I was about to write how we seem to have side stepped all the predictions of a super cold Winter and then I woke to the excited squeals of the children as they opened their curtains to reveal a layer - if somewhat sparse - of snow! As we were short of a cover it also presented an opportunity to take a wintery photo of Rugby Road. On the subject of covers please free to send in your local photos. We would love to feature some of them as our cover shots. So what will you find in this month’s Directory to read? At least a few items of interest, we hope. We have news of the Varndean School Show which promises to be entertaining, as well as an interview with our Blakers Park ranger. Maybe a little late but not much, we also bring you a New Year fitness article written by a local personal trainer. How long have you been a park ranger? I have been a Ranger with Brighton & Hove City Council for over six years now and am the Ranger for a number of parks and open spaces in our city, including Preston Park and The Rock Garden, Blakers Park and Hollingbury and Burstead Woods. What is the best part of your job? Working alongside the many enthusiastic volunteers, who help us care for the amazing open spaces we are so fortunate to all be able to enjoy. It really is so fantastic to meet people who are so passionate about caring for their local areas and work so hard to bring their communities together in support of them. What sort of problems do you face? There is, of course, unfortunately an element of anti-social behaviour that can occur in our parks. This can range from vandalism and graffiti to a problem with people not clearing up after their dogs. However, it does seem that these issues are caused by the minority. The vast majority of people value their open spaces very highly. Is there much work to be done at this time of the year? Absolutely, there is a lot to be done. Winter is the time we tend to concentrate on woodland and scrub management on many of our sites whilst plant and animal species are dormant. Right now I am being kept busy looking after 300 sheep grazing over at Beacon Hill.

Fiveways Gardens... Welcome to the February edition 2015 If your garden is looking bleak and has been for the past few months, it’s worth thinking about sorting this out for next year. A carefully chosen plant grown for winter interest, such as a Sarcococca, Daphne or Viburnum, and some bulbs will make a big difference. Recently I drove half a dozen of these plants to a client’s garden and the floral perfume that filled my car was quite delightful. In a small front garden, one planted close to the gate or front door will cheer you for several months. These plants are generally slower growing than others and harder to propagate, so a decent size one will set you back around £30 or more, but, if chosen and planted well, it should give you years of joy. Another fab plant to consider but which needs a large container of ericaceous soil (available anywhere that sells compost) is witch hazel, or Hamamelis. Available in shades of red, orange and yellow, they look particularly good grown against a dark green hedge, but in truth are star performers on any sunny patio. Many varieties have wonderful scent too, a real bonus on a warm day, when you might be outside clutching a hot mug of coffee musing on what to do. Most witch hazels are naturally large shrubs, so they’ll need a very generous container and lots of space. Or search around for a dwarf form. Late summer and autumn flowering Clematis can be cut back to about a foot or 30cm above the ground. If this sounds a bit drastic, cut less off, but beware the scrappy, woody, bare stems that result from not hard-pruning this sort of climber. If you have tender plants like Melianthus major, do consider fleecing them to protect them from hard frosts and snow. Alternatively, wait till the worst of the winter weather is over and cut them back as hard as you like, and they’ll re-shoot in early summer.
Eranthis hyemalis Finally, before everything starts into growth, it’s worth getting any plant supports, fence or trellis that’s suffered in the windy weather fixed or replaced. Also, plan ahead for some warmer March and April days, when sheds etc can be re-painted. There are some great colours available these days, so why not go for something different this year? Gary Mepsted on the quality of writing in books…
What is more important in a book... the writing or the plot? Over the past few weeks I’ve unaccountably found myself embroiled in the same debate and, given the circumstances of writing my usual piece for the magazine - I’m stuck in London away from my precious books - I thought I’d use it as the basis for my article. The question is simple enough: when reading a novel or, indeed, any book, what counts most, the story or the words in which the story is written? Can a good plot compensate for sloppy prose? Ideally, of course, the reader should enjoy both, but if my own reading experience is anything to go by this is rarely the case. Good writing seems in woefully short supply, good stories much less so. One thing I learned, and it came as something of a shock, is that when I was engaged in a great deal more book reviewing than I am at present, and my reading schedule was extremely punishing - and I was having to read books that I would have ordinarily given a very wide berth - it was the quality of the writing that got me through and rendered the experience of reading a book devoted to, say, the history of boxing, a much more pleasurable experience than I would have initially assumed. Lucid, persuasive, elegant and intelligent writing will always win out for me over a fiendishly clever, tourniquet-tight plot. The story outlines of any of Dan Brown’s novels, and even EL James’s “Fifty Shades” trilogy, sound more than promising on paper. However, the reality is, I would argue, a very different story. Yes, I know it’s like shoot-

ing fish in a barrel taking a pop at these authors, but their execrable prose - not to mention the tissue-thin characters, and a total lack of understanding re human psychology - means that I find their novels are unreadable. Statistics, I realise, are not on my side. The sales figures for these authors are astronomical, a powerful indication, surely, that plot and/or sex is more important than being able to craft a half-decent, cliché-free sentence. Is it true, we get the literature we deserve - or at least at the more popular end of the market? Publishing is now more about shifting units than offering a quality product. Shouldn’t we, as readers, be more discerning and demanding when it comes to the words we consume? Does the fast food culture have to apply to literature as well? I’d be extremely interested to hear your views on this subject. ROYAL PAVILION The Great Kitchen was one of the first areas of the Royal Pavilion to be completed in 1816 as part of John Nash’s reconstruction. It was also one of the most advanced kitchens of its day and contains some very interesting objects. Perhaps the first thing you notice is the huge number of pots, pans, jelly moulds and other utensils which line the walls. The copperware, or batterie de cuisine, in the Great Kitchen is one collection which sticks in the mind. The collection is so well loved it is always on view in the Great Kitchen. Yet most of it is in fact not original to the Royal Pavilion. Many of the items were formerly used in the kitchen of the Duke of Wellington’s London residence, Apsley House, now the Wellington Museum. They are on loan from the Trustees of the Museum of London. The Great Kitchen was a masterpiece in modern engineering, featuring a smoke jack, a device with a rotary vane in the chimney which was turned by the hot air rising from the fire, which then turned the spit. It also featured the latest in steam heating technology with a steam-heated table supplied by William Slark of London, a constant supply of water pumped from a nearby well into the Royal Pavilion’s own water tower, and an impressive ventilation and illumination system of 12 high windows. The Great Kitchen, like so many other rooms in the Royal Pavilion, was not without its own ‘taste of the Orient’. Four cast-iron columns, ornamented with painted copper palm leaves, support the ceiling.

A book on local food from a Brighton chef…
A Mule Across The Water Real Food in Sussex and Normandy by Rob Silverstone This book will appeal to foodies. It is not a restaurant guide, more a directory of 70 authentic local producers such as wine makers, cheese makers and farmers’ markets. The author, Rob Silverstone, is a Brighton chef who has worked in the Michelin-star kitchen of Michel Guérard, one of the founders of “nouvelle cuisine”. He is keen on healthy eating, has lectured in food and nutrition at two universities and has run his own restaurants, “The Cook & Fiddle” under the Arches on Brighton beach, and “Le Moulin de Mule” in Rouen. The gothic architecture of old Rouen inspired an interest in black and white photography and exhibitions have followed at Brighton Museum and Le Musée Maritime on the Seine. His latest book, “A Mule Across The Water”, follows “A Mule in Brighton” and “A Mule in Rouen”. The first part of the book is full of amusing tales of Rob’s adventures on both sides of the Channel, often food-related, and his musings on life. He is a keen cyclist and has explored each region by bike. This is how Rob describes the Co-op on the Lewes Road: “I love the Co-op on the Lewes Road. One size up from those corner Co-ops sparsely stocked with spam and marrow fat peas, this shop has everything you ever need beyond goose liver and asses’ milk. There’s an honest simplicity about the place: three aisles, staff that never leave and no-nonsense labelling: ‘These eggs come from caged hens.’ Recently they’ve introduced Co-op radio,
The next section of the book has 60 black and white photographs, including many images of Brighton. There follows a list of quality local food producers as well as Sussex food markets. The final section contains 30 recipes based on local produce. The London Road Station Partnership, a community garden group who have transformed a barren wasteland into two abundant plots either side of the station, have contributed a delicious-sounding recipe for “Tomato tartlets with frisée lettuce and walnut salad”. They make this recipe at the end of September to use up their final harvest of tomatoes along with the frisée lettuces which thrive on their chalky soil. Other recipes include Sussex Plum Pudding and Leg of South Downs Lamb Cooked in Hay. “A Mule Across The Water” is published by Pegasus and is on sale at Waterstones, “Sunshine Books, Art & Coffee” in Hove Street, Transmanche Ferries and Amazon.

Chocolate Rose Cupcakes Chocolate, rose petals and hearts…the perfect cupcake for a Valentine’s Day treat!
Ingredients: 40g cocoa powder ½ teaspoon coffee powder 4 tablespoons boiling water 3 eggs 175g baking margarine 175g caster sugar 115g self-raising flour Icing Ingredients: 115g salted butter - room temperature 230g icing sugar, sieved 1 teaspoon rose water Approx 2 tablespoons milk Pink food colouring, optional Dried rose petals Chocolate hearts

Method: •
Line a 12-hole muffin tin with paper muffin cake cases.

Preheat the oven to 200C (180C fan oven).
•
Sift the cocoa powder into a bowl, adding the coffee granules and boiling water; mix into a thick paste.
•
Add the rest of the ingredients and whisk until you have a smooth batter.
•
Divide the mixture between the 12 cake cases and bake for approximately 10 minutes or until a skewer inserted into the cakes comes out clean. Cool on a wire cake rack.
•
To make the icing, place the butter in a bowl and whisk until pale and creamy; add the rose water. Slowly whisk in the icing sugar with one tablespoon of milk, gradually adding a bit more if needed to make a spreadable or piping consistency. Mix in a tiny amount of pink colouring if you want a pink icing.

Spread the icing onto the cake with a knife or use a piping bag and nozzle. (I used a Wilton 1M piping nozzle.)
•
Sprinkle with dried rose petals and top the icing with a chocolate heart (available from the baking section in supermarkets).
Rose water/essence has a lovely floral flavour but make sure you don’t put in too much or you can end up with a soapy flavour! Of course these cakes can be decorated in different ways; if you don’t like rose flavour you can use the same amount of vanilla essence and instead of dried rose petals you could use some pink sprinkles. Make a difference to a young person’s life Brighton & Hove Supported Lodgings is looking for individuals or families to provide lodgings and support for vulnerable young people aged 16 to 21. All you need is a spare room and some free time to offer advice and support in your own home. Could you support a young person who is at risk of becoming homeless? This is a new project, run by Barnardo’s but where YOU make the difference. The young people will need help with basic skills such as budgeting, cooking and shopping. They may also need help in gaining personal or social skills, training or employment. Every young person will also have the support of a key worker to assist them to achieve their full potential and move forward. A host can make a huge difference to the life of a vulnerable young person. As a host you will benefit from 24/7 assistance and a dedicated key worker. Barnardo’s staff will need to carry out a thorough assessment, DBS (criminal record) and reference checks. Successful hosts then access a comprehensive training programme, as well as receiving an allowance of £150 per week for providing

You can make a significant difference to your fitness in just a few weeks. So, when it feels hard, remind yourself that the first few weeks are the toughest it gets easier, so hang on in there!

If you don’t know how to start, find a good personal trainer to help kick-start your fitness and establish an effective routine. Enlist friends or family to join you or find a group. It is a fact that people who exercise together are more likely to succeed than those who go it alone. Don’t try too much too soon. If you make it an ordeal, you won’t want to repeat it. Start small and build up slowly. Getting fit requires effort, so prepare yourself mentally. But you’ll feel great when you’ve worked hard.
So, to strengthen your resolve, here’s a reminder why you should stick at it. Exercise can help you lose weight, become strong and leaner, improve your sleep, enhance your mood, improve your confidence, help your concentration and energise you. It can significantly reduce the risk of developing serious health conditions including diabetes, heart disease and stroke. Need I go on...? Finally, remember exercise and fitness can be enjoyable. It doesn’t have to be about blood, sweat and tears! You might just open up a whole new world of FUN, so stick at it - this time you can make it happen.
