Avoiding the Christmas Kilos At Christmas we’re all tempted to indulge a little too much. It’s a challenging time to embrace healthy foods as we often fear dampening the occasion without all the extras. However with planning and a few tweaks to your Christmas menu, you can stay in good health white enjoying the festivities. Nibbles Start with platters of fruit, vegetables, unsalted nuts and rice paper rolls. Serve with homemade dips/salsa and oven baked pita chips. Avoid deep

fried quiches, kabana and cheese and Jatz. Main meals Fill your plate with colourful salads dressed with extra virgin olive oil, fresh lemon juice and herbs. Avoid potato or pasta salads and creamy dressings. Prawns, oysters and fish are great low calorie protein options, as well as lean turkey, ham and skinless chicken. A grainy bread roll or wrap can be a great accompaniment. Make sure there is plenty of mineral water infused with fresh fruit, mint and plenty of ice to quench your thirst. Dessert Skip the plum pudding and take advantage of seasonal summer fruits served as fruit skewers or in a fruit salad. The traditional trifle can be spruced by using lots of fresh berries and low-fat custard and diet jelly. When it comes to the beloved pavlova, fill individual shells with fresh fruit topped with Greek yoghurt instead of cream. Remember to enjoy the company of family and friends with a side of food, rather than making food your focus. Merry Christmas! CITY TO COUNTRY

Christian and Sam Berechree swapped the big smoke for the Big Rig this year, making a life-changing move from Sydney to Roma. THEY came out here for a job, but have now fallen in love with the lifestyle. Former Sydney-siders Christian and Sam Berechree, along with their nine-month-old daughter Josephine, swapped the hustle and bustle of the city for the laid-back country town of Roma, where Christian now works as a journalist. Christian said, although they’ve only been here for a few short weeks, they’ve already experienced a new found level of community that was foreign to them before moving here. “We’ve gotten to know more of our neighbours in the past three weeks than what we did in the five years we lived in Sydney,” he said. “We were expecting the community closeness but I didn’t realise just how welcoming people would be.” Not knowing if they’d be able to break into the community quickly or if it would take a while, Sam was ecstatic to discover lots of locals happy to grab a coffee with a stranger. “Everyone’s been really genuine and friendly,” Sam said.

“A lot of people warned us that we would be very isolated but actually I think the opposite is true. “It’s just as easy to feel isolated the city if you don’t get involved in your community.” Both Christian and Sam left behind their families and friends for the move, so having the support of the town has made it that little bit easier for them to transition to country living. Christian was very adamant about one thing he won’t miss about the city – the traffic. Less time spent sitting in traffic each day also means more time for family. Having welcomed their daughter into their lives earlier this year, every extra moment together is cherished. As all parents do, Christian and Sam want the best life they can offer their daughter. They believe that growing up in Roma will offer her a rich childhood filled with the opportunities and relationships that are unique to their new home.

t may seem a little early, but the reality is that many of us will kick off the festive season very soon. This time of year is notorious for social functions, catch-ups with relatives and a little too much self-indulgence — it’s easy to gain an unwanted kilogram or two. Here are some tips to help you keep your weight under control and enjoy the holiday season.

KEEP CHRISTMAS FOOD FOR CHRISTMAS AND NOT FOR THE WHOLE OF SUMMER

This means all the extra chocolates, nuts, ice cream and mince pies shouldn’t come out until Christmas day and should go away straight after. You’ll enjoy them more if you wait!

ALWAYS CHOOSE QUALITY OVER QUANTITY

Commit to enjoying one or two of your favourite, good quality things rather than a little of everything. Don’t waste calories on poor quality party snacks, chocolates and lollies.

NEVER ARRIVE TO A SOCIAL FUNCTION HUNGRY

Always eat a snack before you go to reduce the temptation to try and fill up on high calorie, poor nutrient foods.

SET SOME LIMITS

For example, use the five canape rule — five canapes equates to a meal’s worth of calories, so make sure you are counting. An alcohol limit is also a must — it may be just on weekends or for very special Christmas parties, but create your own rule and stick to it.

PLAN SOME EXTRA EXERCISE AROUND SOCIAL FUNCTIONS

If time permits you should be doing extra exercise to compensate for the extra calories. Commit to an extra walk or even plan a social function based around a sport rather than a meal time. Most of all, enjoy yourself and the time you spend with friends and family.

THE PERFECT CHRISTMAS HAM What’s Christmas without a juicy and flavoursome Australian ham on the table?

Glazing your ham

Prepare your favourite glaze recipe. Visit www.pork.com.au for some ideas. Remove rind and use a sharp knife to score ham in a diamond pattern, then place ham scored side up in a large baking pan and brush over glaze.

Put in a pre-heated oven or hooded BBQ at 180°C for 20 minutes per kilogram, basting occasionally, until ham is brown and warmed through.

Cutting a leg of ham

1. Place ham skin side up, then run a small, sharp knife under the rind around the bottom (opposite end to hock) and each side of the ham to about halfway up.

Peel the rind back. 2. Run the tip of the knife around the bone on the underside of the ham. Begin to slice on a slight angle down to the bone. 3. Run your knife lengthways along the bone to remove slices. Continue to slice towards the hock. 4. Continue slicing down to the bone, working your way around the ham. When you’ve reached about a third of the way up, you can remove the bone by making a few short cuts at the joint.

Storing your ham

To keep your ham fresh, fold rind back over exposed surface. Prepare a ham bag, cotton pillowcase or tea towel by soaking it in four cups of water and two tablespoons of vinegar and then wringing it out. Place the ham in the bag or pillowcase or cover it with the tea towel and store in coolest part of fridge. Re-soak the cloth in solution every few days or when it dries out and enjoy your delicious ham.

TRADITIONAL CHRISTMAS MULLED WINE INGREDIENTS

METHOD

1. In a large saucepan, heat cloves, cinnamon, sugar, nutmeg, water, orange rind and apple over medium heat. 2. Bring to the boil, then reduce heat and simmer for 10 minutes. 3. Add red wine and simmer for a further 5 minutes. Remove saucepan from heat. Strain and pour into serving glasses. Serve immediately.
