The all-inclusive plan is anything but ordinary with the à la carte, beachfront restaurant serving a new menu each day with an emphasis on fresh, local ingredients, many of which come from the hotels’ very own impressive organic garden. The three-tier restaurant shares the Balinese/Asian feel of the suites, but serves a fusion of Caribbean and Modern European flavours.

There’s an array of delicious vegan and vegetarian dishes as well as bespoke meal plans based on specific dietary requirements or fitness goals. There’s also limitless cocktails and beverages to ensure that your stay is as carefree and effortless as possible.

The freshly caught seafood combined with freshly picked vegetables and herbs from the organic garden really gives guests a true ‘Sea to Table’ experience. Not only does this keep food miles to the absolute minimum but ensures the quality of the produce in each of the hotel’s dishes.

Guests can get involved with the culinary process at the informal cooking courses and demonstrations where you can learn how to make local dishes such as pepperpot stew or cockle soup, followed by a tour of the garden.

When we fi rst launched our Mexico programme, we were naturally drawn to the Riviera Maya on the Caribbean coast. But in recent years we have increasingly found ourselves looking to the Pacifi c and the Baja California peninsula, where some of the hottest new luxury hotel openings are clustered around the resort towns of San José del Cabo and Cabo San Lucas, collectively known as Los Cabos. This region is rich in natural treasures, not least the magnifi cent marine life of the Sea of Cortez, described as ‘the world’s aquarium’ by Jacques Cousteau. This is a place where cactus-studded desert meets nutrientrich waters, a haven for whales, dolphins, turtles and countless bird species. But it’s not just the whales that eat well in Los Cabos; this corner of Mexico is fast becoming known as a world class foodie destination.

In November 2022 the Gastrovino food and wine festival returns to the sleepy town of Todos Santos, following a two-year absence due to the pandemic. This fantastic event showcases local chefs, artisan producers and wineries, and also features live music and art exhibitions, in a lovely seafront setting.

Tickets are on sale now, and you have a great choice of foodie-friendly resorts from which to base yourself during the festival. We can’t talk about food in Los Cabos without mentioning Nobu Los Cabos, a strikingly contemporary resort owned by Robert De Niro and the master of Japanese-Peruvian nikkei fusion cuisine, Nobu Matsuhisa. The Japanese infl uence permeates everything from the Zen-inspired rock garden to the traditional Onsen soaking tubs in the rooms. Nobu is not the only master chef in town; one of the hottest tickets in Los Cabos is SEARED at the opulent One&Only Palmilla, a steak and seafood restaurant from Michelin-starred maestro Jean-Georges Vongerichten. The resort is a popular choice with A-listers, and boasts one of the only swimmer-friendly beaches in the area. Last but not least, for a spectacular meal in a spectacular setting, check out the unique Nido at Viceroy Los Cabos. This exquisite ceviche and sushi restaurant is housed within a striking upturned nest structure surrounded by water, and looks like nothing else we’ve seen.

THE LONE STAR

Cool, contemporary and one of the most elegant beach restaurants imaginable, The Lone Star is one of the island’s pièces de résistance. The menu is wonderfully put together to offer a fusion of European fare with Caribbean influences, which our clients love to get a real taste of Barbados’ flavour. It’s the atmosphere, however, that gives it that something special.

QP BISTRO

A new opening from late 2021, QP Bistro occupies a prime West Coast location formerly home to The Cliff and The Cliff Beach Club. The all new QP Bistro is a refreshed and relaxed affair with a large Italian pizza oven and home-made gelato. Opening later in 2022 is The Cliff, making a welcome return to Barbados’ dining scene. This beloved Barbados spot has simply spectacular views over the water, so as always be sure to book in advance to ensure your table.
