Roasted Chicken and Pepper Pasta

Ingredients

Low Calorie Cooking Spray 1 red pepper, deseeded and cut into strips 1 yellow pepper, deseeded and cut into strips 1 green pepper, deseeded and cut into strips 2 garlic cloves, crushed leaves of 1 Rosemary sprig, finely chopped 300ml hot vegetable stock 400g can chopped tomatoes salt and freshly ground black pepper 400g can chopped tomatoes/cherry tomatoes salt and freshly ground black pepper 4 cooked skinless and boneless chicken breasts, roughly shredded

Spray a large frying pan with low calorie cooking spray and fry the onion, peppers, garlic and rosemary for 4-5 minutes until softened. Pour in the stock and tomatoes. Season with salt and freshly ground black pepper, bring to the boil and simmer for 30 minutes. Add the chicken to the pepper sauce for the last 5 minutes of the cooking time to heat through. Serve the hot with your favourite pasta shapes.
