Mark Doyle Celebrating 20 Years in the Shadows of Guitar Noir Mark Doyle first issued his “Guitar Noir” project in 1999 to the great interest of many— including and especially—the Central New York listening audience. It is 20 years later marking the significant anniversary of what can be considered among the most important strides in music in our city. I listened to one tune and was hooked. Which means that the sound is not exactly an obvious sound. Rather, it makes suggestions that are curious, challenging yet hauntingly familiar. In the meantime, Mark has been busy with a variety of projects. Projects for some household names, projects for not-so-household, and projects for himself. And here he is to tell us about it.

CS: What is your best advice for up and comers to the music biz. MD: Spend at least as much time developing your song-writing, playing and performing chops as you do on social media. You need to develop and feed your fan base but that won’t mean anything unless you have the goods to back it up. Be true to yourself. Know who you are and be it. CS: Amen to that. What do you look for in a good song? MD: Wow, big question. The songs that reach me most and live with me the longest seem to put me in touch with my humanity, whether it’s a resonance with my own life like in songs like “Yesterday,” “I’ll Follow The Sun,” “As Tears Go By,” “Warmth of the Sun,” “’Til I Die,” or something that summons empathy, like Dawes’ “A Little Bit of Everything,” Dylan’s “Just Like a Woman,” John Prine’s “Hello In There.” And then there are songs that just have a great story or point of view, like so many classic Stones, Tom Petty, Dylan or Lucinda Williams songs. CS: When will we witness the next public installment of Guitar Noir? MD: Saturday, November 2 at Auburn Public Theater. CS: What are your thoughts on the music scene today and how it has evolved from where you/we all started? How does it influence you? How has it been incorporated into

your music life? MD: It sure has changed. I don’t think you can say that it has evolved. After much thrashing and frustration over the last few years, I’ve come to accept what is as the new reality. It’s a streaming world. It’s not going away. The business that I knew is gone, all the gate-keepers are gone, all the A&R people are gone, the studios and the labels are gone. I know there are people that say that’s a good thing, and in some ways it is. You can make a CD in your bedroom now and release it and get it on Spotify and other platforms, but just because you can doesn’t mean you should, haha. There was a lot to be said for the gatekeepers. I remember when I was starting out with my first band, Free Will, and we would bring our tapes to record labels in New York and publishers and A&R people would say, “You’ve got one great song here. Come back when you have nine more.” And it would push us to go back and really try to come up with some great songs. We’d go back...”Now you’ve got three great songs, keep at it.” These days the one thing I discover when I’m producing some young artists is that they’ve usually been coddled by their parents and friends into thinking that they’re God’s gift, and they don’t want to hear feedback like that from a producer. There has to be a loftier goal and a higher sense of purpose than just going on The Voice and getting the sneaker endorsement. CS: What’s in the near future for Mark Doyle? MD: I’ll just keep carrying on doing work that I love and that inspires and challenges me. I’m grateful every day that I’ve gotten to do this as a life’s work. CS: Tell the nice people out there how we stay in touch with you and your music? MD: My website, www.markdoyle.com for any and all career things I’m doing, and then I have separate websites for The Maniacs, www.markdoyleandthemaniacs.com and for Jukin’ Bone, www.jukinbone.com. There are also Facebook pages for all of the above. CS: Mark, thanks so much for doing this interview. I’ve enjoyed hearing abut Guitar Noir. MD: Thank you, Chuck. ----------------------------------------------------------------------------This Month Next Month: The Premier of Revue Review On October 2, at 7pm, I will be hosting a showcase at the Listening Room 443 featuring the incredible talents of Christopher Ames, Bob Halligan Jr. and Colin Aberdeen. It Chapter 2 In 2017 the cinematic adaptation Stephen King’s IT was released, and immediately became a bon-fide blockbuster. Though audiences still fondly recalled Tim Curry’s eerie portrayal of Pennywise in the 1990 mini-series adaptation of King’s expansive novel, Bill Skarsgard’s new iteration of the killer clown was instantly memorable, and downright demonic. The film, anchored by great performances by its young cast members Finn Wolfhard, Sophia Lillis, Jeremy Ray Taylor, Jaeden Martell, Chosen Jacobs, Jack Dylan Grazer, and Wyatt Oleff, was full of and scares and laughs, and successfully brought the author’s vision to life in a way that I certainly didn’t believe possible. It tapped into the true essence of adolescent horror, and did justice to the source material. The fears that I harbored heading into the first installment of IT came to fruition in CHAPTER 2. With a running time that approaches the three hour mark, the film centers around the group of friends known as “The Losers Club” as they head back to Derry to confront Pennywise, and their past. It had been 27 years since they found a way to band together and defeat the monster that was terrorizing their town, but in the ensuing years, their memories of the summer had faded completely. It wasn’t until each of them received a call from Mike (Isaiah Mustafa) telling them that they needed to come back that they suddenly began to recall what had happened. Unable to cope with the unexpected call, Stanley (Andy Bean) makes the permanent decision not to attend the macabre reunion. The rest of the crew, Bill (James McAvoy), Beverly (Jessica Chastain), Richie (the phenomenal Bill Hader), Ben (Jay Ryan) and Eddie (James Ransone) reluctantly return to their hometown. As they all sit together at a Chinese restaurant, memories of their past come flooding Pennywise returns to torture and terrorize back. In the beginning, they Derry continued on pg 11

That’s one exciting piece of news about Syracuse’s famous “Fright Nights” event. But in fact, the excitement of a new, permanent location is a “big scary deal!” It’s 83,000 square feet of delicious terror – if not the largest fright event in the country, then certainly a leading contender. With 5 houses, 90 actors, giant animatronics and scares around every corner, it’s a must visit for the Season of the Spook. Owner/operator Grazzi Zazzara has been running the event for 16 years. His history in “entertainment” goes all the way back to owning and operating a fleet of ice cream trucks. When he opened his first Halloween haunt, it was a tent in a parking lot, and eventually ended up in the Beef Barn at the fairgrounds, where the event remained for many years – growing and expanding each year. Eventually, with so many set pieces, Some of the zombies that await costumes, moving parts, electrical you around every corner! and audio needs, a permanent home
became a necessity. When 1 Lepage Place in Syracuse became available, the decision to relocate was a definite “yes.” The space alone will get you in the mood —a long, high, older brick building, set back from the road— it lends itself to the long, winding, nervous-making entry corridors to each attraction; to soaring creatures that drop from above on unsuspecting visitors; to the inflatable giant you literally enter, and wander from head to – well, to the exit; to the dark corners and echoing sounds that will make you shiver, or scream,

Sports Take by MIKE LINDSLEY
Reasons For and Against the New York Yankees Winning it All It’s been fun so far. 100-win season and winning the first AL East flag since 2012. But anything short of a World Series win will be a disappointment for the 2019 NY Yankees. That is how it goes in the Bronx, but especially this year because the team has been in first for most of the year and dominant despite all the injuries. Can they do it? Can the Yankees reach the top of the baseball mountain for the first time since 2009? Here are the Top 5 reasons the Yankees will win it all and the Top 5 reasons why they won’t.
Top 5 reasons for winning it all: 1. Adversity. This team has used so many players because of injuries it’s ridiculous. Is anything feared at this point? The savages in the box fear nothing. Next Man Up is real and has been all year. From Ford to Gio to Tauchman to Maybin to everyone else, the Yanks have used so many players you easily leave people out! The confidence in this team is sky high. 2. They’re due. 2009 ring a bell? Last title in the Bronx. 3. Aaron Judge. He loves the big moment. He drools over October. He can be the big hitter that makes the biggest difference. We have seen it before. 4. Bullpen. Best in baseball. Can it live up to the hype? At the beginning of the season, many baseball pundits said this group is the best bullpen in baseball history. Well, in order to be in the running for that label, you must dominate October and win it all. 5. Home field advantage. As of 9-16-19, the Yanks are 53-22 at home and 45-31 on the road. The only better home teams in baseball? Dodgers and Astros at 56-20 as of the same date. And we know how 2017 ended-up in the ALCS. Astros beat the Yanks in 7. Every game won at home, ending in Houston. You get the picture. Top 5 reasons against winning it all: 1. Starting pitching lacking. The Yanks lack starting pitching, still, even though it has gotten better over the last month or so. If they are to reach the Fall Classic or even win it, James Paxton and Masahiro Tanaka have to be GREAT and someone else has to be really good. CC Sabathia is out of gas. J.A. Happ is an unknown. Who knows if using a

starter will work? What is Luis Severino going to be able to bring to the table even if healthy? Good luck. 2. Running out of players. While Next Man Up has been amazing to watch, the Yanks also have no idea how the outfield is going to look thanks to the Mike Tauchman injury and the brutal defense of Clint Frazier. Add to that the Gary Sanchez and Edwin Encarnacion injuries. Maybe the Yanks don’t have enough guys, finally, and are at the end of the line. 3. Giancarlo Stanton returning. Most people want him back. And #2 here may validate that. But he is an average defender who swings for the fences. The Yanks will also be forced to play him because of his contract. The hope here is that he is a DH at best and the Yanks win despite him. If he plays amazingly well and helps the Yanks to a title, this author will gladly take it and eat plenty of crow. … Serve it up! 4. Houston Astros. They are so tough, dominant and stacked. The lineup has no holes. They hit for power and average and are deep from both sides. The starting rotation is the best in the game led by Justin Verlander who should win the AL CY Young, AGAIN. Good away from home and elite at home. Houston is the favorite to win it all. 5. Pressure. While these players know what uniform they wear and what is at stake, this group hasn’t done it yet. Part of the Yanks dynasty of the 1990’s was winning the first one in 1996, knowing what it takes, picking each other up, and doing it again and again and again. Aaron Judge and Gleyber Torres and the rest haven’t done IT yet. IT is winning a pennant or winning a ring. We shall see if these guys can carry the load. Fright Nights continued from pg 6 or laugh, or all of those, as warranted. There are similar attractions throughout the country, but what sets Syracuse’s attractions apart is, without a doubt, the details. “I reached out to the drama departments at local high schools and colleges to get actors,” explains Tony Libbratore, who, among other things, trains and manages the live characters. “With a home base, we have more time to get each one into his or her character. They aren’t just people with masks on – we’ve got full costumes, real personalities, and that makes a better experience.” Beyond the characters, each themed house is loaded with the devilish details that make the experience immersive. Hidden doors open suddenly, black light, 3 dimensional art floats around you, and small, spooky bits and pieces (like a pile of creepy dolls, or a room full of pirate treasure chests) are lovingly crafted to set the tone and make it all feel real.

Critiquing each night, and the overall season, has been a part of the event model from the beginning. “We want to continue to make it better,” Zazarro says. “What can we add, where can we improve, what new ideas can we come up with. With a location, we can actually add something and not have to break it down and move it. And we can take our time after we close for the season and put our ideas into place.” There are five “houses” to choose from (you can visit just one, or all five). Confronting you when you first walk in is Jurassic Dark, a dinosaur-meets-zombie extravaganza – with 27 huge dinosaurs, many of them active (and some surprises we won’t reveal). The Fallen Giant —only 150 feet long— is more than happy to welcome you in but you’ll have to beware of the cannibal pygmies trying to gnaw their way out, too. Penny’s Playhouse is a happy place full of smiling, grinning, playful, clowns. What could be worse? Maybe it’s Lady Lamson’s Cursed Voyage – a shipful of glowing, floating, 3-D terror. But you can’t escape without a visit to Burgen Manor. Named for its creator, fright continued on pg 42

IT CHAPTER 2 continued from pg 5
The Losers Club, back in Derry
all remember the good times, but as the night rolls on, the darker aspects of that time period start coming back to them, culminating in a horrifying incident that involves mutant-spewing fortune cookies and a personalized message for the Losers. For much of the sequel, the Losers wrestle with their ability to stay and fight, as Pennywise continues to terrorize and torture members of the community. They must confront their own pasts and the mayhem that had unfolded in 1989. The film works well in the moments in which it explores the characters as individuals, and the flashback sequences featuring the younger cast are a welcome addition. Given the bond created between the audience and the characters the first time around, I was surprised that the younger cast was not utilized more. Their appearances are fleeting and disappointingly sporadic, projecting flashes of the movie that this could have been. Despite its daunting running time, there was still so much material that is crammed into CHAPTER 2 that it felt oddly disjointed. A subplot involving bully Henry Bowers
TABLE HOPPING
(Teach Grant) makes absolutely no sense within the context of the movie, whether you remember him from the first installment or not. More troubling, is the creatures that King conjured up in the 80’s may have worked on the printed page, but in Andy Muschietti’s film, they fail to illicit the same sense of fear. Grotesque mutations evolve multiple times throughout the production, and while the characters are shaken to their core, I found myself growing increasingly impervious to their existence. Worse still, Pennywise, who was a constant source of underlying terror in the first chapter, doesn’t project the same level of menace this time around. Like the kids, he isn’t utilized in a way that is advantageous to the production, and simply serves as a reminder of how much superior IT was. The saving grace of CHAPTER 2 is its cast. This installment works the best when the characters are interacting and riffing off of one another, with Hader serving as the driving force and glue that holds them all together. Though the focal point of the plot is supposed to be the horror that is unfolding around them, it is the relationships between the Losers that serve as the standout of the story. Moments of memory, love, and loss haunt them in both past and present, yet before any of these aspects can be fully explored, computer-generated spider legs start popping out of some random nearby object. While I certainly understand that this is a horror film, and these (supposedly) frightening images are central to the scares that Mushchietti and crew are going for, they just end up being repetitive and unappealing. IT CHAPTER 2 Failing to utilize the talents of McAvoy and Chastain is RATED: R particularly egregious and bizarre, given the fact that RUN TIME: 2h 50min both are two of the most versatile performers in GENRE: Thriller, Mystery, Horror STARRING: Jessica Chastain, James Hollywood today. With no development with their McAvoy, Bill Hader respective characters, their plights are rendered DIRECTORS: Andy Muschietti hollow and disingenuous, which is exactly how the WRITERS: Gary Dauberman film itself felt from start to finish. (screenplay by), Stephen King (based on IT CHAPTER 2: C the novel by) A special thanks goes to Regal Cinemas at Destiny GRADE: C USA for allowing me to attend this month’s film.

October Streaming With the Halloween only a few weeks away, we’ve reached the time of year where the horror genre takes center stage. Although a peek at the calendar will confirm that it is 2019, based on two recent Blu-ray releases, it feels more like we’re partying like its 1989. Proving once again that the allure of nostalgia is seemingly impossible for studios to ignore, two cheesy cinematic staples got the modern reboot treatment, and are primed for the picking if you’re looking for a Hollywood horror. Since its initial release in 1989, CHILD’S PLAY has remained an oddly endearing pop-culture staple. It was the type of movie that found a way to worm its way into

the public consciousness, and whether people had actually seen it or not, everyone knew who Chucky was. Over the ensuing 30 years, there were a number of lackluster sequels, but even these found enough of a following to keep the maniacal monster relevant. Rather than release another straight-tostreaming installment (although, admittedly, this connotation no longer carries the same stigma that it used to) CHILD’S PLAY received the reboot treatment, and the results were pleasantly surprising. Featuring a cast that includes the delightful Aubrey Plaza, the hilarious Brian Tyree Henry and the legendary Mark Hamill as the new voice Chucky from 1990 of Chucky, this modern take definitely had a BLACK MIRROR feel to it. Constructed in the technological age, Chucky is now a walking and talking incarnation of Alexa who can be digitally connected to every facet of your life. Uploaded into the cloud, he is a much creepier version of BLACK MIRROR’s Ashley O. Though he has a set of strict safety features that prohibits him from learning the concepts of rage and violence, when these features are disabled, he instantly becomes a psychopath in training. Such is the case with Andy’s (Gabriel Bateman) refurbished Chucky, who starts as a lovable pal to the lonely teen, and ends up becoming the same homicidal doll that has terrorized audiences for decades. This modern take on the familiar story was more entertaining than I expected, though not exactly a “must-see” by any stretch of the imagination. Hamill is delightfully demonic,

Ellie, the younger daughter new to the area, spots a funeral procession of children taking a dead dog to the cemetary and the rest of the cast certainly embraces the undeniable corniness of the whole venture, but that’s always been the overriding theme of the franchise. Like its predecessors, it never takes itself too seriously, and director Lars Klevberg and crew have fun along the way. This, more than anything else, is the saving grace of the production. By throwing in a few laughs, a couple of nods to its forbearers, and some seriously demented violence along the way, it does just enough to keep its audience engaged, but unlikely to remain with them in the same way that the original did. While failing to have the same illustrious cinematic longevity as CHILD’S PLAY, 1988’S PET SEMETARY not only scarred a generation of impressionable youth who tracked down a VHS copy of the film, but also successfully inspired a sequel that easily ranks amongst the all-time worst. Stephen King is as hot of a commodity now as he has ever been (see my review of IT CHAPTER 2), as are reboots, so revisiting the SEMETARY does make a lot of sense. Like the original, Louis Creed (Jason Clarke), his wife (Amy Seimetz) and two children Ellie (Jete Laurence) and Gage (Hugo and Lucas Lavoie) have left the big city and have

planted roots miles away from suburbia. They own a huge piece of land, and have a wonderful neighbor in the form of lovable Jud (the always great John Lithgow) who is always there to lend a hand and share a meal. Unfortunately, for both felines and kids, the property is located on a very busy road in which tanker trucks break the land-speed barrier every time they drive by. Whereas CHILD’S PLAY toyed with Chucky’s origins and transformed him into a psychotic Siri, PET SEMETARY alters the story itself in a few unexpected ways that allows the film to stand on its own merits. By doing so, it also was a departure from what unfolded within the pages of King’s novel. Though this may have been a gamble, King was asked in an interview for Entertainment Weekly if he liked the changes, and he admitted that he did. As a viewer, and a fan of Mr. King, I did as well. It stuck true to the story itself, while opening the door for further exploration of the themes that are central to the twisted tale. The question of the limitations and boundaries of familial bonds are explored with a disturbing intensity, and the consequences of these impossible decisions have unfathomably horrific ramifications that unfold in shockingly brutal ways. Much like the 1989 version, this one is unsettling on various levels, and provides a solid jump-scare or two along the way. CHILD’S PLAY- C+ PET SEMETARY- B-

Preventive Medicine by DR. BARRY
Checklist For The Last Chapter It’s been a while since I’ve covered it but I have to deal with it practically every day so let’s make sure we get through it as painlessly as possible. What I am talking about is your dying … the last chapter of your life and what control you have over it. I have been known to say to people ”I like you. -I hope you drop dead.” People are taken aback until they actually think about it, then they get it. You can drop dead in your sleep after years of good or you can succumb to one of your many illnesses probably during some
nursing home stay. You know what a great place they are. They must be great because they are full all the time. Yet everyone I know says ”You’ll never get ME in one of those places!” This column is for you to plan ahead so you actually have some say in what happens to you when you are no longer independent. Don’t leave it up to your kids, most don’t have what it takes to do the right thing and honor your wishes, it gives many of them a guilt trip making life or death decisions that were not thought out ahead of
time. You know me – I think you should have it all planned out, the burial business, even what you want in your obit and the music you want played. But we are not talking about what happens after you die, we are talking about filling out a few forms that will guide your care at possible end of life situations. Either you are going to go out easy or hard —that’s your call— either surrounded by friends and family in your own home or die in some sterile Intensive Care Unit being tortured by emotionally repressed staff that are treating your body, doing whatever they can to eke out a few more hours or days of your badly dwindled self. I don’t know about you but that’s an easy choice for me. So that means I am a DNR. -Do Not Resuscitate. No CPR for me. I am well read on the success statistics of CPR and except for defibrillator use, there is only a tiny chance of meaningful recovery. So the first decision you have to make is who will be your health care proxy. You should list an alternate because people die, etc. This person should have a good idea of your end of life wishes. My wife is my proxy and she knows my wishes well. There are free forms on the internet so you have no excuse. Then you decide on DNR for yourself or not. If you really want everything done, (which I translate to mean that you have no idea what’s in store for you), but if you do indeed want every possible means taken to keep you alive all you need is the Health Care Proxy. If you want to be DNR which, to me, translates to mean dignified death then you have to get an out of hospital DNR form from your doctor. They have blank ones on file. This only works if people see the paper so keep it in that folder on the fridge next to your med list. Now it’s New York State so you know there is some terrible paperwork yet to be faced.

A completely unnecessarily complex form that tortures patients families and doctors alike. It’s called the MOLST form. This form addresses reasonable questions about your care but in a needlessly complicated way. The form proceeds to ask about full code versus DNR, then whether you just want respiratory support, then to ask about IV fluids, antibiotics, at what point to hospitalize you etc. -Good questions … bad form. I know a lady who had two children who were both doctors. -The daughter came to her mother one day and said, “You know ,mom , your son is your health care proxy. Did you know that if you were in a nursing home and had pneumonia he would withhold antibiotics and let you die?!” The mother responded ”That’s exactly why HE is my proxy and you are not. If I ever end up in a nursing home that means I’m in a bad way. Don’t keep me around.” It’s hard to pull the plug … it’s hard to see your loved one slowly endure the dwindles. Each one of us has to decide for themselves the right thing to do but it sure helps the family a lot if your wishes are obvious and oft repeated. My guiding principles are to try and treat everyone at this time like they were my own father and also to go along with whatever they want to do for as long as we can (even if its not in their best health interests) because that’s what I would want done for me. I hope I drop dead … just not today. Now let’s get serious. Your loved one is in the adult home or nursing home. They wouldn’t be there if they could avoid it. They wouldn’t be there if they were healthy. They are indeed writing the last chapter of their lives. Why are you still insisting on giving them so many pills. Of course they are depressed. -Do you really think a little white pill is continued on pg 29

How is Harvest? Though they can usually be found in the vineyard, or on a crush pad checking on the progress, I was able to track down a few of the owners to get an answer to the age old question: How is harvest? The first order of business in answering this question is to see how the grapes fared during the spring and summer months. For the most part, the weather treated the grapes well. The cool, wet spring delayed the start of the growing season and made getting the spring chores difficult. “The relatively humid season meant that growers had to be diligent in their disease prevention programs, and in many cases, this often resulted in more summer pruning and leaf removal than normal to keep the fruit more exposed to sunlight, which helps fight off disease,” says Dave Patterson, co-owner of both Swedish Hill and Goose Watch Wineries. All in all, it was a pretty favorable growing season, with no major events such as flooding or hail storms. That being said, the overall harvest season is running 1 to 2 weeks later than usual, which is attributed to the delayed start that spring brought us. So my next question to the group was “What is the ideal Cuisine weather condition for the rest of harvest season?” My favorite answer was from Cameron Hosmer, of Hosmer Winery. “Grapes like the weather we like.” Fair enough, but to break that down, the ideal condition would be moderately warm, sunny days and cooler nights, with half an inch of rain, which would occur only at night. These are the conditions that are best for sugar accumulation and flavor development. Though impossible to truly tell, I had to ask if there were any predictions on the quality of grapes, or if there were any varieties that they were particularly excited about for the 2019 vintage. Gene Pierce of Knapp Winery simply stated “All, in general, as it

looks like a good harvest – quantity and quality.” Since he isn’t overly concerned that something may not live up to the Finger Lakes reputation we’ve garnered over the years, I take that answer as a good sign for the grapes overall. Both Hosmer and Peterson said that Riesling is looking to be just as good as ever. “Not to sound like a broken record for applauding Riesling, but this year has been outstanding for Rieslings. Riesling thrives under cooler conditions, developing wonderful floral and fruity flavors and holds its crisp acidity,” mentions Peterson. He also said that this year is looking promising for other cool climate, aromatic whites such as Gewurztraminer and Pinot Gris, as well as sparkling wines. So the overall verdict, assuming Mother Nature is kind to us for the next 6 or so weeks, is that we have a lot to look forward to in the 2019 vintages that are coming out of the top wine region in the country and America’s first wine trail. Regardless of the time of year, there will always be temptations! You can’t keep putting it off or waiting for the right time. What are your goals? Do you want to do your first 5-K? Get through an entire group fitness class? Maybe you just want to be able to do a pull-up? Whatever it is, be specific and make it about you and what you want to achieve.

Overcoming Roadblocks to Achieve Health and Fitness Goals
You might have good intentions when it comes to starting an exercise program, but for one reason or another, you just feel stuck. Maybe you’re having a hard time getting motivated. Perhaps you feel like you don’t have time. Maybe you just don’t know where to start. Take a step back and think about what you really want. Think about how you truly want to look and feel. What is most important to you? Do you want to feel fit, healthy, confident, empowered, unstoppable, strong, and comfortable in your own skin? Maybe you would like to get off some of the medications you are on?
Everyone is Busy, Busy, Busy!
Yes, we are all busy! The good news is you don’t have to spend hours at the gym. There are plenty of ways to fit various forms of exercise into your routine, without taking time away from your family or commitments. Set aside a block of time each day to be active. You can get a good full-body workout in 30 minutes. So, decide on the best time to set aside 30 minutes to exercise. If your day is really busy, think about trying smaller chunks of time; 10 minutes three times a day or 15 minutes twice a day. Did you know that many of us sit for more than 10 hours each day? Replace less
active blocks of time with active ones. Here are a few ideas: • If you sit at a desk at work, take more breaks to get up and move around. • On your lunch break grab a coworker and go for a walk. • Take the stairs instead of the elevator. • Bike or walk to places that are within distance. • Park away from the store or the office and walk to the entrance. • Walk for half an hour instead of watching an extra half hour of TV, surfing the net, or hanging out on social media.

The Write Stuff by NANCY ROBERTS
The Magic of Oz It’s my hope that today’s children will read a handful of classic books, among them but not limited to: the Narnia stories, Little Women, lots of fairy tales, Peter Pan, Robin Hood, Alice in Wonderland, Winnie the Pooh and Paddington Bear – and of course, at least one of the tales of Oz, which began with “The Wonderful Wizard of Oz.” If you have lived in Central New York for more than a few minutes, you’ll know that this part of the country lays claim to the writer, Lyman Frank Baum, who was born in Chittenango and lived much of his life in Syracuse and Mattydale. As a result, the area also invests in celebrating the man, the books, the hit 1939 film, and the many characters we have grown to know and love.

This October, you can join the Lyman Frank Baum Foundation as it tours the Syracuse area by bus, stopping at many of the actual locations where the Baums lived, worked and entertained, many of them places scholars —and the foundation— believe gave Baum the inspiration for his books. The two-day event, October 5th and 6th, encompass three main celebrations: the bus tour (CNY IS The Land of Oz) on Saturday; the balloon displays in Syracuse and Mattydale; and the Character Breakfast on Sunday. Kathleen Sorbello Di Scenna, Executive Director of the Foundation, is clearly fascinated with connecting the “dots” of Oz —finding the ways in which Baum used the people and places of his own life to populate his books with brilliant scarecrows, brave lions, and a loving tin woodman— as well as munchkins, witches and the famous Wizard. The event marks the 100th anniversary of Baum’s 13th and final Oz book, “The Magic of Oz,” the 100th anniversary of his death, and the 80th anniversary of the movie adaptation of the book (which happens to be a “ruby” anniversary!). The bus tour will make 12 stops, and at each stop visitors will be treated to a character from the book (or movie). On their “Yellow Brick Road Portal Pass,” tourists will be encouraged to find the hidden object and get a stamp on their pass. Those who complete their challenge will be added to a drawing as their names are placed in Dorothy’s basket – and pulled out to win a prize. In Clinton Square, you’ll find a hot air balloon – stationary and not inflated, as the Square can no longer accommodate the 7 story inflatable; but Di Scenna believes it was the 1871 hot air balloon landing in the Square, flown by Carlo C. Coe, that inspired Baum to have his Wizard land in Oz by means of a hot air balloon. It will also mark the first time since that a hot air balloon has been found in just about the same location! That same balloon will be inflated and continued on pg 34

Yoga Clothing: 3 Reasons to Select the Proper Workout Clothing When it comes to thinking about working out, about fitness, or yoga, one thing that comes to mind is what to wear. Is yoga clothing necessary or a luxury? In this article, I make the argument in three parts why wearing the proper workout clothing is anything but a luxury. I share three reasons why yoga apparel makes your training better. The first point is that in all walks of life, the uniform worn is not optional. The second point is all about comfort. Finally, I write about one’s ability to take workout clothing out of the gym and into the world making it quite flexible. So let’s see what I mean.
Yoga Clothing And Uniforms In all walks of life, uniforms play an important role in both comfort and identification. You identify the police by their uniform. Firefighters have a particular look wherever you go. Sports franchises are identified on and off the field by what they wear. Work as an executive in business and you have to wear a suit. Lawyers and Judges in Great Britain and most of the Commonwealth wear formal wigs in court. I could go on and on but I am certain you get the point. Identification is not the only reason to wear a uniform. Police and firefighter uniforms are designed for protection. Many sports uniforms, once one looks beyond the team identification issue, often comes down to protection as well.

Football players wear uniforms that protect vulnerable joints and body parts from serious injury. Hockey players wear protective padding as well. Soldiers on the battlefield wear body armor and kevlar helmets designed to stop bullets. Carpenter’s pants have pockets for nails, loops for hammers, and places for pencils, measuring tools and more. In short, pretty much wherever you turn, you see people wearing uniforms for identification and protection. There must be a reason for this kind of human behavior. Yoga clothing, including yoga pants, sports bras, and other tops are designed for a practitioner to work out in comfort, to stay cool during workouts and to be durable. Like other sports and walks of life, yoga clothing is designed to elevate one’s experience at the yoga studio or at the gym, while running, jogging, or biking. In fact, yoga clothing is the perfect clothing for your fitness experience. Yoga Clothing And Comfort Yoga clothing is designed to be comfortable. Yoga requires some unique stretching postures that twist one’s body into what seems like impossible positions. It is important that the fabric used to create yoga clothing is stretchable yet supple enough to return to its original shape when the stretching is over. Yoga clothing should also provide support when needed. I, personally, can think of nothing worse than yoga attire that bunches up continued on pg 40

Brew Time by KRISTIN MERRITT
Prost to Autumn! During this time last year, I spent my first days of Fall in Europe at the ultimate autumn brewfest —Oktoberfest— in Munich, Germany. It was, in as few words as I can sum it up, simply AMAZING. Sadly, as much as I want to go back again, (and as jealous as I am of a friend who is headed there!), I’ll have to settle for autumn beers stateside this year. Luckily, I have a whole bunch of great brew and events to choose from … and I’ll still be able to throw on my Dirndl, wrangle up a few of my favorite friends, hoist my souvenir Hofbräu stein up in the air and welcome autumn with a great big “PROST!” (That’s “cheers” for all you non-German speaking folk.) Oktoberfest-style beers are brewed by both the big guys in the beer business as well as the smaller craft breweries this time of year. In summer we’re looking for refreshing, crisp, thirst-quenching brews, but in fall, we naturally turn to heartier, darker brews that lend more character and depth to their flavors. Brews that go with chili and stews, sausages and potatoes, football games, bonfires, and sweaters; making these Oktoberfeststyle beers a perfect beverage to transition us from summer into the cooler temperatures of autumn and then eventually into winter (and the unofficial start of stout-season!) What is an Oktoberfest-style beer? I won’t bore you with a re-write of prior articles I’ve written that include my own experience at Oktoberfest (November 2018) and also about Märzen beer (March 2019) —both of which you can find in the online Brew Time archives over at www.tablehopping.com, and highly encourage you to check out for more details!— but the vast majority of beers that are marketed as “Oktoberfest” beers are Märzen-style beers. These Oktoberfest beers range from pale German Helles lagers through to dark German lagers or Dunkel beers. What we find here in the states is not exactly what they serve at THE Oktoberfest in Munich, but there are similarities including the types of malts Call ahead

Oktoberfest is well known for its beer, food, and bartenders in traditional Dirndl dresses
and hops used to brew said beer; and of course, with all the experimentation that happens in America, there’s no doubt that each brewery will fine-tune their particular Märzen-style brew to be unique in and of itself. Truthfully, the only way to get a 100% traditional Oktoberfest beer is to travel to Munich during the two-week festival and try the beer for yourself! Sierra Nevada Brewing Company is a great place to start if you’re looking to try out an Oktoberfest-style beer. Every year, Sierra Nevada’s marketed “Oktoberfest” is a little bit different because they partner with a different German beer company to produce a collaboration beer. While the beer is always in the German style, the different recipes create something new and unique year-to-year. For 2019, Sierra Nevada partnered with Bitburger Braugruppe, a macro-brewery out of the Rheinland of Germany. At 6% ABV, this Märzen is traditionally amber in color, malty, and has a touch of sweetness to the overall flavor. Pilsner and Munich malts along with Bitburger Siegelhopfen, Magnum, and Loral hops are used. It’s an easy drinking, yet solid Märzen, and it’s easy to obtain too! Because it’s mass-produced, you can find this both on tap all over Syracuse (The Blue Tusk, Alto Cinco, Trappers, etc.,) and also in all of your local supermarkets and convenience stores. And, for all you beer-nerds out there, just because you can find it in all 50 states, don’t pass up this brew if you have the opportunity to try it, as you will not be disappointed. In the Syracuse area, we are also privy to the German-style Biergarten Wolff’s which always has a great selection of German beers on tap. Lagers, Märzens, & Dunkels (Oh, My!) from German breweries Spaten, Hofbräu, and Paulaner to name a few. In addition, they always have rotating drafts of seasonal brews, local beers and ciders and several bottled choices as well. It’s also a great place to catch a soccer game (the other football) if you’re into that. WE CATER For those of you interested in Oktoberfest FOR ANY without the option to travel overseas, there DAILY BUFFET EVENT! My Mind To Yours
by DEBRA MERRYWEATHER
Expanding Our Discussions The September 24 Post-Standard featured an article by Anna Clark headlined “Affordable clean water is a racial issue.” The headline stated “separate but equal” policies are still with us. The article went on to say that in Flint Michigan, where a switch in the water source caused alarming rises of lead in the water, the current population is 57% African American, which suggests, the 43% non-African American population is drinking the same water. Ms. Clark lumps together old lead pipe water systems, systems installed prior to northward migration of African Americans, real estate redlining, now illegal, and “white flight” to the suburbs as evidence of current racist policy. The article fails to mention that Flint’s loss of tax revenue, and difficulty updating infrastructure might be the result of the closing of GM’s Flint auto manufacturing plants and the initial loss of 30,000 jobs – jobs held by people of all skin tones. I highly recommend Michael Moore’s 1989 “Roger and Me,” a film I viewed as part of my coursework for an MA in “Labor and Public Policy Studies.” I am an MA degree program dropout. In the mid-1980’s, X-country skiing and self-help groups displaced my anxious need to be graded for reading books and thinking about what I’d read. Of
course, without that MA Degree, I couldn’t be recognized for knowing about the subject or maybe getting a job in that field. Higher education is said to be the ticket to a secure life. College confers some status. And, it is generally college educated, wealthier, ostensibly “liberal” folk who write about and talk about “white privilege.” Why am I writing about this? Not all “whites” are privileged. Not all “whites” are white. Not all “blacks” are 100% African American. Take President Obama. In our part of the universe, perhaps we all need to become better versed in the specifics, beside race, of the issues we all face. We need to read more analysis. Amid my five free articles per month from The Boston Globe, was a September 18 open letter to Felicity Huffman written by Samuel Acevedo, the Director of the Boston Higher Education Resource Center, a private educational advocacy organization. Mr. Acevedo states Felicity Huffman needs to make amends, such as, Acevedo writes, “her asking, ‘Who did I wrong?’ and ‘How can I make this right for them?’ ” Acevedo writes, “The true victims of this crime …” —Huffman’s paying $15000 to a proctor to correct Huffman’s daughter’s SAT— “… are the thousands of students of color already facing nearly insurmountable hurdles in order to achieve, even without a national admissions scandal adding more obstacles and stealing already rare opportunities.” Felicity Huffman Felicity Huffman was one of

33 parents who, from 2011-2019, paid a total $25 million to an “admissions consultant” who arranged services, such as extra SAT test time and test corrections, to improve their children’s chances for admission to elite schools including Ivy League schools. Samuel Acevedo’s website, and many studies, suggest that some students seeking college educations need extra help because they are not prepared. This past May, the National Student Clearinghouse Research Center reported that overall college enrollment had declined for the eighth consecutive year. So, for current applicants who are prepared for college and have access to money, it seems there should be fewer obstacles and more opportunities. population is very very limited and I don’t think justifies their use. For that matter I wouldn’t treat blood pressure because I think the side effects of many of the blood pressure pills outweigh the possible benefits. No, may I suggest to you that when you are putting your loved ones in the nursing home it’s time to stop almost every single medicine and focus on what’s important … their comfort. If they want ice cream and whiskey for breakfast and dinner great. If they want to eat M & M ‘s instead of peas, what color do they prefer? Multiple studies have shown that when you stop the polypharmacy some patients actually improve off the medications! Some people look at me when we have these discussions like I am trying to finish off their relatives. On the contrary, I am devoted to doing everything I can to improve the quality of their life. Unfortunately patients and doctors alike put way too much faith in the pills which is not justified by the published medical literature but the urge to do something is very strong. It’s taken me over 30 years as a physician to realize that sometimes, often really, less is more. Until next month … get well … stay well.

Innovation is Fun! Technology is a frightening, fascinating, fabulous thing. It has created some of the most amazing, horrible, convenient and silly things imaginable. If you look for a list of the “greatest” or “most significant” tech breakthroughs, you’ll quickly find that the majority of curated lists will focus on just the last few years, as there have been so many, and they are so wildly differing that it’s hard to pluck a handful and say “these are the most important.” Surely when we look at history at this moment, we’d have to say that refrigeration, indoor plumbing, splitting the atom and the internal combustion engine would make most people’s list of 50, maybe even 10 of the “biggest” of all time. Air travel? The cell phone. The Internet. But then there are the little ones, like the ball-point pen, glue, and matches. Two things about technological innovation that are significant to me are first, the unexpected turns a single innovation will take – leading to things never dreamed of by the original innovator. Second, how often an engineer will look at a problem and solve it in a completely unexpected way – often, backwards from the more conventional thinker’s approach. When we enter into “discussions” of problems confronting mankind, our tendency is to see the scary and the awful, or limit our vision to what the one item can do without

considering where our endless imagination and chance discovery might take us, once up on the shoulders of a previous invention or technological breakthrough. That said, I stumbled across two things recently that are as different as possible, and yet each in its own way offers a promise of a simpler, healthier life. And, with a chuckle, I present: The Tap Air Fryer I’ll start with the Air Fryer, as it’s not exactly new, but is becoming more affordable and therefore visible in stores. Always searching for a way to make food tasty yet more healthful (and less fattening), when an ad for a reasonably priced ($69) air fryer popped up somewhere in my travels on the Internet, I was intrigued. As Wikipedia explains, an air fryer is a scaled down version of a convection oven, and a heat source that rivals the very hot oil required for conventional frying. It works by using very hot air as opposed to very hot oil (or water). “A mechanical fan circulates the hot air around the food at high speed, cooking the food and producing a crispy layer via browning reactions of two kinds. In caramelization, sugars break down and chemically transform into complex brown-colored substances,

while in the Maillard reaction, typically seen where meat is roasted or stir-fried, the carbohydrates/sugars and proteins in a food react with each other to form Schiff bases, which then form other flavorful compounds, including brown ring compound containing one or more nitrogen atoms in the ring, such as pyrazines and pyridines. The Maillard reaction requires temperatures of between 280-330 degrees F, while caramelization temperatures depend on the sugar being caramelized and range from 230-360 degrees F.” (Wikipedia) All of which is to say, it takes very high temperatures to get that flavorful goodness out of most of the foods that we enjoy so much when they’re fried. And, needless to say, aside from being fattening from adding all the oil used in frying, it’s a pain to clean up after cooking that way. The air fryer —now that I’ve tested it and can say that it really does work— solves the problem by circulating very high temperatures around the food, cooking it and creating the chemical reactions that make the tasty fries and wings.

The Tap, on the other hand (literally), is a wearable device that slides over your fingers and acts as a Bluetooth keyboard and mouse. It can be paired with a phone, tablet, or computer, and can be a real benefit to anyone who finds the small keyboard of a phone or tablet hard to hold or painful as configured to type on. First reviews aren’t stellar, but as with most new products, it will get customer feed-back, someone will invent the “better mousetrap,” and as we now see people walking down the street simply “talking” into the air (they actually, of course, are wearing Bluetooth ear buds and are talking on their phones (or listening to and responding to texts and emails on the go), we’ll no doubt one day add the convenience (and privacy) of a single-handed “keyboard” we can use anywhere, any time.

The Magic of Oz continued from pg 24 glowing at the site of Baum’s childhood home, Rose Lawn, in Mattydale – now the Kreuger Funeral Home. And finally, on Sunday, you can dress as your favorite Oz character —or accompany your own little munchkins— for a Character Breakfast at the Hotel Syracuse. Along the way, you’ll learn more about the man and the magic of the story of Oz – and how Central New York, from his beloved childhood home to his job at a dry goods company as a young man to his marriage to Maud Gage daughter of Woman Suffragist Matilda Joslyn Gage. It is believed that Matilda, Baum’s mother-in-law, inspired Glinda in his books. Baum was also an actor, and his experience in the theater provided him more fodder for his stories. And if you haven’t already done it – you still have time to read at least one of the Oz books before the event! The Magic of Oz Event CNY IS the Land of Oz ! Word on the Street by BILL MCCLELLAN
Pat Hogan A Rare Breed – A Good Man Back in my younger days we had a slogan “De Opresso Liber” (To Liberate the Oppressed). I became involved in Pat Hogan’s Mayoral Campaign in early 2013. Pat also had a slogan that he was proud of and lived by. “Ourselves Alone” (“We are all One here”). Both were adopted by elite organizations to exemplify our very best in

I remember a conversation I had with Pat one Memorial Day. Pat said, every year on Memorial Day he visits the Vets Cemetery where his parents are buried. His Dad served in the U.S. Army Air Corp. Then he said something that struck me and tells the tale of Pat Hogan. He said “I usually pay my respects at Billings Park (Salina and Warren Streets) where the Rock of the Marne (WWI) and Spanish American Monuments are. They are forgotten by some. But not by me.” Voters, this is the Man we need. Working on Pat’s Mayoral Campaign for one of the finest individuals I have ever known was one of my finer moments. Pat Hogan is one of the very talented few. Pat has political talent and savvy that sets him far apart from others in this leary business. This is achieved through compassion, respect, courtesy, firmness with integrity, and a character that humbles and sets the standard. With these qualities Pat is able to sift through political flaw, achieve respect from disagreeing view, and find and implement solutions that really improve our lives. Pat is highly respected by all. He is able to show others the best way and, impressively, he is able to show them why. It is one thing to have decades of political experience. It is quite another to have the character and temperament to absorb and disseminate and shape this experience in the finest traditions of what it is to be an American. To arrive at this juncture, not tainted, but armed with knowledge, depth and insight enabling just compromise, allowing the people to prevail, is Pat Hogan.
I’m going to demand that we become aggressive and bold. And I think we’ve got an opportunity because we have a new Mayor (Ben Walsh) who is open to a lot of new ideas. We have a new County Executive (Ryan McMahon) and they’re working together. I love that!” With Pat in this young brilliant enthusiastic environment, Syracuse is on the move. pursuit of Compassion, Fairness and Justice. In those three words we find the heart of what good men and women fight and die for. We find the meaning of our great land. We find the hope of human pursuit. We find the humbling bravery of our finest. We find Pat Hogan.
Congratulations! Dolores Miller
Pat is running for the 2nd District seat (Tipperary Hill and the Near West Side) on the Syracuse Common Council currently held by Chad Ryan. Chad, who is also among our absolute finest, decided not to run for the seat. Chad has represented the 2nd district since 2013. Chad and his family have a rich Political history in our area. Chad works as Funeral Director at the family-owned Edward J. Ryan and Son Funeral Home. I met and assisted Chad in 2013 when he first ran for this seat. I came to know Chad and his sister Jill and they are among the finest people you will ever meet. Pat is friends with Chad and his family and is running with Chad and his families full support. Pat has an awesome résumé and reputation in the City of Syracuse. He was the Deputy Commissioner for the City Parks Department where he worked for 34 years. He also previously held the 2nd District seat for 8 years before running for Mayor. Pat is also a former teaching assistant in the City School District. Standing alone this is an impressive résumé. But when complimented by the unique qualities of Pat Hogan it is clear a highly experienced and rare individual is on the scene and the 2nd District be far better for it as will the City of Syracuse. Pat has already been discussing major issues with Mayor Walsh. In Pat’s words: “The

community grid has a lot of logistical and operational problems and I brought all of those up to the new Mayor. And I think there’s an awareness that we’re on a cusp, that we can either continue on this slow downward decline or we can actually start going up. I detect that we’re going up, I really do. I think there’s an energy in this town and people are looking for leadership – and there is leadership here. It’s young and maybe an old hand like me can offer some guidance, but we’ll see. I had a neat little office at campaign headquarters during the Mayoral run. It afforded a front seat view to Campaign activity. The office buzzed with Department Heads, (each seeking a restoration of decision making that respected the hallowed nature of running our city). They visited often. Councilors and current and past City Leaders arrived every day. Rank and File and High-Level Policemen visited almost daily. Lance Denno a retired Fireman and a Counselor at time played a major role as did his peers from the Fire Department, men and women among the finest folks I have ever known. Several Firefighters were volunteers and reminded me of my youth when I served with such people. There were many battle-hardened Veterans. The guys that did the job on the battle field. Those with the strength you could feel and the clear compassion that made for individual greatness. And then the ladies from Tip Hill that worked so hard for Pat and all the countless volunteers from all over the city that worked very hard every day with loyalty and respect. These are the folks that Pat Hogan not only draws but inspires. If you don’t know Pat, when you get to him you will join this humble group and understand why our city will be a far better place with Pat Hogan, especially now that city is finally really on the move. Pat Hogan is a Syracuse Legend. Our city will reap the benefit of not only an experienced brilliant man and high achiever, but also a good man that walks tall and believes in fairness and right. Pat is not a man of rhetoric; he is man of deed. He has the wisdom and the insight to respect and protect achievement while at the same time continued on pg 43

Yoga Clothing: 3 Reasons to Select the Proper Workout Clothing continued from pg 25 in the joints or in the crotch, causing one to constantly be pulling the fabric back into place. This means that yoga clothes must feel almost like a second skin to the wearer. Another important feature of yoga clothing and comfort is the ability of the fabric to wick moisture from the body to the fabric, exposing sweat to the surrounding air only to act as a kind of air conditioner making the body feel cooler. Highly stretchable fabric with the ability to wick moisture assures a most comfortable experience. Yoga Clothing Into the World The best thing about yoga clothing is that it is able to perform a dual role in your wardrobe. Not only great in the yoga studio or gym, yoga clothing has also become a casual fashion statement as well. While some critics bemoan the breakdown of culture and society as more and more women are wearing yoga pants and sports bras as standard daytime apparel. Not only is this an economical use of one’s casual wardrobe, but it is also providing women with additional choices for how they present themselves to the public. This newfound freedom is, I am arguing, not a breakdown of culture or society, rather it is a bold statement by women that our time has come...finally. Yoga Clothing and You I am arguing that because is yoga clothing focused on comfort in fitness training, it is the uniform of choice for the yoga studio and gym. Yoga apparel is the perfect clothing for one’s practice. What follows, then, is that one should not only seek out yoga clothing but seek out the most comfortable clothing one can afford. If your workout clothes bind or chafe you’ll quickly lose interest in continuing your fitness program, in whatever form that program is expressed. Comfort also extends to the ability of your yoga clothing to wick moisture away from the body and into the fabric. This allows a cooling effect that translates into greater comfort. Finally, I argue that in spite of social and cultural critique bemoaning the wearing of a workout ensemble outside the gym, what is actually going on is women are making a bold statement about comfortable clothing and the economy of reducing one’s casual wardrobe size to include dual-purpose clothes.

Expanding our Discussions continued from pg 28 applicant access to higher education at desirable schools, including some state schools. It is also true that some sought out institutions have used and may still use ethnic quotas, some of which are said to exclude qualified Asian students just as, in the past, quotas once limited the number of admissions for qualified Jewish applicants. And, even now, family based legacy programs improve access to elite schools by nearly five times the normal admissions rate. And, it wasn’t until the 1960’s that Ivy League schools admitted females. There are lots of us in the US who haven’t been quite as privileged in the big scheme of things as those living closer to the 1%er status. People rally around single issue discourse because it is easier than learning about, addressing or challenging the multiple causes behind any or all socioeconomic outcomes in our multicultural, multifactorial worlds. Charging “racism” is a quick way to shut down discourse and silence ideological opponents. Racism existed. Racism exists. And, racism might not exist in some people who, today, live in an inherited world shaped by culture, social hierarchy, gender, ethnicity, old technology, no technology, new technology, race, and any and all combinations thereof. I’ve probably missed a few distributive categories. So, what about I81?

Pat Hogan continued from pg 39 respecting and protecting the plight of the less fortunate. In this current environment there are finally really good people from different parties in office. With Pat’s expertise contributing to this era of inspired youth our city could not be in a better place to enter the future. I will leave you with words I wrote shortly after the Mayoral Campaign: We all just finished working hard for one of the finest individuals ever to seek Public Office in our great city. We had a candidate that really would have changed things on our behalf. A man with experience that understands the deeds that really translate into a better city. And a man with the kind of compassion and heart that make a difference when righting the ship of a great city. Working with Pat Hogan and the kind of people he attracts has been an extraordinary honor in my life. On Pat’s campaign, I have seen firsthand the kind of people that our Founders inspire. They showed the standard for the kind of bravery that exists in the American heart. Americans that believe with deep honor in the integrity of our Founder’s intent. I hear the Battle Hymn each time I think of our hallowed heroes and those who selflessly and fiercely love this great land. In this campaign I saw this founding integrity in each volunteer. You honored our heroes by protecting what they gave their all for. Without your heart, perceiving wrong where others fail, our finest cannot rest. You walked American tall and I am proud to know each one of you. “Ourselves Alone – We are all one here.” -The best Pat.

This Month’s Recipe
Stuffed Pork Loin from Allrecipes.com Prep Time 20 min
Cook Time 2h 45 min
Servings 8
3 tablespoons margarine 1/2 cup chopped onion 1/2 cup chopped mushrooms 2 stalks celery, chopped 3 cups torn day-old bread salt and ground black pepper to taste 1 (4 pound) boneless pork loin roast
3 tablespoons water, or as needed 1 tablespoon ground thyme 1 tablespoon herbes de Provence 1 pinch garlic powder, or to taste
Preheat oven to 300 degrees F (150 degrees C).
Heat margarine in a skillet over medium heat; cook and stir onion, mushrooms, and celery in the hot margarine until vegetables are tender, about 12 minutes. Transfer vegetables to a bowl. Stir bread into vegetables until moistened; season with salt and black pepper. Cut the pork loin almost in half lengthwise, cutting to about 1 inch from the bottom; open pork loin like a book. Cover with plastic wrap and lightly pound with a meat mallet to flatten the meat. Spoon stuffing onto the pork loin, roll the meat over the stuffing, and tie pork loin together in three places using kitchen twine. Place tied loin into a roasting pan and pour about 3 tablespoons water around the roast. Season roast with salt, black pepper, thyme, herbes de Provence, and garlic powder. Roast stuffed pork loin until an instant-read meat thermometer inserted into the center of the stuffing reads 160 degrees F (70 degrees C), 2 1/2 to 3 hours. Rest meat for 15 minutes before untying and slicing.
Cook's Note: You can also make a mushroom sauce with the drippings. Add the drippings to a small pot and stir about 2 tablespoons of flour and a package of prepared pork gravy into drippings. Add 1 can of mushroom soup, bring to a boil, and whisk until thick and smooth.
