It’s hot and blustery, I’ve got the wrong boots on for the walk I’ve given myself after taking the first parking spot I found, and I’ll admit I’m a little bit scared of what lies ahead as I navigate my way down Beattie Street in Balmain to meet the self titled Queen of Cakes: Paris Cutler. Planet Cake, celebrating it’s 10th year in operation, is known the world over for their incredible cakes, wonderful classes, celebrity clientele, and feisty leader. For Paris, there’s no escaping the judgmental eye of the cake decorating community and general public, and didn’t I find that out in the lead up to my interview. In the space of a week I went from being excited about meeting the leader of one of Australia’s most successful cake decorating businesses, to being worried about whether I’d be allowed to use the loo*. *From a scene in the Planet Cake reality TV series, Paris jokes that no one is allowed to eat lunch or use the loo - the entire nation takes it seriously.

In a small bowl, whisk the flour with the salt. Put the sugar in a food processor and process until very fine. Add the pieces of butter and process until the mixture is smooth and creamy. Add the egg, lemon zest and vanilla and process until smooth. Add the flour mixture and pulse just until a dough forms. Transfer the dough to a sheet of plastic wrap and pat it into a disk 1 inch thick. Chill until firm, about 1 1/2 hours. Preheat the oven to 350째. On a lightly floured surface, roll out the dough 1/8 inch thick. Stamp out shapes, cutting the cookies as close together as possible. Transfer the cookies to nonstick or greased baking sheets, leaving 1 inch between them. Bake for 10 to 12 minutes, or until lightly browned around the edges. Transfer the cookies to racks and let cool. The cookies can be stored in an airtight container between sheets of wax paper for 1 month.
Combine all ingredients in the bowl of an electric mixer fitted with the whisk attachment and beat until smooth and lump free. The icing should be able to drip, but not run. If it's too thick, add more water and if it's too runny, add more confectioners sugar. Divide and color, then place in piping bags for decorating. Melt the white chocolate, spread on the cookie and sprinkle crushed candy canes on top. To make the To: and From: on the cookie tags, you'll need small clean rubber stamps found at most stationary or craft stores. Using the black AmeriColor edible markers allows you to apply an even coat of color on the stamp, and you can fill in any imperfections on the cookie later. Place in clear cellophane bags and store in an airtight container until you're ready to wrap up your presents!

nana&nana cakes christmas birdcage All the way from Milan, Italy, this christmas birdcage cake will make a stunning centrepiece for any festive celebrations!
Split and fill your cakes and cover with fondant. Your cake should be twice as high as it is wide (a 6� cake will be 12� high) including the dome. Cover your dome separately to make covering easier.
Attach the dome to the base cake with royal icing.
Attach the cake to a cake board pre-covered with fondant.
Colour the entire cake gold using edible gold spray. Allow to dry.
Mark the cake with a modelling tool to create six equal sections.
On a lightly dusted bench, roll out a Use a scalpel to cut off the excess strip of sugarpaste 50 cm long and around the lace pattern. 7 cm wide . Lightly dust with corn flour and imprint the sugarpaste with lace - use a rolling pin to firmly and evenly imprint the pattern into the sugarpaste.
Use pearl white powder and a soft brush to dust the lace.
Attach the lace to the base of the cage. Create another strip of lace and glue over the seam between the dome and the base.
Using an extruder, create six thick sausages from while sugarpaste long enough to reach from the base to the top of the cage (about 30cm). Adhere to the cake over the marked sections we created earlier to create the cage. Dust with white pearl dust.
To create the top of the cage, create a small slightly flattened dome of sugar paste about 6cm in diameter. Start by rolling a ball of fondant, flatten the base to create the dome then flatten slightly on top. Texture a disk of fondant approximately 2m in diametre using lace, a brooch or a silicone mould. Roll a small ball of fondant to create a bauble. Paint everything with pearl white powder mixed with alcohol.
Cut two disks from thin white sugarpaste approximately 10 cm and 7 cm in diametre, and glue on top of the dome. The sausages making up the cage will create nice wave and movement in the disks.
Layer the pieces on to the cake, starting with the dome, then the patterned disk, and small round bauble. Top with a small ball of fondant painted gold. Finish with a small bow.
Paint the strips with gold pearl dust mixed with alcohol. Add a small handle and twirls at the base of the door . Repeat the steps to create two small windows. Use gum paste to create a green christmas wreath for the door. Roll a fat sausage of green fondant and join the ends to create the wreath. Flatten slightly and add texture with a sponge or crumpled kitchen foil. Cut a rectangle of sugarpaste to create a window in the cage. Use a round cutter give the top of the shape of an arc.
Use an extruder to create 4 very thin sausages from some whilte fondant and one slightly thicker . Equally space and glue the four sausages on the door, and attach the thicker sausage around the outside.
Glue a red bow on the wreath . Cut 3 small holly leaves, create three mini red berries and glue on the door .
Glue the door and the windows on the cage .
Create Mini Pointsettia. Roll out some red gumpaste and cut 1 large, medium and small five point flowers using cutters or a template. Use a veiner to add texture then glue them together turning each flower so that the points don’t overlap. Add gold cashous to the centre of the flowers. Repeat using this method and different sized cutters or templates to create pointsettias in different sizes.
Create white flowers. Roll out some white gumpaste very thin. Cut a large five petal flower and a small blossom. Use a veiner to add texture to the flowers and glue together. Use a toothpick dipped in gold edible food colour to create centres for the white flowers.
Glue the flowers on the cage and finish the cake by adding a red ribbon to the cake board.

less bah humbug, Christmas is a time for friends, family and fun, but arguably, Christmas is the most fun for children. Under the guidance of Cupcaketopia and Bunty's Cakery a collaboration of eighty cake decorators from around the world have come together to Bake A Christmas Wish and help the Make-A-Wish Foundation to continue their work granting the wishes of children with life threatening medical conditions. We have a small selection of the work to share with you, and twelve wishes for all of us this Christmas, and 2014. Our first: less bah humbug, more joy!
