Dr. Suzanne Zeedyk, Developmental Psychologist, University of Dundee, Scotland, explains that "Babies brains come wired for connection, and their brains are constantly firing, building new neural pathways. From lavish dinners in peace and quiet, exotic travels, high heels, late Saturday mornings cuddling in bed and having nights that actually contain an element of sound sleep comes quite the opposite. It certainly is challenging, but oh do we love it. Not only for the obvious and clichĂŠ reasons such as: "you grow as a person", but more for all of the wonderful things that you get back. Suddenly you see your partner as a mother/father and nothing is as attractive as someone who manages that task with bravura. You follow the development of your child with such presence, such interest; one could think you were reading a book that you simply could not put down. I never feel happier or more loved than when I am with my family. It's beyond words and has to be experienced to be understood.

My two year old son is sometimes the company I choose rather than grown-ups, simply because we have so much fun together. Some days are of course filled with symptoms of what's referred to as the "terrible twos" (and those can be very complicated and filled with much frustration), but then it changes and you get your little angel back. They must have some sort of spell on us parents, because no one in my life has ever gotten away with this much fooling around. Our hearts are filled with so much love for our children. On the go... Traveling was a big part of our lives before we had children and today it's still totally manageable, providing some great planning. We travel differently nowadays because if the child is happy then so are the parents. The first time our eldest flew with us he was only six weeks old. After a few problematic trips, including a road trip in Morocco traveling around the country in a packed SUV, we understood the secret. We slowed our tempo in general and adapted to the child rather than expecting the child to adapt to us. As a mother living in the city centre of Amsterdam, I needed a stroller that was compact and easy to manoeuvre. I was very excited when I discovered Stokke® Scoot™. It was love at first sight.

A MODERN CLASSIC The Tripp Trapp® chair, created in 1972 by the Norwegian designer Peter Opsvik, has never been bettered. Andreas Viestad is an award-winning cookbook author, Norwegian Food columnist and chef. He is the television host of New Scandinavian Cooking. Andreas is also the founder of Geitmyra Culinary Center for Children, where children can learn about food that is good for them. He lives in Oslo with his wife and three children.

LIFE AROUND THE TABLE To me, life is what happens around the table. The most important food is not what you eat at top restaurants, or make to impress your friends. It is the stuff you make and share with your family – every day.

ometimes, it seems like we are all foodies, and that being a foodie is the most important way you can care about food: We talk about food, watch food shows and read glossy cookbooks. There are dinner parties that can sometimes seem more like cooking competitions than anything else. Everyday food is an altogether different ballgame. However much I enjoy dining out, or spending a whole Saturday fussing around the kitchen in anticipation of dinner guests, I think that

the measure of a good and strong relationship to food is how you cook and eat under somewhat less-than-ideal circumstances: On a busy Tuesday afternoon; the meal that has to be squeezed in between all the other of the day’s chores. Those few minutes around the table are often the only time of day when the entire family is gathered in one place, a much needed opportunity to talk about our lives, to share a silly joke, or an important story about something that happened to us, and to – in the smallest and most sincere way, reconfirm our commitment to each other as a family.

When I started working with food, it was as an explorer. For New Scandinavian Cooking I have traveled into the deepest fjords, and climbed the highest mountains in search of unique flavours. All in all my writing and television work has sent me to more than 40 different countries on five continents. But the most demanding journey has been the one I ventured out on when I became a father. Suddenly, I had to put someone else first. And as my flock of children grew – I now have three – I had to juggle the demands and needs of three very different individuals with very strong wills. I had to make sure I could feed them properly, and more or less on time every day. For some, having kids means the end of all ambition in the kitchen – succumbing to ready-mades and takeaway food to eliminate the hassle of cooking. To us, the kitchen is the most important meeting place. Ever since my children were old enough to sit on the kitchen counter, they have joined

me in cooking dinner. They help me chop vegetables, grate cheese or knead dough. My daughter loves to stir risotto, while my eldest boy is fascinated to see the transformation of meat from raw muscle to sumptuously browned steak. We talk, we laugh, we nibble at the food, and argue about when the pasta is perfectly cooked. Sometimes they make a mess. No, let me be honest, they always make a mess. Small children are not to be left alone with a bag of flour, and they cannot be trusted to bring a bowl of rice safely to the table without spilling some or all of its content on the floor. That said, learning to cook together with my children has been the most interesting culinary adventure I have yet to have. The food I eat now is different from when I was a free operator traveling the world in search of new flavours. But it is more meaningful and every bit as good.


ANDREAS' FAVOURITE FAMILY RECIPE Spaghetti with meatballs It is hard to find anyone who does not like spaghetti with meatballs, and it is, predictably, the favourite food of my children. I believe that when they have helped to make the food, it makes it taste that much better. Serves 5 Ingredients 500 g spaghetti 400 g minced beef 2 tablespoons cashew nuts, chopped 1 carrot, grated 1 tablespoon parsley, basil or oregano, chopped 1 dry slice of bread, or 3-4 tablespoons breadcrumbs 100 ml milk 1 egg 50 g grated parmesan cheese olive oil for frying 1-5 cloves garlic, chopped One 400 g tin chopped tomatoes More oil, parmesan and herbs to serve

Combine minced meat, nuts, carrot, herbs, egg, parmesan and milk in a large bowl. Tear the bread into small pieces and mix thoroughly. Fry the garlic in oil in a large frying pan before adding it to the mixture. Form the meat mixture into small balls with your hands and add to the pan one by one. Make sure that you do not crowd the pan; you might have to fry the meatballs in two batches. When the meatballs are browned all

over, add crushed tomatoes. Bring water to a light boil. Cook spaghetti as per instructions – it is best to leave the pasta still a little firm in the middle, al dente. When the pasta is cooked, drain and combine with meatballs and sauce. For a more generous flavours, add more olive oil, grated parmesan and herbs.
