One way to combat lactose intolerance is to use lactose-free milk rather than regular milk. Several choices for lactose-free milks, lactose-reduced milks, and milk substitutes can be found on the shelves of supermarkets everywhere. People who have an intolerance to lactose lack the enzyme needed to break down lactose -- a sugar contained mostly in milk products. By changing from regular cow milk to lactose-free milks, lactose-reduced milks, or milk substitutes, you can prevent the symptoms that are associated with lactose intolerance, such as bloating, cramping, diarrhea, and gas. Lactose-free and lactose-reduced milk are the same as regular milk in every way except for the fact that they have lactase enzyme added. Although, lactose-free milk might have somewhat of a sweeter taste, it stays fresh for about the same amount of time or longer than regular milk if it is ultra-pasteurized. Lactaid is a brand of lactose-free milk. It is made from typical cow's milk but in addition to the added lactase enzyme, the lactose itself has been removed. The Lactaid brand also produces other lactose-free products such as ice cream and cheese. Lactose-reduced products are often made from real dairy milk that has the lactase enzyme added to it during processing to reduce the lactose content. It tastes sweeter than regular milk because the lactose has already been broken down into its two simpler, more digestible sugars that are sweeter in taste. In order to combat lactose intolerance, soy milk and other milk substitutes may be recommended by your health professional. Soy milk is made from soy beans and has a slightly sweet taste. It is one of the best milk substitutes because its a great source of protein, fat, and fiber. It can also be enriched with vitamin D and calcium. Plus, its free of saturated fats and cholesterol. Soy milk can be used in cooking or baking because it remains stable at higher temperatures. It can also be consumed as a beverage, in a bowl of cereal, or in your coffee. Almond milk is another great milk substitute. Its creamy, sweet, and high in essential nutrients such as vitamin E. Although this milk substitute can also be enriched with calcium and vitamin D, its not a good source of protein. However, its natural sweetness makes it a great alternative to use in shakes, desserts, and other areas of cooking. Rice milk is also slightly sweet, but is thinner in consistency than almond or soy milk. Generally, it is made from brown rice and can also be enriched with calcium and vitamin D. Just like almond milk, its not a good source of protein. It can be used in cooking as well but typically requires a binding or stabilizing agent such as eggs or flour. Remember that products labeled "non-dairy" may not actually be lactose-free. Many times, nondairy just means that those products have replaced the milk fat with vegetable fat. A lot of these products still contain ingredients that contain lactose, such as whey. So it is very important that you check the ingredients label before you purchase or use it.
