About the Instructor

F

ounded over a few experimental truffles in 2016, Sugar Love University explores topics in chocolate in a taste-buds-on setting. SLU's course offerings cover a variety of ideas — from turning inspiration into confection to the history of chocolate through the ages. Learn about the origins of chocolate, its role in commerce and culture and its transformation throughout culinary history. Krysta Bea Jackson, the founder of Sugar Love Chocolates, believes food is the best way to share love. Raised in her mom's restaurant, Krysta experienced the joy of good food and hospitality at a young age. After working in a retail and manufacturing chocolate business, Krysta became enamored with the magic and chemistry of chocolate and candy. Sugar Love University offers a focused course each month that delves into a particular facet of chocolate. Each session will feature limited-edition chocolate flavors, complimentary wine, beer or spirits, and light hors d’oeuvres. CHOC 102: History of Chocolate

CHOC 103: Seminar in Textures

This course will examine the changing flavors of chocolate through history, with a gustatory emphasis on the eating and appreciation of the food of the gods. We will investigate how chocolate has been produced, prepared, consumed, and enjoyed in a variety of societies and historical epochs.

This course introduces the fundamental concepts behind the textures in confections and how they are achieved. Topics will include the chemical and physical changes in chocolate that occur with cooking, handling, and processing. Experiential learning of the practical application of color, flavor, texture, emulsification, viscosity, and mouth-feel will also be applied.

CHOC 104: Principles of Ingredients

CHOC 204: Chocolate Rituals and Celebrations

This course explores the importance of freshness, seasonality, and terroir in ingredient selection through engaging taste experiments. This lecture investigates ingredient selection and reveals how climate, altitude, weather patterns, and other factors play a critical role in shaping flavor and quality.

This course explores the role of chocolate in rituals of festivals, holidays and social gatherings. Learn about chocolate’s contribution to celebratory meals, practices regarding cocoa cooking and the significance of sweetness in joy and love.

CHOC 203: New World Flavors This lecture explores the significant ways in which Latin American flavors have influenced chocolate making. Investigate how modern chocolatiers are returning to New World flavors for ideas and inspiration. Course materials will include unfamiliar ingredients and inventive preparations. CHOC 205: Health Benefits of Chocolate Explore the potential wellness-boosting aspects of chocolate and ingredients that pair well with cocoa. Topics include the nutritional elements of chocolate in relation to antioxidants, heart health, cholesterol and more. CHOC 303: Focus On Flavors This interactive course will explore flavor profiles – including herbal, floral, spice and fruit – along with their use in chocolates. CHOC 304: Special Topics in Chocolate Inspiration This course introduces inspiration and its relationship to chocolate production and recipe design. Topics include concept development, trends, and adaptation of native and regional ingredients and preparation methods into chocolate. CHOC 306: Geography of Chocolate

CHOC 404: Chocolate and Masculinity

This course will draw on geographical contexts to explore how chocolate changes based on location. Topics include terroir and genus of cocoa beans, along with a gustatory exploration of different examples.

Study the complex and fascinating history of chocolate and men. This course investigates gendered ideas about chocolate that permeate the confection’s past and how those ideas impact the present and future. Learn about the men throughout history who have impacted chocolate as we know it today.

CHOC 403: Advanced Ingredient Studies This course will explore the importance of ingredient selection in connection with flavor combinations and confection design.
