$23m lotto win A Narre Warren man is keen to get plenty of stamps in his new passport - once Australia's borders open - after finally claiming his $23 million Powerball division one prize five days after the draw. He held the only division one winning entry across Australia in Powerball draw 1249, drawn Thursday 23 April, scoring the division one prize of $23,686,120.08. The multi-million-dollar winning entry was not registered to a Tatts Card, which meant officials from the Lott had no way of contacting the winner to break the incredible news. When an official from the Lott confirmed the life-changing news with the winner on Tuesday 28 April after he revealed he had just checked his ticket after ducking out to pick up some lunch. "You're joking! That's unbelievable! You've got to be kidding me!" he exclaimed. "This just can't be right. I didn't expect this news. When I scanned the ticket and they told me they couldn't pay it in the store I thought it was because it had been cancelled - not that I had won $23 million. "I guess I can buy more than a couple of bread rolls for lunch! "I buy an entry every week and I only ever check my tickets when I put the next entry on but I've been a bit out of routine at the moment. "It's just unbelievable. I still can't get my head around that this news is real. "I'm sitting in my car shaking. I think I'll have to sit here for a while to calm down before I drive home." When asked how he planned to enjoy his new multi-millionaire lifestyle, the shocked but happy winner confessed he would be enjoying his imminent retirement by travelling the world when he could. "Well I am still working because I haven't been able to afford to retire up until now but it's safe to say that retirement will be on the cards!" he declared. A different Anzac Day, but not one to be forgotten By Brendan Rees This year's Anzac Day was like no other due to stay-at-home restrictions - but the nation rose to honour the fallen by standing quietly in their driveways, glowing with candles as flames of remembrance flickered into the still night air. Riley’s heartfelt plea By Brendan Rees A Narre Warren teen has set up a GoFundMe fundraiser for his beloved Nanna who has degenerative eye disease, requiring laser surgery. Riley's Nanna cannot afford the surgery, and if she doesn't receive it, she will go blind. According to Riley, the family also isn't in a position to pay for it either. "Due to Covid-19, my family does not have the financial stability to provide her with the $2200 she desperately needs for the surgery to save her vision," Riley says on the GoFundMe page, which has raised $990. "With the opportunity to start treatment in a week we have no other option but to turn to others who may be able to help support my Nanna in this time of need." Riley, 17, who is one of three grandchildren, has a close relationship with his Nanna who he says "has been an active part of my life" and "support's me in everything I do". Special memories include his Nanna babysitting him as a child while his mum worked
part-time; attending his kinder and school events; and watching him play basketball and football. Riley said the coronavirus lockdown was hard to visit his Nanna in Noble Park often but contends: "We've checked up once or twice and she's saying she's been doing OK". Once Riley reaches the desired fundraising goal, he has vowed to shave or colour his hair, with the results to be posted on his GoFundMe page. Heartbroken cop helps raise $75k for fallen officers By Brendan Rees A grief-stricken Narre Warren police officer, who launched a fundraiser for the families of four cops who died in the line of duty, has helped raise more than $75,000. Senior Constable Steven Pope had launched a GoFundMe page just hours after the tragic deaths of four police officers who died when a semi-trailer collided with several cars including a Porsche on the Eastern Freeway in Kew on Wednesday 21 April. "I cannot thank you all enough for your acts of support and generosity shown towards the

families," Sen Const Pope said on the fundraiser. "Collectively you have raised over $70,000 in a matter of hours - the compassion shown for our frontline is overwhelming." Sen Const Pope had hoped to raise $2 million - $500,000 for each family, however, further donations for the fundraiser named the 'Thin Blue Line - Eastern Freeway Tragedy' have been suspended with Sen Const Pope asking anyone wishing to support the officers' families to donate to Victoria Police Legacy. "I've been working closely with GoFundMe
to ensure that all donations reach the families. The money will be donated to the Victorian Police Legacy Remembrance Fund, who will in turn pass on the donations directly to those impacted." Police say two police officers had pulled over a Porsche about 4.50pm, which they had decided to impound due to its driver testing positive to illicit drugs. Shortly after the two highway patrol officers were called to assist at the scene in the emergency lane of the Eastern Freeway, a large refrigerated truck - driven by a Cranbourne man - veered into the emergency lane and
ploughed into the four officers. On the fundraiser, Sen Const Pope said: "Whilst we mourn their loss, we grieve with their families and colleagues." "Whilst money can never replace a lost loved one, the financial stresses can take their toll. Covid-19 cases plateau By Brendan Rees The rate of the Covid-19 infection in Casey City appears to have slowed, with no new cases reported for days, according to the state's latest health data. The Victoria's Department of Health and Human Services figures showed, Casey's tally remained at 53 - a statistic which had remained unchanged for the past nine days, as of 29 April.However, across the state, one new death reported in the 24 hours to Tuesday 28 April, a woman in her 80s who was in hospital, bringing the state's death toll to 18. The total number of Covid-19 cases in Victoria stands at 1354 - which is made up of 701 men and 653 women, with people aged from babies to their early nineties.
There are 139 confirmed cases of coronavirus in Victoria that may have been acquired through community transmission. Currently 18 people are in hospital, including nine patients in intensive care. So far, 1,287 people have recovered. In other parts of the southeast, cases in Greater Dandenong had remained unchanged for the past week with 14 confirmed cases and 13 in Cardinia. Premier Daniel Andrews said Victorians had done a "remarkable job" sticking to stayat-home restrictions, but urged everyone to with the mildest respiratory to get tested for Covid-19 as part of the State Government's aim to test 100,000 people over the next fortnight.
The massive expansion of testing, he said, would help inform decisions about slowly lifting restrictions ahead of the State of Emergency being reviewed on 11 May. The testing blitz will be carried out through a combination of drive-through and walk-up clinics, as well as new mobile screening clinics to visit homes and workplaces. More than 104,000 Victorians have been tested to date. There are already 43 specialist sites across Victoria where testing can be undertaken, with more testing clinics to be opened during the week in regional and rural areas. According to Victoria's Chief Health Officer Professor Brett Sutton, people with common symptoms of coronavirus including fever,
chills, cough, sore throat, shortness of breath, runny nose or loss of sense of smell are encouraged to get tested. "Our daily case numbers are still low which is encouraging. They prove that our physical distancing measures are working but this is not a time to relax our strong approach - this disease can get away from you very quickly as we have seen overseas," he said. Meanwhile, Victoria Police officers reported fining 53 flouting social distancing rules in the 24 hours to Wednesday 29 April. This included six males gathering at a school car park, five people in a car together having lunch, and multiple people committing criminal offences, including burglary, theft and drug related offences.

The photo of the road works was sent in by a couple who said: “Interestingly, both signs on opposite sides were the same.” The photo appeared to show road work signs facing the wrong side of the road instructing drivers to slow down to 40km/h and that the ‘merge’ lane was ‘closed’.

The 28-year-old Hampton woman has been charged with theft and four counts of commit indictable offence while on bail. Both were remanded to appear at Dandenong Magistrates' Court on Tuesday 28 April. While committing the offences, the pair were also found to be in breach of the directions issued by the Chief Health Officer and were issued a $1652 penalty notice. The directions by the Chief Health Officer, under the State of Emergency declared in Victoria, have been enacted to help stop the spread of Coronavirus. Signs point to confusion
Police have charged a man and woman following a dramatic chase that ended in Hampton Park on Monday 27 April. Police say units had responded to reports a blue Ford Falcon sedan was driving erratically in the Narre Warren area about 3.30pm. Local units located the car travelling on the Princes Highway at Berwick and discovered it was unregistered with alleged stolen plates, police say. The police Air Wing then assisted the officers on ground and followed the car where it allegedly reach speeds of 150hm/h in the emergency lane on the Monash Freeway. The driver of the Ford continued to Hampton Park and dumped the car in Nola Court before attempting to flee on foot with his passenger, according to police. With the assistance of the Dog Squad, police arrested the pair shortly after and allegedly located what is believed to be cannabis and stolen plates inside the car. By Brendan Rees Ron ‘Buck’ Taylor was a 24-year-old leading seaman when his ship, the HMAS Yarra II, came under attack by Japanese warships in 1942. “Ron was the last sailor still firing the only operable four-inch gun even after the abandon ship order was given,” says his great nephew, Garry Taylor of Cranbourne East, who paid tribute to his memory on Anzac Day. “Sadly, Ron like many of his other shipmates went down with the ship.” Today, Mr Taylor, heads a national memorial committee for the HMAS Yarra II, which, after 75 years, received the only unit citation of gallantry in Australian naval history. 1213124-EB02-16

On the 25th of April every year my family and I participate in Anzac Day ceremonies, although this year presented a great challenge, we were determined to do our bit by participating in a dawn service from our driveway. We flicked the television onto the ABC and watched their coverage of the dawn service from the Australian War Memorial in Canberra before heading out to our driveway, where we held candles and participated in a minute silence to remember those who fought bravely and sacrificed themselves for our freedom today. Anzac day to my family has a pretty significant meaning, with many family members participating in wars throughout the last century. But none are more interesting on a personal level to me, as the story of my great great-uncle Private Leslie Joseph Fairbrother who was a member of the 2/21st Australian Infantry Battalion. Unfortunately, Leslie died on the 24th of April 1944 whilst serving in Ambon and his name is located at Panel 46 in the commemorative area at the Australian War Memorial, which my family has been lucky enough to go and visit. I believe that this year’s Anzac Day celebration offered a new way to participate in Anzac Day, as some people are unable to attend dawn services or marches throughout the day, they can continue to pay their respects this way, and it my hope that this will be the beginning of greater participation by all Australians in marking this very significant day. Anzac with a difference By Brendan Rees Flames from their candles flickered into the crisp, still morning air as they gathered quietly in driveways, some still in their pyjamas, to pay their respects. In a moving display of solidarity, families participated in their own dawn services on Anzac Day as the coronavirus halted decades of tradition. This year's Anzac Day certainly looked different but one not to be forgotten. There were no dawn services. No gatherings. No beers or rowdy games of two-up; nor was there veterans' marches where children would normally wave their flags from footpaths and be eager to learn about the Anzac spirit - after stay-athome restrictions forced RSLs to cancel the ceremonies. Like many, Bill Shepherd, senior vice-president of the Dandenong Cranbourne RSL subbranch, took to his Botanic Ridge driveway just before daybreak with his wife Joan beside him, proudly wearing his medals pinned to his RSL jacket, in the 'Light up the Dawn' movement - an initiative introduced by the Victoria RSL this year to honour our servicemen and women, both past and present. "It was great to see so many families out in their driveways with candles and tributes in hand," he said. "So many had poppies in their front gardens made by children. I think this might start a new tradition, as many of these people might go to a future dawn service, and others may have one in their own street, like this year. We met people in our street that we have not spoken to before." For Chris McKenna, secretary of the Berwick RSL, his day consisted of laying a wreath at 6am at the Bunjil Place cenotaph and later at the High Street cenotaph in Berwick as well as reciting the Ode - in a "simple little gesture" - to honour the fallen.

"The 'Light up the Dawn' was pretty special just from watching it on the news that night. I think that was a noble gesture on everyone's behalf," Mr McKenna said. Mr McKenna, a 38-year-veteran of the Australian Army's Royal Australian Engineers Corp, said it was sad not being able to catch up with mates on Anzac Day but was most "humbled" by the community in doing their bit to pay their respects - including laying a wreath at various war memorials. "A few people drove past and tooted their
horns; as proxy as it might sound, a noble gesture," he said, referring to the High Street cenotaph. The owner and staff of Tilly's cafe at Berwick Marketplace made little Anzac lanterns out of the bottoms of milk containers and gave the proceeds to Berwick RSL, raising more than $1000. President of the Berwick RSL, Wayne A'vard, said despite this year's different format of Anzac Day, the community's willingness to adapt to the coronavirus restrictions was "absolutely magnificent". "It's just wonderful to see."

The bell may have rung for the first day of term two - but there was a sullen silence that hung over the school grounds across Casey. Classrooms were near-empty as thousands of parents heeded the advice of Victoria's chief health officer by keeping their children at home due to coronavirus restrictions, which began Wednesday 15 April. Chris Black, principal of St Peter's College, which has campuses at Cranbourne and Clyde North, said while teaching remotely had proven to be "a strange environment," he "couldn't be happier" with the way the school had adjusted to the new schooling regime. "The ability for us to be able to prepare for it, I think was really helpful," he said, adding about 20 students had been attending classes across its both its campuses. "It's a work in progress but we're more than satisfied with what we've been able to achieve." Narre Warren North Primary School principal Connie Vandervoort said despite some issues with technology, the first few days of remote learning had been "going really, really well". "I am really, really proud of the teachers with how they have stepped up," she said. "Every grade from prep to six has Google Classroom," Ms Vandervoort said, with the school also adapting well to other forms of online video conferencing tools including Zoom and Google Meet. "I was blown away by the positive comments from parents about how it's going." The school was also running classes for about 20 children under the eye of teachers rotating on a roster to assist. The students, Ms Vandervoort said, were undertaking the same online classes as their classmates at home. And while she understood the new learning environment was "really difficult," Ms Vandervoort applauded the school's teachers - whom she described as "amazing" - for stepping up to the challenge of delivering its education program. Henry Grossek, principal of Berwick Lodge Primary School, said while parents had responded well some were "struggling to catch up with the technological aspects" with staff spending "considerable time daily in providing them with advice". "It is certainly not a level playing field for learning for all children, as the circumstances in every home are quite different and for some, unfortunately not good," he said. Mr Grossek was also confused as to why the Victoria's remote learning model was at odds with the Prime Minister's message which called on parents to send their children to school. "Imagine classrooms with up to 30 children and schools with hundreds of children and scores of staff - that would result in total breach of all the social distancing guidelines," he said. "Put another way, children can't attend a friend's birthday party, but under the Prime Minister's scenario, they would be side-by-

Council’s Covid help Casey Council is continuing to support the community to manage the far-reaching effects of the coronavirus pandemic with a range of social and economic support measures. To date, nearly $41,000 has been provided to 16 community organisations through Casey's quick response grants program, with payments fast-tracked to ensure organisations receive their funding as soon as possible. This funding has supported a range of organisations to purchase essential items such as: Food containers, kitchen equipment and other essential supplies to support emergency relief food provision Safety/protective equipment for volunteers involved in service delivery Activity packs for children whose family have limited access to online activities and resources Fuel vouchers for volunteers delivering meals to vulnerable residents Food and personal items for vulnerable clients Mobile phones and data to assist staff to deliver over the phone services to vulnerable clients Casey Council interim administrator Noelene Duff said in addition to community grants, council had also helped facilitate food parcels, provided rate relief, waived and reduced some permit fees and provided additional assistance to businesses and community groups to help them cope during these unprecedented times. "Many of our teams have also been identifying opportunities for appropriately trained and skilled Council employees to contribute to the direct delivery of community services to meet expected increase in demand. For example, redeployed council staff have been delivering meals on wheels and community transport, services which are usually provided by volunteers," Ms Duff said. "While many changes have occurred across the community due to the Coronavirus epidemic, Casey Council is continuing to find ways to enable continued service delivery and resident support." Examples of Council's community support and response initiatives include: More support for community and sporting organisations The Grants Team has been working with community organisations to identify specialised non-council grant funding opportunities and assisting with the preparation of grant applications. Assistance for community organisations to enable continued emergency and food relief by helping them to recruit volunteers through the Volunteer Matcher Program. The Community Care team is undertaking regular phone check-ins and monitoring of current Community Care clients who receive our services. The Public Health Team has changed the syringe container exchange program, now delivering empty containers directly to homes that need them. The Leisure Facilities Team has been working with council's contract provider (YMCA) to provide free access for members to online fitness platforms. They have also provided access to an activity workbook so our Learn to Swim families can maintain aquatic education. Sports grounds and building maintenance charges have been waived for the duration of the winter 2020 season. In addition, a credit of $20.00 per pavilion, per month, is being provided for the duration of the COVID-19 restrictions. This is to assist with the cost of electricity associated with the continued running of security lights, alarms and security cameras. Relief for rates and other charges Where possible, we are providing flexibility for rates payments to affected customers. Council have also modified programs and events offered through the Casey Cardinia region to respond to critical current business needs. Introducing new streamlined payment terms to support our suppliers, including suspending our usual 30-day payment terms and committing to paying our invoices (where purchase orders are in place) within ten business days of receipt of goods and services. Casey Council CEO Glenn Patterson said Covid-19 was having a significant impact on the community and in turn on the City of Casey. "We are working hard to find a balance between financial sustainability to see us through this pandemic for the long-term benefit of the Casey community, while also being able to be kind and responsive to the pressures our residents are facing every day," he said. Neighbours dig in By Brendan Rees 'Non-destructive' digging has begun on a major road project in Berwick, angering residents of an adjoining estate, who say they were not "consulted" about a six lane proposal. Major Roads Projects Victoria (MRPV) plans to widen O'Shea Road in each direction - making it six lanes in total as part of the Monash Freeway Upgrade, which is due to be completed in 2022. Works began early this week to locate underground services, such as electricity, gas and water that run alongside Greaves Road and O'Shea Road, between Domain Drive and Soldiers Road - as part of early construction planning and design for O'Shea Road. "These works will allow us to get on with the important job of upgrading O'Shea Road to three lanes in each direction and extending it to join the Beaconsfield interchange," program director of MRPV, Ray Paterson, said. "This will improve traffic flow and travel times and make it easier for local road users to connect directly with the Monash Freeway." However, residents of the adjoining Affinity
Estate say MRPV had reneged on their proposal to widen the road to four lanes rather than six - which was "unforeseen" with "no submissions" sought from the community. They have also submitted a 354-strong petition to Casey Council in early April, asking for "urgent action" for the project to be kept at the four-lane proposal and include noise barriers. With Casey City being one of the major areas for new housing being developed on greenfield land, MRPV says the current road infrastructure would be unable to cope with the increased demand, which is why O'Shea Road is being upgraded and extended. Between now and late May MRPV will complete non-destructive digging, which involves using a vacuum truck to excavate soil and debris to locate and identify underground services. These works will take place in the road reserve on the north and south side of Greaves Road and O'Shea Road. MRPV maintains there will be no disruption to essential services during these works. During the early stages of consultation and
promotion of the project, the final design of O'Shea Road was still to be determined and MRPV says the word 'duplication' was used to relay that that a dual carriageway with centre median would be constructed, adding this was not intended to imply a certain number of lanes. "In early 2019, MRPV identified the assumption within some members of the community that 'duplication' meant O'Shea Road would go from two lanes to four lanes, instead of the final design of six lanes," MRPV said in a statement. "Once identified, references to 'duplication' were removed from all communication materials to avoid any further confusion about the final design of six lanes. This has since been communicated this with the community via community updates, and pop up information sessions." An Affinity Estate resident, who asked not to be named, questioned why work had begun "when outstanding objections and petitions have been lodged and no satisfactory outcomes to these objections have so far been received."
One of the recommendations from the Casey monitor before the council was dismissed in late February addressed the search for new civic leaders to refresh to ranks when elections are held in 2024. The issue was raised at a public Casey Council meeting under interim administrator Noelene Duff in early April, with the advice that under the Covid-19 restrictions not much could be done to pursue the recommendation at the present time. While the Casey administration has had to put the matter on hold for the foreseeable future, there’s nothing stopping Casey’s various communities and community groups from identifying, encouraging and cultivating the community leaders of the future. There’s a strong tradition across the state of councillors being recruited from the ranks of progress associations, service clubs, community groups and diverse communities; as well as from the ranks of industry and commerce; and political aspirants. Community groups provide an ideal training ground for engagement with issues, public debate, meeting procedure, finances, policy development and community improvement. As extra scrutiny will be given to the incoming Casey councillors in 2024, it’s also essential that potential leaders have a sound moral compass and sense of ‘service above self’. With more than four years to go until the next popular election in Casey, there’s more than enough time to keep an eye out for potential candidates. The danger will be in doing nothing for four years and - instead of getting the calibre of councillor the thriving city deserves - Casey getting more of the same.
Many diverse groups in Casey should mean a good range of candidates for when council elections resume in 2024.
Virtual connections help keep good company in isolation By Jonathan McQuie As the majority of the country self-isolates and social distances in accordance with the federal government's instructions, young people are utilising the online tools at their disposal to form community despite the distance between them. Berwick College teacher's aide Anthony Groza has been at his home in Hampton Park since the start of the school holidays, and isn't certain as to whether he'll have work once school returns. While Mr. Groza is typically comfortable in his own company, many of his friends are extroverts and crave interaction with others. "I make sure that I'm keeping up with my friends, but I don't go out of my way all too of-
ten to catch up with them. I know that other people aren't like me, and they do require social interaction." To ensure that they have a safe space to connect during this period, he decided to use the online platform Discord. Discord is a chat app, similar to other communications platforms such as Slack or Google Hangouts, and is geared towards allowing video gamers to coordinate and talk while playing. On Discord, members are able to create chat rooms known as servers, where users can invite others to join. Establishing the server took a significant amount of effort, as Mr. Groza copied and pasted an invite to almost every person on his
Facebook friend list for an hour. "The only reason I didn't do everyone was because my hand was cramping." For the purposes of creating community, part of Discord's appeal is that it can be broken down into sub-spaces known as channels to discuss specific topics. "I've set up a second voice chat for people to hop on and study and keep each other accountable. We're going to be working and studying and ensuring that we're focusing on that." "They can play some games and have a good laugh. A lot of people are missing the opportunity to do so at the minute. It's providing a way for people to connect irl." By Wednesday 22 April, there were 73 peo-
ple on the server, as his friends invited people they knew. Mr. Groza has enjoyed seeing the organic growth of this online community beyond his own circle of friends. "It's cool being able to see new people on the server meeting others an being able to chill with them. It's bringing my social circles together a bit." Even once isolation ends, there's hopes that the server's life will continue. "'I'm assuming by the time restrictions are lifted, a solid community and culture will have developed on the server and it will be in most parts self-sustaining. It will be cool to keep it up and host game sessions and things like that."

By Andrew Cantwell While the world’s attention has been turned to matters of survival in the Covid-19 pandemic, the Casey Council has been hard at work on matters of revival, assessing changes to its operations in the post-councillor period. The administration has in the past two months taken a good hard look at itself ... under the watchful eye of interim administrator Noelene Duff. At the council’s meeting on 7 April, Ms Duff considered an audit report on Casey’s operations in relation to eight ‘pillars of good governance’, developed during the administration period of the City of Greater Geelong. The comprehensive audit considered 52 different aspect of operations under eight broad categories: direction and leadership; culture and behaviour; structure, systems and policies; decision making; communication and community engagement; capability; risk and compliance; and monitoring and review. From these, 12 areas have been identified in an action plan for further improvement in a process to be undertaken in the second half of this year and into next year. Regular reports will come back to the public council meeting under the administrator. As part of the audit, councillor obligations were also assessed against 12 criteria developed under a Local Government Monitor’s oversight of the Wimmera Shire Council in 2018. Casey found itself compliant in eight of

By Andrew Cantwell The City of Casey wants no repeat of the issues that sparked an IBAC inquiry and led to the dismissal of its elected council by the State Government, and has moved to radically reform its planning policies and procedures. New councillors, when elected in 2024, will have no doubt as to their hands-off role in the new planning process. Under a new policy adopted by interim administrator Noelene Duff, council planners will determine most day-to-day applications under delegated powers. Planners will also have the power to reject applications which don’t meet “strategic policy or statutory requirements”. Councillors will have the responsibility to set ‘vision, policy and direction’ and will only be involved directly in a planning matter if there are more than 20 objections. Direct dealings with developers will also be discouraged, and any contacts reported under the strict policy. Instead, councillors will need to direct inquiries to council planning staff or the council website.

Councillors will also be forbidden from ‘lending support’ or advocating for or against developments. They must also approach any planning matters that come to the council chamber with an open mind, having regard only to the planning issues involved. The moves are designed to have councillors recognise their arms-length role as both a ‘local planning authority’ and a ‘responsible authority’, charged with making responsible and impartial decisions under State planning law. The new policy will help bring certainty and clarity to residents and developers - and to new councillors in the times ahead.

Mother’s Day Recipes With Mother’s Day (10 May) fast approaching, we're sharing a selection of recipes from Australian Eggs, perfect for a Sunday brunch at home, to help show appreciation to that special Mum. The recipes are delicious and easy for kids to recreate at home. RASPBERRY AND PEAR PANCAKES Cook & prep: 25 mins Serves: 5 (makes 10 pancakes) Ingredients 1 1/2 cups (225 grams) wholemeal (whole wheat) plain flour 1 1/2 teaspoons baking powder 1 teaspoon cinnamon, ground 1/3 cup (60 grams) brown sugar pinch of salt 4 eggs, separated 3/4 cup (180 ml) milk 2 tsp vanilla bean paste (or extract) 1 cup (150 grams) fresh or frozen raspberries 1 pear, grated Butter (for frying)
BAKED VANILLA CHEESECAKE WITH BERRY COMPOTE Prep: 30 mins (plus 30 minutes and overnight chilling) Cook: 1 hour Serves: 10-12 3. Ingredients 250g digestive biscuits 125g butter, melted 750g cream cheese, at room temperature 3 tsp vanilla essence 3 eggs ¾ cup caster sugar 300g sour cream 2 tbsp cornflour, sifted Edible flowers such as strawberry flowers, optional, to serve Berry Compote 1/3 cup caster sugar 250g strawberries, hulled and halved 125g raspberries 2 tbsp water Method 1. Release the base from a 23cm (base measurement) springform pan and invert. Secure the base back into the pan and line it with baking paper. 2. Place the biscuits in a food processor and process until finely crushed. Add the butter and process until combined. Transfer to the

prepared pan and using the back of a spoon or a straight-sided glass, spread and press the biscuit mixture firmly over the base. Refrigerate it for 30 minutes to set. Meanwhile, preheat the oven to 170°C/150°C fan-forced. Using an electric mixer, beat the cream cheese, vanilla and sugar until the mixture is smooth. Beat in the sour cream and flour. Once combined, start to add the eggs one at a time. Continue to beat the mixture until all is combined. Pour the cream cheese mixture into the prepared pan. Bake the cheesecake in the oven for 1 hour or until almost set in the centre and turn the oven off. Leave the cheesecake in the oven with the door slightly ajar until it has cooled as this will prevent the cake from cracking. Refrigerate it overnight. To make the Berry Compote, place the caster sugar and 2 tablespoons of water in a frying pan and bring it to the boil while swirling the mixture occasionally. Continue this for 2-3 minutes or until the syrup thickens and reduces. Add the strawberries and gently stir to coat them in the syrup. Cook for 1-2 minutes or until the syrup turns pale pink and the strawberries are slightly warmed through (do not overcook). Remove the Berry Compote from the heat and stir in the raspberries. Set the mixture aside to cool. To serve, remove the cheesecake from the pan and decorate the top with the berry compote and edible flowers.
To serve Fresh raspberries Yoghurt Honey Method 1. Place the flour, baking powder, cinnamon, brown sugar, salt, egg yolks, milk and vanilla into a large bowl and whisk to combine. 2. Place the egg whites into a clean bowl of an electric mixer and beat until stiff peaks form. 3. In two batches, add the egg whites to the batter and gently fold to combine. 4. Gently fold through the raspberries and pear. 5. Heat a non-stick fry pan over low-medium heat and grease with a little butter. Ladle 1/4 cup measurements of the batter onto the fry pan. Cook for 2-3 minutes or until bubbles begin to appear on the surface of the pancake. Carefully flip the pancakes and cook for another minute or two, or until the pancakes are golden and bounce back when touched. 6. Place the cooked pancakes onto a plate lined
with kitchen paper and continue frying until no batter remains. 7. Serve pancakes with fresh raspberries, dollop of yoghurt and drizzle of honey. Tip: Pancakes are freezer friendly once cooled.
SWEET POTATO WAFFLES WITH EGGS AND AVOCADO Cook & prep: 35 mins Serves: 4 Ingredients 1 ½ cups firmly packed grated sweet potato 1 cup milk 1 ½ cups wholemeal self-raising flour 2 eggs, separated 50g fetta, crumbled 2 teaspoons extra virgin olive oil 4 extra eggs 1 cup baby spinach leaves 1 avocado ¼ cup toasted pepitas Harissa yoghurt ½ cup Greek yoghurt 1 tbsp lemon juice 2 teaspoons harissa paste Method 1. Place sweet potato and ½ cup of milk in a large microwave safe bowl. Cover tightly with plastic wrap and microwave on High for 6 minutes, or until soft. Roughly mash with a fork. Whisk in remaining milk and egg yolks. 2. Place flour into a large bowl. Stir in sweet potato mixture to a make a thick batter. Add the fetta and season to taste. 3. MUSHROOM SOUFFLÉ OMELETTE Cook & prep: 30 mins Serves: 2 2. peaks. Fold into batter. 4. Working in batches, pour about 2/3 cups of batter (depending on size of waffle maker) onto a pre-heated non-stick round waffle maker. Cook until golden brown until waffle iron stops steaming, about 5 minutes. 5. Meanwhile, heat the olive oil in a large nonstick frying pan over medium high. Crack eggs one at a time into hot pan. Cook for 2-3 minutes, until whites set and are crispy around the edges, but yolk is still runny. 6. To make harissa yoghurt, stir yoghurt and lemon juice together and season to taste. Swirl in the harissa. 7. Top waffles with spinach leaves, sliced avocado and fried eggs. Dollop over the harissa yoghurt and sprinkle with pepitas.
Ingredients 1 tablespoon olive oil 400g Swiss brown mushrooms, sliced Salt and pepper 4 eggs 2 tablespoons milk ¼ teaspoon table salt 20g melted butter ¼ cup finely grated parmesan ¼ cup crème fraiche Finely grated parmesan, extra, to serve 2 tablespoons finely chopped chives

5. Method 1. Heat oil in a large 25cm non-stick frying pan over medium-high heat. Add the mushrooms, season with salt and pepper and cook for 6-7
minutes or until golden. Remove, cover and keep warn. Wipe out the pan. Separate eggs, placing egg yolks into a small bowl and egg whites into a large bowl. Add milk to egg yolks and whisk with a fork. Using a hand beater, whisk egg whites and the ¼ teaspoon salt until stiff peaks form. Heat the frying pan over medium heat. Brush with butter to grease. Using a large metal spoon, gently fold the egg yolks into the egg whites. Pour half the mixture into the pan and cook for 4-5 minutes, or until golden and the eggs are just set. Spoon over half the crème fraiche, parmesan and mushrooms and carefully fold the omelette in half. Cook for 1 minute or until almost set. Transfer to a serving plate (omelette will continue cooking once removed from heat). Repeat using remaining eggs, crème fraiche, cheese and mushrooms. Sprinkle with chives, extra parmesan and pepper to serve.

Remote learning lessons
The St Francis Xavier College Remote Learning Program aims to: maintain student safety facilitate student engagement in the learning program support student wellbeing facilitate student achievement continue to build expert teacher practice continue to realise the college Game Plan foster a culture of collaboration Presentations were made to staff, students and parents in the second half of Term 1 to prepare for the likelihood of remote learning. Staff participated in further digital technology training and students were offered a message by the college Captains to reassure them that their learning would continue, and they offered advice on how students can look after their health and wellbeing if learning from home.

After two weeks of remote learning, there have been many positive outcomes already. This is new to everyone, however the college is very positive about the experience with teachers and students learning together. Teachers are collaborating with each other and engaging in daily videoconferencing to reflect upon their practice as teachers during remote learning. We are proud of the efforts of our students, teachers, support staff and parents as we provide a remote learning program which facilitates student achievement.

St Francis Xavier was well prepared when the Premier of Victoria announced that all schools would be in remote learning mode at the beginning of Term 2. The development of the college’s Digital Learning Program over the last 5 years has seen all students use a college provided laptop in order to leverage digital technology to enhance student achievement. Alongside the provision of the device, students and teachers have been developing their skills in how to use a new college intranet - SIMON, Microsoft TEAMS and OneNote along with other software. Early in 2020 the college began to plan its remote learning model in readiness for the possibility of requiring it this year. This planning involved teacher leaders planning an effective remote learning model to be facilitated by the college’s Digital Learning Program.

Dreams made in America Arryn Siposs was still in his early 20s when he was delisted by St Kilda, and now he's about to start a whole new chapter of his professional sporting career - with the Detroit Lions in the NFL. In 2015, the Hallam and Beaconsfield product had played 28 games since making his AFL debut in 2011, and the last thing he wanted to do was give up on his dream of forging a lasting professional football career. Little did the former Dandenong Stingray know the opportunities that would await him in a different football code entirely. Long known for his booming kick, Siposs now has the chance of a lifetime in the NFL after an eye-catching punting stint at US collegiate powerhouse, the Auburn Tigers. He made international headlines last November after a stunning play in the 'Iron Bowl' against Alabama, which netted the Tigers a stunning 48-45 win - one of the most famous triumphs in the history of their illustrious program. Siposs, who was still in Auburn as the NFL draft was held, explained the incredible turn of events that led to him and Tigers quarterback Bo Nix embracing in the middle of the stadium following the heart-stopping win. "It was something we practiced going into the game," he said. "Alabama had a really good punt and kickoff returner so we had to come up with a plan to keep him off the field. "Our plan originally was for me to line up in the wide receiver position and then swap with the quarterback (Nix) and then get the ball snapped to me and I would punt it. "We hoped that Alabama's defence would be on the field and their returner wouldn't be. In the end, we confused them and they had 12 players on the field, which resulted in us keeping the football and winning the game."

It also led to a famous post-match outburst from Nick Saban - one of the biggest name coaches in US football history - and caused headlines right across the world. It's a far cry from Siposs' VFL stint with Williamstown when he was searching for a way back into the AFL. "After my time was finished at St Kilda, I still thought I could play in the AFL," he said. "I was 22 at the time and wanted to get back into the AFL, so I signed with Williamstown. I thought this would give me the best opportunity to get back in. "I was in my second year there but I saw how well other guys were going (punting) in the college system in America and thought I could do the same thing, so I contacted (Aus-
tralian former NFL punter) Nathan Chapman at Prokick and went down for a training session. He told me I could do it, and maybe even get to the NFL." Siposs ultimately declared for this year's draft still with a season of eligibility left at Auburn. While he ultimately went undrafted, his decision reaped serious rewards as he signed with the Lions soon after - with a chance to compete for their starting punting spot. For him, the time to make his new dream a reality is now. "I didn't expect this to happen in my wildest dreams," Siposs admitted. "It has been an amazing journey so far and it really is just the beginning of it. "I just wanted to play AFL for 10 to 12 years and have a great career doing that, but that didn't work out, so having the opportunity to do this is amazing and hopefully I can have decent career in the NFL." After playing in front of sparse crowds for St Kilda against the likes of the Gold Coast in the cavernous Marvel Stadium during his AFL days, and then getting back to a real community footy feel at the VFL, Siposs has regularly stepped on to the field in front of more than 90,000 people so far in his US football odyssey. "It has been an awesome experience to be able to do that," he said. "I am very lucky to be able to go out each and every week and play in front 90,000. It is something I will never forget." But when Siposs first introduced himself at Prokick, he knew next to nothing about college football and everything it entails. "I didn't really know much about college football if I'm honest, but Chappy said I had the capabilities of playing at a top 10 school," Siposs explained. "I had been training for a few months at Prokick and Chappy had been speaking to Auburn because they were in need of a punter." From there, Siposs sent footage of himself
in action to the coaches at Auburn, which led to a scholarship offer and the start of a whole new chapter. "Participating in the biggest rivalry in college football is something I will never forget," he said of the Iron Bowl. "The rivalry is real - these teams hate each other - and it's a huge occasion if you win that game. The 2019 game was incredible, it is honestly the best game I have played in and something I will never forget. " Siposs paid tribute to his Auburn team mates and everything he learnt from them in his time with the Tigers, and also spoke about just how much of an impact Chapman has had on his new career to this point. "He's been the biggest influence on my punting career so far," Siposs said. "He knows his stuff and he will always be the guy I turn to for advice to improve my game." And Siposs has also been in contact with a number of other Australian punters - some hopeful of making it to the NFL, and others already on the biggest stage - to sound out their advice. "I speak to a few guys including (Bunyip product and former Gippsland Power player) Dane Roy to see how they are all going at their college, and since declaring for the draft I've reached out to Michael Dickson (the Seattle Seahawks' Aussie punter), Mitch Wishnowsky (San Francisco 49ers), Jordan Berry (Pittsburgh Steelers) and Cameron Johnston (Philadelphia Eagles) just for some advice on what the process is like, and what to expect. "This has helped me out so much, and I feel prepared for what comes next." And what comes next will be Siposs' most exciting chapter of all. He knows the pressure of executing in big moments in front of monster crowds - now he wants the chance to show how he can shine on the biggest stage of them all.

He’s blitzing the field By Jason Adams Pearcedale trainer David Crawford is on the verge of a period of real success after the promising 'He Shall Blitz' took out the Maiden final at the Sandown Park greyhounds on Friday night. He Shall Blitz began cleanly and soon settled on the tail of early leader Wise Thunder. He took control in the home straight and highlighted his strength to win by two-and-a-half lengths. "Obviously Jamie's (Ennis-trained Koko Kardash) was the fastest in the race, but I did give him a chance even though he can be a bit tardy early," Crawford said. Crawford's run throughout April has been particularly hot so far. His team has had 17 starts and finished out of the placings in just four of those. It looks to be a strike rate that may remain consistent for 2020. He Shall Blitz is one of three from his litter who have made a start to their racing careers, and so far they've combined for 35 starts with nine wins and 12 placings. "They've always been able to run time on their own, especially that one (Blitz). I'm hoping they'll eventually race over 600 or even 700 metres. Their mother (Shall She Rock) was a good stayer and their sire (Dundee Osprey) could stay too." He said having raced the mother and seen the litter grow, it does make success more satisfying. "I had them in my hand when they were pups, it is pretty special," Crawford explained. "I don't have as many (greyhounds) as I used to, I only intend on breeding one litter a year. My wife wants to go travelling but I like being with the dogs. I've had a crook leg for a while and they keep me moving."

Tauwitchere made it five wins in a row at Sandown Park on Sunday night and a step up to the 715-metre trip is on the cards. Sent to the boxes an unbackable $1.04 favourite, she began well but was forced to work hard early with Come On Eleanor pouring on the early pressure. However, the 2018 Launching Pad winner proved too strong in the concluding stages, powering to the line to win by four-and-a-half lengths in 33.23. The win has continued her resurgence as one of the sport’s top staying prospects. Since stepping back up to the middle distance at The Meadows on 4 April, Tauwitchere has not been headed in any of her four starts and has won by a combined margin of 18 lengths. “She’s going real good at the moment, she’s got that spark back again and is flying the lids,” said her very happy trainer, Steve White. “About 10 starts ago she didn’t have it. berwicknews.starcommunity.com.au
She was hitting a flat spot but she’s turned it around after I gave them all three to four weeks off while that canine virus was going around. She’s come back and is going really good.” The win was her third in as many starts over the distance since January, and while it wasn’t the fastest time she’s recorded, the manner of the victory gives White confidence as he plans to step her up in distance with the RSN Sandown Cup just a month away. “I don’t think conditions were great (tonight) and we’ve had plenty of rain so I though the run was really good,” White said. “I was a little bit worried early with the 3 right on her hammer, which I wasn’t really expecting, but as they came to the corner she took off and in the end she won by four-and-ahalf so I’m happy.” Tauwitchere is currently rated an $18 chance to win the RSN Sandown Cup which will be run on Thursday, 28 May.
