s patrons walk into Dirty Dawgs, a self-service dog wash on West 66th Street in Shawnee, Lucy, a 6-year-old purebred golden retriever, waits patiently behind the counter to greet the pets and their humans. When the time is right, she slowly makes her presence felt. “Lucy, whenever she was dirty, we would always call her ‘dirty dog,’” says Lisa Billings, owner of Dirty Dawgs, “and then once we were ready to name the place, it’s like, ‘Hello, dirty dogs.’ And then we just did a play, clearly, on the ‘dawg.’” The three-year-old business that supplies “everything you need but the dirty dog” came to fruition as Billings and her husband, Chris, began to wonder where dog owners in the community took their furry friends to get washed. “Right in our little chunk of the world here, there is not a dog wash, a self-service dog wash,” says Billings, who runs the day-to-day operation full-time. “We have shampoos, conditioners, grooming tools for the short coat [and] long coat pets,” says Billings, a lifelong golden retriever owner. “We do sanitize, without a doubt, in between each use. It doesn’t matter if we have people on a little wait list. That’s one thing I think our customers do appreciate, that they walk in and while their floor might have fur on it, your tub will be clean and your tools are clean.” Though she previously worked in customer service, Billings says that background didn’t necessarily help with this particular business. Rather, it was understanding the need to be kind and genuine, to love what you do, and to appreciate your customers.

“What’s not to love about being able to pet a dog?” —Lisa Billings, Dirty Dawgs

“Without our customers, we wouldn’t be here,” she says. Interacting with the dog owners who take advantage of Dirty Dawgs’ services has been a fun part of the business for Billings. “People who come in to wash their dogs, they truly love their animals, and they’re just in a good mood,” Billings says. “You’re doing something—maybe you’ve gone to the park and you’re coming in now and washing your dog. I love our clientele—the customers, the dogs. It’s just fun. What’s not to love about being able to pet a dog?” Billings is “hands-on” and willing to help customers, whether grabbing more shampoo or towels for customers, or helping get dogs in the tub or turned around once they’re in the tub. Dirty Dawgs provides bathing products and supplies, but customers also are more than welcome to bring their own tools or cleaning products. The business celebrated its third anniversary in June, and Billings says it just continues to grow. “We’re very, very blessed through this [strip mall],” Billings says. “It’s a good thing we all like to get something to eat, mail something, and send our children to Sylvan [Learning] because [this location] has been great … and our customers’ word of mouth endorsements have been wonderful.”

xecutive Chef Michael Lamping allows his artistic side to emerge while in his kitchen at Lake Quivira Country Club in Lake Quivira, Kansas. Creating recipes, cooking, and entering food competitions are his passions. He enjoys designing an artistic plate filled with color and letting his creative style flow, giving every meal seeker mouth-watering food pleasing to the eye. He entered the 2018 Kansas City Taste of Elegance competition for professional chefs and won first place. Designed to inspire innovative and exciting ways to cook pork, the contest is one of four in the region sponsored by the National Pork Board. Lamping’s winning dish was pistachio and cherry-wrapped Duroc Pork Tenderloin, served with candied red onion pork jus; crispy bourbon maple pork belly and a scallion waffle; and parsnip silk, roasted sweet potatoes and Brussels sprouts with pearl onions. Chef Michael is excited that his winning entry is bringing attention to the Country Club. Judges for the event are master chefs, food editors, and past Taste of Elegance winners. The judges base the winning entry on a variety of factors, including taste, originality and presentation. Before entering competitions, Chef Michael spends time drawing a plate design, choosing spices, preparing the meal, and asking people to taste and give their opinions. “Usually by the time the competition happens, my plate that I enter looks nothing like what I originally drew,” he says. When not in competitions, he can be found daily in the Lake Quivira Country Club kitchen preparing and cooking breakfast, lunch and dinner. Each day he enjoys the sounds of the kitchen—the sizzle of meat in hot pans, sharp knives slicing vegetables, blades mincing onions and garlic, and shouts for food orders. His sous chef and apprentices work alongside him as they share advice and taste food before it leaves the kitchen. He quickly points out that he is not an office chef; he is in the kitchen every day. He samples food, offers advice on seasonings, or sings praises for food well-prepared by his staff. Many days, he eats on the job, grabbing a slice of bacon or sample of meat to ensure it meets his criteria before being served.

“My guilty pleasure is the house-made chips that we fry every day,” he says, laughing. His first love is cooking and second is teaching young apprentice chefs his techniques and passing on his passion for working in the kitchen. As a chef, he emphasizes to his staff that education is an important tool. He encourages those who are serious about a career in the industry to attend a culinary school. “When I compete in competitions, I continue to learn about food. I try to show that to my apprentices; I want them to take themselves out of their comfort zones and enter competitions,” says Chef Michael. After each competition, he takes pictures of the other entries. “I take pictures of first place to last place. I know that I can learn from each of those entries. Sometimes, even chefs have bad days in the kitchen and your meal may not turn out exactly as you had planned,” he says. While he was in high school in St. Louis, Missouri, his mother found him a job as a dishwasher for a friend’s catering business. As he learned the ropes of the catering business, he quickly discovered he enjoyed cooking. After attending culinary school, he began working in the culinary field in 2000. He was hired in 2013 to be the executive chef in the Lake Quivira Country Club’s kitchen. Working in the community near Shawnee and Lenexa, he says, “I enjoy every minute of it. The people are wonderful and the culture here is nice and pleasant.” In the future, Chef Michael will be an assistant coach with the Johnson County Community College’s culinary team, which was named the American Culinary Federation’s Culinary Youth Team USA 2020. The team will represent the ACF in February 2020 at the Internationale Kochkunst Ausstellung (International Culinary Exhibition) International Culinary Art Competition in Stuttgart, Germany. Referred to as the “culinary Olympics,” the international competition takes place every four years. “I will be assisting the coach and students in designing meals, preparing dishes, tasting them, and working on perfecting the recipes,” says Chef Michael.

s 7-year-old Grayson Vesper skated off the ice, his eyes met the gaze of his proud parents sitting on the second row of bleachers. He didn’t stand as tall as his hockey stick, but the smile that crossed his face could have filled the mouth of a goal. He was living his YouTube dream. “He started watching YouTube videos of hockey last year and just fell in love with it,” says Grayson’s mom, Macalei. “We took him to a Mavericks game, and he started skating last August.” On a warm spring evening better suited to the beach volleyball being played next door, Grayson was one of 25 young hockey enthusiasts—“Mini Mites,” they’re called—developing skating and hockey skills in the Learn to Play Hockey program offered at Kansas City Ice Center (KCIC) in western Shawnee. For $130 ($50 more if you rent equipment), youngsters spend eight weeks learning the basics of hockey, starting with skating. “The classes are for the beginning hockey player, with little to no experience required,” says Dean Nelson, general manager and instructor at KCIC. “We target ages 3 to 10, but it’s not limited to that. It’s just an opportunity for kids to learn the sport of hockey and have fun.” According to Nelson, there were six participants when the program was first developed about six years ago. Today, there are regularly more than 100 enrolled. Players each session are divided into three groups. For the Mini Mites, there is no skating experience required. Participants are introduced to skating and taught entry-level skating skills used in hockey. Little Stars focus on controlling forward skating and turning, as well as basic hockey skills with a stick and puck. All Stars reinforce the basic hockey skills, plus learn hockey stops and crossovers. Skaters also work on puck handling, passing and shooting skills. “Participants can change levels on a week-to-week basis, because kids develop at different speeds and levels,” Nelson says. On that evening last spring, the 25 youngsters spent the first 20 minutes of the hour-long class skating down the ice in straight-line formations, turning at the end of the rink and skating back. A few fell now and then but were quick to bounce back up. They didn’t want to miss the stick- and puckhandling drills, not to mention the shooting at actual goals that followed.

A Mighty Mite follows the puck on the ice while showing off his moves.

“[Grayson] wanted to do this so badly that on the first day we brought him here last year, he just went out and started skating,” says Vesper, who along with husband Jeremy drives Grayson to KCIC from their home in Basehor multiple times a week for classes and free skating. “Everyone here has been so nice, from the coaches to the older kids in the class. It’s been a really good experience for us. You can tell everyone has a fun time.” Max Pinney played junior hockey when he was growing up in Shawnee though he had to travel to Overland Park to the old King Louie ice rink. Now, he brings his 8-year-old son, MacKennan, to hockey classes. “Dean’s great with the kids,” Pinney says. “It’s not like it was when I played. This is a lot more organized. He gets to play with kids in his own skill level. I think as long as we keep bringing him, he’ll keep doing it.” When he came off the ice, Grayson Vesper was especially pleased that he learned how to turn his toes outward and spin around on the blades of his skates, allowing him to change direction quickly. “The goal is to get these kids ready for league hockey in the fall,” Nelson says. “That one extra hour a week is really beneficial to these kids.” The other goal, of course, is to keep the youths in the classes interested in the game and getting more involved. Ultimately, that’s how the sport will thrive, Nelson says. “It’s a blessing to go out with 8-, 9-, 10-year-old kids and help them,” he says. “The hockey community is special. There are bonds you get out of this that are very unique.”

Shawnee Résumé

SHAWNEE MAGAZINE sunflowerpub.com

I

n his role as the leader of the Shawnee Police Department, Chief Rob Moser offers the community a wealth of experience, a thoughtful and professional demeanor, and insight into the future of policing.

SM: Where did you go to college and how long have you been with the Shawnee Police Department? RM: I attended college in Warrensburg, Missouri, graduating in 1991 with a bachelor’s of science in education and in 2006 with a master’s degree in criminal justice. So, I guess you could say I have degrees from both Central Missouri State University and the University of Central Missouri. I’ve been with the Shawnee Police Department more than 26 years, starting in January 1992, just eight months after graduating college. SM: How did you come up through the ranks of the SPD? RM: Every police officer hired begins his or her career in road patrol. Through your tenure in patrol, along with part-time and full-time special assignments, you gain the training and experience needed to test for supervisory positions. Different paths define an officer’s career, and I would say criminal interdiction, tactical operations, and professional standards were the emphasis of mine as I advanced through the ranks.

TOP COP’S thoughts

Shawnee’s police chief talks about the future.

interview by Beth Kornegay | photography by Kevin Anderson

SM: What is your favorite part of being chief of police in Shawnee? RM: In a word, service. The interactions I have with the community at my level bring great job satisfaction. However, what’s truly inspiring is seeing the satisfaction our officers bring to the citizens of Shawnee and knowing [our work is] making this a safer community. SM: What is your philosophy of police work? RM: First and foremost, prevention. Reducing victimization is our primary goal. Problem solving is key because we will always have a certain level of crime and crashes to address. Moreover, the manner in which we conduct ourselves while doing prevention and problem solving defines our focus on professionalism.

SHAWNEE MAGAZINE sunflowerpub.com

SM: How large is the SPD? RM: We currently have 94½-commissioned officers and 21½-civilian personnel. The halves are parttime employees, and the civilian personnel include dispatchers, records technicians, community service, and other administrative staff. SM: How do you want the SPD to relate to the community? RM: Our mission statement is Serving Our Community with Purpose and Care. It’s important that we do our job with purpose in mind. Having a plan for how you go about your work leads to success. It’s crucial that we do our job with care in mind. The public must know we care about their safety the same we do our own families and circles of friends. Having this mindset leads to the type of service our community expects and deserves. Conversely, this community does an amazing job of relating to us in a positive manner. Shawnee is tops when it comes to showing their police department encouragement and support. The officers notice this and appreciate it more than words can describe.

SM: What is the most challenging part of being chief of police? RM: Balancing the needs of the community with the staffing and resources we have to provide for those needs can be challenging. People want to know they live in a safe community, and engaging folks to partner with us in implementing crime reduction strategies while solving the problems that do occur is an ongoing challenge. I’m fortunate to have a qualified group of employees who help protect this community as a team. SM: What imprint do you want to leave on the SPD? RM: That we worked as a team to take what was an already successful organization to another level, by growing the internal culture of family while implementing a new standard of innovative external initiatives to keep Shawnee safe. SM: What is your most memorable moment with the SPD? RM: There are too many! I don’t think I can pick just one. From a personal standpoint, working in leadership roles where you can coach employees to better performance and new opportunities, and then

21

seeing their success, is very gratifying. But it’s the team successes that are most memorable to me. Whether that’s the tactical team and the various operations and competitions we’ve been involved in, or the work being done by teams of employees every day that help make this a safe community, those are the stories and memories I’ll take away from this organization. SM: What changes in the SPD have you seen since you joined? RM: The level of professionalism and care we have for individuals has continued to grow through the years. Traditional law enforcement tactics continue to wane as we police smarter into the future, using data to guide our decisions daily. The advancement of technology can’t be measured. As with any other profession, it seems something new is around the corner just as we implement the most up-to-date technological systems.

Plot Twist How three Shawnee residents with similar ‘a-ha!’ moments became authors. Story by Katy Schamberger | Photography by Kevin Anderson

Sometimes, the idea for a book comes in a burst of inspiration. Other times, it’s an idea that builds over time, growing in scope as words spill out on the page. Still other times, the inspiration is more a realization that there’s a void in the market, along with a declaration: “I could fill that void.” Three Shawnee-based authors each had a version of that realization, which prompted all three to write and publish books. Now, they share their stories.

Robert (Bob) Krenzel

29 The Gideon Hawke series robertkrenzel.com During a road trip to St. Louis, Bob Krenzel and his family cued up an audiobook to help their daughter with a school assignment. For Krenzel, the book’s ending left a lot to be desired. “We were about halfway back, somewhere in the middle of Missouri, and this book ends,” he says. “I said, ‘That was terrible!’ I didn’t like the book—it was very dark with an unsatisfying, cliffhanger ending. I said, ‘I can do better than that.’” Then came the challenge. “Our two kids in the backseat said, ‘Why don’t you?’” Krenzel says. “When they throw down the gauntlet, you’ve got to rise to the occasion!” At the time, Krenzel, who served in the Army for 24 years, was teaching at Fort Leavenworth. One of his lessons piqued Krenzel’s interest in the American Revolution, and he soon had a plot idea. “I knew if I was going to write, I was going to do historical fiction,” he says. Krenzel spent the next year and a half writing the first book in his Gideon Hawke series, This Glorious Cause. The series follows Hawke, an American soldier, as his life unfolds amid the backdrop of the American Revolution. Although Krenzel drew on his own military experience to help inform details throughout the books, he’s also spent extensive time researching, both online and in person. In fact, some of his research trips have become family affairs. “Last summer I dragged my family to Valley Forge in Monmouth,” Krenzel says. In addition to making time for research, Krenzel also juggles writing with family life and a full-time job. He calls himself “a guerilla writer” because he writes whenever he can. A few weeks ago, for example, Krenzel was on a business trip and “got the better part of a chapter done” while in the air en route from Kansas City to Dallas. “I’ve written scenes sitting next to the pool when I take my daughter there in the summer,” he says. “I use the notes function on my phone and had to turn the button click sound off because it was keeping my wife awake. They’re understanding about it.” Or how’s this for multitasking? While on a work trip to Boston, Krenzel had a free day. So he woke up before dawn, rented a car and drove out to the Saratoga battlefield. “I spent several hours there, just walking the grounds,” he says. “I had maps prepared, so I knew exactly where I wanted to go. Some of the battle accounts are unclear or they conflict, so I walked it myself and put myself where my character would have wound up. I’ve been at that piece of ground, so I could sort of see what he was seeing.” Krenzel has now published four books, with the fifth book, A Bloody Day’s Work, nearly done. After working with a publisher on the second book, Krenzel says he opted to return to self-publishing because he has “some creative freedom.” When complete, the series will likely have eight books. In book six, Krenzel says he wants to “dive into one of the campaigns against the Native Americans that a lot of people, I think, have no idea about.” He may even fast-track the story so one of the final books is set in World War I. “I think the Hawke family will have a long and proud military tradition,” he says. That sentiment echoes Krenzel’s own military experience. During his more than two decades of service, he completed multiple deployments, to the Balkans, Iraq and Afghanistan, among others. Krenzel has also gone to war three times, which resulted in post-traumatic stress disorder. Reliving those experiences for his books didn’t just help enrich the plots and characterizations; it also proved therapeutic. “Some people I’ve served with in the Army have read these books and recommend that anyone who’s been in combat read them so they know that what they feel isn’t unique to them,” Krenzel says. “If I can help one veteran deal with posttraumatic stress, or help one young person get more interested in history, it’s worth it.”

Susan Thomas-Butler

30 Sunny B Presents Kansas Symbols www.amazon.com As a media center aide at Bonner Springs Elementary, Susan Thomas-Butler spends her days surrounded by books. “I like moving the books and helping kids,” she says. “So many kids say, ‘I don’t like to read,’ but it’s because they’re not reading the right thing.” While helping to fulfill first-grade teachers’ requests for children’s books to help their classes celebrate Kansas Day [ January 29], Thomas-Butler remembers being less than inspired by what she found. “I started pulling books and wasn’t impressed with the selection,” she says. “The books were wordy, old and filled with black-and-white photos. I went to other libraries in Bonner Springs and throughout Johnson County and still couldn’t find many options.” Thomas-Butler has always been a voracious reader who also enjoys writing. Each year, in fact, she pens a letter to her children. The missives recap the past year and are collected in a book that serves as a physical family legacy for her three children. Like many people, Thomas-Butler keeps a bucket list, and her list includes writing a book. That goal, combined with an interest in photography, helped her come to the realization that she could write her own Kansas history book for children. As any writer knows, accountability is an important part of the creative process. It helps you stay focused and maintain a writing schedule, even as you juggle other responsibilities. In early 2016, Thomas-Butler spoke to several teachers and told them she’d spend the summer working on her book. If she could get it finished before January 2017, would they use it in their Kansas Day curriculum? They agreed. That summer, Thomas-Butler spent much of her time traveling around the state and gathering photos. She also reached out to her children’s former teachers to find out what they wanted in a book about Kansas history. The Kansas native even had some unexpected learning opportunities throughout the research process. “The barred tiger salamander is the Kansas state amphibian—I had no idea!” she says. “I went to Ernie Miller Nature Center— they had one in the aquarium and they posed it for me.” As she was planning images for the book’s cover, she realized she had an opportunity to pay homage to her own family’s Kansas history. “My grandparents homesteaded their property, and my dad owns it and farms it now,” she says. “There’s … a limestone post and barbed wire fence—it goes all the way around the pasture. I wanted that as my front cover. It just screams Kansas.” Most of the photos in the book were taken by Thomas-Butler, although she did reach out to local photographers for help with difficult images. The western meadowlark, the state bird, proved particularly elusive to Thomas-Butler’s camera. A quick Google search led her to Bob Gress, who donated a photo of the bird to Thomas-Butler. And after a failed (and freezing!) trip to a nature center to try to photograph little bluestem, the state grass, Thomas-Butler reached out to photographer Brad Mangas to purchase one of his little bluestem photos. Instead, Mangas opted to donate the photo to the book. Once Thomas-Butler had written the book and chosen her final photographs, her husband put his commercial art degree to use and helped her prepare the book to be self-published through Amazon’s CreateSpace in January 2017. Of course, authors know the work isn’t done once a book is published. Then comes sales and marketing, which can be especially daunting for self-published authors. “It’s on Amazon and we’ve put it in the Ernie Miller Nature Center and several libraries,” Thomas-Butler says. “I went gung-ho on the marketing for a year, but it was so much work. I’m not a salesperson—I never even liked selling Girl Scout cookies! I think with my next book I’ll go a different route.” That’s right—Thomas-Butler has another book underway. She describes it as a similar style as Sunny B Presents Kansas Symbols except it will follow the journey of a library book and “all of the trauma it goes through,” Thomas-Butler says with a laugh.

Jeremy (author) and Christine (illustrator) Moritz

31 Code for Teens: The Awesome Beginner’s Guide to Programming www.codeforteens.com As a software engineer for nearly 14 years, Jeremy Moritz knows a thing or two about computers, including writing code. Yet when he went searching for some books to help his homeschooled children learn coding, he didn’t find much in the way of help. “I picked up several different books that said they were geared toward children,” he says. “What I found over and over again is that the content was very shallow. They’d learn something but it only lasted for a certain period of time—it wasn’t really getting to know a coding language.” Other resources, including a popular program that helps young users learn code by building games, also missed the mark. “The downside is they don’t learn to type the code themselves or deal with errors,” Jeremy says. “I wanted my kids to learn to write real coding language.” Jeremy set out to write the book he couldn’t find. Although Jeremy hadn’t done much in-depth writing, he drew on extensive teaching experience—as a chess instructor and a former children’s theater director—to create an insightful text. “I’m a better writer than I thought I would be,” he says with a laugh. “Part of it is that I’m enthusiastic about the process and about teaching.” As Jeremy wrote the book, he soon realized something was missing. He turned to his wife, Christine, for help. “Knowing that this would be a book for teens, we wanted to include illustrations,” he says. Although Christine hadn’t illustrated a book before, she’s always loved to draw. She started with basic illustrations, but soon opted to create more detailed art. “As the process continued, I had more fun drawing, so the drawings got more elaborate,” she says. “It was a really fun process, and I became a much better artist along the way.” Buoyed by enthusiasm for the project, Christine and Jeremy worked much faster than originally anticipated. Jeremy’s initial plan was to work on the book during his paternity leave after their sixth daughter was born last November. Instead, he started writing in August and worked so quickly that he finished the first draft the day she was born. That left Jeremy and Christine to explore their publishing options. Self-publishing quickly became too expensive to produce the type of the book they envisioned, so they turned to crowdfunding platform Kickstarter to raise money. “The Kickstarter campaign didn’t really go anywhere, but because Jeremy did that, our publishing company found us online,” Christine says. Code for Teens was published in July, and the positive reviews are already coming in. “This book empowers teens to teach themselves,” writes Susan Reed on My Happy Homeschool [www.myhappyhomeschool.blogspot.com]. “Students are allowed to work at their own pace and figure things out on their own.” That empowerment and the development of critical thinking are two key reasons Jeremy and Christine see coding as such an important skill, especially in an increasingly digital world. “For kids especially, their online presence will be much more important when they grow up,” Christine says. “Nowadays, when you start a business, if you don’t have a website, people don’t take you seriously. The more impressive you can make that site look, the more people are willing to check you out or even simply notice you.” And if Jeremy had his way, more schools would place a much larger emphasis on coding. “Coding should absolutely replace higher-level math,” he says. “Everyone needs to know basic math, but when you get into algebra and calculus, so much of that value is abstract problem-solving, which coding does and it’s imminently practical. I firmly believe in coding as a value for kids.”

Monticello Library Marks Exciting New Chapter in Shawnee

Whether you want to discover more local authors or nurture your own dreams of being published, the newly opened Monticello branch of the Johnson County Library can help. The 33,548-square-foot, $18 million facility has long been atop the wish lists of Shawnee-area residents, including local author Susan Thomas-Butler. “I’ve waited for this library for 15 years,” she says. “Now I can ride my bike to check out books. My husband and I go to the library at least two times each week for CDs, movies and books.” Features of the new library, which opened August 5, include public art installations by three local sculptors [Stephen Licthy, Beth Nybeck and Jim Woodfill], a spacious children’s area, meeting rooms that can be reserved by the public, and a green roof that provides relaxing scenery while also boosting the library’s energy efficiency. Plus, the Monticello branch is one of five Johnson County libraries that’s open on Sundays. As you explore the new library, don’t be surprised if you bump into Thomas-Butler. “As we were recently driving by the new library, my son had just come back to visit from college and I was pointing out the sculptures and the deck we could sit on,” she says. “My son said, ‘Mom, you’re such a library nerd!’ I said, ‘Yes! That’s a compliment!’”
