BRUSCHETTA WITH TOMATO AND ROCKET

SERVES 4 • 6 tbsp olive oil • 4 slices crusty white bread • 2 large tomatoes, each cut into 4 thick slices • 2 tbsp balsamic vinegar • 4 large basil leaves • 50g wild rocket • 1 dried chilli, crushed 1. Heat 5 tbsp oil in a frying pan large enough to hold all 4 slices of bread. Fry until golden on both sides, then drain briefly on kitchen paper. Meanwhile season the tomato slices with salt and pepper. 2. Place each slice of bread on a plate. Top each with a basil leaf and 2 slices of tomato. Drizzle a little balsamic over each. 3. Toss the rocket with the remaining oil and divide between the toast. Crumble over a little dried chilli and season with sea salt.

SERVES 4 • 2 x 200g sirloin or rump steaks, trimmed of excess fat • 150ml teriyaki sauce • 2 tsp groundnut oil • 3 leaves of pointed spring cabbage • 15g fresh root ginger, finely chopped • ½ red chilli, finely chopped • 2 garlic cloves, finely sliced • 1 tbsp soy sauce • 1 red pepper, deseeded and cut into strips • 1 romaine lettuce, leaves separated • 4 spring onions, thinly sliced • Handful of mint leaves

1. Marinate the steak in the teriyaki for half an hour. Heat 1 tsp oil in a frying pan over a high heat. Wipe the excess marinade from steaks and fry in a hot pan for 2–3 minutes on each side. Set aside to rest. 2. Shred the cabbage leaves finely, removing any tough stalks. Warm the remaining 1 tsp oil in the pan. Add the ginger, chilli and garlic and fry for 1 minute, then add the soy and cabbage; stir until just wilted. 3. Thinly slice the steak. Place some cabbage, red pepper and steak in each romaine lettuce leaf. GREEK FETA DIP (TYROKAFTERI)

Aqua accents and pristine polished marble draw to mind crystal-clear seas and chalky white sands

SERVES 6 AS A MEZE • 1 red chilli, deseeded and finely chopped • 1 roasted red pepper, skinned, deseeded and roughly chopped • 200g feta cheese, crumbled • 100g Greek yogurt • 2 tbsp extra-virgin olive oil, plus extra to serve • ½ tbsp lemon juice 1. Place all the ingredients in a food processor or blender. Season and pulse, stopping to scrape down the sides occasionally, until a you have a rough puree – don’t worry if there are a few lumps of feta. Spoon into a serving dish and drizzle with the extra olive oil.
