So no snow yet this winter so far…well at the time of writing anyway, which happens to be mid-January. Before winter started there was talk in the press of it being the coldest winter for many a long year, but so far we have been spared it seems. So what will you find in this month’s Poets Pages to read? At least a few items of interest, we hope. We have an update regarding the Stoneham Bakehouse and the progress of this project, and we also have the first in a series of gardening articles aimed specifically at Poets’ Corner-style gardens. And there is more, so read on… Here are some February dates to be aware of: 14th Valentine’s Day, 17th Shrove Tuesday, and not forgetting the Chinese New Year on the 19th!! Also congratulations are due to the winners of our Christmas competitions. The winner of the Cinderella competition in December’s edition was Karen Willbridge and the winner of the Holiday on Ice competition was Michelle Vogel. 2015 is shaping up to be an exciting one for Stoneham Bakehouse, with much having happened in the last few months and many new developments launching this month. After a successful first market stall at Stoneham Park’s Christmas Market, we started baking on a Saturday morning using the oven at Pizzaface in Coleridge Street. The very kind people at Pizzaface continue to lend us their oven every other Saturday morning, allowing us to produce a batch of bread to sell to the local community. We’ve started selling the bread at the fabulous commu-

nity café, the Hive, between 12 and 1pm on alternate Saturdays. As we are conscious not to create unnecessary food waste, we’ll be baking to order, with bread being picked up and paid for at the Hive Café in Stoneham Park. If you’re interested in buying bread from us then we’ll have an order form in the Hive, or you can email orders to us on orders@stonehambakehouse.org.uk. We’ll be baking pain de campagne (sourdough), seeded malthouse and light rye loaves every time, with the occasional special loaf supplementing our offer. The first bake in February will be on the 7th February, with bakes being fortnightly from that point. The community aspect of the bakehouse also continues to develop through a project with Hove Junior School. With funding help from the local NHS Clinical Commissioning Group, we have created a series of workshops that will use breadmaking to support wellbeing amongst pupils and staff alike. We have also submitted a bid for local funding to enable us to provide bread and healthy food workshops to local nurseries and playgroups. Our journey towards a permanent home on Stoneham Road continues, with the process of drawing up plans and submitting proposals happening in the next month or so. We already have a great group of baking volunteers, but as we grow we will undoubtedly need a larger pool of people to call upon. If you’re interested in joining us in any way - as a baker, or you have other skills to offer, or even just want to be kept in the loop - then you can do so by popping in to the Hive when we’re selling bread. Food Review - Curry Mahal The downside to returning home from living in Australia is, without wanting to state the obvious, the alarmingly cold weather. The upside is indulging in all those things the English do so well: sarcasm, orderly queueing, a cuppa to remedy any situation and the beloved curry, our national dish. Having been seriously deprived of the latter for many months, it was with hungry anticipation that I entered the cosiness of Curry Mahal on a particularly icy Sunday night. As a long-established, family-owned restaurant on Portland Road, Curry Mahal is perhaps somewhere you’re already familiar with? Maybe you’re a regular, with failsafe menu favourites? For me, a newcomer, the ordering process involved deliberation; as a vegetarian, identifying suitable dishes can be a disheartening and lengthy chore, but at Curry Mahal my choices were endless. The patient waiter gave me some space to ponder the options, all the while keeping me topped up with moreish Indian snacks and a very decent house white wine, while my carnivorous companion decided on Lamb Satkora from the Unique Dishes section. It’s worth noting, for the

adventurous amongst you, that many of these creations feature some surprising ingredients (the Grand Marnier present in the Komlapuriya Chicken is especially intriguing) and are exclusive to Curry Mahal, perfected over many years by the head chef. The restaurant prides itself on using only the freshest and finest ingredients, in everything from Grade A chicken to mouth-watering authentic spices. The result? Tasty, filling curries, cooked just the way us Brits love them. WE LOVED: •

The first in a new series of articles just for Poets’ Pages on gardening for small spaces…

Poets Gardens and Patios – February

Whether you have a large garden or a small patio space, containers and pots are ideal for creating plant habitats; from the Mediterranean gravelly soils required for many herbs such as rosemary and thyme, and flowers such as carnations and lavender, to the acidic soils essential to grow small shrubs such as dwarf rhododendrons - ensure they are watered with rainwater as tap water is too calcified. It is a good idea to install a water butt if you can. Now is the time to plan your space. Think about recycling old sinks, buckets, crates, toys, shoes; be imaginative - group together, the plants being the stars, they will look great. Oil, clean and sharpen garden tools if you haven’t already. Create height against walls by fixing trellis or wire to form a framework for climbers. You can attach specially adapted pots to the walls, and hanging baskets also add height. Make your space edible and organic. Many vegetables can be grown in small containers. Tomatoes such as Cherry Falls or Tumbling Tom varieties can be grown in hanging baskets and rhubarb can be grown in containers 50cm deep and wide with drainage holes. Fill with a soil-based compost such as John Innes No 3 and add in extra organic matter. Rhubarb can be planted now, but if you want to plant your tomatoes keep them indoors until any chance of frost has gone. Order seeds now for container planting in spring, for example lettuce, such as ‘Salad Bowl Mixed’, carrots, globe artichoke, mint, runner beans; flower seeds such as sweet peas, begonias, Busy Lizzies, and don’t forget the lovely flowers on chives. Start them indoors, or in a heated propagator, until any chance of frost is gone. Finally, don’t forget to feed and provide water for the birds; they will be invaluable garden friends when the pests start to appear as the weather warms up. Also leave broken ceramic pots and stones close by as they create the perfect habitat for beneficial insects, toads

and frogs. To attract the bees, choose flowers with open petals and plenty of scent and try to select a variety of plants that flower at different times of the year. Flowering now are Euphorbia, Hellebore, Crocus, snowdrop, ivy and winter flowering jasmine, to name but a few. I hope I have inspired you to brighten up your outdoor spaces - however small. Indian vegetarian cooking in the heart of Poets’ Corner

The Masala Tin My cooking comes from the Gujerati tradition which differs from the food provided by the majority of Indian restaurants. My passion for cooking comes from my childhood, watching and helping my mum and grandmother prepare our meals. As I got older, I developed my own recipes for the dishes that I grew up with...particular favourites being bhel puri, dhokra and tadka dhal. After moving to Hove from London in 2006, I did occasional catering for parties and events (as well as my teaching day job). Then in 2013, I started six week cookery courses at St Richard’s Community Centre. I call them “The Masala Tin” because most Indian homes have one, a round steel tin containing seven small pots, each filled with the spices needed for almost any Indian dish. Each week we’d cook two or three dishes - street food, starters, curries, breads and dips - to take home. On the final week, we’d prepare and share a celebratory meal together. These courses proved very popular; I loved teaching them, seeing people so pleased and

excited about creating dishes they previously considered culinary mysteries. However, I really wanted a venue closer to home. When Yoong, from Stoneham Road’s Hungry Monkey, offered her shop, this was ideal! It’s the perfect space for teaching, preparation and cooking. As well as running six week courses here, I introduced Saturday workshops for people who couldn’t commit to six weeks. These have proved a real success. Workshops start at 10am with an introduction to and explanation of basic Indian spices and spice combinations. I demonstrate the dishes - a starter, a curry, Indian bread, dipping sauces and a dessert - before participants begin cooking. We then clear up, set the table and sit down to enjoy the feast! Everyone goes home with full tummies and a starter spices pack. I provide all the ingredients and I give participants a recipe folder as well as their own masala tin. Most importantly, as well as creating delicious food, everyone has a great time. New Year’s resolutions over…or ARE they? So your booze/sugar/naughtiness-free month is over and you may be feeling lighter, more energetic, clear-headed and generally healthier. Well done! But why stop now? Stretch your New Year’s resolutions into the dark winter months by making these clever, simple changes: Drink a pint of warm water and freshly squeezed lemon juice first thing on waking – great for encouraging elimination and feeling clean from the inside out. Load up on omega-rich foods for plump, glowing skin and a great boost of energy: add a tablespoon or two of chia seeds to your breakfast porridge, smoothie, juice or soup; eat oily fish 3 times a week and have a handful of kale/spinach/broccoli at least once a day. Every day.

Keep your weight in check by eating little and often through the day – don’t leave longer than 3 hours between meals, but keep these small. Boost immunity by keeping your digestion smooth: take a good-quality probiotic every day (see which supplements I recommend on my website below) or eat a bowl of plain organic live yogurt every morning (if you tolerate dairy). Brighton Pavilion - A Truly Great Kitchen The Great Kitchen was one of the first areas of the Royal Pavilion to be completed in 1816 as part of John Nash’s reconstruction. It was also one of the most advanced kitchens of its day and contains some very interesting objects. Perhaps the first thing you notice is the huge number of pots, pans, jelly moulds and other utensils which line the walls. The copperware, or batterie de cuisine, in the Great Kitchen is one collection which sticks in the mind. The collection is so well loved it is always on view in the Great Kitchen. Yet most of it is in fact not original to the Royal Pavilion. Many of the items were formerly used in the kitchen of the Duke of Wellington’s London residence, Apsley House, now the Wellington Museum. They are on loan from the Trustees of the Museum of London. The Great Kitchen was a masterpiece in modern engineering, featuring a smoke jack, a device with a rotary vane in the chimney which was turned by the hot air rising from the fire, which then turned the spit. It also featured the latest in steam heating technology with a steam-heated table supplied by William Slark of London, a constant supply of water pumped from a nearby well into the Royal Pavilion’s own water tower, and an impressive ventilation and illumination system of 12 high windows. The Great Kitchen, like so many other rooms in the Royal Pavilion, was not without its own ‘taste of the Orient’. Four cast-iron columns, ornamented with painted copper palm leaves, support the ceiling. A kitchen so close to the Banqueting Room was unusual for the day. It gave George IV the opportunity to impress his guests with his new facilities and he often escorted his guests around the Great Kitchen as part of his tour of the state apartments. The Great Kitchen is a favourite of designer Laurence Llewelyn-Bowen who claimed that ‘one of the first show kitchens was also the showiest of kitchens’. ed nd Fou
