e’ve been discussing the idea of having a special issue showcasing the local wine and distillery scene for quite some time. A few years ago, we published a brewery issue that received a lot of attention. In this issue, we are proud to be able to profile a variety of local wineries and distilleries in our First Annual Wine & Spirits Guide. Before we could put together a special Wine & Spirits issue, we had to do some research and a lot of homework. As you could imagine, this project involved visiting many local wineries and distilleries. We encountered very enthusiastic proprietors who were eager to give us tours, explain their processes, and tell us about the history of their establishment and their personal journey. And then there was the wine and spirits sampling – of course we had to sample the products personally! What kind of research project wouldn’t involve sampling? It just seemed like the polite thing to do. We were surprised to learn that there are wineries and distilleries in just about every corner of San Diego County. While most of the distilleries have an urban feel, the wineries were a bit more diverse. There are urban wine tasting rooms that do a fantastic job of sharing their wine. There are small wineries and large wineries. Country wineries and city wineries. Wineries with their own vineyards, and wineries that have offsite vineyards. The bottom line is that there are all types of establishments, and all of them are definitely worth a visit. Whether it’s a pick-up game of basketball after school or a competitive travel softball league, playing sports is a rite of passage for many kids. Playing sports and being active provides many benefits to children but parents, coaches, and trainers must also consider the risk of injury and take proper precautions. Although some sports-related dental injuries are unavoidable, many can be prevented with properly fitted helmets, face masks, and mouth guards.

The American Dental Association and the International Academy of Sports Dentistry recommend the use of mouth guards in 29 sports or activities; however, currently the National Federation of State High School Associations only mandates the wearing of mouth guards in football, ice hockey, lacrosse, field hockey, and wrestlers with braces. Educating sports organizations, parents, coaches, and trainers on the benefits of protective equipment is key to reducing the potential of traumatic dental injuries to kids playing sports.

Martial Arts Medalists Taekwondo students from 92127-based Master Park’s USA Martial Arts Academy recently participated in the 29th Annual Jimmy Kim Taekwondo Invitational Championships. The event took place at the Walter Pyramid in Long Beach, and local students faced off against hundreds of competitors from across the country – bringing home a number of well-deserved medals in Taekwondo Poomsae Forms Divisions and Taekwondo Sparring Divisions. Poomsae Forms Division winners were Rishi Dave with first place; David Song, Bryce Zhu, Toni Benson, Victor Tifford, Motaz Sinnokrot with second place; and Mia Song, Leo Garcia, and Roan Benson with third place. Academic Distinction 4S Ranch resident Crystal Wang, a senior at The Bishop’s School, was among the 16,000 students named as 2019 National Merit Scholarship Semifinalists. More than 1.6 million juniors in over 22,000 high schools across the United States entered the 2019 National Merit Scholarship Program by taking the 2017 Preliminary SAT/National Merit Scholarship Qualifying Test. Of the 50,000 highest scorers, approximately 16,000 were named semifinalists. Roughly 90 percent of the semifinalists are expected to advance to the finalist level in February, competing for 7,500 National Merit Scholarships totaling $32 million that will be offered in the spring. Scholarship winners are chosen based on their academic abilities, skills, extracurricular accomplishments, and potential for success in college and beyond. The National Merit Scholarship Program is an academic competition for recognition and scholarships conducted by the nonprofit National Merit Scholarship Corporation (NMSC). DNHS Art Publication

Five visual arts clubs from Del Norte High School, including the Graphic Design Club, Jewelry Club, Photography Club, Letterforms, and Paintbox, have teamed up to create and print a publication, called Untitled. 01, that will exhibit visual arts talent at DNHS and spread art to the community. The first issue was released around the DNHS campus and throughout 4S Ranch in early October. “After months of designing, organizing fundraising, contacting sponsors, advertising, and distributing, we can finally say that Untitled. 01 is out for the world to see,” said Untitled. Director Nerissa Yiu. “As stressful as it may be, it’s been amazing going through this process and seeing the results. We see connections between clubs, students, teachers, and the community form.” The second issue of Untitled. 01 will be distributed towards the end of November at local businesses in the 4S Commons and Del Sur Town Center.

Local students at St. Michael’s Church’s afterschool Religious Education program are running a donation drive for their Advent Service Project. Collected items will be delivered to the Trinitarians of Mary, an order of nuns founded in 1992 in Tecate, Mexico. The nuns will distribute the donated items to area residents in need. Items needed include: soap, shampoo, conditioner, toothpaste, toothbrushes, dental floss, feminine hygiene items, lotion, deodorant, and razors. Donations will be accepted through Dec. 12, with collection boxes on the patio of the church’s Religious Education office at 15546 Pomerado Rd. For more information call 858-485-1392.

Girl Scout Troop 2061, which consists of Aubrey Kim, Chloe Santos, Makenna Lindauer, Ashley Sparks, Sydney Karpman, Ella Wilson, Jillian Esteban, Vanessa Cortez, Stefi Miserlis, Emily Russo, and Ceri Majalca, held a red ribbon cutting ceremony for the inauguration of their Little Free Library in 4S Ranch. The girls each worked over 20 hours to plan, build, and prepare the library as part of their Bronze Award. The project was made possible by collaboration with Friends of the 4S Ranch Library, who donated the majority of the materials, and the 4S Ranch Master HOA, who allowed the installation on their property, as well as help from family and community members. “We are very happy the community is embracing this project with open arms,” said Troop 2061 Co-leader Abigail Velazquez. home to California s first recorded vineyards, planted in the 1700s by Father Junipero Serra. Today, the county boasts over 115 wineries – and more history to be savored with every glass. Our beautiful climate is a key factor for the success of local vineyards, and diverse conditions allow a wide variety of grapes to flourish. Wine grapes tend to be hardier and more water-efficient than other crops, giving them an advantage during drier years. San Diego-grown wines include Albarino, Cabernet Franch, Cabernet Sauvignon, Chardonnay, Grenache, Merlot, Sangiovese, Syrah, Tempranillo, Viognier – the list goes on! THE MORE YOU KNOW A hybrid is two grape types genetically crossed, while a blend combines two grape varieties after fermentation. Terroir is the natural environment for a particular wine – including soil, farming techniques, and climate. A vintage is a specific year or harvest. A varietal is a wine made from a particular grape type.

whiskey and rum, San Diego s 14+ craft distilleries are raising a glass to large manufacturers, producing highquality small-batch varieties with local ingredients and distinct flavor. Craft distilleries have been allowed to operate tasting rooms only since January of 2017, even further expanding their local reach. Stop in to learn more about the distillation process and get better acquainted with what's going in your cocktail. THE MORE YOU KNOW Grapes aren't just for wine. Vodka can be made from any sugar or starch source – wheat, corn, potatoes, or fruit. Gin is essentially flavored vodka, but must have a predominant flavor of juniper. Generally speaking, whiskey (with an “e”) refers to American and Irish spirits, while whisky (no “e”) refers to spirits made in Scotland, Canada, Japan, or elsewhere.

ven the name says mellow relaxation and big deep breaths: Koi Zen Cellars. This craft urban winery in the heart of Carmel Mountain Ranch has a vibe unlike any other. Like stepping into your best friend’s home, Koi Zen Cellars is a special place for patrons to ‘uncork, sip back, and relax.’ Owner and winemaker Darius Miller’s life was run by pressure for many years, to the point it almost did him in with a stress-induced stroke. After honing his self-taught skills, Darius turned his passion for winemaking from a small-scale project into a beautiful business, allowing guests to reconnect, be in the moment, and take time (and a great glass of wine) to themselves. Koi Zen Cellars’ welcoming and warm ambiance has turned it into a community hangout for wine loving people. Co-owner Lisa Miller attends the Sonoma State Wine Business program, while steward Jon is a Level 1 sommelier en route to his Level 2. Steward Cat comes from the hospitality industry, and “Her infectious smile is loved by all,” Lisa confirmed. Koi Zen sources their grapes from growers throughout California, “giving guests a unique taste experience from all the major wine regions in the state.” Koi Zen creates fruit-forward, approachable, lively, and fun

full-bodied wines – Bordeaux, Burgundy, and Rhone-style reds and red blends among the broad-spectrum list of choices. Their most popular offerings include Cabernet Sauvignon, Viognier, and Zinfandel. The San Diego U-T readers’ poll awarded Koi Zen the best local winery for two years running, and their wines have won awards in competitions from local to international, earning points in the 90s. They give back to local charities and schools by hosting fundraisers. Koi Zen even received the Think Local First championship in 2017 by the San Diego North Business Chamber. Their fundraising efforts and Holiday Gift Extravaganza, coupled with hosting local musicians on the weekends and active memberships in local networking groups and the North San Diego Business Chamber, highlight the business as involved community members. Their tasting room and winery can double as a unique event space for corporate, private, and holiday events. Currently Koi Zen has entered their Crush season, processing 96,000 lbs. of grapes – equivalent to 3,000 cases of wine! They’ll be releasing a Petite Verdot and a few others for the cooler winter months, along with a Frenchstyle Stainless Chardonnay. 

ince 2007, Principe di Tricase Winery has been making wine the traditional way – no added ingredients or sulfites. “We believe that grape juice should be the only ingredient in wine,” explained owner Alfredo Gallone. Alfredo is committed to making the wine the “ancient way,” following in the footsteps of small-country wineries in Italy. Pairing the rustic, old-world style winery with Italian family ambience makes a tasting at Principe di Tricase an unforgettable experience. The winery offers a selection of Italian wines, including Aglianico, Nebbiolo, Aleatico, Barbera, Sangiovese, and Moscato. “Our Dark Rose Aglianico rosé style is very unique,” Alfredo explained. “Aglianico is one of the most ancient wine grapes with a special self-preserving capability that is transferred into the wine, giving it a very characteristic flavor.” A number of their wines have been awarded medals from both national and international wine competitions. Principe di Tricase complements their Italian selection with a number of French wines. The wine list includes Petit Sirah, Sirah, Cabernet Franc, Cab Sauvignon, Malbec, Merlot, Chardonnay, and Sauvignon Blanc. Since the arrival from Italy of daughter Raffaella and son-in-law Alberto, wine tastings are hosted Thursdays through Sundays. It’s a family affair, and Alfredo, Alberto, and Raffaella are proud to personally host guests. They’re joined by Joaco Sanz, a 25-year veteran of the wine industry in Spain. Joaco may look familiar to some as he has been on a number of TV shows about wine and wine pairings. “He was known as ‘El Professor Del Vino,’” Alfredo shared, “the wine professor.” Tasting flights start at $10, but the tasting fee is waived with the purchase of a bottle of wine. Balsamic vinegars and olive oils are also produced in house and available for purchase. A unique pairing on the winery property is the Highland Valley Christmas Tree Farm. “Since we purchased the property, we have been selling Christmas trees, continuing a long tradition,” Alfredo said. For many years, families have been choosing and cutting their Christmas trees on the property. “The smile on the children’s and parents’ faces makes it worthwhile.” Producing excellent wines and maintaining their strong Italian family ambiance are priorities at the winery. “Principe di Tricase and our family are here for you,” Alfredo said. “Please come and visit us and share in the love of excellent wines and an unforgettable experience.” 

hough the Forgotten Barrel tasting room in Escondido opened in 2017, the property itself is steeped in history. Forgotten Barrel Winery occupies a historic winery, which was established in 1886 as one of the first vineyards in San Diego County and Southern California. It was then purchased by George Ferrara in 1928 and re-opened in 1932 with the passage of the 21st Amendment ending prohibition. During the following 75 years, Ferrara Winery grew to prominence in the California wine industry, and was designated a California historic point of interest in the late 1970s and a historic site by the City of Escondido in 1989. It was operated by three generations of the Ferrara family until 2010. Forgotten Barrel Owner Rodger Grove purchased the winery in 2016, working hard to restore this historic property while continuing to tell the story of the Ferrara family. The winery now offers wines produced on location in Escondido as well as wines produced at its Napa Valley winery. Forgotten Barrel’s winemaker sources grapes from Napa, Sonoma, Central California, and San Diego County. The property’s rustic charm provides a one-of-a-kind setting for weddings, birthday parties, or corporate events, either in the barrel room or in one of its outdoor venues. PIANIST AND VIOLINIST MATTHEW CHIN EXPRESSES HIMSELF MUSICALLY

atthew Chin, a 17-year-old senior at Maranatha Christian School, loves his high school because, he explained, “It is a small, intimate setting, and I am able to get to know my classmates and teachers very well.” For someone who adores a small, intimate setting, it is ironic that his musical proficiency allowed him to perform at the majestic Carnegie Hall this past summer, via the American Fine Arts Festival. Describing the experience, Matthew proclaimed, “It was a rush of excitement performing on that stage!” When asked what the secret was for his being selected to perform at Carnegie Hall, Matthew humbly replied, “Practice, practice, practice! It was a great achievement for all of my years of dedication to music.” It all began for Matthew at age five, when he first began taking piano lessons. From there he progressed to completing his Level 10 Music Teachers Association of California (MTAC) Certificate of Merit two years ago, and then he won third place at the MTAC Sonata competition, which advanced him to the regionals at the Junior Bach Festival. In addition to piano, Matthew has also been taking violin lessons since the age of 10 and has completed the Level 9 MTAC Certificate of Merit for violin. He has been playing violin with the San Diego Youth Symphony for five years, performing at the Copley Symphony Hall and the Escondido Center for the Arts. Elaborating on what he most enjoys about the musical process, Matthew exclaimed, “I love how music is a combination of writing a story and painting a picture. For example, in the piece that I performed at Carnegie Hall, Copland’s The Cat and The Mouse, I was able to portray a cartoonish yet lifelike insight on the daily mundaneness of the scurrying of the mouse to the prowling of the cat, leading up to the cat pouncing on the mouse.” At school, Matthew’s favorite classes are history and biology, and he maintains an impressive 4.32 GPA. When he isn’t performing musical masterpieces, Matthew adores sailing and volunteering with the children’s ministry at Maranatha Chapel. As for his future goals, Matthew remarked, “I hope to make a difference in the world.” We believe he already has. 

STUDIO WEST OFFERS AFTER SCHOOL WORKSHOPS FOR STUDENTS A

s the new school year begins, students are once again getting to create music at a world-class recording studio by participating in the Studio West After School Workshops. The workshops are led by Andy Walsh, who has been associated with Studio West for over 10 years and brings a wealth of experience as a producer, engineer, and musician. Andy is a 2012 graduate of our own music production program and also holds a B.A. in Music Humanities from UCSD but, most importantly, he creates an amazing environment for students to explore their musical creativity. The workshops center around collaborative and individual projects that challenge students, giving them the tools they need to make their musical ambitions a reality. Students develop their skills by listening to and critically analyzing

the music they love. From this insight, along with the experience of working in Studio West’s professional recording facility, students have the unique opportunity to make recordings that bring their creative visions to fruition. Students meet weekly for 90 minutes in focused groups of three to six students analyzing music, working on original compositions and arrangements, and ultimately recording their performances in the amazing studios. Students learn production techniques and get hands-on time with industry standard hardware and software packages such as Ableton Live and Pro Tools. Recruitment is ongoing and Andy and the Studio West team are always happy to offer tours of the studio to interested students. We look forward to hearing from you! 

Home Consignment Center offers complimentary in-home previews for our consignors. A representative of HCC will go out to a consignor’s home and evaluate the potential consignment items. According to Johnson, this makes the consignment process much less of a burden for the consignor as they do not have to bring the items into the store to evaluate and price. “We also make it easy for sellers to transport items into the store. We have partnered with Awesome Movers to offer customers an easy and affordable way to get their furniture into the store for sale,” explained Johnson. The HCC sales strategy is also unique in that items arrive directly to the showroom instead of a warehouse or storage area. This open concept allows customers to see items as they arrive. As stated by Johnson, this creates a constant feeling of excitement among regulars and first-time shoppers alike. In the mid-1990s, the idea for Home Consignment Center was born. Christine and Johnny Crowell decided to open a furniture store with a similar business model to their successful antique auto consignment business. Jamece and John Fondnazio joined the Crowells and formed a partnership built on promoting high quality furniture and accessories at fair prices. The first store opened in Danville, California, and now there are 18 locations across the southwest, including the one in 4S Ranch. “In response to San Diego shoppers visiting the Orange County stores, the owners of HCC decided San Diego was a natural location to expand. Our 14,000-square-foot store is filled with natural light, a beautiful coffee bar and, of course, an eclectic mix of beautiful home furnishings,” stated Johnson. HCC’s 4S location is also launching a fine jewelry department, allowing customers to buy and seller jewelry along with home furnishings and accessories. Welcoming New Nighthawks

F

or many people, the transition to high school is a rite of passage: students are immersed in a bigger campus, Friday night football games, school dances, high school-level classes, and much more. This year, over 700 new freshmen experienced this transition at Del Norte, and they are currently adapting to high school life. Richa, a former Falcon from Oak Valley, has had an enjoyable experience so far and looks forward to future experiences. She found that classes at DNHS are fairly laid-back. Like many freshmen, Richa is looking forward to going to social events and dances with her friends. Richa found

few surprises at Del Norte: “It’s similar to how I thought it would be because I’d heard lots of stories before,” she said. Maya, whose older sister already goes to Del Norte, also knew what to expect from DNHS. “I’m most looking forward to taking biomed classes because I’m interested in that field,” she said. In high school, she will be able to take a variety of career-oriented, hands-on classes such as Human Body Systems and Medical Interventions. Specialized classes are also a point of interest for Clara, who is excited to be able to choose unique classes. A former Eagle from Mesa Verde Middle School, Clara found that the biggest difference between

MVMS and DNHS is the amount of people. “There are so many people here!” she said. After all, there are 2,400 Nighthawks roaming Del Norte’s halls – the most in school history. Overall, high school is a blank slate for this year’s new Nighthawks. With so many academic, social, athletic, and club opportunities at Del Norte, these freshmen have many ways to make their high school experience soar. 

Crash Pricing How It Hurts Sellers and Communities W

hen the market undergoes a shift and slows, some agents are caught unprepared. In a hot market, agents can focus on marketing themselves rather than homes. When the market slows down, some agents don’t have the skills or experience to develop a marketing plan and generate market value offers. Correctly marketing a home in a typical market takes between .5 and 1% of the home’s value. Agents who are accustomed to spending $500 on photos, fliers, and a sign aren’t prepared for a typical market. These agents then deal with frustrated sellers demanding explanations. There are some options. Many get out of the business. Some apply themselves, learn how to market homes, and put forth the effort and money to do so. Some resort to the ageold tactic of blaming the price. The worst case of this is called crash pricing. It’s when a home is listed for 20-30% under market – often after the same agent
