Welcome to the February edition of Queens Park Living!

So no snow yet this winter so far…well at the time of writing anyway, which happens to be mid-January. Before winter started there was talk in the press of it being the coldest winter for many a long year, but so far we have been spared it seems. So what will you find in this month’s directory to read? We have the next in the series of articles written by Caan Wells from Brighton Pavilion, as well as a new column written specifically for dog owners, as we figured there are quite a lot of you living around the park. Furry Fitness Challenge New Year often means a ton of health resolutions for us humans, but with more dogs than ever being diagnosed as obese why not try a fitness programme for the whole family. Studies by the PDSA have seen the percentage of overweight dogs in the UK rise in four years from 21% to 35% - that’s over one in three dogs. Carrying too much weight can cause serious health problems in dogs including joint problems, diabetes, heart disease and ultimately – a shorter life span. When I rescued my boxer Harvey he was seven kilos overweight. It took a while for him to lose the excess baggage and sadly that now means at age 10 he suffers with increasingly severe arthritis. Walks, stairs and smooth floors are getting more difficult for him and we have to be ever more vigilant with his food. Whilst dogs naturally slow down with age, there’s plenty we can do as responsible pet owners to help our furry friends stay healthier for longer. The tell-tale signs of an overweight dog: (Remember some breeds will have a much more pronounced shape than others.) 1. Rib check: You should easily be able to feel, but not see, each of your dog’s ribs. 2. Hourglass check from above: Your dog should have a distinct ‘hourglass’ shape with a noticeable inward curve at their belly. 3. Abdominal ‘suck’ from the side: You should be able to clearly see an upward curve at the belly. Again this does vary from breed to breed but if your dog’s chest is the same size as its belly it is likely to be overweight.

A Truly Great Kitchen The Great Kitchen was one of the first areas of the Royal Pavilion to be completed in 1816 as part of John Nash’s reconstruction. It was also one of the most advanced kitchens of its day and contains some very interesting objects. Perhaps the first thing you notice is the huge number of pots, pans, jelly moulds and other utensils which line the walls and fill the cupboards. The copperware, or batterie de cuisine, in the Great Kitchen is one collection which sticks in the mind. Often it is the thing most remembered by our visitors. The collection is so well loved it is always on view in the Great Kitchen. Yet most of this unusually large collection of some 550 pieces is in fact not original to the Royal Pavilion. Many of the items in this collection were formerly used in the kitchen of the Duke of Wellington’s London residence, Apsley House, now the Wellington Museum. They are on loan from the Trustees of the Museum of London. Wellington bought Apsley House (often facetiously known as No 1, London) in 1817 and used it as a London base from which to pursue his new career in politics. Each piece of the collection had its own place on the shelves, the number engraved on it corresponding to the number engraved on the shelf – a system which has been replicated in the Great Kitchen. Each piece also bears the ducal coronet and the letters ‘DWL’ for ‘Duke of Wellington, London’. The Great Kitchen was a masterpiece in modern engineering, featuring a smoke-jack, a device with a rotary vane in the chimney which was turned by the hot air rising from the fire, which then turned the spit. It also featured the latest in steam heating technology with a steam-heated table supplied by William Slark of London, a constant supply of water pumped from a nearby well into the Royal Pavilion’s own water tower, and an impressive ventilation and illumination system of twelve high windows. The Great Kitchen, like so many other rooms in the Royal Pavilion, was not without its own ‘taste of the Orient’. Four cast-iron columns, ornamented with painted copper palm leaves, support the ceiling. To decorate a utilitarian room in this way shows the esteem in which George held it. A kitchen so close to the Banqueting Room was unusual for the day. It gave George IV the opportunity to impress his guests with his new facilities and he often escorted his guests around the Great Kitchen as part of his tour of the state apartments. The Great Kitchen is a favourite of designer Laurence LlewelynBowen who claimed that ‘one of the first show kitchens was also the showiest of kitchens’.

George needed a chef who would appreciate and work well in his modern Great Kitchen. Also someone capable of producing the extravagant and ostentatious banquets that were so fashionable at the time. In 1816 he employed renowned French chef Marie-Antonin Carême, commonly known as the ‘Chef of Kings and King of Chefs’, to work for him at his London home, Carlton House, and at the Royal Pavilion. Carême, who is credited with replacing the practice of service à la française (serving all dishes at once) with service à la russe (serving each dish in the order printed on the menu) was able to create magnificent culinary works of art that amused George’s guests and stimulated conversation. Particularly impressive were his elaborate confectionery pieces that sometimes stood four feet high and up to two feet across. In 1817 Carême created eight confectionery centrepieces for the banquet held in the Royal Pavilion to honour Grand Duke Nicholas of Russia. Much like the rest of the Royal Pavilion, the Great Kitchen has an intriguing history and was even used as an operating theatre when the Royal Pavilion became a hospital for wounded Indian soldiers during the First World War. A great story often told is that George IV granted Brighton’s notorious Martha Gunn free access to the kitchen. After she was noticed to be stealing butter, George, being something of a practical joker, kept the ‘Queen of the Brighton

A book on local food from a Brighton chef…

A Mule Across The Water

Real Food in Sussex and Normandy by Rob Silverstone This book will appeal to foodies. It is not a restaurant guide, more a directory of 70 authentic local producers such as wine makers, cheese makers and farmers’ markets. The author, Rob Silverstone, is a Brighton chef who has worked in the Michelin-star kitchen of Michel Guérard, one of the founders of “nouvelle cuisine”. He is keen on healthy eating, has lectured in food and nutrition at two universities, and has run his own restaurants, “The Cook & Fiddle” under the Arches on Brighton beach, and “Le Moulin de Mule” in Rouen. The gothic architecture of old Rouen inspired an interest in black and white photography and exhibitions have followed at Brighton Museum and Le Musée Maritime on the Seine. His latest book, “A Mule Across The Water”, follows “A Mule in Brighton” and “A Mule in Rouen”. The first part of the book is full of amusing tales of Rob’s adventures on both sides of the Channel, often food-related, and his musings on life. There follows a list of quality local food producers of which Rob has personal experience, for example Brighton Pyrenees Honey, and The Spice Company, who hand-blend their own spices in Sussex. There is also a list of Sussex food markets and a few recommendations of Rob’s favourite restaurants. The final section contains 30 recipes based on local produce, including some vegetarian meals. Riad from the Wild Cherry Deli/Café in Queen’s Park Road has contributed a recipe for Beetroot Polenta, with the beetroot sourced from local allotments.
