INTRODUCTION: My title may sound like economics or the discovery of more markets for beef products, but it is about sustainability in our beef industry and reclaiming market share we have lost over the years. There is no other industry that serves the socioeconomic span that the beef industry does in the United States. When consumers receive a big paycheck, they go to town to eat a steak. When they have big celebrations or events, they choose to eat steak. As beef producers we must quit thinking about consumer and retail demands on our industry as an audit, punishment, or criticism. But rather, start thinking that if we make continuous improvement in the field, our retailers have the messages to sell more beef.
HOW DID WE GET HERE?

1990’s: Food safety, E. coli, Jack in the box, and HACCP in packing plants were a focus.
