Coffee Rubbed Beef Striploin with Chimmi Churri & Wild Rice Pilaf Ingredients: 1.5 L 250 ml 1.5 L 350 ml 1.5 L 250 ml 3L 6 kg

parsley, fresh Dijon mustard cilantro, raw mint, fresh red wine vinegar garlic, minced olive oil beef striploin

Preparation:

50 ml 250 ml 250 ml 750 ml 750 ml 1.5 L 250 ml 50 ml

black pepper, ground garlic powder smoked paprika Dijon mustard vegetable oil coffee, regular ground thyme, dried salt

Wild Rice Pilaf 50 ml 750 ml 750 ml 750 ml 750 ml 750 ml 6.2 L

garlic minced vegetable oil celery, diced onion, diced carrot, diced cranberries, dried wild rice

1. Prepare Chimmi Churri Sauce: add garlic, parsley, cilantro, mint, dijon, mustard, red wine vinegar and olive oil to a blender or food processor. Blend until smooth. 2. Prepare Striploin & Coffee Rub: combine coffee grounds, garlic powder, smoked paprika, thyme, salt and pepper. Bring striploin to room temperature and brush with mustard. Sprinkle coffee rub onto all portions of the stiploin and let rest for 5-10 minutes. 3. Prepare Rice Pilaf: prepare rice as per manufacturer guidelines. In a medium sied pan, add cooking oil on medium heat. Add diced carrots, onions and celery and sauté until tender. Add garlic and cook for 1-2 minutes. Add in cranberries and sauté for 1-2 minutes. Add in prepared rice pilaf and sauté until rice is to temperature and ingredients are combined.

Ingredients: 70 ml 890 ml 70 ml 14.5 L 890 ml 890 ml 890 ml 890 ml 890 ml 5 ml 5 ml

vegetable oil corn, frozen garlic, minced vegetable broth black beans, canned butternut squash celery, diced carrots, diced onions, diced salt black pepper, ground

Preparation:

1. In a medium sauce pan, add Vegetable Oil. Add Celery, Carrot and Onion and cook until softened. Add Garlic and sauté for one 2. minute. Add remaining vegetables and continue to sauté for 3-5 minutes. Add Broth and simmer for 10-12 minutes (uncovered). 3. Season with Salt and Pepper to taste and serve.

Creamy Pesto Chicken Penne Ingredients: 180 ml 1.5 kg 700 g 700 g 4.25 kg 75 g 5 ml 150 g 375 ml 1.5 L 3 L 350 g 5 kg 25 g

olive oil onions, diced red peppers, diced green peppers, diced chicken breast strips, cooked garlic, minced black pepper, ground sundried tomatoes basil pesto, without pine nuts marinara sauce 2% milk parmesan cheese, grated pasta, penne, dry basil, fresh

Preparation: 1. Combine oil and onions in skillet over high heat. Cook and stir for one minute. 2. Add peppers, garlic and black pepper. Cook for two minutes. 3. Add chicken. Cook for two minutes. 4. Add tomatoes, pesto, sauce, milk and cheese. Reduce heat, stir and simmer for two minutes. 5. Prepare pasta as per package directions. 6. Add pasta to vegetable mixutre. 7. Transfer to bowls. Garnish with basil.
