photos by CORI NICHOLS he Rancho Santa Fe Unit of Rady Children’s Hospital Auxiliary held their Broadway Nights Gala at the Fairmont Grand Del Mar to continue fundraising efforts for the Sam S. and Rose Stein Emergency Care Center. The title sponsors of the event were Jere and Joyce Oren, who generously contributed to the cause for the second year in a row. Attendees enjoyed a one-hour Broadway-style production from Imagination Entertainment. Titled “On Broadway,” the show featured the biggest hits from Broadway performed by a cast of amazing musical theater talents. In addition, the gala featured live auctions, interactive games, and an elegant sit-down dinner. The Happily Ever After Party included dancing, late night snacks, and dessert. harlie Yim has lived in Rancho Santa Fe for more than 30 years, calling the community a joy and a comfort. “When we bought our home, it was exciting and challenging as a young couple from Korea. My wife was a school teacher in Oceanside School District, and I was a senior auditor for the City of San Diego,” revealed Charlie. He was born in Seoul, Korea, and came to America as a Peace Corps trainer, working with 500 Peace Corps volunteers in Hawaii. Charlie then moved to San Diego where he attended San Diego State University. While at SDSU, he needed a job to pay for tuition and room and board. With poor English but a positive attitude, Charlie went to the Aztec restaurant and told the manager that he would work for nothing. With that, he got his first job in America. Over the years, Charlie has taken his attitude of enthusiasm, creativity, and commitment, and achieved the American Dream. “I created eight Hallmark card shops, four Hilton brand hotels, four manufacturing and distribution businesses, and more than 10 shopping

centers,” said this hard-working entrepreneur. His latest endeavor is that of author. “I wrote I Will Work for Nothing for today’s youngsters. Attitude is everything, and young people these days need to learn to improve their attitudes. They are boxed in their cell phones and losing sight of quality of life and the good elements of humanity,” related Charlie. In his spare time, Charlie enjoys practicing yoga and spending time with his wife, Gloria, and daughters Jennifer and Lucy. Charlie is also committed to giving back to the community, especially young people. He is invited to speak at UCSD and SDSU annually and serves as a mentor to students at both universities. “I came to America pretty much empty-handed and have accomplished so much. I think serving others and helping others who are in need is such a joy. In serving others, I find the value in life,” stated Charlie, who volunteers his time as the honorary president of the Korean American Association of San Diego, honorary president of the Korean Chamber of Commerce, and a donor and member of The San Diego Foundation.
Woman of the Year
NEIGHBORHOOD ADVOCATE MITZ LEE RECOGNIZED FOR COMMUNITY SERVICE
A
ssemblymember Brian Maienschein recently honored community leader and advocate Mitz Lee as the 2016 Woman of the Year for the 77th Assembly District. Lee has lived in San Diego for over 30 years, along with her husband and two sons. She is president and CEO of Alliance for Quality Education, president of Pacific Rim Park, and leads the San Diego 6th Council District’s Neighborhoods First Coalition and the D6 Night Market. She served as vice president and trustee for the San Diego Unified School District’s Board of Education, and was the first Asian/Pacific Islander elected to the board. “Mitz Lee has played an important role in making our community a better
place to live,” said Maienschein. “Her work with neighborhood projects and nonprofit organizations exemplifies the ideals of the Woman of the Year award.”
Lee has previously been recognized by the U.S. House of Representatives, the California Legislature, and city officials. Other awards include the Governor and First Lady’s Service Award and honors from the Military Spouse Business and Professional Network, the Asian Business Association, and Phi Delta Kappa. “It is an honor to be named the 77th District Woman of the Year,” Lee said. “This award inspires me to help others in the community to go above and beyond the call of duty to make San Diego, the state, and our nation a better place to live.” Lee received her award during a special ceremony in the Assembly Chambers in Sacramento. ¢

Ingredients 1-2
raw or cooked whole chicken carcasses (if cooked first, remove meat to enjoy) 8-10 chicken feet ¼ cup Braggs apple cider vinegar Cold filtered water

Add the chicken carcasses, feet, and apple cider vinegar to a large pot, then add cold filtered water to cover everything. Let sit at room temperature for 45 minutes. Then cover and place over medium-low heat. Bring to a bare simmer (anything hotter will break down the gelatin and collagen, though the broth will still be nourishing). Once at a bare simmer, lower the heat to low. Cook at a bare simmer with the lid askew for the steam to vent for 6 hours. Let cool, then strain the broth to remove the bones and feet. Refrigerate cooled broth in mason jars or pour cooled broth into plastic containers to freeze. Once reheated, add salt to taste. Use in recipes calling for chicken broth, make soups, or drink it straight. Feel free to add grated ginger, grated turmeric, full-fat coconut milk, etc.

The week started out with an opening day expo of vendors, makeovers, and break-out sessions, then continued with The Girlfriend’s Guide to Good Health, an informational evening of appetizers, health screenings, and one-on-one questions with health experts. The ever-popular Women and Wine event welcomed guests to the Bernardo Winery for wine and food tasting, music, shopping, and networking. ntroduced by a mutual friend when they were both living in Carlsbad, Diane and Eric Levken quickly shared a connection. “We have not been away from each other for more than a few days since our first date,” Diane said. Both with sons from previous marriages – Stuart, 24, and Jordan, 22 – they were married and had another son, Ian, who is now 11. After falling in love with the diverse architecture, beautiful scenery, and wonderful amenities available in the community, the Levkens now share a life of blended harmony in Fairbanks Ranch. Eric works as a software engineer at Nextivity, a company that manufactures cell phone boosters for homes and small offices. With previous experience at Qualcomm and Linkabit, he holds 16 patents. became a Realtor by the age of 18 in San Antonio, TX. A stay-at-home mom for the past 10 years, Diane enjoys volunteering at her sons’ schools and has been the co-chair for organizations such as the Rancho Santa Fe Unit of Rady Children’s Hospital Auxiliary, Casa De Amparo, and Orchestra Nova. She also hosts events for Virtuousi USA, an organization that presents world-class musicians, performers, and teachers through recitals and master classes, allowing them to share their art and wisdom with the community. “Virtuousi USA asked if I would not mind hosting world-class pianist Mr. Andrei Gavrilov. It was an exceptional performance and afternoon,” reflected Diane, “What a treat it has been supporting such a wonderful cause.”

This love for music runs throughout the Levken family. After taking piano lessons and studying orchestra at La Jolla Country Day, Jordan began composing music at the age of 17. Soon he was making a regular weekend commute to Los Angeles to study at The Colburn School of Music. Two of his compositions have since been produced and co-orchestrated by producer Jeff Bova, and have won an HMMA Award, as well as second place in the Dallas Song Writers Music Awards. He will be graduating from Loyola Marymount University with a major in psychology and a minor in biochemistry, and plans to pursue medical school. Ian is currently studying violin with Pasha Tseitlin, the son of the accomplished

In addition, Ian takes piano lessons and studies orchestra at his school, La Jolla Country Day, enjoys taking tennis and golf lessons, and is gearing up to take on track as a school sport. In Good Company of Flowers & Friends Shirley Corless Gives Back to the Community Through Her Love of Gardening by LIZ ONUFER | photo by Soul of Photography
T
he last 18 years in Rancho Santa Fe have been filled with friends and flowers for Shirley Corless. After retiring from the San Francisco Bay area, Shirley and her husband Steve found their home in 92067, and she found her niche in the Rancho Santa Fe Garden Club. She has been serving the club and community ever since. Shirley guesses she has been gardening for about 70 years, having started as a child in England. Today, she considers herself a “good maintenance gardener.” “I pot and take care of products of my husband’s creativity,” she shared. “Roses are my special love, but we recently have cut down from 300 to about 50 – they are a lot of work.” At the Rancho Santa Fe Garden Club, Shirley has served on the board for many years. Her roles have included horticulture chair and chairing the Garden Tour and Flower Show, among many others. Shirley explained, “A very special program for me is the annual wreath making event held each December. It is open to the public and each participant makes two wreaths, one for their home and one for the Senior Center to distribute to homebound seniors.” Contributing to the community is an important aspect of the RSF Garden Club’s work. Shirley explained three of the club’s programs that stand out to her, saying, "The Garden Club is very committed to their Scholarship Award Program, the upcoming Petals and Prose for Children at the Rancho Santa Fe Library, and ongoing participation in the Petals for Patriots program where a group of Garden Club members take flower arrangements to the Wounded Warrior barracks at Camp Pendleton twice a year.” Shirley also enjoys engaging in the community in ways that incorporate her hobbies of reading and walking. She is a regular volunteer at the Book Cellar, a committed walker with the Relaxed Walking Group every Thursday, and a member of the Rancho Santa Fe Advisory Committee of Mainly Mozart, which hosts five concerts a year at the Garden Club. A strong community is important to Shirley and Steve, who have been married for nearly 60 years. “When we moved to Rancho Santa Fe we knew no one,” she shared. At the time, the community had an active Newcomers Club. “It was a wonderful way of making new friends and acquaintances of all ages,” she reminisced. “I think our present community could benefit from a similar program.”

Parenting is one of the most rewarding jobs in the world, but it can also be stressful and exhausting. Fortunately, there are ways to stay calm, sane, and stress-free in the midst of normal family chaos. These nine tips should help you recharge: Drink plenty of water. Mild dehydration can affect your body before you realize you are thirsty. Lack of water can cause headaches, fatigue, and lack of energy. Stay away from junk food. When you’re tired and hungry, it’s easy to reach for unhealthy snacks, but don’t neglect your diet. As a general rule, try to eat something every two to four hours, and select low-calorie snacks, such as nuts, fruit, and cut-up veggies.
Get out of the house. Even if you are exhausted, go outside for a rejuvenating walk because fresh air and exercise can help put everything in perspective. Let out your creative self. Create something each day, even if it is just an idea or dream. This will help you stay connected to yourself. Ask for support. Don’t be afraid to reach out to others for support, even if that is as simple as calling a friend or checking out a blog. Arrange for a babysitting swap with friends, or ask a trusted family member to watch the little ones while you exercise or get some sleep. Laugh. Laughter is good for you and your family. Laughter reduces your stress by increasing the endorphins to your brain and relaxing your muscles. It should be easy to find humor in the antics of your little ones. Be grateful. Try writing down three things every day for which you are thankful. Having an attitude of gratitude provides perspective
and brings you to the present. Take time for yourself. Understand that you most likely won’t finish everything on your “To Do” list – ever. So take time each day to do something you like and that brings you joy. Some parents wake up before the family to read and enjoy a cup of uninterrupted coffee or tea. You may choose to carve out some time to meditate, take a bath, or simply listen to music. Play with your kids. Have some stress relievers you can do with your children, such as drawing, blowing bubbles, dancing, and playing with pets. Stroking the cat, feeding hay to the bunny, playing catch at the park with the dog, or even watching fish glide in an aquarium can reduce stress and can also teach your children to care for others. Raising a family has its challenges, but learning to relax and giving up the idea of perfection will let you and your children enjoy the ride, bumps and all. ¢

Local community members, physicians, and cancer survivors came together at the Grand Del Mar for the 35th Annual Moores Cancer Center Gala, also known as the SPARK Gala. The event was an opportunity for the community to recognize the advances made in the fight against cancer, while garnering support to spur new discoveries. Proceeds from the event will benefit patient care and research at the UCSD Moores Cancer Center, including helping to launch the new Cancer Immunotherapy Program. Helping Animals in California
Assemblymember Brian Maienschein announced that he was recently named “Legislator of the Year” by PawPAC, a leading advocacy organization for animals in California. Maienschein received the award for authoring legislation last year to help animals in California. Two of his bills, AB 494 and AB 316 were signed into law by Governor Brown. AB 494 allows pets to be included in civil restraining orders and AB 316 allows veterinarians from other states to provide assistance in California when necessary. “It is an honor to be recognized as Legislator of the Year by PawPAC for my work to help animals in California,” he said. “I remain committed to ensuring that animals get the care and protection they need. In an effort to raise money for the San Diego Food Bank, middle school art students from R. Roger Rowe School held their 3rd Annual Empty Bowl Dinner in late April. The students created ceramic bowls to represent those less fortunate who often go without a good meal. At the event, attendees were able to purchase a bowl and enjoy a soup dinner and dessert for $25. Art teacher Dana Dabney said, “With more than 462,000 people in San Diego living under the poverty line, and many going hungry every night, this was a wonderful way to help show our students how their art can be used for the positive change that they want to see in the world.”

San Elijo Lagoon’s Spring Tours
One of the area’s largest coastal wetlands, the San Elijo Lagoon, is inviting locals to see the unveiling of the spring season during their guided spring tours. Led by naturalists, the tours will allow locals of all ages to check out the blooming wildflowers and bustling wildlife of the lagoon – from various fish to birds of prey. Guided tours are free of charge, but groups larger than five are encouraged to arrange for a naturalist-led tour on the online calendar. San Diego’s Ronald McDonald House’s annual Red Shoe Day fundraiser will sweep the county on June 23 with more than 1,500 volunteers standing at roadside intersections in red tutus, bright shirts, and other wacky attire to collect donations to help support this local charity during the morning commute time of 6:30 to 9:30 a.m. The Ronald McDonald House relies heavily on the community to operate its 47 bedrooms, kitchen, and other services for families who have a hospitalized child. A community-driven event, Red Shoe Day is an annual tradition that brings neighborhoods – and even local elected officials like Chris Cate – together to raise money for this local charity. In fact, the original Green Dragon Tavern was referred to as the “Headquarters of the Revolution.” “Taverns were the epicenter of 18th century communities. We wanted to open an inviting venue that would provide value to our community and reconnect our guests with the essence of patriotism, freedom, duty, and innovation that led to the birth of our nation’s independence,” explained Lek. Through the nonprofit organization, Green Dragon Tavern Historical Foundation of California, a collection of primary source documents and antiques are displayed free of charge for guests to view. Although there is no obligation to dine at the GDT&M in order to visit the museum, according to Lek, the restaurant and event operation allow for the growth of the collection and programs of the museum. Although the GDT&M celebrates American colonial history, there is no shortage of modern conveniences and perks. Happy hour is offered Monday through Saturday from 3 to 6 p.m., and all day on Sunday. There are 20 craft beers on tap, a new craft cocktail libations menu, brunch is offered every Sunday, and there are large screen LED TVs for sports viewing. “We have NFL Sunday

Love a Clean San Diego’s (ILACSD) 14th Annual Creek to Bay Cleanup drew a wide array of environmentally minded volunteers to 110 sites around the county. Over 6,000 volunteers removed 150,000 pounds of litter from the San Diego landscape during the three-hour event. Over three quarters of the sites were focused on inland areas, including canyons, waterways, and street sweeps. The event also marked the end of ILACSD’s Matching Funds Campaign, which started with a $25,000 donation from RSF residents Chuck and Gail Kendall. According to ILACSD, the aim was to match each additional donation in an effort

to raise an additional $25,000 to connect 30,000 of San Diego’s youth to nature in a way that inspires them to help protect it for life. ILACSD was founded in 1954 as the San Diego War Against Litter Committee. Ever since then, the organization has grown in scope and impact to become an influential advocate for local sustainability. ILACSD offers a number of educational and volunteer programs, including Keep America Beautiful, Clean Beach Coalition, Stormwater Outreach and Education Program, and Adopt-A-Beach Program. In a fun effort to raise money for the RSFCC, teams of participants created fabulous tabletop creations in a friendly competition for various titles such as Most Elegant, Most Unexpected, Most Amusing, and of course, Most Over the Top. Upon arrival, guests were greeted with champagne cocktails, and later were able to shop for goods from a variety of vendors. LAKE POWAY This spot offers plenty of outdoor recreational activities to make your picnic an all-day event. Rent a row boat, try out your aim on the archery range, or head up the mountain on a hike before enjoying your picnic at Lake Poway. Fishing permits are also available for purchase. Once you're ready for a break, the Lake Poway Concession shop has beverages and snacks available, including duck food to feed the ducks! MOONLIGHT BEACH STATE PARK Moonlight Beach got its name from the fact that local residents used to come to the area for midnight picnics in the early 1900s. With picnic tables available for use, as well as a snack shack, children's play area, tennis and volleyball courts, and of course swimming, surfing, and fishing, Moonlight Beach pairs the amenities of a park with the fun of the beach for the perfect picnic. Fire rings are also available for bonfires after dark – so make it a beach day, then grab your blankets and stick around for s'mores under the stars before heading home. Allison and Kellie’s family moved to the RSF community when they were both very young. “I think our greatest memories of RSF stem from the tight-knit community and small-town feel. Before starting their own families and taking over the QBM from previous owners, Kellie taught first grade at R. Roger Rowe Elementary and Allison was the art teacher for
