t has been eight years since we published our first magazine. We have grown from one local publication to a collection of 14 magazines that covers the majority of North San Diego County. Over the years, I’ve noticed that I get asked some repeat questions. So, I thought it would be fun to do an informal F.A.Q.
So, how does it work? Who pays for the magazines to be delivered? This is by far the most common question I get when talking to businesses, friends, readers, government representatives, etc. There is only one answer. Our incredible advertising partners – the businesses and organizations you find throughout these pages – are the exclusive sponsors that should be thanked. We are 100 percent supported by these revenues, and without the participation of these loyal businesses, there would be no magazine. So please take the time to let these businesses know you appreciate their participation and that you saw them in Del Sol Magazine.
Are these magazines part of a franchise? No, Del Sol Magazine has no affiliation with a national company or franchise. It is a home-grown publication that started with an idea, a lot of napkin scratching, and a desire to publish a local magazine our neighbors would want to read. Although we strive to make every magazine look bigger than life, we are a small, family-owned company that started out of our living room – and we are very proud of that history.

Who writes the stories, and who designs the magazines?
This is my favorite question to answer, and I think this sets us apart from many other publishing companies. We have a team of about 20 incredibly talented people consisting of editorial, writers, photographers, graphic designers, account executives, and a production coordinator. All are local, and all work feverishly to produce the best magazines possible.
Why do you publish magazines? This answer is very personal. Although I don’t get asked this nearly as often, it is the most important question. We publish Del Sol Magazine because we want to bring joy to our communities. I believe this magazine is larger than the paper it is printed on. It creates lasting memories, and memorializes community events and happenings. The pages of Del Sol Magazine can be found framed on the walls of people’s homes. People are excited to mail them to grandparents and relatives that live outside of the area. Twenty years from now, 30 years from now, or even 40 years from now, perhaps someone will open up a loved one’s cherished box of memories. And maybe – just maybe – there will be an old copy of Del Sol Magazine that their relative proudly tucked away. And this will once again put a smile on someone’s face. That’s why I print magazines. Thank you for reading Del Sol Magazine and being a part of something that touches the hearts of our communities.

ecilia Pessoa, who is 12 years old and lives in Del Mar, is eager to start seventh grade at Earl Warren Middle School. She wasn’t always feeling this confident about her future, however, because of her dyslexia. Thankfully her fantastic sixth grade year at Skyline Elementary has made all the difference. Explaining how the past year improved her love of learning, Cecilia commented, “I have struggled in school and hated the process of learning for years, but this past year I had a teacher, Mrs. Schroeder, who pushed me in a positive way. I also got extra help with my learning issues from great tutors and an amazing support network. I now feel good about myself and this was the first year I have wanted to work towards achieving my goals with confidence.” One of Cecilia’s goals is to become a surgeon. She exclaimed, “I know becoming a surgeon will be very hard work, but I am up for it! I am interested in heart transplants and other transplants. Just because I have dyslexia does not mean I can’t be a doctor. I think outside the box, and I feel I have an advantage because I think differently.” Her favorite subject has always been English, and Cecilia added that “even though reading is a bit of a challenge for me, I enjoy the creativity of it.” Another creative outlet for Cecilia is gymnastics. She currently practices three days a week for three hours at a time at the Gold Excel Level at TRC Gymnastics. She revealed, “Our competition season is from January through May and though it’s very time consuming, I love it and it is fun!” Cecilia is especially passionate about traveling. She frequently flies all over the world to visit with her dad, who is Brazilian but living in Belgium. Cecilia also recently traveled to Mexico with her sixth grade class to build a house for an underprivileged family. She recalled, “It was a very rewarding, humbling experience, and I learned to appreciate everything I have and to be grateful for everything I am afforded.” We’re grateful for go-getters like Cecilia, who won’t allow personal hardships to stop them from achieving their dreams.

INGREDIENTS Shredded Beef: Whole flank steak 2 ½ cups your favorite tomato sauce 2 ½ cups beef stock 1 red bell pepper, diced 1 yellow onion, diced 6 ounces dried cured chorizo, diced 10-15 garlic-stuffed green olives 3-4 ounces tomato paste 1 teaspoon turmeric 1 teaspoon cumin 1 teaspoon oregano 1 teaspoon salt 1 teaspoon pepper Not-So-Traditional Pico de Gallo: 1 cup cherry tomatoes, quartered ½ cup red radish, diced ½ cup seedless cucumber, diced ½ cup savoy cabbage, chopped ¼ cup cilantro, chopped ¼ cup red wine vinegar Juice from 1 or 2 limes Salt and pepper, to taste

For the pico de gallo, combine all ingredients, mix, and let stand for at least 4 hours. For the shredded beef, combine all ingredients except meat in a bowl and mix well. Add half of the mixture to a crock pot. Place meat on top and cover meat with remaining ingredients. Cook on high for 4 hours, then reduce to low for another 2 hours. Pull meat apart into strings with 2 forks and serve with pico de gallo. It can also be served over rice and beans or even made into tacos.

NCL SAN DIEGUITO RECOGNIZES PHILANTHROPIC WORK AT CHAPTER TEA
T
he National Charity League, Inc., (NCL) San Dieguito Chapter held its annual Mother-Daughter Chapter Awards Tea in late May to honor the outgoing board of directors, install the incoming board, welcome provisional members to the chapter, and acknowledge overall time contributed to serving NCL’s mission. “The Chapter Awards Tea is a time to reflect and celebrate all the hard work of our members and the positive impact their efforts have on the community,” said Chapter President Amy Monteparte. “Through leadership, philanthropy, and cultural experiences, our members gain valuable and memorable experiences.” The tea was organized by the eighth grade class; the awards ceremony was produced by the Ticktocker Council, consisting of representatives from each grade. The mother and daughter members of NCL San Dieguito collectively contributed over 10,500 hours to various philanthropies

C
harlie and Lynn Gaylord’s story began on a spring night in 1965, while they were both attending a college dance in Fort Lauderdale, FL. “We laughed and joked and then in keeping with the fun, he asked what I was doing with the rest of my life!” recalled Lynn. “I asked if that was a proposal. He said yes!” Charlie and Lynn have now been married for over 50 years and have two children, four grandchildren, and a lot of adventures in between. “Our wedding was just the two of us in front of Judge Wood in the Atlanta Courthouse,” shared Lynn. “No family, no friends, no frills.” In the early part of their marriage, the couple lived in Atlanta, GA where Charlie worked on his undergraduate and graduate degrees in aerospace engineering at Georgia Tech University. “I worked on campus, attended classes when I could fit them in,” added Lynn, “and held various positions from expert stamp licker to resident manager to state campaign office coordinator for a Georgia politician.” It was during this time that the couple had their first child – their daughter, Andrea. “She was the love of our lives,” gushed Lynn. Shortly thereafter, the Gaylords made the move to Cambridge, MA so that Charlie could pursue an MBA from Harvard University. “While there I finished my BA in political science at Wellesley College with the help of a scholarship and student loans,” said Lynn. “We lived above a garage in a tiny apartment in Newton Center so Andrea could attend the best elementary school in the area. Education was and is to this day an important value that we all share.” For the next decade or so, the family moved around with Charlie’s job: New York, the Netherlands, Bermuda, and back to New York. “Andrea and I took every advantage of seeing the world in those days with me often home-schooling her,” said Lynn. “Oh, the places we went!” Travel aside, Lynn managed to squeeze in time to obtain two masters degrees from Columbia University and hold several stints as a journalist covering the presidential conventions in 1972 and 1976. “(I also) was 16 • DELSOLMAGAZINE.COM • August | September 2017
doing a series for New York public television called Women: New York Edition,” explained Lynn. “It was the height of the women’s movement and I was involved!” In the midst of it all, the Gaylord’s second child was born – a son, Charlie III. “That little guy changed our lives and once again our adventures took new twists and turns,” shared Lynn. “But no slowing down!” Their days were filled with Little League, soccer, and Cub Scouts. Meanwhile, Andrea had decided to attend Stanford University for college. It appeared that California would be the next stop not only for Andrea, but for the rest of the Gaylord family as well. “Charlie decided to take a second look at an offer to relocate to Southern California and see if this little company had any potential as some investors thought. That little company was TurboTax, located in San Diego,” explained Lynn. “The rest is history.” At first, the move to California from the East Coast was frightening for Lynn. She would miss her lifelong friends and being involved in the community and schools. And she couldn’t help but wonder how they could possibly celebrate Thanksgiving away from Plymouth Rock. “But as I soon found out, it didn’t take long to begin volunteering in my son’s new school,” said Lynn. “Lifelong friends are here now! We have adapted to so many new ideas.” Today, Lynn does a lot to volunteer for the community. She has been part of the effort to save the Del Mar Powerhouse, has initiated a music series for the Del Mar Foundation, and has helped secure a place for the Alvarado House as Del Mar’s Historical Center. “Instead of longing for Plymouth Rock, I suddenly realized that this story is the same ‘Pilgrim story,’ just the West Coast version!” exclaimed Lynn. “Yes, adaptation is key to not just survival but flourishing. Life is just one big adventure after another.”

Healthy Back-to-School Lunches Kids Will Love Six Tips for Packing Nutritious Meals by MACKENZIE COFFIN, M.D.; Scripps Clinic, Carmel Valley A nutritious midday meal gives children the staying power to sustain them through the day. Start their school year off right with healthy lunches they will enjoy. PACKED LUNCHES MADE EASY Creating fresh, nutritious, and cost-effective lunches doesn’t have to be complicated. A little bit of preparation can go a long way. Set your child up for success with these six tips: 1. Make healthy eating a habit at home. When children are used to eating foods from the five food groups, they are more willing to eat those same foods for lunch anywhere, including school. The five groups, according to the United States Department of Agriculture (USDA), are: grains; vegetables, including beans and peas; fruits; protein foods, which includes meats, poultry, seafood, eggs and nuts; and dairy, including all fluid milk products. Choose foods with a high nutrient content (protein, minerals, and vitamins) compared with the percentage of calories, fat, and sodium. Small amounts of oils, fats that are liquid at room temperature, are also recommended by the USDA. Although they are not a food group, they provide essential nutrients. In addition to the food groups, other components to consider for healthy eating are added sugars, saturated fats, and sodium. While there is room for some added sugars or saturated fats occasionally, limit the amount your kids eat. Sweet treats such as cakes, cookies, candy, and sugary drinks have a lot of calories, but few nutrients. If you include them in their lunch, serve bite-size portions.
2. Involve children in meal preparation. This not only empowers children and promotes a feeling of responsibility, but also makes your child more likely to eat the lunch. Keep the pantry stocked with healthy staples and post a list of ideas on the refrigerator from which kids can choose. You can designate part of your kitchen as the lunch-packing station where the entire family can get the meal ready for the next day. 3. Give kids a choice. When preparing lunch, ask your child which healthy option they would prefer — such as a banana or strawberries. By giving them a choice, they learn how to compromise and hone their decisionmaking skills. 4. Mix-and-match. Using the five food groups as a guide, toss in whole grain crackers with peanut butter, cut-up veggies with hummus, Greek yogurt with berries, or a slice of cheese on top of whole grain bread. The goal is to have variety, color, and to include three to five of the food groups at each meal. 5. Make good nutrition fun. Get creative with healthy foods. Use cookie cutters to make fun shapes out of sandwiches, cheese, or deli meats. Using a bento box can help you create an appealing, colorful lunch and keep the food items separated, which is often important to kids. Consider having a theme lunch, such as a pirate meal. 6. Nix juice and soda. As much as kids love drinking soda and juice, water is the best drink for them. Fat-free or one-percent milk is also a good option because it’s packed with calcium and vitamin D. Let your child pick out their favorite water bottle and throw in frozen fruit if they complain water is too boring. Using these tips, you and your family are off to a healthy and fun start to the school year.

ocal residents Sophia Kazmierowicz and Samantha Brandenburg were among the 26 recipients of 2017 Don Diego Scholarships, aiding them in their pursuit of higher education. A total of $63,500 was divided among the winners, with individual scholarships ranging from $1,000 to $10,000. Scholarships were open to students around the county who participated in the San Diego County Fair or other activities associated with the Del Mar Fairgrounds, awarded in four categories: 4-H, FFA, Exhibitor/ Participant, and Employee. Two Vocational/Technical scholarships and 10 Junior Livestock Auction scholarships were also awarded. Sophia received a $2,500 scholarship in the Exhibitor/Participant category and Samantha received a $1,500 scholarship in the 4-H category. The top recipient was Sarah Drown of Ramona, who received a $5,000 FFA
award as well as the coveted $5,000 Spanjian Family Scholarship. The selection committee received dozens of applications this year and after rigorous interviews with the finalists, the winners emerged. “Speaking on behalf of the entire Don Diego Board, we congratulate these incredible young women and men,” said Don Diego Scholarship Foundation Board Chair Jon Liss. “They have demonstrated a strong drive to excel. We are delighted to provide a supportive vehicle for their success and eagerly look forward to their future attainments in college and career.” The Don Diego Scholarship Foundation was named for Don Diego, also known as Tom Hernandez, who served as the San Diego County Fair’s welcoming goodwill ambassador from 1947 to 1984. Passionate VOLUNTEER John Vinson Helps Foster the Educational Development of San Diego’s Kids by MICHELLE TREMBLAY | photo by Soul of Photography
J
ohn Vinson is a San Diego native. He grew up in Del Mar, where both his parents worked as teachers in the local schools, and he graduated from San Diego State University. After college, John became a Naval Aviator for the United States Navy. “My family and I were stationed around the world, from Guam to Spain to Germany, but never had orders back home until 1997,” recalled John. It was then that John and his family settled into their “dream home” in Solana Beach – a home in which they still live today. “We bought our Solana Beach home in 1999 and designed the home we wish to never leave,” shared John. “Having lived across the U.S. and literally around the world, Solana Beach is where we are happy.” Shortly after settling in San Diego, John made the decision to retire from the Navy and started working in the Defense Department and intel communities providing multilevel security communication – an area he has now worked in for the past 17 years. Around this same time, John was introduced to the nonprofit group Casa de Amistad, Centro de Enseñanza, translated in English to mean: House of Friendship, Center for Learning. “The Hispanic pastor of Solana Beach Presbyterian Church asked some of us from the church community to help a few second and third graders with their homework,” shared John. “Their parents were not proficient in English, so 12 volunteers stepped in to help.” Today, John and his fellow volunteers at Casa de Amistad dedicate themselves to fostering the education and character development of
underserved children, teens, and their families in coastal North County San Diego. “The cornerstone of Casa de Amistad is its Study Companions Program,” explained John. “Study Companions is an educational mentoring program designed to improve the academic achievement of children in grades K-12.” The group also has preschool, summer enrichment, and STEM programs. Recently, an anonymous donor has provided funds for a college scholarship program as well. “2017 was our second year to grant scholarships and laptop computers,” noted John. “Twelve high school graduates are now well on their way to becoming young professionals.” Since John started with Casa de Amistad, the number of volunteers has grown from 12 to over 100, currently tutoring over 240 students. But, despite the growth in volunteers, help is always needed. “Ask to help, and Casa can team you up with the right student,” said John. “We always need high school math, science, and English experts, but our elementary students need help as well.” John noted that the group’s annual fundraiser will be in April, but donations can be given at any time. “As with every organization, funding is a top priority and with Casa, budget planning is a key to success,” stated John. “Relying on a steady source of income increases our ability to plan and to budget the
yearly events – the larger the budget, the greater number of programs can be offered.” A “wish” John has for the organization would be for the local community to commit to a sustained annual donation to help continue the growing programs for the students and their families. “Casa de Amistad has grown from serving just a handful of students to more than 240 with the help of 200 volunteers,” shared John. “To be able to have a positive impact on the lives of so many wonderful and loving people is a real blessing.”

New Dance Studio Coming to Carmel Valley
Inaugural Robert Baizer Scholarship
Royal Academy of Performing Arts (RAPA) and Del Mar Ballet have merged to create one new entity: Pacific Arts Dance Center. Both centers were located on Sorrento Valley Rd. for the past three years, but after a recent zoning issue, both were forced to close the doors at their respective locations. With an attitude of integrity and a love for the art of dance, the new studio will open to the Carmel Valley community in the fall. Pacific Arts Dance Center will offer classes in a variety of styles including ballet, hip-hop, and jazz, and will also offer special classes for adults and children. The School for Entrepreneurship and Technology (SET) awarded its first Robert Baizer Scholarship to recent SET graduate Lucas Weed. Lucas was heavily involved with SET’s First Tech Challenge robotics program during his time at the school and was also an active leader at his church. He will be attending the University of Alabama in Huntsville in the fall to pursue a degree in mechanical engineering, with the ultimate goal of working at SpaceX. Established in 2017, the Robert Baizer Scholarship Fund was named after Del Mar resident and SET’s first board chair Robert Baizer. The scholarship provides a one-time award of $2,000 to a graduating student who best exemplifies the school’s academic, ethical, community service, and leadership principles. It is the highest student achievement at SET.

L
ong-time Solana Beach resident Patty Maysent has earned many titles during her lifetime, from bronze medalist at the Pan American Games to the first female CEO at University of California San Diego Health. Her most recent title – Cool Woman of 2017 – was a recognition given to her by Girl Scouts San Diego. As one of the 10 women named by the Girl Scouts, Patty acknowledged the role of the organization in her work today. “What I love about the Girl Scouts is the Girl Scout Law,” Patty shared. “It embodies the qualities and traits that we want to cultivate in our hospitals.” She also touched on the importance of women in her career field. “Women are having a big impact in healthcare today, and we bring a unique perspective to the work,” Patty said. Patty began working at UC San Diego Health in 2012 and was named CEO in 2016. “What I enjoy most about my job is working with people whose primary drive and passion is healing and caring for others,” she said. In her role as CEO, she is committed to making high-quality healthcare more accessible. Last fall, under her leadership, she helped open the Jacobs Medical Center, a day she acknowledged as “the best day in my professional career.” Patty has thrived in leadership roles since her college days, when she was the captain of the Stanford women’s swim team that won the 1983 NCAA National Championship. The skills Patty learned as an athlete – working with others, working through challenges, building teams, inspiring others, and remaining committed – continue to inform her leadership today. Today, Patty is also an integral part of her community. “I love living in a community that feels like a real community where you can build long-term relationships with those around you,” she shared. She also serves on the board of directors and executive committee of the Boys & Girls Club of San Dieguito. As much as Patty may be an inspiration to others, she is equally touched by her fellow Cool Women of 2017. Patty shared, “I was inspired by all of the women who were recognized as gogetters, innovators, risk takers, and leaders.” For the young women looking to women leaders in the community, Patty offered, “Stay focused on the things you love and keep moving forward.” ¢

n celebration of the Breeders’ Cup Thoroughbred horse racing World Championships coming to Del Mar for the first time on Nov. 3 and 4, the 2017 Breeders’ Cup Host Committee has debuted a special “Art of the Horse” campaign. The committee has commissioned local artists to design 20 life-sized fiberglass horse statues to be displayed at various locations throughout Del Mar and surrounding communities. The statues are artistic representations of the original Torrie Horse created by Giovanni de Bologna in Florence in the late 1580s, which is also reproduced in bronze as the coveted Breeders’ Cup trophy awarded to the winners of each World Championship race. Each statue is unique, inspired by the Thoroughbred racing community, local San Diego culture, and the Breeders’ Cup itself. The statues will be auctioned off following the 2017 Breeders’ Cup to benefit local and Thoroughbred charities. Several of the statues are displayed at the Del Mar Racetrack and Del Mar Plaza. GDP growth was only 0.7% for the first quarter which is very low but it looks as though the growth should pick back up averaging around 2.3% for the remainder of this year. In April the unemployment rate was the lowest it has been since 2001 at 4.4%. Mortgage rates reached 4.3% for a 30-year fixed mortgage in March. This is the highest it has been in a while. The rates have declined since then but are still hovering at 4%. The interest rates are likely to increase back up to the 4.3% by the fourth quarter. Finally, it was predicted that home sales would suffer a small setback in 2017. That doesn’t seem to be the case. Existing home sales in March were the
highest since 2007. New home sales also outperformed expectations. Data from recent sales has now been revised to forecast a slight increase in home sales in 2017. We feel that with the research and data collected by Freddie Mac this could very well

he 38th Annual Fiesta Del Sol, hosted by the Solana Beach Chamber of Commerce, was another great success this year. At least 50,000 people experienced the two-day summer kickoff festival at Fletcher Cove and Cedros Design District. Attendees enjoyed live music, games, rides, a climbing wall, arts and crafts, shopping, food, a beer and wine garden, and lots of community fun. “The weather was ideal and we were so happy to launch summer the Fiesta Del Sol way!” said Solana Beach Chamber of Commerce member Mac Williamson.
