Message From Sysco’s Nutrition Services Team Older adults, living within Long Term Care or Retirement settings are at increased risk of swallowing difficulties and dysphagia. Both have an impactful influence on individual's overall health & wellbeing, along with quality of life. This resource will focus on dysphagia education, including practical tips to address and manage swallowing difficulties and dysphagia. This resource will focus on topics such as: • • •

Understanding Dysphagia Nutrition in Dysphagia Management The International Dysphagia Diet Standardization Initiative (IDDSI)

UNDERSTANDING DYSPHAGIA What is Dysphagia? The medical term to described difficulty swallowing. May be caused by obstructions, poor motor function, aging & conditions like Dementia, Parkinsons & Stroke 1,2

Mrs. Sara Laroche (103)

The Foyer Richelieu Welland is a non-profit long-term care facility located in Welland, Ontario in the Niagara Peninsula. They are the only bilingual long term care home in Southern Ontario. Recently they celebrated five milestone birthdays and shared some advice from their centenarians. There are plenty of different places to get advice. There are fortune cookies, your quirky older neighbor, inspirational quotes on Pinterest, and your therapist. Some of the best advice comes from those who have simply lived longer than we have. They’ve had more time to make mistakes and learn from them, and watch others make them so they can avoid them altogether. That’s why we talked to some of FRW five centenarians about how to live your best life. Their answers were illuminating.

We asked Mrs. Laroche (103): What is your advice for living a long and healthy life? She replied: “Be happy, don’t be angry. Stay healthy. Don’t be mean, be kind to others and to your loved ones.” We asked two other centenarians: What advice would you give to a 20-year-old? Mrs. Blais answered (100): ‘’Do your best and try to succeed. Be careful because your head can play tricks on you” and Mr. Lapointe (100) said “Take responsibility for your life. Stay busy and learn to take care of things.’’

New figures released by Statistics Canada show that the number of Canadians aged 100 or older has increased from just 1,065 in 1971 to 9,545 in the 2021 census. Most Canadian centenarians (7,715) are women and the oldest living person in Canada, is aged 113 years. Currently about 10% of the residents who live at the FRW are 100 years or older, this is extraordinary. Mr. Paul Lapointe (100) AUGUST 2022 7

Salmon & Pineapple Skewers Serving Size: 2 ea. Yield: 50

Ingredients: 1 5/8 L 750 ml 750 ml 375 ml 375 ml 187 g 25 ml 375 ml 6 kg 6 kg 750 ml

soy sauce rice vinegar brown sugar garlic, minced ginger root, minced green onions, minced crushed red pepper vegetable oil salmon fillet raw, cubed pineapple, fresh, cubed onions, cubed

Preparation:

1. Mix together soy sauce, vinegar and brown sugar until sugar is dissolved. Add garlic, ginger, green onions, crushed pepper and oil 2. Place cubed salmon in marinade and coat completely. Cover and chill in refrigerator for 1-2 hours. Remove salmon from marinade. Bring marinade to boil, then simmer for 10 minutes. 3. Cut pineapple into 1 1/2” chunks and onion into 1” chunks. Thread salmon, pineapple and onion pieces on skewers. 4. Grill and baste with sauce frequently. AUGUST 2022 13
