm round cookie cutter, cut rounds from dough, re-rolling and cutting dough trimmings. Place,
2cm apart, on 1 prepared tray. Bake for 12 to 15 minutes. Cool on tray for 5 minutes. Transfer to a wire rack to cool completely. Repeat with remaining dough disc and baking tray. STEP 3 Place chocolate in a microwave-safe bowl. Microwave, uncovered, on MEDIUM (50%), stirring every minute with a metal spoon, for 1 to 2 minutes or until melted and smooth. Spread each biscuit with chocolate. Decorate with sprinkles. Set aside for 30 minutes or until set. STEP 4 Meanwhile, lightly whisk egg white and lemon juice in a bowl. Gradually add icing sugar to egg white mixture, whisking until smooth and combined. Spoon 2 tablespoons icing mixture into a separate bowl and tint pale pink with food colouring. Cover surface with damp paper towel. One by one, spread marshmallow puffs with white icing to coat. Toss in coconut. Place on a wire rack set over a tray. Sandwich 2 mini marshmallows together with a little icing. Press to secure. Spread with icing. Toss in coconut to coat. Repeat process with remaining mini marshmallows. Using a little icing and the picture as a guide, attach small marshmallows to the centre of each marshmallow puff to form bunny tails. Lightly press until secure. STEP 5 Using a sharp knife, cut strawberry from strawberries and cream lollies and discard. Spoon pink icing into a snap-lock bag. Snip off 1 corner. Using picture as a guide, pipe icing onto uncut side of cream lollies to form feet. Set aside for 20 minutes or until set. Using white icing, attach each bunny bottom to the centre of each biscuit. The entree was an individual spanakopita and beetroot labne, kataifi wrapped prawn with honey sesame. The main course was the Greek classic lamb moussaka, which received rave reviews taking some regulars down memory lane. To finish, they served a modern version of Loukamades; Greek doughnuts with a salted caramel sauce a creamy white chocolate ice cream and a crispy macadamia baklava. All those exquisite flavours for only $49 per person. They have already planned their next event for 13 July - a French night to coincide with Bastille day, so mark that one in your culinary calendar. PROTEIN KEY TO WEIGHT LOSS BY HOLLIE HARRIS Eating more protein, especially at breakfast, could be the key to achieving healthy weight loss, according to a new report released today by CSIRO. The report, Protein Balance: New concepts for protein in Weight Management, affirms the benefits of the CSIRO Total Wellbeing Diet for weight control and reveals that the latest scientific evidence supports eating at least 25 grams of protein at each main meal to control hunger and enhance muscle metabolism. The new Total Wellbeing Diet Protein Balance program focuses on shifting more protein consumption to breakfast. "The average Australian eats much lower amounts of protein at breakfast, so increasing breakfast protein may help to control eating later in the day," Senior Principal Research Scientist for CSIRO and co-author of the CSIRO Total Wellbeing Diet, Professor Manny Noakes, said. "If you find it difficult to control what you eat, a redistribution of protein toward breakfast may be the answer to reducing your waistline without leaving you ravenously hungry and craving unhealthy foods." The CSIRO report showed that for most Australians, protein intake was skewed towards the evening meal, with only small amounts eaten at breakfast. On average women consumed 11g of protein at breakfast, compared to the male average of 15g. The report also found that older Australians consumed the least amount of protein at breakfast but needed more protein to prevent muscle loss. "The scientific evidence supports a higher protein diet, combined with regular exercise, for greater fat loss. Eating at least 25g of protein at main meals can assist with hunger control," Professor Noakes said. According to the report, Australians get over one third of their dietary protein from low-quality sources such as processed foods, instead of whole protein sources including lean meats, fish, eggs, legumes and dairy.
Adopting a higher protein, moderate carbohydrate, low GI diet is a nutritious way to lose weight and has been scientifically validated for some time, underpinning successful programs such as the CSIRO Total Wellbeing Diet. Since launching in 2005, the CSIRO Total Wellbeing Diet has helped more than half a million Australians lose weight. "Two in three Australian adults are either overweight or obese, which increases their risk factors for many chronic health conditions," Professor Noakes said. "With a variety of genetic, lifestyle and personality factors at play, there is no such thing as a one-size-fits-all approach to weight loss, but there is a range of healthy ways to lose weight. "If we're serious about addressing this issue we need to continue developing a wider range of scientifically validated ways for people to lose weight, which is something CSIRO has done successfully over the years. "Introducing the new Protein Balance program for the Total Wellbeing Diet is another example of that." The innovation to the Total Wellbeing Diet online program will provide a new approach to the timing of eating protein, which may make a substantive difference for people who want to kick-start a healthier new year. WHAT’S THE PROBLEM, REALLY? PROBLEM solving skills are powerful tools for safeguarding happiness and success. While many problems are easily addressed, others seem beyond resolution. We leap from one ineffective solution to another. People suffer unnecessarily for years with problems that can often be quickly resolved. Essentially, counselling is about effectively resolving the myriad problems we encounter in living. Successful people are skillful problem solvers. Problem solving involves a specific process and skills that can be learned and applied to any problem. Key skills are listening and questioning
skills. Unresolved problems bring many couples to counselling. Sara and Tom's relationship was on the edge. They both defined the problem as Sara's jealousy. Much anger, frustration, hurt and resentment had built up from intense and frequent fights. Tom was deeply hurt and frustrated about being unable to convince Sara of his trustworthiness. Their solutions were to give Sara open access to Eric's phone and social media, and to do everything together from socializing to going to the gym.
By putting their focus on managing the jealousy, they had missed the possibilities for effective solutions. The source problem was Sara's deep insecurities about herself. Jealousy was simply how this problem was expressed in the relationship. The jealousy was no longer triggered after Sara's anxiety and negative beliefs about herself were addressed. The golden key to problem solving is to accurately define the problem. This requires identifying and sufficiently understanding all of the variables and their influences in the situation. The problem may not be what you think it is. Asking the right questions is vital. With sufficient information the true or source problem becomes clear. The problem solving process explores:
a) The source and contributing factors to the problem situation. b) How the problem is maintained. c) Interference such as assumptions, premature conclusions and habitual thinking. d) The impact of unsuccessful attempts to resolve the problem. Solutions will usually effortlessly reveal themselves as you work through the process. Selecting and then implementing the most effective solution is only the final step. No matter how intractable a problem may seem, all problems can be resolved. ●

FRIDAY ENVIRONMENT FORUM In March 1918, during the dark days of World War I, the Germans unleashed an attack upon the Allied forces on the Western Front. They used "home grown" tanks, the A7Vs, but only two of these tanks reached the Allied lines. The vehicle bearing Chassis Number 506 was named Mephisto. It was captured by Australian troops during a series of successful attacks in July that year. A recovery operation was mounted on the night of 22-23 July 1918. Mephisto was destined to become the sole survivor of the twenty A7Vs, a major war trophy and an icon of the Queensland Museum in Brisbane. The significance of Mephisto is the subject of this week's Friday Environment Forum on March 23 presented by Greg Czechura from the Queensland Museum. Celebrate one hundred years of a Queensland Museum icon by joining the audience at Noosa Parks Association's Environment Centre, 5 Wallace Drive, Noosaville to hear this fascinating story. RAINS MOVE GAMES AWAY Three teams from the Eumundi Dragons Rugby Union Club travelled to Noosa for some exciting games in place of Eumundi where the waterlogged fields were unplayable. The U9s played two mini- games, firstly against University and then against Maroochydore . In the first match the Eumundi boys were a little tentative in defence but all this changed in the second game against Maroochydore with solid defence and excellent support play ensuring the Dragons putting on a much better display of their Rugby skills , for the enjoyment of their cheering fans. Will Campbell-Jones, Max JohnsonThompson and Jett Herbert were very effective in attack with Craig Yaxley showng early glimpses of what he is capable of as a powerful forward. Both the U6s and U7s continued to display that they will be future champions of the game.Their skill levels have come ahead in leaps and bounds, as is a very evident team spirit in both teams. In the U6s Tristan Youd made some fantastic runs down the sideline while Isla Youd , Nya Johnson-Thompson , Nixon Griggs , Jack Cooper , Henry Dean and CJ Sands contributed to ensure that their Maroochydore opposition were left in no doubt that the Dragons are a force to be reckoned with !! The U7s also played a Maroochydore team with Brooklyn Griggs , George Hillhouse, Billy Gunton and Zac Eaton showing good combinations in attack and defence . Brody Ruster and Finn Rivers were both tireless players who are really starting to develop as integral members of the team. Special thanks to Jack from the U6s who helped out to ensure that we had a complete team on the paddock.That's the Dragons Spirit. The player of the morning for the U7s was Billy who was presented with the coaches " Eveready Award " for never seeming to run out of energy !! ●

Likewise, the festival's long-term contest director and now technical manager Alan Atkins - a multiple Australian champion - felt a bit weird after surfing a tough final at the Nationals last August and ended up having a triple bypass a day later. Former US champ Rusty Miller and multiple festival and Australian champ Bruce
Channon (both heart) made up the numbers, and we got to share some epic waves. Of course for every second chancer in the water there were about a dozen other survivors bummed to have missed out, so we're thinking about expanding the idea in the future, maybe giving it a division. If that session was a highlight of the week for me, there were many more magic moments in the surf and on the beach and photos

As I write this I'm looking over a near empty First Point, flat and deserted after almost eight days of pure stoke. We had to take the action down to Noosa West on the beaches for just a few hours on finals morning, but managed to finish in tiny peelers on the point on Saturday afternoon. But what will be remembered about the 2018 Laguna Real Estate Noosa Festival of Surfing is the seven days of superb surf that preceded that, possibly some of the best waves I've seen over more than quarter of a century of involvement in this, the world's biggest surfing event. (Nearly 600 competitors from 20 countries this year.) Certainly, one steep faced set wave that I jagged on Wednesday evening during an expression session will be etched in my memory for a long while. Thank you, Tropical Cyclone Lynda for getting just close enough to bring the waves but not the weather. The Second Chance Expression Session was an idea concocted over a beer or two as surfing icon Bob McTavish and I examined the swell charts on my phone at the XXXX Summer Beach Bar on Tuesday evening. Bob was one of the first people to surf Noosa's points with Pa Bendall and Hayden Kenny back in the late 1950s, and now, in his middle seventies, he still loves to glide a few whenever he can. "Bob," I said, "you do realise that the TC Lynda swell is going to start pulsing on the incoming tide tomorrow afternoon, don't you? The contest is scheduled to finish by 4.30pm, so we have to invent an excuse to put on a jersey and get out there!" Both Bob and I have had brushes with mortality in recent years - him with a stroke, me a heart attack - so we started thinking about all our other mates who have been through something similar and are still in the water every day. FUND-RAISING PUSH FOR LIFESAVERS BY RON LANE WITH the ever-increasing popularity of Noosa / Sunshine as a tourist resort, calls for courtesy patrols are naturally on the rise; and the follow-up to this is an increase in running costs for our surf clubs. As a result, two fund-raising events supporting Noosa Surf Life Saving Club were conducted last weekend; and Friday 11am was the start. The place was the Noosa Springs Golf Club and for an unbelievable sixteenth consecutive year it was an outstanding success. Great weather, great hospitality and 104 players hitting off on this beautiful green. End of play saw guests enjoying food and refreshments. Those in attendance were gratefully acknowledged by Surf Club general manager Anton Mogg, who thanked the various business houses and fellow sporting clubs for their ongoing support. Above all the Noosa Springs Golf Club. Sunday afternoon saw some 300 to 400 people pack into the big marque on Noosa Main Beach for a beach party. The marque was generously donated, (yet again by Phil Jarratt and his Festival of Surf team) as a fund raising tent for the Noosa Surf Girl entrant Olivia Blight; and this was greatly appreciated. Following a brief function to acknowledge nipper achievements of the year the party got under way. With local acts the Dennis Sisters Band (now in big demand) and Brad Schultz setting the mood for the introduction of the main attraction, American vocalist Lisa Hunt, her performance definitely gave truth to the advertisement - Beach Party of the Year. Backed by a superb five-piece band, after just three numbers the area in front of the

IT'S A WRAP! SOFTBALL GRAND FINALS SEE OUT THE SEASON Noosa softballers wrapped up the summer season with grand finals in two grades last week. In the U13s, Slammers who had been undefeated all season, got the better of Redsox, winning 18-8. Redsox played their best game of the season and the match was still anyone's at the end of the third innings, with Slammers just ahead 10-8. A strong fourth innings from Slammers where the players drew on all their training from throughout the season saw them declare the innings at eight over the plate. There was plenty of batting action in this high-scoring game, including 3-base hits from Xander for Slammers and Dylan from Redsox. Slammers kept Redsox at bay with some good fielding, including a great diving, sliding catch from Liam which put stop to a Redsox comeback in the third innings. For Redsox, Sam and Indi combined for a great double play after Sam's fly catch at third base. In the U15s Redsox 20 defeated Slammers 1. Slammers who have worked hard and improved in all areas throughout the season, did not give up For Redsox, Erin pitched consistently well and the rest of the team fielded strongly, including a double play from Lachie who took a good catch at second base. BIG WEEKEND FOR LOCAL CLUBS TURBULENT sea conditions during last week kept our lifeguards alert. At Noosa's Main Beach on Thursday the guards experienced a busy day, chief lifeguard Isaac Smith said. "Thursday for us was hectic; we had six rescues plus two dislocated shoulders," he said. "This was the result of large swell just off the coast but despite conditions the beach was well controlled and quick response from our team gave us good results." However on Saturday a fifteen-year-old boy was not so lucky. While taking a walk on the dangerous rocks at the Boiling Pot he slipped and as a result suffered a badly broken ankle. The alarm was raised and the jet ski patrol based at Noosa was sent. On arrival it was found that the injured person had to be encouraged to leave the rocks and enter the surf so as to enable the driver to have enough water to approach him without getting himself smashed on to the rocks. Sanity prevailed and the patient was rescued. For some the swells were welcome as Noosa was again hosting the Annual Festival of Surf and for once the evergreen Phil Jarratt, who for years has been the organiser, was all smiles. A good week was had by all involved and as usual Phil finished off the week by donating the use of the big marque on Main

chaired the JAC but has also been a massive help behind the scenes to her proud dad Phil Jarratt, in helping organise the Festival of Surf. Last Friday saw the commencement of our state championships at Maroochydore with the masters events getting under way. In keeping with recent successes in boat competition, two Noosa masters crews performed well to win a gold and silver medal in their events. On Sunday the u/19 boys kept the boat tradition alive and well by winning gold in their final and the u/19 girls' crew, known as the Scrub Turkeys, won the silver. Two gold and two silver in the boat section, consolidating a tradition that started way back in 1949. When we speak of traditions it was great to see Noosas Lana Rogers win the ladies Open Belt Race. For many years this was a major blue ribbon event but for some reason it started to die, but now it has seen a revival. So well done Lana. Over all Noosa did well winning five gold, six silver and one bronze while at Sunshine they finished with two gold, five silver and six bronze. Once again the performance of their u/17s has been nothing short of fantastic and again the name Ruby Nolan was prominent, as were others. Well done to all Sunshine u/17s. GREAT OFFSHORE FISHING With the swell and wind finally abating, offshore anglers were able to make the run outside. One of the best things about this time of the year is seeing the best of both worlds, with the warmer currents sticking around keeping the pelagic bite hot. Tuna have been very active around the reefs in close to Noosa. They have been in schools of large numbers around Jew Sholes, Halls Reef and Sunshine Reef. The trick is to keep a good range of metal slugs in the tackle box so you can match what they are feeding on. For the small craft that don't feel comfortable making the trip to the Barwon Banks or the Hards Banks then Sunshine reef is a great option with sweetlip, Maori cod, squire and quality trout hanging around. Sunshine Reef is also a great place to give Mico Jigging a go, with the shallower reefs you can use some of the lighter jigs. North Reef has also been firing with Moses perch, hussar, grass sweetlip, Venus tusk fish and smaller snapper all hitting the decks. Double Island reefs would be where I would be heading in the hope of bagging some big pelagics. Spanish mackerel wahoo and large tuna have all been reported. The Barwon Banks have also been giving up some nice fish including Mauri cod, trout, pearl perch, snapper, cobia and jew. On the beach there have been some good sized bream in the gutters around Sunshine Beach at the top of the tide. Flathead have also been amongst them taking frog mouth pilchards on gang hooks, as well as fresh noosatoday.com.au
mullet and Bonito strips. Dart have been seen in great numbers spread all along the eastern beaches, with the better fish coming from the top of the tide. The kids love catching dart as it is one of the easiest fish for the little ones to catch. Peeled prawns, live worms and squid have been the baits to use for them. The southern beaches around Coolum and Yaroomba are a great spot to chase whiting. Live worms, yabbies and fresh pippies have all done the job on the whiting. The best tide to catch them has been the start of the run out. The Noosa River has been producing some great fish. Trevally have been in the river system in good numbers. Surface poppers and walkers have been the way to go with plenty of fish taken on the morning tide. These predatory fish follow schools of bait on the tide so areas like Woods Bays, the current line and the mouth of the river have all been prime spots. If you are going to fish the river mouth, have a go with slugs on a fast retrieve. You may also see tailor and Queenfish feeding on those bait schools. Fishing the mid-sections of the Noosa Rivers has also paid dividends. Drifting down with the tide flicking prawn profile and paddle tailed soft plastics has resulted in anglers picking up some nice flathead in the drop offs near the sand banks. With the rain we have been having and the water colour of the river at the moment, it is also a good idea to head up river and fish for threadfin salmon as they can become active in these
