Letter from the President Dear Students, Parents and Colleagues, I still vividly recall the first time I landed in a foreign country as a young person. My senses felt overloaded; everything was utterly different. And my world changed. The impact of study abroad on a young person’s life is immeasurable. Years later, while living in Italy with my family for 8 years and working in the field of international education, it was part of my job to know the college study opportunities available in Europe to English speaking students. I also learned to determine the truly exceptional schools; ones that would be an outstanding experience for any student. Back then my work was with secondary students; high school students living abroad and choosing a college soon. Once my family and I returned to the U.S. my interest in education abroad focused on options for college students and it was evident that opportunities were limited and difficult to reach. As a result, in 1995, I began to build SAI, with the goal of making it possible for all students to experience study abroad; especially at these exceptional schools I’d come to know. For 18 years now SAI Programs’ hands-on approach has enabled us to serve our students with the finest study abroad programs in Europe. SAI students understand that SAI Programs is an organization known for providing programs and services of distinguishing quality and always with a personal touch. As President, I am committed to maintaining SAI Programs as a small, personalized organization with staff who care for students and respond to their academic interests, cultural curiosities and career goals. As an intentionally small organization we are able to help each individual student feel comfortable in a new cultural environment. And as a small organization, we pay attention to the smallest details, allowing students the greatest access to learning and cultural exposure. SAI Programs is dedicated to introducing students to opportunities that encourage creative interaction among disciplines; communication, science, technology, art and design, economics and social sciences. In this way we seek to help students develop both the breadth and depth of creative thinking, cultural knowledge and professional skills. About SAI Since 1995, SAI has been dedicated to providing students with an exceptional cultural and educational experience abroad. We offer you the opportunity to enroll in some of the very finest schools available to English speaking students in Europe. There are NO language requirements for SAI programs; all courses are taught in English (as well as some in the host language) and students receive U.S. university credit for all courses SAI offers. U.S. Credits

Students receive official transcripts for all coursework taken at SAI programs. SAI partners with several universities in the U.S. to provide our students with U.S. credit for their academic program. The following is a list of the U.S. Universities that issue a transcript for each SAI program. FLORENCE

NABA is fully accredited in Italy under the authority of the Italian Ministry of Education, University and Research (MIUR). NABA is a private institution belonging to the Higher Artistic and Musical Education (AFAM) system, a section of the Italian University system. Students also receive a transcript from Nuova Accademia di Belle Arti. Domus Academy (DA) DA Master’s Programs are validated and awarded by NABA. Master’s students receive a Master’s Diploma from Domus Academy and a Master’s Degree from NABA, which is fully accredited in Italy under the authority of the Italian Ministry of Education.

SAI Internships Internships are an excellent way to extend learning beyond the classroom, explore career options, and build professional networks. SAI Internships are not limited to undergraduate students studying abroad. There are opportunities for recent college graduates and those exploring a new career. Internships allow you the chance to develop or improve your Italian language skills and gain real world experience in professional environments. SAI offers part time and full time, non-credit and credit options for internships. Credit Internships (unless otherwise arranged) award the following: full-time (15 credit) and part-time (3 credit) internships; both include Global Professional Development Seminars.

SAI offers customized internships that immerse participants in innovative work environments within diverse settings. Our staff are experts in coordinating all aspects of the application and placement process to best match the goals of the internship candidates with the mission and scope of the internship site. Full-time intern candidates enroll in a three-week Italian language course and program orientation prior to the start of the Internship. During these three weeks, participants meet and visit potential internship sites and supervisors. After internship placement you will participate in a Global Professional Development Seminar that facilitates understanding of your experience and development, in relation to the global market place. Students in semester part-time internships for academic credit are required to be full time students and will enroll in 12 credits of other coursework, including one Italian Language course. A 3-credit part-time internship is in addition to the 12 academic credits. In general, students seeking part time internships should choose courses scheduled in the mornings to prevent interference with internship activities. In most instances, those seeking credits arrange prior approval from their home institution and their college or university provides the credits. Those wishing to earn academic credits but are unable to do so through their home institution may arrange to receive a transcript from SAI’s U.S. school of record, at an additional cost. Otherwise, all interns receive a letter of verification of their experiences and a certificate that acknowledges successful completion. These records, along with all recorded aspects of the internship, may be presented to your home school for petition of credit. Full Time Internship Program - florence

Advising & Orientation

It is important to continue communication with your academic advisor on campus to help you in selecting the courses that will fulfill your degree requirements and may help you in your future career and graduate school paths. Study abroad is considered to be a life-changing experience. Both the SAI admissions counselors and the SAI staff abroad can help to enhance this defining moment in your life. No question is ever unimportant at SAI. You can email, phone, or establish communication through Facebook, Twitter or SAI’s live chat website feature. Upon arrival you will participate in an orientation program, intended to familiarize you with the local environment. You will learn some of the local customs to help make your stay in your new city successful. Host school and SAI program policies are thoroughly reviewed during orientation.

SAI provides service learning, volunteer programs and community-based research projects with the overall goal of improving the quality of life for the local community. Students will explore their own cultural identity with respect to the local culture while giving back to their host communities. Not only do these programs and projects have advantages for the communities, but experts agree that these types of activities add an extra dimension to living and learning abroad, help to develop knowledge and skills for the global marketplace, and from a practical perspective, serve as boosters to resumes and graduate school applications.

Begin the process as early as possible. SAI stresses the importance of meeting with your academic advisor to discuss how to “save” or “bank” courses to take while abroad. Get to know your academic advisor and the advisors in the study abroad office so when questions arise, you know where to turn. From the moment that you express interest in SAI programs, there is someone who is there to help you. SAI admissions counselors are knowledgeable about the programs, courses, cities and countries where the schools are located, and have extensive experience in helping students transition from their colleges and universities in their home countries to the SAI schools abroad.

Often, students are transformed from the service experiences and discover a new sense of their own identities and their roles as global citizens.

For many, being a volunteer abroad represents an opportunity they simply haven’t had time to realize back home, where they juggle work, school, and busy lives. As a volunteer, students have the opportunity to explore their own culture, ideas and expectations with respect to the local realities they will encounter, while at the same time giving back to their host community. The relationships made as a result of these experiences can be life long and life changing for both students and locals alike. Most SAI programs offer volunteer opportunities and your SAI Advisor will guide you through the process of choosing a position that suits you. In addition, many SAI sites offer a variety of internships. You can find information on both volunteer and internship opportunities in more detail at the SAI website.

Our Program Coordinators and Advisors hold daily office hours and are always available to offer assistance with personal issues that are common when studying abroad, as well as academic problems that may arise. The Student Services Program, an ongoing and reassuring presence, includes an active calendar of social events and excursions, culminating in a farewell dinner at the end of each term. The SAI on-site staff regularly organizes culinary, cultural, sports and musical events, often free to SAI students. SAI encourages students to participate in these activities as another way to learn about the country and culture.

Community & Cultural Integration As a result of our strong ties to the local communities, SAI offers a variety of high impact service activities that help students gain a meaningful global perspective while making a difference in their world. Community service enhances students’ academic, professional, and intercultural development. Students engaged in the community examine real-life problems and collaborate with local residents to address community needs. Students may work on a specific project or participate in community, cultural or government related programs for a designated time. Examples include working with local immigration officials, teaching English and computer skills, serving the elderly community, participating with local medical emergency teams, or providing services to youth.

SAI Honors Program - Rome The SAI Honors Program allows academically talented students to satisfy their intellectual and cultural curiosities and earn additional credentials for studying abroad. This program distinguishes your work, boosts resumes and offers innovative alternatives to the traditional study abroad experience. The SAI Honors Program is designed to amplify the academic experience abroad. Honors students gain additional recognition for their work that acknowledges their commitment to academic achievement, creativity and community engagement.

Master’s Programs

Students already enrolled in an honors program at their home institution or who have a 3.5 GPA are invited to apply for the SAI Honors Program.

SAI offers 12-month Master’s Programs at Domus Academy (DA) and 12 or 24-month Master’s at Nuova Accademia di Belle Arti (NABA), in Milan.

Nuova Accademia di Belle Arti Master’s Programs are accredited by the Italian Ministry of Education and result in a NABA Master’s degree.

Special Airfares

Student Housing Learning to live in a new environment is an important part of your study abroad experience. You will make new friends and build relationships for the future. We recognize the importance of living and learning abroad and aim to create inspiring and comfortable living environments. SAI has earned an excellent reputation in providing superb housing for students and offers, in most locations, both homestay and private apartment living. Please see the “At A Glance� pages to learn more about specific housing available in each city. At SAI we are proud of our student housing; the result of our 18 years of experience. SAI encourages students to make new friends by choosing to room with classmates from other campuses but also recognizes that some students wish to share these life-changing moments with friends from their home campus. SAI will accommodate roommate requests when requests are mutual. SAI student apartments are assigned as single gender housing, (all male or all female). Students seeking male/female shared housing options should contact SAI to discuss their needs. A housing request form is included in the application. SAI provides ongoing support and assistance for students to create and sustain safe, comfortable living environments. Our staff will greet you and orient you to your new housing and city. Italy Shared Apartments Standard or Premium

Premium housing is offered in shared apartments with a supplementary fee. Premium housing includes weekly cleaning and laundry service.

HOUSING

SAI student apartments are located in buildings shared by Italian residents and are within walking distance or short commute from the school. Although room sizes vary, SAI offers private and shared bedrooms and all apartments are clean and well equipped, including basic furnishings with a kitchen, living area and bathroom; larger apartments will have two bathrooms. Each apartment accommodates between 2-8 students, depending on its size. A washing machine, basic kitchen supplies and bed linens are provided. SAI staff will respond to any maintenance needs that may arise. Please note that single rooms are limited and are reserved on a first come first served basis.

Italy Homestays Homestays are offered in Sorrento, Siena, Florence and Rome. Homestay typically includes breakfast, (dinner may be added) and use of the washing machine. Students may choose a private room or a shared room. Homestays are a terrific way to ensure your language skills and cultural knowledge grow. Though Sorrento offers homestays near the school, Siena, Florence and Rome homestays are often outside of the historic center and may require a short bus ride to reach school.

Excursions SAI Semester Programs include a 3-day excursion. Each program site has its own excursion and day trip destinations: some are included, while others are optional. Here are the many excursions we choose from each term.

Assisi and Umbria: the Green Heart of Italy Umbria is an agricultural region of unspoiled hill towns, famous for its extra-virgin olive oil, wines, ceramics and other typical regional products. The town of Assisi is an important pilgrimage site and home of St. Francis. It is also a UNESCO world heritage site due to the fresco masterpieces by Giotto. You will lodge in a historic local farm dating back to at least the 1700s. A variety of hands-on activities are offered: a chocolate making workshop in Perugia - Italy’s chocolate capital; a ceramic painting workshop in Deruta; lunch with local sheep farmers and a visit to the mountains with a geography professor from the University of Perugia; a paper making demonstration in Fabriano and a guided tour of the splendid Frassasi Caves.

EXCURSIONS

Genoa -- The Historical Italian Riviera City and World Renowned Aquarium The Genoa Aquarium, the largest aquarium in Italy and the second largest in Europe, is located in the Genoa harbor, home of the Genovese sailor, Christopher Columbus. The building, which some say looks like a ship ready to head out to sea, was designed by the famous Italian architect Renzo Piano. Tour this historic and bustling city, where explorers departed for the new world.

Bologna: The Culinary Center of Italy Located in the region of Emilia-Romagna, Bologna is known for culinary delights like tortellini, lasagna, Bolognese sauce, prosciutto and Parmigiano Reggiano cheese. Spend the day exploring the city’s covered walkways, large squares and historic towers and churches. Home of the oldest university in Europe, the city exudes a young spirit and alternative culture that can be seen in the unique shops, street markets and typical eateries.

Ancient Hot Springs Get out of the cold and enjoy a day bathing in the natural hot springs near Siena. With both indoor and outdoor pools and spring waters naturally ranging from 77 to 100 degrees, you can enjoy the healing powers of the hot springs even in frigid weather. Relax poolside and enjoy the view of the Tuscan countryside.

Lucca and Carrara: The “Walled City” and the “Quarries of Michelangelo” Tour the famous quarries of Carrara, where marble has been extracted since the Roman times, including the blocks used by Michelangelo himself, as well Giotto, Donatello and Bernini (just to name a few). From the breathtaking views of the Mediterranean visible from the Carrara Mountains, we descend to the town of Lucca. Famous for its 16th century perfectly preserved walls, Lucca is a wonderful place to take a leisurely afternoon stroll or bike ride.

From Earth to Table: An Inside Look at Tuscan Food and Culture Get a first-hand look at organic agriculture in Italy with a tour of an organic farm. The tour includes a look at the grounds, animals, vineyard and wine cellars, followed by a rustic lunch prepared with the farm’s products.

Siena: Tuscany’s Medieval Gem (in the Heart of the Chianti Region) Siena is one of Italy’s best-preserved medieval towns. You will have free time to visit Siena’s Gothic cathedral and climb to the top of the church’s unfinished facade for a view of the town and breathtaking countryside (the Chianti Region). This day trip includes a stop at a typical Sienese Inn for a wine-tasting lesson and a guided tour of the medieval center of Siena.

The Tuscan Riviera: from Etruscans to the Islands of Tuscany SAI will take you to Southwestern Tuscany and the area of Maremma. Known for its natural parks, Etruscan ruins and exquisite coastline and archipelago, the area offers a plethora of natural beauty and cultural heritage sites. We will taste the area’s best specialties at an organic farm, take a cruise around the Tuscan Islands of Giglio and Giannutri, and lounge on the Mediterranean white sand beaches. We will visit the ancient Etruscan Acropolis of Sovana and the amazing hill town of Pitigliano.

Rome tour: Caput Mundi Rome is one of the most beautiful cities in the world; every year millions of tourists come from around the world to admire the masterpieces of Roman art and architecture. It may no longer be Caput Mundi (capital of the world), but Rome is an epic metropolis, containing world treasures from lost western empires.

Ancient Appian Way Bike ride and Catacomb Tour Enjoy a guided bike ride down the Appian Way, an ancient Roman road that went all the way to the eastern tip of Italy. After a morning of biking, we will stop for lunch and have a guided visit of the catacombs. This is a great opportunity to get out of the city and discover the nearby Roman countryside.

Swiss Alps & Munich: A Tour of Mountains and History These glorious mountains cover 65% of Switzerland’s surface area. Students experience the Alps as well as Munich, the capital city of Bavaria and one of Germany’s most popular destinations with something to offer everyone; culture, design, grand parks, night life, architecture, beer gardens and shopping. Dachau concentration camp was the first Nazi Concentration Camp opened in Germany, located on the grounds of an abandoned munitions factory near the medieval town of Dachau.

Orvieto, Assisi & the Marmore Falls The city of Orvieto sits atop a nearly vertical face of stone cliffs. It was a papal possession until 1860, when it was annexed to unified Italy. Barcelona Barcelona is the capital of the Catalonia region of Spain and the second largest city after Madrid. It is also Europe’s largest metropolis on the Mediterranean Sea. Its influence in commerce, architecture, education, entertainment, media, fashion, science, and the arts all contribute to its status as one of the world’s major global cities.

This exciting trip gives students a chance to experience first hand the production of three typical Italian products; Parmigiano Reggiano, Prosciutto di Parma and Aceto Balsamico Tradizionale di Modena. This is an excellent opportunity to learn the secrets behind these high quality products – and why they are unique and different from their imitations, which can be found all over the world.

Venice & Murano Island Considered one of the most romantic and thrilling cities of the world, Venice is made up of a collection of more than 110 small islands, connected by a web of canals and bridges. The city appears to be floating in the Venetian lagoon, calm and serene. Influenced by both eastern and western cultures, this once bustling port city has much to offer visitors. The island of Murano is a glassmaker’s paradise. Since 1291 Murano has been the home of Venice’s glassmaking industry.

The Cinque Terre: Hiking Between Sea and Sky This territory consists of roughly 15 miles of rocky coastline with bays, beaches, clifs and deep sea, while surrounded by mountains running parallel to the coast. It is a Natural Reserve, declared a World Heritage Site by UNESCO in 1997. Cinque Terre means literally “Five Towns”, where tiny fishing villages are connected to each other by paths, immersed in nature and suspended between sea and sky.

Tuscany & Its Vineyards You will see some of the most charming corners of Tuscany, full of architecture, history and gastronomical traditions that have remained intact for centuries. The city of Pienza is considered the “ideal renaissance town” and is also famous for the production of “pecorino” cheese, a highly valued, aged sheep cheese. Montepulciano, is a renaissance town in southern Tuscany and an important agricultural center, famous for it’s “Nobile” wine. Montepulciano lies on a hilltop in a panoramic position, surrounded by ancient defense walls. The town has preserved many architectural jewels and artistic treasures along with the natural beauty of the surrounding countryside.

The growth of many suburbs and settlements around the city proper has helped the city grow to approximately 9.3 million people. Milan is the main industrial, commercial and financial center of Italy. Its business district hosts the Italian Stock Exchange and the headquarters of the largest national banks and multinational companies. The city is recognized as a major world fashion and design capital. Lake Como has been a popular retreat for aristocrats and the wealthy since Roman times, with its many villas, palaces and artistic gems. Many celebrities have homes on the shores of Lake Como such as Madonna, George Clooney, Gianni Versace’s family and Sylvester Stallone.

Hidden Treasures of Italy: Lazio and Tuscany You will take an unforgettable journey to experience the hidden treasures of the Italian countryside outside of Rome. On our way to Tuscany from Rome, we will visit the area known as Tuscia, where you will enjoy lunch with a view of the largest volcanic lake in Italy, Bolsena. Staying in Maremma, (In Tuscany), we will spend time relaxing “all’italiana”: bathing in the thermal baths, horseback riding or bike riding, eating traditional foods and visiting the local towns of Sovana and Pitigliano. The third day we will visit Orvieto, one of the most dramatic hill towns in Italy that is built atop a large piece of volcanic rock called tufo.

Sicily: Pearl of the Mediterranean Sicily is the largest island in the Mediterranean Sea, with numerous surrounding minor islands. It constitutes an autonomous region of Italy, the Regione Autonoma Siciliana (Sicilian Autonomous Region). Its most prominent landmark is Mount Etna, which at 10,890 feet is the tallest active volcano in Europe and one of the most active in the world. Sicily has a rich and unique culture, especially with regard to the arts, music, literature, cuisine, architecture and language. It contains some of the finest archaeological and ancient sites in the world today.

Campania Region Tour This trip includes visits to the cities of Pompeii, Sorrento, Capri and Naples. Pompeii, a Roman city buried and preserved by the eruption of Mount Vesuvius in 79 AD, is an amazing example of Roman civilization for its display of art and examples of everyday life in ancient times. Sorrento, is a charming and picturesque town right on the sea. The streets and alleys are adorned with beautiful villas and plenty of shops. Capri is an island in the Tyrrhenian Sea off Sorrento, in the Bay of Naples, a resort destination since the Roman Republic. Scholarships SAI is pleased to offer scholarships to deserving students each academic year. Scholarship details, eligibility requirements and application can be found on our website. Scholarships can only be awarded to students enrolled in our regular full program, with housing. All students submitting scholarship applications are considered for all scholarships that apply to their enrollment and therefore do not have to specify a particular scholarship. An independent selection committee reviews applications that meet all criteria and requirements. Awards are announced 30 days after the scholarship application deadline. Multiple Term Discount • Students pay only ONE application fee when applying to more than one term at the same time, in one application. Second term application fee is waived.

Gap Year Discount • $1,000 discount for high school graduates seeking to study abroad for one academic year (two consecutive semesters) prior to beginning college. Student must submit high school transcript and have a minimum high school GPA of 3.0. Discount does not apply to a single semester enrollment. Discount applies only to Full Program enrollment, which includes housing.

Students using financial aid are required to pay Application Fee, Confirmation Deposit, Security Deposit and Private Room Supplement (if applicable). Written verification of financial aid award or loan approval must be sent to our office in order to delay, until disbursement, the balance of program fees and before your application is considered complete. If your financial award is not sufficient to cover the full Program Cost, the difference must be paid by the final payment date.

Obtaining a visa may be a timely process therefore upon acceptance into the program the procedure should be started immediately. At the beginning of each term, students participate in an orientation during which they are given general information, school policies, a profile of Italian culture, a guided walking tour of the city and school premises, an Italian language placement test and a final course registration. You will meet your advisors at orientation, and they will be available to assist you with any academic or personal issues that may arise throughout the term. Advisors also plan frequent social events for students, ranging from restaurant dinners of regional cuisine to the wildly popular local soccer matches.

As an urban school, Florence University of the Arts (FUA) is comprised of several buildings; Palazzo Bombicci Guicciardini Strozzi, Palazzo Doni, Palazzo Ramirez de Montalvo and Villa Brilli Peri. The school’s main building, Palazzo Doni, is located steps away from the Santa Croce Church (Basilica di Santa Croce). This Renaissance building was once owned by the Doni family, patrons of Michelangelo. The classroom named “Aula Michelangelo” was once the Doni family master bedroom, where Michelangelo’s commissioned work was displayed. Palazzo Bombicci Guicciardini Strozzi, located across the street from Palazzo Doni, hosts many classrooms as well as an advanced photography studio, including professional dark room. Palazzo Strozzi is also the location of the Palestra (the gym) that all FUA students may use. Palazzo Ramirez de Montalvo accommodates the Italian language and Italian literature departments of Florence University of the Arts. In addition, Palazzo Ramirez de Montalvo hosts regular events, including afternoon lectures and a film series, as well as special evening events such as book launches, lectures, discussion groups and conferences. Villa Brilli Peri houses most of the food and wine studies. This palazzo hosts classes in the professional kitchens and, specially designed Wine Appreciation teaching classroom. Although these buildings hold historical meaning in Florence, with extensive remodeling, contemporary Italian interior design can be found within all of them. The palazzi are large and provide an ideal setting for the studios, classrooms, administrative offices, internet facilities and library located within.

Academic Programs

12 – 15 credits (4 or 5 courses) chosen from semester course schedule.

The Free Elective Program provides students with the greatest flexibility to choose freely from course offerings and select courses based on academic needs and career interests. These courses fulfill a combination of major, minor, and elective credits for the student, based on academic approval from their home institution. SUmmer programs Summer Sessions

Students can attend 3 to 12 week sessions for a total of 3 to 12 credits.

The summer program is created for students wishing to design their own curriculum from a broad selection of courses. Students select courses from the Class Schedule. All courses are taught in English. 3 Week Programs (Summer I, Summer II, Summer III & Summer IV) Students can take 3 or 6 credits. 4 Week Programs (Summer V, Summer VI, Summer VII, Summer VIII) Students arrive in Rome, spend their first week travelling into Tuscany to participate in the course “Cultural Introduction to Italy – 1 credit). Then travel to Florence and take 3 or 6 credits for the remainder. 6 Week Programs (Summer A, Summer B) Students can take 3, 6 or 9 credits. Students can choose to spend their first week in Tuscany and participate in the course “Cultural Introduction to Italy – 1 credit). Then travel to Florence and take 3 or 6 credits to make a 7 week program. 12 Week Program (Summer semester) Students can take 6, 9 or 12 credits.

Career Certificate Programs In Florence At Florence University of the Arts (FUA) and Apicius International School of Hospitality, SAI offers Professional Certificate Programs for students seeking to develop new skills and knowledge while building professional experience in an international learning environment. Career Certificate Programs may be taken for one session, one year or two years. Each year is comprised of two sessions, with pre-set “core classes�. Students receive U.S. credit for Certificate Programs through the University of South Florida. The SAI Certificate Programs are offered either by FUA or by Apicius, a school within FUA. At Florence University of the Arts, SAI offers Career Certificate Programs for students seeking to develop new skills and knowledge. CULINARY ARTS The academic goal of Apicius is to introduce students interested in a professional career to the field of Culinary Arts and the legacy of Italian cuisine. The professional program provides students with the basic skills necessary for entering the food industry; a constantly developing field encompassing a wide range of exciting specializations. Students can attend a single session, thereby receiving a transcript of their coursework, or complete 1 or 2 year programs, achieving a Certificate in Culinary Arts. Students receive a solid foundation of Italian cuisine that covers all aspects of professional cooking with an emphasis on Italian products, traditions, and regionality. The goal of the Culinary Arts Certificate is to impart Italian taste, refinement and the origins of a cuisine with ancient and multi-cultural roots. Apicius offers the necessary skills to execute preparations of traditional Italian foods, regional cuisine, baking and pastry, and creative cuisine. The tenets of professional cooking are reiterated on a theoretical level with restaurant management and nutrition, while wine appreciation courses develop the pairing and analytic skills of the certificate students. The 1 Year program includes an optional internship for continuing students. This internship is a training experience that allows students to apply the knowledge and skills acquired in class within a supervised environment, and to receive hands-on experience necessary to qualify for an entry-level position in the food service industry. WINE STUDIES AND ENOLOGY A wine expert is a qualified critic, salesman, and business manager. A professional sommelier is skilled and knowledgeable about wine and recognizes its fundamental role in the culinary experience. Master OF CULINARY ARTS Apicius offers a Master of Culinary Arts Program for professional chefs or Hospitality graduates who wish to enhance specific skills in Culinary Arts. The program is 1 year long and is aimed at celebrating the outstanding mastery of cuisine that has evolved in Italy over the centuries. It is not simply an exceptional ability in cutting vegetables or flipping an omelet that makes a Master Chef, but the knowledge of quality products, the ability to interpret recipes, the knowledge of the historical background of dishes, and the ability to match ingredients to create a balanced new dish. The program provides the student with a sound understanding of the gastronomic culture in Italy. It develops each student’s aptitude to their optimum potential and gives them the opportunity to acquire specific skills and abilities in order to develop their professional careers. Program Objectives

The program provides students with a sound understanding of contemporary methods and styles in Italy and Europe. It polishes each student’s skills and techniques, enabling each of them to move forward in his or her professional career. To attain the specified objectives, the curriculum includes: • 5 courses for a total of almost 250 hours including instruction and lab hours. • Practicum experience (approx. 250 hours) to provide an opportunity to put theory to practice in a professional environment. This practicum takes place at FEDORA, the Apicius non-profit cultural association and pastry-club where students operate the pastry shop from production to customer service.

Prerequisites Detailed CV demonstrating a Bachelor’s degree in Pastry Arts and/ or Hospitality, with evaluation reports or transcripts, or at least 3 years of professional experience. Successful performance on both a written exam and a practical test at the start of the term. Students wishing to enter into the master level will have to demonstrate intermediate level knowledge of: chocolate preparations (ganache, pralines), breads and yeasts, plating skills, dessert styling basic skills, all the main baking dough and methods (choux, puff pastry, short pastry etc.). James Beard Foundation Program 2014 This program offers a once in a lifetime opportunity to collaborate hands-on in a series of events held on the premises of America’s most renown gastronomy and professional restaurant organization, the James Beard Foundation in New York City, as well as at the prestigious Astor Center and De Gustibus, at Macy’s Herald Square. The nature of the program is transcontinental, between Europe and the United States, in order to promote cross-cultural knowledge in the areas of special events related to specific food concepts. Program participants will acquire theoretical and practical experience through instruction, event planning, and on-site event management/production for a full immersion experience of staging a number of prestigious events in New York City. It has been said that more than a lifetime is needed to experience all that the city of Rome has to offer. It is a city layered with art and antiquities encompassing 2,500 years of history — from the Coliseum, the Imperial Forum, and the Roman Pantheon, to Vatican City, with the Sistine Chapel and Vatican museum. The city of Rome is home to over five million people and is a global center of business, diplomacy, religion, film, art, and fashion.

SAI students participate in an orientation program, which provides information on the school and its policies, the city of Rome, and what to expect while living abroad. By the end of orientation, students will have a good understanding of how to find their classes, buy supplies and groceries, and move about independently in the city. Students have many opportunities to adventure beyond the city of Rome. You may join the regular excursions organized by SAI, or you may choose to travel on your own. An efficient rail system allows easy access to places of interest and many low cost airlines offer convenient travel to other European cities.

In Rome, SAI offers two distinct program options; John Cabot University and Italiaidea Institute.

Students are offered a variety of co-curricular activities both on and off campus. Students may become active Student Council members, or participate on the debate team. Intramural soccer, basketball and volleyball are available, as well as swimming at a nearby pool. Several gyms are available in Trastevere, within easy walking distance of the campus. Films are shown at JCU every week through the cinema club, and the university’s theater group stages a major dramatic or musical production twice a year. “Program Coordinators are all great! Since 1972, John Cabot University (JCU) has provided an exceptional academic and cultural opportunity for students - the chance to obtain an American university education in the heart of the international city of Rome. All classes at John Cabot are taught in English and there is no Italian language requirement. In an increasingly complex and inter-related world, an education with a global perspective is essential. JCU students encounter a rigorous liberal arts curriculum amidst centuries of art and architecture, in the center of one of the world’s great modern cities. John Cabot University maintains two campuses in Rome, each with its own personality. Walk through the Porta Settimiana (built in the third century) and you will find JCU’s Frank J. Guarini Campus. Located on the grounds of the Accademia dei Lincei, the National Science Academy, where Galileo was a member, this historic building takes full advantage of Rome’s mild climate, opening onto patios, terraces and a spacious “Lemon Tree” courtyard surrounded by bougainvillea. Students regularly congregate in these open spaces and terraces to study and socialize. You will encounter a richness of sites, making it difficult to choose how to spend your free time. You will discover that Rome is an open-air theater which never ceases to amaze. It is an incredible city which enchants all with its great panoramas, piazzas, buildings, churches, ruins and museums; a great world capital which continues to maintain an authentic and traditional atmosphere in the peace of its small streets and its splendid piazzas bursting with people and life. “Rome is the great mother”, Fellini said, “who accepts all and where all find what they are looking for: art, cuisine, religion, cinema, nightlife or the peace of a boat-trip on the river, the boutiques of the major Italian designers or the small artisan workshops”.

JCU’s Tiber Campus, located on the banks of Rome’s famous Tiber river and a five-minute walk from Guarini, is a spacious, state-ofthe-art building with smart classrooms, a student lounge and JCU offices such as Student Services and Counseling. Designed by the Italian modernist architect Angelo di Castro in 1958, it was completely renovated to accommodate 21st-century learning styles and technologies, while maintaining the architectural integrity of this former elementary school. Both John Cabot University campuses are wireless and set up to encourage dialogue and collaboration among the international student population.

JCU offers a wide range of courses with current interests and contemporary subjects in mind. Courses range from Business, Communication, and Political Science to Art History, Literature and Studio Arts. Generally, courses at John Cabot University carry 3 units of credit. In one semester, a student may enroll in four or five courses, earning 12 or 17 credits. Two summer sessions of six weeks each allow students to take one or two courses each session.

Students will work with the SAI Admissions Counselor to choose at least one designated global awareness course. The course(s) selected will help students develop knowledge and skills related to an aspect of global awareness such as cultural values and practices; global systems and their interconnectedness; humanitarian issues; environmental concerns and international relations. SAI Global Leaders Certificate The SAI Global Leaders Certificate, offered at our Rome program, is designed to enrich students’ experiences while studying abroad and to acknowledge their academic and service work by providing an additional credential beyond a university transcript. The city of Rome offers students unique opportunities to link classroom learning to real world experiences, while living and studying in a dynamic international capital city. The Global Leaders Certificate is based on the premise that students engaged in their own communities and abroad have increased opportunities to develop leadership skills that contribute to academic and career success. While in Rome, students will gain awareness of leadership strategies that can be applied in local and global contexts. Students will broaden their awareness of global issues and deepen their knowledge of the local host community’s role in an increasingly interconnected world through exploration of research, engagement in community services and interaction with experts and leaders. Mentoring and structured reflection are integrated into the Certificate Program. SAI coordinators in Rome serve as mentors and meet regularly with students to discuss their progress and perspectives on their individual and group experiences. The Global Leaders Certificate enhances leadership skills by helping students to understand themselves in relationship to the world community. Both the academic and service components enable students to identify economic, political and cultural forces that shape the global market and influence global leadership. When applying to SAI, students must indicate on their application the Global Leaders Certificate in their Rome program option.

Summer Institutes institute For Creative Writing And Literary Translation Since its founding in 2009, the Institute for Creative Writing and Literary Translation has quickly become a thriving community of writers in Rome. The Institute’s reading series has featured such luminaries as Kim Addonizio, Marianne Boruch, Peter Campion, Kevin Craft, Eliza Griswold, Joseph Harrison, Jay Hopler, Kimberly Johnson, Richard Kenney, Brad Leithauser, Robert Polito, Mary Jo Salter, and Edmund White. Our Summer Writers in Residence have been Mark Strand and Simon Mawer (2010), Dorothy Allison and Marilyn Hacker (2011), and in Summer 2012 the Institute welcomed Billy Collins and Joyce Carol Oates. Institute In International Communication Each Summer II session JCU brings together students and faculty from around the world to study communication in Rome. As a JCU Institute participant you will be invited to special events and networking dinners and will be awarded a certificate upon successful completion of your summer courses. The costs are the same as JCU’s regular summer program with the added social and educational events.

Internships with JCU John Cabot University’s unique relationship with leading multinational corporations, embassies, media and international organizations gives SAI students the opportunity to participate in exclusive internship programs. Former students have interned at the U.S. Embassy, Price Waterhouse Coopers Advisory, FAO, IDLO, IFAD, NATO, World Food Program, CNN, Vatican Radio, Sotheby’s Italy and many other companies. In order to participate in the internship program students must meet the following criteria: • Minimum 3.0 GPA • Junior or Senior standing

Interested students should contact SAI Admissions, explaining the type of internship they are interested in, along with a copy of their resume. Please note that internship placements look to meet a company’s need as well as the student’s and often require an inperson interview. Knowledge of the Italian language is helpful, but not required. Students interested in an internship for credit should contact us at least a semester in advance, giving ample time to develop possibilities that would benefit all parties involved and match students with a faculty advisor. Non-credit Internships are also available.

There are several Work Study opportunities available to visiting students each semester in Student Services, Admissions and Housing offices at JCU. Interested students should contact SAI Admissions for more information. Volunteering Both SAI and the Student Services department at JCU offer students the opportunity to join the local Roman community through a socially relevant volunteer experience. Opportunities include the Caritas Soup Kitchen, Caritas Hostel for homeless men, and Italy Reads a cultural and language exchange project in local high schools. In 1986 Italiaidea was asked to begin work with Cornell University; and in 1995 British Airways began sending its staff for language training. Since then Italiaidea’s list of clients has grown to include institutions such as Dartmouth College, the Embassies of the United States, France, Spain, Germany and Israel, and religious institutions such as North American College.

Italiaidea uses an interactive communicative approach, with “authentic� materials. This means lessons are focused on Italian daily life, (newspapers, music, advertising, current events), continuing to update materials to make the program relevant and contemporary. Italiaidea offers eight levels of Italian Language study; two elementary levels, two intermediate levels, two advanced levels and two perfection levels. Upon arrival each student is tested to establish his/her language level and is precisely placed to reflect his/her current skills. Each class has a maximum of 10 students. The City Nestled in rolling hills in the heart of Tuscany, just 70 miles south of Florence, Siena was first settled during Etruscan times and during the time of Emperor Augustus, a Roman town was founded on the site of Siena. As an important money-lending center, Siena prospered as a city-state. With its narrow winding roads and medieval architecture, Siena appears all but untouched by modern times. One can wander through tucked-away squares and tour museums and churches that are home to countless renowned works of Byzantine, Renaissance and High Renaissance art. A UNESCO World Heritage Site, the city is a major attraction and is also a bustling university town. One of the oldest in Europe, the University of Siena was founded in 1240 and currently enrolls more than 20,000 students. The city offers exciting sporting and cultural events year round, including one of the top basketball teams in Europe, as well as the AC Siena soccer team and many theatrical events and a series of concerts sponsored by the famous Chigiana Musical Academy and the Siena Jazz Summer Festival. “Siena truly is an amazing place to do your study abroad experience. Siena is perhaps most famous for the heart stopping horse race, Il Palio. This spectacular event takes place twice each summer in the central square of the city and has roots that can be traced back centuries. The exhilarating bareback race pits each of the city’s 17 neighborhoods, or contrade, against one another and is not to be missed – the victorious neighborhood celebrates for an entire year!


In many courses, learning is not limited to the classroom. Whenever possible, Siena Italian Studies integrates field excursions and visits to enhance comprehension and provide students with a multifaceted experience. For example, art history courses naturally include visits to museums, churches and sites of artistic relevance in Siena, Florence and other towns in the region so that students can see first-hand the masterpieces discussed in class.

Each semester program includes a 4-day group excursion to a chosen location. This excursion follows the Intensive Italian Course (the first 3 weeks of the semester) and includes some relaxation time as well as visits to culturally significant sites. Several half-day and full-day excursions give students a wide-ranging and meaningful experience of Tuscany (and other regions of Italy) of the sort tourists rarely have. We walk through the Tuscan countryside from one unspoiled small town to the next, passing along ancient Roman byways and through woods where locals hunt for mushrooms and gather herbs; visit farms that produce wine, olive oil and pecorino cheese; relax in one of the region’s many natural hot springs; experience traditional Tuscan festivals such as Carnevale in Foiano della Chiana. Each term also includes a visit to Florence and the Uffizi Gallery, as well as an Italian Opera in Florence or Rome and a day trip hiking along the Tuscan coast to an unspoiled beach in the Maremma Region of Tuscany.

Cultural Anthropology students may attend traditional local festivals and visit museums dedicated to aspects of Tuscan folk culture; students studying Italian Costume will have the opportunity to visit museums dedicated to textiles, costumes and individual Italian designers in the Florence/Prato area, while students studying the History of Italian Cuisine might visit a local cheese making farm and attend a hands-on cooking lesson, and the list goes on.

Siena Italian Studies (SIS) is a study abroad program based at the International Center for Intercultural Exchange in Siena, Italy. SIS programs are a ‘gentle full-immersion’ in Italian life for highly motivated beginners, intermediate and advanced Italian language students. SIS offers some of the most innovative programs in Italy that work to fully integrate the education of language, culture and service-learning, in and out of the classroom. Classes are taught using an instructional approach developed over the years, known as FICCS (Full-Immersion: Culture, Content, & Service). Using this approach, which combines guided and spontaneous learning acquisition, students are asked to employ new language skills both in the classroom and in service situations, giving them a learning experience like no other. SIS programs are intended for students with a wide range of motivations for studying abroad. From acquiring a mastery of the Italian language, to using a local Renaissance chapel as your art history classroom, or working alongside the city’s volunteer medical assistance team, Siena Italian Studies provides you with the means to create an unforgettable experience abroad. All students are housed in family board accommodations, encouraging use of your new language skills and deepening your interaction with Italian families and culture.

Voluteer program Participants in all SIS programs are encouraged to perform service in the community through the IC partner Ulisse Cultural Association. This service can range from 1-5 hours a week and opportunities are at a variety of different service sites. Students might set tables at the city soup kitchen, visit with the elderly at a nursing home, teach English to local elementary school children or volunteer on the city ambulance. Volunteering in the community is an unparalleled way to improve language skills, get involved in the local social fabric and make a genuine contribution to the host community. Academic Programs SAI students attending the program at SIS receive U.S. transferable credits from Portland State University. At SIS, SAI offers semester and summer programs. Language and culture make up an inseparable binomial; who can really say whether it’s culture that generates language, or language that generates culture? This is the basis of Siena Italian Studies’ version of Full-Immersion: Culture, Content and Service (FICCS). For SIS, full-immersion is not a form of ‘torture’ or trial-by-fire


The overall objective of full-immersion at SIS is for each student to begin to recognize and activate these capacities, and to develop a reflective intercultural competence, which will allow him or her to function as a global citizen capable of facing and interacting with different cultures throughout the course of his/her lifetime with awareness and sensitivity.

Summer programs Summer students take a combination of Italian Language and elective courses. Programs range from four to eight weeks for a total of 6 to 12 U.S. credits. These courses begin in English then transition to Italian.

semester programs All semester students are enrolled in a three-week Intensive Italian Language course (3 credits) during the first month of the program. Internships There are several internship placements available for interested students in both semester and summer terms. The Master in Creative Advertising is a joint initiative between Nuova Accademia di Belle Arti Milano and Media Design School, New Zealand. Students enrolling in the Master in Creative Advertising, will develop core skills in copywriting, story telling and art direction, to create advertising campaigns across different types of media. The Master course kicks off with an introduction to the basics of creative advertising, from terminology all the way to best practices. Students will then be challenged by leading companies and experts with workshop briefs designed to give them a working knowledge of the advertising context. In the last month of the course, students will work on a final project, which culminates in an open presentation delivered to all course staff, external examiners and invited critics. Honors Program in Rome The SAI Honors Program allows academically talented students to satisfy their intellectual and cultural curiosities and earn additional credentials for studying abroad. The honors program helps students to distinguish their work, and boost résumé while offering innovative alternatives to the traditional study abroad experience. SAI Honors students gain additional recognition for their work that acknowledges their commitment to academic achievement, creativity and community engagement. The SAI Honors Program in Rome is designed to amplify the academic experience abroad by offering students unique opportunities to link classroom learning to real world experience, while living and studying in Rome, a dynamic international global center. The Honors Program is based on the premise that students go above and beyond the classroom. Students enroll as full time students at SAI’s John Cabot University (JCU) program that includes at least one JCU honors course. Honors courses are designated as such because students complete additional assignments (e.g., research papers or portfolios, attendance at interdisciplinary honors lectures), and delve more deeply into the subject. These additional assignments are graded on a “grant of Honors credit/no grant of Honors credit” basis and are not calculated into the final grade for the course. For the granting of Honors credit, JCU requires that students produce work of a quality that would receive a B (3.00/4.00) or higher and this will be noted on their transcripts.

Students taking a course as an Honors Course also enjoy additional mentoring from their JCU instructor. In addition to the JCU honors course, students work with the SAI honors coordinator and participate in activities arranged by SAI, such as community services and scholarly seminars. Students enrolling from one of our affiliated schools receive a variety of benefits, such as fee reductions. APPLICATION PROCEDURES PROGRAM REQUIREMENTS: • Minimum 18 years of age • Personal Statement • Letter of Recommendation (Siena Italian Studies Only) • Minimum GPA 2.5 (Florence University of the Arts 2.75) APPLICANTS FROM SAI-AFFILIATED SCHOOLS Students from affiliated schools should discuss their plans with the study abroad office at their home school. Some affiliate schools require students to pay all fees directly to SAI while others do not. Be sure to discuss this with your study abroad advisor in order to be clear about the procedure your school uses in their affiliation with SAI. Affiliate students receive credit for courses taken abroad from their home institution. While affiliated schools guarantee credit, this does not guarantee every course will transfer or that it will transfer into your major area of study. Students are responsible for meeting with an advisor to verify transfer credit before beginning their SAI program. If you are uncertain about your college or university’s affiliation with SAI, drop by your study abroad office to discuss it with an advisor or contact the SAI office. You will find a list of current affiliates on our website. Students from affiliated universities MUST obtain approval from their study abroad office prior to submitting an application.

Among our program choices, certain sites are better equipped to assist students with disabilities than others. As this may be a factor in choosing which SAI program abroad to attend, notify us of any and all disabilities before applying. STUDENT VISAS All students studying abroad for MORE than 90 days are required to obtain a student visa. SAI provides Student Visa Consulting for all our students at no additional cost. SAI Programs also offers an optional service where we will obtain a visa on behalf of the student. With SAI Visa Processing you will not need to appear in person at the Consulate. The cost of this additional assistance is $250. See our SAI visa page for more information. HOUSING Housing assignments are sent by email 5-10 days before the term begins. Students requesting a private room are required to pay the private room supplement fee prior to our processing their single room request. Students electing to make their own housing arrangements will receive a reduction in the program cost. Since this differs from school to school, contact the SAI office for the exact amount of reduction.

APPLICANTS FROM NON-AFFILIATED SCHOOLS SAI welcomes students from any school. All students attending non-affiliated home universities will receive U.S. course credit from the U.S. school of record for their SAI program. For information on the U.S. school of record for your specific program go to the Services link on the program page of our website and click on “U.S. Academic Credit”.

DEADLINES STEP 1: Submit Application By: Fall Semester: June 15 Fall Quarter: July 15 Spring Semester: November 1 Spring Quarter: December 1 Summer terms: 60 days prior to check-in date NOTE: Late applications are accepted on a space available basis.

SAI automatically processes non-affiliate students through the U.S. school of record; no additional fee is imposed. All questions and correspondence should be directed to the SAI office in California. Upon completion of course work, transcripts will be issued by the U.S. school of record with U.S. credits. These credits are transferable to any school, though it is the student’s responsibility to confirm that specific courses will transfer by speaking in advance with their school advisor or study abroad office.

STEP 2: Acceptance/Confirmation Deposit Notification of acceptance status will be sent to you by email. Within 2 weeks of receiving the email acceptance a $500 NON-REFUNDABLE confirmation deposit, a $300 security deposit and private room supplement fee (if applicable) must be paid to secure your enrollment. Acceptance letters will include instructions and program payment dates.

DISABILITIES POLICY SAI is dedicated to providing education abroad opportunities to all students and does not discriminate on the basis of disability or handicap. If you experience any emotional, mental, physical or learning disabilities which may interfere with your ability to successfully pursue an academic course, and which you wish to be taken into account, please notify SAI as soon as possible. As always, advance planning is important in order to ensure the best possible experience abroad. Although we may not be able to require our partner schools abroad to provide accommodations, SAI can offer understanding, respect, and support, and we will do our best to assist students in finding reasonable accommodations similar to their home institutions. Regarding physical disability, it is important to note that Europe’s infrastructure and ability to accommodate disabled individuals differs from what is available in the United States. SAI will do its best to reasonably accommodate all students’ needs.

Payment Options: 1. Personal check, money order or cashier’s check made payable to “SAI Programs”. Mailed to: SAI Programs, 7160 Keating Avenue Sebastopol, CA 95472. 1. Online Payment by Visa or Mastercard and E-checks: SAI is only able to accept Visa or Mastercard. Credit card payments and Echeck payments may be made directly online. Credit card payments include a 2.3% convenience fee. There is no charge for Echeck (electronic check from your checking account) payments. 2. Bank Wire Transfer: For wire instructions please contact our California office at (800) 655 - 8965. SAI will mail one billing statement to your permanent mailing address which will include due dates. Failure to meet any payment deadline will result in course registration being placed on “hold” until paid. Transcripts will be withheld if accounts are not paid in full with SAI or the host school. Housing requests may be withdrawn by SAI if payments are not received by their due date. FINANCIAL AID Fall and Spring Semester students using financial aid are required to pay the Application Fee, Confirmation Deposit, Security Deposit and Private Room Supplement Housing Fee (if applicable). Written verification of financial aid award or loan approval MUST be sent to SAI in order to delay the balance of program cost and before your application is considered complete. Students attending Summer Session and receiving financial aid are required to make payments by their regular due dates. SAI will sign Consortium Agreements, allowing the use of financial aid funding, however Summer Session students are not permitted to defer payment until after receiving their financial aid. Summer Session students planning to use financial aid to cover costs must pay all program costs when normally due, and will receive reimbursement when financial aid is paid to them. NOTE: If your financial aid award is not sufficient to cover all Program Costs, the remainder must be paid by regular payment deadline dates. Financial aid monies will be applied last and any balance must be paid by their earlier due date. SAI will delay the final payment amount (based on your financial aid award) until the date your aid disburses.

If you intend to use financial aid, check with your school to determine if a Consortium Agreement must be completed between your college and SAI. Students receiving financial aid from their home school may be able to transfer these funds to SAI for payment of their Program Cost. Contact SAI if you have further questions. PROGRAM CANCELLATION & REFUND POLICY PLEASE NOTE: Financial Aid students remain responsible for ALL cancellation penalties that apply, even if program fees have not yet been paid. Failure to pay cancellation obligations will result in referral to a Collection Agency. Check-in day is considered the start of the term. The Confirmation Deposit is NOT REFUNDABLE at any time. Further Program Cost liability is based on the date on which a formal cancellation request is received in writing (email or fax). If a cancellation notice is received 60 days or less before check-in day, students are liable for the following charges: • 60 - 31 days before the start of a term: 25% of the Program Cost • 30 - 8 days before the start of a term: 50% of the Program Cost • 7 days or less before the start of a term: 100% of the Program Cost HOUSING-ONLY CANCELLATION & REFUND POLICY If an enrolled student chooses to cancel their SAI housing request and seek private housing on their own the following penalties will apply, based on the date a housing cancellation is received by SAI: • 60 days or less before the start of term the student is liable for 100% of housing cost.
