1 Bavarian Pretzel (3815552) 2 Cups prepared cheese sauce (7452568) 2/3 Cup shredded cheddar cheese (2404135) 1/2 Cup Jake’s Mustard (1393612) 2 Tbs Jalapeno Ranch (1037163)
PREPARATION 1. Heat cheese sauce. Fold in shredded cheese
and stir until smooth.
2. Remove from heat, and blend in mustard, jalapeno ranch, beer and bacon (optional). 3. Serve with your favorite pretzels for dipping.
Optional: 1/4 Cup Dark Beer 2 Tbs Crumbled Bacon
BONELESS PORK RIBS WITH MUSTARD GLAZE INGREDIENTS
1 Piece Pork CT Butt (1129988) 1 Cup Jakes Mustard (1393612) 1/2 Cup Orange Marmalade (4046462)
PREPARATION 1. Slice CT butt to 1/4” thickness. 2. Season with salt and pepper, and sear on grill. 3. Prepare glaze - combine Jake’s Mustard and
orange marmalade together.
4. Set oven temperature to 325. 5. Brush pork with glaze and place in oven, cooking until tender (approx 2 hours to 140 o ).
NOTE: For extra flavor brush pork every 15 minutes, alternating sides.
SPICY MUSTARD WINGS INGREDIENTS
1 Serving Jumbo Wings (9556481) 1 Cup Jakes Mustard (1393612) 1/4 Cup Butter-It (3355757)
PREPARATION 1. Deep fry or bake wings to internal temperature
of 165 degrees.
2. Mix Jake’s mustard with melted Butter-It 3. Toss wings in sauce and serve.
BLACKBERRY MUSTARD GLAZED HAM INGREDIENTS
One Buffet Ham (6992384) 1 Cup Jake’s Mustard (1393612) 1/4 Cups Blackberry Fruit Infusions Syrup (0617098) 2 Tbs Local Honey (0584272) Optional: 1 Ts Grated Fresh Ginger (1008770)
PREPARATION 1. Blend together the mustard, blackberry infusion
syrup, honey, and ginger (if desired). Use a pastry brush to coat the outside of the ham.
2. Warm in the oven according to instructions on the ham. 3. Enjoy!

Munch is the result of a collaborative effort here at Sysco Virginia to bring you recipe ideas, news, and insight into modern food service trends. Whether you are an operator of a food service venue, or even work in one, our goal is that you find something that inspires you among these pages. As we all know, technology has grown at a fantastic rate, and information is readily available on our computers and phones. However, there is something to be said for preserving a traditional publication method – it gives you something to touch. In this small way, Munch reminds us of the importance of our hands, and what they can bring to those around us. • Melting Pot Pizza • When Mr. Bachelor bought the land and building in 1972, he had 64 cents to his name. With a little loan and a lot of hard work, the business grew, and in 1976 the owners enclosed the adjacent car wash to create a dining room. Ever since that time, the dining room has been filled with loyal customers, especially on the weekends. To help handle all of the demand for their famous pizza, the kitchen was expanded in 1995. The family fully credits its wonderful employees and patrons for making the business such a success. With fresh dough prepared from scratch daily, and only the finest of ingredients in every dish, it’s no wonder the success of Melting Pot Pizza continues to grow!

LOCAL PRODUCTS The Shepherdstown Sweet Shop Bakery is housed in a 200-year-old building in the heart of Shepherdstown, the oldest town in West Virginia. Originally named Mecklenberg, the town was established in 1762 by Thomas Shepherd, a miller, who laid out the town on the banks of the Potomac River and settled it with a variety of businesses and artisans, creating a thriving community. In 1982 Howard Butcher established our bakery and began its tradition of baking Old World style breads and desserts. Today we continue providing our customers with delicious, nutritious, whole grain breads, fine cakes and pastries, and, of course, our famous Holiday Stollen. t the local level, Sysco works with both customers and local vendors to identify needs and make connections, while from the corporate level we focus on standards, tools, and resources. We hold our local farm suppliers to the same high food safety standards as our other suppliers. In an ongoing effort that is unique within the foodservice industry, we have partnered with the Produce Marketing Association to offer Good Agricultural Practices workshops in six cities, reaching hundreds of small farmers to ensure local food sources meet our quality standards. In addition, our national produce group, FreshPoint, works with small family farms to help connect them with resources to assist them with obtaining appropriate insurance and meeting other requirements. While local food is most often described in terms of seasonal produce, as we grow our local offerings, products such as local artisanal cheeses, sausages, baked goods, and other special products fill our shelves.

PREPARATION 1. Heat cheese sauce. Fold in shredded cheese
and stir until smooth.
2. Remove from heat, and blend in mustard, jalapeno ranch, beer and bacon (optional). 3. Serve with your favorite pretzels for dipping.

1 Piece Pork CT Butt (1129988) 1 Cup Jakes Mustard (1393612) 1/2 Cup Orange Marmalade (4046462)
PREPARATION 1. Slice CT butt to 1/4” thickness. 2. Season with salt and pepper, and sear on grill. 3. Prepare glaze - combine Jake’s Mustard and
orange marmalade together.
4. Set oven temperature to 325. 5. Brush pork with glaze and place in oven, cooking until tender (approx 2 hours to 140 o ).
NOTE: For extra flavor brush pork every 15 minutes, alternating sides.
SPICY MUSTARD WINGS INGREDIENTS

PREPARATION 1. Deep fry or bake wings to internal temperature
of 165 degrees.
2. Mix Jake’s mustard with melted Butter-It 3. Toss wings in sauce and serve.

PREPARATION 1. Blend together the mustard, blackberry infusion
syrup, honey, and ginger (if desired). Use a pastry brush to coat the outside of the ham.
