There’s no doubt that we have faced the most difficult trading conditions in recent times. But adversity is an opportunity for creativity, and we have flexed our creative muscle to maintain and improve our offers to you, our valued guests. It’s been an extremely busy time since lockdown lifted; good weather and optimism have brought significantly more guests to stay at our family of hotels since reopening. Our dedicated teams have driven through every challenge along the way, and we are now welcoming more guests than we did pre-pandemic – brighter times are ahead! olchester’s newly revamped historic George Hotel has opened its doors to an eclectic Afternoon Tea room this month: Tea at the George.
The exquisite tearoom serves a luxurious afternoon tea in sumptuous arty surroundings, adorned with panelling, mirrors, cherry blossom and lavish flowers, inspired by London’s finest tea houses. The menu features an array of beautiful, handmade and quirky fancies curated by the Pastry Chef, sustainably sourced, award-winning fine artisan teas (served in fine china and bespoke, locally made teapots) and a matching Champagne, Cocktail and Gin list – all carefully selected for the Victorian inspired tearoom.
Essex’s new leading destination to enjoy afternoon tea with friends is open for bookings from Wednesday to Sunday,12pm to 5pm. There are a range of menus to choose from including Traditional, Vegan, Gluten Free and Vegetarian, as well as seasonal special menus. The tearoom will be hosting a Trick or Treat Afternoon Tea week for Halloween as well as a festive offering in the lead-up to Christmas. The George has recently reopened after a major £10 million refurbishment showcasing its new bold interiors, redecorated throughout while preserving its rich historical features. The developer Flying Trade Group, behind the Surya Hotels brand, announced plans for the refurbishment and expansion of the George Hotel site, including the establishment of this fantastic tearoom. Flying Trade Group CEO Suki Dulai says, “The George Hotel is a beautiful and nationally rare building, filled with heritage, and it is incredibly exciting to be opening Tea at The George. The tearoom was inspired by the 500-year-old history of The George Hotel, which we were adamant to preserve during the recent refurbishments. “The menu has been carefully curated by our expert chefs and we are delighted to have partnered with an award-winning British tea brand, The Tea Makers of London, who specialise in authentic, specialty teas with exceptional flavours. All teas are
sustainably sourced from independent artisan tea farms.” He adds, “There are few things so quintessentially British as the tradition of Afternoon Tea and it has now become a special occasion in which to enjoy finger sandwiches, freshly baked scones, cakes and pastries. We put the kettle on and chat with Surya Hotels Marketing Director Kiran Dulai, left, and Marketing Manager Charlotte Black but also had its own separate entrance to have a unique offering added to the high street. Colchester is our home town, and we loved the idea of having a place that people could come along and have an Afternoon Tea that was different and special, set in a fabulous setting without venturing into London.
Why have you decided to open a tearoom? We recently were involved with the refurbishment of The George Hotel which reopened in May 2021. This area is part of the hotel,
With the pandemic, more people are staying in rural areas and need places like this for special occasions – whether it’s a birthday treat or a baby shower celebration. The tearoom is not just for afternoon tea as it is also available for private hire for any special events up to around 35-40 people. Where did the idea for the decor come from? We were inspired by places in
London, such as Sketch and Botanica Kensington. The decor still links well to The George itself with luxury velvets, Farrow & Ball paint colours, soft furnishings by local company, Amor Interiors, and quirky, eclectic artwork similar to that in The George Hotel. What can guests expect in terms of food etc? We wanted to do something different from the current Afternoon Tea offerings in the area. Something a bit more ‘Instagrammable’, but also great value and a unique experience for our customer. Our pastry chef has created some amazing food and even the jam is made inhouse. Our personal favourite sweet treat on the menu is ’The Strawberry’, which has a glorious, red glaze and, once cut into, is a delicious cheesecake.

A rich tea history
Drinking tea dates as far back to 3000 BC in China and became popular in England during the 1660s thanks to King Charles II and his Portuguese wife, Catherine de Braganza, but it was not until later that ‘afternoon tea’ took off. During the early 19th century, it was customary to only have two meals a day – breakfast and dinner. It was around this time that Anna, the 7th Duchess of Bedford, a close friend of Queen Victoria, is said to have complained of “having that sinking feeling” during the late afternoon and would reach for a pot of tea and a light snack as a pick-me-up. Afternoon tea usually comprises sandwiches, cut into fingers, scones with clotted cream and jam, cakes and sweet pastries. Scones only became popular as part of the ritual a century later.

Benefits of walking From warding off obesity to reducing symptoms of anxiety, walking has some great health benefits. One of the major benefits of walking is that it helps to increase your ‘NEAT’, which is the nonexercise, automated thermogenesis that helps you to burn extra calories outside of going to a fitness class or seeing a personal trainer. Walking also has huge mental health benefits. Getting out into nature and out of the gym or your house and immersing yourself in an unfamiliar environment can help you to switch off from everyday pressures, clear your head and relieves stress. How many steps do you have to walk? I always set everybody a minimum target to hit – 15,000 a day. Should I work up to it if I’m unfit? We’re all humans, and we have the capability to walk 10,000 steps a day. I would set that as a bare minimum target to begin with and then aim for 15,000. Will the intensity of my walking matter? Yes it will. You can use walking as a form of HIIT [high-intensity interval training], for example 30 seconds nice and slow, then 30 seconds, fast for 20 minutes or half an hour. This will make a massive difference to the amount of calories you burn. How long do I have to walk for? I would start for half an hour a day, alternating the paces. I like to use a fitness tracker to track my steps, but most mobile phones or smartphones have a step counter, so you don’t need to buy one. Personally, I find that it’s a more effective way of knowing how far you’ve walked and also a way to help keep you responsible and accountable if you can see the numbers come up on the screen. It’s also good to see if you have reached your step goal for the day or not. Is there a walking workout you recommend for beginners? Set yourself a target of 30 minutes – 15 minutes out and 15 minutes back. I would start with that, then once you feel comfortable, just add a couple of extra minutes every time you go out. You will soon feel the benefits!

MILK CHOC AND LIME MOUSSE Ingredients • 200ml semi-skimmed milk • 200ml double cream • 80g egg yolk • 40g caster sugar • Zest 3 limes • 300g 40% milk chocolate • 225g UHT whipping cream • Zest of 1 lime
Method: Place the first cream, lime zest and milk into a pan and bring to the boil. Mix the sugar and egg yolk together. Pour the boiling liquid over the egg mix and return the mix to the pan.
Once at 118C, whisk in softened gelatine and pour over whisking yolks. Keep the yolks whisking till completely cool. In a separate bowl whisk the cream till just holds shape. Mix the puree into the egg mix. Fold the cream in bit by bit till fully incorporated.
Once frozen, use a melon baller to scoop round balls and place back in the freezer.
Cocoa biscuit Ingredients:
At the same time melt the chocolate over hot water.
Slowly add the cream mix to the milk choc beating in till incorporated.
• 100g soft butter • 105g caster sugar • 45g soft light brown sugar • 5g salt • 5g vanilla • 3 egg yolks • 115g plain flour • 85g coco powder
Lightly whip the cream till it just holds shape.
Method:
Fold in the whipped cream bit by bit. Place into piping bags and set in fridge.
Cream butter and sugars together. Mix in yolks and vanilla.
Banana parfait Ingredients: • 320g yolks • 400g sugar • 300ml water • 4 gelatine leaves • 600g banana puree • 550ml double cream
Add rest of ingredients and combine well. Roll biscuit between sheets and cut shapes out. Place shapes on baking paper on tray. Bake at 160C dry fan 2 for 10/15 mins.
Method: Place the gelatine in ice water to soften.
Roast peanuts in the oven till golden. Place sugar in a pan and bring to a dark caramel. Once at this stage, add peanuts. Stir in quickly and spread onto greaseproof paper. Once cooled, break apart peanuts.
Pipe into tray and freeze.
Bring the mix to 83C while stirring continually.
Pour the cream mix though a fine sieve.
Method:
Banana caramel Ingredients: • 100g sugar • 25g butter • 150g chopped banana • 60g cream • 75g water • ½ lime juice
Method: Bring sugar to caramel. Stop the caramel with the butter. Add the banana and cook down for 2 minutes. Add cream and cook for further 2 minutes. Add the water and lime juice. Once cooled, blend together.
Chantilly Ingredients: • 150g cream • 20g icing sugar • 5g vanilla
Method: Caramelised peanuts
Place yolks in electric mixer and whisk till pale.
Ingredients:
In a pan put the sugar and water and bring to 118C.
• 150g peanuts • 120g sugar
Whisk all ingredients together till it holds its shape.

‘Never throw away old bananas!’ The George’s Head Pastry Chef, Helena Brodie, shares her greatest cooking hack and talks about the inspiration for her dishes.
What are your earliest memories of cooking? At around eight years old, my mum showed me how she made her classic chicken soup. She still makes it every winter and it still tastes as good as it did when I was young. When did you first realise you wanted to become a chef? I always say I became a chef by accident. I was meant to go to university to study sport science. But with two weeks to go, I changed my mind and ended up falling into a job in a kitchen. How would you describe your cooking style? Traditional with a modern twist. I try to make something that’s old, new and relevant again. What inspires you in the kitchen? Ingredients for sure. I love taking different ingredients and seeing what I can create with them. Who is your culinary hero? I think for me its Gordon Ramsay.
Which one ingredient would you take to a desert island? Sugar, as you can use in so many different ways, not just in desserts. Which starter, main course and dessert is your favourite? For starter, I really appreciate a well-made soup. For mains, my mum’s pie and mash. For dessert, chocolatey or sorbet, depending on how full I am. What would be your ultimate menu showstopper? Apple crumble with a twist. It includes toffee apple centre, apple mousse, crumble, sour apple, vanilla crème patisserie and white chocolate. The dessert itself looks like an apple. Which is your greatest cooking hack? Never throw away old bananas. Roast them before making into banana bread as you get so much more flavour. What’s your recipe for being a successful chef? Work hard and remember every day is a learning day, no matter what level of chef you are.

“ NO DAY IS EVER THE SAME!” We catch up with Surya Hotels’ Marketing Manager Charlotte Black, who has played a key role in the launch of Tea at The George.
Tell us a bit about yourself and career to date. I previously worked in hospitality for around six years before going to uni. I studied Interior Design and Decoration for three years at Southampton University where I graduated with a first in 2018 – my studies included wallpaper and fabric design, photography and spatial interior design. I also started my own small side hobby where I designed wallpapers, prints and sold cushions and stationery. I then went into an artwork and wallpaper design role in Colchester, where I designed and supplied artwork and wallpapers for hospitality companies, including restaurants, hotels, offices and many more.
When did you join Surya Hotels and what was your previous role? I joined Surya Hotels in February 2021, as the Marketing Manager for the group. In my previous position, I was an account handler for FDM Artwork, Ardleigh – this involved artwork design, wallpaper design and interior styling. I completed jobs for numerous companies, including the likes of Fever Tree, Mitchell & Butlers, Green King, Stonegate and Browns – I had also started working on The George Hotel for Surya Hotels. What does your day-to-day job involve? No day is ever the same – I could be working on menu designs, leaflets, brochures, magazine spreads, web design, social media presence, creating a brand identity, photography, photo editing, external advertising or inhouse advertising and promotion, and more! We have recently been working on The George Hotel and its refurbishment where we have also undertaken the design of the new tearoom, Tea at The George – this has been a huge part of my role since I started at Surya Hotels. What do you love most about your job? I love being creative and I like to be busy with a variety of challenges and tasks to complete.
I have been able to use my previous skills and knowledge to assist with the refurbishment of The George and the tearoom and have really enjoyed being involved. It’s also been great to see how other sectors of the business work, such as sales, front of house… and gather a deeper understanding of hospitality. I also enjoy learning new skills and developing my knowledge of the marketing industry. Describe yourself in three words 1. Creative 2. Hardworking 3. Ambitious It’s been a very tough year for hospitality – what are you most excited about now that venues have reopened? It has been great seeing hospitality reopening and being able to push that from a marketing perspective. It’s almost allowed businesses to reinvent themselves and be recreated from a “we’re back” perspective, and it’s great to show that through marketing and new challenges. Pushing new ventures like the tearoom are exciting and something I can’t wait to continue to work on!

iwali, also known as the ‘festival of light’, is beginning to reach a much wider audience in the UK, increasingly celebrated in schools, restaurants, supermarkets and other businesses. Its growing presence reflects a receptive and open-minded UK audience, keen to celebrate and embrace diversity. This year, as more major supermarkets increase the Indian festival’s in-store presence, the Laila brand is launching a UK ‘Diwali-exclusive’ range. The indulgent range features traditional Diwali favourites, which are deeply entwined with the festival’s history, and includes luxury chocolate gift boxes, authentic spiced nut selections and celebratory party food snack packs – all featuring lavish gold packaging in honour of the festival of light’s glittering nature. Dating back to ancient times, Diwali or Deepavali, Sanskrit for ‘festival of light’, is celebrated by millions of Hindus, Sikhs and Jains across the world and is marked by beautiful displays of candles and lights in the home. The festival, which coincides with the Hindu New Year (November 4, 2021), falls in October or November each year, depending on the cycle of the moon. Spiritually, Diwali symbolizes ‘victory of light over darkness, good over evil, and knowledge over ignorance’ with the festival widely associated with Lakshmi – the goddess of wealth and prosperity. Lakshmi is central during the festival and, legend has it, she will not enter a dark home, which is why those who observe the festival fill their houses with lamps – known as Diyas.

Creamy Asian Rice Pudding (Kheer)
Vegetarian, South Asian Dessert Recipe by Anneka Samra Prep Time: 35 Minute Cooking Time: 25 Minute Serves: 6 Rice pudding is a warming, UK winter favourite, but if you want to add some wow factor to this time-honoured dessert, why not try out this classic Indian Kheer – basically rice pudding with an aromatic twist! Kheer is a popular treat at Diwali. This version is made using Laila Sticky Glutinous Rice, but you can whip this recipe up using several varieties of rice from the Laila range, from classic aromatic Basmati, Pudding Rice or even Arborio. Each version will treat you to a subtle change in flavour which guarantees you will never tire of this creamy, dreamy classic.
Ingredients • 1 1/2 cup Laila Sticky Glutinous Rice (this can be adjusted based on the size of your party) • 1 tbsp ghee/butter • 4/5 crushed cardamom pods • 1.25 litres of full fat milk (more can be added for a slightly runnier consistency) • 1/2 cup condensed milk • 2 tbsp rose water • 1/2 cup sugar (can be altered to taste)
Method 1. Wash your rice until the water runs clear. 2. Soak the rice in clean water for 20-30min. Drain the water from the bowl of rice. 3. Add ghee to a pan on medium heat. Allow it to melt before adding the soaked rice and the crushed cardamom pods. Stir the rice and cook for 2-3 minutes while continuing to stir the contents of the pan. 4. Next add the milk and the condensed milk into the pan. Bring the milk to a boil and continue to stir. 5. Allow the milk and rice to simmer for 15-20 minutes on low heat or until the rice is soft and cooked. 6. Add the rose water and the sugar and stir. All done and ready to enjoy hot or cold?

Now in the care of the National Trust, the building is undergoing a major roof project to safeguard its future and the collection within, so it might look a little different when you visit. The work is due to be completed in January. Step inside to discover the legacy of the 6th Baronet who created much of what you see today, from the Victorian Gothic interiors to the ornate architectural additions that reflect a romantic view of Oxburgh’s medieval past.
Outside, the gardens are a mixture of formal and wilderness, with the walled garden and French parterre adding colour and seasonal interest. And for those wanting to explore further, you can follow one of the estate walks through woodland and along the River Gadder – keep your eyes peeled for otters. KOREAN CAULIFLOWER Serves 4 Ingredients: Batter • 42g plain flour • 64g Water • 1 teaspoon baking powder • 1 tablespoon cornflour • Salt Korean chilli sauce • 6 tablespoon Korean goujang chilli paste • 4 tablespoon ketchup • 4 tablespoon maple syrup • Water • 1 tablespoon cornflour Vegan mayo • 50ml chickpea water • 4 limes • 200ml vegetable oil Carrot slaw • 5 carrots • 3 cloves garlic • 2 shallots • 1 coriander bunch
Others • 1 cauliflower • 2 bunches spring onion • 1kg panko breadcrumb • Sesame seeds • Coriander cress if available
Method: 1. For the Korean sauce, combine the Korean paste, maple syrup and ketchup, then dilute this to your taste with water to thicken. Put this mixture on the stove and combine the cornflour with a little water and whisk through the sauce – the mixture will start to thicken – check the sauce for seasoning as it may require salt. 2. For the cauliflower, combine the dry batter ingredients and add water, quarter your cauliflower and dip into the batter, let the excess batter drip away and coat in the breadcrumbs. 3. For the carrot slaw, chop the shallot and garlic and cook for 3-4 minutes with no colour, peel the carrots and cut into small ribbons, chop the coriander and mix with the carrot, onion, garlic, and season (this is best done the day before if possible).

Method:
Ingredients: Choc mousse
1. Blitz the bananas and sugar till smooth puree.
• 200g dark chocolate • 300g vegan cream • 75g sugar • 1 lime zest • 300g whipped vegan cream
Method: 1. Vegan cream, sugar and lime zest to the boil. 2. Pour over dark choc and mix till smooth. 3. Fold into whipped cream.

For the vegan mayo, whisk the chickpea water and lime juice and zest until the mixture becomes white and stiff, then slowly add the oil to this while whisking, season and set aside. 5. Garnishes to complete the dish – slice spring onions very thinly and toast the sesame seeds until golden
To serve: Fry or deep fry the cauliflower until golden and roast in an oven at 180̊C for 20 minutes. Once removed from the oven, coat the cauliflower in the hot sauce and then toss the seasame seeds in so they stick to the coated cauliflower Spoon your vegan mayo on the bottom of the plate and put your cauliflower on top, place the carrot slaw around the cauliflower and scatter the spring onion and coriander cress if available.

4. Line a tray with grease paper.

5. Bake at 160̊C dry fan 2 for 10/15 mins.
• 20g sugar
6. Once cooled, blitz to fine crumb.

Mercury rising The Mercury Theatre in Colchester reopened this summer after being closed for two years for refurbishment. The redevelopment was part of a three-year campaign in which over £11.3 million was raised to reimagine the theatre. The building is now accessible throughout and energy efficiency has been improved with the use of LED lighting, converting to 100 per cent renewable electricity and the use of solar panels. Other features include: - A bigger and brighter foyer space which is open all day with a new café bar - Redeveloped main auditiorium with additional seats - New on-site rehearsal room - Revamped and extended backstage facilities
The autumn season features a fierce feminist take on the Greek classic, Antigone (1-16 Oct), a world premiere of local writer Kenny Emson’s play Sirens (28 Oct-6 Nov) and of course the Mercury’s magical pantomime returns and this year they take a journey to distant lands with Aladdin (27 Nov-16 Jan).
