PREPARATION STEPS:

1. Bake the puff pastry sheet at 180ºC for 15 mins, then sprinkle with icing sugar and bake at 250ºC for 5 mins until the top is caramelized. 2. Prepare a creme anglaise - bring milk to boiling point, set aside. Beat yolks with half the sugar until the compost is lighter in colour, add the hot milk and cook the compost au bagne marie until temperature reaches 84ºC. 3. Bring the whipping cream to boiling point. Melt dry the other half of the sugar until it reaches caramel status, deglaze it with the hot whipping cream. 4. Fold the caramel into the creme anglaise and cool it down. Once cold, fold the whipped cream into the caramel base. 5. Pour the compost in a stainless steel tray, 0.60 inches thick, freeze rapidly! 6. Wash and dry the fruit, cutting the greens out of the strawberries, and cut in half. Remove the pit from the cherries and cut in half. Cut the puff pastry into rectangular shapes, about 5x10 cm. 7. Cut a piece of parfait, about 4x8 cm and gently put it on top of the puff pastry rectangulars and cover it with another rectangular of puff pastry. 8. Assemble the berries on top and cover them with one last rectangular piece of puff pastry. 9. Decorate the plate with a ring of caramel sauce.

I went back to Italy in 2004 to study to obtain a degree in Food Sciences from the University of Gastronomic Food Sciences in Pollenzo, Italy. GERMAN COFFEE RUBBED DUCK BREAST WITH SOUR CHERRY SAUCE Serving Size: 113 g YIELD: 50 INGREDIENTS:

Duck Breasts, thawed and patted dry Ground Coffee Brown Sugar, tightly packed Black Pepper, finely ground Salt Frozen Sour Cherries, thawed Orange Zest Sugar Orange Juice Salt Pepper Vinegar

AMOUNT: 25 ea 250 ml 1L 57 g 57 g 6L 75 ml 1L 250 ml 15 g 15 g 125 ml

PREPARATION STEPS:

1. Rub duck with coffee, sugar, pepper and salt. 2. Place in a covered food-safe container overnight for use the next day. 3. In a medium sized pot, put cranberries, juice, zest, sugar, vinegar, salt and pepper, and bring to a simmer. 4. Cook cranberry mixture until it is reduced by â…“ volume, and keep hot for up to 1 hour before service or cool immediately in shallow pans. 5. Pat the duck breasts dry and place fat side down on a flat top or large frying pan. 6. Cook duck over low to medium heat for 25 minutes until the fat renders down. 7. Flip duck over and cook until internal temperature reaches 62°C. 8. Let breast rest for 2 minutes, then slice thin into 8 slices. 9. Serve 4 slices with 59 ml of hot sour cherry sauce.

David Swanson Reinhardt began his culinary journey at an early age, and was thrilled to achieve a Red Seal and a Certified Chef de Cuisine (CCC) designation by the age of 23. Since that time, Chef David has explored the many different faces of foodservice, including private clubs, restaurants, hotels and golf courses. His most recent position prior to joining Sysco tasked him with training a large national hotel group on inventory and cost control. He was also the corporate standards leader and member of the culinary task force for menu design and implementation. Recently, Chef David has honed his overall knowledge of the industry by obtaining his Peer Auditor Certificate in Health and Safety and earning the title of Certified Food and Beverage Executive. When the apron is off, David can be found exploring the great province of Alberta; hiking, camping, running local trails, and spending time with his wife Erin and their young family. Chef David is passionate about making a difference to cuisine, the environment, and developing the chefs of tomorrow. He loves being part of the vibrant food scene and is particularly fond of sustainability, local products and food sources natural to the area where he lives.

FLEXITARIAN TURKEY DINNER LASAGNA Serving Size: 24 per pan YIELD: 50 INGREDIENTS: Ground Turkey Tomato Sauce Pretzel Bread Frozen Diced Mirepoix Frozen 7 Bean Mix Vegetable Stock Poultry Seasoning Kosher Salt Black Pepper Brown Gravy Lasagna Sheets 18% Cream Canola Oil

AMOUNT: 5 kg 7 litres 20 1.8 kg 3.5 kg 2 liters 15 g 20 g 5g 6 liters 16 pc 500 ml 100 ml

PREPARATION STEPS:

1. Make meat sauce: add oil to sauté pan, turn burner on med high heat and add the ground turkey, cook completely 175 ºF. 2. Add 7 liters of the tomato sauce, cook for 30 min. Set aside and cool to 4ºF. 3. Cut bread into thumb size dice, add all seasoning, vegetable stock, Mirepoix and beans, mix well, set side. 4. Layer Lasagna, cream in bottom of 2" full size hotel pan 2x pans. 5. Place in pasta sheet, then meat sauce, pasta sheet, stuffing, pasta sheet, (then a meat sauce and stuffing together layer) and one more pasta sheet on top. 6. Cover with parchment paper and tin foil. 7. Bake at 300ºF for 2 hours. 8. Make 6 liters of Sysco classic brown gravy and add the last 1 liter of tomato sauce. 9. Cut in 24 pc serve with 4 oz sauce.

Chef Peter Ecker began his culinary journey in 1977 at the Turf N Surf restaurant in Niagara Falls and then began his apprenticeship with CP Hotels Skylon Tower, Niagara Falls. He moved on to become the Sous Chef at the Pillar and Post Inn in Niagara on the Lake. With a wide range of Executive Chef experience in places such as the Rim Rock Hotel in Banff, Delta Hotels in Sherbrook and Regina, Red Deer Hotel & Conference Centre, Sheraton Winnipeg and Casino’s of Winnipeg, he found his home as the Corporate Chef at Sysco Winnipeg in 2004. Chef Peter is a Free Mason of Canada and a member of the Canadian Chef Association. He has been involved in the community as a culinary instructor, promotion manager for the Manitoba Culinary Team, a speaker for the Agriculture Producers and Chef for the Canadian Bison Association.

PREPARATION STEPS:

1. Pat turkey dry and season with salt and cracked pepper and rub with 3 tbsp of butter and 20 ml of smoke seasoning. 2. Chop or slice oranges and fill turkey cavity with orange. 3. Place turkey in roasting pan and place in 325ºF oven and allow to roast. 4. Chop remaining ingredients for stuffing and place in a mixing bowl. 5. Combine ingredients ensuring butter/smoke seasoning & egg are well combined. 6. Place stuffing mixture in a hotel or roasting pan and bake in 325ºF oven for 40 minutes or until the temp of 165 ºF is achieved. 7. As turkey is cooking, baste with pan drippings every 20-30 minutes to achieve a golden and moist skin. 8. Remove turkey when 170ºF is achieved at the thigh. “Carry Over Cooking” will bring the temp up to 180 ºF. 9. Allow the turkey to rest over the “Carry Over Cooking” for 20-30 minutes prior to slicing and carving.

David Pyper graduated from George Brown College in 2001 and then completed a 3 year apprenticeship in 2004. He then challenged the Red Seal examination successfully. PREPARATION STEPS:

1. Bring water to a boil and blanch steam cakes for 15 to 30 seconds a side. 2. Remove cakes from water, let cool and then cover if not serving immediately. 3. In a mixing bowl take the kale crunch, sambal oelek and peach vinaigrette; mix together and refrigerate. 4. In a mixing bowl mix the salsa and mayonnaise and refrigerate. 5. At time of service, season frying pan or flattop with desired fat and sear steam cakes. 6. Assemble with duck, kale crunch mixture and cranberry aioli and serve.

In the 17th year of his Culinary Career, Miguel Hernandez lives to cook! Over most of his working career he trained in kitchens throughout Ottawa. He managed kitchens and operations throughout the Kawarthas. He also operated his own private catering and sorbet business. Miguel brings a wealth of experience to the Stir team. From fine dining to Sunday breakfast, he prides himself in not only understanding cooking techniques, but studying the science and the physical makeup of ingredients and products. With a Mexican background Miguel loves to bring bold and colourful flavours to the plate. In 2003 he registered as a cook’s apprentice and attended culinary school at Sir Sanford Fleming College. In 2011, he created a ‘hands-on’ training curriculum that helped the vulnerable sector of Peterborough gain meaningful restaurant and retail skills that could help them get back on their feet and into the work force with meaningful employment that helped them contribute to their community. He is looking forward to continuing to help people succeed in the food industry with the Stir team out of Sysco Central Ontario and is excited for what is to come next.

TURKEY ROLL WITH LAC BROME DUCK STUFFING Serving Size: 80 g turkey, 35 g stuffing, 75 g gratin YIELD: 50 INGREDIENTS:

PREPARATION STEPS:

1. Cook turkey rolls from frozen until internal temperature reaches 160ºF, approximately 2.5-3 hours. 2. When turkey is one hour away from being done start to cook side starch, such as the suggested potato gratin. 3. Brown ground duck in frying pan with chopped garlic and all spices. 4. When duck is almost cooked, add apple slices, butternut squash and half of maple syrup. 5. Rest duck stuffing in strainer to eliminate excess cooking juices. 6. Take simmering demi-glace sauce and add 50 ml of maple syrup and about 250 ml of turkey cooking juices. 7. Strain sauce and reserve aside. 8. Rest cooked turkey 30 minutes before slicing. 9. Dish 2 slices with loose stuffing on top side of potato gratin and veggies of choice. 10. Drizzle hot sauce at pick up.

PREPARATION STEPS:

1. In a large mixer beat egg yolks on medium speed, gradually add sugar. 2. Beat until mixture thickens. 3. Stir in milk, vanilla and rum. 4. Pour mixture into large punch bowl and chill for 3-4 hours in refrigerator. 5. Fold in whipped cream before serving. 6. Sprinkle nutmeg and cinnamon on top. 7. Wet the rim of serving cup and dip into crushed candy canes. 8. Place chocolate dipped candy cane across the top of cup, if using.

Chef Mullett started his culinary apprenticeship in 1998 at the Delta Beausejour in Moncton. The following year he moved to the Fairmont Algonquin in St. Andrews New Brunswick. From there, Chef Mullett embarked on a culinary journey that led him across the country. He left for Alberta in 2000 to start at the Delta Lodge Kananaskis. In November 2003, Chef Mullett accepted a position back on the East Coast at the Delta Halifax; in 2009 Chef Mullett accepted the position of Executive Chef of the Delta Barrington in Halifax where he stayed until 2012. Chef Mullett moved on to be the personal Chef to the Lieutenant Governor of Nova Scotia for one year and is now happy to be part of the Sysco team. Chef Mullett was awarded his National Red Seal in 1999 from the New Brunswick Community College and Certified Chef de Cuisine from The Culinary Institute of Canada in 2009.
