Caring for our Communities Since 1975, and now, Stronger Than Ever In the early 1970s, four African American women looked out at their community and witnessed a lack of affordable, quality health care. They decided to do something about it. With seed money from a small federal grant, the first Hudson River Health Care center was born in 1975. Hudson River Health Care and Brightpoint Health have merged and are now one organization with a brand new name:

Today, we celebrate what was once a single community health center, and is now a network of 43 health centers, serving more than 245,000 patients throughout the Hudson Valley, New York City, and Long Island.

Sun River Health Foundation The Sun River Health Foundation was founded when a group of community members recognized the need for Sun River Health to increase its resources to support expansion in order to meet the growing needs of the region’s most vulnerable populations, including agricultural workers. Incorporated in 2001, the Sun River Health Foundation was formally incorporated with the mission of cultivating philanthropic relationships to raise charitable dollars, community awareness, and increase access for people in need of high quality primary and preventive care. With nearly 20 years of live auction experience, Pat Tully is New York City’s leading independent benefit Auctioneer. Mr. Tully has raised over $250 million dollars at over 1,000 nonprofit benefit events across The United States and around the world #HaveGavelWillTravel. Mr. Tully is no wallflower when it comes to igniting a spark in a room and holding the audience’s attention. He is as comfortable on stage with A-list celebrities as he is sincere with cancer patients who share their very personal stories. He works the crowd with ease and grace and he didn’t hesitate when he had the chance to convince Rod Stewart to break into a duet. He has performed live auctions with celebrities including Tina Fey, Alec Baldwin, Jamie Foxx, Adrian Grenier, Kenan Thompson, and many others. When asked about Mr. Tully’s performance, Shaun O’Hara, NFL Analyst and, Founder of The Shaun O’Hara Foundation said, “You gotta have somebody that can command a room, can add a little humor to it… certainly Pat brings a lot of energy, but I just love the humor he brings and how much fun is had at the event.” Mr. Tully’s vast clientele includes St. Jude Children’s Research Hospital, The American Cancer Society, and The Make-A-Wish Foundation. Beyond his live auction experience, Mr. Tully is the Co-founder of The Kate Shea Foundation for Leukemia research and previously served as Vice President of Development for The Ireland Funds. Given his deep background in the non-profit sector, Mr. Tully understands the unique challenges his clients face when planning and hosting a benefit event. From recommending starting bids, understanding which donated items are in demand, to packaging items in a way to increase donations and reach target goals, Mr. Tully brings a unique skill set that goes beyond grabbing a mic and pleading for donations. As Bill Dessoffy, National Board Chair of the National Kidney Foundation put it, “He makes it look like he’s part of the organization, which is so key.” Mr. Tully’s auction talents have been seen on TV, recently guest starring in National Geographic’s Brain Games and he was also a guest Co-Host of the The Morning Blend. He also created an auction game show titled Paddle Battle. Mr. Tully holds a B.A. degree in Communications from Marist College as well as a Certificate in Radio and Television Broadcasting from the Connecticut School of Broadcasting. In addition, he holds a Benefit Auction Specialist designation from the National Auctioneers Association and is a member of The Association of Fundraising Professionals.

An estate winery established in 1983, Paumanok Vineyards is located on the North Fork of Long Island. Owned and operated by the Massoud family, Paumanok is a longtime partner of Sun River Health and has hosted many health outreach events for local farmworkers at their winery.

From its inception, Paumanok’s focus has been to craft the highest quality wines. The Massouds’ guiding philosophy is that only the healthiest, ripest grapes will produce great wine -- there is no substitute. Paumanok produces several varietal and blended wines with fruit originating on its 80 acres of vineyards. Along with New York State’s only Chenin Blanc, Paumanok offers Chardonnay, Riesling, Sauvignon Blanc, Cabernet Franc, Cabernet Sauvignon, Merlot and Petit Verdot.

Over the years, Paumanok has been recognized with numerous accolades including wine service at the White House, NY Wine & Food Classic’s “Winery of the Year” award, “outstanding” reviews in Robert Parker’s Wine Advocate and a nomination for Wine Enthusiast’s “American Winery of the Year.”

This evening’s caterer, Great Performances, has provided your meal as well as fresh ingredients from their farm for you to recreate Dinah’s dish in your home. Sun River Health and Great Performances enjoy a long-standing relationship, which includes honoring the company’s founder and CEO, Liz Neumark, at a previous Cornucopia. Great Performances was founded as a waitress-staffing agency with the goal of offering a flexible source of income for women in the arts. Progressive from the start, the company consistently set the pace for industry best practices. From innovative dishes and striking design to critical attention to detail and impeccable service, Great Performances weaves the elements of their mission into all that they do. In 2006, Great Performance established Katchkie Farm, becoming the nation’s first caterer to own and operate an organic farm. In 2007, they created the Sylvia Center to inspire young people and their families to establish independent healthy eating habits that can lead to healthy and productive lives.

In the Kitchen with Dinah Dinah Surh is a longtime colleague, partner and advocate for community health, having worked in hospital administration for over 35 years. Dinah became a Food Network Chopped Champion in 2014’s “Ambitious Amateurs” (season 18, episode 9) and went on to compete in the Tournament of Chopped Champions. She was featured on NBC’s The Martha Stewart Show where she showcased her Korean BBQ Beef and Martha nicknamed her “The Korean Martha Stewart.” Tonight, Dinah teaches us how to make her own Japchae recipe. Meaning mixture of vegetables, this sweet and savory Korean stir-fry dish is made with glass noodles, thinly sliced beef and vegetables.

KOREAN GLASS NOODLES

Recipe by: Dinah Surh

Japchae is a healthy Korean mixed vegetable and sweet potato noodle dish that is served warm or at room temperature. The noodles are gluten-free, and you can substitute or omit any of the traditional vegetables and meat used in this dish. I have also made this dish with regular thin spaghetti! INGREDIENTS: (Serves 4-6) • 12 oz dried sweet potato noodles • 6-8 ounces thinly sliced beef strips about ¼ inch wide and 1 ½ inches long (prime rib, sirloin, flank steak) or 1 ½ cups shaved beef • 8 oz fresh spinach blanched and squeezed with excess water removed makes about 1 cup • 1-2 carrots peeled and cut into thin matchsticks about 1 cup • 1 medium peeled and sliced yellow or white onion about 1 cup • 1 cup thinly sliced fresh shitake or button mushrooms or rehydrate 3-5 dried Chinese mushrooms • 2-3 scallions, tops removed sliced lengthwise and into 1 ½ inch long pieces

• 3 large eggs slightly beaten • 4 tablespoons tamari or soy sauce • 1 1/2 tablespoons sugar • 2 minced garlic cloves • 2 tablespoons roasted sesame seed oil and more for frying • 2 tablespoons roasted sesame seeds • ¼ cup corn or other vegetable oil for frying • 2 teaspoons pine nuts for garnish (optional) • Korean red pepper threads for garnish (optional) found in Korean supermarket • Salt and ground black pepper • Equipment: large pot to boil noodles, medium or large frypan, serving bowl

DIRECTIONS: 1. Make sauce. In a small bowl, combine tamari, minced garlic cloves, sugar, 2 tablespoons roasted sesame seeds, 2 tablespoons of roasted sesame seed oil, sesame seeds and 1/4 teaspoon of ground black pepper. 2. Marinate beef and mushrooms with 4 tablespoons of the sauce while preparing the rest of the ingredients. 3. Make 2 egg omelets. Heat frypan on medium heat. Add 1-2 tablespoons of roasted sesame seed or vegetable oil to coat pan. Add half of the beaten eggs to make a flat omelet cooking on both sides. Remove omelet from pan and make the second omelet. Cut omelets into long strips and set aside. 4. Boil a pot with 12 cups of water. Add the dried sweet potato noodles and cook for 5-7 minutes according to package instructions. Rinse in cool water and drain. Cut with scissors 6-8 times into 6-8-inch pieces. The noodles are usually about 24 inches long. Add the rest of the sauce and mix with noodles in a large bowl. 5. Reheat frypan on high heat. Drizzle 1-2 tablespoons of roasted sesame seed oil or corn oil in pan and cook marinated beef and mushrooms for 4-6 minutes until cooked and remove from pan. Add additional corn or other vegetable to coat frypan if needed and cook onions and carrots separately on opposite sides of the pan sprinkling with salt and black pepper. 6. Combine cooked noodles, beef, mushrooms, spinach, carrots, onions and most of the egg strips and raw scallions reserving some for garnish. Taste and add additional drizzle of tamari and roasted sesame seed oil as needed. Garnish with remaining egg strips, scallions, pine nuts and red pepper threads. You can reheat refrigerated leftover noodles in the microwave for 1 minute to room temperature.

Fund-A-Need

Accessibility The Fund-A-Need portion of our evening provides you with the opportunity to learn more about key programs and allows you to invest in and help fund vital services for patients who rely on us for their health care. This year, we are spotlighting four important areas that highlight our efforts to make health care accessible to all who turn to us for care. Access to complete, quality health care services is critical for promoting and maintaining health, preventing and managing disease, and achieving health equity for all within our communities. As we move forward in this uncertain time, your support ensures that our patients and families continue to have access to the health care and services they need and deserve.

TELEMEDICINE Telemedicine has allowed us to meet patients where they are, offer extended service hours, and provide excellent care and increased access in a safe, secure way for everyone. Since March 24th, nearly 200 doctors and other medical practitioners have provided tens of thousands of telemedicine visits to individuals throughout the communities we serve.

MOBILE HEALTH CENTERS We currently have three mobile health centers (Hudson Valley, New York City, and Long Island) that provide convenient care to those who cannot come into a health center due to their housing situation, lack of access to transportation, or other issues that may hinder their access to care. Visiting farms, vineyards, churches, and partner community organizations, these Mobile Health Centers bring our high-quality care outside the four walls of our health centers directly to those who need it most.

OUTREACH Day in and day out, outreach workers across our network connect our communities to the care we provide. Of particular note is the Days of Health program, during which we bring medical care as well as information about our services to farms and vineyards where workers might have barriers to care, such as transportation. Agricultural workers are one of our state’s most chronically underserved populations, while agriculture is one of the state’s largest industries. Agricultural workers and their families often struggle to gain access to quality health care, and often suffer from poor nutrition, asthma, musculo-skeletal conditions, and a lack of preventive care and dental services.

COVID-19 POP-UP TESTING We were proud to partner with several community organizations to offer 14 pop-up COVID-19 testing sites throughout the Hudson Valley, New York City, and Long Island. Providing more than 15,000 COVID-19 tests for patients since March, pop-up testing was mobilized quickly to fulfill the need for safe testing. Nine of these pop-up testing sites were in Suffolk County to accommodate the lack of accessibility to testing, especially for those on the East End of Long Island. Through these pop-up testing sites, many new patients were referred for followup care to one of our health centers.
