The main aim of this publication is to provide information on baking as well as to point you in the direction of reliable and professional suppliers of cakes and all things related! You will find our directory section to be very helpful if you are an upcoming baker or if you fancy some home-baking! The hot recipes section should be a plus for the latter as well. After all the sweet stuff let us not forget the main purpose of this wonderful event and publication … to educate bright, needy students! cake festival T

he Cake and Desert Festival, the first of its kind in Kenya, is the premier industry event in Nairobi! The hospitality, wedding business, catering, latest cake, dessert, beverage and kitchen equipment ideas are showcased, drawing thousands of visitors. Guests get to sample over 100 different types of cakes and desserts as well as various accompaniments. The main objective of the Cake Festival is to raise awareness and funds in support of the Edumed Trust. In addition to this, it aims to showcase the talent of amateur and professional bakers as well as to educate the public on different kinds of cakes and desserts available through sampling. On 30th May 2009, we opened a new chapter as we hosted the first cake festival ever! An environment of “food galore” was the only way to describe the scene at the Cake Festival, that drew hundreds of visitors. Attendees sampled delectable cakes and desserts from 20 professionals and amarteur chefs, had a go at the cake ”cook off ” and experienced the wonderful world of cake art and more while taking a tour of the Nairobi Safari Walk (KWS). The Cake Festival 2010, saw 35 professional and amateur bakers bringing over 1700 kilos of cake that was enjoyed by over 3,000 guests at the Splash Water world. The “2010 FIFA World Cup” got the bakers on their creative edge with fascinating creations such as stadiums, soccer balls, soccer boots, fans watching a match, all in the form of cake! This was made possible by over fifteen sponsors who contributed greatly to baker’s ingredients and media amongst other efforts. Guests samples over 120 types of cake

A guest enjoys cake at The Cake Festival 2010. and accompaniments such as tea, coffee, chocolate and nuts whilst enjoying DJ music and live band performances. The children were treated to a number of fun activities including swimming, waterslides, face painting, bouncing castles and playstation amongst others. This year, The Cake Festival hopes to attract up to 5,000 guests. The event theme: Dream Wedding Cakes has gotten the bakers on their creative edge and we expect to be blown away by their creations. Interestingly, brides-to-be will judge the theme cakes. The bakers have also promised to give us over 150 varieties to sample this year!

edumed trust E

veryday life is filled with sad stories of desperate children eager to acquire an education in the hope of creating a better future for themselves and their families. The children have the ability and potential to be our next generation’s leader, professionals and specialists in different fields, but lack of funds threatens their dreams. Unfortunately the wasted potentials catch up with our busy lifestyles soon … increased crime and many other social ills. It does not have to be this way, if only someone takes an action, the statistics would change towards a positive direction. Edumed Trust is a registered Kenyan Christian Charitable Trust founded in 1996 with the sole objective of supporting bright students from needy families with scholarships for their Secondary Education. As of December 2010, Edumed Trust had supported a total of 195 students in Kenya at a cost of over KShs. 12 million. The first student beneficiary graduated from the University of Nairobi with a Bachelor of Science (B.Sc) degree in Mathematics on 1st September 2006, and started her career with an international bank based in Kenya. 10 other students are presently in Kenyan public universities while one is on a scholarship to study medicine in the Czech Republic at Charles University-Prague. Many others have joined tertiary institutions to pursue different careers of their choice. As of 2010, five ex-beneficiaries were already supporters

of Edumed. Presently (2011) Edumed is supporting 100 students in different secondary schools in Kenya. Edumed raises funds from individuals (Kenyans) and currently has a database of active partners’, built up over the past 14 years. By giving at least KShs. 500 a month for 10 months, 10 such Kenyans can educate one bright needy student in a boarding public secondary school in Kenya annually. Our Cause Our guiding principles are that we respond practically to the plight of bright and needy students at the critical stage that gives them a chance to equal opportunities in the world. We would wish to put a thousand in school and never have a waiting list, unfortunately we face budgetary constraints. You can help us increase the number kept in secondary school every year.

sat for my KCPE in 2006 and obtained 404 Marks out of the possible 500. My mother had failed to raise school fees for me to join Koelel High School - Gilgil where I had been admitted. I had heard that if you sell a kidney, you could be paid. In my desperation, I started searching for anyone who would buy my kidney. The rare move attracted the attention of the Standard Newspaper and I was featured on February 14, 2007. Thereafter I was connected with Edumed, after my successful application, Edumed sponsored my entire secondary education. I completed Form IV in 2010 and obtained Grade B. I hope to join University in 2012 and now my future appears bright. I thank Edumed for supporting me.”

wedding will never be complete without cutting of a cake. This is a practice that has been carried on since the ancient times. The couple helps each other to cut it signifying that they will have a lifetime commitment. In most cases the bride and groom to be, will be tied on how to pick a good wedding cake. This can be acquired from various shops or a professional caterer. The following features should be considered: • The type of cake: There are different types of cakes which include chocolate, sponge, white and more that one can take. This will depend on the taste or personality of the couple. • Size: The size of the cake will depend on the number of guests invited. This will also dictate the number layers the cake will have. • Shape and style: The cake can be round, square or a heart. It is influenced by the theme and style of the wedding. • Flavouring: What prepares the cake is great concern as it gives the taste of the cake. The fillings should give the cake some durability character that it does not go bad before the ceremony ends. • Colour: It should match the wedding colours and most certainly the cake display. White icing is the commonly used to symbolise purity but other colours are also significant for instance blue for faithfulness. • Decoration: The cake should have attractive decoration with and once again this is influenced by the theme and style of the wedding. • The cost: Your budget will always determine on how to pick a good cake. A wedding cake should handled carefully during preparation and delivery.

equipment • Rolling pin • 9cm fluted cutter • 12-hole bun tin • Eight pieces of aluminum foil • Oven gloves • Cooling rack • Small mixing bowl • Wooden spoon • Sieve • Chopping board • Sharp knife • Teaspoon • Small saucepan • Pastry brush

225g ready-prepared short crust pastry 150g mascarpone cheese ½ teaspoon vanilla extract 2 teaspoon icing sugar 175g strawberries or other fruits 4 teaspoon redcurrant jelly 15ml water

method PREHEAT OVEN to 200 degrees centigrade. Thinly roll out the pastry, then using a 9cm fluted cutter, cut out eight circles. Press the pastry circles into a bun tin. 1. Press a piece of scrunched-up foil into each case. Cook for 10 minutes, remove the foil carefully. Return to the oven for 3-4 minutes. Cool in the tin, then transfer to a cooling rack. 3. To make the filling, place the mascarpone cheese and vanilla extract in a small mixing bowl. Sift over the icing sugar, then beat with wooden spoon until smooth. 4. Place the strawberries on a chopping board. Remove the green stalks from the strawberries. Then use a sharp knife to cut them in half. (quarter them if the strawberries are large) 5. When the pastry cases are completely cool, use a teaspoon to fill them with the mascarpone and vanilla mixture. Arrange the strawberries over the top. 6. Place the redcurrant jelly in a small pan with the water and cook over low heat, stirring with a wooden spoon until the jelly has dissolved. Brush this over the strawberries.

method PREHEAT OVEN to 350 degrees F (175 degrees C). 1. Cream together the butter, white sugar, and brown sugar until smooth. Beat in the eggs one at a time, then stir in the vanilla. Dissolve baking soda in hot water. Add to batter along with salt. Stir in flour, chocolate chips, and nuts. Drop by large spoonfuls onto ungreased pans. 2. Bake for about 10 minutes in the preheated oven, or until edges are nicely browned.

ingredients • 250g (90z) Butter • 275g (100z) 70% cocoa dark (broken into pieces) • 275g (100z) caster sugar • Three large eggs • 1 teaspoon vanilla extract • 225g (80z) plain flour • ½ tablespoon salt

method 1. Preheat oven to 180 degrees centigrade. Grease and line the base of a 23cm square cake tin with baking paper to prevent the brownies from sticking. 2. Melt the butter and chocolate in a medium saucepan over a low heat, stirring occasionally with a wooden spoon. Remove the saucepan from the heat and allow to cool slightly. 3. In a large mixing bowl beat together the sugar, eggs and vanilla extract using an electric or hand whisk. Keep whisking until the mixture is pale and fluffy.

4. Whisk the chocolate mixture into the egg mixture until thoroughly combined, using the electric or hand whisk. Then stir in the flour and salt with a metal spoon. 5. Pour the mixture into the prepared tin and cook for 20-25 minutes in the middle of the oven, until the brownies are just set. The center should be slightly gooey. 6. Leave the cake to cool for ten minutes in the tin. Tip it on to a cooling rack. When it is completely cold, remove the baking paper and cut the brownies into squares.

method PREHEAT OVEN to slow 180 degrees centigrade. Brush a deep, 23cm round cake tin with melted butter or oil, line base and side with paper; grease paper. 1. Using electric beaters, beat butter and sugar in small bowl until light and creamy. Add eggs gradually, beating thoroughly after each addition. Add essences; beat until combined. 2. Transfer mixture to large mixing bowl; add fruit and almonds. Using metal spoon, fold in the sifted flours, cocoa, coffee and soda alternately with combined buttermilk and milk. Stir until just combined and the mixture are almost smooth. 3. Pour mixture evenly into prepared tin; Bake for 40 to 50 minutes until skewer comes out clean when inserted in center of cake. Leave cake in tin for 20 minutes before turning in to a wire rack to cool.

4. To make Chocolate Mock cream: Place chocolate in glass bowl. Stir over barely simmering water until melted; remove from heat. Beat butter in small mixing bowl until light and creamy. Add chocolate, beating 1 minute or until mixture is glossy and smooth. 5. Turn cake up side down. Cut into three layers horizontally. Place first layer on serving plate. Spread cake evenly with half whipped cream, top with half cherries. Continue layering with remaining cake, cream and cherries, ending with cake on top. 6. Spread mock cream over the top and sides, using a flat-bladed knife. Using a piping bag, pipe stars of remaining mixture around cake rim.

Add essence and jam; beat until combined. 2. Transfer mixture to a large mixing bowl. Using a metal spoon, fold in sifted flour, cocoa and soda alternately with milk. Stir until just combined and the mixture is almost smooth. Pour mixture in to tin; smooth surface. Bake 45 minutes or until skewer comes out clean when inserted in center. Leave cake 15 minutes before turning onto wire rack to cool.

3. To make Rich Chocolate Butter cream: Combine the chocolate, butter, sifted icing sugar and cream in a small pan. Stir over low heat until mixture is smooth and glossy. Remove from the heat. Spread Butter Cream over top of cake using a flat-bladed knife.

225g (80z, 2 ½ cups) digestive or sweet meal biscuits 75g (30z, 1/3 cup) butter 450g (1 lb, 2 cups) curd cheese 5ml (1 teaspoon) vanilla essence 3 eggs 225g (80z, 1 cup) caster sugar 225ml (8 fl oz) double cream 450-900g (1-2lb) fresh soft fruits, such as strawberries, redcurrants, raspberries • Oven temperature 180 degrees Celsius (350F, gas mark 4)

method 1. Preheat oven and have ready a 23cm circular cake tin which has a removable base, and has been lightly oiled. 2. Crush the biscuits with to form crumbs. This takes a couple of minutes. 3. Meanwhile, melt the butter and pour onto the crushed biscuits while the beater is still turning. When all the butter has been evenly incorporated, tip the mixture into the cake tin and press down to form a flat surface. 4. Clean the bowl and put in the curd cheese, vanilla essence, eggs and sugar. Beat with the beater for 5 minutes.

5. Add the double cream and mix until smooth. Pour onto the cooled biscuit mixture in the tin, then place in the oven and bake for 30 minutes. 6. Switch of the oven and leave the cheesecake inside to cool very slowly. When cool, wrap in plastic film and refrigerate overnight. At this stage the cheesecake will last up to 2 days. 7. Just before serving unwrap, place creamy side up on a plate and place on top with a mound of fresh fruits, arranged in a haphazard fashion.
