SAUK RAPIDS – Property taxes payable to the Sauk Rapids-Rice School District will increase next year. The Sauk Rapids-Rice School Board at its Dec. 13 meeting set the district’s 2022 property tax levy at $10,815,470 up from the current levy of $10,452,688. The increase amounts to $362,782, or 3.47%. The district’s final levy did not change from the proposed levy the board certified in September. The levy will generate about $4.6 million for the general fund. Based on student enrollment, the general fund levy is primarily used to fund salaries and benefits (79%), according to business manager Tracey Fiereck. The general fund also provides funding for student transportation, facility maintenance, instructional equipment, safety requirements and unemployment benefits.

BY NATASHA BARBER STAFF WRITER With varying temperatures during the first few weeks of December, people may be on thin ice. Literally. Mark Soderholm knows this feeling all too well. Soderholm, for the first time in his 45 years of ice fishing, broke through the ice twice on Little Rock Lake during the 2020-21 season. “I know this lake pretty well and I still went down,” said Soderholm, who began fishing the lake with his uncles when he was 10 years old. “That’s the thing. You’re never 100% safe.” Each year, Minnesota anglers take to lakes to participate in the state’s hard water season. Despite its fun, ice fishing can be a precarious situation. The Minnesota Department of Natural Resources reported three ice-related fatalities in 2020-21. But, not all accounts of people falling through the ice are recorded. County. “I’ve already heard of three people falling through the ice this year,” Hanna said. “But thankfully those were incidents where people were close enough to shore to venture back in with a little help.” Such was the case for Soderholm. “The first time I went in,
it was between the week of Christmas and New Year’s last year,” said Soderholm who splits his time living between Rice and Minnetonka. Soderholm watched four-wheelers pull portable fish houses around the lake that day before venturing out on foot with his brother and nephew. There was little snow,

and Soderholm drilled holes to ensure the ice thickness. “For the most part it was 7 inches everywhere,” Soderholm said. “It was solid, good ice; it wasn’t milky.” After a stint of fishing, the three began to return to the cabin that evening after dark. “I stepped over a spot that had a little bit of snow on it, and I immediately went down through the ice,” Soderholm said.

A quick reaction saved him. Soderholm put his arms out to catch himself as he was falling. A mile from shore and in 12 feet of water, Soderholm stayed chest level in the water, before his brother grabbed his hood and helped him roll out and away from the hole. He had been in the water for less than 15 seconds. “It was very scary, but I didn’t panic,” said Soderholm, who has studied ice safety and ice rescue by reading and watching videos online. The second time Soderholm broke through was late ice in March. With a strong south wind and temperatures nearly 50 degrees, Soderholm and a friend headed onto the ice, drilling holes and checking ice along their way. Near the shore, ice was 5-8 inches; farther out it measured 18-24. “I knew the ice was starting to go bad because the ice was chunky and wet,” Soderholm said. “The structure of the ice was breaking down. It wasn’t all together, it was cubing.” After four hours of fishing, Soderholm and his friend returned toward his cabin at nightfall only to find a crack had opened up about 150 feet from shore. “When I stepped over the crack, I went down,” said Soderholm, who noted he was not surprised and knew it was a possibility when making his move. Soderholm was in 5 feet of water and standing, but the ice was less than 2 inches thick and not strong enough to hold his weight. “When I fell through, the only way I could move forward was to jump up on the ice, break it and push the chunks underneath,” Soderholm said. Soderholm’s friend fell through in deeper wa-
DNR guidelines dictate that no one should proceed onto ice that is less than 4 inches thick. With 4 inches or more of new, clear ice, people may begin foot traffic activity. Those heading onto the frozen body of water should check the ice thickness every 150 feet by drilling a hole into the ice and measuring with it with a tape measure, hooking the submerged bottom edge before taking the measurement. Hot showers and warm blankets restored his friend’s health before emergency care was needed. “Always, always, always have cleats and ice picks,” Soderholm said when talking about the incident. “And if you can get a floatation suit, buy one.” Safety gear is something Hanna said people should not overlook. “People think life jackets are only for the summertime,” Hanna said. “Realistically it’s any time you’re near or above water. They make float jackets which are very nice for the wintertime because they keep you warm, but at the same rate, if you were to fall in, they are designed
to float.” Hanna said ice picks and cleats provide traction. He said ice becomes more slippery with water and picks allow people to pull themselves up out of the ice or keep themselves near the ice edge should they fall in. Soderholm also carries a rope, and both men recommend fishing with a partner. Each angler should become familiar with the body of water they are fishing – watching for creek entrances, springs and vegetation – and check the ice thickness for themselves, Hanna said. “Thankfully, I think people realize the potential dangers,” Hanna said. “The majority of people respect the ice and that’s essentially what it comes down to. If you don’t respect the ice and its thickness, it will consume you.” Ice anglers should always remain vigilant no matter the ice thickness. “The first time wasn’t my fault,” Soderholm said. “There was nothing I could have done differently except not walk on the snow patches. The second time, I shouldn’t have gone out – plain and simple.”

CONSENT AGENDA A motion was made by Morse, seconded by Solarz and unanimously carried to approve the meeting’s “Consent Agenda.” PUBLIC INPUT There was no public input at 7:01 p.m. ACTION APPROVAL OF THE OFFICIAL AUDIT REPORT A motion was made by Holthaus, seconded by Braun and unanimously carried to approve the of cial audit. ADOPTION OF THE MINNESOTA STATE HIGH SCHOOL LEAGUE (MSHSL) FOUNDATION GRANT RESOLUTION A motion was made by Hauck, seconded by Solarz and unanimously carried adopt the resolution for the MSHSL Foundation Grant. The MSHSL Foundation’s goal is to award grants that assist, recognize, promote, and fund extra-curricular participation by high school students in athletic and ne arts programs. The grants will be classi ed by a district’s grades 9-12 free and reduced lunch student count. The grant amount will be determined by gender balance, school size, and geographic location to the extent possible. APPROVAL OF THE STUDENT DATA SPECIALIST CONSULTANT CONTRACT A motion was made by Morse, seconded by Holthaus and unanimously carried to approve the Student Data Specialist Consultant Agreement for Tameka Zwilling, which would be effective November 1, 2021 through approximately November 26, 2021. This consultant position will perform the duties of the Student Data Specialist. APPROVAL TO ADD A TEMPORARY COVID-19 TESTING COORDINATOR A motion was made by Braun, seconded by Hauck and unanimously carried to approve the hire of a temporary COVID-19 testing coordinator for the remainder of the 2021 – 2022 school year. The position will coordinate and facilitate at least weekly testing events in each building. The position is fully funded through the state of Minnesota’s testing grant program. ADOPTION OF MEMORANDUMS OF UNDERSTANDING (MOU) A motion was made by Braun, seconded by Hauck and unanimously carried to adopt the MOUs relating to COVID-19 leave for all district staff, which requires an MOU for staff
covered by collective bargaining agreements. The MOU will provide COVID-19 leave for district staff who have met criteria detailed in the MOU for the remainder of the 2021 – 2022 school year. MOUs are with the following bargaining groups. • Administrative Assistant and Cashier Employees Agreement (SEIU 284) • Custodial Employees Agreement (SEIU 284) • Paraprofessional Employees Agreement (SEIU 284) • Sauk Rapids-Rice Education Association (SRREA) • Sauk Rapids-Rice Principals’ Association (SRRPA) DISCUSSION FIRST READING OF PROPOSED POLICY #425 • #425 (Staff Development and Mentoring) is a “recommended policy” and would replace current policy #425 (Staff Development). This policy requires two readings as substantive changes were recommended. FIRST READING OF PROPOSED POLICY #503 • #503 (Student Attendance) is a “recommended policy” and would replace current policy #503 (Student Attendance). This policy requires two readings as substantive changes were recommended. EXTERNAL DATA AND DASHBOARD OVERVIEW Superintendent Bergstrom provides an overview of the district’s external data and the district’s dashboard. Superintendent Bergstrom was available to answer Board member questions. Open Public Hearing Todd Schultz advised that in 2007 the City approved a Planned Unit Development (PUD) request to convert the old Sacred Convent at 216 3rd Avenue South to a care facility with 30 beds for Cummings Care Center. Schultz stated that previous to that use, the property had also been used as of ces for two years. Discussion: Adam Ripple suggested that staff bring back a Findings of Fact Resolution. He said that since the City Council is discussing zoning, they would essentially be amortizing the 36 beds that Cummings Care Center is currently licensed through the State to 33 as a baseline moving forward. Ripple discussed the timing of the application. He advised that the application was submitted to the City on October 15th. Ripple said that this is a zoning issue, so the 60-day rule does apply. He explained that the City has to act within 60 days, but there is the ability to extend the review and the decision period another 60 days, if needed. Councilperson Thronson stated that she does like the idea of including a review period. She said it is people’s lives that are being discussed here, so she wants to ensure that the Council is thinking things through in the right manner. Councilperson Ellering clari ed that the motion is to approve 33 beds and to let attrition get Cummings Care Center to that number with a twelve-month review. Mayor Hunstiger asked Legal if it is possible to get the resolution to the City Council by the next meeting. Ripple said that Legal will prepare the resolution, which will be included on the next City Council section under consent unless the Council chooses to further discuss. Motion carried unanimously. B. Applicant City of Sauk Rapids Purpose To Consider Approval of Assessment Rolls No. 427, 428, 429, 430, and 431 1. Open Public Hearing 2. Warzechas grow trees for every type of customer
A Christmas experience

OYALTON – Christmas trees are as alike to each other as one person’s Christmas is alike to another’s. They are alike in spirit, and yet, they are each entirely unique. A Christmas tree is not just a tree. It is special because of what it represents. Rick and Rosie Warzecha of Wee Trees near Royalton sell Christmas trees. They have been growing them for coming toward 40 years. Their farm is full of row after row of green trees. There are thousands of trees on their 50 acres. There are new seedlings barely surfacing above the snow, and there are grand old trees towering high. There are trees, and more trees, and more trees. They may have at one time, long ago in the beginning, imagined that one Christmas tree might do as well as another, but today they think otherwise. Way back in the beginning, Rick got the idea to grow Christmas trees. His father had owned a farm by Rice and planted thousands of trees as

But it wasn’t until 1983 that Rick and Rosie planted the rst trees of what was to eventually become Wee Trees. The land that is now covered in trees had been a corn eld.

The green boughs from those original trees are now made into wreaths, garlands, porch pots, and other adornments. It takes commitment and perseverance to grow trees. Trees cannot be grown and harvested from one season to the next. Scotch pines, for example, grow seven to eight years before they can be harvested. “It’s a long long process to get to the point of selling that tree for the enjoyment of the family that’s coming to buy it from you,” Rick said. Rick and Rosie’s children, Ryan and Natasha, grew up with the trees. When the Warzechas started, their children weree small, but they quickly learned all about the trees.. They soon knew well the many kinds of trees that can be made to be Christmas trees. The list of varieties is long, and the recitation of their names is like an arboreal poem: Black Hills spruce, Scotch pine, balsam fir, the Norways, Fraser fir, Canaan fir, Meyer spruce, white pine, Korean fir … There are so very many. The trees have their smell, their texture of needles, their brilliance of green or tinge of blue, their branches thickly dense or sparse and strong. Why grow so many kinds of Christmas trees? “We have so many different types of people,” Rick said. “Everybody likes a different tree. There’s a reason for everything and why we grow all of the different varieties.” These are people from different places, different intentions and different traditions as Rick and Rosie elaborated. Central Minnesotans might tend to be more familiar with Scotch pines or balsam firs, but someone who was transplanted to Minnesota from the East Coast might be looking for the Fraser fir that they grew up with as a kid. A family from Montana has a tradition of getting a large Norway, cutting the top off, and then fitting all of the presents into the tree itself,

The Korean fir has its own temperament and grows in its own direction, which is what some people are looking for.” “There are people that really do love Charlie Brown trees,” Rick said. “It’s what they grew up with, or something special happened in their life that that tree represents. And, that’s what they’re shooting for, to remember that Christmas.” What is that particular Christmas that has imprinted in memory? “I can remember the Christmas that my Dad took me to a little fix-it shop in Sauk Rapids and bought me a model train,” Rick said. “The train was built right before World War II, and it was a special train because Marx was one of the first to make automatic couplers. I still
have it. It still runs. We used to jump the train from bed to bed. That’s the Christmas I’ll remember. I’ll never forget.” It is precisely because the Christmas tree carries more than just the weight of its ornaments that buying one is not a stock and standard exchange of green bills for green boughs. Just as Christmas is an experience worth cultivating, so too is the experience of buying the tree. Rick and Rosie are certainly cultivating experiences for their holiday visitors. Porch pots, wreaths, and other creations turn the farm itself into a visual celebration. A wreath big enough to leap through has its place amongst the younger trees. Strategically placed photos opportunities in a cutter sleigh, hot cocoa stand and a large carved log bench allow ample room for families to take memorable photos while visiting. A plan is in the works to put in a garden train system for the children to watch.

Some attractions at the farm have lasted for generations. “On a warm day, a lot of kids get out of the vehicle and head straight south to the sheep,” Rosie said, laughing. “We have parents that were little kids when they came here with their parents, and the first place they went is to see the sheep.” Some visitors have been visiting for generations. They come from near, and they also come from as far as Park Rapids, Brainerd, Stillwater and the Twin Cities metro area. They come every year, no matter how strange or unusual the year itself may has been. Even the previous holiday season, the year of the pandemic, they came without fail, and even, perhaps with extra joy. “Last year, we have never seen so many families bring so many kids because it was someplace to go out and enjoy themselves,” Rick said. “There was laughing all of the time, with little kids running here and little kids running there.” If the children of today are having the same holiday experience at the Wee Trees farm as their own parents did before them, then the experience of Christmas trees has clearly leaped free of the pretense of just any tree for tree’s sake. The warm light of a Christmas star, perched high upon a tree, falls much further than the extension of the tree’s greatest boughs. The light reaches far enough to touch the Christmas that was, the Christmas that is commemorated and revived every winter, and the Christmas that can be known in some part through the encounter of the grower and their guests. A tree is just a tree, and, it is so much more.

Emslander first in U.S. to use technology on beef operation BY JAKOB KOUNKEL STAFF WRITER OAK PARK – Technological advances in agriculture have evolved and benefited local farms, from now-standard equipment like tractors to advanced airborne drones that help track individual crop health. One local resident knows firsthand how technology can improve a farm. Dave Emslander, owner of Emslander Farms in Oak Park, has utilized a robot to feed a portion of his 2,000 head of cattle since mid-August. Emslander’s farm is the first beef operation in the nation to utilize the technology. Emslander hosted beef and dairy farmers from Idaho, Wisconsin and Minnesota at his beef operation Dec. 2 to demonstrate the robot’s capabilities and usefulness. “Basically, what it does is it feeds to the animals’ needs,” Emslander said. “Once it’s done feeding, it’ll sit in its station for an

Emslander Farms is the only beef cattle operation in the United States that uses the piece of equipment. hour and a half and then it’ll go out and push up the feed and scan the bunk, and if anything needs feed, it’ll just feed that area.” While the technological marvel is a great improvement for feed efficiency, waste reduction, labor and payroll, Emslander said the motivating factor behind the investment was the prospect of improved animal health. “The biggest reason why I did this was for animal health and feed efficiency,” Emslander said. “It’s no different than the human diet, where you have consistent, fresh meals every single day, which makes the gut health better for the animal.” In the nearly four months he has used the machine, called the Lely
Vector robot, Emslander said he has already seen benefits of improved animal health. The herd’s rate of gain – measured in pounds per day – has improved and so has feed efficiency. “I have noticed a lot of benefits in animal health, and we did some weights on some (cattle) that we’ve shipped and the feed efficiency has been greatly improved,” Emslander said. Prior to purchasing the robot, for Emslander, feeding cattle was a guessing game regarding exactly how many pounds of each ingredient was being fed. With the robot keeping track of every single pound of feed and feeding more accurately than a human could, Emslander appreciates the consistency and
accuracy. Not only that, but the robot saves Emslander wasting feed – the robot does not dispense too much or too little, and the cattle eat until the feed is gone. The Lely Vector also gives Emslander reports with data measurements related to feed. “We always kept feed in front of them, but how many pounds we were feeding and how accurate the rations were was always a variable,” Emslander said. “That’s not a problem anymore.” Emslander showed other farmers the technology to inform them how the Lely Vector has improved his farm operation from an animal feeding perspective.

Although the helpful robot has proven beneficial, Emslander is holding out on purchasing another robot of the same type until he can prove, through data and metrics, whether the investment is worthwhile for the other locations. “I didn’t want to go and set it up at both farms not knowing the entire outcome of it,” Emslander said. “But so far, since we put it in in August, there have been tremendous benefits to having it.”

A how-to for charcuterie Charcuterie platters have been on trend for holiday parties and gatherings for a few years now and even though I consider myself quite able in the kitchen, I have always looked at the glori ed meat and cheese trays as daunting. But, after a little research and my rst stab at creating one, I’m here to tell you that charcuterie is much easier done than said. Charcuterie, pronounced shar-KOOta-REE, is a French word that dates back to the 15th century and translates to products of a fancy pork butcher. Although many of these meat and cheese trays feature pork products, Merriam-Webster now de nes the word as a delicatessen specializing in dressed meats and meat dishes. Google

simply translates it to delicatessen – which may be better suited to its use today as these colorful and delicious food displays encompass so much more. I started my endeavor with a shopping trip to a local grocer. I was thrilled stores are in tune with this trend and literally stock a lot of what is needed together on their shelves. You can even buy charcuterie bundles of meat and cheeses, although I didn’t choose that option. Once home, I pulled out my wooden serving trays that I had used for a dessert bar this summer. I have three sizes, and I choose the largest – a 14-by-21-inch tray – for
my project. If you are without a wooden tray and do not want to purchase one, people can use a rimmed cookie sheet, charger plate or any other type of serving tray. Paddle boards are also popular and can be found in many stores as can tiny serving utensils. Then, a minor setback. I suddenly realized that nowhere in my cabinets are the tiny ramekins or dishes that culinary professionals have in their kitchens. I put my thinking cap on and remembered my great-aunt Margaret.

I added the small dishes of olives and artichokes, then placed the fruits in existing spaces. Had I purchased spreads or honey, I would have added these at the same time. Once the fruits were placed, I made room for the sweets, crackers and breads. I lled in the smallest holes with nuts and garnished the tray with a few white pretzel stars and sprigs of rose-

A charcuterie board features meats, cheeses, fruits, nuts, candies and crackers. Dried kiwi, sprigs of rosemary and white chocoloate-covered pretzel stars add a holiday touch.
Shopping list After shopping for my masterpiece, I realized that a charcuterie board contains all the elements of the nation’s long-forgotten food pyramid. Breads and grains, fruits, vegetables, cheeses, meat and nuts, and oils and sweets are all contained in this nger-food formation. But of note, there’s no need to get carried away in large purchases of each item you decide to add to your platter – a little goes a long way. My board was 14-by21 inches, and it didn’t take much to ll it. I purchased ve cheeses, 12 ounces of meats, some fresh and dried fruits, marinated olives and artichoke, some sweet treats, crackers, and fresh rosemary for garnish. As I was building, I added nuts and pita chips from the pantry. So, don’t forget to think about what you have on hand. And most importantly, put items you enjoy on your platter. If you’re not a fan of goat cheese, there is no requirement to use it.
Meats
Coinciding with the word’s origin, meats – specifically pork products – are often found on charcuterie boards. These may include but are not limited to Genoa salami, soppressata, coppa, prosciutto, pepperoni, mortadella and Spanish chorizo. I used two types and sizes of salami (one peppered) prosciutto and capocolla (another name for coppa). In hind sight, I may have opted for a smaller diameter meat or a thicker cut of meat to add textual variety.
Cheese
Cheese is the centerpiece of a charcuterie board, so put the most thought into which flavors and textures you would like to display. Boards should contain a mixture of soft cheeses (brie, goat, cream, bleu, gorgonzola), semi-soft or semi-hard cheeses (fontina, Havarti, Monterey jack, muenster, pepper jack) and firm cheeses (aged cheddar or gouda, asiago, Parmigiano Reggiano). Having a mixture of buttery, nutty and tangy cheese flavors may be wise as well.
Fruits, vegetables
When you think of adding fruits and vegetables to your creation, think color. Most of your cheeses and meats will be similar colors, so fruits and vegetables can add contrast and add visual appeal. Sliced apples or pears (placed on the platter with the flesh side out), red and green grapes, and berries are popular charcuterie board pairings. Dried fruits such as figs, apricots or dates – or in my case kiwi – can be added as well. I was thrilled that the green of the dried kiwi turned up the “merry and bright” on my board. And, I had never asked the question, but turns out olives are a stone fruit (not a vegetable). With that in mind, the only vegetable I incorporated into my tray was artichoke. If you’re looking to add more veggies, sweet peppers, cherry tomatoes, small pickles, capers and cucumbers are certainly all options.
Spreads
Unfortunately for me, my cabinets were not hiding any cute and tiny containers to include things such as honey on my board, but now I have something to add to my Christmas list. A small honey pot or fig spread can add a touch of sweet and sticky to flavor combinations of breads and cheeses. In the future, I might also opt for a jalapeno jam or some hummus.
Crackers, breads
Carbohydrates take a back seat to everything else contained in a charcuterie board, but toasted baguette slices (or crostini); multigrain, water or rice crackers; bagel and pita chips, and pretzel crisps can all add the crunch to your dish. If you run out of room on your board, don’t be afraid to serve these from a separate bowl or platter.
Sweets
Dark chocolate can be a surprising complement to some cheeses. I opted to include a few wrapped truffles as well as a filo dessert that was topped with honey, seeds and cranberries. Chocolate can remain in the wrapper, or a large bar could be broken into bite size pieces or chunks.
Nuts, seeds
There probably is not a nut or seed that would not fit in on a platter, but my favorites are almonds, pistachios, candies pecans or walnuts and cashews. You’ll be using these to fill in the tiniest of holes on your platter, so if you’re not a fan, look to the grab-ngo bags at the store checkouts for small portions.
Finishing touches
Small details can set your platter off. A couple of sprigs of rosemary and some star-shaped white chocolate covered pretzels instantly gave my charcuterie board some holiday charm. Sage ironically looks like faux mistletoe, so that herb is a good choice too.
