he small beach town vibe of Del Mar is what drew Robert Cotton and his late wife, Anna Cotton, here in 1984. “I started surfing in high school when I lived in Puerto Rico,” mentioned Robert, “and continued when I came to California for college at USD.” He and his wife were married for 30 years. “Anna was my true soul mate,” revealed Robert. Anna, who was diagnosed with leukemia in 2013, passed away after valiant efforts and treatments. Robert is a retired entrepreneur with a diverse list of past career ventures. Three years ago he started giving back to his passion for animals. Though he served as a board member in numerous

organizations in his career, these days, it’s all about volunteering hands-on. He elaborated, “Now that I am retired, I prefer to work on the ground level.” Robert volunteers for the nationally recognized Helen Woodward Animal Center. The center focuses on the rescue and adoption of abandoned, surrendered, and homeless domesticated animals. Robert was first introduced to Helen Woodward's volunteering opportunities when he attended their annual Spring Fling Gala in 2013 (the 2016 Gala will take place June 4). He walks dogs and provides general support for the veterinary technicians. This is people helping animals, and animals helping people,
according to the organization’s mission. Volunteering is for anyone, and Robert recommends getting involved no matter the differences between careers and new ventures. “I am willing to get my hands dirty in spite of my diverse background and financial success,” he reflected. Outdoors is his playground – from exploring Torrey Pines State Natural Reserve to people watching in La Jolla and Little Italy. He also surfs, hikes, and practices yoga. When not enjoying the great outdoors, Robert continues to focus on what really matters. He explained, “The only way we can make a real difference in the world and our community is through a collective effort."

el Mar Heights fifth grader Anne McLean Smith’s favorite thing to do is to write. It's no wonder that literature studies is her best subject. “I like to write in my travel journal, poems, and stories,” she explained. “I write lots of stories.” Anne is a young creative dynamo; besides acting and playing piano, she

is, along with her father Owen, the co-creator of a mystery writer called Hugh N. McGoose. When Anne originally came up with an idea for a book protagonist, her dad came up with the book's author, who then penned the entire story of Long John Silverback and the Island of the Perfect Pearl. In the book, Nana the monkey and her friends meet a powerful and mysterious fellow from the sea – a stranger who is loved by some of the island neighbors and hated by others. Nana is swept up in his adventure as she discovers it is actually her story and the destiny of her island at stake. After Anne and her father hired an illustrator for the book, and the story itself was completed, Long John Silverback became available for purchase online. Anne has been involved with soccer, tennis, and piano for the past five years, and in addition to her writing success she is into acting, having played Becky last year in the play Gold Dust or Bust as one of the three lead roles. She will be in both upcoming plays this spring. Anne is also inspired by her parents, her grandparents, and teachers. For fun, she loves anything beach related, including body boarding, practicing to surf, and playing in the sand with her brothers. “I love looking in the tidal pools for sea life too,” Anne shared. “Sometimes I go fishing with my dad and brothers in the lagoons.” She is not sure what she wants to do in her future, but two current points of interest in Anne’s life relate to food. Mix together the salt, pepper, fennel pollen, fennel seed, chili flakes, and cumin. Set aside. Prepare the pork belly by scoring the skin with a razor blade or sharp knife in a diamond pattern. Flip it over and sprinkle on half the spice mix and rub into the meat. Lay butterflied pork shoulder over meat side of pork belly. It should cover the surface area of the belly evenly. Sprinkle pork shoulder meat with the remaining spice mix and rub it in. Flip belly and shoulder over so the scored skin is facing up. Sprinkle this side lightly with baking powder and rub so it is even. Roll pork belly and shoulder from one end to the other to form a cylinder. With butcher twine, tie roulade from one end to the other in one-inch intervals. Place roulade in the refrigerator uncovered on a cooling rack over a cookie sheet for 1 to 2 days until the skin has dried out. The night before you roast, soak calypso beans in 4 quarts of water overnight. The day of, begin braising calypso beans: In a 4-quart pot, sweat your shallots in a little oil until they get some color. Add your soaked and drained beans to the pot, 2 quarts of your vegetable stock, and the bay leaf. Do not season at this point. Bring pot to a simmer. Try not to boil beans to keep skins intact. Simmer beans until tender on the inside, checking every 15 to 30 minutes. If liquid gets low, add more plain vegetable stock or water pot. Once the beans are tender and the liquid is just below the top of the beans, season them with salt and pepper to taste. Pour into a shallow metal pan to cool and set aside. For salsa verde, pick parsley leaves and roughly chop scallions (green and white) and place in a food processor with the garlic and capers and 1 cup of good olive oil. Process until everything is minced together. Season with salt and pepper to taste. Set aside. Two hours before roasting, pull the porchetta out of the refrigerator to sit at room temperature. Set your oven to 300 degrees F. The porchetta will roast for 2 ½ hours. After this time, turn the oven up to 500 degrees F and roast for another half an hour until the skin has crisped up. After roasting, carefully pull out of the oven and let it rest for 30 minutes before cutting. Cut the ties off the porchetta and discard them. With a serrated knife, cut the porchetta into 1-inch thick slices. Plate with the braised beans on the bottom, then some fresh spinach, and the porchetta on the spinach. The spinach will wilt slightly under the heat of the pork. Top with the salsa verde, extra-virgin olive oil, some good sea salt, and serve!

Favorite Local Activity: Eating at different restaurants all over San Diego and local brewery-hopping. I love discovering new places to eat and finding inspiration for new dishes. About the Recipe: Porchetta is a classic Italian dish. It’s simple in flavor, but delicious and impressive if you make it for a crowd or dinner party. Plus, the crunch you get on the skin is amazing. It is comfort food, especially served with the braised beans and great for the cooler weather we’re having. Leftovers are perfect sliced thinly for sandwiches the next day. About the Chef: I was born and raised in San Diego. I draw much of my culinary inspiration from the amazing selection of local produce and apply it to Dolce Pane E Vino’s Italian-Californian menu. After attending culinary school at the Art Institute in Mission Valley, I interned and eventually became Sous Chef at Dolce’s Rancho Santa Fe location. In 2013, I moved to Newport Coast to work at Andrea Ristorante, a high end Italian restaurant part of the Resort at Pelican Hill. This year I returned to San Diego to be the executive chef of Dolce’s second location at Pacific Highlands Ranch in Carmel Valley, which opened its doors in January 2016.

o say the family history of the Salgados runs deep in Solana Beach would be an understatement. Paul Salgado is a fourth generation Solana Beach native, and his wife Kristin Peterson-Salgado grew up in neighboring Del Mar. With their two children, Brandon and Evan, the Salgado family continues to deepen their roots in Solana Beach. In the 1950s, Paul’s grandfather Tony Salgado purchased land in Eden Gardens and split it among the
family. “So we built our house in 2003 on one of the lots and have nine houses of relatives within a block of us,” Kristin shared. Tony also donated the money for the Solana Beach Little League to start fifty years ago. “Tony’s Field” on the backstop of the Solana Beach Little League Majors field recognizes his contributions. The Salgados continue the family tradition of giving back to the community. “Volunteering in our family is not an option, it’s expected,” explained Kristin. “We believe giving back to the community makes for a stronger community and will ingrain in our boys the importance that they continue to volunteer in the future.” Brandon, a freshman at Canyon Crest Academy, is a member of Teen Volunteers in Action (TVIA) and younger brother Evan will be joining the club in the fall. Paul has served as a volunteer coach for Solana Beach Little League and soccer for the past nine years. Kristin, an optometrist, is a board member of the Del Sol Lions Club and donates eye exams to local school children in need. The Salgado family continues to grow their legacy. Kristin opened the doors of Solana Beach Family Optometry in 2010. “After 15 years in a busy medical practice, I decided to open my own private optometric practice and offer a more personalized approach,” she shared. Their sons are sharing their talents with the community, as well. Brandon plays the guitar and Evan is the lead singer of a local band. Both boys also play lacrosse with local teams. As a family, their hobbies include traveling, hiking, biking, going to the movies and the beach, and spending time with family and friends. Beyond the deep family connections of Solana Beach, the Salgado family shared, “We love Solana Beach for its small town feel, good neighbors, and friends who raise their kids with good values.”

The Del Sol Lions Club has donated $300 to a Solana Beach robotics team called the Code Crunchers. The funds will help cover the team’s travel expenses to the World Championship in St. Louis, MO. The Code Crunchers, comprised of five members ages nine to 14, is one of 108 teams selected from 29,000 entrants to create a more efficient way to manage trash. San Elijo Lagoon’s Spring Tours
One of the area’s largest coastal wetlands, the San Elijo Lagoon, is inviting locals to see the unveiling of the spring season during their guided spring tours. The Royal Academy of Performing Arts (RAPA) proudly announced that one of their students is already receiving national recognition for her skills in ballet. Local Rotarians Doing Good
At a recent Del Mar-Solana Beach Rotary Club meeting, Rotarian Zubair Bakubye updated members on two Uganda-based projects for which the club took fundraising leadership roles. The first project provided sewing machines, computers, training, and counseling for neglected former female child soldiers. As a result of the $33,500 project, Zubair reported that “the women have become more self-sufficient and a positive part of the local community rather than being outside of it.” The second project provided clean water for a Uganda hospital where the existing water system had severely deteriorated. A Rewarding Ride
Cyclists of all levels recently banded together at the Del Mar Fairgrounds in an effort to help fight diabetes. The 2016 Tour de Cure, benefiting the Greater San Diego Area of the American Diabetes Association, registered more than 600 participants and raised over $300,000. “This is a ride to take on the challenge of defeating diabetes. Every mile we ride and every dollar we raise brings us that much closer to reaching our common goal to stop this disease that affects over 29 million Americans,” said Larissa Roman, executive director of Greater San Diego Area American Diabetes Association. Fundraiser for Cancer Research Local community members, physicians, and cancer survivors came together at the Grand Del Mar for the 35th Annual Moores Cancer Center Gala, also known as the SPARK Gala. uperb, family-oriented, friendly, and professional: all words used to describe North County DanceArts, Inc., a 36-year-old San Diego-based dance studio focused on providing professional instruction to people of all ages and skill levels. Founded and owned by the husband-wife duo, Louis and Tanya McKay, North County DanceArts, Inc. (NCDA) offers classes in jazz, tap, ballet, pointe, contemporary, lyrical, hip hop, tribal belly, and acro and ballet barre. They also offer musical theater workshops, competition coaching, and performances. “We can provide dance instruction for recreation and fitness or tailor a dance schedule that will lead to positions in the dance, theater, and/or film fields for students,” noted Tanya. “NCDA also offers an adult morning program that consists of many of the dance styles mentioned above and is designed specifically for busy adults.” So what’s the background of NCDA, you wonder? SUSTAINABILITY WORKSHOPS COMING TO DEL MAR FAIRGROUNDS
T
he Del Mar Fairgrounds Board of Directors recently approved a partnership with Solana Center for Environmental Innovation to provide environmental education programming at their facility. The programs will include workshops and a water conservation event, exposing new audiences to the importance of ecological sustainability and creating healthy communities. As part of the partnership, Solana Center will unveil its Eco Container at the San Diego County Fair this summer. The Eco Container is a re-purposed shipping container that has been transformed into a center for environmental innovation, featuring solar energy, a rooftop garden, greywater demo system, rain barrels, composting, drought tolerant landscaping, and California-friendly gardens. Located in the Infield Farm, the Eco Container – sponsored by Solana Beach-based food company Kashi – will be a demonstration site and classroom designed to educate all ages about sustainability. It will inspire people to create energy-saving, water-efficient, and ecofriendly living spaces. After considering the benefits of the collaboration, the Fairgrounds Board of Directors voted unanimously to proceed with the partnership with Solana Center because it perfectly demonstrates the 22nd District Agricultural Association’s (22nd DAA) commitment to the environment, agriculture, and education. “By teaching people about the natural wonders of soil, plants, water, and animals, we encourage good stewardship of our resources and land,”

ohn Lococo has always had a strong entrepreneurial spirit. So, he jumped in when he saw an opportunity to combine his interest in sports with his passion for business. “I became deeply involved in youth soccer teams as my children grew up through the sport,” recalled John. It’s been 20 years since he started Soccerloco, an online soccer specialty retailer, and John isn’t slowing down anytime soon. “We have built Soccerloco to a national brand, servicing the local community and beyond,” stated John. Recently, Dr. Sidal was appointed as the Vice Chair of the Oral and Maxillofacial Surgery section at Scripps Memorial Hospital La Jolla. As a surgeon, father, and husband, Dr. Sidal values the importance of healthy families. He has given back to those in need through Operation of Hope and in medical initiatives overseas and across the border. Here at home, patients have found comfort in their procedures. “The doctor’s skill level is very high,” wrote a pleased patient. Another patient, described, “I never thought I’d be saying that I would miss a visit to the dentist’s office, but since I don’t have to come back for a while, I’ll miss the team.” One patient even shared, “I loved my entire experience, and that’s saying a lot for someone who was terrified to have three wisdoms teeth pulled.” The medical team keeps up with continuing education by attending advanced trainings. At the center of the experience is the patient’s wellbeing. “We believe in compassion and comfort which tops our list of priorities,” reflected Dr. Sidal. “We believe in patient care where patients are evaluated as a whole, and not just focused on in parts.” It’s something to smile about, when oral and facial conditions are healed with a specialist’s touch.

el Mar resident Darcy C. Bingham and Erica Ollmann Saphire, Ph.D. of Solana Beach were among luminaries honored during Girl Scouts San Diego’s Cool Women of 2016 celebration. The awards luncheon and ceremony took place at Coasterra on Harbor Island, where various women and Girl Scout alumni were honored for their impact as role models for young girls. “Our Cool Womens’ personal and professional lives make them consummate role models for girls,” said Jo Dee C. Jacob, chief executive officer of Girl Scouts San Diego. “We’re proud to honor these exemplary women for their extraordinary leadership and community service.” Darcy is a self-defined “philanthropreneur” who empowers young people to access college education. She serves as trustee and Student Foundation chair for UCSD, and is on the board of

hile the last days of spring linger in the air and the warm breeze of summer approaches, now is the perfect time to enjoy some carefree fun with friends and family in the beautiful outdoors. Whether you enjoy your picnics with a hint of history, want to plan a jam-packed afternoon of activities before taking a break on a blanket in the grass, or simply feel like sitting back with your toes settled in the sand, we've put together a list of a few of the top picnic spots in North County that are sure to help you get into the swing of summer with a unique picnic experience.
LAKE POWAY This spot offers plenty of outdoor recreational activities to make your picnic an all-day event. Rent a row boat, try out your aim on the archery range, or head up the mountain on a hike before enjoying your picnic at Lake Poway. Fishing permits are also available for purchase. Once you're ready for a break, the Lake Poway Concession shop has beverages and snacks available, including duck food to feed the ducks! If you plan to bring your own food and drinks, note that beer and wine are okay, but glass containers are not permitted. MOONLIGHT BEACH STATE PARK Moonlight Beach got its name from the fact that local residents used to come to the area for midnight picnics in the early 1900s. With picnic tables available for use, as well as a snack shack, children's play area, tennis and volleyball courts, and of course swimming, surfing, and fishing, Moonlight Beach pairs the amenities of a park with the fun of the beach for the perfect picnic. Fire rings are also available for bonfires after dark – so make it a beach day, then grab your blankets and stick around for s'mores under the stars before heading home.
