butter cookies Makes approx. 25 cookies | adapted from Martha Stewart Crunchy cookies that are great fun to make as you can make any shape or size. Nice to give away as a homemade gift. Dough 115 grams (1 stick) butter, in cubes 2,75 dl (1,1 cup) flour, sifted 1,5 dl (2/3 cup) white sugar 1 teaspoons vanilla extract A pinch of salt Baking tools Baking sheets Rolling pin Bowls Shaped cutters Plastic wrap Measuring cups “C is for cookie, it’s good enough for me; oh cookie cookie cookie starts with C.” -Cookie Monster, Sesame Street
Let’s Start Set the oven for 175C (350F) degrees. Mix butter and sugar well, then add vanilla extract and salt. Add the flour to the mix and continue to mix until it is well combined as a dough. Place the dough on a floured surface and cut it in half. Tear 4 pieces of large plastic wraps pieces. Put one dough half on one plastic wrap piece and cover it with a second piece of plastic wrap. Roll out dough between the plastic wraps to 1/4-inch (0,6cm) thickness. Then place the dough on a baking sheet and transfer to a refrigerator or freezer until it is firm and chilled. Repeat process with the other half of the dough. Use any type of cutter and cut out figures of the dough and place them on a baking sheet. Let the cookies bake until firm, 12 to 14 minutes. If you take them out once the edges are golden brown, the cookies will be crunchy on the edges and more chewy on the inside. If you like crunchy cookies let them bake a few minutes more. Let them completely cool before serving. Put them in a jar or paper bags and give away as a gift for Christmas, it will be highly appreciated. Enjoy!

SYRUP PECAN TARTS Makes approx. 6 tartlettes
Want something new on the Christmas table this year other than saffron buns? Try these Pecan Tarts then, they won’t dissapoint. Dough 75 grams butter, in cubes 1,5 dl flour 1,5 -2 tablespoons cold water Filling 1 large egg 3 tablespoons light syrup 3 tablespoons white sugar 25 grams melted butter 2 dl pecan halves 1/3 teaspoons vanilla extract serving (optional) Whipped cream with a pinch of cinnamon

Let’s Start Dough Set the oven for 200C (392F) degrees. Mix butter and flour (either by hand or with a fork) until the butter is evenly distributed throughout the flour. Add the cold water, and mix until the mixture becomes a dough. Move the dough over to a floured surface and roll it out pretty thin (You should be able to cut out 6 round circles for the tartlettes). You might have to gather the dough pieces that aren’t used and roll it out to get the last piece. Once you’ve rolled the dough out, butter the tartlettes pans and cut out six circles and fit them in the pans. Use a fork and nag (poke) the tartlette doughs on different spots. Then refrigerate until they are completely firm and cold, approx. 10-15 min. 5. Once cool, put the tartlettes in the oven until the dough is golden brown, approx. 5-10 minutes. Then let them cool completely. Filling Whisk egg, sugar, syrup, and vanilla extract together and then add the pecan nuts. Pour the mix in to the tartlettes and bake them in the oven until the filling is firm and they have a golden brown surface, approx. 10 minutes. You can serve them with whipped cream otherwise thet taste great just as they are. Enjoy!

Saffron buns Makes approx. 30 buns | We use this recipe every year, adapted from “Vår Kokbok” Dough 150 grams butter 1,5 dl white sugar 50 gram fresh yeast 5 dl milk 1 teasoon salt 1 gram saffron 1 egg 14-15 dl flour 1 egg for brushing Filling 100-150 grams of butter, room temperature White sugar 150-200 grams almond paste, cold Topping Raisins Pecan Nuts Nib sugar Baking tools Pot Bowls Knife Rolling pin Mortar Grater Baking sheets

Let’s Start Dough Use a mortar and finely crush the saffron together with a little bit of the sugar. Melt butter in a pot over the stove and add the milk, heat until 37C (97F). Crumble the fresh yeast in a bowl and add a little bit of the butter/milk mixture and stir until the yeast is completely dissolved. Add the rest of the butter/milk mixture, sugar, crushed saffron, salt, and egg. Mix it well. Then add flour and work the mixture to a smooth dough. Let it ferment in 30 minutes under a clean kitchen towel. Heat the oven to 200C (392F). Knead the dough smooth on a floured surface. If you don’t want filling in them you can bake out small shapes and figures, just cut the dough in as many pieces you want to make. (Jump to * ) Filling If you wish make them with filling, roll out the dough with a rolling pin, preferably to a rectangle. Spread the amount of butter you want on the dough’s surface and sprinkle some sugar on top as well. Grate the almond paste over the dough. Fold the dough in half and cut it in strips. You can then make knots (as in the picture on the previous page) or other shapes. The beauty of these buns is that you can be creative. *Place the buns on a baking sheet and let them ferment a second time under a kitchen towel for 30-40 minutes. Press some raisins in the dough (optional). Brush the buns with the beaten egg and add nib sugar and/or nuts of your choice. They should bake in the oven 5-10, or until it has a golden brown surface. Enjoy!
