Et Tu Ama Covid 19 might be calming down finally but the world is still going crazy. I was going to write an article about Magnesium or maybe review Dr. Gundry’s latest book, “The Energy Paradox.” I was thinking I would review the vaccination rates in various states and show their correlation or lack thereof with infection rates. But then I came across an article about my profession that I couldn’t believe. Last week the biggest medical organization...the American Medical Association...issued statements to the effect that it supports critical race theory and no longer supports equal treatment to all people. The article I read states that “The AMA also makes clear that it now rejects the concepts of “equality” and “meritocracy,” which have been goals in the fields of medical science and medical care.“ Furthermore, and I am quoting again...“Equality as a process means providing the same amounts and types of resources across populations,” the association said. “Seeking to treat everyone the ‘same,’ ignores the historical legacy of disinvestment and deprivation through historical policy and practice of marginalizing and minoritizing communities.”

I am of course not suggesting that minorities have not been screwed over in the past and may be still today but isn’t it the essence of America and shouldn’t it be the essence of medicine to treat everyone equally? How can this major organization reject equal treatment of all people? Needless to say I am no longer a member of the AMA and it’s interesting that I got an offer via the internet to renew my membership at 50% off. I wouldn’t renew my membership if they paid me. In my office its our explicit policy to treat everyone...no matter where you come from, no matter where you are going, no matter how you identify, your gender or sexual preferences (as long as it doesn’t involve minors) no matter how much you are worth, no matter your age, no matter what...everyone deserves to be treated equally with fairness and kindness and hopefully understanding of your medical issues. Of course I have felt for some time now that my profession has lost its way. I have seen how we, instead of looking for the cause of disease, now only look to treat the symptoms with medications and procedures. Interestingly it all started when I read Dr. Gundry’s second book the Plant Paradox. I realized then I was only focusing on the symptoms and not the cause. The obvious fact that every physician knows but few acknowledge is that we should be focusing on the basics of your health...your diet, your exercise, your sleep and your stress. Don’t cover up the indigestion...find out the cause. Don’t just treat the high blood pressure...it’s a sign The current practice of medicine is superb at managing your illness but if you want to really improve your health...to regain your wellness, you are not likely to find a champion in your primary care office. We pay the most by far of any nation for health care and we rank low on real health measures. And now I find that the most prestigious medical association is more focused on social considerations than real equality of health care. Sorry, but I am going to stay firmly in the camp that believes all people should be cared for equally and if that somehow gets me in trouble with the “powers that be,’’ so be it. Opposing the AMA shouldn’t get me in trouble with the Medical Society or the Health Department should it? Free speech may not be so free in America anymore. Maybe it’s a little hubristic but I close with the words of Martin Luther at the Imperial Diet of Worms in 1521. ”I cannot and I will not recant anything for to go against conscience is neither right nor safe. D-DAY – Hope or Despair June 6th, 2021 – D-Day. Please refer to my series at “word on the street tablehopping. com”. It describes how to restore the American way to the streets of Syracuse. It shows you how to engage the entire City and all of its resources on one team. It is well designed, financed and has goals for certain results. The plan is sound. There is nothing lacking but leadership. This column comes out the first part of each month. So, I don’t know if D-Day is underway as I write. It is very unlikely. I know that this column is read by many with power. Many have become my friends over the years. Our City and our Country is embroiled in systemic evil. Systems are cruelly designed, stagnant and not addressed. Our lower middle class and poor are among the most punished and denied in the industrialized world. What I cannot grasp is the loss of bravery and the willingness to sacrifice and take stands and to walk tall right into the storm of human justice denied, and fight for right. I am from the immediate Post World War II Generation. We were brought up by Top Brokaw’s “The Greatest Generation.” The war caused a comradery and a demand for the common good that lasted nearly two decades. America was still an experiment but she never walked taller and with finer intent. So fine that for nearly 20 years it reached the neighborhoods and the people and we knew we were one. The war gave birth to thinking that allowed us to address the dormant evil of embedded accepted systemic racism that flourished openly since the Civil War. The Civil Rights movement was born. Blacks could Vote. They could drink water from the same water fountain and use the same bathroom as whites. They could sit at lunch counters and sit anywhere on a bus.

For a while Syracuse was a picture-perfect example of an America caring for all of her people. With Civil Rights, the course was set to include Blacks. I came to Syracuse in April of 1956. Henry’s Jewelers was located in the Loew Building on Jefferson and Salina Street. My dad was a manufacturing jeweler, clock and watchmaker. He also cut diamonds. We came from Hyde Park, New York. My dad was armed with a letter of recommendation signed by Eleanor Roosevelt. He was the Roosevelt Clockmaker. Henry’s needed someone with my Dad’s talents and needless to say they took one look at the letter and he went to work. Syracuse was in her prime. Earl Wilson had a jewelry store located on Salina Street just before Fayette and Salina. Rudolph’s Jewelers was across the street from Henry’s at Jefferson and Salina. The Hotel Syracuse, the Yates and the Jefferson Clinton were all buzzing with life. The Western Union had the entire building at 351 South Warren Street employing several hundred people. (Today, if you stand across the street and look up you will see “WESTERN UNION” embedded in the brick. I was the last City Manager.) The Midtown, Loews Strand, Paramount, RKO Keith’s and Lowes State Theatres dotted downtown Salina Street. Dey’s, E.W. Edwards, W.T. Grants, Witherill’s, Wells and Coverly, Bonds, The Addis Co., The Economy Book Store and several other fabulous stores were all thriving with activity. It was the huge store display windows that were most impressive. Each was designed with great tender loving care by owners’ intent to be the best at what they did. Monopoly had not yet taken nearly everything. Each store displayed their wares with imagination, style and fabulous appeal. Mannequins were outfitted with the finest designs of the day. They were impressive and realistic and you could almost feel them looking back at you as you looked at the beauty of each display. The display windows ranged in size yet most covered the entire front of the store. Christmas was a fairytale downtown. As stores were owned individually each cared greatly and Christmas displays were creations of beauty designed by those that loved their store, their customers, the season and the City. Buses were 15 cents. A bus stopped at virtually every corner in the City every 15 minutes. Transfers were free. You could easily go anywhere. You could work anywhere as transportation was reliable abundant and efficient. We were a manufacturing town. Jobs were abundant. Most homes were single family owners. Apples and other fruit trees dotted most yards on each block along with gardens and manicured shrubbery and trees. Literally, if your sidewalk was cracked you could call the city and they would come and fix it. They were the pathways to school. There was no city school bussing. Grocery stores were everywhere. Huge chain grocery stores like we have today did not exist. If a store charged a few cents too much for a quart of milk or loaf of bread the neighborhood would let them know they better stay fair or else. They were good days. For most they were happy days. Lots of folks did not have much but nearly everyone had values. Everyone tried to dress well, lawns were mowed, hedges were trimmed, there were flowers everywhere in every neighborhood. Downtown was a diamond. The neighborhoods were gems. Tender loving care was everywhere. Petula Clark was inspired to write and sing the song “Downtown.” Well worth googling the lyrics. It was all true. Until the comradery of the war died. I am not sure what is worse. The actual deterioration and destruction of all of this and the great suffering of the vast majority of City residents or the horrifying systemic failures that are the cause. Or the clear refusal to accept a way forward, even from

with the ability to move forward and “for” the people that actually live in your neighborhoods. Sidewalks are a good start. Current policy has all but ended repairs. Set and enforce strong, just standards that protect citizens esp. for large property owners and prevent Skylines, etc.etc.etc. – throughout, revise unfair and enforce just regulation. As I am fairly certain this effort has been in vain, I am poised to admonish. But if, just what if, you paid attention and really got involved in your City in ways that worked and mattered. You would see a great column next month. Celebrating infrastructure on the mend, jobs and opportunity on the horizon, whistling small business owners, drug dealers startled and unable to poison, patriotism, justice, the easing of pain, the absence of fear, beatings and sexual abuse, esp. of the very young, and renewed hope that is real in the hearts of those that have suffered daily in silence. I write today with a heavy heart as I fear instead you have chosen to maintain youth being raped daily for fixes and beatings vastly unreported and victims of all of the above that cower daily in fear. I fear rather than celebrating an enlightened city on the mend, we are continuing in the current systemic cruel rut and pointless endeavor that never fixes the problem. The people of the streets will continue to weep as you maintain the status quo. Praise the Lord if D-Day took place. Wow – Flanders Fields would be at attention and our hallowed sacrifice would be saluting you and they would be proud to be, as you gave value to their absence in the great pursuit I have suggested. PS: D-day was not set in stone. As a matter of fact D-Day in WWII was delayed because of weather. Make copies of my plan. Read it. Think about it. One day the right people will be in place. It still may be you. You may need to adjust. The Plan is what you must adjust to. Mayor, you may well be in Washington one day. Take the plan with you. It is a blueprint designed for Syracuse but can be replicated and adapted to any city. Remember, if and when you form a team of all City leaders and employees with someone with 75 years of wisdom, living and working in the city, someone who has lived esprit-de-corps you have an army walking tall. The patio remodeling begins in September, so we’ve booked a full summer of music – our Thursday Party on the Patio, and then as usual a live band will get booked during the week, so you’ll want to check in often. Our summer season starts on June 3rd with The Horn Dogs, and then it just keeps going. Country, rock, blues, and a few special guests added to the lineup here and there. We know our customers have been wanting to get out and have fun in the summer, so that’s what we plan to offer.” The Party on the Patio opens with drinks at 4pm, with the music kicking in at 6, and lasting at least 3 hours. And, as usual, you can stop in any day for lunch, snacks, drinks – or drop by the special golf bar for some 9th hole refreshment on the Foxfire Golf Course, or for a post-game drink. While pent-up demand has the catering portion of the venue busy, there are still openings, so call to check if there’s a special event you want to plan. Bandera will work with you however he’s able. And don’t forget, Pasta’s has a good reason to come out and get a little friendly rivalry going on Tuesdays with Trivia Night – the games begin at 7pm, so you’ll have lots of time for a good dinner and a drink before the fun starts. The bee venom is essentially a toxin, also called apitoxin; its main component is mellitin which, combined with other active ingredients and essential oils, is strengthened. Thanks to this (and other components), bee venom reveals a very strong anti-inflammatory power, especially for osteoarticular pain (arthrosis, rheumatoid arthritis, and sciatica); to make the most of its benefits, it is recommended to use bee venom in the form of ointment. understood that the poison of this insect had such properties as it was realized that rheumatic diseases were very rare among those who dealt with bees. Other beneficial properties of bee venom are: • a bility to regulate the heartbeat in people with arrhythmias; • ability to counteract skin imperfections, such as pimples, wrinkles, and cellulite; • ability to regenerate the epidermis tissue in an anti-aging function (stimulates the production of collagen and elastin); • ability to reduce and fade scars.

According to some experts, bee venom is indicated to treat skin wounds present at the superficial level of the epidermis such as those caused by pimples and, in the most serious cases, by acne. Thanks to its characteristic consistency, the serum creates a protective barrier and, in direct contact with the skin, causes inflammation capable of promoting preventive cell regeneration as well as stimulating the production of collagen. Cream with bee venom also has an effective anti-oxidant action by stimulating the production of anti-aging enzymes and slowing down the signs of aging such as wrinkles. Compared to botox, it has the great advantage of not blocking the contractions of the facial muscles making the features unnatural, but stops at a more superficial level, in the subcutis, where the last nerve endings are present. However, the best results are obtained by combining this elixir with other beauty treatments such as a peeling based on glycolic, pyruvic, or mandelic acid that improves dermocutaneous penetration or in combination with a retinol face cream that rejuvenates the appearance of the skin. But be careful not to overdo it because, in addition to increasing the risk of redness and hives, especially in allergenic subjects, bee venom usually has a rather high cost which helps to make it an “elitist” product that is not exactly cheap or suitable for all budgets.

Bee venom: how is it obtained?

The bee venom is obtained with a small “trick,” namely: within the beehives is inserted a small metal plate which occasionally emits an electrical pulse; the bees, disturbed by this impulse, go to “sting” the slab and this ensures that the bee survives the sting without problems, while the poison is collected and conveyed in a special tray.

Bee venom: when to use it?

The bee venom is in effect a natural remedy, also powerful and effective enough, but usually, it is very expensive and must be avoided if by chance you have already proven to be allergic to one or more hive products. Playing “I Don’t Care Golf ”

On the other end of the spectrum, there is a desire to mentally check out when things get tough. I used to play a very unproductive game against myself. Let’s say the first 5 holes were a disaster; I might say to myself, “oh, just forget about this round.” And then, all of a sudden, after 4 good holes, I might say, “wait, I’m going to play this one out and see what happens.” Unfortunately, golf doesn’t work this way (in the context of becoming a better player, of course). There are ample opportunities to bail out or say to yourself, “I don’t care at all what happens.” Often, I find golfers do this as a defense mechanism. We’re scared to find out just how badly we might score if we keep trying after a rough patch. Sometimes it feels like we are staring into the abyss (yes, this game can make us feel that way). This extreme doesn’t work either. If you are going back and forth between caring and not caring, there is no opportunity to grow as a player. Of course, we care how we play! I’m constantly saying words like routine, consistency, and system because they are important. Golf is a game that requires long periods of focus and emotional control, which is perhaps one of its greatest challenges. Now I don’t expect you to operate at the level of a PGA Tour pro, but there are usually opportunities for most players to make adjustments relative to their experience in the game.

Give Each Shot the Attention It Deserves, and Move On

Here comes the part of the article where I give you the simple answer. It will sound too easy to be true, but the big concepts are easy to understand but difficult to put into practice, as with most things in golf consistently. I keep finding different ways to say the same thing, but that’s what coaches generally need to do to change behaviors. Existing in the space between not caring and caring too much, generally can be achieved by committing to the following process on the course. Go through an analysis before each shot. Consider things like your lie, wind conditions, elevation changes, the trouble surrounding your target, etc. This does not need to take 2 minutes! Have a pre-shot routine. For example, I pick my target behind the ball, take two swings, then align myself. Execute the shot! Briefly go through a post-shot routine. If it is a good result, internalize the success. If it’s not what you had hoped for, go through a quick non-emotional analysis. If you can commit to going through a similar process before each shot, you will become a better golfer no matter what is going on. This took me a really long time to understand, but each shot you hit truly is an independent event. All shots in aggregate influence your eventual score, but I find it’s best to approach each one as a new, different circumstance. It will help you make better strategic decisions, and more importantly, help compartmentalize your emotions. Again, muccccccchhhhhh easier said than done! I don’t get this right all of the time. So when you hit an errant drive into the trees, and you’re still fuming over your mistake, that shot is over and done with. Your new task is to make the best decision possible with the current shot and not let the prior event influence that decision, which with many players, is trying to hit a hero shot to make up for the mistake. If you can commit to this philosophy and consciously work on it, I guarantee plenty of good things will happen in your golf game, and it won’t just be your score dropping. You’ll also have a healthier relationship with golf and likely derive more satisfaction out of the game.

I recently chatted with The Athletic Syracuse men’s basketball beat reporter Matthew Gutierrez. We jumped into the Orange’s future, roster development, the transfer and more. ML: What does Syracuse’s roster look like next season? MG: Quite different from last season, with only two starters back in. Buddy Boeheim, the presumptive MVP, and Joseph Girard. The other three to round out the starting five is likely freshman forward Benny Williams, who is the program’s first five-star commitment to arrive on campus since 2014; plus graduate transfer forward Jimmy Boeheim and fifthyear center Bourama Sidibe. Cole Swider, a Villanova transfer wing, projects to come off the bench as sixth man, and backup guard Symir Torrence, from Marquette, should spell for Girard at the point. The backup centers, Jesse Edwards and Frank Anselem, probably will split minutes behind Sidibe, if he’s healthy enough to go. All together, you have a fairly young team with an experienced backcourt and possibly a preseason First Team All-ACC guard in Buddy Boeheim. The Orange are popping up in a lot of early Top 25 rankings, which might be realistic, or it could simply be the benefit of a Sweet 16 run. But defense will remain the biggest question with this group, and I think the zone will dictate how

good this team becomes. There’s no question they have shooters and scorers. Can they get stops against top-half ACC clubs? ML: Has the transfer portal gotten out of control? MG: I might have an unpopular thought on this: Not really. I’m for it. Let guys move around. First of all, it’s a one-time transfer rule, meaning guys can move to a new school for immediate eligibility only once. You can’t bounce a second time without sitting out. So I wouldn’t fully say it’s “free agency.” Not that crazy by any stretch. And a lot of emphasis in this conversation is put on the schools losing guys, but what if you consider this: It’s never been this easy for coaching staffs to search the portal and reload with talent, quickly. I just don’t want to say right now that it’s out of control and bad for the game. Let’s give it a year or two and see how it plays out. I think many guys will find the grass isn’t greener elsewhere. And others will find the decision to transfer was smart. Let players move around if they aren’t happy with something, want to move closer to home, or want a fresh start. It happens. We all need change sometimes. Let the free market play out. That’s my thought here. ML: How down was the ACC last year and will it be bad again this season? MG: It was pretty down. Only Syracuse and Florida State went to the Sweet 16, nobody else. No ACC team made the Elite Eight. Duke was a mess. North Carolina was not itself either. Virginia was good but a step below its elite self. The middle of the conference was a bunch of decent but not good teams. As for next season, it’s a little early to tell. Ask me again this fall. If I had to guess now, I’d say it will improve at least a bit. Duke, UNC and Florida State reloaded with quality recruits. It will remain a very good conference. ML: Who retires first? Jim Boeheim or Coach K? MG: Coach K. Boeheim might coach three, five or closer to eight more years or so, based on the public indications he’s given. He wants to coach as long as he’s happy and healthy, and he is. The popular narrative seems to be that he’ll call it quits when his sons graduate, but I doubt it. He’ll coach as Jimmy Boeheim long as he’s able to. ML: Latest in SU recruiting? MG: Just wrote on this for The Athletic on Tuesday, so shameless plug to check out our breakdown there, with insight on six priority recruits plus trends as it relates to the transfer portal and 2022 outlook. Syracuse is looking for a top-100 center who can impact the team right away, with Donovan Clingan, a 7-footer from Connecticut, high on the list. He’ll be a tough one to land because in-state UConn is really recruiting him hard, as well as Michigan, a title contender with Juwan Howard as coach. But landing a good center is a priority for SU. Other names to know: Chance Westry a guard from Pennsylvania, Justin Taylor, a shooting guard from Virginia and Chris Bunch, a forward from California. I think Syracuse will be able to land one of those guys. Remember: There’s always the transfer portal to make late additions if you miss out on high school prospects. ML: What does Buddy Boeheim need to improve on most in 2021-2022? MG: Defense. He can shoot, score and challenge a defense, three things we saw during his hot streak late last season, especially during the surprise Sweet 16 run. But he’s been open about his athletic and defensive shortcomings, and the top of the Syracuse zone needs to look the way it did late last season, not the way it looked from November through February. It starts with Girard and Boeheim limiting high-post access and dribble penetration, getting back in transition and being better, more active overall. ML: Player Syracuse misses most next season? MG: Tough one. Can’t say just one. I think it’s a combo of Quincy Guerrier and Kadary Richmond, two of the more high-upside guys the program has had the last couple of years. But to say one? Richmond. His talent aside, he bolstered depth at a spot that’s somewhat thin. He was a creator off the bounce on a team with not many creators. He provided length and activity to a zone that has been very up and down the last two seasons. Even if Girard improves, I think there will be a noticeable difference in the SU backcourt without Richmond creating for others. ML: Matt, you’re the best. Thanks for this. MG: No, you’re the best. An Instance of the Fingerpost By Iain Pears, Published: 2000 “It is 1663, and England is wracked with intrigue and civil strife.” Perhaps you recall a BBC series called Cadfael? It starred Derek Jacobi, and featured a 12th century Benedictine monk in Wales who solves mysteries. What’s fun about it, aside from Jacobi’s always interesting acting, is that it takes a basic genre, the murder mystery, and set it in an unexpected time and place. The techniques Cadfael must use to sort out the crime have to be true to the era, not to mention the crimes and the motives themselves. The shows were based on a series of novels by Ellis Peters, The Cadfael Chronicles. Browsing my bookshelves a while ago, I was specifically looking for something long, different, and involving. I found it. I’m not sure when I bought it, but I had certainly not read it yet, and I’d completely forgotten that I even had it. The book is satisfyingly long – 685 pages – and astoundingly rich in detail. The very idea of the research alone is staggering, and while it’s true that had the author cheated here and there I’d never know it, something tells me that Author, Iain Pears when Pears digs into the details of how a type of sediment found in a brandy bottle can be narrowed down to its likely identity – arsenic – by the means available at the time, it’s accurate. The book is actually four books, but it is the same story, essentially, as told by four different characters: a Venetian medical student, a young man trying to clear his father’s good name, a cryptographer, and an archivist. Each is involved in some way in the murder of an Oxford Don at a time of civil unrest, plotting, suspicion, and vastly differing views of life, science, religion, medicine, and class conflicts. Part of that, of course, is that many people at the time were skilled prevaricators, of necessity, since there was so much intrigue – and if you were caught taking up the wrong cause during the wrong monarch’s leadership, hanging would be the easiest of punishments.

Even better, Pears has given each character a distinct personality and set of passions, and played his take on the murder out to its conclusion. Da Cola, for example, knows that young Sarah Blundy is a likely suspect, given her access to the victim, her motives, and even her purchase of the likely poison that did him in. But da Cola is sympathetic with the young woman, and perhaps even more. You can still obtain a copy of this book on Amazon, though it is 20 years old. It’s the kind of novel, though that never goes out of date as it’s historical, and it’s a fine murder mystery. And it’s the kind of beach/hammock/deck chair reading that has “great summer vacation book” hidden in the title. But even if you’ve already stacked up some books for the summer, get a copy anyway, as it would also make for a good sitting by the fire in winter read, as well.

Army of the Dead Filmmaker Zack Snyder has had quite an explosive 2021. Fueled by one of the most successful fan-driven campaigns in cinematic history, his cut of JUSTICE LEAGUE was released on HBO Max earlier this year after years in limbo. His vision was so vastly superior to Joss Whedon’s disastrous production, that it proved that the DC Universe may hold some promise after all. Most recently, in May, another production that has been in development for years was released as well. ARMY OF THE DEAD allowed Snyder to get back to his zombie roots, delivering an action epic that proves that the big budget blockbuster is back. Snyder’s film debut came in 2004 with a remake of DAWN OF THE DEAD. At the time, zombies were experiencing a renaissance, in large part due to Danny Boyle’s incredible 28 DAYS LATER. It was no easy task for a first-time director to tackle the George R. Romero classic, but Snyder’s DAWN was a thrilling, horrific, shocking spectacle. He followed that up with hits (300) misses (SUCKER PUNCH) and

army of the dead controversies (WATCHMEN), but at the very least, he always boasted a unique vision that made his productions stand out. With a running time that clocks in at just under two-and-a-half hours, ARMY OF THE DEAD is a loud, messy, violent, grotesque, hilarious, adventure. We’ve all heard the expression “use it or lose it.” It means that if you don’t continue to practice or use an ability, you might lose that ability. If a person doesn’t exercise his or her physical body, he or she will likely lose strength, stamina and endurance. Your muscles will become flabby and weak. Your body fat will increase. Your heart and lungs won’t function efficiently, and your joints will be stiff and easily injured. In fact, a new study shows that not moving enough may be as hazardous to your health as smoking! Moving instead of sitting is not only critical for safeguarding your health, but it also helps set a good example for your kids. Childhood obesity is a serious problem in the United States, putting children and adolescents at risk for poor health. Overweight children often have trouble keeping up with other kids and participating in sports and activities. Sadly, this can have a significant impact on BOTH their physical and psychological health. Several research studies have found that obesity is linked to mood and anxiety disorders. This means that if your child is obese, they may be more likely to suffer from a mental health condition like depression or anxiety. As a parent, you can be a good example and make a difference by taking preventative measures now. Get your kids out of the house! Take them to the park, take a walk after dinner, go for a bicycle ride, or have them help you with some of the yard work. Why does it seem so hard to get moving? The truth is, we are lazy! The pandemic hasn’t helped! Most people know that working out should be a priority, but most people are also really good at making excuses to avoid it. Typically, when we start an exercise program, we think of all the reasons why we can’t do it and all of the obstacles that have stood in our way in the past. We need to go beyond the means of knowing how and why exercise is important. We need to develop the right mind-set to get started and find a good reason to stay motivated. I will be the first to tell you that it will take some work. Growth is painful. Change is painful. However, nothing is more painful than being stuck somewhere you don’t belong.

So why start an exercise program? The bottom line is, we weren’t meant to be sedentary. Our bodies need movement! Regular exercise is one of the cornerstones of a healthy, vital, body and mind. Physical activity on a regular basis is necessary for physical fitness and good health. In addition, it reduces the risk of developing many health-related disorders such as heart disease, cancer, high blood pressure and diabetes. What’s the icing on the cake? Exercise can improve your appearance, help you fit back into those jeans, and delay the aging process. You will not only feel better, but you will look better, too. Find your reason ‘why’ exercise needs to be a priority in your life. That reason needs to be important enough to get you off the couch. If I had to choose one word to sum it all up it would be Perseverance: continued effort to do or achieve something despite difficulties, failure, or opposition. What is the reward? The reward is that you’ve made a decision to make a change in your life for YOU so you will have more time to spend with family, friends, and loved ones. Start an exercise program that will be good enough to keep you motivated and moving in the right direction today, tomorrow, and for years to come. Good luck to you. Cooking with Technology About a year ago, and mostly on a whim, I’ll admit, I got an air fryer. It was one of the best purchases I’ve ever made. I have read a few articles describing them, and how basically it’s simply a convection oven on steriods – which is to say that it heats your food anywhere from about 360-400 degrees but moves the air around, in, through it, so that it cooks it rapidly and thoroughly, taking care of both the interior temperature as well as a crispy exterior, so it does a great job on things you’d normally fry, or want cooked tender inside and crispy outside. And an added benefit is that you can take breaded food – and there is more and more food prepared to be cooked in an air fryer available – and cook it without added oil. The benefit there, clearly, is fewer calories. But there is also the fact that the food cooks just about perfectly, very quickly, and with little supervision. I might open the device once during cooking to check on its progress, but it has, thus far, never failed to give me great results. While some people find the fryer isn’t large enough for a big family or a large item, I have been very happy with the portions it will handle, including a large chicken, a big batch of fries, or plenty of fish, even vegetables. The one I purchased has just the “drawer” for cooking, but there are now models with rotisseries, and even combo models that double as a toaster oven or pressure cooker. If I were shopping for a similar appliance now, I might consider something called the “June oven,” which, The June oven

The Insta Pot according to its literature, is a convection oven, air fryer, dehydrator, slow cooker, broiler, toaster, and warming draw – and you can control it from your phone. It might not replace your entire kitchen full of gadgets, but if you had to get by with the old “hot plate on the table top” style of cooking in a small space, this would be the one device to try. Oh, and if you really know little about cooking, put your 12x16 inch pan, 12 pound turkey, or 12” pizza in it, and its internal camera will say, “Oh, look, a turkey,” and start it

cooking for you. While you watch on your phone from the deck with your friends. I also have a slow-cooker, and believe in the power of simply putting a good cooking pot on the stove and letting a slow, steady heat do its work – but I will also acknowledge that an “instant pot” that can act as a pressure cooker, steamer, cake baker and warmer in one device isn’t a bad addition to the modern kitchen. I watched as a friend put a stubborn cut of meat in his pot, and while it wasn’t instant, it was certainly cooked to a tender turn in far fewer than the 8 hours it would have taken in a slow oven, not to mention not adding any extra heat to the kitchen while it cooked. So whether you want to make a gourmet recipe in a hurry, or you’re juggling one stove and several items to cook, this is a good gadget to consider. Another not-so-new but convenient product that makes probably the best made-at-home coffee I’ve ever had is a pour-over coffee brewer. The ubiquitous drip style coffee maker is terrifically convenient – you add your coffee and water, set the timer, and your hot coffee will be ready when you wake up, or within minutes of turning the machine on. With the pour over method, the superheated water will be slowly and usually in a circular motion quite literally poured over the waiting coffee. Because the process is slow, and doesn’t just dump the water onto the coffee to filter into the carafe, the coffee has a longer, more thorough

contact with the hot water. And hot water is, without a doubt, the secret to a good cup of coffee. I will admit to having an “old school” refrigerator. It is a refrigerator with crisper bins, and a freezer compartment with an ice cube maker/dispenser. It works. But some of the newer models with cold water, crushed or cubed ice in the doors, and a warning bell if your door is open have their attractions. But how about a refrigerator that could actually keep track of what’s in it for you, so that if you’re at the store and aren’t sure if you need eggs – you can check the camera or the smart board on the door that stores memos like “get milk, out of beer.” Finally, I will again confess to using my 15 year old blender and being fine with it – but I also confess to more than a little envy when friends throw seventeen healthful ingredients into their high tech blender and end up with something that tastes like a blueberry milk shake in about 2 minutes. But I can’t conclude without going all retro and saying the other simply indispensable piece of kitchen equipment, as far as I’m concerned, is my stand mixer. Again, for those times when you need seven hands and only have 2, the stand mixer is perfect. While I don’t think there’s anything especially new about the technology – they’ve added power, tilt, lift, and a few other features that make the tool even more convenient – there’s nothing quite like adding all the ingredients for cookies, turning it on, tending to another chore, and finding the mix perfectly put together for you. And finally, why not indulge in a rapid cooler for your favorite beverage? Add water, and the device will spin a bottle of wine to a perfect chill in just a few minutes, or have your beer ready in about one. As long as you’re preparing your meal, you might as well enjoy the time you’ll save, thanks to technology!

Ron Spencer: Syracuse Blues For over 25 years Ron Spencer has been a mainstay of the CNY blues scene. He has lent his fiery blend of blues, and roots-based guitar playing to some of the area’s premier bands including Grammy nominated Joe Whiting, The Kingsnakes’ Pete McMahon, Tom Townsley and blues diva, Kim Lembo. In 1996 Ron brought his four piece combo to national attention with their CD, Ron Spencer & The Nite Crew - Burnin’ Desire. Blues Revue declared them “the best-unsigned act” Ron’s career has brought him the opportunity to work with dozens of national recording acts such as Rod Piazza, Charlie Musslewhite, Johnny Copeland, Kenny Neal, Son Seals and Little Charlie & The Nitecats. He has been invited on stage to engage in head to head guitar duels with such heavyweights as Duke Robillard, Anson Funderburgh, Bob Margolin and Rick Holmstrom. And, he has also toured with Chicago’s queen of the blues, Big Time Sarah and Blue Wave Records diva, Kim Lembo. Formed in 2000, the seven piece Ron Spencer & Jumpstart featured a swingin’ horn section, poundin’ keyboards and a blues shoutin’ frontman. In 2002 the band paired

Blues musician, Ron Spencer up with rock & roll and r&b legend, Jimmy Cavallo. Their CD, Jimmy Cavallo - The Houserocker with Ron Spencer & Jumpstar on Blue Wave Records was nominated in 2003 for the ultimate recognition in the blues field...a W.C. Handy Award! In 2006 their Blue Wave Records CD “Livin’ Low” won a SAMMY Award for best blues recording. Blues Wax online magazine says, “Roller Coaster Blues can hang with the toughest Blues albums coming out today.” Today, Ron’s hanging out with us here for Sounds of Syracuse. Chuck Schiele: Hi Ron! Thanks for visiting with us here at Sounds of Syracuse. So.... The Blues in general. What does it mean to you? Ron Spencer: First of all, it’s a passion of mine, as music in general has been as long as I can remember. Once I traced the origins of the music back to the

sources, i.e. Muddy Waters, Jimmy Reed, Howlin’ Wolf, I realized it was the blues that was at the heart of the artists that I liked, Stones, Animals and Yardbirds, etc. When some people hear the term ‘blues’, they immediately dismiss it as a form of music that is ‘old time’ or of an ethnic origin that they can’t relate to. Yes, it’s origins are all of that, but it is really a music that speaks to life and the human condition. It has a cathartic effect on the soul in the way that it celebrates both the joy and sorrow (blues) of life. By it’s nature it is music of the soul. CS: Tell us a bit of your history as a musician...here in CNY. RS: Long story short? Here goes! Young boy is not given a guitar, to take lessons or join a band after watching the Beatles on Ed Sullivan. Not my path, but I was taken with seeing the Stones on TV and thinking that would be a cool thing to do. Fast forward to my high school years where I hang around friends who DID play in bands. Little by little someone shows me a chord or two on a borrowed guitar. Fast forwarding to years of self learning with no goals, instruction, etc. and eventually get bitten by the bug at an open blues jam. Things accelerate, I join blues bands, learn the ropes, hone my skills and develop my music vocabulary. After many years of playing in lots of great CNY bands, I eventually ventured out on my own. And that’s where I pretty have been for the last 30 years...leading my own band! CS: What are your current music involvements? RS: Well, that’s the 64 thousand dollar question, isn’t it? Sadly, last year we lost our frontman, Mark Gibson to Covid. He left a huge hole that won’t be easily filled. We’ve started rehearsals again and have a handful of gigs booked. I’m dusting off my vocal cords and Dan ‘Cato” Eaton will be contributing as well until we can formulate a game plan. Here’s an opportunity to put out feelers for an amazing frontman! I’m pleased to announce that my former boss, Joe Whiting will be sharing the stage with us at our annual Blues In The Bay Fest this Labor Day weekend! CS: You don’t just play guitar. You also play “with” guitars.... RS: Thanks for asking! Pro Guitar Repair is my repair business that I’ve had for over 25 years that thankfully pays the bills. CS: What are some of the career highlights for you? RS: I have been blessed with so many, but here’s a few. I’ve had the honor of playing with some of my musical heroes, Duke Robillard, Anson Funderburgh, Rick Holmstrom and Bob Margolin to name a few. I’ve played with r&b pioneer, Jimmy Cavallo, at three festivals in England and recorded two CDs with him. I’ve released five CD’s under my own name that have received international airplay and favorable reviews.

CS: I know you have funny stories from the stage. RS: Please share a ‘tellable” story. Once we we’re witness to a bachelor party replete with stripper while we we’re waiting to set up for a gig! CS: What is the most important thing for a new player to learn or be aware of in their own music path? RS: Set yourself up for success by being focused, setting goals and working hard. You’re NOT guaranteed success in this or any other business! CS: It’s easy to see the history of the blues to some degree. What do you see in the future of the blues? RS: I see it in the younger new acts that have taken their blues influences and are exposing their audiences to this great American music form. I’m also encouraged to see older artists still excited to be performing! CS: What are your thoughts on the Central NY music world? RS: I don’t if it’s my age and the amount of time I’ve spent on the local scene, but I really feel a sense of community and brotherhood with musicians of all styles, both old and young here in talent rich CNY. CS: How can we stay in touch with you and your music? RS: Well, because of the tragic events of last year I haven’t kept up with the band’s website, but I am fairly active on our social media sites, FB, IG etc. So, I would say the best way is to follow us/me on FB. Grilling Up Great Brews Summer is on its way, vaccinations are well underway, and masks are going away! It’s certainly high time to get back to a little bit of normalcy and what better way to do that than to host a cookout with friends and family! When you start planning the menu, it’s probably easier to simply stock the cooler with cheap American beers such as Bud Light or Coors, but with all the hard work that goes into perfecting your medium-rare NY strip or fine-tuning your smoked baby back ribs into something that would be a contender on Top Chef, shouldn’t you have a beer that compliments and enhances your grill-master cuisine? Well, hold on to your basting brushes kids, and read onwards for some brew suggestions to elevate your entire backyard BBQ experience.

Beef – Steak, Burgers, Brisket

Beef is notoriously rich in fatty goodness. (Haven’t you noticed that everything your physician says to limit your intake of is always the BEST eats?!) A marbled ribeye is one of the best cuts of meat that can be simply seasoned with a little kosher salt and freshly ground black pepper, thrown on the grill and ultimately savored with each bite. While burgers may be a little more complex with a smorgasbord of potential additions to make it uniquely your own with cheeses, condiments, veggies, etc. When grilled, beef becomes a little charred, whether it be by charcoal or propane and this chemical process

adds to the overall richness and complexity in the flavoring of the beef itself. Then there’s brisket, which is usually dry rubbed with a multitude of spices and smoked at lower temps than a grill, but for a longer duration of time. Brisket, when prepared correctly, is extremely tender, smokey and flavorful. Brews of choice: Schwarzbiers, Smoked or Roasted Porters and Stouts, Brown Ales. Dark and roasted malts help to intensify the charred flavors found in grilled and smoked beef while bringing balance to the richness of the fatty juices. Brew to try: Smoke & Dagger by Jack’s Abby Craft Lagers (Framingham, MA), 5.6% ABV; a self-proclaimed brew that is “cloaked in mystery,” this black lager contains notes and flavors that are more often found in the aforementioned brews of choice; smoke, a roasted chocolate flavor, maltiness, with a smooth, slightly dry finish.

Pork – Ribs, Roasts, Bacon, Pulled, Sausages

Many pork dishes in the summer are served smokey and sweet. Pork is also quite savory and rich due to the fact that it contains a high fat content. Ribs can be slathered with barbeque sauce or simply dry rubbed with a spice mix. Pig roasts, especially in

THIS MONTH’S

relation to whole pig roasts, are done slowly in order for the flavors to build and meld into something quite delicious. Bacon can be added to ANY of your summer dishes, including vegetables and summer pasta or potato salads, sausages lend their own encased spicy flavors , and pulled pork is simply a staple around these parts here in CNY. Brews of choice: Smoked Porters, Tripels, Dunkelweizens, Marzens. Smoked porters impart an added layer of complexity that allows for building and layering with the different flavors and richness of the pork itself, while other malty brews tend to dance cheek-to-cheek with the various sauces and spices used. Brew to try: Maredsous Tripel by Abbaye de Maredsous (Breendonk, Vlaanderen Belgium), 10% ABV; this Belgian Tripel is golden-bodied, yeasty, has slightly floral notes, and is smooth on the palate with a warming finish. I personally brought this beer back with me from Bruges, Belgium, however, this can be found in specialty beer shops in the greater CNY region and beyond.

Chicken – BBQ, Jerk, Wings, Marinated

Chicken as a whole is a milder meat. If pairing with barbequed chicken, it’s best to choose a brew based on the sauce you use as it will provide the best and most complementary pairing. Jerk chicken and wings are going to offer up a spicy heat, and marinated chicken normally has a different spectrum of flavors that may include bright herbs and spices with sometimes a bit of a citrusy zing thrown in as well. Brews of choice: Saisons, Goses, Farmhouse Ales, Amber Ales, Helles Lagers – these will pair well alongside of your spicier sauces

Grilled Pesto Chicken Kabobs Ingredients Marinade: ¼ cup vegetable oil 2 tbsp. cooking sherry 2 tbsp. prepared pesto 1 tbsp. freshly squeezed lemon juice ½ tsp. salt ¼ tsp. pepper Directions

Kabobs: 1 ½ lbs. boneless skinless chicken breasts, cut into 1-inch chunks 1 (8 oz.) package mushrooms 1 small zucchini, cut into chunks 1 medium red onion, cut into chunks 12 grape tomatoes 6 metal skewers

Step 1 • Whisk oil, sherry, pesto, lemon juice, salt, and pepper together in a glass bowl. Add chicken pieces and stir to coat. Cover and refrigerate for 4 hours to overnight. Step 2 • Preheat an outdoor grill for medium-high heat and lightly oil the grate. Step 3 • Thread marinated chicken, mushrooms, zucchini, red onion, and tomatoes alternately onto skewers. Reserve remaining marinade.

Ambers with their malts, compliment the barbeque sauces used in conjunction with the chicken meat. Brew to try: Hennepin Farmhouse Saison by Brewery Ommegang (Cooperstown, NY), 7.7% ABV; this beer is fairly complex with coriander, ginger, orange peel and grains of paradise used to spice the brew. Seafood – Shrimp, Clams, Mussels, Oysters, Fish, Lobster

There are so many options when it comes to seafood in the summer from both freshwater and the ocean. Grilling any and all of the above either on skewers, wood planks, beach fire bakes, eating raw, or simply popping them in a pot on your grill burner, lends a whole new level of experimentation to your summer barbequing experience. Seafood with their delicate flavors should only be politely enhanced by the brews we drink. Brews of choice: Pilsners, Kölsch, Helles Lagers, Witbiers, Hefeweizens, Sours. All of these brews tend to be on the lighter side and not overly hoppy. Some add a little citrusy acidity to your sweet meats. We finish many fish and seafood dishes off with a

Don’t worry vegetarians and vegans, I got you! It’s not always all about the meat! Grilling vegetables is one of the best ways to bring out different flavors within the veggies themselves. Corn, asparagus, zucchini, portobellos, peppers, onions, potatoes – the list goes on and on. You can lay them directly on the grill, wrap them in foil, or saute them in a grill pan. There are so many options, including the addition of seasonings. Veggie burgers are sometimes plain, sometimes spiced and much like an actual beef patty, can be dressed-up a variety of different ways. Overall, veggies are versatile, but you’re going to want a beer that doesn’t overpower the mild earthiness of them. Brews of choice: Pilsners, Helles Lagers, Witbiers, Belgians, American Pale Ales, Hefeweizens. All of these options compliment the mildness of the veggies. If you’re grilling stronger flavored veggies such as mushrooms and onions, or a veggie burger with all the fixins’, American Pale Ales are an even better accompaniment. Brew to try: Saranac Pale Ale by Saranac Brewing/F.X. Matt Brewing Company (Utica, NY), 5.5% ABV; this classic American Pale Ale is a go-to for summer all on it’s own, but pairing it with your veggies, especially your stronger flavored ones, is even better. The brew is malty, hoppy and crisp with a balanced medium body. I hope your stomach is growling and your mouth is watering now that you’re completely beer-educated for those backyard gettogethers! So, drag that grill out of the depths of your garage, sweep off your deck and patio, dig out the koozies in your kitchen drawers and have a tasty, fun, and safe summer ahead! Cheers!
