Black Cat Café Home-cooked comfort food has been a recipe for success for one couple

Kerry Johnson doesn’t believe in superstitions. The co-owner of the Black Cat Café and a longtime business owner, she believes more in hard work than luck. For Johnson, the Black Cat Café has been successful thanks to the hard work of her small staff and the cooking talents of her husband. Since the Black Cat Café opened “on a shoestring budget” in downtown Eudora in August of 2010, it’s shown encouraging signs of growth. A new paint job, along with new tables and chairs, recently spruced up the café, and expanded dinner hours are also coming soon. The Black Cat Café offers home-cooked comfort food. “Everything we prepare is cooked-to-order,” Johnson says. “Nothing is frozen.” That includes chicken fried steak, chicken fried chicken and pork tenderloin. Jim Morey, Johnson’s husband of almost 20 years, operates the kitchen. The two met in Lawrence in 1991; shortly afterwards, they decided to try their hand at running their own restaurant—and they’ve never looked back. “The first restaurant I ever worked in was in 1975, called Sambo’s Restaurant. I’m showing my age here, but still, after all these years, I’ve enjoyed food service,” says Johnson. She and Morey chose downtown Eudora for their newest restaurant based on an opportunity they saw in the area. A business had closed in downtown Eudora, according to a story in the Lawrence Journal-World; Morey went to check it out. “I love that the rent is nice compared to Lawrence. And everyone is friendly,” says Johnson. This includes the other businesses in downtown Eudora, who all are rooting for each other to succeed. “Don’t forget you’ve got a nice little downtown in Eudora,” Johnson says. “There’s a sense of community [with other downtown restaurants], we all get along well, we all eat at each other’s restaurants.” So if Johnson doesn’t believe in luck, where does the name Black Cat Café come from? “Years ago, my husband and I decided we liked to go with names that sounded like English pubs,” she says. “I wouldn’t put that bad-luck superstition on a poor animal.”

The

Prairie Enjoying the open Kansas landscape is easier than ever just outside of Eudora. The Akin Prairie, located three miles southwest of Eudora, is a 16-acre tract of protected prairie that is rich with a diverse range of native prairie species. The scenic prairie easement is a memorial to Dorothy Akin, a Douglas County resident who loved colorful prairie wildflowers. The Akin family donated a conservation easement on the land in 1994 to the Kansas Land Trust, a nonprofit organization that preserves and protects lands of ecological, agricultural, scenic, historic or recreational significance in Kansas. The Akin Prairie is one of 52 easements managed by the Kansas Land Trust, which is preserving more than 17,000 acres across Kansas and western Missouri. The Akin Prairie is open to the public every day during daytime hours, but a great way to explore this site is during the annual Wildflower Walk, led by Dr. Kelly Kindscher, a Kansas Land Trust founder and the author of Edible Wild Plants of the Prairie and Medicinal Wild Plants of the Prairie. The walk takes place in the spring and is free and open to the public. “I always plan these walks for late spring so that many of the prettiest wildflowers are in bloom,” says Kindscher. “I think the highlight is to see the wildflowers, to learn some of the stories about them and their uses. I believe it is important for people to see and to learn that this is how the landscape looked before European settlement.” Kindscher also says that experiencing an undeveloped site like the Akin Prairie can provide a fresh prospective on community and growth any time of the year. “Open space and the opportunity for the public to visit it is important,” says Kindscher. “When we think about how our community is growing, it is important to balance that growth with protection of open space.”

eudora Public Library Whether you’re looking for inspiration, information or just plain fun, the Eudora Public Library is a great place to turn any time of year for a variety of fun activities. “Eudora Public Library is your library,” says Carol Wohlford, library director. “That is why we add new programming all the time.” Winter activities include a Polar Express Party, an Adult Winter Reading Program and a “Mom and Dad’s Day Out” for Christmas. During the summer months, the Eudora Public Library works hard to keep kids engaged in fun activities by organizing a Summer Reading Program, teaming up with Eudora Parks and Recreation to put on summer adventure camps, and hosting Sno-Cone Wednesdays each week. Bookworms can look forward to two annual book sales, knitters can join the informal weekly knitting group, and anyone who is feeling crafty can take part in a weekly craft table. In addition to programming, the Eudora Public Library offers a variety of services ranging from CD and DVD cleaning, a fax machine for the public, computers for public use and volunteer opportunities. Just for kids The reading and activity options are endless for Eudora’s youth. Check the calendar for different story times that are available depending on the age of a child. Various summer reading programs engage kids, and TumbleBooks—animated, talking-picture e-books for kids—have become all the rage. Don’t forget a fan favorite, “Stories in a Bag”: a bag filled with books, toys, games and puzzles, along with helpful hints for parents raising small children. Just for the BIG kids Adults can also engage in the local library through adult reading programs, various book collections, an informal knitting group, movies and audio books, and an e-book training session. Parents especially enjoy the Mom and Dad’s Day Out for Christmas, when the library hosts a party for kids while parents Christmas-shop and wrap. “Relevant activities—reading or otherwise—keep you coming through our doors; and we like that. Because one of those times you will find just the special book you were looking for, and new worlds will open for you,” says Wohlford.

For Eudora High School’s new football coach, back-to-back appearances in the state championship game is no sweat. Coach Kevin Kopecky is all about having the right attitude. He practices what he preaches, so expect a positive, upbeat guy to be roaming the Cardinals’ sideline for the foreseeable future. “The kids hear me talk about effort and attitude a lot. It’s about how you think about things,” Kopecky says. He says his last school, Leavenworth High, also had a strong program but not everyone believed that. At Eudora, Coach K says he comes to a school with a positive attitude already in place, making his job easier. “There are some good kids here, there really are. But the biggest thing is attitude,” Coach K says. “They get off the bus or walk out the door for a home game, they think they’re going to win. That’s something that takes years to build.” No introduction necessary Coach K has been introducing himself a lot these days—to players, parents, faculty and residents. He may be new to town, but the town is not new to him. Kopecky, a father of four who lives just up K-10 in DeSoto, has admired the program at Eudora from afar. In fact, he’s already seen his first opponent of the season, Piper, in person when they played against Eudora last year. “I didn’t have my scouting report, I didn’t write anything down, but I’ve seen the team,” Kopecky says. “[The facilities here are] great for a 4A school, some of the best in the state, truthfully. I knew that from living down the road. There’s a great atmosphere up there on game night. This town really prides itself on football now.” Kopecky, age 53, a former football walk-on at the University of Nebraska, has been coaching since he graduated college. His two most recent schools are Leavenworth and St. Thomas Aquinas. Kopecky won several coaching honors in that time, but he’s quick to deflect the credit. “Football is so unique … one person can’t do it. You need a staff,” he says.

Keeping everyone on the same page is one of Coach Kevin Kopecky’s philosophies. Senior left tackle Justin Underwood says Coach Kopecky’s style is one of encouragement. “When he introduced himself to us, he had a slide show; his thing was he’s demanding without being demeaning,” Underwood says.

coaching philosophy

“We’re adapting to his changes, and he’s adapting to our changes. ... He’s taking his old team and our team styles and mixing them together.”

A way of life Kopecky gets his football passion from his high school coach and from his time spent at Nebraska. He’s glad he changed majors from business to teaching, so he could pursue coaching the game. “It’s been a great way of life. There are people I know who are miserable driving down the road going to their jobs,” he says. “I’ve never felt that way. It’s not a job, it’s a passion. I really love what I do. Even as old as I’m getting, I still wake up in the morning and I can’t wait to get to weights and get around those kids.” And the kids seem to want to be around him. “I think when you have fun with something and you work hard, that’s when you go to the next level,” says junior linebacker/running back Grant Stewart. “You can be good and hate it, but you won’t be great.” With Kopecky at the helm, the expectations of the players— who have made it to the state championship these last two years— remain high. “We’re hoping to win a state championship,” says junior defensive lineman Justus Merz. “That’s the plan.”

discover eudora

“He’s really positive. If you do something wrong, he’ll say, ‘The first part was good, but we need to work on the second part,’ ” says junior Justus Merz. Kopecky says his biggest philosophy is to treat the players right. He believes if he’s good to the kids, they’ll come out for the team and they’ll play hard while they’re there. “Kids have a lot of options these days. What makes them want to work hard and play football?” Kopecky asks. “They need to have a good time doing it, and be successful, like they’ve been here already.” Another philosophy of Coach K is to mix a running game with a passing game. He runs a no-huddle spread offense. “When people hear I’m nohuddle/spread, they think we throw the ball every down, and we don’t do that; we run the ball quiet a bit,” Kopecky says. “It’s just a good offense—if something isn’t working, you have other options.”

Raising the bar Two longtime friends take their hobby and turn it into a refreshing new Eudora business—Wakarusa Brewery

A friendship that started on basketball courts in Lawrence has grown into a budding new business in Eudora—a microbrewery. John Randtke and James Hightree were playground buddies back in the seventh grade. Back then, they were throwing no-look passes to each other. Years later, Randtke would introduce the art of home-brewing to Hightree, and instead of no-look passes they began trading beer recipes. Now, the former basketball teammates/current drinking buddies are also entrepreneurs, eager to open Wakarusa Brewery in downtown Eudora. “In some small way this was me trying to make a commitment to growing up,” says Randtke as he sits over a plate of kung pao beef at Jasmin Restaurant. Since he purchased the building at 710 Main Street (empty for five years, it was most recently an antique mall), he has become a regular at the restaurant. For the business, he moved to Eudora from Olathe. Their vision is a chill-out bar, very mellow—a place to hang out with friends. “Kind of like an old English pub,” Randtke says. “But we’ll have a TV, too, if people want to watch the game,” Hightree adds. Randtke, an engineer for a performance contracting company, and Hightree, a general contractor, hope to open Wakarusa Brewery this coming winter. Until then, they’ll continue to experiment … and taste. Brewing started as a hobby, but it quickly turned into a passion. “I started brewing because I wanted to try to find different styles of beers. It’s enjoyable, a fun hobby,” Hightree says. “If you do it at home, it’s like cooking; it’s like making a soup. It’s fun to play around with

ingredients, different malts, sweetness, bitterness,” Randtke says. “My entire house was being taken over by brewing equipment.” The guys look forward to introducing locals to their favorite types of beers, but also to meads, honey wines and hard ciders. The brewery’s liquor license will give them flexibility in non-grain wines, allowing them to also sell their wares at farmers’ markets. “Mead is a sweeter type of alcohol. It’s a good thing for people who don’t drink all the time, for special occasions,” Randtke says. The Wakarusa Brewery will make a soft opening as a regular bar before slowly turning over to a true microbrewery. Randtke has kept a close eye on the business for the last several years, identifying methods he likes and doesn’t like.

“These are energy saving/green design things that we’ll be doing at Wakarusa Brewery that most other buildings don’t implement.”

“I travel a lot for work, so everywhere I go I visit microbreweries. I’ve seen a lot of different business models,” he says. “We are thinking about which ones we want to emulate, and at each stage of the game.” It might take a true visionary to see the finished product of Wakarusa Brewery, considering the current state of the building. But Randtke and Hightree aren’t flinching. Both have done a fair share of renovations in their time, and they see the locale as ideal. “We’re really fortunate in this building. It’s almost perfect for being a brewery,” Randtke says. “Since this building is built into the ground, it’s essentially a basement. We’ll be brewing in a cave, which is the way it used to be done.” The locals are enjoying looking in on their progress as well. “The pedestrians walking down the sidewalk poke their head in and ask how it’s going. Everyone seems to be eagerly awaiting this coming to town,” Randtke says. “The city seems to be really driving to revitalize downtown and bring new businesses here, and that’s a good thing.”

Building a better bar With John Randtke’s background in HVAC engineering and James Hightree’s experience as a contractor, expect Wakarusa Brewery to be located in a modernized building where energy efficiency is at its best. “James and I just went down to Charleston [South Carolina] on a seminar for this new roofing material,” Randtke says. “It’s part of my job—we’re trying to find new products that are more energy efficient.” Some of the elements the two plan to implement in the 87-year-old building include: A new type of reflective, Class A fire-rated roof that lasts longer than recent incarnations. A sectioned-off building that allows them to shut down the heating and cooling of the front when possible. A greywater system to reuse water from hand-washing and equipment-cleaning to flush toilets and water plants outside (they plan to grow their own hops outside the building). A desiccant heat exchanger to pre-treat ventilation air, allowing for smaller air-conditioning equipment. A high-efficiency condensing water heater for the lautering preheat. Heavy insulation at the back of the building where the brewing equipment will be kept, to better maintain the optimal temperature of 72 degrees Fahrenheit. Reusing as much of the original lumber shelves from the existing space as possible.

Better Community United Way of Douglas County makes an impact in Eudora Liz Weslander photography by Jason dailey story by

Not everyone in Eudora sees the work of the United Way of Douglas County, but nearly everyone in the community feels its impact. Guided by a set of goals that work toward positive impacts in education, self-sufficiency and health, the United Way of Douglas County (UWDC) is constantly collaborating with a variety of community leaders and organizations in Eudora to fund and work toward approaches that address the needs of the community. “A lot of people don’t realize all things that are getting United Way funds that really touch this community,” says Eudora School Superintendent Don Grosdidier. “The United Way does a lot of different things that hit a lot of different age groups. I know numerous people in Eudora who benefit from those things.”

Community impact

goals

The Born Learning Trail One fun and visible project that exemplifies the UWDC’s dedication to education in Eudora is the Born Learning Trail, which will be part of a new park that is under construction at the southern edge of the Eudora Middle School campus. The Born Learning Trail, a concept created by United Way Worldwide, is an early education opportunity geared toward preschoolers and their caregivers. Kids and adults walk along the trail, which is punctuated by signs encouraging them to engage in learning activities together. “The Born Learning Trails guide caregivers on how to interact with kids in a way that teaches literacy through interaction,” says Erika Dvorske, executive director of the United Way of Douglas County. The United Way of Douglas County’s current impact goals are the following: • Education: Children and teens are successful in school. • Self-Sufficiency: People have steady jobs and financial stability. • Health: People have access to mental and physical health care.

w w w . c i t y o f e u d o r a k s . g o v

Activities on the trail include things like hopping and skipping, or moving among various shapes that are painted on the sidewalk. There are currently about 600 Born Learning Trails installed in parks and neighborhoods throughout the United States, including one in Lawrence and one in Baldwin City, according to Dvorske. The creation of the Born Learning Trail in Eudora is a collaboration Don and Mary Grosdidier are between the UWDC, the City of Eudora chairing the Eudora portion and the Eudora School District 491. for the United Way of Douglas County Campaign. “The heart of the matter is that we need to get kids outside and we need to get kids active,” say Grosdidier of the concept at the new park. “This trail gives parents a way that they can do both of those things with their kids.”

“Most importantly, I think that’s what we all want for our friends and neighbors, and ultimately for ourselves—to have a great quality of life in the home of our choice.”

-Megan Poindexter, Trinity In-Home Care Trinity In-Home Care The UWDC’s partnership with Trinity In-Home Care exemplifies one of the organization’s less visible, but valuable community supports in Eudora. Trinity In-Home Care (TIHC) provides supportive in-home care services and caregiver relief to elderly and mentally disabled individuals and their families. “Supportive in-home care can mean anything from assistance with housekeeping and meal preparation to help with bathing for the individual,” says Trinity In-Home Care Executive Director Megan Poindexter. “Our respite care gives caregivers the opportunity to go to work or even just some time to rest, and can be for a child with autism, to a middle-aged stroke victim, all the way to an aging parent with dementia.” Megan says that the United Way is essential to TIHC because it covers the cost of services for people who might otherwise fall through the cracks in the system. There are individuals whose income is not low enough to qualify for Medicaid, but who still do not have the financial resources to cover the cost of TIHC’s services. Providing services to such individuals is not only personally beneficial to recipients and their families, but it is economically beneficial for the larger community. “Most importantly, I think that’s what we all want for our friends and neighbors, and ultimately for ourselves—to have a great quality of life in the home of our choice,” says Poindexter.

Precious pooches and frisky felines rule the roost at one of Eudora’s noisiest businesses, where the fur flies on a daily basis. But don’t think for one minute that Eudora Animal Hospital is going to the dogs—or cats, for that matter. The busy mixed-animal practice, which was founded by “Doc” Ron Lee in 1975, cares for the city’s Very Important Citizens—the four-legged variety that can’t tell the veterinarians and technicians who work with them exactly where it hurts, but can really woof—and meow—it up.

monkeying around Dr. George Schreiner recalls the day a client’s golden retriever accidentally consumed a tube of Gorilla Glue—strong, heavy-duty wood glue that creates a foaming action as it fills voids and bonds. The story—and especially its ending—is legendary at Eudora Animal Hospital. “The pet owner was of course, frantic,” says Schreiner. “I did surgery and much to my surprise found that the glue had formed an exact replica of the dog’s stomach.” The dog left Eudora Animal Hospital in fine shape, but the incident left an indelible impression on the staff. “When we get into an intense situation and need levity, sometimes we’ll remind each other of the Gorilla Glue saga,” says Schreiner. “It usually brings a chuckle and can help us get through some challenging times.”

Throw in some horses and a few other species of God’s creatures and you have a menagerie of the cuddliest kind. Drs. George Schreiner, Jon Haggard and Guy Shain—along with technicians and support staff—see hundreds of pets each year for everything from heartworms to neutering, spaying and annual physicals. Schreiner and Shain see mostly smaller animals, with Haggard taking the lead on horses. The trio has built on the foundation Doc Lee established before retiring several years ago, including its strong community presence. “I learned so much from Ron when I started here in 1996,” says Schreiner. “Part of that was giving back to the community—the practice is very active with the Lawrence Humane Society and we do a lot of pro bono work. And all of us who work here are connected to the community. That’s important.” Schreiner grew up on a dairy farm in Sharon, Kansas, and attended the College of Veterinary Medicine at Kansas State University. He and his wife, Eudora native Gretchen, who is a librarian for Eudora Middle and High Schools, live south of town on 10 acres and a pasture with four kids (Will, Harper, Sawyer

and Newt), two cats (Comet and Meow-Meow), three dogs (Stranger, Sasha and Sharon), 20 head of cattle and some 4-H pigs. “The whole family has an abiding love for animals,” he says. In addition to treating animals, Schreiner and the staff help educate clients on responsible pet ownership. “That’s our obligation,” he says. Charles Holt of Lecompton has been with Eudora Animal Hospital as a technician for six years and enjoys the educational aspect of his job. “It’s satisfying to help a client understand something, become more informed and even see a light bulb that goes off like ‘Aha! That’s why Sparkles acts out,’” says Holt, who has worked with animals off and on since age 19. Holt, his wife and three children own three dogs (Sugar, Venus and Batman) and two Siamese cats (Rogue and Miss Priss). The family ties at the practice—between employees and the clients and their pets—are also something Holt values. “Knowing people by first name, their pets, even their kids, is something you don’t necessarily get working in a large corporate environment,” he says. “And when we can restore a pet’s life through treatment or healthy choices, that’s a big bonus.” And what about talking to the animals? “We do that without even realizing it, “ laughs Holt.

family

Corie Pritchard and her husband, David, have taken their pets to Eudora Animal Hospital since moving to the area in 2005. They treat their brood like children and seek out the best possible care, which according to Corie is the reason they chose the practice. “Each veterinarian has their own specialty and passion, and they stay current on treatment and technology,” she says. “It’s amazing in a small town like Eudora we have access to the latest laser therapy.” Currently the couple has three dogs—Kailey, an adopted 2-year-old mixed black golden retriever with bright yellow eyes; Mike, a 13-year-old border collie mix from Wayside Waifs in Kansas City; and Luke, an 8-year-old border collie that the Pritchards rescued from a Salina shelter just five hours before it was scheduled to be euthanized. “We were supposed to be an overnight stay for him, as he was going to be transported to a Nebraska border-collie rescue organization the next day,” Corie says, tearing up. “But we fell in love instantly.” Corie admires the deep compassion the doctors and staff at Eudora Animal Hospital exhibit. “It’s authentic, the real deal,” she says. “It’s like we’re all one big family.”
