Chefs in this region created chicken tikka, a classic Punjabi dish, but with a twist: they added heavy amounts of butter both as a key ingredient and a garnish. Pan frying will give it a nice crunch but this can be a great cold which is great for your grab and go section. Pairs well with a butternut squash soup that has been mixed with coconut milk and garnish with cilantro!
