The Caramel Craze Salted caramel seemed to come out of nowhere and make its way into a multitude of dishes. Bronwen Hiller looks at where this trend started and why it has such longevity.

aste fads come and go, sometimes so fleeting they seem to end before they ever really get started. Others last longer and find an ever-widening application for their use. There seems little doubt the current combination of salted caramel is one such beast. The Fudge Kitchen in Bath says salted caramel has been their best seller for the last four years. Like a pebble dropped in a pond, the ripples have spread and we now have salted caramel in everything. Where did the idea of salted caramel originate? As with many gourmet patisserie specialities, it began in France, more specifically Brittany. Unlike the rest of the country, Brittany is noted for salted butter, which harks back to an era when there was a tax on salt. Brittany evaded this tax.

Henri Le Roux was an apprentice in his father’s patisserie business. He moved on to learn the chocolate trade in Switzerland before returning and ultimately, opening a shop where the magic happened. Wanting to differentiate himself from other chocolatiers, he decided to highlight the special ingredient of Brittany. Through experimentation, he came up with a salted butter caramel with crushed nuts, which in 1980 won an award for the best sweet in France. The following year he registered the name CBS (Caramel au Buerre Salé): salted butter caramel. Why do sweet and salty work so well together? Chocolatier Amelia Rope explains, “Salt and sweet are the complete opposites in the taste profile and as with many areas of life, opposites can attract. Sweet notes are tasted on the tip of the tongue and salt either side.” It is about layering. Added to this, scientists have recently found certain sugar receptors in taste buds are only activated when salt accompanies sugar. Sweet is a pleasurable sensation and salt, as well as being a compound our bodies need to function, is also a flavour enhancer. The trick is in getting the balance exactly right, which is what Henri did so well. It was almost inevitable that the next development spurred by the growing popularity of salted caramel was ice cream. As salted caramel is composed of butter, cream and lots of sugar, it is an ideal flavour for the frozen treat. Temperature also affects taste buds. When things are too cold, it can be difficult to pick up the taste in foods, but sweet tastes are easier to pick up in these circumstances. Modern methods of ice-cream making allow for it to be served at slightly warmer temperatures, which means the salty flavour can be savoured alongside the sweet. Amelia also talks about the French connection with her own product development. “My first experience of sea salt caramel was on a family holiday in Brittany. We bought what we thought were butter biscuits, only to discover salt. The initiation to sea salt and sweet was strange for the first few mouthfuls, but after that my tastebuds have never looked back.” Amelia has been working with sea salt and flavours in chocolate since 2010. Keep an eye out for her salted caramel chocolate bar, which has small pieces of salted buttery caramel made in the Loire valley blended into the chocolate.

Chef Anjula Devi, who specialises in authentic Indian cuisine, talks about the depth of flavour salted caramel adds, “It is deliciously sweet, sticky and spicy. It was an experimental ingredient initially for me, as for years I’d been making my own pomegranate molasses, which delivers a sticky, zingy flavour that is not as sweet. I decided to try this dish with salted caramel and as they say, the rest is history.” The diversity of dishes salted caramel works with is surprising. “I love using it when making slow-cooked spare ribs,” says Anjula. “The salty sweetness does something quite magical to the five Indian spices I use in this recipe. What might surprise some people is that it works really well with fish too.”

Anjula Devi’s Salted Caramel Chicken with Chilli and Orange Liqueur Method Preparation time 20 minutes; cooking time 60 minutes. Marinate overnight. Serves four

Ingredients

• 6 organic chicken legs For the marinade: • 50 ml butter milk • 1-2 tsp red chilli flakes • 1/4 tsp anise seeds • 1/4 tsp cinnamon powder, freshly ground • 1 tsp cumin seeds • 1 inch piece of fresh ginger • 3 fresh garlic cloves • 1-2 fresh mild red chillies • Juice of a large orange • 2 tbs soya sauce • 1 tbs grated jaggery (golden caster sugar as an alternative) For the caramel and orange liqueur sauce: • 60g grated jaggery (golden caster sugar as an alternative) • 2 tbs orange liqueur (for a non-alcoholic version, use 2 tbs water) • 1 large tbs soft unsalted butter • 1 tsp salt flakes

Garnish:

• 1 small bunch of sweet basil, finely chopped

This chicken tastes best if you marinate it overnight. Take all the marinating ingredients, place in a blender and pulse until you get a smooth, creamy marinade. Score the chicken legs using a sharp knife, place in a large bowl and pour the marinade over. Mix really well. Cover the bowl with cling film and place in the fridge overnight. Remove from the fridge and bring to room temperature for about 20 minutes. Pre-heat the oven to 190 C, 375 F or gas mark 5. Place the chicken and marinade in an oven proof tray, then cover the tray with foil and bake for 45 minutes. When the chicken has been in the oven for 30 minutes begin to make the salted caramel with orange liqueur sauce. Place the grated jaggery/golden caster sugar and orange liqueur in a heavy base frying pan on a very low heat. Heat gently, allowing the sugar to dissolve, then turn up the heat to medium and allow the sugar to become a rich, dark red dark colour. Remove the pan from the heat and add two tablespoons of water (if making the non-alcoholic version). Be careful as the water will splutter. Immediately place back onto the heat, add the butter and salt flakes and stir well until the butter has melted. Remove the chicken from the oven, lift off the foil and carefully pour the caramel sauce all over the chicken, ensuring you stir carefully. Place the chicken back into the oven without covering it and bake until the chicken is golden brown and sticky. Serve garnished with sweet basil and some tenderstem broccoli.
